new products to give them what they need.  The regulatory technologist keeps up with all relevant legislation to provide the necessary training to the technical team.  The packaging technologist works with everyone involved in the making of our products to ensure our packaging is honest, sustainable and beautiful.  The in-store food safety technical manager creates and maintains the food safety protocol in all of our retail stores.  The dietitian answers customers’ and staffs’ nutrition and food-related queries via the customer care toll-free line or email.

MANGO WITH WHIPPED COCONUT CREAM AND LIME SUGAR Cut ‘cheeks’ off 3 mangoes so that you have 6 discs of mango with the skin attached. Score mangoes in a criss-cross pattern, (taking care not to cut all the way through). Push gently (on the skin side) to invert cheeks. Whisk ½ can (200g) chilled coconut cream or low-fat yoghurt until light and fluffy. Combine grated peel of ½ lime, seeds of 1 vanilla pod (optional) and 2 Tbsp (30ml) brown sugar. Serve mango with dollops of cream, a sprinkle of brown sugar, 2 Tbsp (30ml) toasted desiccated or coconut flakes and mint leaves. SERVES 6

SPAGHETTI WITH FRESH TOMATO AND CHORIZO CRUMBS

PnP Spaghetti or Macaroni 500g

Mediterranean food is thought of as the most delicious and hearthealthy food in the world – and for good reason! Olive oil is a big part of that reason. Happily, South Africa produces some of the best olive oil in the world, and PnP’s quality extra virgin olive oil is no exception. PnP’s branded Pick Local olive oil and olives are grown, harvested and packaged in the Western Cape’s Riebeeksrivier Valley, and we are proud to work with Goedgedacht, a community serving supplier that supports and nurtures the growth and development of children in nine rural farming communities.

Almost no cooking involved. Heat a glug olive oil in a pan and fry ½ coil (150g) chopped chorizo until crispy. Add 3 Tbsp (45ml) red wine vinegar, 1 punnet (350g) chopped mixed cherry tomatoes, 1 crushed garlic clove and toss together. Remove from heat and add a handful shredded basil and 1 packet (500g) cooked regular or wholewheat spaghetti. Season and serve with grated parmesan and extra basil. SERVES 4

Say it isn’t salt Pick n Pay has your health at heart – which is why we’ve cut back on salt by 40 million teaspoons!

Speciality salts are all the rage and South Africans certainly love full-flavoured food, but we may be a little too reliant on salt for that flavour kick. "Research shows we add 33% to 46% of sodium voluntarily to our food and the rest is already in the processed, packaged foods we eat," says Leanne Kiezer, PnP registered dietitian. "This means that to decrease your salt intake, you will need a combination of approaches: firstly, decrease the amount of salt you are voluntarily adding to your food, and secondly, be aware of which foods already have salt added to them and moderate your intake of these."

Lemon is the new salt According to the Heart and Stroke Foundation of South Africa, lemon flavours food fragrantly without the risk of increasing your blood pressure. Other tasty alternatives include mint, rosemary, ginger, garlic, chilli and cinnamon. Start by gradually introducing different flavour profiles as you reduce your sodium intake so that you give your palate time to adjust. You might need to experiment with a few different combinations, but variety really is the spice of life, so have fun finding a combination that works for you.

PnP takes action Pick n Pay has your back when it comes to heart health. We have removed 40 million teaspoons of salt to comply with the 2016 sodium targets as defined by national sodium regulations. PnP is committed to reducing sugar in the foods we produce too. So far, the sugar in PnP carbonated soft drinks has been reduced by an average of 24%.

Did you know?  The World Health Organisation recommends that our salt intake should be less than 5g per day for health. In South Africa, our salt intake is closer to 9g per day, which is far too high.  When eating or cooking processed foods, check the amount of salt in the product by reading the product label. If the words ‘salt’ or ‘sodium’ appear in the first three ingredients of a food label, the product is likely to be high in salt.  The nutrition information table on food labels tells us how much salt or sodium is in a food. Use the ‘per 100g’ column to compare the salt or sodium content of different foods.

CRISP NECTARINE SUMMER SALAD

Stone fruit isn't just for breakfast and dessert ... try them in savoury salads and salsas too

Heat 3 Tbsp (45ml) each butter and olive oil over a high heat. Cube 1 loaf of ciabatta, season and fry until crispy. Combine 4 quartered and sliced nectarines, 1 punnet (12) each sliced yellow and red vine tomatoes, 1 sliced red onion, a glug olive oil and season. Toss salad with bread, a splash of vinegar and a handful basil leaves just before serving. SERVES 2

Homegrown goodness

ROASTED BEETROOT AND CITRUS SALAD Preheat oven to 180°C. Arrange 1 punnet (200g) quartered baby beetroot on a baking tray, season and drizzle with 2 Tbsp (30ml) olive oil. Bake for 15-20 minutes or until cooked through. Arrange 1 punnet (200g) blanched baby pak choi, 4 shaved spring onions, 3 thinly sliced radishes, 1 sliced grapefruit and 1 of each segmented grapefruit and orange on a platter. Top with beetroot. Whisk together ¼ cup (60ml) olive oil, juice (80ml) and grated peel of 1 orange, 3 Tbsp (45ml) soy sauce, 1 Tbsp (15ml) of each rice wine vinegar and sesame oil. Add ½ small shallot or ¼ red onion, finely chopped, a 3cm knob grated ginger and 1 deseeded and chopped red chilli to create dressing. Season. Serve salad drizzled with dressing and sprinkled with sesame seeds. SERVES 4

Getting your five-a-day is easy with tender baby veg from Kiewietsvlei Boerdery near George in the Western Cape – think crunchy carrots, vibrant broccoli stems and the sweetest sugar snap peas. “We are in a very unique area where so many different vegetables flourish,” says owner David van Niekerk, who loves being out in the fields. “I really enjoy the production side of our business. I enjoy watching the seed become a seedling and finally leaving our farm all packaged up.”

ASPARAGUS WITH WHIPPED FETA AND DUKKAH Dukkah is an Egyptian spice-nut mixture used as a condiment. We’ve made our own swapping the traditional nuts for sunflower seeds. Combine 1 tsp (5ml) each cumin seeds, chilli flakes, sumac and sea salt flakes, 2 Tbsp (30ml) sesame seeds and ¼ cup (60ml) sunflower seeds together. Toast in a dry, hot pan until fragrant. Cool. Blitz 2 rounds feta and ½ cup (125ml) yoghurt using a handheld blender or food processor until smooth. Toss 1-2 bunches (200g each) thick asparagus spears in a glug of olive oil, then season and chargrill until tender. Drizzle with a squeeze of lemon juice. Spread feta on a plate and top with hot asparagus. Scatter over dukkah and serve. SERVES 4

Home on the range Grootvlei Farm

Klaas Venter supplies PnP with high-quality beef from his farm Grootvlei, outside Villiers in the Free State. “I started off working for my Dad on his farm after school, and now I have my own, with a staff of 25. But it’s a long day. I get up just after five and sometimes work into the night... I love it though – I love being outdoors. I am my own boss.”

Little green fingers... You’ll find these bright green spears on PnP shelves all-year round, but they're especially abundant from spring until late summer, when they come into season locally. Denmar Estate, a family farm near Clarens in the Eastern Free State with a heritage of over 50 years, is one of the first green asparagus producers in South Africa. “I love asparagus in any form, but the best way to eat them is to blanch them for two minutes or so, and serve with butter, salt, pepper and a squeeze of lemon juice. Less is definitely more,” says Denmar marketing manager Grahame Osler.

Heat a knob butter and a glug of olive oil in a pan. Fry 2 sliced onions until softened. Increase heat and add ¼ cup (60ml) rum (optional). Cook until evaporated. Spread 8 ciabatta slices with ¼ cup (60ml) Dijon mustard. Divide 24 slices seared or roasted beef, 16 slices Emmental cheese, 4 thinly sliced gherkins and fried onions between ciabatta slices. Sandwich with another 8 ciabatta slices. Toast over an open fire or in a hot non-stick pan until cheese melts, turning frequently. Serve immediately. SERVES 8

HERB-CRUMBED HAKE FILLETS Place 4 (600g each) hake fillets/ medallions onto a lined baking tray. Tear 4 slices of stale bread into chunks and dry out in the oven. In€a food processor, blitz together ¼Â€cup (60ml) each parsley, basil and dill, 2 garlic cloves, 1 Tbsp (15ml) each orange juice, olive oil and parmesan cheese with bread. Place€herb crumbs on top of fish and press down firmly to coat. Bake at 200°C for 12 minutes or until fish flakes easily. Garnish with fresh fennel fronds just before€serving. SERVES€4

Fish4Africa

Fish4Africa is a specialised fishmonger that offers a daily selection of fresh fish and seafood from responsible sources. Nicolette and Jose have been in the business for 23 years, and they pride themselves on having a deep understanding of the fishing industry. As the business grew over the years, Jose and Nicolette decided to launch their own deli stores in 2005 to meet their customers' needs. Fish4Africa successfully became suppliers to selected Pick n Pay stores in 2016 and they supply 20 stores in the Western Cape. The passion and drive to expand the business has created employment for a number of disadvantaged communities. Fish4Africa has 114 permanent staff and still plans to create more jobs. Their team includes qualified skippers, highly skilled and experienced staff and Nicolette and Jose provide training and empower young women to enter the fishing industry and its operations. Farming for the future

Situated in Groblersdal in the lush Loskop Valley in Limpopo, Schoonbee Landgoed is a picturesque, fruit-producing family farm that supplies PnP with crisp, sweet table grapes. Forty-seven years ago, the farm was founded by its namesake, who pioneered table grape production in Limpopo with the first real commercial vineyards in the Loskop Valley. “Our passion for fruit and farming runs in our blood throughout all generations who have worked on the farm,” says co-owner Ista Upton. “We want to ensure that the current generation has a place to work, strive and leave a footprint that will benefit future generations.”

What started out as a hobby became a passion, and eventually a thriving business supplying ready-to-eat salads, herbs and pre-packed vegetables to PnP customers for the Maxted family. Harvestfresh Farms began with only a handful of employees, but today employs over 450 people – as well as over 100 seasonal workers. “Our family culture and happy work environment make all the difference,” says managing director George Maxted. “We love knowing that we are supplying healthy, quality products to PnP customers, providing employment and contributing to the economy all at the same time.”

CHICKEN COOKED WITH GRAPES AND RED WINE Preheat oven to 180˚C. Place 2 red onions cut into eighths, 6 crushed garlic cloves, 2 long rosemary sprigs and 3 bay leaves in a shallow ovenproof dish. Tuck 8-12 chicken pieces in between, skin-side up. Season and pour 1 cup (250ml) red wine around chicken pieces. Roast for 30-40 minutes. Add ½ punnet (250g) red seedless grapes cut into small bunches and drizzle over 2-3 Tbsp (30-45ml) balsamic reduction. Bake for 15 minutes or until chicken is cooked through. Serve with brown or wild rice or wholewheat couscous. SERVES 4

PnP Free From Rice Flour 500g

PEANUT BUTTER & BLUEBERRY LOAF Sift 2 cups (500ml) almond flour or gluten-free cake flour and 2 tsp (10ml) baking powder together. Add a pinch of salt and set aside. Combine ½ cup (125ml) honey, ¼ cup (60ml) canola oil, 1 tsp (5ml) vanilla essence, 2 large eggs, ²/³ cup (185g) sugar-free peanut butter and 1 cup (250ml) almond or dairy milk. Mix wet ingredients into flour mixture. Fold through ½ tub (200g) blueberries and ½ tub (40g) shaved coconut chunks. Spoon batter into a lined 15cm€x€10cm loaf tin. Bake for 20-30 minutes then top with ½ tub (200g) blueberries and ½ tub (40g) shaved coconut chunks. Bake for 45 minutes or until a skewer inserted comes out clean (cover with foil if top browns too quickly). Serve hot with softened butter and a drizzle of honey. SERVES 6-8

Dr Birgit Andrag – affectionately known as ‘die Bessie tannie’ (‘the berry auntie’) runs her business Berry Flavours alongside her husband’s wine and berry farm just outside Stellenbosch. Blackberries, raspberries, autumn variety blueberries and gooseberries are all nurtured and plucked for maximum flavour and freshness. “Berry picking starts early in the morning,” says Birgit. “We pick directly into the punnets, then a specialised cooling facility brings their temperature down within an hour. So, they are taken from the field to PnP shelves – as frozen berries – within 24 hours!” Birgit believes in investing in staff and caring for employees and their families, as an extension of their care for the berries. “Our core employees have been with us for 24 years and are highly trained to be tutors to the new generation.”

Berry Flavours

Line the base and sides of an 18cm square tin with baking paper. Blitz 1½ packets (about 300g) PnP tea-biscuits in a food processor until fine. Add 1/³ cup (80ml) butter, grated peel of 1 lemon and blitz until well combined. Press into prepared tin. Heat 1 cup (250ml) frozen blueberries with 2 Tbsp (30ml) castor sugar for 10 minutes to create a syrup. Set aside to cool. Whip ½ cup (125ml) cream to soft peaks. Fold in 1 tub (1kg) double cream yoghurt, 1/³ cup (80ml) honey, pinch salt and 1 tsp (5ml) vanilla essence. Pour yoghurt mixture over biscuit base. Dot with berries and syrup and swirl through yoghurt using the back of a spoon. Freeze for at least 4 hours or overnight until set. Rest at room temperature for 10 minutes, unmould and slice. Serve with fresh mint leaves. MAKES 9 LARGE SQUARES
