school and all kids LUNCHBOX IDEAS It’s all about colour and crunch! 1 BANANA AND MUESLI CUPS Place ½ cup muesli into two small jars. Top with sliced banana, 2 Tbsp (30ml) desiccated coconut, some lemon juice and banana yoghurt. Sprinkle with cinnamon and toasted almonds. 2 CHICKEN AND PINEAPPLE SLIDERS Shred one rotisserie chicken breast, chop ½ cup fresh pineapple chunks and 2 celery sticks into small pieces. Stir through 2 Tbsp (30ml) each low fat plain yoghurt and PnP peach chutney. Pile onto mini cocktail rolls with baby gem lettuce. 3 GREEK SALAD AND MEATBALL KEBABS Slice ½ small cucumber and skewer rings onto kebab sticks with mini Italian tomatoes, diced feta, pitted olives and PnP beef meatballs. Serve with PnP hummus as a dip. 4 BEETROOT AND COTTAGE CHEESE DIPPERS Blend 1 cup of cooked beetroot, ½ tub (75g) cream cheese, a squeeze of lemon and 2 tsp (10ml) chopped coriander until smooth and season. Serve with crudités and pita quarters.

STEP BY STEP: VANILLA AND LEMON SQUARES
Cooking kids Try these treats to get your kids home in a ash
1 PnP bakery Madeira cake 2 cups (500ml) icing sugar, sifted Grated peel of 1 lemon 2 Tbsp (30ml) lemon juice 1 tsp (5ml) vanilla extract Drop or two yellow food colouring Boiling water Paper cupcake cases MAKES 8 TO 10 Slice Madeira cake into squares and place into cupcake cases. Mix icing sugar, lemon juice and peel, vanilla and food colouring with just enough (about 1-2 Tbsp) boiling water to form a stiff paste. Spoon a teaspoon of icing onto each cake and allow to drip over.

STEP BY STEP: PNP SOUP AND VEGETABLE WRAP ROLLS S
1 roll (400g) puff pastry 1/2 packet (175g) mixed cocktail tomatoes, halved 4 slices ham, cut into squares 1 cup (250ml) grated cheddar 1 extra large egg, beaten 1 cup (250ml) milk
2 flour wraps 1 tub (250g) PnP guacamole 1 small cucumber 1 large carrot 1-2 discs feta, crumbled handful alfalfa sprouts 1 tub (500ml) PnP vegetable soup
MAKES 6 LARGE TARTS SERVES 2 TO 4 Unroll pastry and roll slightly thinner. Cut into 16 squares. Place one square into each greased hole of a muffin pan. Divide tomatoes, ham and cheese among tart cases. Beat egg and milk together and pour into tarts coming half way up the side of the fillings. Bake for 15-20 minutes or until set.
Spread wraps with guacamole. Shave cucumber and carrot with a potato peeler and lay over guacamole. Crumble over feta and scatter with sprouts. Roll up wraps to form a long roll. Slice into 4cm pieces and serve with hot soup. PnP Kids July 2013 | 21
