easier. Use the edge punch to create a decorative edge on the two opposite ends of your cutout. Roll the cutout into a cracker shape and stick with double-sided tape. Tie a ribbon around the one pleated end where the diamond shapes were cut out. Add a gift and snap pull inside before you tie the second ribbon. Cut a rectangle of 18x7cm from pretty scrapbook paper and wrap it around the body or centre part of the cracker, securing it in place with double-sided tape. Cut a star from different scrapbook paper to decorate your cracker, using double-sided tape.

In the icy northern European winter, wreaths were once a symbol of hope for the coming spring.

Rice Krispies treats Combine 2 Tbsp (30g) butter and 150g marshmallows in a microwavable bowl. Microwave for 1 minute. Stir until smooth and fold in 3 cups (90g) Rice Krispies cereal. Spoon into silicone cups or press mixture into a lightly greased and lined dish. Allow to cool, slice into 2–3cm blocks and serve.

Cut the card into 4cm strips, that way it is easier to punch the flowers. Punch flowers from the card. Pin the flowers to the polystyrene baubles; cover the whole ball. Using a pin, attach a loop of ribbon or string to the bauble, to hang it with.

other in the centre. Bend the six arms to form the flat, basic shape of a snowflake; trim the arms if necessary to make them all more or less the same length. Attach the six 2,5cm pieces in the same way to each of the arms, about 1,5cm from the centre, and then attach the short 2cm pieces about 1,5cm from these ones on each arm. You should now have a snowflake shape. Decorate the snowflake even more by threading beads to the ends of the pipe cleaners. Fasten a loop of string to one arm of the snowflake to hang it with.

Moreish mains These delicious traditional dishes will have everyone coming back for more

Gammon with pineapple glaze 1 PnP deboned gammon 1 onion 1 chilli 4cm knob ginger, sliced 4 garlic cloves Glaze: 1 pineapple, cored and thinly sliced 1 packet PnP gammon glaze 1 Tbsp (15ml) hot English mustard powder 1 tsp (5ml) fresh ginger, grated Salt and milled pepper SERVES 6-8

Place gammon, onion, chilli, ginger and garlic in a pot and cover with water. Simmer for 2 hours. Remove and allow to cool. Carefully peel off skin with the aid of a knife. Preheat oven to 200째C and place gammon on foil-lined baking tray. Lay slices of pineapple over gammon. Mix glaze with mustard powder and ginger and carefully brush over gammon and pineapple. Bake, basting frequently, until golden and slightly charred. Serve warm or at room temperature.

R Roast chicken with ssherry and thyme g gravy 1 large onion, thickly sliced FFew sprigs thyme ¼ cup (60ml) soft butter 2 PnP free-range chickens Salt and milled pepper S Gravy: G 1/ cup (80ml) medium cream ³ ssherry 1 Tbsp (15ml) thyme leaves ½ cup (125ml) chicken stock ½ cup (125ml) PnP sultanas 2 tsp (10ml) cornflour (mixed with w a little cold water) SERVES 8 S

Bacon-draped turkey with cranberry and pear Olive oil 2 pears, peeled and diced ½ tsp (5ml) each all spice, nutmeg and cinnamon Grated peel and juice (30ml) of ½ lemon ½ cup (125ml) dried cranberries 1 stuffing recipe pg 18 1 PnP young turkey, defrosted 1 packet (250g) PnP streaky bacon Salt and milled pepper SERVES 6

Preheat oven to 180°C. Sauté the pears and spices in the oil until soft. Allow to cool, then mix with lemon peel and juice, cranberries and stuffing ingredients. Season. Stuff 1/³ of mixture under turkey neck flap and remaining in cavity. Season turkey all over. Lay bacon rashers over turkey breast and legs. Cover with foil. Roast for 75 minutes, then uncover and cook for a further 20-30 minutes. Remove and allow to rest for 15 minutes before carving.

Tongue salad 1 PnP pickled and cooked tongue, thinly sliced 1 packet (100g) rocket 1 packet (30g) watercress ½ cup (125ml) baby gherkins, halved lengthways ¼ cup (60ml) baby pickled onions, halved ½ cup (125ml) sliced radishes 1 fennel bulb, shaved Dressing: 1 Tbsp (15ml) each Dijon and whole-grain mustard 3 Tbsp (45ml) each olive oil and white balsamic vinegar 2 tsp (10ml) honey Salt and milled pepper SERVES 6-8

Lay tongue slices on a platter. Scatter over all remaining salad ingredients. Whisk dressing ingredients together. Dress salad just before serving.

STUFFED ONIONS To make stuffing: Mix 1 packet (250g) PnP fresh stuffing mixture with the meat from 1 packet (8’s) PnP traditional pork sausages. To stuff onions: Peel 8 large onions and cut 1cm off the top of each. Hollow out onions using a melon baller; don’t cut all the way through. Make shallow slits around the edge of each onion. Stuff cavities with stuffing and bake at 180°C for 35 minutes. Serve with roast turkey, chicken or gammon.

Baby potatoes are smaller in size and half the hassle. Boil unpeeled then toss in butter or olive oil and herbs, use in a potato salad or halve and roast as you would normal potatoes.

Sumptuous sides Unbelievable roasties

Christmas butternut

Preheat oven to 180°C. Peel and halve 1kg PnP potatoes. Boil for 10 minutes, drain and shake in pot to scuff edges. Tip into a roasting tray, sieve over 2 Tbsp (30ml) cornflour and shake pan. Season well and add 4 bay leaves, a few sprigs rosemary, thyme and a large knob of butter. Drizzle with oil and roast, turning occasionally, until golden and crunchy.

Preheat oven to 180°C. Cut 2-3 small butternuts into long shards.Toss with oil and place on a baking tray. Dot with butter and sprinkle with ½ tsp (3ml) each PnP mixed spice, nutmeg and cinnamon. Season and roast in oven until soft, then scatter with toasted PnP flaked almonds.

Char-grilled asparagus Grill 2 bunches PnP asparagus on a hot griddle pan or braai until slightly charred. Toss on a platter with a squeeze of lemon juice, a tablespoon or two of olive tapenade, a few capers and glug of good olive oil.

Shaved Brussels sprout coleslaw Carefully shave 1 packet (500g) PnP Brussels sprouts with a mandolin slicer. Toss in a bowl with 2 grated carrots and 1 small shredded red cabbage. Mix ½ cup (125ml) plain yoghurt with ½ cup (125ml) mayonnaise, 2 Tbsp (30ml) whole-grain mustard and a squeeze of honey. Toss dressing through salad. Top with a few dried cranberries and chopped toasted almonds.

Minted pea salad Lightly blanch 2 cups (500ml) PnP frozen peas, 1 packet (200g) mange touts and 1 packet (300g) sugar snap peas. Refresh in iced water and toss on a platter with two packets (30g each) PnP pea shoots. Whisk 2 Tbsp (30ml) mint jelly with 3 Tbsp (45ml) avocado oil and dress salad.

Serve hot and drizzle with gravy

Decadent desserts Fresh and fruity or rich and creamy, the cherry on top of every Christmas meal is the perfect pudding

Hot flambéed Christmas cake with ice cream 1 PnP fruit and nut loaf ¼ cup (125ml) brandy vanilla ice cream ½ packet (50g) PnP flaked almonds, toasted SERVES 6

Preheat oven to 180°C. Wrap loaf in foil and bake for 20 minutes or until heated through. Slice loaf and place in a serving bowl. Drizzle over brandy. Flambé just before serving. Scatter with nuts and serve with dollops of ice cream. 20 | PnP Christmas Dec 2013

A cool alternative to hot pud

Christmas pudding cheese cake 1 packet (200g) digestive biscuits, crushed 1/ cup (80ml) melted butter ³ 1 small PnP Christmas pudding, roughly crumbled 1 Tbsp (15ml) gelatine 2 Tbsp (30ml) cold water ¼ cup (60ml) boiling water ¼ cup (60ml) castor sugar 1 tub (250ml) PnP cream cheese 1 tsp (5ml) vanilla seeds, essence or extract 1 cup (250ml) PnP cream, whipped Fresh berries, for serving SERVES 8

Blitz the biscuits in a food processor until fine. Mix with butter and press into the bottom of a 20cm, loose-bottomed tart tin. Press ²/³ of the crumbled pudding over biscuit base. Sprinkle gelatine over cold water and allow to stand for 5 minutes. Dissolve “jelly” in boiling water. Mix gelatine water with sugar, cream cheese and vanilla and beat well. Fold through whipped cream and the remainder of the crumbled pudding. Pour mixture over base in tart tin and allow to set. Garnish with assorted berries and serve. In the absence of berries, choose colourful fruit, such as fresh figs.

Roasted peaches with berry slush 1 packet (350g) PnP frozen berries 1 cup (250ml) lemonade 6-8 ripe peaches, halved and stoned, or 1 large can (650g) PnP peach halves ¼ cup (60ml) brown sugar For serving: PnP fresh raspberries 1 tub (250ml) thick cream, lightly whipped

shallow dish to be firm sooner. Preheat oven grill. Sprinkle peach halves with sugar and grill for 5 minutes until slightly caramelised. Scrape frozen berry mixture with a fork to fluff into ice crystals. Serve peaches warm topped with slush, cream and berries.

Filled with dried fruit and glacĂŠ cherries and topped with nuts, this traditional fruit cake originated in 16th century Genoa.

FROSTED BERRIES Lightly beat one egg white and lightly brush over a selection of berries. Toss in castor sugar to coat and shake off excess. Place in fridge to set before using.

Divide whiskey among 6 warmed wine glasses. Stir sugar through coffee and fill up the glasses 2cm from the top. Carefully spoon cream over the back of a spoon to prevent it from mixing into coffee. Sprinkle with grated chocolate and serve with fruit mince pies.

CHRISTMAS NUTS Heat ½ cup (125ml) castor sugar in a pan with a tablespoon of water, to melt. Tip in 1 packet (100g) each PnP almonds, cashew nuts and walnuts, 1 tsp (5ml) each cumin seeds, fennel and chilli flakes (to taste) and 3 Tbsp (45ml) soy sauce. Toss quickly to mix well. Tip onto a greased piece of foil and spread out. Cool to separate and serve.
