TIP Always eat your food with rice. In Thailand, rice is the base of the meal, much like bread elsewhere. And since the flavours of Thai cooking are so strong, you’re going to want something to tone it down a bit anyway. Jasmine rice has a delicate fragrance and fluffy texture when cooked. The new harvest of jasmine rice contains more moisture than older rice and needs to be cooked in less water. Limit dishes with coconut milk, which is high in saturated fat. Avoid soy and other sauces if you are watching your sodium intake, and ask that MSG be left out. Dishes are shared. This is one concept that foreigners seem to have a particularly difficult time with. Thai food is usually eaten with a fork and spoon. Meat will be cut into bite sized pieces during the preparation process, so there is no need for a knife. The fork is only used to push food onto the spoon. At most places, Pad Thai will be served with a lime on the side. Squeeze the lime juice evenly over the Pad Thai. Tipping is not necessary or even expected in Thailand, but it sure is nice.

With chopsticks, more formal restaurants have separate resting places for them; don't rest them on your plate. Avoid spearing food with your chopsticks or pointing them at someone. It is wise to look around at the various stores to compare prices before buying anything. The best part of all is that sales tax is exempted on everything in Hong Kong.

Tell us a bit about your menu. What recipes have you chosen to share and why? Medley of fresh seafood with tuna, mussels, scallops, slow cooked cherry truss tomato, beetroot oil and balsamic glace. Seafood is very popular everywhere in Asia Pacific, and you can be very creative with it. I choose to make a little more Italian style as it is for Favola.
Where do you get your inspiration? From food competition ‘Fine Food Show’ in Singapore.
What got you into the kitchen? I learned from my mother to cook for the family.
What’s your favourite restaurant? Aria in Sydney. By chef Matt Moran.
What are your favourite ingredients and how do you like to use them? I love potato. It’s a simple yet comes in numerous varieties and shapes and is one of the most versatile ingredients; you can prepare a thousand dishes from it.
What’s your favourite dish on your menu? My favourite dish is Pork Tenderloin wrapped in Pancetta with Semi Dried Tomato and Sweet Potato Mash.
What three kitchen tools couldn’t you live without? Knife, whisk, garlic press.

Our recommended is simply sublime Yum Som-O (Pomelo Salad), a sweet and sour dish with combination of pomelo, prawns, pork, deep fried chopped garlic & shallots and toasted coconut. It was amazing how every ingredient complimented each other so well, there was just the right balance of sweetness, tartness and spiciness giving a high tone and the earthiness. The toasted coconut gives the dish a whole different dimension, and somehow every ingredients work together to become a kind of symphony in your mouth. here are many places in Singapore to get good southern Indian banana leaf, but none quite so unique as Samy's out on Dempsey Road.
Samy's is situated in a huge, highceilinged, open-air hall, with shutters thrown back and fans whirring above. amen first flourished in major ports like Yokohama, so the city was a natural home for the first museum dedicated to the dish. The Shin-Yokohama Ramen Museum features Japanese-language displays detailing the history of noodles and a full-scale diorama of Tokyo circa 1958. Once you're past the entrance turnstiles, the first floor is devoted to numerous museum exhibits and a wellstocked souvenir shop. Clearly the museum's organizers racked their brains to come up with every imaginable ramen-related display they could think of, and the results are here to see; ramen-making utensils, ramen bowls, ramen shop matchbooks, chopstick wrappers, curtains and aprons. The historical development of instant ramen is painstakingly chronicled, and the invention of cup ramen (the kind where you pour boiling water directly into a Styrofoam cup) is celebrated as the dramatic technological achievement it most certainly was. Instant ramen packets from around the world adorn the walls, and overhead TV monitors broadcast a continuous stream of ramen commercials from the past 25 years. Ramen history buffs will be delighted (and the rest of us merely mystified) by a replica of the first ramen dish ever eaten by a 17th-century samurai named Mito Komon. However, the main draw is the food area, which corals together nine famous ramen shops from around the country. Think of it as a ‘Ramen Mall’ where you can eat your way along the length of Japan without paying a fortune in air fares.

This is ramen for serious connoisseurs, with the eight shops chosen carefully from among the tens of thousands of stores throughout the country. The major ramen capitals; Sapporo, Hakata, Kumamoto and Kitakata are all represented, along with four legendary shops from the Tokyo and Yokohama area. The two Kyushu shops (Hakata and Kumamoto) serve their noodles in a salty whitish broth, made by slowcooking pork and chicken bones. The Sapporo shop serves its ramen in a miso-flavored soup, a Hokkaido specialty, while the rest of the shops feature soy sauce-based soups made with various combinations of pork and chicken bones and seafood. Each shop has its own distinctive noodles and its own selection of toppings, ranging from the standard Chaashuu (roast pork) and bean sprouts to Kikurage (wood ear mushroom) and garlic chips. After you've had your fill of ramen, sake, and numbingly sweet old-fashioned candies, you're ready for the souvenir shop back on the ground floor. Take-out packages of noodles from each of the shops are available, along with goods sporting the Ramen Museum's logo. Logo merchandise includes plates, pencil holders, tote bags and much more; there are also postcards, cookbooks, and a full range of chopsticks for sale. ou might be wondering what so special about Gonpachi, even the ex-President Bush dined there while in Tokyo. This is the restaurant that inspired the set in Quentin Tarantino’s movie Kill Bill Vol.1 where Uma Thurman and the Crazy’s 88 triads carnage showdown. Housed in a re-created Kura (Traditional Japanese Warehouse), there’s a cavernous interior courtyard with two-story-high ceiling. The first two floors are a rustic village where a matsuri(festival) is constantly underway. A separate 3rd floor specializes in sushi. Strings of round white party lights hang above the main floor. Taiko drum and Shakuhachi music drifts overhead. The open kitchen is a festival shed where cooks turn skewers of meat over a long barbecue grill. hina has been shaped by the Yangtze River in much more than any physical way. This place has banks which are so rich that they which have been fought over by the beautiful upper regions. The landscape here is made of pointed Karst formations. The swirling mists here have been plundered and admired. A lot of the life here in china is based around this river. And the routes go all the way to the ancient cities age old secrets. The mighty Yangtze River or Chang Jiang in Chinese, meaning ‘Long River’, is the longest river in China and Asia and the third longest in the world after the Amazon in South America and the Nile in Africa. Also called the Yangtze River, it is a cradle of the ancient Chinese people.

The Western name ‘Yangtze’ comes from the stretch of the river from Yangzhou to Zhenjiang, called the Yangzi in Chinese. This was the name first heard by Western missionaries and traders, particularly by the British, and it has stuck. Technically it is named in honor of the former emperor Yang. Most Chinese will not understand what you mean if you don't use the proper Mandarin title of ‘Chang Jiang’ unless they are familiar with English. The Yangtze, arising in Tibet in the glaciers and snow-covered mountains of the ‘Roof of the World’, the Qinghai-Tibetan Plateau, and fed by hundreds of tributaries, wanders eastward across the mainland of China. It makes an incessant rush to Shanghai and empities into the East China Sea. Passing many of the large and important cities of China, the river has been an important trade and transportation route since ancient times. The major cities through which the Yangtze River flows are (east

to west): Jiangjin, Chongqing, Peiling, Zigui, Jiangling, Yueyang, Wuhan, Anqing, Wuhu, Nanjing, Zhenjiang, and Shanghai. In addition, along the River, one feels merged with nature and will have a chance to explore the mysterious ancient country of China in the Orient and to learn the life of country people. Natural secenery and landscapes along the River are beautiful with many historical and cultural cities and towns, including Suzhou and Hangzhou. Other places the river goes through are: Tai Lake; Naning, once the ancient capitals of China as well as the political and cultural center in the Southeast; Mount Lu, a summer resort; and Wuhan. The most famous part of this route is the sensational cruise ships through the Three Gorges area between Chongqing and Yichang. The Yangtze Gorges presents a scene of boundless variety with the magnificence of Qutang Gorge, the elegance of Wu Gorge, the

perilousness of Xiling Gorge, from west to east, with each of them boasting a distinctive flavor. With the recent enormous Three Gorges Dam project, this route has changed considerably but it is still definitely worth doing. The whole landscape is so kaleidoscopic. It is picturesque everywhere, and what more, each scene is related to a wonderful fairy tale or a moving legend which will kindle your meditation on the remote past. Traveling on a Chinese tourist boat in 'first class' may not be your idea of first class. If you really want the good experience on the Yangtze, you'd better choose a luxury yangtze cruise in 4 or 5 star rating. These luxury cruises fare include all the shore excursions with English speaking guides and all meals on-board except the dinner on the check-in day. Almost all the tourists travelling on those cruises are very satisfied with the journey. The Three Gorges region is a scenic area along the Yangtze River spanning Hubei Province and the Chongqing Municipality with a total length of approximately 200 kilometres. The Three Gorges region attracted attention globally due to the construction of the Three Gorges Dam, which is changing the scenery of the region. It was constructed in the middle of the Xiling Gorge. The reservoir was completed in the summer of 2006, and the water level in the Qutang, Wuxia, and the western portion of the Xiling Gorges has already begun to rise. The dam itself is projected to be completed in 2009. In addition to the impacts of the dam on the ecology and people of the region, the dam will also change the scenery of the Three Gorges. Because the water level will be higher, the river will be wider and the mountains will appear lower. Proponents of the dam point out that because the mountains reach several thousand feet above the river, the gorges are still likely to offer spectacular views of the surrounding cliffs, and most riverboat companies that operate in the Three Gorges intend to continue to offer tours of the region. The increase in width of the Gorges will also allow larger

ships through the gorges, and it is anticipated that river traffic of all kinds will increase. Three Gorges Dam Scenic Area is mainly composed of Tanzi Mountain, 185 Platform, Dam Viewing Point and Memorial Garden. It fully displays to visitors the culture of the water conservancy project. Climbing on the Viewing Platform, visitors will have a panoramic view of the Three Gorges Dam. 185 Platform got the name from its height 185 meters, equivalent to the height of the dam crest. Standing on the Dam Viewing Point, visitors will see the huge dam body at close range. The Memorial Garden is a large open air museum where exhibits a large number of machines that have been used in the dam construction, such as mechanical excavators and cranes. Besides, visitors can also go to Huangling Temple, the largest ancient building in the Three Gorges area. This is a beautiful way to get a glimpse of the amazing Karst scenery.

he team and I took at day trip to Lamphun by car, it is about 45 minutes from Chiang Mai city, we drove through quiet country roads and farmlands and experience the Lanna way of life. Being so close to Chiang Mai, it is a nice place to retreat. Lampun was once the center of the Haripunchai Kingdom that was ruled by Queen Chama Thewi and founded in 680 AD, it claims to be the oldest existing city in Thailand. The Chamdhevi dynasty was able to maintain independence from outside rule until 1932 when Thailand began a democratic country. Today, Lamphun still retains the enchanting ambience of a small and old community, remains a fairly quiet provincial capital. The day that our team went was beautiful, blue skies and a cool breeze. Our first stop in Lampun was Wat Phrathat Hariphunchai. This temple was built on the site of Queen Jamadevi's palace in 1044 AD. Khrubaa Siwichai, one of Northern Thailand's most famous monks.

Two large lions guard the gate of the temple, which opens to a beautiful Wihara that is a replica of the original. To the right of the main Wihara is the world's largest bronze gong, which was cast in 1860 and hangs in a red pavilion. The main chedi, Chedi Suwan is dated differently by many sources, but it stands 46 meters in height. It is surmounted by a nine-tiered, 6.49875 kilogram pure gold umbrella, which brings the height to over 50 meters. Towards the back of the temple complex there are a number of other structures: smaller wihans, a resting house, and two older chedis that were built during the Haripunchai period. Across the street at the entrance of Wat Phrathat Hariphunchai is a river. A bridge extends over the river, and stalls there sell a variety of food, clothing, crafts, and other local products. Our next stop was a monument for Queen Jamadevi, which is located next to the market in the main city. A number of Thai people, dressed in white, were seated before the monument. They took turns offering incense, candles, and flowers. NOW TRAVEL ASIA

Legend handed down for more than 1,400 years refer to this ancient town as Hariphunchai. Today, Our next stop was the Haripunchai National Museum on Inthayongyot road opposite Wat Phra That Haripunchai has an extensive collection of important artifacts conveniently gathered together. Although it is a museum in a small town, it is a small town with a tremendous wealth of history, and the museum has a great deal to excite those with a passion for history and archeology.
Lamphun still retain its enchanting ambience of a small but old community.
It is some 670 kilometres from Bangkok and only 26 kilometres from Chiang Mai. Located on the bank of the Kuang River, its attractions include ancient sites and relics as well as forests and mountains and delightful lakes.
The Haripuchai National Museum is the national museum with the largest collection of stone tablets under its care in the country. Ancient artifacts on display in the museum include not only finely sculpted Buddha heads dating back to the Haripunchai and Lanna eras and rare Haripunchai Buddhist talismans, but also 23 stone tablets dating from the 19th - 20 th centuries BE through to the Lanna period. These, together with hundreds more pieces of ancient and exquisite art, bring 1,300 years of glorious history to life. For lunch we enjoy a tasty, lunch of delicious food at the noodle restaurant, the most famous in Lamphun. That is the “Braised pork longan noodle restaurant" at Ban Wiang Yong. (Lamphun is the most famous producer of longans) and an opportunity to explore more of Lamphun’s lively markets. Beyond the valuable sites already mentioned, Lamphun has many more ancient monuments and artifacts, such as Community Museum Lamphun Municipality, located behind The Haripuchai National Museum, and Gu

Chang Gu Ma in the city which both have interesting legends associated with them. The next stop we headed to the delightful village of Pasang, around 20 kilometers South of Lamphun, is renowned for its local cotton weaving industry and wood-carving products. As we pass through small rural villages, we encounter smiling faces and a friendly, relaxed atmosphere and stop often to sample the local delights on offer at road-side stalls and markets. Attraction in Pasang district include Wat Phra Phutthabat Tak Pha, this temple is constructed on 2 levels separated by a long steep stairway. The stairway is lined by two 5 headed Nagas and is a steep climb although there is also access by road. The view from the upper level is spectacular. Legend has it that The Lord Buddha visited here and left his footprint. His saffron robe was laid out on the rocks to dry and it is said that the imprint can still be seen, hence the name of the Temple. (Tak Pha means to hang out to dry). Both the footprint and the image of the robe are located on the lower level of the Temple. Also, on the lowere level of Wat Phra Phutthabat Tak Pha is a small cave containing images of worship. After making a merit we drove back to Chiang Mai, this one day trip was so amazing and unforgettable. Next time, I'm going to spend less time in Chiang Mai and take more day trips like this out of town.

nter heaven simply by staying a week in the Canadian Rockies, where still, blue lakes reflect glacial peaks and high meadows are gilded with larch trees turning their leaves for autumn.
Straddling the border of British Columbia and Alberta, the Canadian Rockies have unique appeal for hikers, climbers, and bikers. A century-old railroad infrastructure and the region's rich history of mountaineering mean a standing network of roads and trails and established backcountry hostelries that springboard you easily into the most remote wild country.
The waterfall, which is fed by the Daly Glacier, rages during the spring melt and is a spectacular scene. The Takakkaw Falls plunge over a sheer rocky escarpment and the waters join the Yoho River which is fringed by lush forest.
Rocky Mountains are a major mountain system of western North America extending more than 4,827 km from northwest Alaska to the Mexican border. The system includes numerous ranges and forms the Continental Divide. Its highest elevation is Mount Elbert, 4,402 meters, in central Colorado. In Canada the Rockies rise to 3,956 meters at Mount Robson in eastern British Columbia.
The drive from Takakkaw Falls to Banff National Park leads along the spectacular Icefields Parkway. Along this divide all water flows either east or west, and the huge glaciers of the Columbia icefield provide an unforgettable sight near the halfway point.
We are driving west on the Trans Canada Highway (#1) from the Calgary International Airport to Highway 93 or the Icefields Parkway North. Our destinations was seven national parks and two provincial parks; started from Mount Revelstoke National Park, then to Glacier National Park, Yoho National Park, Banff National Park, Jasper National Park, Mt. Robson Park, Wells Gray Provincial Park, and down south to Waterton Lakes National Park which is a UNESCO World Heritage Site & Biosphere Reserve next to the America’s border. As the journey continues northward up the Icefields Parkway, the Saskatchewan River Valley looms in the distance, along with all the mountains that surround it. The Icefields Parkway North is one of the most beautiful drives in the world.

Revelstoke was our first overnight stop in a log cabin. Next morning we continued to Glacier National Park, primarily famous for its jagged glacial landscape. As we continued along the trail, passed the Rogers Pass and went to the Yoho National Park, there is a popular tourist attraction called Takakkaw Falls, a thundering waterfall which plunges a total of 384 metres to the Yoho River below, the Takakkaw Falls are the second highest waterfall in Canada. Takakkaw is a Cree Indian word that means “It is wonderful”.
Banff National Park is Canada’s first national park with 6,641 km2 of spectacular scenery, historic sites and cultural treasures. Inside the Banff National Park there is the Lake Louise, one of the Canadian Rockies’ most beloved destinations, with turquoise waters sparkling underneath the towering Victoria Glacier.

ther attraction inside this national park is a road called the Bow Valley Parkway Road, it’s definitely a stop-andsmell-the-roses kind of slower driving route with incomparable views and the majority of wildlife and provides critical habitat for large carnivores, including wolves, cougars and grizzly bears. The journey continues through the road connecting the Banff National Park, the Icefields Parkway. This road is one of the most scenic drives in the world. The actual

parkway itself runs for 230 km. It is one of the most interesting and incredibly beautiful drives we’ve ever done.
Destination at the north-end of the Icefield Parkway Road is Jasper National Park the largest national park in the Canadian Rockies, spanning 10,878 km2.
Attractions along the route are Cowfoot Glacier, Bow Pass and Bow Summit, Peyto Lake, Mistaya Canyon and Saskatchewan, where the three rivers of the Saskatchewan, Mistaya and Howse meet to form the North Saskatchewan River.
Inside Jasper National Park there is the Whistlers Mountain, a mountain retreat with all the modern amenities of a city surrounded by breathtaking scenery and an abundance of wildlife.
Two hours drive from Lake Louise we reached the Columbia Icefield, the largest reservoir of ice and snow in the Rocky Mountains. The Columbia Icefields Center stands across from the glacier. It is used as a lodge and for ticket sales for sightseeing on the glacier. Standard buses transport tourists to the glacier edge, where they board specially designed snow coaches for transport over the steep grades, snow and ice part way up the glacier.

Whistler also boasts a collection of crystal clear mountain lakes such as Valley of the Five Lakes, Jasper Lake, Pyramid Lake, Medicine Lake etc., make you feel it’s just like heaven. After explored Jasper National Park, we drove down south to Mount Robson Park, the highest peak in the Canadian Rockies, towers over the lesser surrounding peaks; winter or summer, this is one of the finest views in the Rocky Mountains.

The spectacular wilderness of the CANADIAN ROCKIES is filled with glacial lakes, silent forests and the occasional grizzly bear. The mountains rear straight up to the sky from the flat brown ocean of the prairie, overwhelmingly huge and majestic.
There is an on site Tourism Information Center, it is also the best spot for sightseeing. Nearby is a bear warning sign, Mount Robson also known for bears, so beware of wild life and take precautions in order to avoid some unwanted consequence. Despite the sound of the nature and the scenic drives, which precluded really good photography, our Rocky

Mountains experience was so exhilarating. The following morning, before driving back to the airport, we swung back to the spot for a second brief look. The early fog was just beginning to lift in the morning sun and the scene was so powerfully described in words that further elucidation was unnecessary, a fitting end to a splendid trip and a sight none of us will soon forget.

The capital Vientiane, by contrast, is neither dramatic nor anything like a capital city. Vientiane was the old French colonial capital. Many of its old French colonial buildings still remain intact, dusty streets free of traffic it has a certain quiet, seedy charm.
was started in 1962 and was finally completed in 1968. Resembling the Arc de Triomphe in Paris from a distance, one sees the Lao architectural style upon closer inspection. This arch has a four sided gateway and the overall height of the arch is seven stories high. The top of the arch is accessible and you can view the surrounding area from there. Getting up the Paruxay is fairly simple as there is a staircase leading up. As you make your way to the top, you will also see some small souvenir shops. Once at the top, you get a good bird’s eye view of the area. It dominates the scenery from all directions.
At the northeastern end of Lane Xang Avenue arises a hugh structure the Patuxay, one of the top spots to see while visiting the capitol of Laos. The Patuxay Arch was built using American funds. The US government had given Laos money to build a new airport, however the Laotian government of the day used the money to build the monument instead.
