The walk will begin in Kirriemuir, Scotland, where Christina’s career began, and conclude at her current practice in Brighton, passing through 32 destinations. The money raised will go towards Mouth Cancer Action Month. Christina said: “I feel very passionately about improving oral health and widening the access of care for everyone. It’s a subject close to my heart and I’d like to get as many people as

You have the chance to join me and help to make a difference. “Even if it is through a small donation or supporting your local community, I hope walking 500 miles will prompt people into thinking about how a healthy mouth can make all the difference.” One of Christina’s patients, Welsh actor Steve Spiers, is lending his support to the campaign. Steve said: “I’m backing this campaign as I was genuinely staggered to hear that more people die of mouth cancer than cervical and testicular cancer together. A cuddle from your other half? They might not have showered.

I didn’t realise how much I loved sleep. But in the last 20 days, I’ve only slept for more than 4 hours in one go, once. And when I did, in my dream, I actually went to sleep. My life would be the worst script for Inception ever.

Short of the obvious ones like ‘oxygen’ or ‘nutrition’, which leapfrog ‘miserable’ en route to ‘over’, I know the answer. And it’s the same answer for everyone. It’s sleep.

This is being so flat out I don’t have time to wallow sumptuously in a ‘syndrome’. Lying back in bed tweeting to my midnight followers how I can’t be rested seems almost romantic compared to sleep taking second fiddle to the 3am chore of scraping baby sick off a mattress.
OK, we get it Stephen! Sleep deprivation is torture. But it literally is.You might think a ‘bad back’, an ‘ingrowing toenail’ or reporting a fault to BT is torture but whereas inflicting those at best will garner pockets of sympathy, only one of these processes will have Amnesty International organising a fundraiser. The UK government had to rule on this a few years ago when a UK terror suspect kept attempting suicide due to the use of it. And no wonder. I often look at death now as a cheeky lie-in.

When I discuss being a Dad, fellow childless mates tell me of their fears, ranging from less partying to less spontaneity. Basically, they mean less sex. Well, don’t be fooled by this. The Beatles may have said that All You Need is Love. Even The Hollies said it was The Air That I Breathe, and to love you. But the fact is, if I finally get my beautiful wife into bed with me with an hour to spare at

Mondays to Fridays they do a special lunch menu, choice of three starters – one meat, one fish, on vegetarian , ditto three mains and three deserts for £18.00 or A la Carte, which we had, £27.50 for two courses, £35.00 for three. Their wine list has been put together by someone who really knows what they are doing and there is much temptation within a sensible price range, and plenty of choice under £30.00. Notably a fine Pinot Gris, a Picpoul de Pinet – a favourite of mine – and a glorious Viognier. We had a superb Pouilly Fuisse at, for this quality wine, a bargain at £45.00. The Rose choice is small, but there is an interesting selection of fine quality Italian and Spanish among a very eclectic red wine list, again with plenty of bargains. How did you get in to cooking? The first TV programme I ever saw on Channel 4 was called ‘Take Six Cooks’ and it was all the serious, old-fashioned chefs and there was no silliness, it was a proper cooking programme. Seeing professional chefs do that sort of thing was really the inspiration that kicked it all off. Where did you train? I went to college in Nuneaton, which is in Warwickshire. What was the most valuable lesson you learnt? To listen. To listen and get it right, first time. How does working at The Grand compare to previous jobs? When I started at college in Warwickshire I actually did my work experience at St Catherine’s Lodge in Hove, which was a hotel in 1985. I used to come back from a night out, after a few sherbets, and look at The Grand and think ‘I’ll be the chef there one day’. So it’s ticked one of my career boxes but having achieved that it’s been really good having full
command of what that restaurant needed to be. Specifically, the food; how it was going to look, the concept and the fine detail like what we were going to serve dishes on etc… It’s a valuable chance to learn about how to put together and develop a restaurant and more importantly what needs to be delivered for it to be successful. So was it like fulfilling a dream working at The Grand? Yeah it’s a dream completed, so it’s like living the dream now. What would you say has been your best culinary idea? We did a dish for a competition the other day which was a beetroot ice cream and that’s gone down really well. Do you have a favourite Christmas dish? We do a turkey ballotine where we stuff the turkey legs, which is nice because you’ve got the meat and stuffing, parma ham, spinach and cranberry.
Do you use a lot of local produce in your food? Yeah we try to source all our ingredients as locally as we can, all our fish is local and we also have a local veg supplier. The quality of fish is obviously important, so we get it from the fish stand down by Hove Lagoon. What is the one tool you can’t do without in the kitchen? A spoon, for tasting things. To be able to taste what everyone is cooking and make sure it tastes right is one of the most important things. If you could give three tips to budding chefs what would they be? “One is definitely to learn your trade, concentrate on what you’re being taught and apply it. Another is to have a set goal, for example, if you want to work in five star hotels make sure that’s what you achieve, have a focus on that goal. by Simon Broad It seems clear to me from chatting to customers doing our wine tastings that the majority of people buy their wine from larger retailers or mail order companies. There’s no doubting that it’s hard to compete with the bigger guys on price point, and they’re convenient. But who wants convenience? We’re talking about wine, unique partly because of the way it interacts with your senses and memories, and I truly believe that if you’ve made the time and effort to enjoy finding a good bottle, you’ll enjoy that wine more when you open it up and share it. There’s two basic ways to approach the enjoyment of wine: there are those times when you just feel like a glass of wine and really any reasonably well-made bottle will do the trick. The 12 artworks of Christmas Jenni Davidson previews the Christmas Artists Open Houses
O
n the first weekend in December my true love gave to me 12 handmade cards, 11 tree decorations, 10 cups of tea, nine mulled wines, eight screen prints, seven Sussex landscapes, six wood cuts, five stoneware bowls, four pairs of earrings, three crocheted scarves, two cushion covers and a snoop around someone else’s house. Almost as traditional in Brighton now as turkey dinners and Christmas lights, the Christmas Artists Open Houses run for the first three weekends in December. They’re perfect for original Christmas presents (for yourself, as well as everyone else) and you can pretty much guarantee that whoever you buy for will not already have one just like it already. Plus you can feel smug about shopping locally and supporting independent artists. You might just need a magic sleigh with reindeer to make it round them all, so here are a few of the more unusual houses that you must see this year: 75 Stanmer Villas Brighton BN1 7HN Everyone knows that one of the joys of Artists Open Houses is having a nosy around arty homes to check out the décor and the furniture, and this house is like no other. Winner of Best House 2013 at the Artists Open Houses in May this year, The Ceramic House is an art
installation in itself. There is ceramic on every available surface in every room. As well as being a showcase for Ceramic Householder J Kay Aplin’s own work, some of the other highlights are the botanical vessels of Renee Kilburn and Mandee Gage’s mysterious pod tableaux. 39 - 2 Knoyle Road, Brighton BN1 6RB Artists Open Houses are always a great opportunity to chat to artists about their work, but 2 Knoyle is going a step further and offering the chance to see how it’s done. On Saturday 7 and Sunday 8 December at 2pm painter Jane Dwight will be demonstrating the art of Chinese brush painting, a traditional oriental technique where each brushstroke forms a defined part of the painting that cannot be changed or corrected. Frederike de Jong, a Dutch photographer who counts Quentin Crisp as one of her subjects. She specialises in the theme of transformations and she has papped transvestites, transsexuals and New York drag queens. Also on sale is Missy LePink’s healing tattoo tonic skin balm. You can’t get more Brighton than that, really. 29 – 92 Centurion Road Brighton BN1 3LN Brighton choreographer Billy Cowie has toured over twenty countries with his dance installations and in his recent works he has collaborated with German artist Silke Mansholt, whose drawings and paintings have been projected onto the dancers. Extracts from Cowie’s installations Art of Movement and Jenseits are being shown alongside Mansholt’s artwork for the first time at Centurion. The drawings will be on display continuously while Cowie’s installations – complete with 3D glasses – will be screened at half past every hour. Tips: DO dust off the skidoo for a trip to the more outlying houses. Not all of them are in the city centre and it’s worth making the expedition. One last thing is to understand how many of that piece have been or will be produced. There is a huge difference between a unique piece and an edition. More on that later. Galleries should be able to advise you but don’t necessarily trust them. They are there to sell. Buying directly from artists is a good idea if you trust your judgement because you’ll generally get a better deal and it’s nice to know who made it. People often begin to collect the works of certain artists and it’s more fun if you know them. You’ll also have a huge and direct impact on the life of that artist who probably really needs the sale. If you look at how long something takes to make versus what it costs, at the lower end of the market art is about the best value thing you will ever buy. Artists never charge enough.

Good tidings we bring ‘Tis the season of peace, goodwill and giving, so we have asked how our local schools are getting involved in the community during this time.
Brighton College Pupils of Brighton College play a very active part in society, raising thousands of pounds for local and national charities annually and this year is no different as the school’s yearly ‘Make a Difference Day’ sees every pupil and every teacher spend the day working in the community. As part of this autumn’s Make a Difference Day, a group of pupils visited St John’s, a local school supporting students with learning disabilities, where they cleaned and painted walls and took part in a friendly football match against the hosts. Other activities included laying new flower beds at the Stanmer Permaculture Garden Project, collecting in aid of Breast Cancer Research, tending to the New Road Nurseries, clearing shrub at Wolstonbury Hill and tidying up the sheltered housing at Cravenvale. Further deeds involved cake baking, giving blood, sprucing up several of the churches in the Brighton area, helping at Coastway Hospital Radio, cleaning cars in Kemp Town and litter picking the length of Brighton beach. In total pupils gave their time to over 60 local and national projects. With over 900 pupils out and about, work was completed in a day that would have taken local ground staff weeks and Jeanne, from the Stanmer Garden Project, was pleased with the outcome. She said: “Our regular volunteers will greatly benefit and I know that they will be pleased too; we are now a good three to four weeks ahead of what we would have been able to accomplish without Brighton College”.
