As a photographer as well as an editor, I am fascinated by the way the 20th Century was documented by talented and often fearless photojournalism. One magazine, Picture Post, captured the imagination of the British public, with its social documentary, campaigning and great photos. At its peak in the late 1930s and 1940s, it was bought by almost two million people every week. One of the Picture Post regulars was Brighton-based George Douglas, who moved back from America to contribute to the magazine. His archive of photographs has been restored and reprinted by two modern-day exponents of the art of photography, Roger Bamber and Nigel Swallow (perhaps best known for the Brighton calendars that adorn so many kitchens in the city), ready for the Artist Open Houses Festival. It is an exhibition not to be missed. George was also a prolific snapper of Hollywood celebrities (especially Audrey Hepburn, who he adored). Continuing the celebrity theme, we also feature an interview with Andy Gotts, who is on a mission to photograph every single BAFTA winner and nominee since the award’s inception in 1954. With all these icons of celebrity, the choice of our front cover was easy. It had to be our very own Marilyn, Laura Nixon, who is one of the finalists in Proud Cabaret’s search for Brighton’s favourite pin-up. In typical Proud style, the competition on April 2nd is inspired by 1940s and 50s vintage glamour and a hint of cheekiness. As always, it will be a little bit saucy and lots of fun. However, this month isn’t just about retro style and last century nostalgia. The future of fashion can be found at Churchill Square. ‘Zap’ the code on page 7 with your smartphone and the Spring / Summer catwalk show will come to life before your eyes. UNZIP THE NEW WAY TO SHOP A ground-breaking new technology at Churchill Square is set to alter the way people shop and Daniel White caught up with Kaye Walker to find out what to expect. Words by Daniel White The way you shop is changing. Much like the shift that was seen when customers traded in high streets and shopping centres for the comfort of online orders at the end of the 20th century, a transformation has begun once again. Brighton’s Churchill Square shopping centre has introduced a ground breaking technology that will allow customers to see the spring/summer fashion show brought to life in front of their very eyes. Forget about clambering to get the best view at the catwalk this spring, a visit to Churchill Square will allow you to view the Zap it, Unzip It! fashion show live on your smart phone. Kaye Walker, Head of Marketing for JLL; who handle the marketing for Churchill Square on behalf of the owner, is excited about the first fashion show of its kind to be created by a UK shopping centre. “The main driver behind the whole initiative was that we wanted to do something different,” she explains. “Shopping centres have done fashion shows for years and Churchill Square always likes to do things a little different and I think it reflects the personality of Brighton as well.” Through a simple scan of one of the Zap codes placed throughout Churchill Square, Absolute Magazine, online and various outdoor sites, the user is not only able to view the fashion show come to life through their smart phone but is also able to access information about the models’ clothing. Walker says: “There’s going to be codes externally and around the centre that will all link through to our website where people can see the different outfits, where they can buy them from and then there will also be exclusive offers and discounts available.”

times and Walker is looking to provide more than just a shopping space for those visitors. “It’s all been about delivering more of an experience for our shoppers, giving them something extra,” she enthusiastically describes. “So with the Zappar fashion show we can showcase different trends, we can showcase things for different age groups, we can get more males and females in than we’ve ever historically been able to do, so it works on lots of levels for our customers but also our retailers as well. “We’re seeing click and collect changing an awful lot in terms of people ordering online and then coming in, I also think it influences a lot of people’s decision making so I think things will change massively.” Although many have said online shopping would see the end of high street and shopping centre popularity, Walker is convinced that, with enough effort from shops, they can both be encompassed in the future of shopping. “The biggest thing we all have to do in retail to survive is to embrace digital because it’s there,” she warns. “Our mobile phones will become our purses and our wallets; we won’t need credit cards and debit cards, so it’s connecting the digital world with the shopping environment.” While the current Zap It, Unzip It! fashion show will be available for the month, following its launch on March 28th, its future is bright for this special technology. Walker says: “We have an urban fashion show planned for autumn/winter, so we’re doing something completely different but also our digital strategy is set to continue so there’ll be lots more coming, so watch this space!”

GOTTS YA! Celebrity photographer Andy Gotts has uniquely snapped every Hollywood celebrity you can think of. And now he’s taken this feat one step further, in his latest task of photographing every single BAFTA winner and nominee since the award’s inception in 1954. Prepare for a few late nights… Robert De Niro

“The problem is actors hate being photographed!” he laughs. “A lot of them like being actors because they are being someone else.They can’t be still for the camera; they act being someone else.”

Gotts, whose Behind The Mask photography exhibition runs at Somerset House until February 7, favours a ‘warts ‘n’ all’ approach to his craft, using minimal make up on subjects, no retouching and “absolutely no Photoshop.”

Gotts quips that singers enjoy the camera more than actors and the veteran photographer has plenty of material to back up this theory.

This bare-boned approach has produced some iconic shots of Hollywood celebrities over his 23-year career. In order to achieve these results, Gotts stresses how important it is to make sure that every subject he snaps feels comfortable, because a relaxed client leads to a spontaneous, captivating picture.

“Anthony Hopkins wrote me an articulate letter saying he will be shot, but how much he loathed it. But if I was doing a job where I was a different person every day and then I had to sit down and be myself, maybe I wouldn’t be happy.”

“Talk to them! In the first 10 minutes of chatting to someone you’ve never met before, you can gauge their humour, what sort of person they are, and then ease into the photography. The

chat starts to be the photography. As you’re chatting, you then start doing pictures, then chatting, pictures, chatting, pictures, and a bit more chatting.” Aside from conducting a conversation with the occasional snap, Gotts has plenty more tips for photographers, both amateur and professional. “The biggest tip I would give an amateur or professional, is that when you’re shooting, be in the room by yourself. No assistants, have no-one else there at all, just the two of you.” “I have been interviewed and photographed by a photographer with assistants; I know what it’s like to have more than one pair of eyes on me in a photo shoot - and I hate it too!

Gotts also has tips for the practical element. A self-proclaimed old-schooler, Gotts has relied on just three cameras in his career. And only recently, and very reluctantly, did he make the transition from film to digital.The perfectionist speaks wistfully of his staple equipment. “I used my Mamiya RB 67 camera for every single shoot up until four years ago! It was perfect. A film camera, no battery, 100 per cent manual. It wasn’t until people wanted to see things instantly, that I needed a digital. Gotts confesses that he re-routed to digital “shooting and screaming.” “Now I use a Phase One Hasselblad. I just don’t like the fact that now people can ask to look

back at the camera shots. In the old days, people couldn’t see the frames until the contact sheet was posted to them - it took about a week.” Whilst Gotts may have made a transition in technology, his iconic shots have kept their essence. This is largely due to his traditionalist approach to setting up studios for his character studies. “I don’t use 20 flashes, I don’t use Photoshop. The background will be black, white or grey. It takes about a minute to put up! I use about three flashes, all attached to a battery. “I know where I put the lights, what effect they give me. I put the camera to eye level, I hoff my tripod up to nose level, point it at the nose so that I know the eye is about an

“But if you look at Hollywood, there aren’t that many actors really who do Hollywood movies. I reckon I can name every actor who’s done a Hollywood movie in the last two years as they’re all the same people.” One thing Hollywood celebrities young and old have in common is a connection to this photographer. Having created an impressive profile over the last two decades, Gotts would never take his work for granted. “I am honoured to do it. Not a day goes past when I don’t consider how many photographers would jump into my shoes to do what I do. Seven Simple Nutritional Tips for Summer Fat Loss Words by ADam Lewis As days slowly start getting lighter and we begin to book summer holidays it’s natural for thoughts to turn to slimming down. Don’t leave it to the last moment. Effective fat loss takes a little time, so start now with these seven simple tips. 1. Maintain (or slightly increase) protein intake It sounds odd to say increase your eating, but you want to avoid hunger and loss of lean muscle so slightly increase your protein intake. Protein is digested slowly helping to keep you full for longer and prevent your muscles from being robbed for their protein stores.

5. Cut back on alcohol Alcohol is extremely calorific, let alone the other ingredients, such as sugar, added to make it taste nice, so if you are serious about shedding weight this is a very quick and easy way to save unnecessary calories. If cutting out alcohol altogether seems like a step too far, at least try to find lower calorie versions, such as spirits instead of pints.

2. Reduce fats (lean sources of proteins) One gram of fat has 9 calories, while 1g of carbohydrates and protein have 4 calories each, so you can save a lot more energy by limiting fat intake even if by only a small amount. Choose lean sources of protein, avoiding red meat and processed meats that contain higher fat levels, particularly saturated animal fat.

6. Don’t skip meals - make them smaller This tends to be most people’s natural reaction when they diet. Although skipping meals does save calories in the short term it’s too severe and not necessary. Going too long without food leads to cravings, loss of energy levels, impaired exercise, and causes your body to lose muscle tissue. Instead, eat the same foods as normal, just slightly smaller amounts. Save 250 calories a day by cutting out 63g of carbohydrates, or 28g of fat, or a mixture of both.

3. Reduce unnecessary carbohydrates Cut back slightly on your carbohydrate intake, but not too much. You should only be looking to lose weight slowly and consistently. A slightly smaller plate at meal times will help save just enough to make a difference without leaving you starving. 4. Cut back on desserts This is a quick method of achieving the previous two tips. Most desserts are high in both carbohydrates and fat and tend to supply additional calories that are not needed. Eat healthy in the main course and you won’t need pudding. Or, try swapping your normal desserts for something smaller, e.g. ‘Low Fat Yogurt’ or two small chunks of rich dark chocolate will save calories if you normally eat bigger desserts.

7. Increase energy expenditure I couldn’t leave without mentioning exercise. One pound of stored body fat has the equivalent energy as 3500 calories, so 3500 in 7 days = 500 calories a day, meaning saving 250 calories by cutting back on excess food is half the battle. Burning another 250 calories a day through exercise you will achieve your goal. Cycling for 20 minutes a day at 16-20mph burns over 250 calories for a 65 kg person. It soon adds up.

Staff at Brighton’s Hotel du Vin will be running the Brighton Marathon for causes close to their heart and Daniel White caught up with them to understand the importance of what they’re doing. Brighton’s Hotel du Vin is used to winning. Since opening its doors in 2001, the city’s first boutique hotel has won numerous awards for its food, wine, décor and hospitality, including scooping Hotel du Vin’s Hotel of the Year award at last month’s company awards. However, the challenge facing Deputy GM Adam Rice and Maintenance Manager Sam Patterson is looking a tough one to win. The pair, based at Brighton’s Hotel du Vin, will be running in the Brighton Marathon this month for their choice of charities and, other than some nerves, cannot wait to get going. “It’s quite nerve racking at the start when you’re waiting, all the nerves are there and

then all the training kicks in once you’ve been waived off and it’s a great feeling,” explains Patterson. “I’ve been to a few marathons in other places but the support you get in the Brighton one is absolutely phenomenal. The last few miles when your legs are giving up the crowd just lift you.” The duo, who have both previously run the Brighton Marathon, are not taking anything for granted, though, this year as they get ready for the gruelling 26-mile run. “There are some days where it all depends on how it’s been at work,” Rice says. “Yesterday I worked 11 hours and then went for a four-mile run at 11.30 last night, which in reality is the last thing I wanted to do but

it’s days away so it’s got to be done but I’m comfortable with it.” Despite training throughout winter and spring, the timing of the seafront marathon is cause for concern for the experienced runners. “I’m wondering how the weather’s going to be because the last time I did it was three years ago and it was scorching,” Rice recalls. “I’d done one run in the sun, the rest of it was all cold, rain, wind, nights, whatever. So that makes it quite difficult when it comes to race day; it’s nine o’clock in the morning and the sun’s already beating down.” However, for both Patterson and Rice, the charities they are running for have touched

We are very grateful for their efforts and the generous time and energy they are putting into supporting us.” - Frances Duncan, director The Whitehawk Inn them and continue to provide that extra drive when training seems unappealing. “I’m doing it for the Whitehawk Inn, which is a local charity I think is great,” Rice states. “It gives people the opportunity of learning from all aspects and all ages and it’s just a nice foot back in the door for people that have fallen upon hard times.”

Patterson, who will be running in his third Brighton Marathon, says: “The charity I chose was Cystic Fibrosis Trust. My sister’s little boy has it so it’s close to my heart so it’s nice to make the effort and get out there and raise some money for it. “It effects the lungs in children, the life span is shorter, some of them get up to 45 if they’re lucky but I know things have improved vastly in terms of medicine and gene therapy so it’s just about getting money. There’s research going on all over the world so it’s just getting that break through but it’s all down to money as well.” While the couple are pleased to have so far raised nearly £900, they were also quick to praise Hotel du Vin for their focus on charity-based causes. “One of our main charities is Rockinghorse, which since the hotel star ted has been one of its designated charities,” Rice explains. “Everything that they do and what they stand for is fantastic but the hotel within the community, within Brighton, is very much based towards the local charities, we also do a lot of national things but par ticularly Brighton, within the city itself, they are very suppor tive.”

In March, the Rockinghorse Children’s Charity Chief Executive, Ryan Heal, stopped by Brighton’s Hotel du Vin to receive a check worth £10,000 that has been raised since September. Heal, who also in charge of the Rockinghorse’s projects and trusts, said: “Thank you so much to Simon Maguire and his team at Hotel du Vin for the continued support and generosity. They have helped us to raise over £10,000 from a variety of events that we have held at their wonderful venue throughout the last 6 months. Their support will help us to continue to provide the vital services that are needed at both The Royal Alexandra Children’s Hospital and Trevor Mann Baby Unit.”

Stephen Grant Flood Brothers People like living near water. That’s just obvious. What’s not obvious, is why. Sure, looking back over history the advantages were huge - with the earliest mass transport mostly limited to boats and barges, a riverside property would be the modern day equivalent of living just off a motorway junction. And going back to prehistoric times, it would fulfill the most basic life requirements. Drinking. Bathing. Sewerage. Even when those three were performed simultaneously, it was still a fair few rungs up from ‘cave’. However, as the world became more industrialized, so did our use of water. Rivers became every factory’s favourite power source, cooling apparatus and toxic toilet; beaches became concrete ports, and lakes became a handy alternative to municipal tips. So with that in mind it’s puzzling as to why, 100’s of years later, and with some of the worst floods in living memory having ravaged the country, the British obsession with waterside living is still at a frenzied high. If you don’t believe me, check house prices for coastal properties versus a mile in-land. Your surcharge for being the frontline defence against hurricane winds and destructive tides is hard to comprehend. “... However, this house, just three roads down on the seafront, is certain to flood, erodes at 5 times the

speed, and will have its windows blown in twice a decade. You’ll take it? That’ll be £250K more. Kerching!” This is not just a British obsession but elsewhere in the world, it still makes sense. If you live in Brazil, the beaches are a must. If you live in Greece, it’s the cleanest air away from their overpolluted cities. If you live on The Isle of Man, it allows you to leave as quickly as possible. Look at Australia everyone lives on the coast. The middle is this featureless, pointless, desert. It looks like an unfinished jigsaw puzzle. So I can’t have been alone in noticing that a large chunk of those personally affected by the flooding were from the affluent middle classes. Some slightly hair-brained observers felt this was nature’s way of reducing economic imbalance; a purge of the middle classes, as if nature had to choose between this and surreptitiously poisoning large reserves of mineral water. But from my perspective, there’s no schadenfreude. I’m not revelling in their misery at all; loss at this level is a great leveller. It makes little difference if you are in a two bed maisonette or a 7 bed country pile when the property’s main feature is raw sewage meandering leisurely through the ground floor. The only person I never feel sorry for is the cast-iron tit in a canoe who pretends

I

recently found myself on the receiving end of a glorious dollop of snobbery. I know, snobbery, how deliciously old fashioned. We never experienced this sor t of thing when we lived in Kemptown. I suppose it is harder to keep up your pretensions while walking up St James’ Street as a drunk seagull when one foot pushes past you to get into the betting shop (ps I love you St James’ Street, you know I do baby) but here in the wide avenues of Hove it appears that this aspect of the English class system has the rarefied air it requires to survive. I am not for one second suggesting that ever yone who lives west of the Peace Statue is a snob, of course not but I have definitely encountered those that put a lot more energy into the word “actually” when informing others that they live not in Brighton but “Hove actually”. I have found, though, that if you live here long enough it does star t to rub off. When talking to some hip young things in London I told them that I lived in Brighton but when asked by people my age and older, my residence is very much in the Hove area. Is that a form of snobbery? Am I tr ying to impress? Being confronted by someone who is “stuck up” does kind of take you by

surprise but it does also make you question your own prejudices and we all have the potential to feel superior about something. Music, the breed of dog you own, holiday destinations, misuse of cutlery I can guarantee we all have at least one thing that gets right up our upturned noses.

Some personal reflection has highlighted that I can also be a ridiculous snob about some very par ticular things and most of them are connected to the great love of my life, food. For example, I do tend to look down on people who cut their cherry tomatoes stem end to end and not across the middle. Don’t ask me why, I have no idea but the feeling is absolutely there! There would be no second date for me with a person who ordered a white wine and lemonade spritzer. I ordered a salad in a small town restaurant not so long ago and it came with a twist of orange on top, it very nearly sent me over the edge folks.

I fear I am a mere amateur, though, when it comes to snobbery. I once got floored by a black belt snob in London. I was in the very pricey shop Tiffany’s because I was buying a gift of two crystal champagne flutes for a friend. They were expensive glasses but nothing compared to the other goods on offer in this famous

MIKE CARTER: A MAn of MAny PArts Words by Tim Parker


O

ur City is full of talented and creative people, none more so than Mike Carter: playwright, theatre producer, impresario, musician, yachtsman, training consultant, and now film director, which in itself is a difficult and demanding craft. I first met Mike some eight years ago when I went to ‘Oh Rats!’ at the Gardner Arts Centre, Sussex University. The show, based on Robert Browning’s poem ‘The Pied Piper of Hamelin’, had been devised, directed and produced by Mike. Cecile B. DeMille used to boast about his cast of thousands; Mike didn’t do too badly though. His was a pretty large cast on a comparatively small stage: some 235 performers made up of pupils from St Christopher’s School, Hove and most of its staff, accompanied by a splendid live band. The show did extraordinarily well at the box office too, selling 1,500 tickets, an astonishing number for a school production. I reckon that if Cecile B DeMille had seen the show he would have hired Mike on the spot. Some 22 years ago, Mike set up a Theatre Summer School at the Gardner Arts Centre. The Summer School gave its students a unique opportunity to work with professional actors, dancers and even circus performers. Mike still runs the courses every August at Sussex University, Roedean Theatre and The Windmill Theatre. I remember calling in one day several years ago: everybody was having a great time. Mike also wrote, produced and directed no fewer then 18 Christmas Shows for the Gardner Arts Centre. The final production in 2004/5 was Pinocchio. Mike had somehow managed to turn it into a circus extravaganza with fire juggling, knife throwing and stilt walking!

“Of course I do,” he said, “but inevitably time moves on, although I am very sad that the Gardner Arts Centre is still closed, it was a precious resource for Brighton and the University.” “I find it difficult to understand,” I told him. “There must have been an understanding, even if only an unwritten agreement, that Sussex University, having been given their land by the Brighton Council, were duty bound to share the theatre with the local community and maintain close links with the town. And now, not only does the theatre remain closed, but the Adult Learning courses in the Russell Buildings have been cut.” “I understand that there are plans to reopen the building which is very exciting,’ Mike told me. Let’s hope that happens in the near future. “What are you up to at the moment, and what are your plans for the future?” I asked Mike. “Well,” he said, “My Body Language courses are proving very successful. Non-Verbal Communication is so important, in everyday life and in business and academia. The right body language can help diffuse a potentially confrontational situation or even persuade people to embark on a specific course of action. Empathy is essential in all walks of life and good body language will help engender friendship and understanding.” Mike’s client base includes The Bangkok School of Management, G4S and the global pharmaceutical company, Roche Diagnostics. Much of Mike’s work is with teachers, and he trains Newly Qualified Teachers across the country.

But now Mike has a new passion: Film Making! Mike’s first feature film, ‘Connected.’ was released in 2011. My wife Beth and I saw it at the Odeon, Brighton Marina and we I went to see Mike the other day and asked much enjoyed it. ‘Connected’ tells the story him if he missed the old days. of Jack and Louise, a devoted couple with an extraordinary ability to communicate telepathically. After an uncharacteristic row one Monday morning, Jack leaves for work. Minutes later Louise tries to send him a telepathic message to apologise. Distracted, he drives into an oncoming car. Louise feels the impact. His death rips her apart. husband. And then she sees him - or at least she believes she sees him - at her young son’s end of term concert. The next morning he is in her kitchen preparing breakfast, explaining that he has 24 hours to spend with her. Those next 24 hours change her life as much as his death did. The screening played to a packed house and there was simply no doubt that the audience, like Beth and I, found the film gripping, interesting and moving. It had a great score too by the composer, Corin Buckeridge. The film was immediately taken by High Point Media who have already secured international sales for it in New Zealand and Argentina. The film was also shown at Cannes last year. Mike’s latest feature, ‘Fraternity’, is due for release in the Spring of this year. It’s a WWII drama which explores the explosive relationship between two brothers growing up in a rural farming community. The trailer can be viewed on www.mcnproductions. co.uk. It’s a remarkable achievement for what Mike describes as a ‘low budget’ film. With impressive WWII battle scenes, a 1939 Triumph Tiger motorbike, a 1930‘s Fordson tractor, and a Lysander aeroplane, the production values certainly don’t appear low-budget! And that’s just the trailer! I can’t wait to see the whole film. As we said goodbye, Mike was telling me more about the scene from ‘Fraternity’ involving the last airworthy Lysander from the war years in flight. Lysanders were truly remarkable planes. I can remember seeing a whole squadron of them on the North Wales coast during the war and where my Uncle, Frank Pickering, seemed very much in charge…

Wednesdays are the new Fridays. Well, if Hove’s Latino Tapas Bar is anything to go by. On a mild spring evening, the type which surprises you as to how few layers you’re actually able to get away with, my partner and I took a trip along Church Road with eyes for Michael De Napoli’s Latino Restaurant. Upon entering we were greeted with a smile and an irresistible mixture of smells emanating from the kitchen. After being shown to our window table, my partner ordered a glass of the house white wine while I decided to ease into the Spanish flavour with a bottle of San Miguel. After they arrived, we sat sipping at our drinks, allowing the memory of the day’s work to slowly fade away into a distant memory as we watched the bustling street outside, awash with contented faces, all soaking in the pleasantness of this par ticular Wednesday night. 42│

Once we had re-found our focus we ordered some olives and the refreshing Pan Con Tomato, a simple yet surprisingly tasty appetizer. The simplicity of a warm rustic loaf topped with garlic and cold tomato is easy to understand, yet the taste that was produced by David, the head chef, with such few ingredients is not as easy to comprehend. Either way, it was easy to enjoy. Excited stomachs all-round after our first taste of Latino cuisine, we quickly moved on to ordering a selection of their renowned tapas they have on offer, with an eye on some of the new additions that have been introduced following the launch of their new menu; including their Spanish, Mexican and Italian 100% beef burgers that come with a side of chunky chips. However, after much deliberation and a fair amount of contemplation as to how much we could actually eat, we decided upon the Garbanzos; chickpeas with chorizo and spinach, Croquetas Pollo y Jamon; fried

The Mexican burger with chunky chips croquets of chicken and ham, Gambas al Pil Pil; peeled prawns and the Tortilla Clasica; a classic Spanish omelette. While the flow of customers eager to sample Latino’s eatables grew from a steady stream into a miniature tsunami, we were unable to focus anywhere other than the peeled prawns that had just appeared from the kitchen, blazing up a storm in our appetite. Still sizzling as they arrived at our table, the prawns were infused with chilli, garlic and white wine and seemed to have vanished before they had barley touched the tablecloth. Alongside our prawns we were presented with the chickpeas with chorizo and spinach as well as Mikol’s top suggestion, the croquets. Both were extremely tasty and the later especially had my partner and I eyeing each other up for who would be the bigger person and who would have the bigger plate. In the end she won.

Following up closely behind was the Spanish omelette topped with a cheese and garlic sauce that was so flavoursome and moreish my guest declared she had “never had omelette this good before!” Plates well and truly cleared, we able to decline into our seats and take in the authentic Spanish atmosphere that has been a mainstay of Latino restaurant since its opening in 1992. Already a buckle further down on my belt, the dessert menu was placed in front of us and, while neither of us felt sufficiently hungry to order one each, we made a combined decision to order the Crème Catalana, as it has been a long-time favourite of my partner. Despite an earlier belief that we were full, when the Crème Catalana - or crème caramel - was brought to our table, that feeling was soon washed away as we dove straight in.

It would be hard to believe that I am not generally a dessert man as I tucked in with vigour, both of us devouring the perfectly sized finale before our spoons hit the table, mouth flooded with sweet flavours. The Absolute Guide To Tea “there are few hours in life more agreeable than the hour dedicated to the ceremony known as afternoon tea.” – Henry James, the Portrait of a lady If there is one part of life that is stereotypically English, it is Tea. The making, consumption and talk of tea is one topic that can’t escape our shores, no matter what. In the words of actor and singer Jack Buchanan “When the clock strikes four, everything stops for tea.” In England, the history of high and afternoon tea dates back as far as the 17th century. While historians will argue as to where it originally came from, with France, China and India all claiming to have begun this historic tradition, at home, the concept of afternoon tea originates from King Charles II, following the re-establishment of the monarchy. Helped by the influence of his Portuguese wife, Catherine of Braganza, tea soon became popular amongst the wealthier classes before sweeping across the country, becoming the drink of choice for the whole of society. This tradition remains a luxury for most of British society today and, therefore, we decided to take to the streets of Brighton to find out where and how they serve afternoon tea in our seaside city.

A few little questions for LittLe Bird cafe by Anya Zervudachi Who or what was the inspiration behind your name ‘Little Bird?’ We were living in the French Alps and hung around with this amazing designer and motorcycle builder. Over a glass or two of wine we were fooling around with some ‘voodoo branding’ for a company that doesn’t exist. It’s about the relationship between words, ‘Little’ and ‘Bird’ work really well together. The logo is a reworking of a small 1920’s motocycle company. Your cakes get A LOT of attention and in my opinion are up there with the best in Brighton, are these homemade? Tell us all about your wonderful cakes. Yes! Possibly the most photographed cakes in town. These fabulous creations are all freshly homebaked. A PAvilion teA PArty Words and interview by Anya Zervudachi As I approached The Pavilion Tea Company, I was a little shocked I had not stumbled on the tea rooms before, being just outside the Pavilion Gardens and so close to my office. With the beautiful Pistachio green frontage glinting in the afternoon sunshine being a little on the bijou side, you must keep your eyes peeled to discover this wonderful new addition to Brighton’s ever expanding cafe scene. The first thing you notice on entering is how much the place feels like a ‘real old fashioned tea shop’. The back wall and front of the counter being taken up by draws and jars containing the vast selection of teas The Pavilion Tea Company has on offer.

I was greeted warmly by Rachel Salvia and offered an incredible tea menu, almost as long as my arm. I asked for her recommendation on a nice herbal blend and settled into my luscious blue banquet with a pot of Ayurvedic ‘Harmony’ to ask her was a few questions about what makes The Pavilion Tea Company so unique. Are you a tea drinker yourself? Most definitely – I love tea and this is one of the reasons I was so attracted to the job! What is your favourite tea? I like so many teas so it’s impossible to choose just one to call my favourite. I like different teas for different times of the day – Assam Second Flush would be my morning choice – it has a rich flavour with fruity notes and I enjoy this with a dash of milk. However, during the afternoon, I prefer to drink Gardenia or Ayervedic Harmony as they are more refreshing and I love their blossom blends. I understand you had quite an intense training with The Pavilion Tea Company, what is the most interesting thing you’ve learnt about tea since joining? I always knew there was more to tea than a mug of ‘British builder’s tea’, but hadn’t realised there was such a wide variety. There are so many different flavours and I found the tea-tasting in training really interesting. Of course, this knowledge benefits me in my own enjoyment of drinking tea as well as our

customers who may need a little guidance in choosing something new to try. Are all teas brewed at the same temperature? No – not at all. Green, White, Pu’eh and some Oolong teas are brewed at a cooler temperature of around 78°c which is important as hotter water would damage the leaves and spoil the flavours. Other teas, such as herbal infusions and black tea are brewed at the higher temperature of around 95°c. Do you serve any drinks other than Tea? Yes – although we are called The Pavilion Tea Company and have a range of 40 different teas, we also offer refreshing cold drinks such as Victorian Lemonade, as well as hot chocolate and speciality coffees too. It’s also been claimed that we make the best mocha in town! Additionally, we have an alcohol license so people can have a glass of wine with lunch if they wish.

Which coffee do you use? Peyton and Byrne work very closely with Mozzo, a small coffee company based in Southampton. They created a unique ‘Brighton Blend’ for us, which has a lovely smooth rich taste, and in addition to our tea training, we’ve all had full barista training from a Mozzo Master. I have noticed you have a couple of gluten free cakes do you cater for any other intolerances? A TreAT AT TeA Time Words by Anya Zervudachi What better way to spend a Thursday afternoon than with a good friend enjoying tea for two at one of my all time favourite restaurants? Terre á Terre is situated in the historic Brighton Lanes, just a stone’s throw from the beach, the perfect place to visit on a spring afternoon when the beach is still that little bit too breezy to thoroughly be enjoyable. I have always felt Terre á Terre is a real Brighton treasure; it has certainly never failed to surprise guests with just how extraordinary and exciting vegetarian cuisine can be. I often take friends from out of town here as I feel it really is a great representation of Brighton’s fabulous restaurant scene. And now I have another excuse to visit, with the launch of their new spectacular afternoon tea menu. We were greeted warmly by a member of staff as we entered and were shown to a beautifully laid table next to the window to enjoy the afternoon sunshine. On inspecting the menu, both my guest and I had made up our minds almost instantly. The Terre á Tier Tea is a three-tiered selection of savoury, scones and sweets served with your choice of tea or coffee and sounded absolutely delicious.

Considering Thursday afternoon is as good a time as any to enjoy an afternoon cocktail, we decided to treat ourselves to one of the new Teatails Terre á Terre has on offer. I opted for a Lady Grey Gin Martini, a mixture of Organic gin, earl grey tea and organic orange liqueur. The Martini was tart, tangy and delicious as a drink to sip slowly and enjoy with your food. My guest went for the Wild Berry and Mint Tea Caipirinha, which combined Wild berry tea, Cachaca, mint, honey and lime, served long over ice, which was very refreshing and easy to drink. As our cake stand arrived both my guest and I were blown away by how outstandingly beautiful the three tiers looked. Each individual item was immaculately presented, with the overall effect being absolutely stunning. We tucked into the savoury tier first, sampling the buttered baby English muffin with pickled Jerusalem artichokes, fried shallots with Poire William and raisin relish. Following up we tried the steamed rice buns, stuffed with Szechuan marinated halloumi, with kimchi Chinese cabbage, lapsang souchong pickled watermelon and cucumber, a miso chilli sauce and spring onion garnish. To finish off the first tier, our savoury was a toasty Sussex cheddar rarebit laced with Sheep’s Nose Cider and mustard grains, crammed into hotpot spiced cornbread, served with smoked yogurt and salt baked carrot, which again was rich but not overpowering, a perfect afternoon treat. Now I must admit, I had strategically skipped lunch, which I soon realised was a brilliant move as, after our savoury tier, the second and third did seem a little bit of a challenge.

As I told myself I would be hitting the gym with extra force the following day, I decided to go all out and enjoy one of the Tea Soaked Sultana Scones served with Terre á Terre strawberry jam and clotted cream. All in all, I think this has to be my most enjoyable afternoon tea to date. Hats off to chefs Sorcha Dean and Olivia OldfieldBeechy who put our scrumptious tea together, it was an absolute treat.

O

n the first glorious Saturday afternoon of Spring, I was over the moon to have an excuse to jump on my bike and head down to the Marina to enjoy an all together new experience.

A member of staff greeted us as we arrived and introduced us to the two dance instructors; Stuart Barrett and Lizzie Abrahams, who would be taking the dance class.

Having lived in Brighton over ten years, I must admit I often find on a sunny Saturday afternoon it is hard to find anything more enjoyable than a good pub garden or the beach to wile away the afternoon hours.

We were offered a drink before the dance began and then asked to hit the dance floor with our partners.

Having never attended a 1940’s tea dance before, I was a little unsure of exactly what to expect but as ever, excited by the prospect of having a good boogie. As we entered the large, sunny room at Hotel Seattle, the first thing to take your breath away (before the dancing kicked off) was the incredibly beautiful view over the Marina. Helped by the radiant sunshine, my guest and I happily discussed how much it felt like we were on a cruise ship with all the friendly faces, boats and sea surrounding us.

The class was absolutely fantastic, from being a complete novice when I entered, within the hour I felt as if I could happily spend the rest of the afternoon lindy hoping and swing dancing. After the lesson, we were shown to beautifully laid tables and invited sit down to a well-earned afternoon tea. We were offered the choice of joining our fellow dancers or having our own little table for two, which I felt was rather a nice touch. All in all, we had a fantastic afternoon and will definitely be back next month.

First Dates anD Fun

at Be At One Review by Anya Zervudachi I must start by saying, this was by no means my first experience of Be At One, in fact I have been very much a regular since they opened in early December. Whether for a first date (this occasion), out for work drinks or just a night on the town with the girls or boys, Be At One has never failed me. The ambience is absolutely unbeatable in my opinion, with low lighting, fantastic music ranging from old classics to chart hits and the bar staff are in a league of their own. As we made our entrance at about 6pm on Friday evening, the bar was expectedly very lively, bustling with people queuing up for the fantastic 241 offer Be At One offer every afternoon between 4.30pm - 8pm (MonThurs) 4.30pm – 7pm (Fri-Sat). Despite the bar being busy, we were still acknowledged immediately on entering, with a huge smile and ‘hello’ from a member of the bar staff. My guest was amazed by the variety of cocktails on offer and equally impressed by how well the menu was sectioned, so

you can make your choice based on your favourite spirit. I must admit I find this particularly useful, as you can keep an eye on what you drink over the evening. I decided on a Wild Tea and Elderflower Martini. A delicious combination of Absolut Wild Tea Vodka, Chase Elderflower Liqueur, lemon juice, apple juice and a touch of sugar. My guest opted for a Mintberry; a blended concoction of Absolut Raspberri vodka and Chambord with raspberry purée and fresh mint leaves. I had completely forgotten it was happy hour, so I was pleasantly surprised when presented with my 4 drinks, although my guest (as I mentioned, a first date) was possibly a little shocked. Being a tea fanatic, I absolutely loved my martini; it was sharp and sweet with a very distinctive taste of tea. We decided to swap our second drink, which was great as I was keen to sample the Mintberry. Again, it was the perfect combination of the sweet and

All in all, Be At One is well worth the visit, not just for the exceptional cocktails and great atmosphere but for the delightful, knowledgeable and charming staff that will be serving you. THE PERSONIFICATION OF DANCE MUSIC She has been the face of dance music for a generation but for those that don’t know, Daniel White caught up with DJ Anne Savage to discuss her career, Brighton and much more. For those with an inside knowledge of house music, the name Anne Savage will resonate vociferously but for the rest, it will hold little significance. As one of the pioneers of house music, she has thoroughly seen the ups and downs of the business but can remember how it all began for her. “It was so long ago there wasn’t even mixing involved when I started DJing, I was just a genuine music lover,” explains Savage. “Acid house came along and my sister dragged me along to an illegal rave and that was that, I just started buying records and pestering people for sets.” Born in Burnley in the late 60s, Savage fought tooth and nail until she was granted her first residency as the club DJ of Angels and it was here that she was first influenced by her favourite DJ. When quizzed on who her first inspirations were, the was an immediate response: “100% Carl Cox. He was my hero and he was a once-a-month guest at Angels, where I was resident, and he was just like my idol, as well as Sasha and old school DJs like that were a massive influence on me.” With more than two decades of experience in dance music, Savage is a true great, being voted as one of the Top 10 UK DJs in 2008 by The Independent and has many titles, including being labelled “the personification of dance music” and, during her time in the industry, has seen it go full circle. “When I first started it was anti-establishment movement and it wasn’t promotional in anyway, I used to queue up for my set in the middle of a field with a generator with my records in a crate and then it moved out of the fields into the clubs it obviously became popular,” she reflects. “Then it became commercialised and a lot of people said that was the downfall of house music but it gave us all a very good living thank

you very much, so there’s nothing wrong with it being commercialised. Now it’s gone underground again and that’s a good thing because it’s weeded out all of the fat cats who diluted the music and there’s some really good, strong underground music being made again which I’m absolutely delighted about!” Savage will be a panellist at the Brighton Music Conference this month, along with her good friend and DJ Lisa Lashes, and will also be performing at The Loft during the two-day event that takes place from April 11th-12th and she is eager to get started. “I am very excited, really genuinely excited,” she smiles. “I think it’s great that we’ve put the conference on and especially that myself and Lisa Lashes can give our perspectives from the female point of view. Hopefully it’ll stir up some interest and

get people to address some of the issues, obviously nobody is earning anything like they were and I think it’s time to address things like that and just generally give the dance scene a boost.” With much expectation surrounding the country’s firstever electronic music conference, Savage is keen to focus on the enjoyment that is to be had in England’s music capital. “I’ve been playing in Brighton for about 15-20 years and I’ve never had a bad night, I’m not just saying that, I really haven’t had a bad night. The UK is still one of the most important countries as far as digital music is concerned, so hopefully some of the heavy hitters in the UK will just get together and celebrate everything that’s great about the UK.” Anne Savage will be playing at The Loft on Friday the 11th of April, doors at 10pm.

Noah With a high-profile cast including Russell Crowe as everybody’s favourite livestock preservation authority/sailor. It has been billed as a blockbuster fantasy spectacular to resurrect the biblical epic for the 21st century- it’s also had a few run ins with various church groups and organisations. The plot is simple. God is saddened at the wickedness of mankind and sends a great flood to destroy all life on Earth, but instructs Noah, a man “righteous in his generation,” to build a wooden ark and save a remnant of life from the Flood. Noah builds the ark and saves his family and representatives of all animals from the massive flood waters which cover the Earth. I haven’t seen the whole film but was sent a comprehensive trailer which looked absolutely amazing. I’m guessing with the “all-star cast” and incredible talent of the director this will be all you need to make a genuine modern day classic!

“Nymphomaniac” “Nymphomaniac” The story of Joe (Charlotte Gainsbourg), a self-diagnosed nymphomaniac who is discovered badly beaten in an alley by an older bachelor, Seligman (Stellan Skarsgård), who takes her into his home. As he tends to her wounds, she recounts the erotic story of her adolescence and youngadulthood (portrayed in flashback by Stacy Martin). To be shot as a two-par t feature and plans to release the films in both hard-core and soft-core versions. Shia LaBeouf confirmed in a recent interview that the sex in the film “will be real,” Nymphomaniac’s producers said all sex scenes will be performed “with the help of body doubles and visual effects.” Nice work if you can get it.. It’s a 4/5 from me - purely for the artistic merit of the film of course!!!

George had bought the house back in 1964 and though he spent much time in California, he still spent his summers in Brighton and retired to live in the house full time in 2007 until his death in 2010. 2014 marks the 50th consecutive year that Silwood Road has been lived in by a photographer. Now a third Brighton photographer, Nigel Swallow, is setting up studio in the house and will be exploring the archive, reprinting many of its images and exhibiting them to the public for the first time as part of the Brighton Artists Open Houses festival. About George Douglas George was born in Rottingdean, East Sussex, but in 1939 moved with his mother to Dallas, Texas. He sold his first photographs to the Los Angeles Times in the 1940s and moved to Sun Valley, Idaho, in 1948, where he was in charge of photography for the Sun Valley News Bureau, taking pictures of famous visitors including Gary Cooper and President Harry Truman. In 1949 he moved back to LA and began his career as a celebrity photographer with a picture of Angela Lansbury for Life magazine. He fell “more than a little in love” with Audrey Hepburn when he

Boden SpierS Words by Jenni Davidson Running an open house at the annual May Artists Open Houses festival and a chance meeting at a book group has taken textile artist Jehane Boden Spiers down an unexpected path. She has run popular open house The Yellow House since 2001 and co-founded yellowhouseart.com in 2002 to provide a virtual open house for her own and fellow exhibitors’ work all year round. After having children, she was contemplating the problems of continuing with her artwork while looking after a young family, when she met her now business partner, Sue Bateman, at a book group. This led to them founding art licensing company Yellow House in 2011, which acts as an agency for artists’ work being used on cards, calendars and in books. On the face of it, this seems like quite a departure from working as an artist and running an open house, but according to Boden Spiers it’s all a continuation of the same thing. “It was never solely about my own work,” she says of the open house. “It was about curating, putting people together, balancing all that.” Jehane Boden Spiers’ textiles are collages of appliqué, machine embroidery and print incorporating text and image, and selecting images for licensing continues the theme of assembled images from her own work. “The thing that draws me is the psychology of images, why people choose an image over another. That par t of the business really fascinates me,” she says. Being an artist whose own work has been both commissioned and licensed helps with the licensing business, according to Boden Spiers. She knows how things are made and can offer advice on how to reproduce a piece of work, and often suggests to an artist what they might produce. “It still feels very connected to the art and the creativity,” she says. “I think that’s very important.”

“It’s nice if people can understand it’s not just a transaction.” Art licensing has also open her mind to influences she wouldn’t have looked at before. Work she selected for the Open House had to be something she wanted to live with for a month, but there’s no such limitation on the work she licenses. “It’s healthy for an artist to look at as many different images as possible,” she says, “but often you end up sticking with what you’re interested in.” “It changes your own perceptions, not necessarily of beauty, but of what you accept.” Going to art exhibitions, blogging and social media for the company and the constant dialogue with clients and publishers has been almost like keeping a student sketchbook again, she says. Yellow House covers everything from heritage images from the collections of Glasgow Museums to small scale contemporary artists working in Brighton and Hove. Among the work Yellow House has licensed has been cold foiled cards that replicate the enamels of Janine Partington, a pop up children’s book by Brighton illustrator Craig Shuttlewood and greetings cards printed from Jane Robbins’ paper cutouts. The demands of the company and family commitments have left Boden Spiers with little time for her own work over the past two years. She’s still open to commissions, but she would most like to get back to more personal projects, such as large-scale wall hangings.

A Deserted Wilderness Aldrington was once the place where no-one wanted to live Words by Mike Holland

A

n area that has always fascinated me is the New Church Road area of Hove with its fashionable and generally well kept houses. This is the area of Aldrington, yet I have still to meet anyone who mentions this when giving their address. Which leads me to wonder whether one day the name Hove will suffer the same fate and anyone living in the Church Road area will automatically tell you they are from Brighton. Aldrington has a chequered history and the area once favoured for defences by the Romans lost some 40 acres to the sea between the years from 1290 to 1340. This was a fairly dark time for the region in general reading into the returns of 1340 which hint at widespread poverty. Add to this the Black Death and the permanent loss of 40 acres of farming land. Aldrington was then perhaps always going to be doomed as a separate entity. By 1403 there is a report stating that the area is now only suitable for someone who wants to get away from it all and remain solitary usually for religious regions. By 1603 there appear to have been either eight or nine parishioners in Aldrington. They seem to have had something of a revival and in 1670 there are between 200 - 300 people living near the sea, many presumably earning a living from fishing although by this time there was also a healthy trade in contraband. However violent storms in 1703 and 1705 wrecked most of the buildings and many people upped and left. By 1738 there were few buildings left and even the church

had collapsed. The decline continued until Victorian times and got so bad that there is a report that in 1831 there were only two people left in the whole of Aldrington. These were the toll-gate keeper and his wife.The toll keeper had lost one leg and soon after lost his wife as well.Thereafter one obvious comedian a Mr Lower describes the population as three quarters of an inhabitant which would possibly not have been so pc today. 30 years later in 1861 the population had increased again to a whopping seven people.

None of this could last long though as Victorian Hove expanded and just 33 years later in 1894 Aldrington had joined with Hove and now had a population of 2,238 people according to the census of the time. New Curch Road runs in a straight line from what used to be the old village of Hove straight through Aldrington to the border of Portslade. To the South and the North streets are laid out in the grid iron pattern of planning which works well. The area is served by shops in Portland and Richardson Roads the former of which has suffered greatly since the advent of the supermarket although there has been something of a revival in recent years. - Culture|History-

If you find yourself in Wish Park spare a thought for two brave souls who collided in their aircraft in 1917 and crashed in the park having both managed to avoid any houses. Both were instantly killed and one of them Second Lieutenant Crapp is buried in the Churchyard of St Leonards Church Aldrington. It is worth noting that a first world war fighter pilots life expectancy was estimated at the time to be no more than three weeks. Whilst in the churchyard over in the corner next to Crapp’s stone is the grave containing the ashes of Sir Charles Aubrey Smith who actually died in Beverley Hills at the age of 85. He was a great all round sportsman and had captained Sussex cricket team from 1887 to 1889 but was also a formidable footballer. He started a late acting career at the age of 70 hence the move to Hollywood and appeared in “The lives of a Bengal Lancer” and “”The Prisoner of Zenda” to name but two. He was a great friend of David Niven and in Niven’s book “The Moons a Balloon” they both appear in a Hollywood cricket team photo which Aubrey Smith organised and captained. He was knighted in 1944. It’s hard to imagine now that less than 150 years ago the New Church Road area was a deserted desolate wilderness where nobody wanted to live as these days it is one of our most sought after locations. Perhaps dropping the name Aldrington was the key to it all.

A DAY IN THE LIFE… A CHRIST’S HOSPITAL STUDENT

Christ’s Hospital is renowned for doing things a little differently when it comes school life and we took a peak inside to see how things are done. Grace Nicolle Age: 18 Year Group: Year 13 Morning I get up at around 7.15am and lessons begin at 8.30am, after morning roll call. I like the uniform in the sense that I am proud to wear it. I don’t think about the fact it’s different from the uniform that other schools have and because we are all wearing it there is no effect on my relationship with other students. Each single period lasts 35 minutes and in sixth form almost all lessons are double periods, which last 75 minutes. We have a mid-morning break and then lessons end for the day, on most days, at 12.50pm. My previous school only had about 40 pupils aged from 4-16. In my year group there was only 4 of us, at its very maximum, and classes were three year groups combined so it is simply not comparable. Afternoon We march into lunch at 1.20pm and then have actives in the afternoon. Actives range from community action to sports fixtures to music practice to Zumba classes to Duke of

Edinburgh. I look forward to visiting the care home that I go to as a part of community action, it gives me an opportunity to get off school grounds for a couple of hours and do something for other people. I also get a massive amount from doing community action; I love hearing all the stories that the people I talk to have to tell. Everyday poses a different challenge whether it be the amount of prep I have due in the next day, a looming coursework deadline or exam date. To get over work related problems I just get my head down and do what needs to be done, or ask for help if the challenge isn’t one that I can overcome by myself. In terms of challenges in-house they don’t tend to take much sorting, most sort themselves out. Whilst living so closely does lead to occasional squabbles we are like sisters so no challenges last very long. Evening Tea is from 5.20pm until 6.50pm in the dining hall, roll call is at 7pm and then until 9.30pm I do my prep or attend lectures that are taking place and then I am free until I go to bed at around 11pm.

I can’t even imagine how I would be if I had never come to Christ’s Hospital. Since my first day I have grown in confidence immeasurably. For me, the grades I have managed to achieve at GCSE and AS level are just a small part of my development here. As a person I have learnt so many valuable life lessons. I am not just currently in the best place I could be but I have the ability and opportunity going forward to go where I want to be.


Ruth I Fayomi Age: 18 Year Group: Year 13

Morning On a typical day, I wake up at 6am and get myself ready for the day. The uniform is unique and is a treasured part of the school that has grown on its students and is a part of the school I have fallen in love with. The uniform allows for all the students to be “on the same level” thus treating each other as equals. In my opinion, this minimizes the extent of bullying that could be a result of “home clothes”, consequently increasing emotional comfort and stability within the student body. My lessons begin at 8:30, with a break at 11:05, and usually finish by 12:50. My classes at my old school were different in that a single period was an hour long; the shorter periods here allow for peak performance and eliminate the deterioration of focusing. Both in and out of the class, a majority of my teachers are easy to approach and are obvious experts in their field. Afternoon Marching commences at 1:20pm with lunch afterward. I look forward to socialising with the younger years and other students who are also new; this allows for new bonds to be formed and helps me create a family away from home, whilst fostering an older sibling connection as established with my siblings at home.

I have an active from 2 till 2:45pm and after that I focus on prep, catch up on or review work from the day or, alternatively, go to any clubs I have during that time, such as Gospel choir or Spoken Word. Had I joined this school earlier, I would definitely have a longer list of hobbies. From being at Christ’s Hospital, I have blossomed more into the individual I am today; I am more independent and confident and that’s all down to the school and my experiences here. Evening After tea, if I have not completed the prep work, I continue with this, otherwise, I prep for my classes the next day. For any student just beginning at Christ’s Hospital, I would advice that they grab hold of all the opportunities available because such opportunities rarely come again in this enormity; so give everything a try. Be positive. Being otherwise wastes time and energy!

This school really is a school like no other. Christ’s Hospital is good in offering the sense of community - home and family throughout the whole school, an education of high quality and attractive and unique surroundings; it is a perfect platform for students to “find” themselves.
