I aim to provide a truly bespoke,VIP service and experience to my clients on an individual, one-to-one basis. I have utilised my years of experience to create and design a truly special and exclusive environment, whereby clients are welcome to relax and relish in the confidence of being in the hands of a professional where 100% attention is dedicated to them without any pressures or distractions. Every appointment is unique in itself, therefore, it is essential to offer a highly skilled knowledge foundation alongside in-depth communication during the consultation process to enable clients to feel at ease in my attainment for perfection. Where is the salon based and what can we expect? The salon is based directly on the main route into and out of Brighton, allowing easy access and free on-street parking. The salon itself has been developed with exclusivity and sophistication in mind. Taking inspiration from my favourite independent Brighton-based interior shops ‘The Papillon Shop’ and ‘The Three Angels’, I have been able to combine my interests of old and new interior. I would love clients to feel welcome in a setting I have created with them in mind. My eye for detail and perfection is not only present in the salon itself but in my skillset and passion for providing beautiful hair. Every client and every service in hair care is bespoke. No one person has the same hair as another; it is a purely unique service to provide a hair prescription. Therefore, expect to leave the salon with either a precision cut, a glamorous blow-dry, stunningly glossy colour or be on trend with high shine OPI nails. I have chosen to stock L’Oreal and Kerastase hair care, I believe in their quality 100%, and they are the perfect accompaniment in their luxurious results. Do you offer any other treatments beside hairdressing? I do, in addition to hair services I recommend Kerastase scalp and in-salon rituals because there’s always time to treat. As well as, offering Express, Luxury or Gel manicures, applying all areas of the high-end OPI nail care range. Are you able to do bridal hair? Absolutely! Bridal Hair alongside creative hair up work is a favourite and strength of mine. I have recently been to Jamaica to work alongside a beautiful Bride for her wedding, and am very honoured to be chosen as a ‘wedding hairdresser’. This area of my work is something I am passionate and excited about. I provide indepth consultations, thorough pre-wedding hair trials and aim to build a rapport with the bride so much so that come the Wedding day all stress is eliminated. Women’s Fitness Anya Zervudachi talks to LA fitness personal trainer’s Heloise Wright, Louise Beasley and Suzy Walton training, rather than age. Q: Would you recommend a cer tain diet for women hoping to get fitter?

Q:

Are there different exercises that would benefit women more than men?

A:

Absolutely. The best example would be core work, for example, pelvic floor strengthening, which is extremely beneficial to women post pregnancy.

A: Yes! Diet plays a huge role in health and

fitness. A diet made up of good proteins, health carbs and fats, as well as fresh fruit and vegetables will all help.

Q: Will I get bulky from working out with heavy weights as a woman?

Q: Is there anything specific I should try and cut out if I am hoping to get my summer body?

A:

No, we actually get asked this daily. Women do not produce enough testosterone to ‘bulk up’. It would take huge amounts of food, steroids and heavy weights to have that effect. Lifting heavy, will though, improve tone and increase one’s metabolism.

Q: Do I need to do a lot of cardio to lose weight?

A: The view used to be to do cardio in the 60% max range for fat burning but, what we actually want to focus on, is calorie loss and raising one’s metabolism. Contrary to popular belief, recent research shows that this is most effectively done when lifting heavier weights

THE BEST OF HEALTH With summer approaching fast it’s about time to book those flights and start dreaming about the annual holiday or dig out the tent and start preparing for festival fun and frolics. Either way, for most of us this is the time of year to start considering how we look. After months of overindulgence and the use of the wonderful invention the jumper, pounds can creep on and before you know it you no longer need the belt, let alone that extra hole. The word detox springs to mind however it can be a daunting thought if never considered yet undertaken. It is, however, a great way to cleanse your system and prepare your body for what’s to come. Here are a few tips to encourage weight loss, improve muscle condition and enhance the appearance of your body, hair, skin and nails, in fact an, overall feeling of improved well being. Breakfast: Swap your morning tea or coffee for fennel tea, a mild diuretic with anti inflammatory properties, which will help flush excess fluid and toxins from your system. Kick start your metabolism with a protein packed poached egg or some wholegrain cereal.

fLuiD: Drink at least two litres of water a day and remember that consuming alcohol and enjoying the heat will cause dehydration; coconut water is full of electrolytes and will replace fluid levels in the body. Avoid carbonated drinks as they are generally full of sugar and will bloat your stomach.

Lunch: Introduce mackerel or chicken high in protein and omega 3 and beetroot to your regular lunchtime salad as this power packed vegetable owes its velvet rich colour to beta-cyanin; a clever dye which assists the detox of the liver which is responsible for fat digestion and disposal.

OverinDuLgence: Try this quick and easy juice to remove unwanted toxins from your system providing you with an instant pick me up. Simply blend a large handful of watercress, half an avocado, a handful of spinach leaves, a pinch of mint, the juice of a fresh lime and a large spoonful of green tea leaves.

snack: Add a healthy mid-afternoon snack to your daily routine via a small handful of Brazil nuts, packed with healthy fats and selenium; a mineral which produces the active thyroid hormone primarily responsible for regulation of the metabolism. They are also packed with vitamin E, essential for protecting your hair and skin in the sun. Dinner: Enjoy oily fish such as salmon for your dinner as it contains high levels of omega oils essential for strong, healthy and shiny hair; as it is of made of protein be sure to eat adequate levels in order to support it. Accompany with broccoli, leafy greens and sweet potato; rich in nutrients ideal for producing and strengthening collagen which makes our skin look its best. Finish with a kiwi fruit and some strawberries, full of vitamin C responsible for that fresher face look we all crave.

FASHION’S TRENDSETTING INNOVATION Tiffany Roberts set up TIFF as an ethical platform to promote workers rights and is pleased to be making a difference Words by Daniel White

When the Rana Plaza factory in Bangladesh collapsed last year killing more than 1,100 workers from Primark and other retailers, international firms faced extreme criticism for the working conditions of their staff. Uproar spread throughout Asia and Europe as more and more stories were published revealing the inhumane working conditions and hours the garment workers were forced to endure and I, personally, remember the guilt felt when reading Susanna Rustin’s final line in her article, stating: “Some of us are wearing clothes sewn by those killed this week in Dhaka.” Yet, sales figures for Primark and other retailers have continued to increase despite the harrowing stories, so are we supposed to agree such tragedies are acceptable? One person is fighting the battle to end exploitation, with their ethical website enabling independent workers and smaller eco-brands the opportunity to showcase and sell their clothing online for a fair wage. “We live in the 21st century and people shouldn’t be exploited and made to work in awful conditions like Rana Plaza and by buying from the high street that is, essentially, what you are suppor ting,” begins TIFF founder and CEO, Tiffany Roberts. “I can guarantee that none of the people I work with are in that situation so it’s really about suppor ting the small, independent brands and knowing that you’ve directly made a difference to somebody.”

‘Trendsetting, Innovative, Fair, Fashion,’ or TIFF, is a website that was set up by Tiffany just over a year ago. “TIFF is an ethical platform,” she explains. “I work with about 50 brands which are all really incredible. I’m a platform for them to promote their products on a larger scale because being small, independent brands, it is quite hard for them to get a bigger reach, so I am just trying to help them promote their brands and fantastic products. However, by buying from TIFF, you will not only feel great about making a difference but also the use of sustainable materials like organic cotton or bamboo fibre is better for your skin. She says: “You go to a high street and the cotton crops have already been sprayed with pesticides and the dye’s contain toxic chemicals and are really bad for your skin. Organic cotton and bamboo fibre or any sustainable materials are obviously pesticide free, so it really is a lot better for your skin and for the environment during the manufacturing process. Past clothing under the “ethical” banner have been pigeon-holed with certain, unfavourable, labelling but Tiffany is keen to set the record straight.

Fortunately the Sunbeds Act (April 2011) now prevents those under 18 from being allowed to use sunbeds. There are many myths surrounding sunbeds one of which is that using a sunbed will provide protection from sunburn before a sunny holiday. Sunbed ultraviolet radiation merely adds to the cumulative ultraviolet load on your skin responsible for inducing skin cancer and skin ageing . The only time an artificial tanning device should be used is in ‘phototherapy’ in hospital department under supervision. This can be used to treat inflammatory skin conditions such as eczema and psoriasis. This is carefully regulated and the equipment checked regularly.

Are children at a larger risk of sunburn? Yes, children have more delicate skin and are at greater risk of sunburn. They are often unaware of the early warning tingling/burning sensations of sunburn and need to be supervised and protected in the sunshine. Children’s protective UV clothing is an effective adjunct to sunscreens. Episodes of childhood sunburn have been linked with an increase incidence of melanoma later in life.

How much and how often does sunscreen need to be reapplied? It is important to apply sunscreen 15 to 30 minutes before going out in the sun and then repeat it at least every 2-3 hours. If there are other factors such as swimming, perspiration it will need to be reapplied again. Studies have shown that most people apply less than half the amount of sunscreen required to provide the level of protection provided by their sunscreen. The more you apply the better.

Is sunscreen the only way to protect my skin from getting too much sun? No, sunscreens should not be used as an alternative to clothing and shade but as additional protection. Long sleeved shirts and scarves, wide brimmed hats and sunglasses are all helpful. The Australian slogan ‘shift to the shade’ took over from the ‘slip slap slop’ campaign, indicating the importance of seeking the shade in addition to clothing and sunscreens.

Is tanning ok for your skin if you don’t get burned? Unfortunately not. After exposure to sunlight the melanocytes produce more of the pigment melanin to try and absorb more of the damaging ultraviolet rays, so the skin darkens. Even though a sun tan is thought by some to look ‘healthy’, tanned skin is a sign that your skin has been damaged . Tanned skin does not protect against skin cancer. It has been estimated that a tan only affords the protective effect of an SPF 2.

I have eczema; are there any extra precautions I should take? Sunlight itself can actually be helpful in settling eczema; however you do need be careful not to burn. Heat however can make eczema itchier. It is best to use fragrance free and moisturising sunscreens. Physical sunscreens containing zinc oxide and titanium dioxide are better suited to sensitive skin and eczema but can leave a slight white tinge on the skin.

What about my Vitamin D levels? Whilst we know that ultraviolet radiation causes skin cancer, sunlight on the skin helps our body to produce vitamin D.Vitamin D is important for our bones, and it has been suggested that low vitamin D levels are implicated in some types of cancer, arthritis and autoimmune diseases. There is plenty of research in this area at present.Vitamin D can also be obtained from the diet and supplements. The best advice is everything in moderation. Make sure you have some sun exposure but without burning, and ensure your diet has plenty of vitamin D.

Misty Monroe here back for another month of retro goodness and I hope you’ve been checking in on the Facebook and blog in the meantime! Last month I touched on the topic of vintage Summer style and, in this month’s column, here’s some tips to help you take that 50s look to the beach. The vintage style lends itself rather easily to both ends of the spectrum; in the winter there’s long, thick coats, fur stoles and hand muffs and for the Summer we can look forward to pretty swimsuits and cat eye sunnies. Of course, as we know, the general fashion of the 50s and (early) 60s was high-waists and long lengths. Nevertheless, the floaty fabric of circle skirts avoids too much overheating! And, if all else fails, nothing is more retro in the Summer than a handy little fan! I mainly pick mine up from car shows and retro events but if you’re going on a European holiday this Summer season, street markets are the perfect place to pick up a colour for every outfit. Having said this, Accessorize have stocked up on paper fans, with a delicate butterfly pattern the pick of the lot. For swimwear you can take your pick between a high waisted two-piece or, for the less brave like myself, a nice all in one. As I mentioned last month Primark are even stocking up on skirted swimsuits, something I haven’t seen on the high street for a long time. If that doesn’t quite float your boat, though, fear not, it’s super easy to get a classic look from halternecks, polkadots, florals or even fruit patterns, the highlight for me being this tummy control swimsuit from Primark or anything from the stunning Kelly Brook collection at New Look. When it’s time to head out for lunch, throw a coordinating circle skirt over your suit (once dry from frolicking in the sea!) and head to your nearest milkshake joint. BRIGHTON’S RELAXATION SANCTUARY Anya Zervudachi discovered Trafalgar Street’s hidden gem when she found relaxation in Chutima Therapy After an exceptionally stressful week at work, I decided to invest the money I would normally have spent ‘de-stressing myself ’ with the help of a few good bottles of wine and treat myself to a massage. As I walk into the beautiful sanctuary of Chutima Therapy on Trafalgar Street in the North Laine, I am immediately positive this was a worthy investment. I am greeted warmly by a member of staff and welcomed into an ambient Thai oasis. As I sit with my glass of water, the warmth and wonderful scents of essential oils and tiger balm seem to work their magic instantly. I am shown into a gorgeous room with low lighting and soft music and introduced to the masseuse. After mere seconds of lying on the massage bed, I find myself making a mental note to make this at least a monthly visit. Chutima and her team are proud to offer a truly relaxing and revitalizing experience in

Stephen Grant Bloodshed There’s another pregnancy in our family but crucially, my wife knows nothing about it. Our house is expecting. I shall explain. The fabulous Brighton (well, Hove actually) based comedian Simon Evans (no? Google him, you’ll thank me later) has a fabulous routine about how fatherhood leaves him so little time now he can’t... well, let’s say ‘enter tain himself ’. And if you’re having problems getting my gist here; think of how the internet connects you to everybody, but an intranet only connects you to yourself. So in this instance, we are talking about ‘intracourse’. Simon’s gripe is that even the bathroom is a poor hiding place, as only seconds later a young child is hammering on the door needing immediate access. The joke ends very neatly when he says, “that’s it, I’m getting a shed.” Shed ownership is quite remarkable. It’s a middle-aged stereotype that has stayed firmly in the world of stereotype. So many similar age 40+ features have been claimed by others; the teenagers are wearing cardigans, pregnant mums are wearing carpet slippers. Gardening has become ‘retro’ and brewing your own beer is now so

achingly cool you’re practically recreating a budget version of Breaking Bad. So maybe I was laughing at the notion of even owning a shed. Well, I’m not laughing any more. When we bought our new house, the garden we inherited was this beautiful mix of wild and cultured flowers, ornaments, brickwork, stones, railway sleepers, water features and spotlights. Basically, a buffet table of toddler death. Now the weather has got better, our eldest naturally wants to play outside. But knowing he’s most likely to return in, at best, plaster, and at worst, a bag, we’re hiring a landscape gardener to return our house’s garden to an ultra-safe and uber-dull patch of grass and rounded-off decking. And with this transformation comes space and opportunity for a building in the garden - and that’s why, for reasons of sanctuary alone, our house is destined to give birth to a tiny house who will live in the garden. And like most newborns, it will appear to do nothing yet take up huge swathes of my time - and return unbridled joy. These are heady times. I’m scouring the gargantuan local indoor garden centres. I’m basically looking at sheds in sheds. They look

simple and ordinary and by God that excites me. Yes, they’re tiny, but the possibilities are endless. You know the ‘Tardis’? This is the Tardie. Standing for Time and Relative Dimensions in Expectation, it needs to promise nothing on the outside but give something wonderful on the inside. It’s very much the opposite of a gluten-free cake. However, this shed has to be mine, all mine. Lucy cannot know that a mini-building is available to us, or she will start hankering over a ‘summer house’. Ugh. That attractive blend of brick and glass is not wanted. Have you ever seen a summer house used for storage? No, exactly. They’re useless. Have you ever seen an empty shed once its in someone’s garden? No. Every shed starts its life already full. Space only appears when the contents are reorganised. The power-drill is kept in a box fixed together by screwdrivers, and the screwdrivers sit in wall-holes drilled by the power-drill. See? A reciprocal living arrangement. The tools aren’t just happy in here, they’re operating a fully-fledged commune. And their inclusion has the advantage of making the shed a perfectly acceptable no-go area for children. “They can’t come in love, it’s too dangerous”. Now where’s my red wine and copy of Esquire? Good times, people, good times.

arlier this summer I performed at a comedy festival in Inverness called “Happyness”. It is a lovely weekend of gigs in one of the most beautiful par ts of the UK with the odd dram of the strong stuff thrown in for good measure. What’s not to like? I did a little interview while I was up there and the journalist asked me the very simple question, “So, what does happiness mean to you Zoe?” Happiness is often spoken about as if it is some sor t of mythical land. When I have I realised that the things in life that really make my “bum hum” are really tiny things. It’s so easy to get distracted by what we think we need to be happy; bigger, faster, better. But I can honestly say, nothing I have purchased in my life has ever made me as happy as seeing my small ginger terrier leap like a lamb in a meadow. I have decided to pay more attention to the small stuff. I am not interested in the big plan or the grand scheme of things. It’s all about the titchy for me, so I have compiled for you a tiny list of some of the minutia of life that rings my bell.

1.

Getting an actual letter through the post with a stamp on the envelope from a friend. Granted there are less letters these days but even a real, tangible, bir thday or thank you card as apposed to a digital greeting is a wee delight.

2.

Staring at the different kinds of ice cream in a gelato shop always gives me a tiny bubble of joy. They look so pretty and it is a delicious dilemma trying to decide, do you go classy with rum and raisin or trashy with the triple ripple?

3.

Sliders, which are basically burgers but smaller and better because you can eat loads of them. Shetland ponies, half the horse yet twice as cute, same goes for pygmy pigs and goats and fairy penguins.

4.

Hearing a song on the radio that you used to love in your youth and realising that you still know all the words. The lyrics locked away somewhere in the dark recesses of your mind just waiting patiently to be allowed to sing again.

5.

Laughing so hard that you spit your drink out, a liquid laugh if you will. Whenever anybody asks me what is the key to a good long term relationship (I have been with my other half 16 years) I say being able to still make them laugh so hard that tea comes down their nose. It’s not romantic but it seems to work for us.

Peter James visits Azaro in Hove with a short but successful selection in store

Back in my youth, with rare exceptions, Indian restaurants were grim places. Surly waiters, universal – and ghastly - red flock décor with a framed, wrinkled, lop-sided print of the Taj Mahal on the wall, and a couple of dusty, porcelain elephants on a shelf. They were, uniformly, the late-night refuge for hungry drunks. A lot has changed in the past four decades, but even I was shocked to learn what the most eaten dishes in our nation are today. What would you guess? A Sunday roast and fish and chips? That’s what I’d have put my money on – and lost. At number one is Chinese stir fry – and a close second is Chicken Tikka Masala.

are charm personified without ever being unctuous, and every dish was superb in flavour and texture, with a deft lightness of touch and so often lacking in Indian restaurants. Azaro in Church Road, Hove is a place that is capable, I think, of taking the crown in this city. I ate there recently with friends, and the place instantly put a smile on my face from the moment I entered. I liked the sharp, simple modern décor. I liked the greetings from the staff. There used to be a tiny Greek restaurant by the Clock tower, run by a huge and hugely charming Greek, Vasso, who used to greet you by saying, ‘You are in my restaurant, you are in my home.’ I got that same sense at Azaro.

The Ashoka was the first Indian restaurant to raise the bar in Brighton and set a new standard of comfort, service and food. Within weeks of its doors opening in 1977 it was impossible to get a table without a lengthy advance booking, and it still maintains a high standard today. Over the years many have followed, but Brighton’s Indian restaurants have never matched the flair, quality of service or food of some of the great London ones. I’ve eaten in great restaurants in Mumbai, Delhi and Bangalore and yet to find one that come close to touching Benares in Berkeley Square, the Cinnamon Club in Westminster, or, to my mind the star of them all, the Bombay Brasserie in South Kensington – a ten minute walk from Earls Court. I was taken to the Bombay Brasserie for lunch by my Danish publishers during the London Book Fair – does it get much more international than that?! It is a beautiful, elegant, airy room, with courteous staff that 34│

Just fourteen mains – it’s the shortest menu I’ve ever seen in an Indian restaurant. Normally you have to wade through page after page of choices, written in tiny print – and then why do they always put on somewhere in the middle “Chef ’s specialities!” Shouldn’t everything on a restaurant menu be a speciality of the chef? The size of this menu put another smile on my face – they must have begun to wonder by now whether I was some simpleton who just smiled a lot and needed humouring. But I was smiling because this meant that chefs in Azaro were actually going to cook the food we were going to heat, rather than just re-heat it. Brake Brothers provided the opportunity for every landlord in the UK, with little more culinary skills than the ability to boil an egg, to turn his place into an instant gastro-pub. And because of the fine quality of their food, a very acceptable gastropub. In the world of Indian restaurants some operate on a similar basis, reheating food they’ve bought from a distributor and allocating flavour according to what the customer has ordered. There is a good range of vegetarian and non-vegetarian starters, at £4.25-£9.95. Among a selection I tried were a superb, densely-filled vegetarian samosa, bursting with flavour, a chilli paneer, tandoori lamb chops – so good I could have eaten these as a main – and a very delicious and gently spiced crab and fish cake. Mains include – a very fine version of the nation’s second most popular dish, and a Kerula influenced sea bass moily – this ubiquitous fish, which never excites me and rarely fails to disappoint me, worked brilliantly here – this was a very fine dish indeed, and well up to the highest international standards. One guest waxed lyrical about the lamb shank Kashmiri style, and another thought his chicken Chettinad so good he gave me the most miserly nibble to try. Vegetarians are in for a treat with the Vegetable kolapuri – a dish of sautéed mixed vegetables in masala. The wine list is short but acceptable, and sensibly priced, but in general I prefer beer with Indian food as it stands up to the flavours rather than being mugged by them. Azaro has a small, good selection. There’s a pleasant bar area, and Monday to Thursday there are tapas on offer. I liked this place a lot. I was still smiling when I left. The staff nodded their heads. When you are India, if you ask a question, you will often get either a nod or a wiggle in response. I asked what these represented and was told either of them can mean either yes, no or maybe. No maybe about Azaro. I shall go back. FillEt oF maCkErEl, CuCumbEr, Crab patE, horsEradish, Crispy baCon, pEa puréE and shoots Method Ingredients 2 x 400gm mackerel filleted 100gm cucumber heart 30gm brown crab meat ¼ lime juice 15gm crème fraîche 30ml double cream 10gm horseradish 20gm white crab meat 50gm prosciutto 100gm peas 50ml double cream 20gm butter 10ml extra virgin olive oil 1 punnit pea shoots

Pea purée Blanch the peas in boiling hot water for 1 minute and refresh into iced water. Drain and boil the cream and then add the butter. Allow to cool slightly, place peas and cream into the blender and blitz until smooth, season and strain until smooth. Mackerel Trim the fins off the fillet and remove belly, wash and season with rock salt. Cook the fish in olive oil skin side down for 3minutes, turn over and then continue to cook for 1 minute. Finally, remove from pan and rest. Cucumber Top and tail the cucumber removing the ends and then cut a 3” barrel. Trim the sides, so they are straight and season and fry in olive oil until each side is golden brown. Crab pate In a small mixer blend the brown crab meat, lime juice, salt, pepper, crème fraîche until smooth. Horseradish Mix together the white crab meat, salt, pepper, cream and horseradish. Crispy bacon Place the prosciutto onto greaseproof paper sandwiched between two metal trays and bake for 20 minutes until crispy, cool and set aside. Finally, plate up your dish and finish with pea shoots, extra virgin olive oil and edible flowers. (Serves two people)

Hotel du Vin is renowned for its expertise in drink making and Daniel White caught up with bar manager Ben Manchester to discuss how they stay above the rest

It was a beautiful sunny Thursday afternoon as I made my way through the Lanes with Brighton’s Hotel du Vin in my sights. Just like the weather that day, everything at Hotel du Vin is looking bright right now. Fresh off a record-breaking May for the bar along with the launch of their new terrace and courtyard in April, staff at the luxurious hotel are finding it hard not to smile. Such optimism was unmistakeable on the face of their bar manager, Ben Manchester, as I sat down to talk with him. Happy with the recent upturn in business, Ben explains that the adaptability of the hotel and bar is part of what makes them so appealing. “I think this place is different to everywhere else in Brighton, I don’t think there’s a place quite like this, judging by the amount of people that are up in the terrace in the sunshine thinking it’s their secret spot,” he begins. “This place gets all kinds, from the businessman that’s travelled half way across the world to have a conference to a couple on a date to a group of people who have come out for drinks on a Saturday night. We cover all bases and we like to think that each of those subsets can come here and leave knowing they’ve had a good time and been in a special place.” Ben, who has been working at the south coast branch of the hotel for nearly five years, has worked his way up through bar roles across

the globe, gaining invaluable experience. It was during his time in Australia that Ben realised that his career lay in bar management and, following his return, there was only one place he was going to settle down.

Ben’s duties at the mock-Tudor bar include running the bar and terrace, welcoming guests as well as keeping the spirits and beers as upto-date and interesting as possible, an area in which he is highly knowledgeable. “My area of expertise is spirits and beers, with the cigars on the side as a little luxury, which - Food & Drink|Interview -

“We bring a very high standard of drinks making, expertise and knowledge in the sphere of drinks and we’ve got a really strong team here,” he clarifies. “I think the good thing about this place is that we pride ourselves on having staff that know what they’re talking about and they can guide you into the unknown if you’re willing for us to take you there. It’s nice to work in a place where people enjoy what they’re doing and everyone seems to enjoy working here.” And with that we were done. I was off to another meeting and he was heading back to the bar. I shook hands with Ben and set off back through the Lanes that appeared even brighter now.

NEVER TOO MUCH Words by Anya Zervudachi After a particularly strenuous midweek morning workout, it is not the first time I find myself wandering around town trying to find something healthy, packed with protein and filling enough to take me through to lunch, before I head to the office.

The burrito was filled to bursting and every mouthful was absolutely delicious. The tor tilla was soft and warm, the eggs and potatoes well seasoned, the peppers and onions adding that extra bit of bite, while the steak was perfectly cooked with the sauces adding that little extra kick.

When my colleague and I heard Mucho Burrito on Nor th Street has star ted serving breakfast, we decided to pop in and check it out.

I must admit, in the past I have been slightly under whelmed by some other breakfast burrito offerings, so I was exceptionally thrilled to find a substantial and affordable alternative to the classic full English.

Mucho Burrito offer an amazing breakfast deal of a coffee and a breakfast burrito for only £4.00 (£4.50 for steak). The menu offers a varied selection of both vegetarian and meat burritos, all packed full of fresh, well cooked, well balanced ingredients, served from 9-11am. My colleague decided to go for the Chorizo and Egg, while I decided to go all out after my workout and opt for the Steak, Eggs and Cheese. We were both very impressed to be offered the choice of white or wholewheat tor tilla (I went for the wholewheat option) which was generously filled with grilled peppers and onions, scrambled eggs, well seasoned potatoes, cheese and sirloin steak, while I chose the delicious hot and spicy salsa over their mild option.

TIME TO GET LUCKY

Lucky Voice is more than just a karaoke bar as Anya Zervudachi found out during her visit to Brighton’s hidden gem I have been living in Brighton for almost 15 years, and I have to admit that only this year did I discover my favourite haunt... Lucky Voice. Had you told me a year ago that a Karaoke bar was my favourite place to take friends on a night out in Brighton, I am pretty sure I would have actually laughed in your face. But let me tell you, I have been almost weekly for the last few months, whether it’s taking clients for a few 2 for 1 cocktails in the basement bar, large groups of friends for Birthdays or leaving do’s, or friends visiting from out of town, not a single person has yet been disappointed with the evening of fun Lucky Voice lays on. We start our evening at a nearby restaurant, which always gets the juices flowing for a few after dinner cocktails. Far too few people (even Brightonians) know about the hidden gem that lies just below street level on Black Lion Street in the south lanes. Lucky Voice might be famous for its Karaoke, but just beneath your feet lays a truly fantastic Cocktail bar, offering all the classics along with a huge collection of house specials.

While the rest of the gang browse the 2 for 1 list, I decide to go all out and treat myself to a Savage Garden, which is a delicious concoction of gin, cloudy apple juice, elderflower and apple juice, served short and strong in a martini glass (any more than two of these bad boys and you’re guaranteed to be the first person up on the mic getting the party going!) The atmosphere downstairs is fab, there are good tunes to warm you up for later but it’s the perfect place to sit and enjoy a few drinks and chat - we all know that once you are in your pod there will be no chance of getting a word in edge ways with this collection of lugs! We head upstairs after an hour or so in the bar and are shown to our pod. Despite being regulars we are shown how to work the equipment and provided a huge box of costumes, wigs and props for our evening of entertainment.

A HINT OF HANOI

Review by Dorothy Max Prior Pho, specialising in simple, freshly-made and tasty Vietnamese food, can be found in Black Lion Street in the lively Lanes – just a stone’s throw from the seafront, with a terrace of tables outside for al fresco dining. Although, this being Brighton (rather than Ho Chi Minh) on a breezy evening in June, our party opts for the warmth and comfort of the restaurant’s spacious interior. The Brighton branch is the biggest of Pho’s eleven outlets – and on the Friday night that Absolute Magazine visits, is pretty full, with a lively buzzy atmosphere helped along by a soundtrack of timeless classics (Saint Etienne, Stevie Wonder). A counter runs the length of the place, with stools on either side for diners who don’t mind perching. For those who prefer a more relaxed dining experience, there are tables to the front and booths to the rear. And so to the food. The tasty starters are almost a meal in themselves. We ask for a selection of anything and everything and first out come various takes on the spring roll. Forget the greasy abomination that you get in your local Chinese take-away: these are all made in-house and are as fresh as fresh could be. The Goi Cuon rice-paper summer 46│

rolls have an unusual texture, soft and delicate. The Cha Gio Chay are crisply fried vegetarian spring rolls bursting with flavour. Table favourite is the Nem Hai San, a large crispy spring roll of tiger prawn, crab and pork. Next, the Nem Nuong grilled pork and lemongrass meatballs, along with the Muc Chien Gion tender fried baby squid with a salt, pepper and lime dip – all snaffled up pretty quickly. All these tasty treats are served with a selection of dipping sauces. After these filling starters and a fair few glasses of wine (a limited but perfectly adequate list) or Saigon beer, there’s hardly room for the main courses but we struggle on bravely. The Com Tam Ca-ri (curry) features tiger prawns, mushrooms and mixed vegetables and gets wolfed down eagerly. The Com Tam Rang is wok-fried ‘broken rice’ with chicken and shrimp, and the Pho Xao; a tasty noodle stir-fry with beef strips. The Pho Vietnamese soup, which is the signature dish of the restaurant, was deliciously tasty and certainly felt like a light and healthy option. Although Pho may appear to have quite a limited menu, almost all dishes can be served with beef, chicken, prawn or tofu, broadening the options. The - Places to visit during pride -

Our stomachs are full but here comes the dessert menu – we dive in and don’t regret it, as there are some taste-bud tingling options: honey and ginger ice-cream (real pieces of ginger!); freshly fried banana fritters; Pandan pancake with roasted coconut. Good value, freshly-cooked food that tickles the taste buds; cheery service that is onhand when you need it but never pushy; and a bright and breezy atmosphere – Pho is a great choice for people who want a lively dining experience: a little hint of Hanoi street life in the heart of the historic Lanes.

Brighton’s italian treasure Sardinia-born Pietro Addis opened Donatello in 1991 and it was a success from the beginning. Proving its policy of offering affordable meals using top quality ingredients and cooking everything in-house was right, so much so, this continues unchanged today. He launched the “new concept� of 2-course and 3-course set menus in Brighton, which most restaurants now offer today and battled the Council to allow outside eating and drinking, which has proven to be a major asset to restaurants and the city as a whole, during the warmer days and months. Donatello is undoubtedly a real Brighton treasure and has grown from the original 100-seater restaurant to over 300 by acquiring several buildings around it. The SUMMER SHAKEDOWN Shakedown Festival returns to Sussex this year featuring three stages of pure house highs. THE GREEN HOUSE EFFECT Audio resident Charles Green will be performing at Shakedown Festival this month and Daniel White caught up with the Brighton DJ to discuss what’s in store Take a look at this summer’s Shakedown line-up and it is clear what has taken over Brighton’s music scene during the last year. A who’s who of current house music makes 2014’s festival one of the year’s most anticipated events.

on the Audio stage alongside Neal Schtumm who together make up, as he jokingly puts it, “the best father and son DJ team on the planet,” and he is eager for the fun in the sun to get started.

Playing the main stage will be house legends Basement Jaxx, Groove Armada and London duo Gordon City, while the Audio presents Area 10 stage features a packed schedule including Marc Kinchen, aka MK, Huxley, Riva Starr, Blonde and one of Brighton’s favourite DJs; Charles Green.

“Shakedown’s always fun and I’m really looking forward to it,” he begins. “I’m playing back-to-back with Neal Schtumm and we always work really well together. We played a relatively early slot last year and it was cool because there were people gathering and gathering and gathering and then suddenly you’re DJing in front of loads of people, it’s a really good environment, everyone’s happy.”

The Brighton-born Green has built a strong reputation throughout the city after several years as a resident DJ at Audio. The 24-year-old first caught the house scene by surprise, though, with his sets at nights such as Schtumm, Warehouse and most notably Motel.

It hasn’t always been so easy to find top-class house music in Brighton though. The shutting down of Brighton’s best local music shops, including Music Meltdown, Urban Records and Rounder Records, dealt a massive blow to lovers of electronic music and came just as Charles was making his breakthrough.

Charles, who is returning to Shakedown for the second straight year, will be performing

“A lot of those shops started to fade, that’s when the vinyl thing stopped,” he explains. “When Rounder shut everyone was thinking it was the death and that was quite tough, I stopped playing records and I was going to USB and CDs.” However, soon after taking over as a resident DJ at Audio, Charles began using and buying records again, allowing him to be more creative with his sets.

“There were all these record shops popping up again so through that I got back into records, so it’s funny how it’s done a full circle,” he reflects. “Because Audio’s got working decks and in that environment I think I can get away with a lot more. “You look at the history of Audio and fair play to the whole team there, they’ve got this ethos that they know what they want. Being a resident there, as a development as an artist, it’s been integral. I think it’s a really positive thing for Brighton what they do.” The house DJ is a Brighton native and he admits that playing in front of his home crowd week-in-week-out still gives him a great sense of excitement. He says: “Playing in Brighton has always been special for me and it’s just been

something that I’ve done as a gradual progression; from doing a student night on a Tuesday night to being a resident at Audio. It’s an interesting progression but I was born here so this place will always have something special for me.” He is currently working on a range of tracks that he hopes to release in the future but has resisted any releases to date to ensure the standard is one he is totally happy with, as he explains: “the more records you play, the more music you listen to, the more in depth your ear gets for production and the more understanding you get of what you actually want to do.” For now, though, the Brighton DJ is happy to be enjoying his work and sees no reason to worry about the future. “I’m going to keep doing what I love, which is buying records, making music, surrounding myself with likeminded people and just keep the enjoyment going,” he smiles. “I’m working on productions, stuff coming up at Audio this summer is looking really good and for me it’s something I’ve always done, it’s my life, it’s so embedded in my day-to-day routine that it’s going to take me somewhere, I don’t even think I’m going to be able to control that.”

Alice Russell is one of the UK’s greatest soul singers and Daniel White caught up with her to talk Brighton, Love Supreme and her soul influences As I sit down to talk to the British soul singer Alice Russell, she is sidetracked mid-sentence by her four-week old son. Momentarily she is in ‘Mum mode’, laughing and playing before promptly returning to where she left off. The Brighton-based artist is currently enjoying herself as she mixes her role as mum-of-one with the pleasures of performing her infectious gospel-soul singles to fans. Undoubtedly one of the country’s most talented and powerful soul singers, Alice may also lay claim to being the nation’s most down-toearth and humorous singers as she inadvertently reveals as we digress. The daughter of an organist, Alice recently played to over 15,000 visitors at the Love Supreme Jazz Festival in Glynde Place, on the outskirts of Brighton. Headlining with massive names including De La Soul, Laura Mvula and Jamie Cullum, she was simply happy to be performing in front of a home crowd. “I wanted to go as a punter anyway so I was really pleased to be asked to join the line-up,” she smiles. “It’s lovely to do a gig that’s just up the road in such a beautiful setting as well, the venue is just amazing. “We did a day time set which is always one of my favourites, it’s just generally a more relaxed vibe. I love the laid-backness of the festival and also you get to see loads of other people playing like Laura Mvula and Gregory Porter, loads of really good people.” Although today her sound is quite defined, Alice was brought up listening to classical music by her parents, before finding her sound away from the family home. “It was the radio where I first found James Brown, Aretha Franklin, people like that and I always sang in the church quire,” she explains. “So it was always within me and around me so it was quite second nature but to find the sort of music you feel resonates the most with you, which is so many different genres, but for me it’s that gospel sounding sort of soul.” The Suffolk-born songster moved down to Brighton 20 years ago to study art and music and fell for the historically alternative seaside city. “Before it was smugglers and fishermen and now it is a party town, it’s always had that vibe of creative people being drawn to it because

of that party element and the bohemian vibe so it’s got that real deep history,” she reflects. “You can go down the seafront, it’s more chilled than London and I think that helps as well with people just wanting to get away from it.” During her time in Sussex she has produced five studio albums and it is now ten years since the release of her debut LP, Under The Munka Moon, and during her time in the music industry she has seen a stark change in the way it is managed. “When I started you really had to be on a label, it was all very much label led and now they’re the ones who are having to change a bit and adapt to what artists want,” she clarified. “The industry is having to change every few months with things such as Spotify but I think the bigger it gets the fairer the artists get paid so I’m sure we’re looking at the long game.” The vocalist extraordinaire will be performing a number of sporadic shows in the coming month, however, for now she is satisfied staying at home and working on the things that she cares about most. “At the moment I’m working on a little baby and making that grow,” she chuckled. “Also I really want to get back in the studio and get cracking on the new album, I was trying to do it before this little one came along but then things just caught up with me so for now I’m just chilling out a bit, so that’s the plan.” Love Supreme Jazz Festival takes place from 4-6 July at Glynde Place near Brighton and for more information visit the website www.lovesupremefestival.com

MUSIC NEWS The BIMM Album Students from the music institution BIMM have released an album showcasing the work of their students with all the money raised going to The Amy Winehouse Foundation. Hand picked students from BIMM Manchester, Bristol and Brighton all feature on Connections: The BIMM Album 2014 which is available on CD or all major digital retailers. Passenger album release Mike Rosenberg, better known to most as Passenger, released his new fifth solo album Whispers on June 10th. The new album was recorded in Sydney with producer Chris Vallejo and the Brighton folk-rock singersongwriter said of his new release: “It’s quite cinematic. There are lots of big stories and big ideas. There are also some sombre moments about loneliness and death but, hey, it wouldn’t be a Passenger album without those. Mostly though, it’s a really positive album.”

Moulettes release third album Brighton-based folk-rock band, Moulettes, released their third album Constellations though Navigator Records on June 2nd. A band just as adept in the studio as they are on stage, Moulettes display their very accomplished musicianship and storytelling throughout what is a playful and enjoyable album. The Mojo Fins release Circa Brighton natives, The Mojo Fins, released their third studio album Circa on June 8th through Amazon Records. Following up 2011’s Shake The Darkness, the band are back with a bang and have never sounded better. Working with producer Dave Eringa (Manic Street Preachers), the four-piece have managed to create an album that incorporates infectious melodies, passionate vocals and sweeping choruses, making 2014 look like it could be their best year to date.

O. Chapman album and single out now Locally based singer O. Chapman released his album Discomfort on June 17th following the release of his first single from the EP, Relapser, at the beginning of the month. The album was recorded at his Brighton home and produced on a laptop over the course of a year and if you would like a taste, Relapser can be downloaded totally free via his Bandcamp page.

Mark Chadwick’s Moment now available The Levellers’ frontman for the past 25 years, Mark Chadwick is undoubtedly one of the UK’s most successful songwriters having co-written 20 chart singles and six Top 40 albums. The Brighton-based artist released his second solo album Moment on June 16th with the motivation behind it to make something ‘quick, immediated and beautiful’ and he appears to have succeeded, having recorded and mixed the album in seven days at Brighton’s Metway Studio.

Faux Flux single release Electronic band, Faux Flux, released their new single You Know on June 2nd. The Brightonbased group began working together in 2012 in their bedroom and have now followed up last year’s Come Alive and Week Long War with this groovy new four-minute track. The Mojo Fins

His watercolours may be all soft light and romantic views, but Hove artist Cecil Rice has an altogether more down to earth view of art, which he says is mainly about good technique and quality of materials. According to Rice, good and bad art is an illusion. What isn’t an illusion, though, are all the possible mistakes, and the main thing is not to make any gaffs in the technique. “You just have to learn not to make mistakes, then you’ve got art,” he says. He recommends that anyone who’s interested in painting should invest in really good paint for “the quality of the pigment and the sheer pleasure of spreading the colour out,” something he discovered at the age of 13, when his father gave him his first set of paints. Rice decided that he wanted to be a painter at a young age. “I have to say, and it may sound unlikely, but I was about 14 when I really fell for it and between that time and my O level, that’s when I worked out that’s what I wanted to do,” he says. “I got into it quite thoroughly and did a lot of practice. My father was a painter and a sculptor and I wanted to follow in his footsteps. He was constantly interested in art. That formed the basis of our communication really. He was a hard act to follow because his drawing was amazingly good but that made me work harder.” Cecil Rice is best known for his watercolours and the choice of watercolour over oil as his primary medium was a practical one because 60│

oils take much longer to paint, so he would have to charge much more for them. There is also a greater chance of them the not working out. “Watercolour is a bit less of a risk,” he says. “Also British people seem to love watercolour.” “An oil painting takes a few weeks to mature. I’ve lost one or two. They’ve looked okay to other people, but I haven’t been happy with them.” With watercolour he is able to prevent things going too badly wrong. “I know how to dance round the painting stopping things happening.” “There has to be a sort of knife edge of control.” “It’s a bit like jazz.You want a certain freeform.” “I feel I can take quite profound liberties with watercolour and pull off paintings that look as if they were intended.” He paints small watercolours and oils out of doors, while the larger ones are produced in the studio. “I like doing paintings outdoors, it’s animating; you can put the passage of time into the sun moving,” says Rice. “Trying to work from a photo, it’s poisonous. You get detail you didn’t ask for. “There’s quite a bit of freewheeling. I often just follow my feeling and that seems to project a mood into the painting.” - Culture|Art -

He is, though, he says, “quite a sucker for a bit of architectural complication to balance all the vague stuff.” As well as buildings, sunsets and water often feature in Cecil Rice’s work, and he finds painting the way the buildings are subsumed into colour at sunset more satisfying than worrying about whether they are topographically correct. “That’s why water’s good,” he “Everything dissolves into water.”

Italy is the location of many of Cecil Rice’s paintings and Venice is one of his favourite places. He also paints many scenes in Brighton. Here he consciously picks colours that reflect the feel of England. While in Venice yellows are daffodil or sunset yellow, in Brighton they are primrose. “I’m very conscious of the palette reflecting a much cooler experience,” he says. “If the paintings work they’ll have quite a bracing effect that anyone who’s lived in England should be aware of. My Italian paintings are more languid. “I revel in the muted colour when painting here, especially the Thames or Westminster. You make much more of the tone.” The finished plays of light seem anything but muted, and certainly have much more to them than just good technique. www.cecilrice.com

But they also encounter mysterious, evil Drago Bludvist (Djimon Hounsou)! Now our unlikely heroes must fight to keep the peace. All our favourite characters are back for this amazing sequel to the Oscar-nominated animation. Tammy A downhearted woman embarks on a road trip with her granny in this crazy comedy starring Melissa McCarthy and Susan Sarandon. Life is not being kind to Tammy (Melissa McCarthy). The unlucky thirtysomething has written off her rustbucket of a car. She’s been fired from her dead end job at a greasy burger bar by sleazy boss Keith (Ben Falcone). And she’s got home to find hubby Greg (Nat Foxon) carrying on with their neighbour, Missi (Toni Collette). Tammy’s only way of getting away is to team up with her hard-drinking, potty-mouthed grandmother Pearl (Susan Sarandon), who has cash, a car and a yearning to see Niagara Falls. So the unlikely duo burn rubber on a wild adventure. Husband and wife team Ben Falcone and ‘Bridesmaids’ breakout star Melissa McCarthy co-wrote this hilariously madcap comedy. Its amazing supporting cast includes Allison Janney as Tammy’s long-suffering mum and Kathy Bates as Pearl’s cousin Lenore. 4/5 again and really classic stuff. genuinely funny and heartwarming.

Transformers - age of exTincTion The Dinobots make their spectacular entrance as mankind faces total annihilation in the fourth explosive ‘Transformers’ movie. Years have passed since the devastating battle of Chicago and humans have turned against the Transformers. Then widowed inventor Cade Yeager (Mark Wahlberg) uncovers a beat-up old truck that turns out to be none other than Optimus Prime. Arrogant government agent Harold Attinger (Kelsey Grammer) promptly arrives with a large military force demanding to know the whereabouts of the reactivated Autobot. Meanwhile, scientist Joshua (Stanley Tucci) isolates the unstable metal from which the Transformers are made. Little does humanity anticipate that this will attract a terrifying new menace! Michael Bay’s fourth jaw-dropping Transformers movie not only amps up the explosive action but also gives Optimus Prime a stunning, sword-wielding makeover. The big news for Transformers fans, however, is the introduction of the astonishing Dinobots.They’re led by Grimlock, who transforms into an extraordinary mechanical Tyrannosaurus rex! 4/5 from me if not for the effects alone!
