We all knew that the Italian chef Andrea Berton wouldn’t last long away from the kitchen. Just a few months after retiring from Milan’s Trussardi alla Scala restaurant – for which he earned two stars – he’s re-opening another restaurant. Once again, in the center of Milan. It’s called Pisacco, and it’s a contemporary bistro that represents the future of Italian cuisine: carefully selected ingredients at an acceptable price. “Let me make this clear, this is not my restaurant,” says the chef (the first from left in the picture, together with his partners: architect Tiziano Vudafieri, lawyer Diego Rigatti and Giovanni Fiorin). “But I’ve been overseeing its conception and helping to define the philosophy. Starting with the choice of chef Matteo Gelmini, with whom I’ve worked in the past.”

The cuisine will be based around the essential dishes from the Italian tradition, with a masterful touch: like spaghetti with tomato and basil and cream of buffalo mozzarella, or risotto alla Milanese with veal ragù.
