Marzipan & Pistachio Biscuits Ingredients: 8 oz softened Butter ½ cup superfine Sugar 1 Large Egg, preferably Organic 1 tsp. Almond Extract

Method: 1. Preheat oven to 320°F. Line 2 oven trays with parchment paper. 2. In a bowl, using an electric mixer, beat Butter, Sugar, Egg, and Almond Extract together until pale and creamy.
3. F old Flour, Marzipan and Cranberries through creamed mixture. Roll heaped teaspoons into balls, then coat in Pistachios. Arrange on tray. Chill 30 minutes.
Add Texture Mellow tasting items such as crusty Bread, Crackers, or Crostini allow flavor profiles to take the forefront.

Offer a range of smoky meats, like Mortadella, cured sausage like Salami, the bacon-like Pancetta or our favorite, Serrano Ham.

garlic & herb Dry Brined Turkey Dry Brining is a wonderful way to impart incredible flavor without too much fuss – choose an All Natural Bell & Evans Turkey this Thanksgiving and time will do most of the hard work for you. Ingredients: 1 12 pound Turkey, giblets and neck removed 10 sprigs fresh Thyme 4 sprigs Rosemary 6 fresh Sage leaves 4 large Garlic cloves 2 tsp. Celery Seeds ½ tsp. freshly ground Pepper ½ cup Kosher Salt 2 tbsp. Sugar 1 medium Onion, quartered 1 head of Garlic, halved 6-12 mixed sprigs of herbs for stuffing ¼ cup Unsalted Butter, room temperature 2 cups (or more) low-sodium Chicken Broth

Method: 1. Remove leaves from Thyme, Sage, and Rosemary sprigs, chop coarsely, and pulse in a food processor with Garlic, Celery Seeds, and Pepper until a paste forms. Add Salt and Sugar and pulse until combined, about 30 seconds. 2. R ub dry brine all over Turkey and inside the cavity. Chill uncovered for 6 to 7 hours. 3. Preheat oven to 425°F. Rinse Turkey under cold water, pat dry, and place breast side up on a rack set in a large roasting pan. Stuff Turkey with Onion, Garlic, and Herbs. Working from neck end of turkey, gently loosen skin from breasts and rub Butter under skin and all over the outside. Tuck legs and wings under the Turkey, pour Broth into pan, and roast Turkey 30 minutes. 4. R educe oven temperature to 325°F. Once skin turns golden, baste with pan juices every 30 to 40 minutes, adding more broth as needed. Tent with foil if skin browns too quickly. Roast until an instant-read thermometer inserted into thickest part of thigh registers 165°F, about 2½ to 3 hours. 5. Transfer Turkey to a platter and tent with foil. Let rest at least 30 minutes before carving. Enjoy!
By the Numbers Choosing the Right Size Turkey For a large party you will need a 15-20 pound bird, figure 1½ pounds per person. Birds 12 pounds or less have a smaller meat-to-bone ratio, so allow 2 pounds per person.

Method: 1. Pat meat dry with paper towels, then season all over with Salt and Pepper. Make a smoky Garlic-Herb paste by combining Garlic, Herbs, Smoked Paprika, and just enough Olive Oil to make a paste. Rub all over meat. Allow meat to rest at room temperature, about 2 hours. 2. Preheat oven to 450 degrees. Place meat bone-side down in a roasting pan or on a rimmed sheet pan. 3. R oast for 20 minutes, then turn heat to 350 degrees and continue to roast until the meat registers 115 degrees on an instant-read thermometer for rare or 125 for medium rare, roasting for about 60 to 90 minutes. 4. Let meat rest at room temperature for 20 minutes before carving.

Coating (to taste): 2 tbsp. Ground Nutmeg 2 tbsp. Ground Cinnamon Method: 1. Preheat the oven to 350°F. Lightly grease two doughnut pans. 2. B eat together Oil, Eggs, Sugar, Pumpkin, Spices, Salt, and Baking Powder until smooth. Add in the flour and stir until smooth. 3. U sing a scant 1/4 cup of batter, fill each well of the doughnut pan about 3/4 full. Bake doughnuts for 15 to 18 minutes, or until a cake tester inserted into the center out clean. Let doughnuts sit in pan for five minutes, then loosen and transfer to a wire rack. While still warm, dust with Cinnamon-Nutmeg mixture. Return to rack to cool completely. 4. D oughnuts can also be made into muffins using a muffin tin. Fill ¾ of the way full and bake for 2325 minutes. 15
