The photos will appear in the annual city calendar, which includes information about waste collection, events and other city initiatives. The calendar is distributed free of charge to more than 11,000 homes in Port Coquitlam each December and is also available for free pickupatCityHall.Contestant photos may also be used in other city publications, including the new Citizens’ Guide to be published this fall. Contest guidelines: • Contestants must be PoCo residents from a single household. Submissions will not be accepted from organizations or businesses. • Explain why you love the City of Port Coquitlam in a short video (30 seconds or less) or with a photo of yourself and brief writeup (100 words or less). Note that the photos/writeups and videos may be displayed in City of Port Coquitlam print or online materials. ‘Mopping’ keeps ribs moist
E
veryone, other than vegans and vegetarians, loves a good rack of pork ribs that has been cooked to perfection. The trouble is, how does one achieve this on the barbecue without making them tough and dried out? Ribs need low temperatures in a moist environment for a long period of time to become tender and juicy. Outdoor gas grills and charcoal barbecues, however, never produce moist heat and this is where you, the home chef, come in. A wet liquid called a “mopping solution” will need to be applied to the ribs regularly as they cook. I make a simple mopping solution by combining 1/2 cup beer, 1/2 cup vinegar, four chopped garlic cloves, a few slices of onion, and a tablespoon of dry meat spice rub. This is enough mopping liquid for two racks of ribs and can be easily applied with a basting brush. You will be cooking the ribs over indirect heat, so purchase only enough racks of ribs to fit on your grill/ barbecue in this manner. Indirect heat means there will be a heat source that will not be directly under where

the ribs will be. On a gas grill this would be achieved by having the lid down and keeping one or more burners on, but placing the ribs over the one or more burners that will stay off. On a charcoal grill this would mean using a heat deflector. Decide on a good dry meat rub (spice mix) or make one yourself — there are tons of recipes available online. Coat both sides of your racks of ribs with this spice rub. Preheat your grill/barbecue to approximately 275 to 300 degrees Fahrenheit. You are going to need to be able to maintain this temperature for three to 3.5 hours with the lid down. Place the spice-coated ribs bone side down and cook indirectly for a half hour. Lift the lid and “mop” the tops of the ribs, then close the lid and cook for another half hour before mopping again.
Basically, you are going to generously mop the ribs at the following times: half hour, one hour, 1.5 hours, two hours and 2.5 hours, cooking with the lid closed in between these times and maintaining the suggested temperature. Once you hit the threehour mark, lift the lid and coat the tops with your favourite sauce. Close the lid and cook for 10 minutes, then sauce again, cook another 10 minutes, sauce once more, and then cook a final 10 more minutes. Carefully remove the cooked tender ribs and let them sit for five to 10 minutes before serving. These ribs won’t be as tender and delicate as ribs that are braised in liquid in the oven, but they will definitely have more “flame-licked” taste. Charcoal grills are great for adding real barbecue flavour, while gas grills tend to be lacking in this department. Buying a smoker box designed for your gas grill with soaked wood smoking chips will improve this. I recommend soaking your wood chips for at least one hour before draining and using. Winery gets it right
A
t the turn of the millennium a fellow named Gary Taylor built a large Scottishstyle winery in the middle of South Langley wine country. When Glenguie Winery first opened, I was a bit confused, as this unorthodoxly named winery had a dark blue label with the family tartan crest, more suitable for a bottle of scotch than a brand new wine from the smallest wine region in B.C. However Gary planted acres of Pinot Noir on the site and began the arduous task of starting a winery from scratch. Gary was a big believer in the Fraser Valley winery scene, much as neighbours Claude and Inge, owners of Domaine de Chaberton, a winery located a 10-minute drive away, were. He crafted some good wines, although with the confusing labels the winery was not a huge success. I dropped by the winery on a cold and wet July day and as we toured the vineyards Gary told me the crop would be lost that year due to poor weather, which would prevent the grapes from becoming ripe enough to use for wine. Not long after my visit, Gary lost his wife to cancer and it devastated him. He released a tribute sparkling wine named Christina. Unfortunately, not long after

that, Gary passed away and the winery was put up for sale. Enter Trent Blackwell, who purchased the winery and began the long process of rebuilding it, naming it Neck of the Woods. The first few years were difficult as the winery struggled to find an identity. The wines were average at best and a series of consultants attempted to breathe new life into the venture. In April of this year, Neck of the Woods officially changed its name to Backyard Vineyards with new labels and a line of wines that deliver solid value, most under $20. The winery features a brand new outdoor gazebo with a giant bell in an unpretentious, relaxed environment where you can order a glass of wine, sit down and enjoy the fresh country air — not bad for a place a mere 45-minute drive from downtown Vancouver. The wines are much improved in the last few years and I had an opportun-
ity to sample the wines at Backyard recently. The most successful wines are the Nosey Neighbour white and red, both blends crafted by former Cedar Creek winemaker Tom Di Bello that hit the mark with a low price tag of around $15. The white is citrusy, flavorful, crisp and dry, a sound match for seafood and chicken or sipping on the patio. The red is soft, light with hints of cinnamon, clove, blackberry and raspberry on the nose. The Gewürztraminer is my personal favourite — sweet floral and gentle spice hit your nose and the first sip reveals tropical fruit and a smooth, off-dry honeyed taste. This Gewurtz is the ultimate summer sipper … keep it cold and relax with a good book. The most expensive red is the 2011 Syrah, a serious Okanagan red for just under $25. Big and full-bodied with rich blackberry and fruit, this red is finished in oak that displays vanilla and a hint of Christmas cake spice. It’s a wonderful match for leg of lamb, chops or barbecue roasts. Given the success of these wines, Backyard Vineyards finally has its identity: a fun, easygoing, relaxing atmosphere with true VQA wines valued priced for every day drinking. I think Gary would approve.

Digital ones are easier to read and thus a good quality one will be worth the investment for many recipes in the future.
