would like to thank the Federal Way Mirror for the opportunity to write to you in the 2019 edition of Explore Federal Way. This piece serves as a wonderful way to highlight all of the fantastic opportunities Federal Way offers to residents and visitors alike. We are a growing and culturally diverse community located at the crosssection of travel and commerce in the Puget Sound region. Taking advantage of our prime location and population boom, we are working hard to create new opportunities for families and businesses alike – while working to preserve our history and incorporate where we are headed in the future. We have worked to build a new and stronger sense of community and are in the midst of redeveloping our downtown. We are laying the foundation for a robust town center that will create jobs and opportunity for this and future generations. We recently opened a world-class Performing Arts and Event Center,

which provides a venue for residents to stay local, take in a show or a meal, and shop downtown. The PAEC brings in conferences and is a superb place to host corporate meetings, weddings and local galas like those of the Greater Federal Way Chamber of Commerce or Rotary’s annual events. As important as the PAEC is, right next door is the catalyst that launched the entire redevelopment of our downtown – Town Square Park. The impact of green space and walkability in a city center cannot be underestimated. This jewel of our community features a spray park, walking trail, 4-acre lawn, vegetated green roofs and other environmentally friendly that make our Town Square Park unique in our region. I hope to see you and your family there this summer at our wonderful splash park! We will also have our Movies in the Park and Summer Concerts at Steel Lake Park this summer as well. With 32 parks total, our city offers many options for local families and visitors. Celebration Park continues to

impress, drawing thousands of people a year for various sports tournaments. In June, it is one of several sites throughout King County that will host the Korean American National Sports Festival. We have 87 retailers and 100 restaurants — 57 of which are local and regionally unique — in our downtown core. Federal Way does not have a business and operations tax, and the cost to operate a business in our city remains low for the region. We have great neighborhoods with stunning views of the Puget Sound, and new construction is popping up all over town. Although the new developments throughout our town are positive, our greatest asset continues to be the more than 97,000 people who call Federal Way home. Whether it is our faith community, active service clubs, students and teachers, or new homeowners looking to start their lives here, Federal Way continues to be a community where opportunity thrives.

What’s Cooler Than Ice Cream? The liquid nitrogen used at Federal Way’s Sub Zero to make those sweet treats. Celebrating eight years of business in Federal Way this September, Sub Zero Nitrogen Ice Cream is the first and only parlor of its kind in Washington. The unique experience combined with delicious quality ice cream is what brings in the customers — and what makes them return time and time again, said Jack Walsh, owner of the Federal Way location and franchise area developer for Sub Zero. “There’s the science, and the science is fun and exciting. There’s also just the novelty of it; it’s something new, different,” he said. “It’s an experience, it’s not just ice cream.” Sub Zero has won Best Ice Cream eight years in a row in the Federal Way Mirror’s Best of Federal Way contest. Kids of all ages, whether toddlers or adults, enjoy watching the freezing cloud pour over the counter as their ice cream is mixed, he said. The parlor offers pre-curated sensation ice creams, or can create completely customizable icy delicacies. Using a three-second blast of liquid nitrogen, the ice cream magician mixes the ingredients to create a frozen custom creation fit for any taste buds. “With customizable ice cream, we can take care of any dietary restrictions,” Walsh said. serves vegan, lactose-free, sugar-free, and keto-friendly options among a range of flavors and additional toppings of gummy sweets to fresh fruit to chocolate candy bar bits. “We have families who come in who have never been able to go out for ice cream together as a family because of different food sensitivities,” he said. “Here, we can customize it to whatever they want.” It’s important for every customer to leave with a smile and an empty ice cream bowl, Walsh said. Originally this Sub Zero location was started by Walsh and his son-inlaw. Now Walsh operates the store with his wife, Judy, and some of the employees are his own kids. Sub Zero provides

thousands of dollars in gift certificates to local nonprofits, churches, clubs, PTAs, civic groups and more to support their local community, Walsh said. “We appreciate the support the community has given us,” he said. “Federal Way has been so, so supportive of us. I love the Federal Way community. I feel this is where we should be and what we should be doing to make this community the best it can be.” The local community provides a strong customer base, although some have traveled from as far as Britsh Columbia to see Sub Zero in action. Federal way’s Sub Zero offers event catering, a new feature of ice cream cakes with image printing and a pickup freezer so customers can skip the line when the cravings kick in. “I want everybody that comes in to leave happier when they go out,” Walsh said. “We’re a happy place, we’re an uplifting place.” Sub Zero Nitrogen Ice Cream is located at 31653 Pacific Highway S. in Suite A. TASTE THE LOVE AT FEDERAL WAY’S ONLY WINERY

T

ucked away in the urban hustle and bustle, Federal Way’s only winery is carving out a niche — one grape, one vine and one acre at a time. Vilnis Kleper, who had previously only enjoyed wine as a consumer, decided Abbe Vineyard and Winery would be his “retirement” venture after a successful career as a civil engineer. He and his wife, Guna Kleper, a retired pharmacist, have partnered with sommelier Dainis Svarcs on what has become a labor of love. “Seven and a half acres takes a bit of work,” Vilnis Kleper said of the vineyard on S. 373rd St. between Enchanted Parkway and Pacific Highway. “I never thought a vineyard was that labor intensive.” Kleper said he relies a great deal on Svarcs, a vintner with almost 20 years of experience in the industry.

“He knows his wines,” Kleper said. “And he has the palate, and he has the nose.” Kleper and Svarcs joined forces in 2009 when they planted their first chardonnay grapes at the estate. They started with three acres and then added another acre and a half. Although they do have some sauvignon blanc plants, they primarily grow chardonnay and pinot noir grapes, which Svarcs said is strategic because if the microclimate in Federal Way does not generate enough heat, the partners can turn the fermented juice into sparkling wine. Abbe Winery is a little different than other small-scale wineries. Kleper and Svarcs do everything onsite from growing the grapes to harvesting, fermenting and — after Svarcs decides a wine is ready — bottling. “Many wineries don’t even grow their own product,” Svarcs said. “There are very

few of us who grow our own grapes in the Puget Sound. Not only are we in the cellar working on our product, we’re also in the field making sure the plants are doing what they are supposed to do.” Abbe Vineyard and Winery also purchases red grapes from a few established Eastern Washington vineyards for its blends, and has at least a dozen grape varietals in oak and stainless steel barrels. Currently, the winery has vintages dating back about four years. The winemaking process is labor intensive and time consuming. Svarcs said it takes about five years before grapes can be harvested for wine. The first, second and third leaves — as each crop is called — are just to get the grapes established. By the fourth leaf, Svarcs said he can usually start to see quality grapes.

GARDENS GALORE POWELLSWOOD GARDEN Spread across three acres and nestled against another 35 acres of native successional forest, PowellsWood Garden, 430 S. Dash Point Road, has cobblestone walking paths, a winding stream and a pond that blends gently into the forest and ravines of Redondo’s historic upper Cold Creek watershed. A conservatorystyle Garden Room is available to rent for business meetings, weddings, photos, classes, reunions and other events. The garden is open from 10 a.m. to 3 p.m. April 1 to Oct. 31. General admission is free for members or $7 for adults, $5 for youth 6-18 and free for children 5 and younger. RHODODENDRON SPECIES BOTANICAL GARDEN More than 10,000 rhododendrons grow in the woodland setting at the Rhododendron Species Botanical Garden, which covers 22 acres with over 2,100 forms of approximately 600 species including non-hardy and tropical species. There are also numerous companion plantings of ferns, primroses, irises, heathers, maples, magnolias, conifers and many other exotic plants. The rhododendrons bloom beginning in January, with peak bloom typically occurring mid-March through mid-May. There is always something in bloom at the garden. The Victorian Stumpery is filled with a variety of ferns and other plants and can be best enjoyed spring through fall. The Rutherford Conservatory is filled with hundreds of tropical plants set next to waterfalls, a stream and boulders. Flowers are in bloom throughout the year in the conservatory, so there is always something to see. The garden is closed Thanksgiving Day, Christmas Eve, Christmas Day and New Year’s Day. Self-guided and guided tours are available. Visitors can get a quick overview of the garden in an hour, but serious plant and garden enthusiasts will want to spend more time. Tour groups must be scheduled in advance. To schedule a tour group, call 253-8384646 ext. 140. The garden is located at 2525 S. 336th St. Open 10 a.m. to 4 p.m. Tuesdays through Sundays. General admission is $8 per person, $5 for seniors and students with school ID. PACIFIC BONSAI MUSEUM The Pacific Bonsai Museum displays 60 of the 150 bonsai trees that comprise its collection, making it the most geographically diverse collection in the United States. With a deep commitment to free access for all, the museum welcomes 30,000 visitors a year. The museum offers 30-minute private guided tours to groups of 10 or more Tuesdays through Fridays. A private tour is $5 per person, with a $50 minimum. Free public tours are offered at 1 p.m. Sundays. The Weyerhaeuser Company, which built and owned the campus that houses the museum, opened the bonsai collection in 1989 during the Washington State Centennial. The Pacific Bonsai Museum was established as a nonprofit organization in late 2013. The museum is located at 2515 S. 336th St. Open 10 a.m. to 4 p.m. Tuesdays through Sundays and from 10 a.m. to 7 p.m. March to September the third Thursday of the month. BIG ISLAND FLAVOR FOUND IN FEDERAL WAY Big Island Poke satisfies Federal Way’s cravings with second location By Olivia Sullivan osullivan@fedwaymirror.com The popularity wave of poke has hit Federal Way. Big Island Poke, owned by Jaydean Gabriel, recently opened a second restaurant location in Federal Way; the first location is housed in Renton. Poke (pronounced “po-kay”) is a Hawaiian word meaning “to slice” or cut into pieces. The dish consists of marinated raw fish, diced and cubed with rice, veggies and other mixings. Federal Way’s seemingly untouched market, and taste palate, of poke was one of the main reasons to open up another small business shop, Gabriel said. “Before Renton, I wanted to come here,” he said. “I wanted to stay away from Seattle, and there’s no poke in Federal Way.” While various restaurants offer poke as a side dish or appetizer, Big Island Poke is one of the only restaurants dedicated solely to poke in Federal Way. Born on the Big Island of Hawaii, Gabriel brings the authenticity of flavor to his meals. “We couldn’t keep our door closed,” Gabriel said about Renton’s business upon opening in 2016. “It was overwhelming. I did not expect it to be like that at all.” Federal Way’s poke spot has been open since January, but in striking contrast, business at the restaurant has been “tough,” Gabriel said. Consulting with owners of surrounding shops, the winter months prove to be trying times for all businesses in Twin Lakes Village, he said. “Our Renton location is still producing well,” he said. “Here … I think people are still trying to figure out what it is.” The Federal Way shop is tucked along the strip mall in Twin Lakes, which isn’t

as visible as Renton’s prime location along Rainier Avenue, Gabriel said. “I knew that coming in,” he said. “What I go by is if you have good food, [customers] are going to come no matter where you’re at.” Gabriel discovered the power of poke in 2014. On a visit to California years ago, Gabriel found his inspiration. It seemed as though poke was found on every block in Los Angeles, so Gabriel decided to jump the poke wave before it hit the Pacific Northwest. “I was tired of getting my hands dirty,” he joked. “I love food, I look cooking, and there was no poke at the time in the Washington area.” Gabriel, along with his lifelong friend and business partner, opened a food truck called People of the Chubbs that serves poke among other Asian-HawaiianMexican fusion dishes, he said. “It bugged me, there was nothing authentic,” he said. “There were all these chains that were just mixing fish. I’m from Hawaii so poke, to me, is pretty simple.” Opposed to chain restaurants, Big Island Poke focuses on marinating, allowing the fish to soak up all the flavors — a process that takes more time but yields better taste, Gabriel said.

Big Island Poke also imports a few ingredients from Hawaii such as limu (seaweed), an important ingredient to the locals due to the health benefits, he said. “I did this just to give everyone a taste of what I think traditional poke is.” In Hawaii, the day’s batch of poke is made fresh and when it runs out, it’s out. The business game plan changes on the mainland though, Gabriel said. He includes various side options and has turned his restaurants into more of a make-your-own-bowl, fast casual-style establishment. “Every day gets better,” he said. “We see new people and we see return customers; we’re showing progress.” People of the Chubbs food truck can be found at community street fair or food events, such as the Bite of Seattle and Taste of Tacoma. FEDERAL WAY RHYTHM & BREWS FESTIVAL RETURNS IN 2019

The 2019 Federal Way Rhythm & Brews Festival will run from noon to 5 p.m. Saturday, July 20. A festive afternoon and evening of music, food and drink, the third annual event will be held at Town Square Park, 31600 Pete von Reichbauer Way S. Presented by the Federal Way Symphony, the festival will feature three local bands this year: Lost and Found, Mark Hurwitz and Gin Creek, and Kristi Lynn. Over 30 brews, local wine, spirits and cider will be available for tasting. Food trucks, including Pecos Pit barbecue, will provide delicious eats and local craft vendors will sell their wares. Advance tickets are $25; $30 day of festival. Designated driver tickets are available for $12. Tickets are available now at FWBrews.com.

MAKE MUSIC FEDERAL WAY

The Federal Way Lions Club is excited to help host this event for the first time ever in Federal Way on June 21 Come June 21, all of Federal Way will be moving to music. For the first time in the city, the Federal Way Lions Club has worked to bring Make Music here to get community members involved in different forms of music, from playing recorders to learning guitar to dancing.

Way’s first ever Make Music Federal Way, with events like drum circles, community sing-alongs, and make-your-own-instrument workshops. There will be events for all ages throughout the day, Barber said.

TRAFFIC GRAFFICS BRIGHTEN CITY STREETS Nearly 30 colorful utility box art displays decorate the city By Olivia Sullivan osullivan@fedwaymirror.com other forms of graffiti. “If it makes you smile, then it has done its job.”

Next time you’re sitting at a stoplight in Federal Way, you may find fireworks, colorful dogs donning sunglasses, or you could be looking into the eyes of Sasquatch. The Federal Way Arts Commission is behind the city’s vinyl-wrapped utility box murals, deemed “Traffic Graffics.” These public art displays can be found on most intersection street corners throughout the city.

Hershman’s favorite is the Sasquatch-themed utility box by Margie Sheeley, which stares at the traffic whizzing by near South 352nd and Pacific Highway, because “the Sasquatch is right there in plain sight. Former Arts Commission board chair Gary Gillespie launched the Utility Box Art Pilot Program in 2014 after he first saw the idea demonstrated in California; more research showed utility box painting was happening all over the country. “It made it look like the community cared,” Gillespie recalled.

Since then, nearly 30 utility boxes in Federal Way have been transformed into works of art. One utility box near the Federal Way Transit Center commemorates the Seattle Seahawks football team. The most recent utility box art installation was designed by Decatur High School student Samantha Mendoza-Rojas whose “Starry Night” artwork conveys childhood, imagination and wonder. There are some guidelines for the art displays: the designs have to be colorful, bold and fun pieces. And they must be noticeable, even when driving past at 40 miles an hour, said Dan Hershman, current chair of the Federal Way Arts Commission. Traffic Graffics are placed in busy, high-visibility areas with clear views from as many angles as possible,

Hershman said. The core downtown is a hub for the Traffic Graffics, trickling down Pacific Highway, 320th, and along 1st Avenue in Federal Way. Once a location is picked and a theme is chosen, then the Arts Commission calls for artists to submit designs. The Traffic Graffics committee will review the submissions and select a winner. Graphics are then digitally printed on vinyl wraps, sized to fit the specific utility box. “It really turns a drab and dreary intersection into something fun and lively,” Hershman said, adding that the boxes also discourage tagging or

“You’re living in the world of art without even thinking about it,” Hershman said. “You’re enjoying an aesthetic in your everyday experience.” The Traffic Graffic committee is calling for artists to submit their designs to fit the upcoming utility box design theme of cats. FOREVER INKED IN FEDERAL WAY

Federal Way tattoo artist Jess Locke talks about why this art form is her favorite By Haley Donwerth hdonwerth@fedwaymirror.com Tattooing is one of the more controversial forms of art still around today, because it’s art applied directly to your skin. It’s art that you carry around with you forever, which is exactly why Jess Locke loves it so much. She’s been a tattoo artist with Art Labs in Federal Way for five years now, and tattooing her art on her clients is her favorite thing about her career. It’s the most intimate form of art out there, she said. “It didn’t matter how long I spent on a painting, it’s not as meaningful as something

that’s actually attached to you, and the thought that someone could have that sort of resonance with an art piece of mine was really moving for me.” It’s difficult to not form a connection with the person you are tattooing. “I started getting tattooed, and then I just fell in love with the entire process, and how close you get to the ink that’s on your skin.”

“I always knew I wanted to do art, I just wasn’t sure how that was going to play out.” Art Labs is a great place to get your own piece of forever art in Federal Way. The tattoo studio is located at 30919 Pacific Highway S.

Locke also loves dinosaurs, so before tattooing stole her heart, she was studying to become a paleontologist. She never lost her love for art, though.

SOUTH KING TOOL LIBRARY OPENING SOON By Olivia Sullivan osullivan@fedwaymirror.com The South King Tool Library is coming to Federal Way. Operation of the tool library is similar to that of a traditional book library. Upon signing up for a membership with donation of a small annual fee, people may check out up to five tools for one week at a time. The tool library is strongly donation-based when it comes to tools, funds and volunteer skill.

Library completion is set for June and the library will be open Wednesdays from 3-7 p.m. and Saturdays from 9 a.m. to 2 p.m at 1700 S. 340th St. For more information or to get involved, visit southkingtools.org.

The South King Tool Library aims to empower residents, especially those in marginalized groups such as women or minorities, by providing resources and knowledge about repairs and waste reduction, said Larry Todd, executive director of the South King Tool Library. “It’s intimidating to go after this big endeavour,” said board member Amanda Miller. “We’re doing something that has literally never been done before, that’s why it’s hard.” But on the other hand, this do-it-yourself attitude is the exact belief they hope to bring to Federal Way, she said.
