Fats and oils Technology Laboratory Manual is written for students in the Diploma in Food Technology and Halal Management programme. This manual enhances the students’ knowledge regarding edible fats and oils analysis and closely related to the course syllabus.Included in this manual are the procedures of analysis for determining physical and chemical properties of fats and oils. There are ten experiments related to topics discussed in the syllabus. Lecturer may vary the raw materials used, the method or other parameters in accordance with the lesson learning outcomes required.
