Anyone who has seen the movie ÒMy Big Fat Greek WeddingÓ is sure to remember Mr Portokalos, the proud and patriotic father of the bride. In an amusing but not necessarily accurate way, Mr Portokalos managed to trace every word back to debatable Greek roots.

Even the word ÔkimonoÕ, he said, comes from the Greek word ÔxeimonasÕ, which means ÔwinterÕ!

Now if I told you that pasta was a Greek creation, you would accuse me of twisting the truth. But, at the risk of sounding like Mr Portokalos, our feature article explores the provenance of pasta and concludes that it is not originally Italian… but actually Greek.

Read it and you will find out more about this most popular culinary creation, including its production in Cyprus and the ancestry of the ever-popular Cyprus ravioli. And to wrap up the subject, we’re sharing some simply delicious pasta recipes created in the kitchens of Carob Mill Restaurants.

A familiar old proverb says, ÔMy home is my castleÕ. But if you talk to Chris Yiallourides, he would say, ÒCastle Square is where I feel at homeÓ. Μια αγγλική παροιμία λέει "το σπίτι μου είναι το κάστρο μου." Ο Κρις Γιαλλουρίδης νιώθει σπίτι του στην Πλατεία Κάστρου.

Chris Yiallourides is an interesting man, devoted to his family, his work, various philanthropic societies and… Carob Mill Restaurants.

With origins in the wine village of Vasa Kilaniou and raised in the touristic atmosphere of Limassol, Chris chose a career in the hotel industry, which took him to various European countries as hotel director. It was after several years in France, Germany, England and Portugal that he returned back to Cyprus with his Portuguese wife Paula and their two children, to continue in hotel management in different 4 and 5-star hotels.

Since 2004 he has been the Limassol Area Manager of Aristo Developers Ltd, and arguably one of Carob Mill Restaurants’ greatest fans. At least 2-3 times a week you will find him dining at Karatello, Artima, Draught or Stretto – often deciding spontaneously where he will actually order his meal. But what exactly does ‘dining out’ mean to someone who enjoys the privilege so often?

Family and Friends “Mealtimes are very special in my family,” says Chris. Not surprising when you consider that his mother was a chef in Limassol hotels for several years, and that his wife Paula has always insisted on turning meals into an opportunity for daily family communication. “Although we enjoy cooking and eating at home, dining out is part of our lifestyle, and my wife simply loves the ambience around the Castle,” he adds. So much so, that Chris and his family have been having lunch at Stretto almost every Sunday since 2005.

During the week, Chris regularly entertains associates and friends. “The diversity, all at the same location and under the same management, is key,” says Chris.

“Personally, I tend to gravitate towards the Italian cuisine at Artima. For something more traditional, Karatello serves the purpose, whereas Stretto or Draught are perfect for more casual gettogethers.” The final choice is up to his guests, whether for business, to celebrate, or to support his active involvement in various clubs and networks, such as the Friends Of Wine, the Phoenician Lions’ Club and the Groupo Portugal, which gathers friends who share the same passion for food and wine every month ever since the association was established in January 2005!

His guests from abroad are always impressed – though for different reasons. Chris explains: “Those coming from cooler climates are simply

blown away by the outdoor ambience. Middle Eastern and Mediterranean visitors are delighted with the taste experience. What impresses them all is the personal welcome and atmosphere generated by both managers and staff.

Consistent Calibre

Dining out is a great way to reinforce family ties and to expand your social or professional network. Μια έξοδος για φαγητό θα σας φέρει πιο κοντά με την οικογένεια ή τους φίλους σας

One cannot but wonder what triggers such loyalty to the Carob Mill Restaurants. Chris provides the answer: “Especially when I am the host, I don’t want to take any chances. Consistency is as important as quality, and at Carob Mill Restaurants I am always sure that I will get both.”

This consistency is unshakable, despite regular revisions of the menu to accommodate new trends and different seasons. But if there is one dish that Chris would single out as a winner, it is the Artima fish platter: a medley of grilled king prawn, fresh fillet of sea bass, tuna fish and Scottish salmon which never fails to delight seafood lovers.

Chris is also a wine connoisseur who travels regularly to renowned wine regions such as Burgundy in France or Douro in Portugal. In other words, he knows a good wine when he sips one and feels confident offering his guests one of the available award-winning Cyprus wines and other selected wines from around the world that are available, whether the meal calls for a full-bodied Shiraz, or a crisp Chardonnay.

The Main Ingredient “Dining out is not only about food – though that in itself is reason enough to choose Carob Mill Restaurants,” Chris concludes. Under the right conditions it is a great way to reinforce family ties and to expand your social or professional network. It takes the tension out of a critical business meeting and adds an exciting flavour to a family day. But in Chris’s opinion, here is Carob Mill Restaurants’ trump card: “Whenever I come here,” says Chris, “I never feel like an anonymous guest; it’s more like visiting friends over and over again.”

Ο Χρίστος Γιαλλουρίδης είναι ένας άνθρωπος αφοσιωμένος στην οικογένειά του, τη δουλειά του, διάφορες φιλανθρωπικές οργανώσεις και τα εστιατόρια Carob Mill. Με καταγωγή από το αμπελοχώρι Βάσα Κοιλανίου και μεγαλωμένος στην τουριστική ατμόσφαιρα της Λεμεσού, ο Χρίστος επέλεξε μια καριέρα στην ξενοδοχειακή βιομηχανία που τον οδήγησε σε διάφορες ευρωπαϊκές χώρες ως διευθυντή ξενοδοχείου. Με εμπειρία πολλών χρόνων στη Γαλλία, στη Γερμανία, στην Αγγλία και στην Πορτογαλία, επέστρεψε στην Κύπρο με την πορτογαλίδα σύζυγό του Πάολα και τα δύο τους παιδιά, για να συνεχίσει σε διοικητικές θέσεις σε διάφορα ξενοδοχεία 4 και 5 αστέρων. Από το 2004 είναι Διευθυντής Περιφέρειας Λεμεσού της Aristo Developers Ltd. και χωρίς καμιά αμφιβολία ένας από τους πιο ένθερμους οπαδούς των εστιατορίων Carob Mill. Τουλάχιστον 2-3 φορές την εβδομάδα θα τον βρει κανείς στο Karatello, το Artima, το Draught ή το Stretto. Όμως τι σημαίνει η έξοδος για φαγητό για κάποιον που απολαμβάνει αυτό το προνόμιο τόσο συχνά;

Οικογένεια και φίλοι

“Η ώρα του φαγητού είναι πολύ ιδιαίτερη για την οικογένειά μου,” λέει ο Χρίστος. Μάλλον φυσιολογικό αν σκεφτεί κανείς πως η μητέρα του ήταν σεφ σε ξενοδοχεία στη Λεμεσό για πολλά χρόνια, και πως η γυναίκα του, η Πάολα, επιμένει πάντα να μετατρέπει τα γεύματα σε ευκαιρία για

καθημερινή επικοινωνία της οικογένειας. “Αν και μας αρέσει να μαγειρεύουμε και να τρώμε στο σπίτι, το φαγητό έξω είναι κομμάτι του τρόπου ζωής μας. Η γυναίκα μου λατρεύει την ατμόσφαιρα γύρω από το Κάστρο," προσθέτει. Αυτός είναι ένας από τους λόγους που επιλέγουν το Stretto για φαγητό σχεδόν κάθε Κυριακή, από το 2005. Ο Χρίστος συχνά καλεί σε γεύμα συνεργάτες και φίλους. "Προσωπικά, μάλλον τείνω να προτιμώ την ιταλική κουζίνα του Artima. Για κάτι πιο παραδοσιακό, το Karatello είναι ό,τι πρέπει, ενώ το Stretto και το Draught είναι ιδανικά για συναντήσεις με φίλους.” Την τελική του απόφαση την παίρνει ανάλογα με τους καλεσμένους του – αν πρόκειται για δουλειά, για γιορτή ή απλά για να υποστηρίξει την ενεργή δράση του σε διάφορα κλαμπ και ομάδες, όπως το Friends Of Wine, το Phoenician Lions’ Club και το Grοupo Portugal, το οποίο συγκεντρώνει φίλους που μοιράζονται το ίδιο πάθος για το φαγητό και το κρασί κάθε μήνα από τότε που ιδρύθηκε ο σύλλογος, τον Ιανουάριο του 2005! Οι καλεσμένοι του από άλλες χώρες πάντα εντυπωσιάζονται – αν και για διαφορετικούς λόγους. Ο Χρίστος εξηγεί: "Αυτοί που έρχονται από πιο ψυχρά κλίματα ενθουσιάζονται από την ατμόσφαιρα στους εξωτερικούς χώρους. Οι επισκέπτες από τη Μέση Ανατολή και τη Μεσόγειο μένουν κατευχαριστημένοι από τη γευστική εμπειρία. Αυτό που κάνει σε όλους εντύπωση είναι το προσωπικό καλωσόρισμα" και η ατμόσφαιρα που δημιουργείται τόσο από τους διευθυντές όσο από το προσωπικό.

Σταθερή υπεροχή

Δεν μπορεί παρά να αναρωτηθεί κανείς τι είναι αυτό που προκαλεί τέτοια αφοσίωση στα εστιατόρια Carob Mill. Η απάντηση του Χρίστος είναι απλή: “Ειδικά όταν έχω καλέσει κόσμο, δεν θέλω να ρισκάρω. Η συνέπεια είναι το ίδιο σημαντική με την ποιότητα, και στα εστιατόρια Carob Mill είμαι σίγουρος πως θα έχω πάντα και τα δύο." Παρά τις τακτικές αλλαγές που γίνονται στα μενού – για να προσαρμόζονται στις νέες τάσεις της γαστρονομίας αλλά και τις εποχές – η συνέπεια αυτή είναι ακλόνητη. Υπάρχει ένα πιάτο που ο Χρίστος θα ήθελε να ξεχωρίσει σαν νικητή. Πρόκειται για την πιατέλα ψαρικών του Artima: μια ποικιλία με μεγάλη γαρίδα στο γκριλ, φιλέτο από φρέσκο λαβράκι, τόνο και σκοτσέζικο σολομό. Ένα πιάτο που πάντα καταφέρνει να εντυπωσιάσει τους λάτρεις των θαλασσινών. Ο Χρίστος είναι επίσης γνώστης κρασιών και ταξιδεύει κάθε χρόνο σε ξακουστές περιοχές όπως η Βουργουνδία της Γαλλίας ή το Douro της Πορτογαλίας. Με άλλα λόγια, ξέρει να ξεχωρίζει το καλό κρασί από την πρώτη γουλιά και νιώθει ασφαλής όταν προσφέρει στους καλεσμένους του ένα από τα βραβευμένα κυπριακά και άλλα επιλεγμένα κρασιά απ’ όλο τον κόσμο, που διατίθενται στα εστιατόρια Carob Mill.

Το βασικό συστατικό

“Η έξοδος για φαγητό δεν έχει να κάνει μόνο με την τροφή – αν και αυτό από μόνο του είναι αρκετό για να επιλέξει κανείς τα εστιατόρια Carob Mill,” καταλήγει ο Χρίστος. Με τις κατάλληλες προϋποθέσεις, είναι ένας πολύ καλός τρόπος να δεθεί κανείς περισσότερο με την οικογένειά του ή να επεκτείνει το κοινωνικό και επαγγελματικό του δίκτυο. Μπορεί να ελαττώσει την ένταση σε ένα κρίσιμο επαγγελματικό ραντεβού ή να προσθέσει μια συναρπαστική νότα στην καθημερινότητα μιας οικογένειας. "Δεν νιώθω ποτέ ανώνυμος πελάτης όταν έρχομαι εδώ. Είναι περισσότερο σαν να επισκέπτεσαι φίλους ξανά και ξανά," λέει ο Χρίστος, ο οποίος πιστεύει πως αυτό είναι το μεγάλο ατού των εστιατορίων Carob Mill.

Hosting High-Profile Events

Carob Mill Restaurants Ltd was proud to host a number of important events that were organized within the framework of the Cyprus Presidency of the Council of the European Union.

Among these events was the Ministerial Meeting on EU Integrated Maritime Policy (IMP) in October 2012. The meeting culminated in the adoption of the Limassol Declaration during an official ceremony held in the Carob Mill Ballroom, in the presence of European Commission President Jose Manuel Barroso, the then Cyprus President Demetris Christofias, Ministers of EU member states and many other dignitaries. The EU IMP ranked among the priorities of the Cyprus EU Presidency. The policy‹s objective is to enhance the EU‹s ability to exploit the sustainable use of oceans, seas and coasts in a balanced way.

The event closed with a formal dinner for all the attending ministers. Η Carob Mill Restaurants Ltd. με υπερηφάνεια φιλοξένησε μια σειρά σημαντικών εκδηλώσεων που διοργανώθηκαν στα πλαίσια της Κυπριακής Προεδρίας του Συμβουλίου της Ευρωπαϊκής Ένωσης. Μεταξύ αυτών των εκδηλώσεων ήταν και η Άτυπη Υπουργική Συνάντηση για την Ολοκληρωμένη Θαλάσσια Πολιτική (ΟΘΠ) της Ε.Ε., τον Οκτώβριο του 2012. Η συνάντηση ολοκληρώθηκε με την υιοθέτηση της Διακήρυξης της Λεμεσού, σε μια επίσημη τελετή που διεξήχθη στην αίθουσα Ριχάρδου & Βερεγγάριας στον Χαρουπόμυλο Λανίτη, παρουσία του Προέδρου της Ευρωπαϊκής Επιτροπής Χοσέ Μανουέλ Μπαρόζο, ο τέως Προέδρου της Κυπριακής Δημοκρατίας Δημήτρη Χριστόφια, υπουργών κρατών-μελών της Ε.Ε. και πολλών άλλων αξιωματούχων. Η ΟΘΠ αποτελούσε μια από τις προτεραιότητες της Κυπριακής Ευρωπαϊκής Προεδρίας. Στόχος της πολιτικής είναι η βελτίωση των δυνατοτήτων της Ε.Ε. για την εκμετάλλευση των θαλασσών και των ακτών με ισορροπημένο τρόπο. Η εκδήλωση έκλεισε με επίσημο δείπνο για τους παρευρισκόμενους υπουργούς.

After a year of heavy-duty work, the Municipality of Limassol completed the pedestrianized area around the medieval castle of Limassol. In tandem, Carob Mill Restaurants’ outlets around the castle unveiled their own new look for the outdoor areas of Draught, Stretto and Karatello.

Now Carob Mill Restaurants offer the perfect setting for a meal or a drink in café trottoir style – minus the traffic. Karatello has reinforced its image as a traditional member of the Carob Mill family of restaurants, in terms of décor as well as dining. The all-new interior with open kitchen is based on the concept of a food store of old: baskets filled with local produce welcome you at the entrance; wall shelving units display rural paraphernalia, from baskets, to pottery and even old bicycles... The lunch menu perfectly matches the ambience since the introduction of daily changing ‘mageirko’ options – traditional, wholesome dishes with the aroma of a mama’s cooking – alongside the buffet option. The daily menu includes a soup of the day, one of several undying bean or lentil dishes, and a choice of traditional desserts, such as ‘baklava’, ‘kataifi’, ‘daktyla’, filo pastry filled with anari, and the particularly popular ‘loukoumades’, or – for a modern touch – carob ice cream.

For dinner, you can choose between Karatello’s sumptuous meze or the fun ‘check-list’ à la carte menu. Another ‘must-try’ is the Sunday lunch buffet that is served in the winter/autumn months, the unrivalled, mix-and-match meal that will satisfy all tastes and all ages, and guarantees amazing value.

away outlets, Kouzina, has found a partner Ð and it‹s a match made in the kitchen!

In a joint venture between the Lanitis Group (through its subsidiary Carob Mill Restaurants) and Zorbas bakeries, a new company was born, Zorbas Lanitis Food Point Ltd. The new entity tempts consumers with a whole range of ready meals under the new brand of ÔKouzina Zorbas LanitisÕ.

The offerings will be available in selected Zorbas bakeries across the island, as well as in stand-alone take-away outlets in Limassol and Nicosia. Carob Mill Happenings Though still in its second year, the spacious Richard & Berengaria Ballroom has already proved its potential. The hall’s basic décor was deliberately kept simple and neutral so nothing would interfere with a customized or themed ambience. In fact, photos of recently hosted events might make you doubt they were all held in the same venue.

During Cyprus’s EU Presidency, various high profile events, such as Multilingualism in Europe and a gala dinner for European Foreign Affairs Ministers, were held in the Ballroom. At the other end of the spectrum, the Ballroom was the stage of international boxing events with full-size boxing ring, followed by a gala dinner for some 300 guests. A Jungle Party – themed club night with non-stop DJ music, amazing sound and light effects, open bar and islands also filled the hall. Fashion shows and fund-raising charity events feature regularly on the Ballroom’s calendar, especially around Christmas and Easter.

Summer highlights included the 5th Oriental World Cup (annual international belly-dancing competition) and the Alexia Art Exhibition in July… Are you planning an event soon?

Πριν από ένα χρόνο και κατόπιν "λαϊκής απαίτησης", το εστιατόριο παρουσίασε ένα μενού σούσι, το οποίο σύντομα καθιερώθηκε. Diomedes Hadjivarnava, Head Chef of Ryan’s Bar & Grill, is proud of the enviable high ratio of regular guests at Ryan’s. One of the reasons is that they know that Diomedes regularly tweaks his recipes and menus, one dish at a time, all the time.

A few months ago, however, Diomedes decided it was time for a culinary ‘spring cleaning’ of sorts.

Though his commitment to prime cuts is unwavering, he added a series of rising stars: Duck Breast with Maple Syrup Sauce, Lamb Shank Slow-Cooked with Commandaria Wine, Mango Avocado Salad, and Grilled Salmon with Saffron Cream Sauce.

But there’s one thing Diomedes and chef Andreas Georgiou will not give up: the famous Ryan’s Sunday Lunch Buffet. Sunday is the only day the restaurant is open for lunch. Offering great value, the buffet starts with a soup, followed by… a serious dilemma: 15 kinds of salad, a cold salmon display, a carvery featuring chicken, lamb, pork, beef, gammon, plus various side dishes and vegetables. You certainly won’t leave without at least a few sweet bites from the dessert buffet.

Η Κυριακή είναι η μόνη ημέρα που το εστιατόριο είναι ανοιχτό το μεσημέρι. Ο μπουφές ξεκινάει με σούπα και ακολουθούν: 15 είδη σαλάτας, κρύος σολομός, κοτόπουλο, αρνί, χοιρινό, μοσχάρι, διάφορα συνοδευτικά και λαχανικά. Και φυσικά ένας μπουφές με γλυκά!

bits&bites Taste Investigator Executive Chef Skevos Kapsos aims to please the palate | Ο Executive Chef Σκεύος Κάψος έχει στόχο τις γευστικές απολαύσεις The Executive Chef is to restaurants what petrol is to your car. He’s the man who drives the kitchens forward, in terms of recipes, equipment, staff and taste appeal. So who is the man behind this title at Carob Mill Restaurants? And, to extend the comparison, what is his ‘octane rating’??

A seasoned chef Skevos Kapsos joined PNS Restaurants Ltd in 2000 and Carob Mill Restaurants as the Executive Chef in its pre-opening days in 2001. His job was to kick-start a row of restaurants and get them rolling: Stretto, Artima, Draught and Karatello. The beginning was expected to be uphill, yet with 30 years of experience, Skevos was deemed equal to the task.

“It was a great challenge,” Skevos remembers. “Four all-new restaurants, each with a different ‘personality’ – and a blank menu.” But working from scratch had its advantages. After having spent many years in hotel restaurants, Skevos was excited to be involved with the local market. “Here, I knew I could be myself and build a rapport with my guests,” he says. With no precedent menu at the time and the management behind him, the new restaurants were his ‘baby’.

But babies have needs, and one of them is constant attention…

Attention to the palate Back in 2002, Carob Mill Restaurants had the ‘novelty factor’ on their side. But, by definition, novelty tends to evaporate in the Cyprus sun. Skevos’s duty was to make sure it didn’t, by offering something different – in all four restaurants – and something that would appeal to the local market. His menus needed to surpass the competition in terms of quality and value. The secret?

Skevos says, “The only way to be successful over time is to know what your customers want, and to provide it.” That is why Skevos does not hide in the kitchen. On the contrary; he circulates, talks to his guests, requests feedback either directly or via the waiting staff. Such ‘data’ is not merely registered in the corner of his mind, but finds its way to your table.

From listening to serving It’s quite interesting to discover how much of the menu is a response to guest feedback. Have you ever had a soup as a starter to your meze anywhere else?

Or loukoumades served with ice-cream? Do you know why there are so many different salads and healthy options on the Carob Mill Restaurants’ menus?

These are only some examples of how Skevos transformed guests’ suggestions into game-changing menu features.

Listening to diners is as important as keeping track of what moves and what doesn’t – and is therefore not allowed to linger on the list, regardless of how attached the Chef might be to his labour of love. But that doesn’t mean that Skevos throttles his taste buds or curbs his imagination. He’s come up with a solution: Chef’s Recommendations. On that page of the Artima menu, Skevos presents ‘pilot’ recipes. Depending on whether they fly or crash, they will either take up residence on the menu or be sent into exile.

This is part of a strategy which stipulates that regular changes to the menu are not optional. Being equally versed in the kitchen and in the business, Skevos is aware of the need for constant renewal. In addition to listening, he follows the latest culinary trends and evolving eating patterns. ‘Stay the same, and you’ve lost the game,’ is his motto.

To achieve his goals, Skevos readily admits that he needs and enlists the help of his team of 35 members in three kitchens. “I need my team to support me. I train, guide and inspire them, but their contribution is crucial.” Indeed, it is the single most important ingredient in any recipe, because teamwork is key in our world.

Ένας έμπειρος chef

Η συνεργασία του Σκεύου Κάψου με την PNS Restaurants Ltd ξεκίνησε το 2000, ενώ ανέλαβε ως executive chef των εστιατορίων Carob Mill πριν από την έναρξη λειτουργίας τους, το 2001. " Ήταν μεγάλη πρόκληση," λέει ο Σκεύος. "Τέσσερα ολοκαίνουρια εστιατόρια, το καθένα με διαφορετική 'προσωπικότητα' και ένα ακόμα άδειο μενού." Με 30 χρόνια εμπειρίας, πολλά από τα οποία σε εστιατόρια ξενοδοχείων, ο Σκεύος ενθουσιάστηκε με την ανάμειξή του στην τοπική αγορά.

Αναζητώντας το μυστικό

Το 2002, τα εστιατόρια Carob Mill είχαν τον παράγοντα της πρωτοτυπίας με το μέρος τους. Τα μενού του έπρεπε να ξεπεράσουν τον ανταγωνισμό, να είναι καλύτερα τόσο σε ποιότητα όσο και σε αξία. Ο Σκεύος πιστεύει πως βρήκε το μυστικό: "Ο μόνος τρόπος για να πετύχεις σε βάθος χρόνου είναι να ξέρεις τι θέλει ο πελάτης σου και να του το προσφέρεις." Γι' αυτό ο σεφ δεν κρύβεται στην κουζίνα. Αντίθετα, κάνει βόλτες ανάμεσα στους πελάτες και μιλάει μαζί τους, ζητάει τη γνώμη τους προσωπικά ή μέσω των σερβιτόρων. Τα δεδομένα που συλλέγει δεν τα καταχωνιάζει σε μια γωνία του μυαλού του, αλλά τα μετατρέπει σε πράξη - στα πιάτα που φτάνουν στο τραπέζι σας.

Υλοποιώντας επιθυμίες

Έχετε φάει αλλού σούπα σαν ορεκτικό για τους μεζέδες σας; Ή μήπως λουκουμάδες σερβιρισμένους με παγωτό; Ξέρετε γιατί υπάρχουν τόσες πολλές σαλάτες και υγιεινές επιλογές στα εστιατόρια Carob Mill; Αυτά είναι μόνο μερικά παραδείγματα πως τα σχόλια των πελατών βρήκαν το δρόμο τους στα μενού που δημιούργησε ο Σκεύος, κάνοντας τη διαφορά. An experienced sommeliers will tell you straight off that their first rule when recommending a wine for a meal is that there are no rules. Each new occasion is unique and many factors are involved. There isn’t a single precise wine for each particular dish. The individual tastes and personality traits of the consumer should always be central in choosing the correct wine to accompany a meal.

There are, however, basic guidelines created upon the fundamental principles of food science and further refined through many years of study and experimentation.

For example, a good sommelier will generally match acidity with acidity. But the old standby of ‘white wine with chicken and fish, red wine with meat’ was tossed out the window years ago. A roasted chicken would pair very nicely with a Pinot Noir or red Burgundy. The enjoyment of barbecued pork might greatly increase by pairing it with an offdry Riesling or Pinot Grigio.

The Pursuit of Harmony

The basic idea is to seek a harmonious balance. The food shouldn’t be so strong in flavour and substance as to obscure the individual qualities of the wine, and the wine should know its place as companion and not overpower the food with its own strengths. The intensity of both elements must also be balanced. An intense dish, whether its power is from the main ingredient, the spices, or the cooking method, demands an intense wine. Steamed or grilled dishes are less intense than food that is roasted, grilled, fried or spicy.

Personality and Taste

A good sommelier will also try to quickly assess the customers’ general preferences.

Are you a light soup and salad person or a hearty stew, bring-on-the-spices person? What’s your favourite season? If you say summer, a lighter, more refreshing wine might be advised. If you prefer winter, a Chardonnay, Syrah or Bordeaux might be more appropriate. Another general guideline is to stick to the same region in your choices: Italian wine with Italian food, Cypriot wine with Cypriot food.

Go With the Cypriot Two grape varieties from Cyprus that have a prominent place in Carob Mill Restaurants are Maratheftiko and Xinisteri. Maratheftiko contains the history of the island and is known as the big power in Cyprus wines. It’s a strong, medium-to-heavy red that works magic with many of Carob Mill’s beef and lamb dishes. It combines perfectly with succulent meats, and with a ribeye steak it’s superb.

In particular, Maratheftiko is recommended to accompany the lamb kleftiko and rabbit stifado at Karatello, the meze at Istorikon, the combo grill at Artima and Draught, and the sausage platter at Draught.

The Xinisteri displays many similarities to Sauvignon Blanc, including its versatility in food pairing. It would drink well with almost 50% of Carob Mill’s Mediterraneanbased menus. It also pairs nicely with sushi, sea bass (if the wine is older than one year), lobster pasta, and Artima’s most popular item, the chicken and parmesan salad.

Cyprus’s own Commandaria, gaining more enthusiastic fans every year, is wonderful with cheesecake or loukoumades. And with a starter of foie gras, it’s a necessity.

And of course there’s always the classic, Champagne, which drinks well with everything!

Προσωπικότητα και γεύση

Σας αρέσουν οι ελαφριές σούπες και οι σαλάτες ή προτιμάτε τα βαριά μαγειρευτά φαγητά με πολλά καρυκεύματα; Αν σας αρέσει το καλοκαίρι, τότε θα μπορούσατε να πάρετε ένα ελαφρύ, δροσιστικό κρασί. Αν προτιμάτε το χειμώνα, ένα Chardonnay, ένα Syrah ή ένα Bordeaux ίσως να σας ταιριάζει καλύτερα. 100γρ. κρεμμύδι, ψιλοκομμένο 70γρ. σκόρδο, ψιλοκομμένο ½ ματσάκι μαϊντανό, ψιλοκομμένο 500γρ. μπρόκολο 70ml ελαιόλαδο 100ml λευκό κρασί 200ml κρέμα γάλακτος

φύλλα βασιλικού 300ml μπισκ αστακού

αλάτι, πιπέρι Για το μπισκ αστακού 40γρ. ψιλοκομμένο κρεμμύδι 30γρ. μίσχους/φύλλα φρέσκου σέλινου 30γρ. φρέσκο καρότο 80ml λευκό κρασί 30ml μπράντι 40γρ. ανάλατο βούτυρο 30γρ. αλεύρι (φαρίνα) 100γρ. ντοματοπελτέ 200γρ. κελύφη αστακού, γαρίδας 2 φύλλα δάφνης

Preparation

Προετοιμασία

Boil lobster tails for 7-10 minutes, depending on their size. Heat a small pan, pour in the olive oil, add the onion and sauté. Add shrimps and broccoli and sauté for a few minutes. Pour brandy over the mixture to flambé. When brandy has evaporated, add the wine and the fresh cream to the mixture.

Finally add the lobster tails, garlic and lobster bisque. Cook linguine in boiling salted water for approximately 7 minutes. Strain the linguine and stir it into the lobster tails sauce for approximately 1 minute until evenly distributed.

Top with parsley and garnish with basil leaves.

Βράστε τις ουρές για 7-10 λεπτά. Σε ένα μικρό τηγάνι τοποθετήστε το ελαιόλαδο και τσιγαρίστε το κρεμμύδι. Στη συνέχεια προσθέστε τις γαρίδες, το μπρόκολο. Ρίξτε το μπράντι. Όταν εξατμιστεί, προσθέστε το κρασί και την κρέμα. Προσθέστε τις αστακοουρές, το σκόρδο και το μπισκ. Βράστε τα λιγκουίνι για 7 λεπτά. Ανακατέψτε τα με τη σάλτσα και τις αστακοουρές για 1΄ περίπου. Πασπαλίστε με μαϊντανό και γαρνίρετε με βασιλικό.

FOR lobster bisque Melt the butter in a hot saucepan. Add the onion, carrot, celery and lobster shells (and optional prawn shells). Sauté for 5-6 minutes, then add the tomato paste and flour and stir well. Pour brandy over the mixture to flambé. When brandy has evaporated, add the wine and the bay leaves.

Add some water and simmer for about 2 hours until the broth is reduced and has acquired the lobster taste. Strain broth and season with salt and pepper to taste.

ΓΙΑ μπισκ αστακού Λιώστε το βούτυρο και προσθέστε κρεμμύδι, καρότο, σέλινο και τα κελύφη των αστακών (προαιρετικά και γαρίδας). Τσιγαρίζετε για 5-6 λεπτά, προσθέστε ντοματοπελτέ μαζί με το αλεύρι και ανακατέψτε καλά. Προσθέστε το μπράντι και όταν εξατμιστεί προσθέστε το κρασί και τα φύλλα δάφνης. Προσθέστε λίγο νερό και σιγοβράστε για 2 ώρες, μέχρι ο ζωμός να μειωθεί και να αποκτήσει τη γεύση του αστακού. Στραγγίξτε και ρίξτε αλάτι και πιπέρι.

main dish Cook the pasta in boiling salted water for 9-10 minutes. Drain the pasta and while hot, place in a bowl with the pesto sauce, the lemon juice and lemon zest. Mix and serve immediately with some Parmesan cheese flakes.

If you, like many, think pasta is an Italian creation, think again.

The truth is that the ancient Greeks were serving the forerunners of lasagna, while the Chinese were cooking their egg-based noodles.

In Cyprus, local pasta varieties made their official debut in the 14th century, handcrafted and only prepared for special events.

Is there any more satisfying ‘comfort food’ on the planet than a steaming plate of pasta with your favourite sauce? Whether it’s linguini, cannelloni, spaghetti or ravioli, all worries and pressures seem to disappear with that first succulent, toothsome mouthful.

But where does pasta come from? Most people would probably say Italy, but Italians didn’t eat pasta until rather late in its evolution. Others claim that China was first, although their so-called pasta was egg-based.

But at the same time the Chinese were passionately slurping up their egg noodles, a thousand years before Christ, the Greeks created the first genuine pasta from flour and water.

This prototype Greek pasta was called lagana – the poet Horace wrote about it in the first century AD – and it consisted of thin sheets of fried dough. It quickly became something Athenians couldn’t get through a day without. And it took several hundred years for this lagana – described in ancient Greek cookbooks as having alternate layers of dough and meat stuffing – to develop into Italian lasagna.

In the second century, the Greek physician Galen mentions ‘itrion’, a pasta closer to what we eat today. We know that it travelled to Israel, because a few years later the Talmud notes the consumption of itrium, a boiled dough. And long after the Greeks, the Arabs in the 3rd century wrote poems about itriyya, stringy shapes of semolina that were dried before cooking.

Indeed, pasta wasn’t popular in Italy until the 14th century, but they eventually made it into a big business, especially in San Remo in the 1600s when they began to manufacture pasta in various shapes. For hundreds of years pasta was eaten plain and with the fingers, but in the late 1700s, the Italians introduced tomato sauce (from Latin America) and that’s when pasta really took off, conquering international gastronomy in a way unsurpassed by any other food item.

Pasta started to grace more dinner tables in Cyprus in the 14th century when trade on the island was becoming increasingly dominated by merchants from Genoa. Then in 1489, Venice purchased Cyprus from Queen Catherine Cornaro, and the inevitable result was… more pasta!

Cyprus Pasta Pasta has always been a major element of the national cuisine, as a common everyday dish and as the star attraction on special occasions such as weddings and baptisms. One of the island’s oldest styles of pasta was called ‘trin’ (from trii in Sicily), which looked similar to white rice but was about three times longer. Trin was often topped with grated halloumi or dry anari, and in certain villages boiled in milk and sprinkled with sugar to make ‘galotrin’. Nowadays there are three basic traditional pastas that have become staples of the Cypriot diet: makaronia, fides, and ravioles.

Την ίδια περίπου εποχή, χίλια χρόνια πριν από τη γέννηση του Ιησού, οι Έλληνες δημιούργησαν τα πρώτα γνήσια ζυμαρικά από αλεύρι και νερό. Αυτό το πρωτότυπο ελληνικό ζυμαρικό, για το οποίο έγραψε ο ποιητής Οράτιος τον πρώτο αιώνα μ.Χ., λεγόταν λάγανον και αποτελούνταν από λεπτά φύλλα ξηραμένης ζύμης. Χρειάστηκαν εκατοντάδες χρόνια μέχρι το λάγανον, που περιγράφεται στα αρχαία ελληνικά βιβλία μαγειρικής σαν στρώσεις ζύμης με γέμιση κρέατος, να εξελιχθεί στα ιταλικά λαζάνια. Τον δεύτερο αιώνα βρίσκουμε την πρώτη αναφορά στο ίτριον, ένα ζυμαρικό που μοιάζει περισσότερο με αυτά που τρώμε σήμερα. Γνωρίζουμε πως ταξίδεψε μέχρι το Ισραήλ, γιατί λίγα χρόνια αργότερα η κατανάλωση ίτριου, μιας βρασμένης ζύμης, αναφέρεται στο Ταλμούδ. Πολύ μετά τους Έλληνες, τον τρίτο αιώνα, οι Άραβες έγραψαν ποιήματα για τα ιτρίγια, κορδόνια από σιμιγδάλι, τα οποία έπρεπε να στεγνώσουν πριν μαγειρευτούν. Πράγματι, τα ζυμαρικά δεν έγιναν δημοφιλή στην Ιταλία παρά τον 14ο αιώνα, όπου τελικά εξελίχθηκαν σε μια τεράστια επιχείρηση. Ειδικά στο Σαν Ρέμο, περίπου στα 1600, άρχισε η παραγωγή ζυμαρικών σε διάφορες μορφές. Για εκατοντάδες χρόνια τα ζυμαρικά τρώγονταν σκέτα και με το χέρι, μέχρι που στα τέλη του 1700 οι Ιταλοί πρόσθεσαν τη σάλτσα ντομάτας (που καταγόταν από τη Λατινική Αμερική) και τότε τα ζυμαρικά πραγματικά απογειώθηκαν, κατακτώντας την παγκόσμια γαστρονομία. Στην Κύπρο τα ζυμαρικά άρχισαν να εμφανίζονται τον 14ο αιώνα, την εποχή που το εμπόριο του νησιού κυριαρχούνταν από τους Γενοβέζους, όμως η δημοτικότητά τους εκτινάχτηκε το 1489, όταν η Βενετία αγόρασε την Κύπρο από τη Βασίλισσα Αικατερίνη Κορνάρο.

Κυπριακά ζυμαρικά

Τα ζυμαρικά ήταν πάντα ένα από τα βασικά στοιχεία της εθνικής κουζίνας, τόσο σαν καθημερινό πιάτο, όσο και σαν κάτι πιο εντυπωσιακό σε ειδικές περιστάσεις, όπως οι γάμοι και τα βαφτίσια. Ένα από τα πιο παλιά είδη ζυμαρικών στο νησί ονομάζεται τριν (από το trii στη Σικελία) και μοιάζει με ρύζι, αν και είναι τρεις φορές πιο μακρύ. Το τριν συχνά συνοδεύεται με τριμμένο χαλούμι ή αποξηραμένη αναρή, ενώ σε κάποια χωριά το βράζουν με γάλα, το πασπαλίζουν με ζάχαρη και το ονομάζουν γαλότριν. Σήμερα, υπάρχουν τρία βασικά παραδοσιακά ζυμαρικά τα οποία κατέχουν σημαντικό ρόλο στην κυπριακή διατροφή: τα μακαρόνια, ο φιδές και οι ραβιόλες.

Makaronia

Before industrialization in Cyprus, when pasta was always homemade, the tubular style of makaronia required a great deal of work – the hole being formed by wrapping the dough around a bush twig (sklinitzior throumpi) – so it was reserved for special festivities like engagement parties and the ‘Sikoses’ holiday before Lent. Most makaronia is made of only durum wheat and water, but semolina, olive oil or sheep’s milk butter can be added to the dough.

In the old days, making makaronia and other pasta was truly a social activity, demanding the participation of all the women in the village. Ribbons of the damp dough were set to dry on long, straw trays called ‘tsestoi’ before being cut and shaped. Then the ribbons were dusted with halloumi or anari and dry mint leaves. When it was time to feast, the pasta was boiled in plain water or chicken broth, sometimes with the addition of thick tomato paste, honey or carob syrup.

Fides Making fides (similar to capelli d’angelo or angel hair) was also an important event in Cyprus village life. It was done on Saturday nights, Sundays and feast days only, and no other work could be attempted. The village women moistened their hands with olive oil which aided in their precision cutting of the dough into very thin strips. It was then dried in the sun or in clay ovens and, in some villages, by lightly frying it in olive oil. Often used in soup or mixed with pourgouri (couscous), this pasta was so highly valued it was exchanged instead of money for fresh fruits or handmade sweets. And because of its great nutritional value, fides was

Μακαρόνια

Πριν φτάσει η βιομηχανοποίηση στην Κύπρο, όταν τα μακαρόνια ήταν πάντα χειροποίητα, το κυλινδρικό σχήμα των μακαρονιών απαιτούσε τεράστιο κόπο. Για να γίνει η τρύπα στο κέντρο έπρεπε κανείς να τυλίξει τη ζύμη γύρω από ένα κλαράκι θρουμπιού και έτσι τα έφτιαχναν μόνο σε ιδιαίτερες περιστάσεις, όπως οι αρραβώνες. Τα περισσότερα μακαρόνια φτιάχνονται με αλεύρι από σκληρό σιτάρι και νερό, όμως μπορεί κανείς να προσθέσει στη ζύμη σιμιγδάλι, ελαιόλαδο ή φρέσκο βούτυρο. Τα παλιά χρόνια η παρασκευή μακαρονιών και άλλων ζυμαρικών ήταν πραγματικά μια κοινωνική δραστηριότητα που απαιτούσε τη συμμετοχή όλων των γυναικών του χωριού. Κορδέλες από νωπή ζύμη απλώνονταν για να στεγνώσουν σε μακριούς καλαμένιους δίσκους, τους λεγόμενους τσέστους, πριν τις κόψουν για να τους δώσουν σχήμα. Στη συνέχεια τις πασπάλιζαν με χαλούμι ή αναρή και δυόσμο. Την ώρα της γιορτής έβραζαν τα ζυμαρικά σε νερό ή ζωμό κότας, ενώ κάποιες φορές πρόσθεταν ντοματοπελτέ, μέλι ή σιρόπι χαρουπιού.

Ravioles Ravioles, which originated in Venice in the 14th century (from riavvolgere, to wrap) is perhaps the most popular pasta in Cyprus to this day.

Traditionally, a large ball of dough was rolled out thin with a long wooden pole (madratzi), a filling of ground halloumi (sometimes with anari), egg yolk and mint was spread onto the dough sheet then covered by another thin blanket of dough. Then it was cut into circular shapes with a glass, lamb’s bell or copper pastry wheel before nimble fingers pressed the edges closed. The final step, before eating, was to boil the ravioles in plain water or in water with chicken or pork fat, and in some villages, to fry them in olive oil or bake them in the oven.

Of course, every village was proud of its own recipe for the ravioles filling, adding to the cheese any number of tasty ingredients and locally gathered herbs. In Nata village the filling is particularly rich and includes sugar, raisins, anari cheese, mint and cinnamon but no egg yolk or halloumi.

Ραβιόλες

Οι ραβιόλες (από το ρήμα riavvolgere = τυλίγω) κατάγονται από τη Βενετία του 14ου αιώνα και είναι ίσως το πιο δημοφιλές ζυμαρικό στην Κύπρο μέχρι και σήμερα. Αρχικά άνοιγαν σε φύλλο μια μεγάλη μπάλα ζύμης με τη βοήθεια ενός πλάστη. Επάνω του τοποθετούσαν τη γέμιση από τριμμένο χαλούμι (ή αναρή), κρόκο αβγού και δυόσμο, και το κάλυπταν με ένα δεύτερο φύλλο ζύμης. Στη συνέχεια έκοβαν τις ραβιόλες σε κυκλικό σχήμα με ένα ποτήρι ή ένα κουδούνι από πρόβατο και τις έκλειναν γύρω-γύρω με τα δάχτυλα. Τέλος, πριν το φαγητό τις έβραζαν σε νερό σκέτο ή με λίπος από κοτόπουλο ή χοιρινό. Σε κάποια χωριά τις τηγάνιζαν σε ελαιόλαδο ή τις έψηναν στο φούρνο. Φυσικά, κάθε χωριό ήταν περήφανο για τη δική του συνταγή γέμισης για ραβιόλες, όπου πρόσθεταν εκτός από το τυρί διάφορα γευστικά υλικά και ντόπια αρωματικά. The Bill of Fare The food menu is simplicity itself: a set meze dinner featuring more than 20 different dishes. As the seasons change, Chef Antoni Sleiman will make some adjustments, but usually the meze slate features homemade bread, village salad, taramosalata, tahini, tzatziki, black olive paste, anari cheese balls, fried shrimp done in ouzo, lovingly grilled calamari, feta saganaki, eggs with asparagus, loukanika sausage (from Agros village), spare ribs, grilled artisanal halloumi, freshly made sheftalia, pork souvlaki, chicken souvla, assorted olives and fired potatoes.

And there is one other item that deserves your concentrated attention.

If you don’t have a large appetite, make sure you save room for the chef’s masterpiece, the kleftiko, which arrives about two-thirds through the feast. This is prime New Zealand lamb slow-cooked for five to six hours in individual clay pots – never in aluminum foil – with delicious Cyprus potatoes, and it is truly something special. Many repeat customers claim it to be the best version of this classic Greek dish they have ever tasted.

Substitutions can be made for customers observing Orthodox fasts, and vegetarians only have to notify the waiter or waitress and the chef will prepare a special plate with assorted non-meat delicacies.

The Istorikon wine list focuses on Cypriot and Greek wines with more than a dozen producers represented from each country, but the full extensive wine list of sister restaurant Artima is also available for connoisseurs. That means anything from Robert Mondavi California reds to the fine Chilean wines of Casa Lapostolle to the great Barolos and Brunellos of Tuscany, the superior Burgundies and Bordeaux (such as Chateau Latour Grand Cru Classe ’97) and top shelf Champagnes.

The dessert table is sumptuous as well, and you’re sure to find at least one of your favourite local sweets to enjoy with a filter, Nescafe or Cyprus coffee.

Αν θέλετε να δειπνήσετε, να απολαύσετε ένα γλυκό ή έναν καφέ, ή να ακούσετε μουσική και να χορέψετε, τότε στο Ιστορικόν θα τα βρείτε όλα στον ίδιο χώρο. Μετά από δεκατρία χρόνια επιτυχημένης λειτουργίας αποδεικνύεται πως η συνταγή αυτή είναι σωστή. Οι ντόπιοι νιώθουν σαν στο σπίτι τους στο νοσταλγικό περιβάλλον, που με έναν έντονο τρόπο τους θυμίζει τι σημαίνει να είσαι Κύπριος. Οι τουρίστες έχουν την ευκαιρία να βιώσουν ό,τι καλύτερο έχει να προσφέρει η κυπριακή κουλτούρα. Αυτός είναι και ο λόγος που κορυφαία ξενοδοχεία στο νησί συστήνουν το Ιστορικόν ανεπιφύλακτα σε πελάτες που θέλουν να γνωρίσουν τον "πραγματικό" τρόπο ζωής της Κύπρου.

Μενού με ποικιλία γεύσεων για όλα τα γούστα

Το μενού είναι η επιτομή της απλότητας: ένα προκαθορισμένο δείπνο με κυπριακούς μεζέδες, το οποίο αποτελείται από 20 και πλέον διαφορετικά πιάτα. Ανάλογα με την εποχή, ο σεφ Αντώνης Σλέιμαν κάνει κάποιες αλλαγές, αλλά συνήθως η πιατέλα με τους μεζέδες περιλαμβάνει χειροποίητο ψωμί, χωριάτικη σαλάτα, ταραμοσαλάτα, ταχίνι, τζατζίκι, πάστα μαύρης ελιάς, κροκέτες από αναρή, τηγανητές γαρίδες με ούζο, καλαμάρια ψημένα με φροντίδα, φέτα σαγανάκι, αβγά με σπαράγγια, λουκάνικα από το χωριό Αγρός, παϊδάκια, ψητό χαλούμι, φρέσκια σεφταλιά, χοιρινό σουβλάκι, κοτόπουλο σούβλας, μια ποικιλία από ελιές και τηγανητές πατάτες. Όμως όσο κι αν οι μεζέδες είναι ακαταμάχητοι, σε κάθε περίπτωση φροντίστε να αφήσετε λίγο χώρο για το αριστούργημα του σεφ, το κλέφτικο, το οποίο έρχεται στο τραπέζι σας λίγο αργότερα. Πρόκειται για αρνάκι Νέας Ζηλανδίας το οποίο έχει ψηθεί αργά – πέντε ως έξι ώρες – σε ατομικά σκεύη από πηλό, και όχι σε αλουμινόχαρτο, με πεντανόστιμες κυπριακές πατάτες. Είναι πραγματικά κάτι ξεχωριστό. Πολλοί από τους τακτικούς πελάτες υποστηρίζουν πως είναι η πιο νόστιμη εκδοχή αυτής της κυπριακής συνταγής που έχουν δοκιμάσει ποτέ. Μπορούν να γίνουν αλλαγές στα πιάτα για πελάτες που νηστεύουν, ενώ οι χορτοφάγοι δεν χρειάζεται παρά να ενημερώσουν τον σερβιτόρο και ο σεφ θα ετοιμάσει ένα ειδικό πιάτο με επιλεγμένες νοστιμιές χωρίς κρέας. Η λίστα κρασιών του Ιστορικόν εστιάζει σε κυπριακά και ελληνικά κρασιά, με περίπου μια ντουζίνα παραγωγούς να εκπροσωπούν την κάθε χώρα, ενώ οι γνώστες μπορούν να απολαύσουν και την εκτενέστερη λίστα κρασιών του αδελφικού εστιατορίου Artima. Opened in 1999 after exhaustive restoration work that was diligently monitored by the ministry of culture, the taverna has changed very little in its philosophy or culinary offerings, except that the meze has become almost exclusively Cypriot. Chef Antoni, who has been at the kitchen’s helm for ten years, explains that in the beginning there were more dishes from mainland Greece, but only saganaki, the kleftiko and the ouzo in the fried shrimp remain. Even hummous was dropped from the meze because it was deemed not Cypriot enough!

Istorikon is housed in what was formerly the stables and wine cellar of a historically significant building constructed in the 1820s. Home to a prominent family, it was one of the city’s most impressive structures at the time, and over the years has served the community as a secure shelter from earthquakes as well as a meeting place and refuge during the nation’s various struggles for independence. There were secret underground tunnels that led from the cellar to the port. To this day, no one knows the function of several elongated pyramid-shaped holes – still visible today – that were designed as part of the original stone foundation. (Take a look and see if you can guess their function!)

The elegantly arched walls that separate the rooms of the cellar restaurant have been studied by architectural students as classic examples of the stonemason’s art. For Istorikon’s dinner guests, these arches, in combination with the exposed timber ceiling beams, archival black-and-white photographs, illuminated iconography, and softly muted lighting from castle-style lamps, help create an utterly soothing ambience and a snug feeling of security and comfort.

Bona Fide Fun “Our loyal clientele are not just from Limassol,” continues Mr Sofokleous. “They come from all over the island and on a regular basis because they know they can count on an evening of authentic traditional food and music in a comfortable, pleasant setting. It’s like their local village taverna but with a consistently higher quality of cooking and a level of service you can only find at a five-star hotel. And then there’s the music. Ex-Adieretou is one of the best-loved rembetiko groups in Cyprus.” On the nights when Ex-Adieretou do not play, a continuous taped medley of music from the Greek and Cypriot golden eras is broadcast – you will never be distracted from the restaurant’s concept by disco, hip hop or rock music blasting through Istorikon’s sound system.

Istorikon is open seven days a week, from 7:30 pm until late – it really depends on how many people are still dancing.

The taverna can seat 150 but on Friday and Saturday night, when there is live music, you’ll need to book a table in advance.

Without a reservation, you can always listen to the spirited music from the adjacent courtyard and do your Zorba dance across its rough stones. But it’s much more comfortable inside where there is good food, tasty wine and ardent camaraderie – and you can dance and sing along as a live participant in a timeless celebration of Cypriot culture.

Αυθεντικό περιβάλλον

Η ταβέρνα, από την έναρξη της λειτουργίας της το 1999 - μετά από εκτενείς εργασίες αναπαλαίωσης υπό την παρακολούθηση του Τμήματος Διατηρητέων Κτηρίων έχει αλλάξει ελάχιστα τη φιλοσοφία και τις γαστρονομικές της προτάσεις, με τη διαφορά πως πλέον οι μεζέδες είναι σχεδόν αποκλειστικά κυπριακοί. Ο σεφ Αντώνης, ο οποίος ηγείται της κουζίνας τα τελευταία δέκα χρόνια, εξηγεί πως στην αρχή τα περισσότερα πιάτα ήταν από την ηπειρωτική Ελλάδα. Από εκείνα τα πιάτα τα μόνα που έχουν παραμείνει είναι η φέτα σαγανάκι, το κλέφτικο και το ούζο στις τηγανητές γαρίδες. Το Ιστορικόν στεγάζεται στους χώρους που αποτελούσαν τους στάβλους και το κελάρι ενός σημαντικού ιστορικού κτηρίου, που χτίστηκε τη δεκαετία του 1820. Ήταν το σπίτι μιας εξέχουσας οικογένειας και ένα από τα πιο εντυπωσιακά κτίσματα της πόλης εκείνη την εποχή. Στο πέρασμα του χρόνου έχει χρησιμεύσει σαν καταφύγιο για σεισμούς και σαν χώρος συνάντησης κατά τη διάρκεια των αγώνων του έθνους για ανεξαρτησία. Υπήρχαν υπόγεια μυστικά τούνελ που οδηγούσαν από το κελάρι ως το λιμάνι. Μέχρι και σήμερα κανείς δεν ξέρει σε τι εξυπηρετούν οι πολυάριθμες τρύπες σε σχήμα πυραμίδας που έχουν σχεδιαστεί στις πέτρες των πρωτότυπων θεμελίων. Οι τοίχοι με τις κομψές αψίδες που χωρίζουν τα δωμάτια του εστιατορίου στο κελάρι έχουν μελετηθεί από φοιτητές αρχιτεκτονικής σαν κλασικό παράδειγμα οικοδομικής τέχνης. Για τους πελάτες του Ιστορικόν αυτοί οι τοίχοι, σε συνδυασμό με τα ορατά ξύλινα δοκάρια στην οροφή, τις ασπρόμαυρες φωτογραφίες αρχείου και τον χαμηλό φωτισμό από τις λάμπες σε στιλ κάστρου, δημιουργούν μια απίστευτα χαλαρωτική ατμόσφαιρα και δίνουν μια αίσθηση θαλπωρής, ασφάλειας και άνεσης.

Είναι σαν την ταβέρνα στο χωριό τους, όμως με σαφώς υψηλότερη ποιότητα μαγειρικής και ένα επίπεδο εξυπηρέτησης που συνήθως βρίσκει κανείς μόνο σε ξενοδοχεία πέντε αστέρων. Φυσικά είναι και η μουσική. Οι Εξ' Αδιαιρέτου είναι ένα από τα πιο δημοφιλή ρεμπέτικα σχήματα στην Κύπρο.” Το Ιστορικόν είναι ανοιχτό κάθε μέρα, από τις 7:30 μ.μ. ως αργά τη νύχτα, ανάλογα με το πόσα άτομα βρίσκονται στην πίστα για χορό. Μπορεί να φιλοξενήσει 150 άτομα, όμως τις Παρασκευές και τα Σάββατα, όταν παίζει η ζωντανή μουσική, καλό θα ήταν να κάνετε μια κράτηση. Χωρίς κράτηση, έχετε τη δυνατότητα να ακούσετε τη μουσική από την αυλή που βρίσκεται δίπλα και να χορέψετε στις πλάκες της, όμως μέσα είναι πολύ πιο άνετα. Εκεί υπάρχει καλό φαγητό, γευστικό κρασί και μια ζεστή συντροφιά – μπορείτε να χορέψετε και να τραγουδήσετε, συμμετέχοντας σε μια γιορτή κυπριακής κουλτούρας.
