From Vision to Reality Welcome to Cyprus, to Kanika Hotels, and to another issue of Accents. This magazine gives me the opportunity to address our guests, to share some thoughts about our group, how far we’ve come, what you can expect from Kanika Hotels and look forward to in the near future. Since 1977 Kanika Hotels have been listening to the market and offering real-life responses to holidaymakers’ wish lists. After decades of experience in the Cyprus hotel industry, the year 2011 proved to be a milestone in our history. It was the year we launched the Olympic Lagoon Resort in Agia Napa. The success and popularity of the new resort exceeded all expectations. It also signalled the beginning of a new era of expansion.

Today, we are proud to present the youngest member of our family: the second Olympic Lagoon Resort, this one on the legendary coast of Paphos. This new hotel is the second chapter of the success story that began in Agia Napa. But the truth is, the story’s ‘plot’ was written long before the first resort opened its doors to the world. It is the result of our efforts to identify what holidaymakers were looking for, but couldn’t find – like a missing piece of the Cyprus holiday puzzle. After extensive research and analysis, we finally put our finger on it. What Cyprus lacked was a complete destination that offers holidaymakers a happy and memorable holiday experience within the framework of high standard all-inclusive hospitality. The next step will be to take the Olympic Lagoon concept, as a brand in its own right, even further, beyond the shores of Cyprus. With each new Olympic Lagoon Resort we will further develop this new brand and push the boundaries of the premium all-inclusive concept by adding new facilities, more options, and even better value. In Paphos we introduced the Mayan Temple with water slides as a new fun feature in the family pool area. We also added the new Snackeria to the existing variety of Olympic Lagoon food outlets. Innovation – whether in the form of new services or facilities – will always be embedded in the development of every new Olympic Lagoon Resort. But the Kanika vision does not end there. With an eye on market trends and a heart for holidaymakers with high hopes, another major development is already in the pipeline: the Infinity Hotels. Infinity is destined to be the preferred choice among those who appreciate a quiet holiday retreat that is reserved for adults. It’s an escape with an air of exclusivity and the warmth of Cyprus hospitality that transforms visitors into friends. The first Infinity Hotel is expected to become a reality in 2018. Naturally, you will be the first to receive our updates and launch dates, and we look forward to having you among the first guests at the new hotel. Comprising three age groups – Mini Kickers (three to six-year-olds), Junior Kickers (seven to 11-year-olds) and Kool Kickers (12 plus years-old) – the Olympic Soccer Academy is a five-day course, complete with a certificate and acknowledgement of progress and performance. From Monday to Saturday, with a break on Wednesday, children can enjoy professional training based on the Triple P philosophy: Prep, Practise, and Play. It’s a morning hour (or 45 minutes for the Mini Kickers) of targeted coaching the fun way, where children develop their skills as well as a team spirit. Limassol District The Medieval Castle Richard the Lionheart celebrated his marriage to Berengaria of Navarre here in 1191, and crowned her Queen of England. Throughout the years, the fort suffered damage from earthquakes and assaults of various invaders. Kolossi Castle Kolossi Castle was built in 1210 by the Frankish military. It first served the Grand Commander of the Knights Templar then was the headquarters of the Knights of the Order of St. John of Jerusalem. It is a fine example of military architecture. Kelokedara Donkey Farm

Cyprus is called ‘the island of love’ thanks to the Ancient Greek Goddess Aphrodite, and her birthplace is marked by a large rock. Legend tells us she was born from sea foam at this spot and took her first steps on the island. The area itself has some of the most beautiful sunsets in the country.

Donkeys were once an important part of Cypriot life and used for travel, transportation and labour. Located in 19 hectares of sprawling land, the Donkey Farm provides shelter and veterinary care for the Cyprus Donkey, which was once at risk of becoming an endangered species. With a history dating back more than 8000 years, Paphos is home to many proud treasures. Time-travel to the past and discover the ruins of villas, palaces, theatres, fortresses and tombs belonging to the Classical, Hellenistic and Roman periods. Situated near Paphos harbour, the Paphos Archaeological Park — listed as one of the natural and cultural riches in UNESCO’s world heritage sites — allows access to several prehistoric centres and monuments. Renowned for being some of the best maintained mosaics globally, the spectacular mosaic floors of four Roman villas are an unmissable highlight of the Park. The complex also includes other significant monuments, such as the Asklipieion, Saranta Kolones (Forty Columns) Fortress, Limeniotissa ruins of early Christian Basilica and the Tombs of the Kings: a large underground necropolis carved into the native rock dating back to the 4th century BC and thought to have been the burial sites of Paphitic aristocrats and high officials. A jump forward to recent history brings you to the nearby Medieval Castle of Paphos, originally built as a Byzantine fort to protect the Paphos harbour in the late 12th century. Carob: The Dark Treasure of Cyprus

A sweeter bounty of the island’s vegetation resides in the orchards of carob trees, where the process of syrup-making is a longstanding tradition. The black carob pods are collected from the trees, placed in large pots of water and the mixture is simmered until a rich reduction is formed. This syrup is then used to create what is referred to as ‘black gold’, a carob caramel called pasteli, found only in Cyprus. This was an important barter item for communities from Paphos to Limassol, and in the village of Anogyra, Despoula and Andreas Michael have remained loyal to the traditional recipe.

Wholesome Heritage

Many Mediterranean ingredients are the basis of alternative recipes characteristic of Cypriot cooking. During the grape harvest in autumn, the juice of the fruit is placed in a huge pot where it slowly comes to the boil and is then used to form a thick casing for strings of almonds and walnuts. The end result is called shoujouko, which looks like rock candy and is a naturally sweet and nutritious snack. This time-consuming process was a highly social affair as was the production of handmade, fresh pasta. The women of the village divided themselves into groups where each made its own speciality pasta. The procedure for making makaronia is incredibly simple as small lumps of dough are wrapped around a reed tube in record speed. Indeed, time was of the essence for the pasta makers: makaronia had to be prepared the day after a wedding to thank the guests. These indigenous practices in local cooking have passed through generations and shaped the Cypriot way of life.

Many delicacies were invented as an offshoot of rural life and a classic example is halloumi cheese (from the ancient Greek phrase en alarmi meaning ‘salted’). The first record of halloumi dates back to a Venetian manuscript of 1554 that documented this delicacy made with the milk of the mouflon, a species of sheep that is the symbol of Cypriot wildlife. Halloumi is produced in the summertime when the animals find only dry food to eat and this makes the milk more concentrated. The curd is pressed into baskets, and the resulting cheese is brined with salt—which preserves it for months—before leaves of mint are folded in.

On the other hand, meat-smoking was a winter activity as many families slaughtered a pig every Christmas when the temperature dropped. The meat was smoked in order for the pork to last longer—or at least until Easter, when the hams heralded the end of fasting season. One of the most traditional renderings is chiromeri, which is smoked for ninety days at different temperatures. Its red-wine-coriander marinade is changed several times and the ham is repeatedly hung up to dry. Alongside halloumi and olives, chiromeri was served as an afternoon meze when visitors happened to pass by.

The abundance of plants in Cyprus was first mentioned by the ancient philosopher and naturalist Theophrastus, and of these around sixty edible species now remain. Gracing the hilltops and river banks are Cypriot herbs such as wild garlic, thyme and oregano as well as wild greens of coriander, tarragon, parsley and basil. The gardens of every household traditionally grew mint and rose geranium, and together these powerful aromas have enhanced the diversity of Cypriot cooking.

The fragrances of flowers were put to good use with areas such as Famagusta and Morfou utilizing their citrus plantations to produce orange blossom water. North of Paphos, the village of Kampos was the first to distill rosewater. The petals range in all colours, from white to bright pink to purple, but all roses belong to the Damascus variety. Countless petals are placed in a traditional distillation vessel, and after an hour of being soaked in cold water, the distillate begins to flow from the valve like a prized moonshine. Aside from featuring in dessert recipes, rose water is a luxury fragrance that honours special occasions. It blesses babies during a christening ceremony and refreshes the hands of guests when welcomed to one’s home.

A LUXURY ADDITION

Presently, with only three fishing shelters that barely can accommodate large speed boats, Agia Napa is set to become the next region to host a state-of-the-art marina development. Makronisos Marina & Resort is a new project that is being designed as a 600-berth, €220-million project due to be completed by 2018. “In order to make Cyprus a nautical destination, similar Marinas [to Limassol Marina] must be developed,” outlined Stavros Caramomondanis, managing director at M.M. Makronisos Marina Ltd. As is the case at Limassol Marina, luxury residential options will be put up for sale creating an ideal marriage between elegant yachting and fivestar quality accommodation, a match now proven to be one made in heaven. Apartments on a luxury high rise tower with sweeping views will be made available (all with sea views) along with 30 units of super luxury villas that are either beachfront or facing the Marina and with their own private berths. Within the commercial area, high-end restaurants are being incorporated to offer a variety of dining options such as local Cypriot, Italian and Japanese cuisines. Cafés will also be strategically located within the food court area so visitors can enjoy a coffee with inspiring views of the harbour. “We will also offer services for repairing large boats by lifting/launching facilities via a self-propelled Marine Hoist,” stated Caramomondanis.

RICH PAST AND PRESENT Another region with a rich maritime history is Paphos. Located on the edge of its harbour is the magnificent Paphos Castle which was originally built as a Byzantine fort to protect the the seaward entrance to the city. Throughout the ages it has seen many uses, serving as a fortress, a prison and even a warehouse for salt. More recently, the castle serves as a backdrop to a variety of art exhibitions and cultural events, including the annual open air Paphos Aphrodite Festival which takes place in September. This year it will host Rossini’s masterpiece play, La Cenerentola (Cinderella). In addition to the harbour, Paphos Port today serves as a small marina and a fishermen’s shelter and has a capacity for 300 boats. It is arguably the region’s top tourist hub with plenty of restaurants and cafés lining the water’s edge. “This place,” remarked Andreas Demetriades, president of the Board of Directors at the Paphos Chamber of Commerce and Industry, “is a showcase for various passenger ships as well as fishing boats. In the near vicinity of the harbour there are various archaeological sites, numerous accommodation options, souvenir shops as well as restaurants and taverns where visitors are able to taste traditional Cypriot food and enjoy a refreshing drink.” Working alongside the Chamber of Commerce and Industry, the Paphos Tourism Board are eagerly promoting and pushing ahead the building of a dock at the port to enable cruise ships to berth, something which will boost the city’s tourist and economic development. “Like Agia Napa, Paphos is also planning for a new state-of-the-art marina, which is scheduled to be located at Potima, Peyeia. Labelled as a major nautical development, Paphos Marina is designed to have moorings for 1,000 boats, slipways and a boatyard. There will also be various leisure facilities, including restaurants, bars, shops and residential options as well,” concluded Demetriades. For many it may come as a surprise to see Cyprus only recently embracing its rich maritime history and incredible coastline – something which the island’s past inhabitants long ago maximised to its full potential. However, it’s now clear for all to see that the tides are turning and the island is once again positioning itself amongst the Mediterranean’s most advanced and luxurious maritime hubs.
