Gastronomy occupies a privileged position in this town that knows how to translate the wealth of its fauna and natural surroundings into incredible flavours. Wild mushrooms in any of their forms, duck with pears, wild boar stew, fricandeau with wild mushrooms or delicious jaumet almond biscuits... all make up unforgettable meals which are complemented by Sant Hilari’s wonderful aromas and springs. The importance that gastronomy has here is evident in the various gastronomic festivals that are organised throughout the year and which alternate between typical traditional cooking and the most modern signature cuisine.

Welcome Sant Hilari, capital of the Guilleries, welcomes you and invites you to discover nature in all its various shades, water as the source of life and richness, gastronomy linked to the region and its produce, a rich historical and cultural heritage and a place to spend your holidays surrounded by tranquillity and leisure possibilities to suit all tastes. Sant Hilari is known as “the town of a hundred springs”. This means

that here and there, spread all over the town, you will find springs with medicinal mineral waters that have marked the town’s economy and that constitute one of its main attractions. At the Font Picant, Font Vella, Font d’en Gurb and Font del Cirerer springs, among many others, you can try the water as a source of life and discover the freshness of the surrounding landscapes.

and Heritage

A NATURAL WORLD

Photographs by Salvador Bosch

Surrounding the town, the humid forests of central European origin and the Mediterranean forest exhibit all the colours of nature. In the Pla de les Arenes area, heading towards Vic, you will find a wide sample of this rich vegetation made up of beech trees, conifers, chestnuts and oaks of great dimensions, as well as varied fauna, such as foxes, which are nowadays the symbol of the town.

HISTORICAL HERITAGE

Sant Miquel de Solterra is, at 1204 m, the highest peak in the Guilleries Mountains. On this mountain, which is very popular with hikers, there used to be a castle built by the Gurbs, who were once the lords of this place, but it was destroyed by earthquakes in the 15th century. The place where this castle stood, and from where you can enjoy some spectacular views, is presided over by an iron cross.

Historical heritage forms an intrinsic part of Sant Hilari and provides us with the chance to take a journey through the centuries. Some of the most representative examples of this inheritance from our past are the old hospital, today the offices of the Town Council, the Mas Carbó castle, an old fortified house the remains of which can still be seen, and Can Rovira, a stately home from the 15th century which currently houses the tourist office. Another recommended visit is to the old spa at Font Picant, the parish church (dedicated to Saint Hilary of Poitiers) and Pedra Llarga, a menhir (or standing stone) of 1.80 metres in height that dates from 1800 BC.

Another natural and very beautiful environment is the Ribot Oakwood, a forest that is well worth a visit to enjoy its verdant leafiness and hundredyear-old oaks and beeches which, despite being more typical in other latitudes, have adapted perfectly to the local climate. MAN and THE ENVIRONMENT

THE SANCTUARY ROUTES

Situated in the Cooperativa building, in the centre of the town, and dating from 1924, the Guilleries Museum presents a clear and broad vision of the flora and fauna of the area through different ecosystems. Furthermore, throughout the year different temporary exhibitions are held there and they organise trips and routes around the town and its surroundings.

In Sant Hilari various traditional local gatherings are held each year, events that provide a unique opportunity to visit the most important churches and chapels in the municipality. Of particular interest among these are Mare de Déu del Pedró (an old Romanesque church with a single nave), Santa Margarida de Vallors (which dates from 939), the Nen Jesús de Praga chapel (an emblematic place for local people) and the chapels of Mare de Déu de Vallclara, Sant Andreu de Bancells and Sant Martí de Querós.

Festivals and traditions Sant Hilari has always known how to preserve its traditions, which nowadays have been converted into festivals, such as the Living Way of the Cross (Good Friday), which was officially declared a Traditional Festival of National Interest in 1999 and has become an international reference. Also we mustn’t forget other occasions such as the tree trunk chopping exhibition held in November, paying homage to the men who work in the forest, and the sardana dance festival which is held on the third weekend in August. However, all Sant Hilari’s activity and dynamism really take off during the Town Festival, which is held on the last weekend in August. Shortly afterwards the “Torna Serrallonga” festival takes place, a weekend of highwaymen and outlaws to commemorate the deeds and misadventures of Joan Sala, a famous 17th-century bandit from these lands, the Wild Mushroom Fair and the Wood Fair in November.
