Looking Forward

“O

n a clear day, you can see forever.” Not just from the top of Mt. Katahdin but from the bottom of the riprap at Goose Rocks Beach during low tide. What I’m looking for, and surely see, is a fantastic summer, full of unexpected moments. There are at least two kinds of time, you know. Real time and “great time.” Literary theorist Mikhail Bakhtin writes, “[Stories] break through the boundaries of their own time. They live in centuries, that is, in great time, and frequently (with great works always) their lives are more intense and fuller than are their lives within their own time.” Hamlet, he says, lives in great time. The Maine mystique lives in great time, too. I close my eyes when I think of my first Italian sandwich with oil (all memories are better with oil) in Portland or my first bowl of lobster stew at Le Garage in Wiscasset. In great time, the hulks Hesper and Luther Little are still outside the window, wowing diners. Remember the first time you gazed into the L.L. Bean trout pond or found your first sand dollar? A book like One Morning in Maine can’t be pigeonholed into the summer of 1953. We experience it in all summers. The cheery part of this coming summer is our hope to experience it together. It can be a statement summer that shows who we are. Maine has always been a destination haven for healing and recovery. Everyone around me, and at this magazine, has the abundant heart to wish this. This summer could be our finest hour. Dare to look forward. Give this summer a chance. If you do, how it will astound you.

As I had thought on my way home, she wished her mother were still alive to know this. Maine seaweed is rising to the surface. The second annual “seaweed-focused restaurant week and kelp harvest festival” is April 24 to May 2. “Seaweed’s biggest claim to fame is minerals—seaweed is algae, not a plant—it’s much better at extracting nutrients from the environment,” says Josh Rogers, owner of Heritage Seaweed. Which is why so many cultures use it in dishes and skincare products (think sushi and facemasks). “We tend to think of seaweed as being an Asian thing, and particularly Japanese, but there’s a global history. Coastal peoples all around the world have always used seaweed.” As seaweed goes, so goes the universe.

Maine M y st i q u e guests are having fun when 50 of them are in a Conga Line while I perform ‘Jump in the Line’ by Harry Belafonte. The key is performing fun, familiar songs that visitors can sing along with. It might be ‘Country Roads’ or ‘Drunken Sailor.’ “During July and August I move from the pub to the main dining room for the large weekly family event, Sunday Suppah! There you might hear ‘Harbor Lights’ by Boz Scaggs or ‘Here Comes the Sun’ by The Beatles. A little of the pub feel often sneaks in by the end of the event.” You know summer’s in full swing at Sebasco Harbor Resort when the weekly Thursday evening Lobster Bakes kick off. They are expected to start June 25. “A quiet day is around 125 people, but it’s frequently closer to 200,” says managing director Michael Lynch. “The majority are resort guests, but it’s open to the public and a lot of boaters come. We have 30 moorings available to rent for $40 a day.” The bakes serve “a lobster or steak option and adjust for people who are vegetarian. Eighty-five to 90 percent of people have lobster, so we’re usually cooking at least 110 lobsters.” The steamed lobsters come with a feast of trimmings: “Clam chowder, corn on the cob, andouille sausage, mussels or steamers, red potatoes, salad, and watermelon or blueberry pie for dessert. We include beer and wine for adults.” Tickets are $38 per person for resort guests, $50 for the public, with adjusted prices for children. “We’ve never had to cap the guests. We’ll bring out an extra tent if we have to.”

They’re a trio that play francophone folk music, with some New Orleans style, too. They start playing during dinner, and afterwards the contra dancing starts at 6:30 p.m.” Contra dancing has mixed origins from English and Scottish country dances and French dances from the 17th century. “The band gets as many couples up as want to participate and directs them through the moves. Once the first two or three couples have gone down the line everyone picks up the motions easily. The dancing goes on all the way until 8 p.m.” MaineGuide 2020 19

The attraction has been a musical refuge for summer vacationers for over a century, first offering campers music lessons in 1915. After loving her experience here, Jan Orans purchased the 47-acre establishment in 1984. She passed away on Valentine’s Day 2020, but her son Sam Orans is carrying the torch. “My mother always thought she wanted to open a summer camp but quickly realized that came with hundreds of children. She decided buying this resort was a better solution—a camp for adults! “Guests stay from Saturday to Saturday. They arrive together and leave together.” Every day sparkles with a new performance. Classical music concerts, musical theater shows, and operas vibrate in the

window-lined music hall with the backdrop of Kezar Lake and the Presidential Mountain Range beyond. It’s innovative, stagey, exciting enough to scare the deer. “We hire 40 performers every year,” Orans says. “By day they’re busboys, waiters, chambermaids, or working on the beach. Then at night they’re putting on these performances.”

Everyone gets to showcase what they can bring to the table, so the guests get a lot of variety.” What’s exceptional is, “guests really get to know the performers,” Orans says. “You may be served 18 of your 21 meals by the same person you see in a concert. Then, after the show, you’re standing with them, chatting in a way you’d never be able to in other theaters. Our music is live and sudden—very up-close and accessible.”n

Actress Julianne Moore fell in love with this house, where she met her director husband Bart Freundlich while they were shooting The Myth of Fingerprints in these rooms.

amily member Nick Chandler, a software executive, chats with me about this house and its practical magic. “There’s a ghost story here,” he says. “There was a woman who was in a bad mood at a social gathering. She was being particularly crabby. Dust whooshed up from the fireplace and swirled around her for a few seconds,” like four little tornados. “And then just as suddenly they collapsed right beside her in piles of dust. Everyone at the table was speechless.” The Merrill family includes the Poor family. Chandler listens politely when I burnish the old chestnut about lawyer, entrepreneur, and railroad visionary John Poor. “When Portland and Boston were competing to win the first railroad line from Montreal to the seacoast, John wanted Maineguide 2020 39

Grand Trunk Railroad to have the eastwest passage to Portland first. Executives in the Montreal Board of Trade were skeptical. Weren’t the woods of Maine too forbiddingly wild for such an adventure? Poor was equal to the challenge. By 100 miles, Portland was a far nearer neighbor to Montreal than Boston—and therefore a quicker shortcut to the great European seaports. In the Forest City, he jumped in his sleigh and started traveling in a blizzard in February. He stopped here, at the place of his birth, at the house he loved. Then he continued through Rumford, where townspeople helped him carry his urban sleigh over drifts ‘higher than his horse’s back,’ then through the White Mountains (amid shrieking winds and temperatures plunging below -27 degrees) and across the icedover St. Lawrence River to astonish the bigwigs in Montreal. Jaws dropped when the 6-foot, 2-inch, 18-stone Poor stalked into their boardroom and dusted off the snow. They were just about to award the line to Boston rail executives, who were present. Grand Trunk won the line. Now here was a dreamer who backed up his dreams,” I say of John. “It was John’s younger brother, the attorney Henry Varnum Poor, who cofounded Standard and Poor.”

eople can be really tough,” Chandler says. “But if you look at the kind of character Ezekiel Merrill had—that’s what I can’t get over. After serving in the Continental Army during the Revolutionary War, he left Newburyport, brought his family up from Fryeburg to Bethel [in 1789], cleared a track through the forest, built a cabin here (it took 14 months), and then came down the Androscoggin [in seven birchbark canoes paddled by Native Americans] to the meeting of the east and west branch of the Ellis River here in Andover. You should see it in the afternoon. Great hanging-out times. There’s beautiful tiling in the fireplace. Then there’s the dining room, of course. You can’t have a house without a dining room. Bridal showers began as an alternative to the dowry practice when a bride was too poor to afford a dowry. Friends and family pitched in with gifts and favors. “Women from the neighborhood helped the bride prepare household goods like quilts and linens. They told stories, shared memories, and showered the bride with luck, hope, and assistance. It’s the impetus for what eventually became the more commercialized bridal shower we know today.”

Having a crop or livestock was better than hunting a deer any day. Maine was different from lower states in that we had more wilderness longer. America was prosperous. Even people who were working class could eat meat almost three times a day in some places.”

W

hat about Maine’s favorite arthropod? “It wasn’t until the mid-1800s when people brought lobster to the table. Lobster was a non-serious food. People would eat it and throw the shells on the ground,” Oliver says. “At the same time, lobster has always been very valuable seafood when there’s a market for it. This is true as far back as very early settlement.” “Even though it was abundant,” Jenkins says, “it was still difficult to get. We had to go out, haul the trap, catch the lobster, and not get our fingers pinched off.”

obster ends up with a funky reputation. If fishermen couldn’t sell their haul, they’d have to eat it. This eventually led to the canning of lobster,” Oliver says. “There are stories of big-city reporters writing stories about the Maine coast, saying things like ‘they’re using lobster as fertilizer!’ What they didn’t see was that lobster canneries were selling lobster refuse to farmers as cheap, efficient fertilizer. The fields were speckled with little red shells of lobster. It was easy to make assumptions. “When researching for my book, Saltwater Foodways, I couldn’t find any reports of poor folk or prisoners refusing to eat lobster three to four days a week. I found that exact story but told with salmon. It’s a folktale.” “Mussels and periwinkles were the real poverty food,” Jenkins says.

All About EEls Although Maine’s elver fishery gained traction in the 1970s, we’ve been dining on eels since our earliest days. “People who came here were fully aware of the deliciousness of eels and of ways to capture and prepare them. So were the native Wabanaki,” Jenkins says. The American Plate: A Culinary History in 100 Bites dates a recipe for Old Eel Pie to a popular English cookbook from 1615. Antiquarian bookseller Don Lindgren, president of Rabelais Inc., says, “John Josselyn, the first chronicler of Maine food and useful plants and animals, includes eels in his New England Rarities Discovered (1672): ‘In New England, the Indians have in greatest request [the] bass, the sturgeon, the salmon, the lamprey, the eel, the frost-fish, the lobster, and the clam.’ “Maria Eliza Rundell’s A New System of Domestic Cookery (1807) was one of the most widely available cookbooks in New England. Recipes two through eight are all about eel: ‘Eel Pye, Spitchcock Eels, Fried Eels, Boiled Eels, Eel Broth, and Collared Eels.’” The pièce de résistance is “a fancy pie with Soal, Cod, or Turbot, which uses eels as a base.” Good Maine Food (1939) by Marjorie Mosser, with notes from novelist Kenneth Robert, slides in with three eel recipes: Eel Jelly, Baked Eels, and Matelote of Eels. The Matelote of Eels simmers the fish in red wine, garlic, onion, and spices like thyme, cloves, and parsley. The eels are served over croutons and topped with a brandy sauce. “For a 21st century Maine taste of eel,” Jenkins says, “my daughter Sara Jenkins serves them at her restaurant Nina June in Rockport. She gets the eels from Sara Rademaker, who raises them in aquaculture ponds in Waldoboro.” n

The Fortean Forest H

ow it began: at dusk it came. It came from the forest, slinking ghostly with its planchette-shaped head, with its scare-quote eyes, its following rat’s tail. I had been tossing peanuts on the deck for the chippies, for the squirrels. It, with its star-shaped hands, apparently liked them too, cracking the shells, gobbling the legumes. At first, I was frightened. But then gradually, slowly, incrementally, as is so often in life, I became accustomed to it, him, her, them. Perhaps even fond? Soon five of them, six, appeared feeding at dusk, sometimes later. Some nights they squabbled, squirmed for position, but their skirmishes were histrionic—a turned back, palmed peanuts. A half-hearted hiss or growl. And, yes, they played possum. They played possum while Little Dog, my terrier, sniffed or scampered before the French door. Enter the skunk. It came from the forest, trundling along, sans souci, smug in its funk, and stunning in its stripes. It shepherded the peanuts. And, yes, it stomped and, yes, it sprayed. It sprayed, backing up into possum kissers. But, chowing down, the marsupials missed nary a nibble. Apparently, opossums have high tolerance for pong. The opossums partook. And the skunk munched along. Then came the raccoon. It came from the forest. It tumbled like a bear cub onto the deck with its shaded eyes and its bandit heart. It had hands like an opossum. It scrambled, and scavenged, and scooped,

and scarfed. It butted and nudged and shoved, but the opossums held their own. White as fog, the opossums crept over the deck, plucking peanuts while the skunk spewed its fumes. Behind the glass, Little Dog and I applauded the frantic antics. We named the raccoon Rocky, the opossums, Awesome and Blossom. We pretended that we could differentiate them, that we recognized them. And night after night, they came. They came from the forest. To which they returned. To which all return. All return to the forest. LePew was the first to go. Back, we assumed, to where skunks come from. Back, we assumed, to the forest. But the opossums continued to come, and Rocky, and then his friends, Rascal, and Bandit, and Rigby, and Ranger Rick, and Scootch. Why, soon by the light of the moon all the raccoons were combing their auburn hair. And with the Awesome(s) and Blossom(s), Little Dog and I were running out of names. But still they came. They came cavorting, and frolicking and rollicking, and frisking, and gamboling. They came and came and still, they came. And then things began to turn ugly. First, Rocky and Rick jumped Awesome and Blossom who started drooling before they keeled over. Then the raccoons began to turn on each other. Chittering and chuckling, wheezing and growling, they lunged and plunged into each other. The large ones pig-piling on the smaller.

Inside, Little Dog whimpered. I stopped throwing peanuts onto the deck. But still they came. Humping and hunching for peanuts like gibbous shadows before the moon. Sparring with each other. Scratching and biting. One drew blood. Drastic and sarcastic raccoons confronted me at the French door, eyes aglint and hands on hips. The opossums spooked back to where opossums come from. But the raccoons… They came to stay. They gazed from their gaze, considering their options as the full moon rounded their shadows. The boar looked like a foreman on jury duty. The kits skittered behind him. But he of the striped tail, he of the ski mask and glittery dark eyes, was calculating, deliberate. Something was off. I grabbed Little Dog and clutched her to my chest, our breaths chorded. The dark fur-shadows flumped and thumped over my deck. Then they began to assemble, clustering around their leader. MORE PEANUTS, their eyes screamed. Not good. So not good. A cloud scudded before the moon. Opossums screamed in the forest. Little Dog squirmed against my chest as he in the Domino mask leaped toward the door. We watched as the handle twisted. Waiting, barely breathing, as the moon shivered.
