Kay Simms, M.S., CSCS, HFI My Health Philosophy: Good health is a blessing not to be taken for granted. I love sharing my passion for fitness and wellness with others. The greatest reward I could ask for is seeing my clients succeed and change their lives. The combination of proper resistance training, cardiovascular training, and nutrition provide the formula for success!! Hard work is not an option, it is MANDATORY! I enjoy utilizing the science of my exercise physiology degree background to evaluate and address every client’s individual needs. My goal is to serve every client with energy, passion, and commitment every day to lead them to happier, healthier lives. Changing lives is what I do every day through fitness, nutrition, and mental training. Clients feel better as they work toward and achieve their goals. Whether improved body composition, daily functioning, or sports performance is the goal, I address all aspects training required to achieve it. Nutrition is a key aspect of reaching health/fitness goals. Whole, clean foods are the ticket to success. I myself must live a gluten-free/lactose-free diet; thus helping others identify unknown food allergies/intolerances has become a passion of mine raising quality of life for many and increasing awareness of keeping foods “back to basics” as much as possible. Experience in cardiac rehabilitation research and living a gluten/lactose-free diet enhances my ability to serve a more diverse clientele with compassion and care. Competitive collegiate tennis and figure competition experience provides a further level of performance training for those with competitive goals. Whatever the need, the client will be served 110%! SPICE UP YOUR LIFE WITH SUPER SPICES! Does that 5 oz serving of chicken looks a little bland sometimes next to the steamed broccoli? Spice up your food AND health with “super spices”! Super spices are great to incorporate into your dishes as many are anti-inflammatory to aid in muscle recovery, vitamins and minerals for muscle repair, and antioxidants to combat free radicals for cancer prevention. Below are just a some of the super spices that will jazz up your food and your body! Start “super spicing” your food today! Cinnamon: Cinnamon is high in manganese, dietary fiber, and iron. It has many benefits including antiaging, anti-clotting, cognitive processing, and potential blood glucose lowering in type 2 diabetics. Sprinkle this super spice on oatmeal, vanilla or chocolate protein shake, or dessert rice with stevia and milk. Tumeric: Tumeric is a good source of calcium, magnesium, dietary fiber, B6, iron, potassium, and manganese. It contains a high concentration of curcumin, an antioxidant and anti-inflammatory agent. Ginger: Ginger is a good source of potassium and provides stomach relief, anti-inflammatory and antioxidant benefits. Cumin: cumin is a good source of magnesium, fiber, and calcium. It aids in digestion, respiratory issues, and is anticarcinogenic.

Ginger Apple Chicken Ingredients • 2 cloves garlic, finely chopped • 1 tablespoon finely chopped fresh ginger • 1 teaspoon ground coriander • 1 teaspoon ground cumin • 1 teaspoon whole yellow mustard seeds • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1/4-inch-thick slices • 1 tablespoon all-purpose flour • 1 1/2 teaspoons canola oil, divided • 1 tart apple, such as Granny Smith, cored and cut into thin wedges • 3/4 cup reduced-sodium chicken broth • Salt, to taste • 1 tablespoon chopped fresh cilantro, or parsley Preparation 1. Stir together garlic, ginger, coriander, cumin and mustard seeds in a small bowl; set aside. 2. Toss chicken with flour in a medium bowl until evenly coated. Heat 1 teaspoon of the oil in a large nonstick skillet or wok over medium-high heat. Add the chicken and sauté until wellbrowned on all sides, 4 to 6 minutes. Transfer the chicken to a plate with a slotted spoon and set aside. 3. Add the remaining 1/2 teaspoon oil and apple to the pan. Reduce heat to medium and cook, stirring, until apples are lightly browned, about 3 minutes. Reduce heat to medium-low and add the reserved spice mixture. Stir until the apples are tender and the garlic is fragrant, 2 to 3 minutes. Add broth and the reserved chicken; increase heat to medium-high. Bring the mixture to a simmer and cook until the sauce is slightly thickened and the chicken is no longer pink inside, 2 to 3 minutes. Season with salt. Transfer to a serving dish and sprinkle with cilantro (or parsley). Nutrition Per serving : 176 Calories; 5 g Fat; 1 g Sat; 2 g Mono; 64 mg Cholesterol; 7 g Carbohydrates; 24 g Protein; 1 g Fiber; 156 mg Sodium; 248 mg Potassium

Apple Ginger Chicken INGREDIENTS • 2 teaspoons ground cumin • 2 teaspoons ground coriander • 1/4 teaspoon freshly ground pepper • 1/4 teaspoon kosher salt • 1 pound chicken tenders • 3 teaspoons canola oil, divided PRPARATION 1. Combine cumin, coriander, pepper and salt in a medium bowl. Add chicken and toss to coat. 2. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add the chicken and saute until golden brown and just cooked through, 2 to 4 minutes per side.

Super Spice Grill Mix Ingredients • 2 teaspoons cinnamon, ground • 2 teaspoons garlic powder • 2 teaspoons rosemary leaves, finely crushed • 2 teaspoons thyme leaves • 1 teaspoon oregano leaves • 1 teaspoon sea salt • 1/4 teaspoon red pepper, crushed Cooking Directions Mix all ingredients until well blended. Store in tightly covered jar in cool, dry place. Use mix as dry rub or in marinades for grilling.

Toronto Pro Show Post Review By Nancy Di Nino The inaugural Toronto Pro Show was an action packed weekend filled with avid fans, fitness enthusiasts and celebrity appearances. Inspired by the Arnold Sports Festival, the weekend kicked off on Friday with the expo highlighting a number of extreme and combative sports from bodybuilding, fitness, figure, arm wresting, strong man and MMA. In heading to the expo on Friday it was already buzzing with fans ready to meet their favourites celebrates in each of their respective sports. In attendance were 8x Mr. Olympia winner Ronnie Coleman, 6x Olympia winner Dorian Yates, Hall of Fame Inductees-IFBB Pro Bodybuilders Shawn Ray and Rich Gaspari and IFBB Pro Bob Cicherillo. As a media correspondent for the Toronto Pro show team I was more then excited to interview the various celebrities and industry icons around the expo including IFBB Pro Bodybuilder Toney “the Xman” Freeman, Strongman Champion Hugo Girard, World Champion Arm Wrestler Michael Roy and of course I was busy backstage interviewing the winners’ of each of the women’s events in the OPA and IFBB Bodybuilding, Fitness, Figure and Bikini events.


Backstage! And the winner is? Backstage was crowded with Pro and Amateur women. It was all about studded suits, bikini bite, heals and practicing those last minute poses before taking the stage for the judges. Canada held strong Friday night as they announced the winners in Fitness, Bikini and Women’s Bodybuilding. Canada left no room for error in the Women’s Pro Fitness line up snatching each of the top 3 spots. It was a tear-filled moment for the newest of our IFBB Fitness Pro’s Jody Boam who brought an undefeatable package earning her first Pro show win, remarkably, within the first year of obtaining her IFBB Pro Card at the CBBF Canadian Nationals in 2010. Myriam Capes took 2nd place with her show stopping routine. Veteran Fitness Competitor Mindy O’Brien who returned to the fitness line up after recovering from various injuries took 3rd place clearly demonstrating she still has what it takes to qualify for the Olympia. The Pro Bikini division is always a show stopper with bombshell Chelsea Montes taking 1st place. A great way to celebrate her Pro win on her birthday. She was able to wow the judges with her swagger, style and stage presence. Close behind was Missy Cole placing 2nd, and Canadian cutie Justin Monroe is always a heart throb on stage with her stunning smile and cultivated physique that graces the stage like poetry in motion. The Women’s Pro Bodybuilding winner was locked in by Brigita Brezovac adding another Pro show to her belt along with victories in both the Europa Battle of Champions and Pro Bodybuilding Weekly championships in 2010. Canada’s Nicole Ball took 2rd place with evidence that Nicole was doing her homework bring greater thickness to her physique. Mah Ann Mendoza looked the best she ever has bringing the best physique and presentation to date. Balanced symmetrical lines and sharp conditioning earned her 3rd place. Saturday was highlighted with various events including the finals for the Oxygen and Muscle Mag model searches offering lucrative prizes and magazine coverage. The OPA Provincials was the largest to date and the night ended with the Pro Men’s Bodybuilding, 202 and Figure Divisions. A great year for Pro Figure winner Gennifer Strobo adding this Pro win to her roster of top 5 placings. Trinidad’s , Candice John took 2nd place and rounding out the top 3 was Ann Titone. Craig Richardson often seen as the underdog, managed to steal the Men’s Pro Bodybuilding win, challenging the misconception that “bigger means better.” Weighing in at 214 pounds . Bringing his best package to the stage, it was evident to the judges once the quarter turns to the back revealed the winner. The 202 division was championed by Shaun Tavernier. Bringing back the Toronto Pro show proved to be a great success . A special thanks to Promoters Ron Hache, Co- Promoter Jim Morris L.A. Redding the media team , volunteers and all those who came out to support the inaugural sports weekend . The Toronto Pro Show , Canada’s largest extreme and combative sports was more then a weekend of sports, it was an opportunity to bring world class athletes from 18 different countries together to live their dreams and share their passion for each of their respect sports.

My name is Michael Moore. I am the Owner operator Midwest Iron. As a teenager I set and broke 67 APF state, national and world records. As an open class lifter I am an AAU World Champion Powerlifter in 4 events. Most recently competed in the Mid IL Bodybuilding show placing 11th and competed in the APC National Powerlifting Championships placing 1st.

I have all new pictures from the 2011 N.P.C Mr. Michigan bodybuilding championships where I took second runner-up at a ripped and shredded 205 pounds in the heavyweight class. I was up from my last contest weight of 198 at the same body fat. I was very pleased with the results and I hope you enjoy the new professional photos by my good friend Jeff Sygo of SYMI Photography, also in the gallery under contest photos are my all new guest posing photos from the Detroit Grand Prix. I am super excited to have these posted as I weighed in at 220 pounds and was so pleased with my look, again Jeff Sygo captured the moment for me and I cant thank him enough. Jeff is truly an amazing photographer but more importantly he is a great man and friend. I want to thank big Jermichael Pratt good friend and contest promoter for allowing me to guest pose. Guest posing is truly special and an honor. Thanks Big J!!! Both Jermichael Pratt and Jeff Sygo are on Facebook request them as friends today you will be glad you did!


This month we head to Fowlerville, Michigan to interview a grand master and all natural competitor Kim Wathen. Kim has been training with weights and enjoying the health and fitness lifestyle for over thirty one years. Kim is 100% all natural and is in deep prep for the 2011 N.P.C Ms. Natural Michigan bodybuilding championships. Lets get to know this amazing athlete, trainer, mother and Christian woman. Kimberly Renee Wathen was born in Battle Creek Michigan where she also graduated High School from Battle Creek Central. Kim then went on to Michigan State University to follow her love and passion of Dietetics. It is at Michigan State where she completed her under graduate studies which feed a hunger deep inside to further her education. In 1993 Kim received her masters of science degree in exercise science from Oakland University in Rochester Hills. Working out and dieting is one thing but having a deep knowledge of what to eat and why to eat it makes Kim on dangerous competitor to deal with in the N.P.C. What makes Kim so interesting is she uses her knowledge to not only to personal train at the Howell Fitness Center as a personal trainer changing bodies, minds and lives but Kim works with Professional Motor Cross races as well as many armature racers. Yes, that’s right motor cross. I had the opportunity to attend on of these pro events in Red Bud Indiana and let me tell you these pro’s are in shape mentally and physically. Kim teaches the riders that diet and nutrition is important but the power of the mind can win or lose a race. For example, Kim worked with a rider who didn’t even realize he was uncomfortable leading a race. This particular rider was expecting riders to pass him instead of focusing on finishing the race. Kim helped aid the rider in, “not expecting people to pass him,” as Kim stated. Visualization is important to achieve the desired result. Visualization helps the rider, “ride more losely,“ as Kim States. Kim also works on the physical side of the sport with her riders. For example, arm pump is a huge issue in motor cross. This deep pump can even be mental costing a rider a victory. For the physical aspect of arm pump Kim has riders perform wall squats with a medicine ball between there legs imagining there squeezing the gas tank. This exercise can aid in relieving the much dreaded arm pump. Kim is a member of the racer rx online staff and has written many columns from dehydration, sugar intake before and after races, motivation and finding your ‘Y”, meaning y do you do what you do. Finding your “Y” is important so one can find there motivation.


Kim Wathen stand 4’11 ½ and 96 pounds in contest shape. Kim is set to qualify for the Masters Nationals in Pittsburg this current contest season. At 48 years young Kim plans to enter the Grand Masters Division and cause some major waves against enhanced competitors. Kim would also like to compete in the N.P.C Team Universe against a more lever playing field. First order of business is the 2011 Ms. Natural Michigan where Kim will enter the open and masters divisions. In 2003 Kim was in a horrible car accident where a car pulled out in front of her. Kim was traveling at a speed of sixty-five miles and hour when she was hit. Her Ford Explorer rolled several times and caught fire. In the end Kim had three plates and twelve screws placed in her right ankle to fix a total fracture of both leg bones. Despite her injury Kim’s favorite exercise is free weight squats and at a weigh to 96 pounds has squatted 170 pounds raw!! As bodybuilder we make a lot of excuses to avoid the dreaded squat rack, not Kim Wathen. Kim has also been seen doing bench triceps dips with eight twenty fives on her lap. Yes, that’s eight plates at 96 pounds. Saying Kim is strong is an understatement. Mentally and Physically Kim Wathen is beyond strong. Kim trains instinctively with a five day training split as follows: legs, chest, back, arms with abs pretty much every workout. Sundays you will find Kim in Church where her Christianity plays a role in her contest prep and mental health. Kim Wathen is the mother of two wonderful Kids Kelsi who is set to attend Michigan State University and Tristin Wathen who attends High School in Fowlerville Michigan.
