Q: Do you realize that it’s been 20 years since you did The Mask?

Yes, I do.

Q: What would you say to that 21 year old girl, if could go back in time?

I don’t know. I’d tell her to do what she is doing,

Q: Was there any specific moment during those 20 years in your career when you realized “Oh, yes, I’m pretty good at this, I’m much more than a pretty face”?

See, I don’t look at myself like that. Everyday I’m engaged in it, it’s my life. Obviously, over the years, I’ve learned to do movies. Every time I do a film I learn, just like anybody does in their job.

You take the experience, the lessons, and you apply them to the next opportunity. I’m learning everyday, in all levels of life. Now that I’ve been making films for twenty years, I’m like,”I think I know how to do this a little bit.”

Q: Now, is it just coincidences that you are coming out with three movies this year or did you do them all at the same time?

I did. I did ‘The Other Woman’ first, around this time of year we started. I did ‘Sex Tape’ in WWW.BIEN.COM

Thankfully, because I was in Boston, so I could come to New York on the weekends for ‘Annie’, and then go back to Boston for the week. So I was kind-of double timing those two films. I didn’t anticipate that. It wasn’t planned that way.

It kind-of fell into my life and I had to decide whether or not I was going to take them on at the same time or let it pass me by. So I decided to go ahead and just work.

Q: Do you get to sing too in ‘Annie’?

Yes, I do sing.

Q: Isn’t it funny that you play the character Annie in the movie and then you have the musical movie ‘Annie’ where you play the evil Miss Hannigan?

Yes. And Miss Hannigan, in this ‘Annie’ version, she’s a foster parent. She doesn’t run an orfanage.

Her plight is not to marry a man. The Hannigan character, in the first ‘Annie’, back in that time it was like a woman had to marry a man or else

Why don’t we have this information?

Q: Do you have to famous to be happy?

Of course, that is not true. Fame does not make you happy.

Q: In the book you talk about nutrition, exercise but also the important connection between the mind and the body. In what way?

It’s not separate in anyway, that means it’s a thousand percent connected. Your mind, basically, is in control of everything. Your body will do whatever your mind tells it to do. To be aware of how your mind works and understand what your body is capable of and also understand how your body works on a cellular, then your mind and body and work together.

Q: After 20 years of success, someone would think that you would come out with a book about your life. Now, there is book ‘The Body Work’, but it is more than your own life, it’s your beauty secrets on how to keep a healthy lifestyle. How was it that you came up with that idea?

Q: The thing I liked the most is that your book is not another celebrity diet and exercise book because it doesn’t even set a goal of How to look great in 7 or 30 days or a year. What is the single change that you would recommend to start?

I think that the best thing to do is evaluate, just be present, to be conscious. Start paying attention to what you do. Be honest with yourself with what you do. If you do one thing to an extreme, like if you have 5 Coca-Cola, just cut it down to one.

Q: In the book you say that you love to cook: Could you say a quick recipe of your favorite dish?

Well there are so many favorite dishes that I like the most. My whole thing is being prepared to eat; know that you’re going to be hungry. Know that you need fuel. It’s essential for your body to have fuel and food is fuel. I try to keep on hand the fuels that are good for me; essential fatty WWW.BIEN.COM

acids, good fats like olive oil, avocado, nuts, seeds, grains for carbohydrates. I’ll do whole grain like brown rice. I try to keep a clean, lean protein or a piece of fish and eggs.

Q: Now, I can’t believe that there was a time where you used to eat a bean burrito with extra chees and extra sauce, no onions. Really?

I grew up on it, of course. Yeah, I did that for a long, long time, up and through my twenties.

It’s not that I don’t occasionally want a bean and cheese burrito, I will eat it. I don’t deny myself, it just not the thing I eat every single day where it used to be something I ate every single day.

Q: Could you tell the best beauty advice that is easy to do?

The best beauty advice? Move your body and drink water.

fairly constant at about 14 percent of the population however over the past 25 years, this has surged to about one in three people,” he says, this coinciding with the fact that the early eighties saw the introduction of high fructose corn syrup and the expansion of the soda industry which exacerbated the problem. In fact, the reality today is that most people consume far too many carbs, points out Dr. Simpson. “Vegetables and fruits contain all the carbs most humans need and our bodies work best when we burn our fat,” he says however unfortunately, in the modern world people consume so many carbs that the body can rarely burn its fat stores.

Take a look around; our children are playing less, eating more refined foods and adults are doing almost the same except most of us are either sitting in front of our laptops or working. This lack of activity combined with eating habits gone wrong has resulted in the epidemic many experts refer to as globesity. According to Dr. Graham Simpson, Medical Director at Eternity Medicine Institute, hunter-gatherers of the yesteryears actually appeared to suffer no obesity, diabetes, heart disease, or Metabolic Syndrome until they adapted grains and dairy foods just 7,000 years ago. “And today our environment in the UAE, as is the case elsewhere, has changed dramatically especially with the introduction of the modern Western diet with its high sugar, trans- fats and omega 6-fats,” he says. He asserts that what is making us obese is in fact, carbohydrates and insulin. “Up until the eighties, obesity rates remained

Western diet is made up of foods with a high-glycemic index, meaning blood sugar levels are constantly elevated and as a result insulin levels are constantly spiking. Excessive insulin and blood sugar levels are associated with high blood pressure, high LDL, type 2 diabetes, heart disease, cancers and others. The Paleo Diet avoids these types of foods entirely, and studies

have shown that our ancestors of the Paleolithic Era were for the most part free from these diseases.

THE SHIFTS IN EATING

Dr. Simpson points out that what we eat today is very different from what our great grandfathers used to eat. “This is due to modern agricultural business and genetic modification of foods,” he says and in fact the number of individuals who are gluten intolerant is skyrocketing. Author William Davis, MD explained in his recent book “Wheat Belly” that wheat can be toxic to the human body for many people. “People who eat wheat will consume on average an extra 300 to 400 calories per day,” he says and besides this, wheat also produces exotoxins as a result of lectins and other proteins contained in grains. “A startlingly fact is that exotoxins stimulate the same brain receptors as cocaine and heroine, which is why wheat can have an addictive character,” he says.

DIABETES

• Meat - GRASS-FED, not grainfed. Grain causes the same problem in animals as they do in humans.

• Fowl - Chicken, duck, hen, turkey…things with wings that (try to) fly.

• Fish - Wild fish, as mercury and other toxins can be an issue in farmed fish • Eggs - Look for Omega-3 enriched eggs.

• Vegetables - As long as they’re not deep-fried, eat as many as you want.

• Oils - Olive oil, coconut oil, avocado oil – think natural.

• Fruits - Have natural sugar, and can be higher in calories, so limit if you’re trying to lose weight.

• Nuts - High in calories, so they’re good for a snack, but don’t eat bags and bags of them.

• Tubers - Sweet potatoes and yams. Higher in calories and carbs, so these are good for right after a workout to replenish your glycogen levels.

“Actually numerous studies have shown that highprotein and low-glycemic load diets are more effective for weight loss, controlling diabetes and disease control,” says Dr. Simpson. And not surprisingly, the popularity of the diet is being aided in large part by a slate of recent studies showing just how damaging to our health high-glycemic food really is. “The lowglycemic load Paleo Diet delivers quick weight loss results and also helps avoid silent inflammation which ultimately leads to many kids of disease including cancer,” he says. With so many things happening in your life, it can get quite difficult to keep your fitness regimen in check. There are so many factors that can deter you from following through your fitness plans.

We sought the help of Nathan Brown, Group GX Manager at Fitness First Middle East, to give us expert tips on how to keep fit with regular exercise.

VARY YOUR TRAINING

Your training needs variation. If it’s cardio training, do a combination of body weight exercises and equipment-assisted exercises. For example, perform body weight squats (50 reps), a treadmill run (Level 10+ 400 meters), body weight burpees (50 Reps), rowing machine (Level 10+ 400 meters) and complete the cycle four times. This will definitely burn the unwanted calories away.

For those who are fasting, complete only 25 reps, and run 200 meters for both the treadmill and the rowing machine, adjusting variation in speeds.

RESISTANCE TRAINING IS IMPERATIVE

Along with cardio training (TIP 2) – remain vigilant in obtaining resistance training. This could be in the water, in the gym lifting weights or at home walking up a flight of stairs. Either way you must look at resistance to maintain muscle tone and conditioning. The process I would recommend is attend a TUFF, Bodypump or XFIT class.

An alternative option is combine these weighted exercises and complete five sets in total. Station 1: Bar squats combined with Body weight squats (20 reps each) Station 2: Push-ups combined with Bar Chest press (20 reps each), Station 3: Sumo High Row combined with a Dead LIFT (20 reps each) Station 4: Thruster combined with a Overhead lunge ( 20 reps each) Station 5: Sit ups, shoulder touching floor and hands reaching to touch feet (20 reps), Plank holds for (20 seconds) – complete five sets.

IT’S ALL IN THE TIMING

How? EPOC stands for ‘exercise post oxygen consumption’. In other words, when you have exercised you will keep burning calories after because your metabolism is still in an active state.

Remember the key is timing your workout right so you stay in the caloric working zone even after you have completed your workout and enjoying Iftar at the same time.

DON’T LOSE YOUR MOTIVATION, KEEP MOVING!

We tend to lose the energy or just can’t be bothered. If you use the escalators or travelators, keep walking. Don’t just stand there waiting for it to take you to the top as it breeds laziness. Avoid using the lift, use the stairs instead and walk as long and as far as you can when inside a shopping mall.

STAY HYDRATED

Keeping hydrated is important for everyone whether you are on diet or not. Plain water is sometimes not enough so you may need an electrolyte drink to replenish the sweat factor lost especially if you have been exercising. In addition, hydrate before, during and after exercise – it doesn’t necessarily need to be fluids,you can also source the necessary hydration from fruits as an alternative.

Pan roasted salmon with fennel in orange and caper vinaigrette served with avocado quinoa salad

Makes 4 portions

Ingredients :

Carrot and coriander soup Serves 4

Cooking method prawn stock:

Ingredients:

600g carrots Garlic butter 200g butter unsalted 30g leeks 40g garlic 120g onion 40g parsley 30g coriander 45ml olive oil French baguette 15g salt 3g black pepper 750ml vegetable stock

1. Peel carrots, leeks and onions and chop finely (you can grate it too) 2. Heat up the pressure cooker with a little bit of olive oil and sauté off the onions, garlic and leeks and then add carrots. Top it up with vegetable stock, put the cover on and cook for about 15minutes.

3. Once ready, blitz the mixture until smooth and add fresh coriander as final touch. Taste for seasoning.

4. Serve with toasted garlic butter baguette.

Cooking method garlic butter:

1. Mix soften butter with grated garlic and parsley.

2. Use it right away or keep in a freezer for up to 2 weeks.

800g salmon – 4 fillets skin off salt pepper lemon juice – to cover the salmon Fennel salad 200g fennel - shaved 30g spring onions –30g thinly sliced Orange and caper vinaigrette 100ml orange juice orange zest of 1 orange 100ml olive oil 1tsp Dijon mustard 20g capers – chopped salt Quinoa salad 200g quinoa - uncooked 400ml water 80g onion - chopped 200g ripe avocado - chopped 100g cucumber - chopped 10g fresh basil - chopped 10g garlic - chopped 15g Roka leaves - chopped 40ml olive oil 30ml lemon juice

4. In the meantime prepare your vegetable for the quinoa. Wash and finely chopped them and set aside.

5. Prepare your fennel salad – shave the fennel thinly on a mandolin and mix in with a spring onions. Keep on ice to keep fresh.

6. Let the quinoa cool down and then mix together with the chopped vegetables including the garlic, basil and roka leaves.

7. Mix lemon juice with olive oil and dress the quinoa salad and let it rest in the fridge.

8. Start with the salmon – place the salmon on dry non stick pan over medium heat and pan roast on each side for about 4minutes – until golden.

9. To prepare the orange vinaigrette. Heat up a saucepan with your orange juice and reduce it over medium heat by half.

10. Let it cool down and then whisk in the mustard and olive oil. Once emulsified, add the capers and orange zest. Taste for seasoning.

11. When ready to be plated place the quinoa at the bottom, top with fillet of salmon and fennel salad dressed with orange vinaigrette.

Lo, today’s musthave hair colour trend is Ombre, tells Lydia Moustakime, Senior Stylist at Sisters Beauty Lounge in Dubai Mall. “Basically Ombre is the look that starts darker at the crown and gets progressively lighter going downwards towards the ends of the hair,” she tells. Ombre can be done using several techniques but the most popular at the moment is the Bronde technique.

“This is the hottest summer hair trend and starts dark at the crown and gets lighter in colour going down but unlike Ombre, has a few strands weaved in-between to break the contrast between light and dark,” she explains, adding that the Ombre coloring technique is actually very versatile and can suit any complexion and can be done in a huge variety of colours and colour combinations. It is also extremely low maintenance and grows out beautifully well. “We have clients requesting dark blond on the crown and lighter ash blonde going downwards; that is hugely popular right now,” she says, however the warmer colours are not too popular. And because colours can be played with and looks can be completely customized, each client can walk away with a completely unique look, from red carpet glamorous to beachy sun kissed and relaxed. “Basically if a client wants to look tan and golden, we can work with warmer shades but if she prefers to cool her look down and look paler, we will use coolers shades which are what is huge here at the moment,” she says. Also once your hair is lightened, she advises strongly that your eyebrows should also match and be lifted accordingly with the shade of your hair otherwise it will look completely unnatural.

Born in Chicago, originally Syrian, and grew up in Dubai, The London College of Fashion graduate, Tala Elle Saman edits the first blog to come out of the UAE in 2009. Her beautiful face has also been a constant fixture in Middle East’s society pages and fashion magazines. Apart from these, she has worked on the side as contributing editor to several publications, a stylist and fashion consultant for big names such as Tom Ford, Halston, Net-a-porter.com and ASOS. She also had done my Repetto loves Art project, and as an official blogger for Galaxy chocolate. In her social media accounts, she described herself as: style blogger, coffee addict, Barre lover.
