As parents ourselves, we know it is a very big decision entrusting someone to look after your little ones. With over 30 years’ experience developing our childcare programmes, we will reassure you from the outset that we’ll deliver the best possible experience. Parents can really relax knowing their children are in the safest possible hands.
With our highly experienced and engaging nannies, your child will have days full of adventure and discovery in the pb crèche for children aged four months to three years. We ensure that every child settles quickly into the pb crèche by creating a home from home, following normal routine and engaging your child in plenty of activities with our huge variety of toys, books and games. Reading favourite stories and singing familiar songs, we provide a good balance between recreation and quiet times. All our experienced nannies are English-speaking and trained to NNEB/CACHE standards, and we adhere to the highest possible policies and procedures. You can then truly enjoy your time away, confident that your child is in very capable hands. 36
Yeti Primer is the perfect way to introduce your preschool toddlers aged three to four to skiing for the first time. Most children’s ski instruction begins when they reach school age. Yeti Primer is a unique programme which gives toddlers a head start by getting them used to the thrill of taking those first few steps on skis, in a gentle environment that’s packed full of fun. They spend two hours skiing in the morning, with the rest of the day spent in our own pb crèche playing games and, if desired, time for rest. Yeti Primer is the perfect preparation for our Yeti programme and is run by our qualified English-speaking instructors who are specialists in teaching children to ski. Additional support for your child is provided by our Powder Byrne staff who are on hand all the time to provide more pastoral care from the basics (putting gloves back on) to the more complex (refixing boots to skis), but always ready to provide a cuddle or just a break for drinks and biscuits if it all gets a bit much. We understand how important it is that your child’s first experience on skis is a wonderful one. Feedback from our clients confirms that the balance between time on the slopes and time spent in our crèche works well, but for more intrepid little skiers there is the flexibility to extend ski tuition into the afternoon with some private instruction.

e are grateful to the many families who have shown tremendous loyalty to Powder Byrne over the years as their children have grown up and progressed through our programmes. We listened to their evolving needs
and understood the growing demand for a new type of programme designed to give teenage siblings something to really keep them interested as they grow out of our traditional programmes. Parents told us they still wanted structured experiences, but with much more flexibility for teens who might want to dip in and out of activities depending on their interests. Teens wanted more action, more adventure, more opportunity to progress their skills, and they wanted the chance to meet up with others of their own age to share the adventure. We left it to our creative programme team and they did the rest. The result is a fantastic choice of ‘PB Academies’ available throughout school holidays across our summer and winter programmes, and the feedback we get from the kids speaks for itself.

On Ice
N
atural snow that falls from the sky is soft and fluffy, but it doesn’t stay that way. When conditions are less than perfect, runs can develop a hard, icy surface.
When you’re making turns on hard snow, the main part of your ski that is in contact with the snow is the edge. If you want your skis to grip on hard snow, you need to have them tipped over, so that their edges bite into the ice, and you need to be exerting downward pressure onto those edges. When you’re going around a turn, it is safest to have most of your pressure on your outside, downhill ski, so that if that ski skids out from under you, you have your inside ski to save you. On the other hand, if you habitually have most of your weight over your inside ski, and it happens to skid out, then you’re doomed to falling on to your inside hip (known as ‘hipping out’). You need to tip your skis over, while keeping pressure on your outside ski. The only way to do that is by curving your body into the shape formed by the letter ‘C’. This is often called ‘angulation’ because it requires creating angles at your knees and hips. As you start to lean your shoulders outwards, keep your weight over your outside ski. You’ll find that this movement becomes easier if you turn your shoulders slightly outwards, to face the outside of the turn. Doing this means that if you just bend slightly forward at the hips, and round out your back so that your shoulders move forward, you’ll automatically move more weight over the outside ski. In fact, you’ll find it easiest if the whole inside half of your body – your inside foot, inside hip, inside shoulder and inside hand – are all ahead of their counterparts. Once you can edge and pressure your outside ski, you’re ready to learn to turn by ‘carving’. Instead of turning your feet to turn your skis, you can just tip your skis up on to their edges, and let the sidecut (the curved shape of the edge) take you around a turn in a long arc. This is a very stable, predictable way to handle ice, because it allows your ski’s edge to slice forward through the ice, rather than scraping sideways across it. Where did you train to be a chef? I had no professional training as such; I shadowed different chefs while working in a multitude of different restaurants. I learnt the importance of working within a team, and I think I only considered myself to be a chef when I truly understood the importance of motivating and leading a team. How would you describe the style of your cooking? The style of my cooking is traditional, but my dishes are revisions of traditional recipes with innovative twists. My style is based around using the very freshest raw ingredients in order to obtain the right characteristics and rich flavours within my dishes, especially local produce. What has had the greatest influence over your cooking and your approach to food? Having grown up on a farm, I learnt the value of using the finest fresh products that my father produced. He produced dairy and meats, which are two of my favourite ingredients today.

I also gained experience working for five winters with Spigaroli Massimo at his Michelin-starred restaurant. He gained the nickname ‘The Farming Chef’ thanks to his deep roots in his family’s farms. Together we produced a signature ham fillet dish, which is famous worldwide. Spigaroli Massimo also cooked for the Royal Family.

Do you have a signature dish or one that you most enjoy cooking? Although not one specific dish, I love to cook and prepare buffets with dishes that are simple and highlight the beautiful ingredients. I believe it is very difficult to actually find the ideal ingredients that are fresh and the best quality – my years of experience have helped me to master this art of sourcing and selecting the highest-quality ingredients. What is your favourite dish to cook at home for your family? Spaghetti Pomodoro because it is simple and tasty.
