Rory Byrne founded Powder Byrne in 1985 because he wanted to provide something better for clients looking for holiday solutions with dedicated personal service. What started in Switzerland with a passion for powder skiing has developed into a global business focused on providing the highest quality flexibility and service for a wide range of clients; from individuals to families, to groups and corporates.

e’ve come a long way since those early days in Grindelwald, but we’ve never lost sight of our founding ethos and our genuine commitment to the best personal service. Whether skiing with us in the Alps, relaxing in one of our summer resorts, or setting out on a new adventure in Japan, you’ll feel our ‘Everything’s Possible’ attitude is at the heart or every interaction. Nothing is too much trouble when it comes to delivering our unique service and creating unique experiences for our clients. As we’ve developed and honed our holiday solutions and services, we’ve focused on identifying and solving the real challenges our clients face. We had an excellent week, everything ran incredibly smoothly. All of the staff we met were friendly, sociable, confident and competent. This was very reassuring for us when leaving our boys with the instructors and guides for their daylong sessions. Our boys responded incredibly well to the approach of the instructors and guides and both wanted to stay in ski school all day, something that hasn’t happened before on previous occasions. They had a wonderful time on the slopes and their skiing certainly improved – we really enjoyed the evening updates on their progress. For us it was very relaxing; we really enjoyed the group ski guiding and lunches. The guides knew the resort incredibly well and looked after us with patience and calm in some tricky white-out conditions. It is difficult to fully appreciate without experiencing the service the value added by the Powder Byrne set-up.”

Elevate Your Skiing Experience with Powder Byrne's Exclusive 'Ski Butler' Service After a long journey to your chosen resort, you’ll benefit from the pre-planning from our Ski Butler service, allowing you to deal swiftly and efficiently with the equipment rental process. Our Ski Butler service has been tailored towards making your holiday as hassle-free as possible, with elements designed to streamline the first 24 hours and get your holiday off to a great start. Before you travel, we’ll take note of all your rental requirements, including all the data our ski rental partners will need to prepare your equipment for each member of your party. Upon your arrival in resort, our dedicated resort team will accompany you to the rental shop, greet you with a glass of bubbly and assist you with collecting your equipment, ensuring that you are satisfied with sizing and comfort. We’ll then accompany you to your boot room and help store your equipment so everything is ready for the following day. We only work with recommended rental partners and we source the very best equipment available, with any special requests handled efficiently for your peace of mind. New partnerships also offer the option to rent ski clothing, and we can arrange for this to be delivered to your hotel for your arrival. Finally, we’ll present you with your ski passes which will have been pre-purchased, collected and checked. You can rest assured that all ski passes purchased through us, which subsequently get lost or stolen, will be promptly replaced.

And our commitment to excellent service doesn't end there. Each morning our ski team will welcome you at your boot room, support you and any children in your party with getting boots on and checking everyone has everything they’ll need for a great day in the mountains. We’ll coordinate shuttles to the slopes and ensure you meet up with your ski guide, or your private instructor, if lessons have been booked. Our aim is to make the whole process run as smoothly as it can, so we minimise hassle and delays. A Ski holidays for non-skiers? Sure! There is an abundance of things to do in a ski resort if you don’t ski. Activities like hiking, snowshoeing, curling, and sleigh rides are very popular for non-skiers. We go above and beyond to ensure that non-skiers have just as much fun as skiers by organising a wide variety of inclusive activities to suit all levels of fitness. Arguably, the best way to fully appreciate stunning mountain scenery is on foot. A winding walk in the mountains is the perfect option for those who want to explore their surroundings. For non-skiers that are after a rush of adrenaline, tobogganing is another great activity. Tobogganing is an activity offered across many of our resorts and is also a fantastic alternative on family day if the kids would like to try something different. Your Resort Manager will be available to help organise a day of thrills on the slopes, providing shuttle services where needed. A Powder Byrne favourite is the Toboggan ride in Zermatt, one of the highest in the Alps, and with stunning views of the iconic Matterhorn, it provides the ultimate backdrop as you whizz down the slopes. We can organise a variety of activities for non-skiers to enjoy independently. In selected resorts, we also offer our Powder Byrne Mountain Host Programme tailored for non-skiers. This programme facilitates social interactions among guests with shared interests, ensuring they maximize their holiday experience and is available during selected weeks at handpicked resorts.

Our dedicated in-resort mountain host leads a meticulously planned five-full-day itinerary. These itineraries vary between resorts and include a range of captivating activities tailored specifically for non-skiers. Under the guidance of our knowledgeable host, you’ll embark on exhilarating guided hikes, invigorating snowshoeing excursions, and engaging curling experiences. Immerse yourself in rejuvenating spa sessions and delightful hosted lunches, too. As part of the programme or independently, we can incorporate any activity that interests you, for example, winter Segway rides, Ice skating and Snowmobiling. Particular highlights include Arosa, Flims and Pontresina, which are great for non-skiers, with ample offerings that cater to those who prefer not to ski, ensuring an enriching and fulfilling stay. In Arosa, choose from indoor or outdoor ice skating, horsedrawn sleigh rides, sledging, and fun at the Rope Park. The seven courses present a fabulous experience for all climbing fans with rope courses, swings, zip lines, and climbing walls, where you will combine courage and skill, surrounded by pure nature. Wonderful non-skiing activities in Flims include hiking to three wonderful lakes, Lake Caumasee, Conn, Lake Crestassee, and a visit to the Laax Senda dil Dragun, the longest treetop path in the world. We are able to bring people together through many different activities, for example, snowshoeing. Widely believed to be one of the oldest winter pastimes, Snowshoeing has become an extremely popular recreational activity, involving shoes to help displace weight more evenly on the snow and provide better movement, allowing you to traverse powdery trails with ease and therefore opening up more of the mountain than is available to skiers. With no experience necessary, snowshoeing with Powder Byrne is an excellent way for any mountaineer to explore the mountain. Moreover, for less adventurous non-skiers, we can organise trips to nearby towns and villages to visit museums, cultural attractions, go shopping,

and check out local events and festivals. You’ll often find walking tours, food tours, and museum passes in towns/cities to help you get more out of your visit. For more active non-skiers, activities such as hiking, snowshoeing and curling are very popular. Our expert guides will lead you on unforgettable journeys, unveiling hidden gems and sharing their knowledge of the surrounding environment. For those seeking a unique sporting challenge, our curling experiences provide an immersive introduction to a fascinating sport that blends athleticism, strategy, and camaraderie. And, whether you’re a seasoned snowshoer or a curious novice, the snowshoeing excursions offer an opportunity to connect with nature profoundly. Our Powder Byrne Mountain Hosts are very happy to arrange for non-skiers to head up the mountain following their activity to meet their family for lunch. With the arrangement of a lift pass, this is normally achievable, as the majority of mountain restaurants are accessible on foot from the lift stations. We make it our mission to ensure that everyone gets the most out of their holiday, whatever their interests and activity levels. Our Client Concierge team will be in close contact with you before you travel to understand how we can best support anyone in your party who is not skiing, whereby you can discuss with them all the options available in your resort and make any pre-travel arrangements. We spoke with one of our experienced Yeti team who has been returning season after season about her experience and what makes our approach so unique:

The routine and set-up of our Powder Byrne Children Ski Programme, including the Yeti Club, is consistent across resorts and seasons due to our rigorous training process. Children take on challenges within a secure and nurturing environment with a qualified ski instructor and an experienced Powder Byrne assistant skiing with each group. Having two adults with each group ensures not only that the quality of instruction is very high, but that anyone needing a little more encouragement or a break for a biscuit can do so too, without disrupting the whole group. A familiar and positive routine creates a sense of comfort in which children instantly feel at home, ready to focus on learning new skills, making new friends, and exploring the mountain.

I have worked in Yeti Clubs for a number of years, starting in Grindelwald and moving over to Flims/ Laax. I adore working in the Yeti Club. Children grow and learn an extraordinary amount over 4 years. Some children arrive in Yetis on day one, unable to snow plough. By the end of the week, they might be skiing independently, hopping on and off of chair lifts, and turning down runs with ease and control. Children come to Yeti perhaps with no experience skiing, still attending nursery. Over the four years in the club, they develop into confident skiers who enjoy experimenting with their style, using a variety of skills to make the most of the piste. Being a part of this journey is an exciting privilege.

Within the Yeti club, we need to teach children a wide variety of skills quickly. To do this, we have to create a safe and comforting environment. We benefit from warm and enthusiastic staff who work hard throughout the day to keep spirits high, encourage new friendships, and ensure the gummy bears are in plentiful supply.

ith so many questions to consider to ensure your holiday delivers for each member of your family, we’ll help you understand all the options and how our programmes work. From families starting out for the first time, wanting to learn together, to parents who want to pass on their skiing passions to their children, we relish the challenge of finding the perfect solution for all of our clients.

Advice for parents looking to book a family ski holiday for the first time: Consider how much time you want together as a family, as well as for your own ski time and make sure you have the right support in place. There’s nothing worse than when everyone has to make a big compromise. De-stress the experience by selecting a suitable resort and trust Powder Byrne with all the logistics. You don’t necessarily need to be in a top named resort. A more gentle introduction for the children with quieter slopes can be a great confidence builder before you progress to buzzier resorts. Be realistic about your objectives for your first ski holiday - get it right, and the kids will be begging you to return again next year to build on their first experiences.

Consider which resort is right for your family: Almost all the resorts in our portfolio are suitable for first-time skiers as our services and local team make all the difference, but we particularly recommend the Swiss resorts of Flims, Andermatt and Arosa for first-timers thanks to excellent nursery slopes and plenty of accessible blue runs once you get the hang of things. We offer our exclusive programme, Learn in Style, for adult beginners in Arosa, which delivers a unique instruction programme for small groups of like-minded adults which is very popular. There is no ‘perfect age’ for kids to start skiing: Children all develop at different speeds, so it is more about finding the perfect age for your child. Some children have natural coordination and are more capable from a young age, others benefit from a gentler start and will develop when the environment is right. Parents know their children best and what they are capable of and there is no ‘perfect age’ in our view. The first experience is crucial though, and for those who are ready at 3 years to take their first tentative steps on the slopes, our carefully designed Yeti Primer programme gives them the ideal start. Over three decades it has been tried, tested and developed by our most demanding clients (the toddlers, of course!).

Make it fun and they’ll build a l felong love of skiing: The first objective of our Yeti programme for 4-9 year olds is for everyone to have fun in a great environment with lots of friends, to feel safe and supported and to learn at their own pace. We don’t identify their time on the slopes as ‘ski school’, as a Yeti they’ll enjoy fun and games throughout the ski day, skiing in a small group of friends, as well as organised activities and supervised supper after skiing back at their hotel. We create a really fun and relaxed environment with lots of encouragement and support so they’re not really aware they are in ski school at all!

How does the Yeti instruction work? The quality of the instruction Yetis receive is guaranteed thanks to small group sizes and the support from our Yeti assistant, which allows the instructor to remain focused on teaching. Our Yeti assistants are there to encourage their group in a big brotherly/sisterly way, break out the biscuits when energy needs boosting, and manage the inevitable comfort breaks that can otherwise disrupt the progress of the lesson.As Yetis progress, we ramp it up with more structured technical sessions and strong skiers will be pushed to discover new skills and disciplines as we seek to make them rounded skiers in all conditions and terrain.

Peace of mind for those travelling with babies and toddlers: We’ve been supporting families travelling with babies and toddlers for decades and our dedicated pb creche service is designed to give parents peace of mind so they can continue to enjoy the sport they love. We adhere to the usual UK standards for childcare and our crèche managers are fully qualified NNEB or equivalent nursery nurses. We’re happy to welcome babies from 6 months and toddlers up to the age of 4 will be kept busy with indoor and outdoor activities between 08:30 and 4pm 6 days a week. Whilst providing a great crèche environment packed with fun and stimulating toys and games is essential, we identify our pre-travel service as perhaps the most critical element in ensuring a seamless service. Our Client Concierge team will provide every detail in advance and arrange for a call with our crèche manager before you travel so you can run through every detail. We offer a pre-travel purchasing service for all your baby essentials and we’ll have these waiting in your room upon your arrival - one less thing to worry about when packing! We provide all the necessary baby travel seats for transfers, buggies in our crèches, we’ll arrange microwaves/bottle warmers, can liaise with hotels to puree food - in short, everything has been anticipated and our team will be ready to take away all the hassles. Our team are also available for evening babysitting so you can really make the most of your holiday. We also offer a Private Nanny Service in resorts where our pb creche is not operating.

Don’t forget it’s your holiday too and we’ll make sure you make the most of it: Skiing with Powder Byrne is all about the camaraderie on and off the slopes and making the most of the mountain resort. Our complimentary ski guiding programme for adults creates the perfect environment for parents to ski in small groups, hosted by Powder Byrne ski guides whose job it is to ensure everyone skis at a pace that suits them. Our guides plan the days skiing, organise a beautiful lunch stop, make sure you find the best snow and the quietest slopes, using their local knowledge to enhance your experience. They’ll even carry your skis for you, coordinate shuttles and logistics; their aim is to ensure you spend the maximum time enjoying your skiing. One client once described it as ‘leave your brain at the door’ skiing, which we believe is what a holiday should be all about.

Don’t worry if you’re a non-skier, there are plenty of mountain activities for you to enjoy: We make non-skiers just as welcome! Our Client Concierge team will run through all the options for non-skiers before you travel and our Mountain Host team in your chosen resort will coordinate all your arrangements, from guided winter walks, sleigh rides, to meeting up with skiers for lunch. Some of our properties have amazing Spa facilities and we can coordinate the perfect pampering day. Our driver service is on hand throughout the day so non-skiers can explore neighboring villages or resorts, or we can arrange trips to local towns for shopping or sight-seeing.

For years, Powder Byrne has been providing outstanding ski holiday experiences for children with varying skill levels and ages. However, parents have often wondered what happens to teenagers and young adults once they have surpassed the age limit of 14 for the Powder Byrne SnoZone program.

Are you wondering if your teenagers should enrol in a ski academy? While it could be a great option for some, it may not be of interest to all teenagers who prefer not to pursue high-performance skiing. Alternatively, they could join their parents in Powder Byrne's complimentary ski guiding. However, not all teenagers enjoy chairlift conversations or socialising with adults while skiing. In reality, there is a small gap where some teenagers feel caught in limbo; They are too old for SnoZone but not interested in skiing with their parents. You may have heard complaints like "Dad skis too slow" and "Mum stops for too many coffees." In 2023, Powder Byrne introduced a solution to this conundrum by launching its new Teenage Ski Guiding program. This program is designed for teenagers and young adults who no longer require or desire formal instruction but still want to enjoy their holiday skiing with like-minded peers of similar age and interests. During a trial run at the February half-term in Andermatt and Arosa, this program allowed teens aged 16-19 to ski independently with like-minded individuals while providing parents with the assurance that their children were still guided on the mountain by qualified local professionals. Upon arrival, the teens are greeted by a local guide and a Powder Byrne coordinator. The guide takes the time to get to know each individual's preferences for skiing, such as their favourite runs and any specific areas they want to explore. Additionally, the guide inquires about their lunchtime preferences. This information is used to tailor the skiing experience to the group's interests, ensuring that everyone's needs are met.

The local guide takes the group to the resort's best skiing spots, optimising skiing conditions according to the time of day and avoiding queues whenever possible. The group is treated to delicious and diverse lunch options that cater to their tastes and preferences. No more basic tomato pasta with a sprinkle of cheese for these teenagers who have outgrown the staple diet of nuggets with fries. Yet, they might not be ready for Lavaca tomahawk steak paired with a fine Chateauneuf du Pape, a favourite among our adult clientele. Instead, they might opt for a Big A Burger at Sit Hutte in Arosa, a Rosti at Piz Calmot in Andermatt, or a delectable Penne alla Bioch at the Utia de Bioch restaurant in San Cassiano. Wherever they choose to ski and dine, these teenagers have the freedom to explore the mountains at their own pace, all while enjoying the peace of mind that comes from being guided by a knowledgeable local professional. The guide ensures there's always a hot chocolate pit stop, and they guarantee everyone makes it back in time for the end-of-day spa session at the hotel. Powder Byrne goes the extra mile by organising social evenings during the week, allowing the teens to bond over meals, engage in activities like ice skating or curling, or even a pub quiz.

Can you tell us more about the inspiration behind the architecture and interior design of the Valsana Hotel? The architecture and interior design are an interpretation of the forest and the surrounding nature, while also using the latest technological innovations to minimise the hotel’s impact on the environment. The interior design is made by Carlo Rampazzi, a renown designer from Ascona, Ticino. It is a mountain chic interior, cosy muted tones with Alpine touches set a relaxed atmosphere. Natural materials pay homage to the rugged landscape. What distinguishes the Valsana from other hotels, in your opinion? The Valsana is the most sustainable hotel of The Tschuggen Collection and was built in 2017 as one of the most sustainable hotel buildings in Switzerland. With the construction of the Valsana, we have created a hotel for the future. A hotel that focuses on sustainability and produces virtually no CO2 emissions. We achieved this by using an ice battery that heats the entire building without any fossil fuels. Besides this sustainability aspect, the Valsana is the perfect place for explorers – be it while hiking around the Arosa mountains during summer or discovering the white slopes and snow covered valleys in winter.

The hotel's use of an "ice battery" is an innovative way of generating power. Can you explain how this technology works? A central element of the sustainable processes at the Valsana Hotel is the hotel’s ice battery. This incredibly innovative temperature converter is used to power the hotel. Coupled with a sophisticated heat recovery system, the Valsana does not need oil or electric heating. The three hotel buildings are heated using the hotel’s own heat recovery system and geothermal probes, which feed into a large latent heat storage unit (the ice battery). Heat pumps draw their energy directly from this unit, which looks a bit like a large water tank. The tank holds 860,000 litres of water. Four hundred metres of internal pipes 1.5 m high were installed in this large basin, with a water-glycol mixture flowing through the pipes. This is connected to the heat pump circuit. When the heat pumps extract a large amount of energy, the water in the pipes freezes to form an ice block. The waste heat from all heat recovery systems is fed back into the water tank to thaw the ice. If more waste heat is generated than energy withdrawn, the ice melts and the water heats up to 16°C. The water can then be cooled again and the heat used.

The Valsana is Switzerland's first hotel to be heated using geothermal probes and an ice battery. Can you provide more details on the hotel's sustainability initiatives? Together with our staff, we live and breathe sustainability and incorporate it on a daily basis in the Valsana Hotel. For us, ecologically sustainable business is a matter of course. In choosing the Green Globe standard, we have opted to participate in a globally recognised certification programme. The Green Globe is awarded to companies in the tourism and events industries whose corporate approach targets the respectful and economical use of resources. At the restaurant Twist the main focus is on regional food with a contemporary touch and menus that include healthy alternatives. We offer creatively designed rooms that make the journey worthwhile and stays in fascinating natural settings, enriched by intentionally sustainable enjoyment. For example, every bed has a 100% natural Elky Natur mattress (www.elky-natuerlich.at). Also, besides the waste water recovery through our ice battery our suppliers are from Switzerland where possible to avoid unnecessary transport distances, We serve premium quality Arosa water in all the Valsana Hotel restaurants on request. We also fill this water into glass bottles for our guests, which means we do not have to purchase water separately. There are no plastic straws used anywhere in the hotel neither are ballpoint pens, instead we use pencils to reduce the use of plastic. To save energy, many of the lights in the hotel's corridors and vestibules react to motion sensors. All light fittings in the hotel are particularly energy-saving LED lights. However, sustainability goes much further than this and is lived out and implemented by our employees at the Valsana every single day.

The hotel offers a range of wellness and sports facilities. Can you tell us more about activities and programs available to guests? At the Valsana Hotel is a lot to explore. Especially when joining the curated adventures and empowering expeditions named Moving Mountains, the holistic lifestyle program of all Tschuggen Collection hotels. PLAY means immersion in nature. But also, immersion in culture. Experiences, created to make our Arosa even more experiential. The activities are free of charge as part of our weekly program and can also be booked on an individual basis for an extra charge. These experiences include for example cooking classes, going ice bathing, kneipping in an icy river or going on the trail of the ibex and chamois and doing a torchlight hike. These activities are updated every season. What makes Arosa a unique resort to you? Arosa enchants all who visit it with breath-taking mountains and unspoilt nature. As Arosa is the last village in the valley, it is like a terminus. You arrive up here and consciously stay in this beautiful place of peace and relaxation.

Lastly, please tell us about your personal journey as the General Manager of Valsana Hotel. I started my career in Chur with a Master's degree in Tourism & Hotel Management. Many stations, including Canada where I discovered my love of nature, have brought me via the renowned Badrutt's Palace in St. Moritz to the Tschuggen Grand Hotel in Arosa. There, as vice general manager and F&B manager, I was involved in the creation of Moving Mountains and the PLAY activities, among other things as a passionate hunter and collector. In 2021, I was then able to take over the management of the beautiful Valsana Hotel here in Arosa.

This historic gem is nestled in the stunning village of Pontresina, perched at an altitude of 1,805 meters above sea level. Located just a brief 10-minute drive from the luxurious town of St. Moritz, Pontresina offers proximity to the majestic Bernina Massif, home to the famed peaks Piz Palü and Piz Bernina in the Engadin region. What is the hotel's philosophy? I believe that our hotel's philosophy is well encapsulated in our motto, "Engadin Elegance - directed by nature since 1848". This philosophy emphasises well providing understated, discreet, and traditional Swiss mountain hospitality within an elegant and authentic environment. The Grand Hotel Kronenhof takes pride in its historical significance as one of the most important grand hotels of the 19th century, particularly renowned for its architectural excellence.

Could you please provide our readers with some interesting historical facts or significant moments from the hotel's past? The Grand Hotel Kronenhof has a rich history marked by several noteworthy moments. In 1848, the Gredig family acquired Guesthouse Rössli, which was initially a modest five-room dwelling with charmingly squeaky floors, aged wood panelling, and a tiny staircase leading to a small bedroom. After a thoughtful renovation, they transformed it into Gasthaus zur Krone-Post, which operated a Veltliner wine shop and stabled horses for grape transportation. As Swiss mountain stays gained popularity in the late 19th century, the guesthouse expanded, featuring a Neo-Baroque rebuild that provided a light and airy ambience with stunning panoramic views. By the early 20th century, it had over 350 guest beds and welcomed wealthy guests from around the world during the Belle Epoque era. When it comes to the history of our hotel, what I find truly remarkable is that Kronenhof Hotel has remained in family hands for over 140 years. That's quite an impressive amount of time, and it's played a significant role in shaping our unique style of hospitality and attracting a loyal group of guests. Today, it continues to be a beloved tradition for many families who value the warm mountain hospitality, the genuine recognition we offer, and the elegant atmosphere we maintain. Hosting these families each year is a true honour for us.

We understand the importance of providing children a safe and enjoyable swimming experience. That's why we have a designated children's pool at our Spa. This pool area is specifically designed to cater to the needs of young swimmers, with shallow water and appropriate safety measures in place. Additionally, swimming lessons are available, and our professional lifeguards are dedicated to ensuring the safety of all swimmers, including children. We also have the 'Krönchen Kids Club', a dedicated space where children can engage in various fun and educational activities. Powder Byrne is excited to collaborate on its reopening just in time for the winter season after being vacant for a long time. The hotel is now run by brothers Matthias and Lars Michel and offers remarkable views of the scenic surroundings, including mountains, a quaint little church, and a local history museum. How did you develop the concept for Hotel Fiescherblick? What inspired you? For us it was clear that we want to create something modern, yet cosy and it should reflect our identities. We are Swiss-Danish nationals and thus we combined Danish Design with materials and colours from and around Grindelwald. The most important thing was quality in every detail. Can you tell us the hotel’s philosophy? Personality and quality – These are the two pillars of our hotel. Guests spend time at our home and they should feel like home. We don’t want anonymous hotel factories like in the big chain hotels. We want to show the guests our Grindelwald. The Hotel Fiescherblick is part of the "Wf W Green Hotel" concept. Can you explain a bit more about this concept and the sustainable development practices implemented during the hotel's construction? How was the existing building structure preserved? WfW is a concept that focuses on water. This is not the only thing we do for a greener future. It is a matter of course that we want to become more eco-friendly as we have been witnessing the melting of the glaciers in Grindelwald all our life. What are the unique features of the 19 newly renovated rooms at Hotel Fiescherblick? All of them are designed in Scaninavian simplicity yet being cosy. The natural colours have an earthing effect on the guests. What do you consider to be the unique selling points for your property? It is us constantly being present. We greet the guests, do check-in with them serve them cocktails. Make sure they get their tickets for the excursions and so on. I think the restaurant is also one of the unique selling points of the hotel. We offer an exclusive dining experience for all our guests.

The in-house restaurant at Hotel Fiescherblick is said to have a unique culinary culture. Can you tell us more about that? In my opinion restaurant should be like this. They should offer dishes that are made from the best ingredients, locally sourced and cooked with love and then beautifully presented. We like to combine some different cuisines like Japanese, French and Nordic. With the winter season fast approaching, what can guests expect during their stay at Hotel Fiescherblick? Are there any special events or activities planned? Well we are excited to open our new spa area as of December 2023 with a Japanese Salt water Onsen pool and a Sauna. The festive season is always nice too and then there is, of course, the world famous Lauberhorn Race taking place in Wengen in mid January.

The Lauberhorn race is a world-famous event; you'll be right in the thick of it as an event marshal. The race weekend is also packed with fun, including tented villages, shows, awards ceremonies, parties, and even an air show by the Swiss Air Force. Your first few weeks in Grindelwald are all about intense ski training. You'll gain the skills and confidence needed to earn your ski instructor qualification in Adelboden. Your training will be led by top instructors from Grindelwald's local Swiss ski school, focusing on improving your skiing technique and teaching you how to share the love of skiing with kids and adults. When you're not training, get ready for a whirlwind of skiing experiences and mountain adventures. Mela transformed our skiing and after passing our instructor exams we had the amazing (and rather character-building) opportunity to lead lessons with the Grindelwald Ski School. As well as the teaching we spent some incredible days off- piste skiing in hip-deep powder, learning to snowboard with limited success, and even being taught the basics of freestyle skiing in the park. A stay at Moku-Iseshima is a once-in-alifetime experience you’ll never forget. We sat down with visionary chef and patron, Mr Yuichi Hori, and asked him to share his inspiring story:

Tell us the founding story of Moku - and why you chose this location? In 2017, I visited a client’s house, which was standing by Ago Bay, to make sushi. I was so impressed by the tranquility of the sea, it is very close to you and a sea abundant with marine life. It inspired me to build an Auberge and serve fresh sushi there to clients, and then I started looking for a property. After about 6 months, I heard that an old B&B house in Masakijima Island went out of business. I pleaded with them to allow me to take it over for my desired plan and succeeded in starting the business there. At this point, I realised that the renovation cost would be enormous due to remote Island, therefore I started a restaurant serving sushi first. Masaki Island is recognised as a depopulated Island and I perceived that targeting local people wouldn’t work. Hence, I built the heliport and promoted my restaurant to people living in cities, coming by helicopter. In 2018, my sushi restaurant with the catchphrase of ‘Sushi Restaurant-go-by-helicopter’ opened. After two years, in 2020, my dream came true to build an Auberge, ‘Moku Iseshima’ since I found an investor to support me. The sound of ‘Moku’ comes from the Zen word, ‘Mokusho Zen’, which quotes that your inspiration from the heart is the truth. I would like my clients to discover something meaningful through graceful nature in front of you and experience the harvest of the sea with respect.

Can you share the highlights of your career as a chef so far? After graduating from college, I was apprenticed to a sushi master as I wanted to create cuisines that enrich people’s hearts. Since then, I have dedicated my work as a professional chef for more than 30 years. I feel threats to the sea environment while I have been dealing with marine products for a long time. For that reason, I have launched a sushi academy this year, educating apprentices to be sushi chefs, who are capable of considering marine ecology. What do you aim to achieve for your guests visiting Moku Ise-shima? Moku Ise-shima is surrounded by Ise-shima National Park. The park is special, harmonizing with human activity and natural landscape. From Moku Ise-shima, you can enjoy gazing at fishing boats sailing between small islands covered by evergreen trees, which is what Japanese scenery used to be. I buy fish from fishermen appreciating the blessing of nature. I would be happy if my guests felt that this amazing nature and blessing of the sea should sustain the next generations. What have been the greatest influences on your culinary journey so far? The experience in Lisbon had some influence on me. I was kind of shocked to see fish in the market in Lisbon being handled rough compared to Japan. After the incidents, I had an opportunity to think deeply about fish and cooking. Why don’t they eat raw fish even though they have abundant fish? Do they have a taste preference for cooked fish? Why do Japanese prefer raw fish? Sushi history started as preserved food. Japanese ancestors developed sushi that can be eaten raw and fresh as long as possible after trial and error. Through this experience, I determined that I should provide sushi to make use of local features and cultures, in other words, let nature run its course. For instance, if there is no catch from the sea, I would like our guests to accept the nature of fact, no fish dinner! Do you have a signature dish and what makes it so special for you? It is Sushi to me. Experience of Sushi has a same philosophy as Japanese tea ceremony, ‘Wakei Seijyaku’ with the four most important elements, harmony, respect, purity and tranquillity. It sublimates to the sophisticated food culture, a sushi chef and a guest respect each other though sushi experience. I always appreciate the richness in nature and dedication of fishermen through sushi.

Are there any special experiences or activities which you particularly recommend at Moku? I would like to recommend that guests try doing nothing while they are at Moku Iseshima. Even after deciding to do nothing, people tend to do something, feel contradictory, start worldly thoughts and conflict. In order to avoid it, I suggest you try a sauna. People cannot continue thinking in the hot sauna. Once emptying your mind, your brain and body will be clear and your sense will be gushed out. This process is very similar to Zazen, sitting meditation, a meditative practice that’s meant to give insight into your true nature of being by emptying your mind. Thinking about your own travels and journeys, are there any memorable places you have visited which left a powerful impression on you? It is Masaki Island, where Moku Iseshima is standing now. The island is small with a surrounding distance of 7.4km. When I visited the island first time, it was as if frozen in time of Showa era (1926~1989) and there were many abandoned houses. In its glory days, there were about 600 people living in the fishing industry. Due to fisheries decline, only 40 people are living on the island at present. People left the island and abandoned furniture, work tools and fisherman’s sheds in their houses as they even couldn’t afford to move them out. The real problem is those objects become marine litter. Tourists who are expecting beautiful nature in National Park see these facts, ruins and litter. This is the sad reality behind the amazing and blessing of nature. For this experience, Masaki Island is the place I decided to contribute my philosophy and activities to create sustainability for the next generations. If your guests could be left with only one lasting memory from their stay with you at Moku, what would you like that lasting memory to be? I would like our guests to have experience going fishing together and eating sushi which is made from the fish they caught.

We caught up with Kerri-Ann, who oversaw our pilot progamme last summer, and asked her to share her insights about the programme and what worked so well: What worked well for the kids in your programme? “We pride ourselves on our kids clubs. No matter the season, the programmes are filled with energy and adventure, where children can build on existing skills as well as acquire new ones. We ultimately prioritise the safety and enjoyment of the children whilst also ensuring that they feel comfortable and are engaging with the activities and having lots of FUN! It is our priority that every element of their Powder Byrne experience is delivered by people that really care.” What did you get up to and what stands out as particularly successful? “The children were full of mountain energy and so was the programme! The week was filled with stimulating and age-appropriate activities such as mountain biking, archery and climbing and high ropes at the rope park. The mountain biking programme was truly fantastic and a huge hit with the children. With the help of a kind and knowledgeable instructor, we were able to master the basics in the skill centre, where there are four different practice trials and a magic carpet, the perfect infrastructure for beginners and intermediate bikers who wish to refine their techniques. Once we had mastered the skill centre, we could go further afield, on local trails, and in our second session, we could head up the mountain on the Hornli-Express, and complete the Hornli trail, unique to the Alpine region. 6.8km long, and the topographical conditions allow for the flow trail to be ridden by practically all skill levels and if you wanted to cheat on any uphill sections you can always rent an Ebike! The Archery programme exceed expectations, following a marked trail through rough terrain, past waterfalls and wild gorges. The quarry are lifelike replicas of wild animals which young hunters have to stalk and hit with their bow and arrow. The course offers an exciting experience for all levels, simulating real-life situations, and was highly recommended by the group.”

Share with us some of the highlights for families to enjoy in Arosa? “There is an abundance of activities available in Arosa for families. Especially with the complimentary Arosa all-inclusive card, available to all guests who stay overnight. The Arosa Card enables you to use many leisure activities, including the resort lifts. Rain or shine, there is endless fun to be had. The bear sanctuary is a highlight, where you can spend time with bears that have been rescued from the circus and given a new lease of life back in their mountain habitat. However, a trip to The Bear Sanctuary is not complete without visiting the Weisshorn sculpture, located on the Weisshorn summit, offering 360° views of more than 400 mountain peaks in Switzerland and neighbouring countries. Unmissable, the bear sculpture stands proudly at 2,653 metres above sea level. In addition, the squirrel trail is a great family activity for younger kids, where the wild squirrels come up close and eat directly from the palm of your hand, enchanting both adults and children. Pedalos and canoeing are available free of charge at Lake Obersee, with beautiful views of the town and mountains for those who prefer to be on the water.”

Whilst the children are with you in the Mountain Adventure Academy Programme, what sort of activities can adults get up to? A: “ Adults can have just as much fun as Children in Arosa, with both exhilarating and relaxing activities available. Adults can enjoy hiking, mountain biking or E-biking, both guided or solo, horseback riding across the mountains, yoga as well as amazing mountain restaurants. In total, there are 200 km of summer hiking trails, from easy walks to long-distance treks. Some of them start from the resort, others are reachable by cable car further up the mountains. If golf is your thing, then look no further, as Arosa is proud to offer one of Europe’s highest golf courses. The 9-hole course was built in 1945 as one of Switzerland’s first golf courses. After adventures, there plenty of time for a peaceful afternoon spent at the swimming lake or in the hotel spa.” What would you say was your favourite place in Arosa? A: “My favourite place in Arosa is Lake Untersee, also known as the Lido. I would describe it as a haven, with the idyllic freshwater swimming available, diving boards, a floating inflatable trampoline, a beach volleyball court, and so much more to keep all of the family entertained. The restaurant Strandbad, located right next to the lake, offers a cosy atmosphere, with a big sun terrace serving a great menu, cold drinks and delicious ice creams.”

What are your top recommendations for dining in Arosa? A: “The dining options in Arosa are endless, with many restaurants that appeal to families and also more elegant, fine dining options for adults (evening babysitting available with our team). Bullrian and Aifach are recommended for adults with their tasting menus offering sensational and memorable food journeys. Le Bistro is another wonderful choice, with its ever-changing daily menu of fresh fish, meats and seasonal vegetables, and holds 14 Gault Millau points. My top recommendations for family dining include La Famiglia, for lovers of Italian cuisine, and Güterschuppen, a converted train station building that opened in 2018 and serves delicious wood-fired meat, fish and vegetables, with lovely terrace views of Lake Obersee. The majority of restaurants have terraces for al fresco dining during the warm summer months, and for those who wish to dine up the mountain, Alp Arosa and Alpenblick are wonderful options that offer incomparable views of Arosa and the surrounding landscape, serving food carefully selected from the local region.” One of Arosa's great advantages is its proximity to nearby resorts. Would you recommend taking a day trip outside of Arosa? A: “Venturing out to Lenzerheide for the day is a great opportunity for those wishing to explore further afield. With more adventurous water sports options available on the crystal-clear Heidsee Lake, such as windsurfing, sailing and paddle boarding, there are endless possibilities for hours of fun. The journey to Lenzerheide is all part of the big adventure day, involving a few lifts and a picturesque hike across the mountains. Across the Swiss Alps in the summer, endless high-and-mighty mountains, glittering glaciers, and turquoise lakes are waiting for your memories and experiences you and your children will never forget.”

SUMMER ADVENTURES IN THE ITALIAN DOLOMITES The ‘Queen of the Dolomites’, as Cortina is affectionately known, has many secrets.

Romans and Barbarians battled through these strategically important valleys, the Venetian Republic claimed ownership, before 400 years of Austro- Hungarian rule, coming to an end only after 3 years of bitter and ultimately futile battles in the Great War, wasting the lives of a generation on a frozen front-line in the mountains high above the town. The Ampezzo valley was eventually ceded to Italy in 1920, but it remains today a fascinating melting pot; rooted in the Ladino culture of the early-middle ages, combined with the noble heritage of Habsburgs and Emperor Maximillian, mixed with the Mediterranean warmth of the Italians. Fast forward to today and Cortina is preparing to host the 2026 Winter Olympics and Winter Paralympics with Milan. It’s a town undergoing nothing short of a revolution, as investment pours in, hotels enjoy face-lifts, new lift systems are launched and the doors are swung open again to the world to showcase the extraordinary beauty of this UNESCO World Heritage site. Cortina is again the place to be and be seen.

VIA FERRATA - AN UNEXPECTED FAMILY ADVENTURE The surrounding trails, lakes and peaks of the Ampezzo valley offer anyone looking to enjoy the great outdoors with a seemingly never-ending choice. Take any path from the centre of the town and within a couple of minutes you’ll be winding through meadows, taking in beautiful mountain scenery from every angle. There’s amazing hiking, biking, horse riding, bouldering and climbing all on the doorstep and the infrastructure is in place to access all these pursuits with guides and equipment all co- ordinated by Powder Byrne locally. And because the town and surrounding villages are all linked by cycling paths, it is incredibly easy to get around without the intrusion of cars, allowing you to really slow down. For families looking for a healthy and active escape we don’t think it can be beaten! We believe the most unexpected adventure awaits for families who join us for a via ferrata tour during their stay. The slopes around the area are criss-crossed by dozens of iron cable ways which, accompanied by a local guide, can be navigated to give you a totally different connection and perspective of these stunning mountains. Each via ferrata route is different, some quite short and others much longer, some more of a gentle walk, others requiring skill and nerves of steel! We’ll design your experience to incorporate lunch at a beautiful mountain hut along the way, or even an overnight in a summer farm or Refugio if you want something truly memorable.

Anyone who is reasonably fit and active can enjoy via ferrata, even people who are scared of heights. It’s great for active children and we’d recommend 8 years upwards as they do need to be able to take responsibility for their own safety as they move along the route, which are all graded by difficulty so we can design your experience accordingly. You will always be accompanied by an experienced local mountain guide who will help you and share all their local knowledge and stories. The equipment is very simple and easy to use for adults and children and we work with a great rental partner who will provide you with everything you need: helmet, gloves and harness and can advise on the best clothing and footwear. You are connected to the cable-way the entire time and it is amazing how safe and secure you feel on terrain that you might otherwise never have dreamed of attempting! We recommend building your confidence on one of the more gentle routes, for example a half day’s adventure to the Fanes waterfalls. You can approach the waterfalls by e-bike (more on these later) with a gentle 1 hour ride from your hotel with your guide. You’ll then get into your harness and clip onto the via ferrata cable and follow the path for around an hour through beautiful scenery, eventually arriving at the waterfalls. On your return there are various options for lunch at one of the local mountain huts, or you can return to your hotel for an afternoon of relaxing in the spa. Once you have gained your confidence, you can embark on a full day programme. We recommend our local team drive you 20 minutes up the pass to Pass Val Parola, location of the largest open air museum from the First World War. The route starts with a walk up through a tunnel blown out of the mountain during the war, with the via ferrata taking you up through the Austrian army trenches, which brings the challenges of mountain warfare to stark reality. The ascent takes 2 hours and you are rewarded with sensational views across Cortina and the surrounding peaks. After a one hour walk back down your guide can arrange lunch in a local Refugio, access to the museum, or you can head back to Cortina to celebrate your achievements. If the kids still have energy to burn and want to brush up on their climbing skills, we can arrange a session at the enormous indoor climbing centre.

GIOVANNA BARRATI, FANES WATERFALLS EASY - HALF DAY WITH E-BIKE As a gentle introduction to via ferrata we recommend starting on one of the less challenging routes. Our favourite is a half day adventure to Fanes waterfall. To reach the starting point you can enjoy a fun hour’s e-bike ride from your hotel with your guide. Once you are at Parcheggio Pian de Loa you will get into your harness and clip onto the via ferrata cable and follow the path - meandering along the gushing Rio di Fanes eventually arriving at the dramatic Fanes waterfalls. One of the best parts of this route is going underneath the first cascade, with the water plummeting down around you, it’s an experience not to miss. Next is a gentle hike along an old military road and on through a forest into Valle di Fanes which opens out onto a deep gorge carved away by Rio di Fanes. A good point to take a break and take in the surrounding scenery is at the top of Croda Rossa. At 1,480m it is a fantastic viewpoint. On your return there are various options for lunch at one of the local mountain huts or you can return to your hotel for an afternoon relaxing in the spa. BEST FOR: Families or your first time doing a via ferrata. TENENTE FUSETTI ON SASS DE STRIA & THE WWI MUSEUM MEDIUM - FULL DAY Another of our favourites and a slightly more challenging route takes you on a full day via ferrata climb. After a hearty breakfast, fuelling up for your active day ahead, one of our team will drive you up to the Pass Val Parola. This is where the largest open- air museum from the First World War is located. The route begins with a walk up through a tunnel blown out of the mountain during the war. Once you have reached the other side and turned the corner you can clip into the start of the via ferrata. The 2 hour ascent takes you through the old Austrian army trenches, a surreal experience seeing the harsh reality of the conditions experienced during the war. Once you have reached the top, a well-deserved break is in order. Sit back, relax and enjoy the sensational views across Cortina and the surrounding peaks. After a one hour walk back down you can enjoy a delicious Tyrolean lunch at one of the local Rifugios and try the regional delicacies, canelderi and spaetzle. If you are hungry to find out more about the historical site, the First World War museum is a great option to round off the day and your guide can organise access before heading back into Cortina.

MARIA & ANDREA FERRARI DIFFICULT Added to the extensive list of via ferrata routes in 2015 the new Andrea e Maria Ferrari via ferrata is one of the shortest routes you can do. It is a great option if you are pushed for time but want to squeeze in a final exciting climb. Although short, this isn’t for the faint-hearted, it is a challenging climb and recommended for the super fit and more experienced. This route scales the right hand side of Torrione di Pomede with a 150m vertical climb of the rock face using 2 footbridges, steel cables and various steels and pegs. This is immediately followed by a 100m scramble along the ridge to reach the crest, Ra Bujela. Peaking at 1,875m, the views are fabulous and you are rewarded with a picturesque descent through the meadows beyond. BEST FOR:Fitness enthusiasts and adrenaline junkies GIANNI AGLIO DIFFICULT - HALF DAY This via ferrata leads up to the highest of the three Tofane mountains. Beginning with a long and difficult traverse, this route is another challenging one - recommended for the well-trained and more experienced climbers. Starting at 2,900m the views all the way along the route are spectacular and you really will feel on top of the world. After a couple of airy and difficult traverses along the East and North faces of the Torre you will reach the large Bus de Tofane window at 2,920m. Here there are links to Rifugio Giussani and Rifugio Dinona where you can have a pit stop if you fancy a refreshment before continuing up to the top. The final stretch to the summit involves tackling a couple of vertical drops using ladders and navigating a rocky path passing an avalanche barrier. Before descending to Rifugio Cima Tofana at 3,191m where you can enjoy a refreshing drink to celebrate your achievements and then jump in the cable car back down. BEST FOR: Active and experienced climbers.
