For almost four decades, come rain, shine, or snow, the Boulder Model Railroad Club has held this annual public event. (Be sure to ask them about the year of the apocalyptic snowstorm.) Stay Warm with Celestial Seasonings By Rhema Zlaten
W
arm up and spread some cheer this holiday season at Boulder’s tea paradise, Celestial Seasonings, by bringing the whole family in for a free tea tasting experience and factory tour. After inventing the herbal specialty tea business in the United States, this Boulderborn business is still developing new tea blends and producing seasonal magical holiday teas, such as the beloved Candy Cane Lane. The adventure begins in the festive holiday decorated Tour Center, where each person will be handed a tea cup to sample any of the 90 flavors Celestial Seasonings currently blends. The tour center also has a gallery of original paintings from those familiar and well-loved Celestial

tea boxes as well as displays of unique tea pots, tea cups and mugs. The tour begins with a short video in the Tour Theater describing a brief history of Celestial Seasonings and close-up views of the tea processing. Next, hair nets are handed out and the group leaves for the factory portion of the tour (NOTE: children must be 5 years of age to go on the factory portion of the tour). The factory tour will take you into the tea manufacturing facility itself so that you get to be in the heart of the action. The tour experience includes education about the milling process for the herbs, differences between teas and also the packaging process for each box of tea. Perhaps the most famous element of the tour is the mint room, where the tour

will stop for each participant to inhale the powerful aroma of the peppermint and spearmint leaves used in many of the teas. The tour ends with a stop at the gift shop. In the gift shop, you can purchase all of Celestial Seasonings’iconic tea blends, including the hard to find flavors. In addition to the many teas you can purchase, you can also buy amazing gift baskets and gift sets. The beautiful gift shop is a great place to find gifts for the tea lovers in your life. The Celestial Seasonings Tour
was listed as one of the top 10 tours in the country by USA Today. It attracts an average of 140,000 visitors each year. Top Holiday Brews for the Season Danielle Hix from Hazel’s Beverage World’s beer department gives her recommendations.
T
his winter season has been off to quite the warm start, which for obvious reasons, can cause us to stray away from newly released holiday beersafter all, who wants to drink a heavy, dark beer when it’s still warm outside? Don’t be fooled, though! Not all holiday beers are dark- some of the best are actually fresh hopped, with light and citrusy aromas- perfect for the warmer winter days! For me, the type of beer I drink correlates with the temperature outside. The warmer it is, the more I want a lighter brew; the colder it is, the more I want a darker, heavier brew. In case you’re like me, and to cover a variety of occasions, I’ve compiled a few of my favorite holiday brews for a variety of weather. Top on my list of hop forward holiday beer is Sierra Nevada’s Celebration Ale. This beautiful holiday ale is brewed with fresh hops (which come from the field within 7 days of harvest) and gives off an intense aroma of citrus and pine- perfect for that beautiful fall day in Boulder. An added bonusit pairs perfectly with turkey!
For the days where it’s a bit nippy, I prefer Avery Brewing’s Old Jubilation Ale. Brewed locally, Jubilation is a kick-ass English Strong Ale that lives up to its style, coming in at 8.3% ABV. Jubilation boasts a perfect blend of 5 malts and a smooth mocha/toffee finish, with a hint of hazelnut. Perfect for a chilly evening on the porch or a day on the slopes, Jubilation is sure to cause everyone to… jubilate!
Finally, for the days where it’s chilly and you need some warmth (after all, we know winter is coming), I recommend Port Brewing’s Santa’s Little Helper- a bourbon barrel aged imperial stout coming in at a whopping 12% ABV, this brew features a strong bourbon aroma, a dark chocolate/oak taste and a smoky coffee finish. In 1896, the Daily Camera published a recipe for Thanksgiving pumpkin pie: “Take four cups of this strained pumpkin, add four cups of rich milk, a teaspoonful of salt, two of ginger, one of nutmeg and one of mace, a small cup of sugar and four or five eggs according to their size.” Early recipes were fairly vague in details because it was assumed all cooks knew how to make pastry and bake a pie. The basic recipe for pumpkin pie actually hasn’t changed much and holiday traditions are still strong among local pie lovers like professional baker John Hinman. He became famous locally for his tart cherry pies when The Post restaurant opened in Lafayette.“I love cherry pie. It’s as simple as that. The flavor of cherry pie has the ability to transport me back to boyhood,” Hinman said. Now Hinman’s Bakery in Denver supplies pies and other baked goods to The Post and many other eateries. In the following recipe Hinman recommends using European butter because it has a higher butterfat content resulting in a flakier and better tasting crust. In the 1980s, Lafayette-based chef Bruce Monette took First Place honors at the National Pie Championships in Boulder for the Key Lime Pie he served at his Boulder restaurants Southern Exposure and Calypso Grill. Monette still makes the same pies and sells them frozen at Lucky’s Market (Boulder), Niwot Market, Cheese Importer’s Warehouse (Longmont) and at Atlas Purveyors (Lafayette). He said the only “trick”to making his recipe is to use real Key lime juice (fresh or bottled), fresh eggs and cream and high-quality vanilla extract.
JOHN HINMAN’S CHERRY PIE 2 1/2 CUPS ALL-PURPOSE FLOUR 1 cup unsalted butter, very cold, cut in 1/2-inch cubes 1 teaspoon salt 1 teaspoon sugar About 8 tablespoons ice water
Filling: 5 to 6 cups (about 21/2 to 3 pounds) frozen tart pitted cherries 1 1/4 cup sugar 4 tablespoons cornstarch 1 1/2 teaspoons vanilla extract 3/4 teaspoon almond extract 1 egg About 1 tablespoon milk Sugar in the Raw (or decorating sugar)
For the dough: In a mixer, combine flour, sugar, salt, and butter. Mix on medium speed until the butter is broken down into pea-sized shapes. Add cold water. Turn up the speed on the mixer a few times until dough just comes together. Turn out on the table, press dough together with your hands and divide into two equal portions. Wrap them in plastic wrap until ready to use. Dough will keep in the fridge for two
days or in the freezer for months. For the filling: Cook the cherries in heavybottomed pot over medium heat. When they start to juice, add sugar and cornstarch. Cook until thickened, stirring occasionally. Remove from heat and add extracts. For the pie: Preheat oven to 375 degrees. Split the dough in half. Roll 2 9-inch circles and press one into the pan. Pour the cooked cherry filling into the pie shell. Thoroughly whisk together egg and milk to create egg wash. Brush wash around the crust rim of the bottom pie shell. Put the top crust on, and pinch together around the outside. Using thumb and forefinger, crimp the crusts together to seal. Put in the fridge or freezer for 45 minutes. Cut vents in the top and brush the top crust with egg wash. Sprinkle Sugar in the Raw on top and bake 15 minutes at 375 degrees and about 40 minutes at 325 degrees. This pie can be baked up to a day ahead. It’s very important to let the pie completely cool before slicing.
SOUTHERN EXPOSURE KEY LIME PIE 1/2 cup real Key lime juice 5 large egg yolks 1 can sweetened condensed milk 1 cup heavy cream, very chilled 1/4 cup sugar 1 teaspoon double-strength true vanilla extract Fresh lime zest 1 pastry pie crust

milk with a wire whisk. Pour into pie shell. Bake for 10 minutes in a pre-heated 350 degree oven. Cool to room temperature. Chill in refrigerator. To make whipped cream, whip cream with sugar and vanilla. Garnish chilled pie with whipped cream and lime zest. Refrigerate pie until serving. These pies also freeze quite well. As the largest shopping center in South Boulder, Table Mesa’s diligent construction team has been hard at work with extensive renovations and improvements since the project began earlier this year. “One by one, we’re crossing items off our construction to-do list at the shopping center,”said the development team at W.W. Reynolds, the property owner and manager, in a statement.“It’s exciting to see phases completed and coming together.Your patience has been crucial through this process, and we appreciate it.” A six-phase, $3.5 million redevelopment project is nearly complete, the renovations are set to offer exciting new updates to the picturesque South Boulder space with unparalleled views of the Flatirons. Improvements include updating nearly one hundred percent of the parking surfaces, new lighting, irrigation systems, landscaping, multiple play areas, expanded bike parking and outdoor seating. W.W. Reynolds property manager Jessica Trombley said it’s been a priority to keep access to the shopping center open throughout the project.“We want to thank all the customers for their patience during this project. I know it’s been a huge inconvenience and their continued patronage means so much to the tenants at our shopping center,”she said.
