HOW SMART IS YOUR MONEY?
INTERVIEW WITH INVESTMENT EXPERT, WARREN GEROW OF SPROTTWEALTH By: Taneil Currie When it comes to investing, even the most sophisticated investor can suffer from emotional decision making. Faced with an unsettled macro environment, it’s certainly enough to make investors jumpy. Educating yourself on your investment options is of vital importance in order to make wiser decisions. We’ve all heard the old adage, “work smarter, not harder”. The same theory holds true in investing. So how does one ensure their money is working smarter when the markets are volatile and the outlook for the Canadian and global economies are still uncertain? A good start is to seek expert advice. Preferred Magazine had the opportunity to discuss some investment strategies with Warren Gerow of SprottWealth, a Toronto-based wealth management firm. Gerow is a leading investment expert, having spent over 40 years in the industry. He began his career at Royal Trust as a Trust Officer and an investment manager for trust accounts. He later moved to Nesbitt Burns as an account executive and in house expert in option and convertible arbitrage strategies. In 1990, Warren became the Treasury Manager for the New Brunswick Workplace Health, Safety and Compensation Commission, reporting to their investment committee. He took the WHSCC from a 4th quartile performing fund to a 1st quartile performing fund and was asked to consult on manager selection to pension and endowment funds because of his demonstrated process and performance. Preferred Magazine: What does SprottWealth specialize in? Warren Gerow: SprottWealth is a full-service advisory firm with roots dating back to 1981. PM: What types of customers are you comfortable working with? WG: We are comfortable working with anyone and we have clients of all ages and wealth segments. The minimum investment required for our Smart Money Portfolios is $500,000. PM: With the current market volatility, what approaches do you use when giving clients advice? WG: Before we even think about giving a client advice, the first thing we need to understand is the client’s definition of risk and their tolerance for it. In today’s market, unexpected events have become more common place, which has increased investor uncertainty. The purpose of the SprottWealth Smart Money Portfolios is to reduce uncertainty of returns. As a result we spend most of our time searching for strategies with low correlation to market indices. That means that if market indices trend downwards, for example, we expect that our strategies will not be as negatively affected as the broad market.

PM: What is the “Smart Money” solution? WG: The Smart Money solution is really twofold. First we use an institutional process for manager selection, portfolio construction and monitoring. This process includes both a quantitative and qualitative analysis of each manager. Then a rigorous portfolio construction process is implemented to determine which managers work best in combination with each other to provide the best risk-adjusted return. This involves an in-depth correlation analysis to make sure that the managers will not trend together based on market conditions. We have four portfolios based on risk characteristics: income, balanced, growth and long term growth. Once the managers are in place, we conduct regular monitoring to ensure they are staying within their mandate and performing as expected. PM: What are alternative investments? What is the goal of alternative investing? WG: Alternative investments are investments in assets classes other than the traditional assets of stocks, bonds, and cash. Alternative strategies can include stocks, bonds and cash; however they usually would incorporate a hedging component or a strategy different than the typical ‘long-only’ investment strategy that traditional investments employ. Some types of alternative investments are private equity, infrastructure, real estate, private debt, mortgages, among others. The key goals of alternative investing are diversification, absolute returns, lower volatility or risk, uncorrelated returns to traditional equity and bond markets and to reduce exposure to the inherit market risk drift which comes with asset bubbles. PM: What macro factors have led to the increased interest in alternative investing? WG: The main drivers of this resurgence are slower economic growth coupled with historically low interest rates which have been impacting various asset classes. As investors are unable to find yield in their fixed income investments, they tend to take on more risk than they are comfortable with and create stock bubbles in the search for yield elsewhere. The imbedded risk in the market has spurred interest in alternative sources of income and capital appreciation uncorrelated to the markets. PM: Where is the ‘smart money’ going? What differentiates Smart Money Portfolios from a traditional bank offering? WG: Several studies have shown that the ‘smart money’ is going to the alternative investments space. That includes hedge funds, real estate, private equity, infrastructure and more. The Smart Money portfolios differ from traditional offerings by using an “open architecture”, which includes a full range of alternative investment strategies. We are not limited to one or two families of funds. This enables the Smart Money portfolios to allocate to best-of-breed managers without constraints of the large asset gatherers. Typically, a traditional bank will only put their clients in bank owned product. GAME ON...! By: Chef Eric Marle
As a professional and a passionate chef, I am always trying to one up dishes on our menus. Different this, different that, in order to continually tweak and improve the dish. However, eventually a routine will set in because we will execute that dish hundreds of times often using the same proteins (There are only so many ways to serve beef, chicken etc) so I was intrigued a few years back when venison, bison and game finally came out of the closet!!! Sure, it’s been around forever and hunters anxiously wait for hunting season in the fall, but the general interest wasn’t there. It was almost a “where’s Waldo” to find venison, bison or game in the bigger cities... Today of course the tables have turned. From sliders to Bourguignon, tartar to confit, chili and now even sausages, it’s clear our affair with gamier meats has just begun and the beauty of it is that there is something for everybody. Gourmet grocers and trendy restaurants alike proudly feature what is probably thought to be the healthiest cut of meat out there. Your local chain grocer stocks the flesh and bones of beef, pork, lamb, chicken,—some of which are raised free of chemicals and confinement and are nearly as free to romp and roam as bison or deer. Yet despite all of this, many consumers choose game like venison or bison while they fuss over recipes like brides planning a wedding and with good reason. Some of the best chefs in Canada have come to understand and market the connection between venison, bison, game, the wild places where they live, and the dish for all its positive attributes. Richer and heavier recipes such as Venison Osso Bucco are probably enjoyed more during winter months, while game such as duck and quail find their place on the menu or at your table more often in the warmer months.
The taming of the wild or how we learned to love game... Aside from the incredible quality of the meat, venison, bison or smaller game are also very practical as they can be prepared many diffrent ways which also affects the cost. For instance, cubed venison or bison from the shoulder area will be a lot cheaper than filet from the hind. Yet you are still buying a high quality product. Then of course there is the the high content of minerals. In a world obsessed with health, youth and looks, Bambi and friends are a no brainer. Why? Because it is low in fat, because of its low waste ratio to consumable product, because it is free of growth hormones, antibiotics, and antifungal fed or injected into commercial livestock,because eating from the wild resonates with the current slow-food and regional cuisine movement and it is relatively cheap to obtain.
A little history… The first European explorers to the New World were astonished by the numbers of “stag” that they met upon their arrival. It was lead versus flesh (guess who won?) as early pilgrims, pioneers, priests and trappers lined up for what was to become an endless buffet at the first Thanksgiving. Saved from starvation, our newly arrived ancestors quickly realized the potential of our four legged friends. New World quests for freedom and riches were fueled by the demand for the flesh of whitetail deer and all the possibilities its fur could provide. This Fur trade endeavor would eventually grow to become quite the industry and possibly Bay Street’s ancestor.

Misconception While it is common practice to place everybody under one hoof, it should be noted that there is a significant difference between bison and venison. Taste for one is very different. Venison ( deer) for one is much gamier with very pronounced tanins in the flesh whereas bison is more like the Ferrari of beef. Not so much a pronounced flavour but a very very lean cut of meat with much less fat. Color on the other hand will resemble a little more with venison leaning towards a dark Burgundy. Wine Pairings The gamier flavor and stronger tannins permit you to pair with sauces with bolder flavors which in turn invite wines with more body and substance. Obvious pairing will be with red vaterials. Depending on the dish (sauce) varieties such as Malbec, Cabernet Sauvignon, and some older Merlot are a safe choice. Bermuda’s famously gorgeous shores are steeped in nautical history and tradition. As such, there is hardly a more fitting place to host the 35th America’s Cup, one of the world’s oldest sporting events and yachting’s most prestigious prize. The Cup, affectionately referred to as “The Auld Mug,” will be contested over a five-day tournament being held this June in balmy Bermuda. First contested at an invitation race around the English Isle of Wight in 1851, the Cup was won by the schooner America from New York. Over the years there has been numerous movements around the globe, such as “The Summer of Riesling”, encouraging the often over looked move of ordering a glass of Riesling rather than typical “go to” white wines such as Pinot Gris and Chardonnay. Riesling - Germany’s noble grape - has long been described as the ‘darling’ in the world of wine for its ageability with its bullish acidity, intense flavour and knack of showcasing terroir whilst maintaining its varietal characteristics. But due to Riesling’s strong personality it has struggled to achieve any sort of mass appeal. While it is true Riesling contains many of the qualities that are currently on trend - typically being dry to off-dry, light and crisp, lower in alcohol and fruit-forward Rieslings aromatic quirks, even when young, makes it a more acquired taste with its naturally high levels of tarty acidity, powerful citrus, honeyed and floral aromas and inherent notes of kerosene intensifying with age. Riesling is also plagued by 1970 and 80s baggage with the proliferation of large-scale exporting of cheap, sickly sweet, German “Liebfraumilch” wines - such as Black Tower and Blue Nun. Despite bearing no resemblance to the classic Riesling style with many typically using the bulk Müller-Thurgau grape and adding copious amounts of sugar before bottling, these wines ironically became synonymous with Riesling. By the 1990s the result eschewing was a hard to shake perception that Riesling wines were nothing than low quality, cheap plonk. Fifteen years on, and thankfully with these bulk wines in decline, perceptions are gradually changing for the better with classic Riesling making a comeback. Riesling is responsible for the majority of Germany’s top wines with many critics arguing the grape finds its greatest, most delicate and raciest expression in the finest estates in the northerly Mosel region. Over the past decade, Riesling’s share of plantings in Germany continues to soar underpinned by its recent surge in popularity. Today’s new German quality standard for those producers playing in the higher priced market segment is a wine with uncompromising quality, reflecting an authenticity of terroir with minimalist intervention, and stamped with the winemakers’ unique fingerprint. Producers are also focusing on dry (trocken) expressions of the grape which inevitably appeal to the en vogue trend for drier styles of wine. With this trend towards producing dry Riesling with firmness and elegance, principally dry Spätlese (late harvest wines fermented dry with a corresponding higher level of richness of flavor and alcohol) or wines labelled Grosse Lage/Grosses Gewächs (“great site”/”great growth” denoting Germany’s very best vineyard and their corresponding top vine parcels), German Riesling wines are commanding new found respect in both Germany and abroad.

But the grape has also seen increased production in “New World” wine countries. The US, in particular, has seen astounding success with the total area of California Riesling vineyards doubling between 2003 and 2012, inspired by the success of Ernst Loosen and Chateau Ste Michelle’s joint Eroica Riesling venture. But it doesn’t stop here. Upon speaking with Ernst he fondly recalls how every winemaker he has met from Australia and New Zealand has a Riesling project noting “how proud they are about the Riesling they produce” and how this has “immensely helped” to spur on Riesling’s noble image. With that said, it is undeniable one of the more difficult facets of the Riesling grape for wine drinkers is there is no typical style making ordering a glass a bit of a gamble unless you have more information. However Ernst describes this phenomenon as one of the “strange beauties” of Riesling - “Riesling; it’s like an actor who can play a myriad of roles - it can be bone dry, medium sweet, or you can make it sweet…You can twist it so much and create many different styles. You can even create a 10 course wine dinner and offer 10 different Rieslings.” So whether you are looking for a dry white wine with the equivalency of a great Bordeaux red, a remarkable, lusciously sweet wine, an intriguing wine of age to enjoy with food, or a easy to enjoy quaffing wine Riesling offers it all. Reason for drinking Riesling? None needed.

This “great growth” Riesling from a parcel of extremely old (“Alte Reben”), ungrafted 100+ year old vines uniquely never struck by phylloxera offers immense intensity whilst retaining its Mosel delicacy. Intense stonefruit aromas, hints of melon and some salty breadiness of the nose. The wine is powerful and complex - crisp and fresh interwoven with rich grapefruit, peach and slate flavors and long length finishing with baking spices and a touch of honey. ATOMIC ANT: SEARCHING FOR A TORONTO CHAMPIONSHIP By: Brian J. D’Souza
There has been a drought in Toronto between the major North American sports franchises that has lasted since 1993 when the Blue Jays last won the World Series. The Leafs haven’t hoisted a Stanley Cup in triumph since 1967 and although the Raptors have shown vast improvement, they have yet to come close to sniffing an NBA championship in their 22-year history. Last December, the city’s hopes were renewed when Toronto Football Club (TFC) appeared en route to capturing the MLS Cup against the Seattle Sounders. TFC outplayed the Sounders throughout 120 minutes, with Seattle failing to register a single shot on the Toronto net. When the scoreless game went to a penalty shootout, the Sounders emerged 5-4 as the victors. Beneath the sting of regret lies the possibility of redemption, as a more poignant focus is on the man who almost singlehandedly contributed to TFC’s rising fortunes—the Italian striker widely considered the most valuable player in the entire MLS: Sebastian Giovinco. Giovinco came to Toronto from famed club Juventus in 2015 at a hefty price-tag— $7,115,556 annually, making him the second-most expensive player in the league after Orlando City’s Brazilian star Kaká. With the 2017 season underway, I met with Giovinco in a Queen West condo to gain a deeper understanding of his passion for the game.
Standing 5’4”, Giovinco, who is nicknamed “The Atomic Ant” graces the room with a gentle smile, slowly taking in his surroundings. Born in Turin, Italy, Giovinco was raised in a nearby small town called Beinasco. “When I was a kid I spent a lot of time in the south especially during summer in Calabria with my grandparents,” says Giovinco, “I’m happy to come back there for some days with my family when I can.” His introduction to soccer happened almost by accident at the age of seven. “A friend of mine asked me to go to a game, and the other team was short one player. I was at an age when I could play, and that’s how I started playing.” He began playing for famed Turin-based club Juventus in 2006. Although Juventus won multiple titles in the Serie A league, the difficulty in securing a place in the team’s starting line-up acted as a catalyst to inspire a move to a new team abroad. “I wanted to change my life. I wanted to change everything,” explained Giovinco. “TFC was the first team to call me with an offer to come here.”

His debut season with TFC in 2015 saw him take multiple honors from being named MLS’s MVP to the prestigious Golden Boot awarded to the highest scoring player. Most critically, TFC made the playoffs for the first time in the club’s history.
In ESPN’s FC MLS Confidential 2017 poll, a whopping 80% of respondents comprised of 140 MLS players representing 21 of the 22 teams felt that Giovinco should have been named among the top three MVP finalists for 2016.
Despite all the accolades, Giovinco is able to remain a more low profile in Toronto than he can maintain in Italy where soccer is something of an obsession. While North American audiences are still learning the intricacies of soccer, European nations have hardened fans who live and breathe for the sport. This can make life difficult for the players.
“I don’t think about it anymore,” he says of the omission.
“In Italy, the people live for soccer. So I can’t go out like here. I have more privacy here.”
As soccer is a global sport, Giovinco could have success in one of the many leagues internationally. During the off-season, rumors buzzed around that he was offered a contract in China’s burgeoning Super League.
He is the kind of warm person who finds his energy and charm reciprocated in social situations. During the Preferred photo shoot, the photographer gushes about how her boyfriend is of Italian descent while the make-up artist and wardrobe stylist swoon. Nonchalant and unassuming, he accepts instructions as the father of two is trotted through different wardrobe changes. “Smile!” the photographer commands, as he obliges. There’s still a fierceness to his gaze that penetrates through the camera lens. Something wild inside that he’s learned to harness. Yet some things are out of his control. 2016 was a difficult year for Giovinco. Injuries kept him sidelined for [x games], and the MLS Cup final against Seattle left bitter feelings. “I don’t feel good when I lose,” he says, opening up. “I couldn’t give Toronto the championship it deserved after all these years.” The loss to Seattle was not the only down moment of the year. There were some hurt feelings when Giovinco found himself placing fourth in the MLS MVP voting.

Most impressively, 15% of players picked Giovinco in the category of “If your life is on the line for a player to make a penalty kick” (18% of the voters picked themselves).
“There was an offer for me from China,” Giovinco says, “but I love Toronto and I preferred to stay here.” It is doubtful that if an offer materialized for Giovinco to play abroad that TFC management would give the nod. He is three years into a five-year contract, and TFC’s status as a top dog in MLS completely hinges on the Italian’s skills. High hopes need to be measured against many other factors—chiefly, Giovinco’s health. He missed six games in 2016 due to quadriceps and abductor strains. 2017 has not opened with the most favorable of results: he suffered a contusion on his IT band in the third game of the season that has forced him to take some time out. Nothing is written in stone, and there could be many more surprises awaiting TFC throughout this season. One thing is certain, and that’s that Giovinco wants to bring Toronto the championship the city richly deserves. “We have to try to win,” he says, “This year we have to win. We have to take this one.”

As you approach Oslo from the air, the landscape beneath changes from fjords and half-frozen rivers snaking through trees, to snowy fields dotted with alpine farms, before they give way to reveal the city. Oslo is a city of contrasts. Long summer nights when the sun almost never sets, versus winter days where it doesn’t seem to
But, as with the rest of the city, the Grand recently had a facelift. After coming under new ownership, the hotel was part-renovated to give it a more modern feel. But more than simply restore the hotel to its former glory, the renovations also included the introduction of a new modern art collection. The result is a hotel that feels steeped in history yet at the same time impossibly trendy. Walking into the large marble-floored lobby bar, your eyes are drawn to the 3-ft tall Tracey Emin neon work, her interpretation of ‘The Scream’. To the right of the bar, the Palmen restaurant features plush furnishings and a Venetian glass chandelier by Cerith Wyn Evans. The rest of the hotel is similarly sprinkled with bits of unassuming modern art. Andy Warhol’s “Portrait of Crown Princess Sonja” sits in the appropriately named Queen’s conference room, along with a ceramic vase by the Queen herself. In the lobby sits a golden boy on his rocking horse, a sculpture by Danish-Norwegian artist duo Elmreen and Dragset (a smaller version of the work they showed in London’s Trafalgar Square in 2012). The newly renovated lounges, it has been installed several photographs by the renowned British photographer Tim Walker.
rise. It is a medieval city rich with history, home to Vikings – and yet until oil was discovered in the 70s, it was one of the poorest capital cities of Scandinavia. Now, Oslo feels like a city that is on the brink of something bigger. Everything from the airport to the famous Monolitten monument in Frogner Park is under construction. The Royal Palace, completed in 1849, is centuries younger than most European counterparts. And it is only slightly older than the Grand Hotel Oslo, which this year marked 140 years in business.
The restaurant scene in Oslo is quickly becoming a rival to more famous culinary Scandinavian cities. Maaemo is the only Norweigan restaurant with three Michelin stars. Visitors are spoiled for choice, but the food in Oslo isn’t cheap. A 5-course tasting menu in Restaurant Eik (in central – or ‘sentum’ – Oslo) will roughly cost 600 Norwegian kroner or $100 CDN. But, in a city where even a burger costs around $15, it’s worth spending a bit more for something special.
The oldest hotel in the city, the Grand Hotel Oslo has a colourful past. Henrik Ibsen, the 19th-century Norwegian playwright and poet, spent his days in the Grand Café with other famous artists of the time. Today, on the back wall of the café, a fresco depicts the bohemian artists who made the hotel bar their haunt. The opulent banquet hall continues to host the Nobel Prize award. The large wrap around balcony, with views of the Norwegian Parliament to the left and National Theatre to the right, is where the winners brave the cold to wave to the crowds each year.

If you like fresh bread, pastries and coffee shops, you’ll be spoilt for choice in Oslo. But if you want to eat like a local, a proud fishing heritage means you can’t go wrong eating anything caught from the sea. The best fish of course depends on the season. Rakefisk (fermented trout) and skrei (a type of cod) are popular in the winter, and indoor markets like Mathallen Food Hall is where to find them. In the summer, you can wander down to the beautiful harbour for fresh shrimp. Oslo bars are where you can do some real damage to your wallet. Like their English cousins, Norwegians are well-versed when it comes to gin – Vidda and Kimerud are the most famous brands. The Eight Bar on the roof of the Grand is the place to go for the best gin cocktails in the city with a view – although an honourable mention for goes to Chair bar in Grünerløkka, (the hipster part of town). If it’s wine you’re after, the Grand also boasts one of the Oslo’s only wine cellars. The cellar’s modern design, with a focus on glass and steel beams, neatly contrasts with a predominately Old World wine collection (focusing on Burgundy, Tuscany and Piedmont regions). In Norwegian culture, the sauna is where to practice the Scandi tradition of hygge – which, loosely translated, means ‘being comfortable’. The Grand’s Artesia Spa, with an enclosed roof top pool, sauna, and heated beds, is the best way to embrace this cultural trend when the sea winds and snow bite. While it’s easy to get around the city on foot, the best way to see it is by boat. From City Hall, host to the Nobel Prize Museum, you can take a ferry to the smaller islands around Oslo. Or, if you have time, take a breath-taking fjord sightseeing trip. Head up to Holmenkollen ski jump and zip-line, or simply take a cruise along the Oslofjord in the summertime, when the sun stays high all day. A short ferry ride is also the best way to reach some fantastic museums on the peninsula west of the city, Bygdøy. The Viking Ship Museum and Norwegian Folk Museum are worth a visit. Bygdøy is also popular during summer for its beaches and trails. Back at the Grand, standing on the roof with a gin and tonic, it’s easy to get a sense of how much of Oslo is still growing – just count the number of cranes in the sky. It will be interesting to see what this skyline looks like in a few years’ time.

EXTERIOR Long wheelbase, short overhangs, a solid stance as it crouches on the street: the BMW i8 has all the characteristics of a full-blooded sports car. The front appears extremely low and wide. Everything is arranged to be optimally aerodynamic. At the same time, the flat, but prominent double kidney grille reveals the BMW genes. A V-shaped ‘black belt’ starts on the hood and dynamically wraps around the body shell to the rear. Viewed from the side, the exaggerated wedge shape, the longdrawn-out lines and the flat silhouette underscore the dynamics. Layering design, a method in which surfaces and lines overlap and interweave, produces an extremely sporty appearance all round. The surfaces join harmoniously, creating a compact and agile impression. Everything appears to come from a unified whole – thus lending the BMW i8 an extraordinarily powerful stature.
INTERIOR The sporty look of the exterior is continued seamlessly in the interior of the BMW i8. All elements are light and dynamically positioned. In the interior, the layering principle creates a novel relationship between functionality and clear form. Lightweight construction is also implemented visually; for example, the visible carbon fibre elements in the door sill highlight the low weight of the BMW i8. The classic sports car character and the typical BMW driver orientation are both equally prominent in the design. The centre console is aligned towards the driver. All the instruments and the digital instrument panel with its two large displays are easy to operate. All passengers have a low seating position and the narrow lightweight seats provide reliable support and outstanding of comfort even when cornering rapidly. The iDrive Controller is conveniently located on the centre console that optically bisects the vehicle.
Standard in the BMW i8, LED headlights fit in perfectly with the exceptional sports car concept. All lighting elements are completely in LED. The front light has a typical BMW i U-shaped frame, which contains the Daytime Running Lights and a built-in indicator. A second broad frame is added as a distinguishing design feature when the optional high-beam headlights with laser light technology* are selected. The model with laser technology also considerably increases the range of the high beam and enhances its illumination. A passively lit blue band signals the innovative technology of the lighting unit. In addition, the side cover of the headlight in the equipment with laser light is not dark but has a brilliant metallic finish. The overall impression of the light concept is unmistakably BMW i8.
FEATURES BMW i8 takes another victory lap with its recent 2016 Engine of the Year Award The BMW eDrive technology is the result of many years of BMW Efficient Dynamics development work. The full torque of the agile electric motor is available from a standing start and makes for unrivalled driving pleasure. At the same time, an innovative cooling system keeps the high-voltage batteries at their optimum operating temperature, which increases performance and service life. Intelligent energy management coordinates the interaction between the electric motor with battery and the electric motor with combustion engine, and is always geared towards maximum performance with minimum consumption. The result is a powerful and efficient plug-in hybrid system. Off to a swinging start: Thanks to the spectacular scissor doors, the sports car character of the BMW i8 is recognizable in an instant. Swinging upwards when opened, the scissor doors are an optical highlight and blend perfectly into the smooth lines of the aerodynamic body shell. When viewed from the inside, the doors underline the sporty nature of the interior. Thanks to the aluminum, carbon fibre and thermoplastic used in their construction, they are approximately 50% lighter than conventionally built doors. As a result, they are particularly convenient to open and close from the inside. LUXURY INTERIORS THAT TAKE MAN CAVES TO A NEW LEVEL Q&A WITH AWARD WINNING DESIGNER, LORI MORRIS By: Tony Curcio
Sometime we all need to have our own personal space. Often when the space belongs to the woman in the relationship, it is called the “house”. When the personal space belongs to the man, it is often referred to as the “man cave.” Man caves can offer endless benefits for both the man in the relationship, the wife or significant other. Over the years, the man cave has transformed from a utilitarian space that may have included grandmas old furniture into a haven in the home filled with luxurious amenities. A space to watch the game with the guys, relax with a scotch or enjoy a fine cigar. Of course, there are as many approaches to designing a luxury man cave as there are men. Preferred Magazine had the opportunity to sit down with Toronto-based interior designer Lori Morris, who has been transforming conceptual dreams into exceptional, one-of-a-kind homes in her successful twenty five year career. We were excited to learn about her creative approach and how she designs for the modern and sophisticated man.

PM: Every designer has a signature approach. How would you describe yours? LM: The difference between my work and other interior designers is that I have a very unique approach that I take towards every client and project. It’s similar to painting a piece of art in the sense that it is not all about having a specific style. When clients come to me they aren’t necessarily buying into my style, they’re buying into my creativity. I take each project on as a new entity or canvas. Therefore, a client’s style to me is defined by their preference, whether it be something very slick and modern, Zen and tranquil, or something very ornate and French. Anything they want is just a conduit to get to the finished product of the original sophisticated design. PM: Your work is incredible and no two projects look the same. How do you achieve this originality every time?
Preferred Magazine: Tell me a bit about yourself. Why interior design?
LM: I’ve always said that I’m never going to do the same house twice. I believe that every house is its own work of art. That’s a principle that I hold onto very dearly while I’m working. Once I finish somebody’s home, that painting is done and then I’m on to the next.
Lori Morris: I am an artist to the core and creativity has to be part of my everyday life. I have been this way for as long as I can remember. Even though I thought of pursuing other careers, not to have creativity in my life simply wasn’t going to work. The interior design industry really appealed to me and as soon as I got into this field, I never looked back.
At House of LMD, our design is rarely based on a trend. It’s more about a feeling. We want to know how you want your home, restaurant or hotel to feel – and we bring this feeling to life.

PM: What is your process to ensure that you and your clients are on the same page? LM: We really like to understand exactly what it our client is looking for in terms of their end result. Many clients don’t necessarily know what they want the end result to be. However, most of them do know what they don’t want. Often it’s a matter of figuring out what they don’t want to help them realize what they do want. It comes back to the feeling. Do you want the space to feel warm and cozy or hot and sexy? I often start by asking clients to describe a certain feeling that resonates with them and then we emulate that throughout our design process. PM: What is so special about the men’s lounges that you create? LM: Men have a large opinion on both the design and savvy architectural elements that are incorporated into their space. As far as the men’s lounges are concerned, every man interprets it differently based on what they want. What I noticed is that men love wood. Whether it be a beautiful walnut wall or a French post, the feel of the wood is very synonymous to a man’s understanding of a men’s lounge. But ultimately, I don’t work by any set standard or rules. If it feels right to both of us, then it’s right. PM: What touches make the room feel masculine? LM: It’s somewhat of a myth that man only like dark colours. Some men do feel comfortable in a darker room, but you’d be very surprised with how many men love the pastel colours. A men’s lounge isn’t defined by being dark and brown. It’s a matter the purpose of the room. Is it a wine room, a cigar lounge, a TV room, a car washing area in your garage? It’s more about the functionality of the space… his little escape. This is more important than the colour or theme. As women, we love our boudoirs and our closets, it’s very appealing to us. For a man, give him a room that incorporates his hobby and he’s in. PM: What are the most important elements of interior design for men? Are men more decisive than women when it comes to their personal spaces? LM: Every man and woman is different. However, I find that if a man is very involved in working on his house and we’re talking about his own room or space, then he will definitely know what he wants. Most men are very specific and decisive, which makes the design process very smooth.

PM: How do you make sure that the spaces you create are not only beautiful, but also functional and comfortable? LM: My philosophy is very simple: if it’s gorgeous and it doesn’t work, it doesn’t count. For us, it’s very important that we have stunning spaces but it’s equally important that they function according to clients’ wish lists. If my client walks into the room and it’s stunning but doesn’t work, then what was the point? It’s very important for a designer to pay equal attention to functionality and aesthetic. One can’t out rule the other and they have to balance out evenly. PM: Can you tell me about your favourite men’s lounge? What are you especially proud of? LM: One of my favourites was a lounge where we did black suede walls surrounded by walnut, chocolate brown suede strapping and beautiful black pinstripe velvet chairs. There was stunning mill work with layers of marble and vintage brass fixtures. So gorgeous! PM: Is there anything you would like to add? LM: At House of LMD, we’ve developed our very own signature style that people resonate with. We love both traditional and modern designs, and created a harmonious balance between the two. We call it “Sexy French”. Whether you want a modern design, or traditional French design, more eclectic, less eclectic, more cluttered, less cluttered – we can make this happen. To me it’s just a matter of what your comfort zone is. We truly focus on the feeling that a space evokes and produce whatever it that makes you feel good. preferredmagazine.ca

Sometimes, when the Universe is in sync, and the stars are aligned, everything you do just falls into place. And sometimes, you need to work hard to attain perfection! A Night at the Storehouse Enter the Guinness Storehouse, the quintessential museum for travellers to Dublin and for some their first Guinness Pint is tasted here. In the Centre of the main floor, you’ll see encased, a copy of the 9,000-year lease that Arthur Guinness signed on the brewery at St James’s Gate. Look up and you’ll see various glass panels staggered all the way up. You, ladies and gentlemen, are standing in the middle of the largest Guinness pint glass and it’s pretty cool. Travel up to the Gravity Bar on the 7th Floor and you are essentially on the “head” of the pint. The 360-degree panoramic view is spectacular, whether at night or during the day, you are looking out from the second highest building no skyscrapers here. I was lucky to experience both vJews during my trip to the Guinness Storehouse and as you can see, it was indeed spectacular.

Renowned interior designer Graham O’Donnell, transformed the space at the Gravity Bar that allowed for play, rest and the variations in between. He incorporated artifacts from the brewery, its archive, and Irish artisans. It has been suggested that you can survive by only drinking Guinness, unfortunately, this is not true. What better way to experience your meal, made using local ingredients, than to have it created by Guinness Storehouse Executive Chef Justin O’Connor. An interesting side note, Chef O’Connor previously worked at the King Edward Hotel in Toronto under Chef John Higgins who has appeared in Preferred Magazine as part of the Chopped Canada’s Gents piece - it’s a small world after all!

Don’t make assumptions - make agreements. “Common sense isn’t that common.” The truth is that, what’s common sense to you may be totally different than what your partner thinks it is. So, don’t assume that people know what you’re talking about or asking for. THEY DON’T!! Everybody’s got their own set of filters they use to navigate life; and whatever they grow up with seems totally normal and right to them. One example is, the couple where in the wife’s family the man was in charge of emptying the garbage, and in the husband’s family the woman was in charge of looking after the kitchen. While she waits for him to take out the trash and he waits for her to, the kitchen garbage is overflowing and the two of them are always pissed off. They each assume that their partner would “just use common sense” and get with the program. A simple discussion and some clarity would totally change their relationship. I’m a huge believer in two things: Being Specific, and Being Explicit. If you make your communication and agreements this way, you cut through all the stuff you have floating through your mind at any given moment and get right to what each of you needs. It’s also a great idea to double check that you are both on the same page. Repeat what you think you heard - just like someone taking your order at the drive through. You can also ask them what they heard to make sure your message is coming across clearly. If it’s improved, then write it down so neither of you forget. 2. Keep your agreements OR renegotiate. Once you have an agreement then KEEP IT!! Nothing causes doubt and stress in a relationship like broken agreements. If you can’t keep your agreement, then let the other person know as soon as you realize there’s going to be a problem. By the way, there is no agreement too small to honor. This goes for being on time or remembering to pick up milk at the store. It doesn’t matter if you promised to drop off her dry cleaning or if you say you will be home at 6:00, there’s a huge difference between 5:55 and 6:05.
3. Own it. Some people still have the old beliefs that saying sorry makes you look weak. This is the exact opposite from the truth. People respect people who have the backbone to take responsibility for their actions, and how those actions affect others. You look weak and scared (or arrogant and stubborn) when you DON’T apologize appropriately. This makes you very hard to get along with. If I step on your toes while trying to give you a gift, my intention is to do something nice - but the result is that I hurt you. That deserves an apology even if I didn’t mean to do it. The thing about giving a great apology is that timing is everything. A lot of people try to explain what happened while they apologize (or worse, INSTEAD of apologizing). This comes across like you’re justifying it or trying to weasel your way out of taking responsibility. (And DEFINITELY don’t try to make it their fault! Then you look like a complete jerk.) The point of apologizing is to acknowledge that your actions hurt the other person in some way and taking responsibility for that. If they ask for more information, then it’s ok to give it. Or you can explain things later (with their permission). But in most cases, just say “I’m so sorry for hurting you ....” And then SHUT UP! 4. Forgive or get out. Life’s too short to hold a grudge. Especially toward someone you’re supposed to be in love with. No one enters a relationship so they can be miserable (or to make the other person miserable). But a lot of times that’s exactly what ends up happening because you can’t or won’t forgive. Everyone makes mistakes and, even in healthy relationships, people hurt each other (mostly by accident). Remembering this and forgiving as soon as you can takes YOU off the hook of having to haul around all that resentment. You will enjoy your relationship more and you and your partner will feel closer. Of course, you’re human. Sometimes the hurt is so deep you can’t get to a place of forgiveness. Even if you can forgive, in some cases your partner’s actions have impacted the overall health of the relationship (especially if the same thing keeps happening). With either scenario, you need to call it for what it is and have the balls to pull the plug. It can be hard and even scary, but you’ll be doing yourself and your partner a huge favor. Don’t torture yourself by staying in a relationship where you’re resentful or don’t respect the other person. Give yourself (and them) the chance to be happy by yourself or with someone new. KELLY DERRICKSON’S I AM By: James Chittenden
Kelly Derrickson’s music packs power. You might expect that from a singer whose father is Grand Chief Ronald Derrickson. He is a famous tribal leader who has been elected chief of the Westbank First Nation six times, and is also a successful entrepreneur. She credits him as a best friend and soulmate, characterizing him as a fountain of knowledge and, “…everything a man should be”. She goes on to describe both him and herself as coming from a long bloodline of activists, concerned for the rights of Canada’s indigenous peoples and the land that they come from. She describes her newest album I AM as controversial, one that will no doubt, “…piss a few people off”. But that’s ok, she adds, as “… it wouldn’t be the first time” for that. The songs of I AM are indeed heavy with emotional content. I AM (Mother Nature) is a celebration of both womanhood and nature in ideal form, when not sullied by the greed, lies and pollution of others. Suicide Song is another example, exploring the lonely despair of young individual native men and women, but ends with, “take my hand…let’s circle around the fire”. Suicide Song was co-written with her father, Grand Chief Ronald Derrickson.

When asked about her greatest victory as an artist, she answered with a story of a suicidal man who contacted her on Facebook. He cited his experience viewing a video of Idle No More as a turning point, helping him to change his mind about ending his own life. While she has won accolades and awards from a variety of country music and Native American music associations, she takes pride in connecting with people. “What is the point…” she asks, “…if I’m not helping my people?” While the lyrics and sheer delivery do convey raw emotion, the music itself is a warm, folksy cadence of classically feminine country music. Kelly is a country artist and cites many influences, first and foremost her father. Other influences include Miranda Lambert, Carrie Underwood and Shania Twain. Her music celebrates land and nature, and also portrays the realities of life in broken families and abusive relationships. If good country music connects through cinematic energy and authenticity of experience, devoted fans would agree that her work is authentic. But don’t take our word for it. CANADA 150 STARTS WITH A TRIP TO THE VICTORIA WHISKY FESTIVAL By: Gerlad Glavota
This years visit to the Victoria Whisky Festival began with Canadian Whisky and Spirits. Just after arriving, I received a phone call from Davin asking if I would like to join him and a few others on a distillery visit. So we were off to visit de Vine Wines & Spirits. Looking around at the landscape with Mt. Baker in Washington State, and the Gulf and San Juan Islands in the distance, one could help but admire the beauty. Purchased back in 2007 and farmed organically since then, the vineyard was to see their Certified Organic status in 2016. Around 2012, Ken Winchester signed on as Wine Maker and Master Distiller. While speaking with Ken, I was fascinated to learn that he had spent some time honing host craft at the Bruichladdich distillery - Chip Tate, founder, and formerly of the highly-Awarded Balcones Distilling had done the same - some great results out there. I’ll see if I can provide some more information in the future on this program. The distillery began making a strawberry vodka in 2015 using solely organic Saanich Peninsula strawberries, forward just under a year and de Vine Spirits has created ten unique products which includes Vin Gin, New Tom, Genever, Moderna-Bittersweet Vermouth, Honey Shine, Black Bear, Pomme, and Black Ram. A 650-litre German Pot Still which has been named Brunhilde carries out the workload in the production of the spirit. One of the spirits we tasted was The Glen Saanich (45% abv) aged for about 12-18 months, with a nose of pine forest and nutty, there was a bit of spice together with some caramel and tropical fruit in the back. It was an enjoyable time in the tasting room with all the various sample which I was distracted by. A fine example of the craft movement in Victoria and can’t wait to see how the spirits develop further next year. At the Canadian press preview, we were treated to the forthcoming limited edition whiskeys from the Hiram Walker & Sons Distillieries Master Blender, Dr. Don Livermore. The whiskeys will be from a collection called the Northern Border Collection with a release later this year in the fall. The collection includes: Lot No 40, 12 year old Cask Strength (53.1% abv); Gooderham & Worts Little Trinity, 17 year old Three Grain Blend (45% abv); Pike Creek, 21 year old Single Malt Cask Finish; J.P. Wiser’s, 35 year old (50% ABV). The following evening began with a great speech from Lew Bryson and ended with Masterson’s 10 Batch PSA3 being named the 2017 Canadian

Whisky of the Year. I asked Davin De Kergommeaux founder of the awards for a comment on the awards and Canadian Whisky: The Canadian Whisky Awards bring the industry together for an evening to celebrate all that is great about Canadian whisky. Each year more new connoisseur whiskies are entered and each year the competition is very tight. The growing success of the Canadian Whisky Awards is very gratifying; this year we had more entries than ever. It is encouraging to see the quality of Canadian whisky overall increasing at the high end. In Canada’s 150th year, the future looks bright, as Canadian whisky is recognized more and more globally as one of the premiere whisky styles. Many of the brands are releasing new whiskies to celebrate Canada 150. At the same time, it is important to remember that Canadians have been making whisky since long before Canada was a country, so we can say Canada 150, whisky 200+. The festival, which sells out every year, and its Master Classes together with the main event did not disappoint. As I commented last year, the range of whiskeys that are available out west are phenomenal and hopefully if the LCBO will open the market for whiskey they do not wish to stock to be done so by private establishments. It would be phenomenal to be able to purchase Scotch Malt Whisky Society bottles in Toronto.
WHISKEY
The Laphroaig Select (40% abv) is the latest entry to come out of the Laphroaig distillery. It is said that the casks selected are from the core rage - the Quarter Cask, Px Cask, Triple Wood and the Ten Year Old - with a final maturation in new American Oak casks. When I first smelled I did not get the usual Lagphroaig smell that you would get in the 10 year old, It seemed lighter, you get a hint of banana The taste was of a light peat (smokiness) a little cleaner, a bit of salt but overall there was a sort of sweetness mixed together with a light spice (nice peppery note) well into the finish. (LBCO $77.95) The Glenmorangie Bacalta (46% abv) is the eighth in it’s Private Editiion for 2017. It is stated that it has been created from Glenmorangie first matured in former bourbon casks, then extra-matured in bespoke casks baked under the sun which once contained Malmsey Madeira. There’s no denying that I’m a fan of this release, coming to Ontario as early as May, with it’s sweet and honey notes on the nose with apricot and a chocolate note. The taste had the honey continue to my tongue with baked deeper fruits now, some tanginess, caramelized orange, creamy rich chocolate (fudge) a hint of mint at the back all leading into the finish. (LCBO estimated at $180.00). The Angels’ Portion - A Clergyman’s Whisky Narrative (351 Pages) is the first of two books (the second is Volume II) by Reverend Christopher I. Thoma. Yes, my first review of a book and this one reviews whiskeys in its own unique way. The preface details the approach, one that uses various characters some are biblical referenced, some fictional and others appear to involve situations that have occurred. One of my favorites is when his three year old daughter, Evelyn, asks him to “play the Tintobell song.” He does not have the song, but after a bit of back and forth and convinced he does, what is Evelyn to do but sing ... “Tintobell’s in the paradise city where the gwass is gween and the nose is runny. O wone you pwease take me home, yeah.” Although this is just a bit of the review, what followed was just as funny and lead into his recollection of a review of the Bunnahabhain 12 year old and then the proper way to pronounce it, apparently the Scots pronounce it “Ben-arvin.” I can’t wait to read Volume II. I was lucky to find these books, actually through twitter since Reverend Thoma sent them to me for being his 1,000th follower and I am grateful for the gesture but more so for the stories he shared. After all, I’ve said it before that “whisky is a social thing” and without people and without stories, it’s not fun. This has made it a bit more fun reminiscing about whiskeys I’ve tried.

It was not long before our conversation focused on our experiences with vintage cigars, specifically with aging tubos cigars. It was at that precise moment, in the beginning of the Quai D’Orsay Gala that I knew this would be the cigar and story I would share with our readers. I realized that this topic was something not a lot of people had good insights on and misdirected one could easily miss another great vintage smoke. There is much debate online surrounding aging tubos cigars and you will find opinions stretching far and wide. Some discuss mold, while others criticize the longer aging process. It is always good to remember great things can come to those who wait. The short answer to this is selecting the right cigar and ensuring the right aging conditions. I like to start with a medium to full body cigar as I prefer how they age. Again, that is a personal preference and necessarily a rule.
This is the largest international event with enthusiasts from over 50 countries celebrating some of the best tobacco in the world. Those fortunate enough to attend, they have the privilege and honor to sample featured cigars aimed to be released two years from now. From royalty to celebrities this festival is well supported and caterers to the who’s who of the cigar world. Aside from the Gala dinners, one of the highlights is the auction of prized humidors. Typically, they range from $80,000 to $500,000 euros. They hold exceptionally rare cigars and are extremely well crafted. Antonio came back from one of his personal lockers in Havana and rediscovered a collection of Hoyo De Monterey Expicure No. 2 he has been aging since 2006. After he handed me one, we opened it and enjoyed the complex aroma that had developed in this eleven-year-old cigar. The main reason was because this cigar was a tubos (tubes in Spanish). After ten years of proper aging in the right conditions, not only has this cigar matured in flavor, but the aroma was exceptional. preferredmagazine.ca

As with all vintage cigars it is advisable to lower your humidity. Sadly, I continuously hear people mumble the magic numbers 70/70 and I have no clue why and when or where these numbers originated. Most of them maintain bad humidors and do not even know how to properly calibrate their hygrometers. I do not agree. The 70°F probably originated with some ‘expert’ believing beetle eggs do not hatch below 70°F, therefore they should be stored below that temperature. This logic somehow was also carried forward to aging cigars. From my experience and from trial and error, I have found that 65RH seems to be a decent overall humidity level to age cigars in. The reason for recapping this is too much humidity can adversely affect your cigars especially if they are in tubes. I recently read someone stating they take the cigars out of tubes for a week and then put them back in to age. As much as experiences vary and I am by no means the final word on the subject, if you do this and add moisture to the cigar, you are more likely to encounter mold than if you didn’t. This may all seem overly complex, but as I am about to share with you, when done right, the experience can be exceptional. This Hoyo de Monterey was one of those examples. The name Hoyo de Monterey translates roughly as ‘the valley of Monterey’, which is a particularly fertile area of the land in the ‘Vuelta Abajo’ region nestled in the southern part of the Organos Mountains. Cigar Aficionado called this place the land of the world’s best cigar leaves. In this case, it is hard to argue their point. When I first lit the cigar, I was a little concerned that it may not pack as much of a punch as I desired. I found myself thinking it may have been better selected as a decent afternoon smoke and hardly worthy of a review. Without question the sandy aroma of cedar was beautiful, but if I am honest I was a little uncertain about how this would all unfold. Once engaged in the smoke, I tasted subtle notes of cedar and cinnamon. My concern quickly faded after an inch or so. I was particularly 80

struck with the voluminous smoke given off by each draw. The burn was even and the flavor evolved ever so nicely. Maturing inch by inch with notes of rich spicy cedar, coffee and hints of coco. The final half of this cigar was exceptional and very complex. It was a great experience right down to the nub. I found it hard to put down and I savored every moment of this fine smoke. I found myself standing in the middle of the humidor we had carefully crafted with imported Spanish cedar. The cedar smell was rich and the cigar was even richer. With Cigar Company + Gentleman’s Barbershop opening in Markham this spring, I had a lot to reflect on and celebrate. The truth is I am very excited about curating the vintage humidor that will be in the shop and awarding fellow lovers of the leaf a true vintage cigar experience.
