Limerick and University Hospitals Limerick. Professor Coffey is a general and colorectal surgeon with a special interest in minimally invasive (keyhole) surgery. His clinical focus is in colorectal cancer, inflammatory bowel disease (ulcerative colitis and Crohn’s disease), pelvic floor abnormalities. He is the recipient of the international James IV Travelling Fellowship Award which is arguably one of the most prestigious international surgical awards. This was for his work in colorectal cancer surgery and his scientific research in the field. In 2012 he was recipient of the Cleveland Clinic Distinguished Alumnus award for which he delivered an invited lecture. He is also the recipient of over 45 national and international awards, has over 180 publications and has delivered several named national and international lectures (Millin lecture, 2012, Sir Thomas Myles Lecture 2011, inaugural Young Invertigator Lecture at the Surgical Infection Society of Europe). After initially training in Cork University Hospital, where he received a PhD for work on cancer growth, he then trained in The Mater Misericordiae Hospital, St.Vincent’s University Hospital and finally completed a fellowship in colorectal surgery at the Cleveland Clinic. He has delivered invited lectures in The Johns Hopkins, Memorial Sloan Kettering, The Cleveland Clinic and The European Institute of Oncology. Dr Diane Cooper Coordinator and Lecturer BSc Sports Science AIT I am a clinical exercise physiologist with a degree in sports science and a PhD in exercise physiology and metabolism from DCU. My PhD research focused on developing the optimal lifestyle intervention for weight loss and health, and I continue to be an active researcher in this area. I coordinate and lecture on the BSc Sports Science with Exercise Physiology in Athlone Institute of Technology and have done since September 2011. I lecture predominantly in the areas of exercise physiology and metabolism, and clinical exercise physiology, and I supervise masters and PhD research in these areas. In 2015 I was invited to be part of a metabolic health research team working on European Space Agency funded bed rest studies. Our research focuses on investigating the impact of severe physical inactivity on physical and metabolic health of participants, and this work is ongoing. I have been a partner in True Fitness since 2008 where I predominantly deliver our True Transformation healthy living programme, deliver a range of health and fitness workshops, conduct health related research, and oversee our sports science clinic. My spare time is spent training for ultra-endurance events to raise funds for Laois Hospice. Two of our most recent events included kayaking around Ireland (1,000 miles – 14 to 17 hours per day for 40 days) in July 2014, and cycling around Ireland (2,100km – 15 hours per day for 7 days) in August 2015. Investing in a Sustainable Future; In his role as R&D Manager for Monaghan Biosciences, Dr Gaffney develops and implements the R&D strategy for the industrial enzyme development company. He manages a team of more than 20 multidisciplinary research and development scientists across Fermentation & Process Technology, Applications Development, Molecular Biology and Analytical Development groups. Monaghan Biosciences has recently been awarded two multimillion euro projects under the H2020 funded Bio-based Industries Joint Undertaking. Dermot Brabazon – Director of Advanced Processing Technology Research Centre and Professor – Dublin City University Dermot Brabazon received his BEng (Mechanical Engineering) and PhD (Materials Science) from University College Dublin. From 1995 to 2000 he worked with Materials Ireland, a state materials science research centre. He was appointed as a lecturer in the School of Mechanical and Manufacturing Engineering at Dublin City University (DCU) at the start of 2000, promoted to Senior Lecturer in 2006, Deputy Head of School in 2007, to Associate Dean for Research in 2009, and to Professor in 2014. In recognition of his academic achievements and contributions to development of engineering technologies, he was conferred with the President’s award for Research in 2009 and was appointed as Fellow of the Institute of Mechanical Engineering in 2015. He is currently Director for the Advanced Processing Technology Research Centre at DCU. He has published over 200 internationally peer reviewed papers and supervised more than 30 researchers to project completion. His research is focused in the areas of materials and processing technologies and based on the pillars of Near Net Shape Forming, Laser Processing and Separation Science technologies. Dr Mark Auty, Senior Researcher Teagasc Ireland Mark has an honours degree in Microbiology from Surrey and a PhD in food chemistry from UCC. He has published over 60 peer reviewed articles and 4 book chapters. Research interests are centred on structure-function relationships in food at the nano/micro scale. Examples of previous research include understanding creaminess perception and food nanotechnology. He set up and manages the National Food Imaging Centre based at Moorepark, the world’s first publically funded integrated imaging centre dedicated to agri-food. On-going research projects include nano-structuring of food emulsions via high pressure homogenization and interfacial design, engineering of milk proteins with defined heat stability and powder reconstitution, and applying atomic force microscopy techniques to food products. In addition to research, Dr Auty works closely with the Irish dairy and infant milk formula industry on various collaborative projects. He was recently awarded a large (€2.6m) collaborative research project from the Department of Agriculture, Food and the Marine to develop the next generation of high protein powders.

He has worked as a food technologist and process/product development scientist for the processed foods sector in the 1990’s as well as more recently a product development consultant to the dairy, meat and beverage industries. During this time Mark has been involved in compiling hundreds of R&D tax credit claims and qualifying over 1,000 projects. This includes compiling and defending a number of the largest R&D tax credit claims made in the country to date. Noeleen McDonald (PhD, B.Ag.Sc) has been a soil researcher with the Agricultural Catchment Programme for the last 3 years. Where her role is to provide an enhanced understanding of the processes involved that are pivotal in assessing the efficacy of the nitrates directive measures, and improve the understanding of the linkages between nutrient sources and their availability for transport and loss to water. Noeleen is responsible for overseeing the collection, monitoring and quantifying of nitrogen and phosphorus dynamics on farms within the six catchments. Previous to this role her PhD was also with Teagasc, which focused on evaluating soil tests to predict the nitrogen supply in Irish grassland soils. Before her research career, Noeleen worked in the Teagasc advisory service for 2 years as a rural environmental protection scheme and nitrates derogation planner. In 2009 he took up an appointment jointly between the School of Engineering and the Tyndall National Institute as a Stokes Professor, continuing his research into the preparation of III-N materials and devices. Prof. Parbrook is the author / co-author of more than 150 publications in international journals and of around 10 patents. He is a member of the International Advisory Committee for the International Workshop on Nitride Semiconductors conference series. In 2011 he was co-chair of the International Conference on Nitride Semiconductors (ICNS) held in Glasgow, Scotland.
