Driving Sustainability through Collaboration Firstly, thanks to everyone that made last year’s event such a success. Over 500 delegates from the food and beverage manufacturing, retail, foodservice and agriculture industry across the UK and abroad attended the inaugural Sustainable Food & Beverage Manufacturing Conference & Exhibition, which was held at the MotorCycle Museum, Birmingham . The speakers at the Conference were carefully selected from senior management within the food and drink industry, both at home and abroad, who had a successful track record of delivering quantifiable eco results in sustainable food and beverage manufacturing and throughout the supply chain. The audience were treated to a day of compelling presentations and discussions with leading companies such Nestle, Mondelez, ABP Food Group, William Jackson Food Group, First Milk, Tesco, Asda etc. The 2015 event is being held once again in the Motorcycle Museum in Birmingham. Due to the exceptional response to the 2014 event and the demand for an annual forum to discuss sustainability issues through the entire food chain, it was decided to expand the event with so that stakeholders from the entire food chain including food and beverage manufactures, retailers, food service companies, agriculture producers are able to share their knowledge on how to create a sustainable food and beverage industry.

Aurelie Oberti Cocoa Sustainability Coordinator Barry Callebaut Aurelie Manages cocoa sustainability projects for Barry Callebaut for key origin countries, with responsibilities encompassing design, coordination, implementation, fundraising and budgeting.She is responsible for rolling out Barry Callebaut’s global sustainability strategy by driving projects across the different origins: e.g. sustainable certification for smallholder cooperatives in West Africa, sustainable agriculture program in Brazil.
Andrew Edlin Group Environment and Sustainability Director – 2 Sisters Food Group Andrew Edlin is Sustainability Director for 2 Sisters Food Group, a Birmingham based multi category international food manufacturer, the third largest in the UK. With two decades of experience in CSR, sustainability and business ethics, he worked globally for FTSE listed Utility, Manufacturing and Support Services businesses before joining the food industry in 2012. Most recently he has been responsible for leading the development of the company’s sustainability plan “Feeding Our Future”, launched in 2015, and an innovative internal and external crowdsourcing approach to stakeholder engagement and dialogue.
Gavin Milligan Group Sustainability Director William Jackson Food Group Gavin Milligan holds a PhD from the University of London and worked for 9 years in the chemical industry before moving to the food sector. He has worked for a number of businesses ranging from SMEs to blue chip corporates in supply chain, operations and commercial roles and is currently Group Sustainability Director for the William Jackson Food Group. He is a
former member of the sustainability steering group of the FDF, sits on the steering group of WRAP’s Product Sustainability Forum and the consumer sustainable lifestyles engagement working group at IGD, is a committee member of the RSC’s agriculture interest group and chairs the Agri-food member interest group at Campden BRI.
Darran Messem Managing Director – Carbon Trust – CHAIRMAN Darran Messem leads the Carbon Trust’s pioneering certification team, and leads the Carbon Trust’s international development. Darran’s international experience includes being a Director of companies in Canada, the US, China and South Africa, and the UK. Before joining the Carbon Trust in 2010 Darran was Vice President Fuel Development for Royal Dutch Shell, and General Manager Market Development for British Airways. Darran graduated with a First in Geography from Cambridge University and holds a post-graduate diploma in Marketing. Beyond the Carbon Trust, Darran is Chairman of the Low Carbon Vehicle Partnership, a public-private partnership sponsored by the UK Department for Transport, and he is a Fellow of the Chartered Institute of Marketing and a Fellow of the Royal Geographical Society.
Tom Cumberlege Senior Consultant Carbon Trust Tom is an experienced consultant helping businesses to tackle diverse sustainability issues across a range of sectors such as agriculture, FMCG, financial services and luxury goods. His advice enables clients to realise low carbon investment opportunities across their value chains, conduct product footprinting projects and supply chain engagement and financing solutions. He has also developed guidance for the GHG Protocol’s Scope 3 Standard on behalf of the World Resources Institute.
Louise Nicholls – Head Of Responsible Sourcing, Food Plan A and Packaging Marks & Spencer Part of the small team that developed the M&S groundbreaking Plan A, a 100 point, 5 year plan to address a wide range of environmental and social issues. Worked for Marks and Spencer for over 20 years, initially as a Food Technologist, and then in IT and HR before developing and managing M&S leading Ethical trade programme 10 years ago. Gerard Cleary Chief Finacial Officer Glenisk A native of Killeigh, Co Offaly, Ger Cleary is a Director of Glenisk, Ireland’s largest yogurt maker. Ger has worked full time with the family business for the past 20 years. Ger is a former finalist of the EY Entrepreneur of the Year programme; in 2007 & 2014, he was selected as one of eight finalists in the Industry category, in recognition of his contribution to the growth of Glenisk. He speaks frequently at events in Ireland and overseas, sharing the story of Glenisk’s success and his insights on business and innovation. He is also a Member of Council of the Small Firms Association & Microfinance Ireland. A graduate of University College, Dublin Ger holds a Bachelor of Commerce honours degree.
Cheryl Robinson Sustainability Associate Asda Cheryl Robinson is the KTP Associate and Sustainability Assistant for Asda Stores Ltd. and the University of Leeds. Her work primarily consists of customer insight and consumer behaviour change. On a quarterly basis she surveys 20,000 of Asda’s customers to gain quality, primary data that help explain how everyday consumers think and act in terms of sustainability. She is also responsible for a joint project between Asda and the University of Leeds which aims to help consumers all across the UK reduce household food waste. This project consists of designing behaviour change interventions, conducting them and measuring their impact through data collection and analysis. She is currently working on the second round of interventions to take place in August 2015. A key aspect of this work is engaging with customers to both ensure the project’s success and to continually improve Asda’s green performance.
Cheryl completed her MSC Sustainability (Environmental Consultancy and Project Management) in 2014 at the University of Leeds. For her dissertation she designed a behaviour change intervention for Asda; for which she received the MSC Sally MacGill Memorial Prize.
Sarah Tulej Food and sustainable business advisor Forum for the Future I work in Forum’s sustainable business and food teams. A lot of my time is spent creating ambitious sustainability strategies with companies in the food, apparel and retail sectors. I deliver Forum’s work on sustainability and brands, including running a specialist network for major consumer brands, exploring how brands create demand for more sustainable products, services and lifestyles. I’m passionate about creating a truly sustainable food system and have worked on projects exploring the future of grain (and our food supply!), how producers in developing countries can get more value for what they make, and the future of retail. I manage Forum’s relationships with Marks and Spencer, PepsiCo, MAS Holdings and Kyocera. I’m an experienced facilitator, researcher and futurist and love putting these skills to work to help organisations spot opportunities and create future-proof strategies. I have also lived and worked in Mumbai, and am part of ‘team India’ at Forum, putting sustainability on the agenda of Indian businesses. Before working here I completed Forum’s MA in Leadership for Sustainable Development, an intensive programme combining academic study, leadership training and business experience (including stints at TUI Travel, central government and Delhaize Group). Before becoming a sustainability thoroughbred (!) I worked in the world of urban regeneration, working for the government in situations that included digging bore holes in the Liverpool Docks to meeting Boris’s team at City Hall to puzzle over housing policy. Bore holes aside, I realised my heart lay in sustainability and went on to join the Forum team in 2012.
Daniel Crossley Executive Director Food Ethics Council Dan Crossley is Executive Director at the Food Ethics Council, a charity that works with businesses, government and civil society to address ethical concerns at the heart of decision-making about food and farming. Dan has worked on food sustainability issues for over a decade. He was formerly acting Head of Food at Forum for the Future, where he advised many of the world’s leading food businesses and Government, and also previously worked for a food manufacturing company. Dan was co-chair of the consumer behaviour working group of Defra’s Green Food Project and chaired the Sustainable Food Supply
Chain Commission. Dan is a member of the Food Climate Research Network Advisory Board.
Duncan Williamson Food Policy Manager WWF UK Duncan has been working internationally in the field of sustainable systems for 20 years. For the last seven, he has been leading WWF UK’s food work while also leading the international WWF Network’s position on sustainable diets and coordinating its work on sustainable food security- which recently co-produced a report with the Food Ethics Council entitled: From Individual to Collective action; exploring the business cases for addressing sustainable food security. Duncan is the originator of WWF’s ongoing Livewell project, which demonstrates that a healthy diet can be sustainable. He is a Director at Eating Better, a cross sectorial coalition on NGOs working on meat consumption. Duncan sits on the Food Clime Research Network’s advisory board. Duncan has an MSC in Sustainable Environment Management and a BA Hons in Philosophy. He has lived and set up projects in Greece, Thailand and on the Galapagos.
Michael McDermott Corporate Sustainability Manager Warburtons As the corporate sustainability lead for Warburtons, Michael has responsibility for all aspects of the businesses sustainability programmes which focus on Carbon Management, Waste Management, Sustainable Supply, Health & Wellbeing and Community Investment. Originally training and qualifying as a Corporate lawyer, Michael has extensive experience of working at board level with a diverse range of internal and external stakeholders across private, public and third sectors. Michael sits on a number of national steering groups including the Food & Drink Sustainability Committee and Courtauld 2025 Development Steering Group. In 2015, one of Warburtons sustainability projects won the FDF Health & Wellbeing award for their National School Visitors education programme.
Andy Green Sustainability Sales Manager BM TRADA Andy Green is BM TRADA’s Sustainability Sales Manager and works extensively with clients on sustainability projects. Predominately Andy focuses on the food, home and personal care industries and has been instrumental in supporting the uptake of certified sustainable palm oil. Andy was central to

Speakers the development of BM TRADA’s Responsibly Sourced Scheme for Soy, Cocoa and Sugar and is passionate about finding an effective route to demonstrate sustainability on a range of products, whilst limiting the increase in auditing requirements. With an increasing demand for sustainability and traceability a number of IT platforms are developing to support these. These range from online claims platforms, trading platforms and ‘eye’ in the sky type mapping systems that plot forest cover loss and land use changes in agriculture. It is possible to develop a common approach to help supplement or in some cases replace the need for physical auditing. How can we meet the need for transparency and traceability whilst avoiding huge increases in costs and bureaucracy or should the need for traceability be questioned in the first place? Having studied Environment and Development Andy serves on the RSPO Communications and Claims Standing Committee and acted as technical facilitator for the RSPO during the supply chain certification standards review and Communications and Claims rules review. Andy is committed to the aims of sustainability standards, the benefits of independent certification and the need to ensure a harmonised approach to audit requirements. There is some misunderstanding regarding the accuracy and appropriate applications of both nutrition calculations and laboratory analysis. This presentation will explain how the strengths & weaknesses of both can be used to the advantage of the food manufacturer in order to ensure the greatest benefit and accuracy.
Dr. Kyle Crombie Head of Sustainability and ESOS Green Energy With a PhD in biomass pyrolysis for bioenergy and C sequestration as well as a Master’s degree in Chemistry with Environmental Chemistry (both from the University of Edinburgh), Dr Kyle Crombie has an excellent understanding of the growing need for renewable energy and maintain the environment. Dr Kyle Crombie currently leads the Sustainability and ESOS department at Green Energy Consulting – a leading independent UK commercial energy consultancy.
Professor Saphwan Al-Assaf Professor at the Hydrocolloids Research Centre at the University of Chester Professor Saphwan Al-Assaf is the Director of the Hydrocolloids Research Centre at the University of Chester. He gained his PhD in 1997 from Salford University in the field of radiation and solution properties of hyaluronan and cross linked form (Hylan). Professor Al-Assaf has secured research funding from various industrial collaborators and has published more than 100 papers and holds ten patents. Professor Al-Assaf is a technical Expert
and consultant for the International Atomic Energy Agency in his area of expertise and sits on the editorial board of the international Journal of Food Science & Technology and the International Journal of Biological Macromolecules. His current research interests mainly focus on the structure-function relationship of hydrocolloids, molecular assemblies, formulations, emulsion technology and encapsulation.
Liam Dowd Director of Strategy and Marketing Ethical Corporation I currently lead Ethical Corporation’s strategy and marketing across all divisions (magazine, reports, conferences, marketing). I build strategy and implement systems to promote Ethical Corporation as the global go-to-place for business intelligence on responsible business. Ethical Corporation’s mission is to help businesses around the globe do the right thing by their customers and the world. We believe this is not only how to guarantee a future for all, but makes good business sense. I’m also tasked with heading up the marketing and helping shape the strategy of Incite Group’s EMEA division. My move to Incite Group followed the merger of Useful Social Media and Incite MC. The Incite Group provides business intelligence to company’s looking to improve their customers’experience, either through; marketing – social media – customer service – communications or data analytics.
Steven Tompkins Senior Consultant ADAS UK Ltd Steven leads a team of consultants at ADAS who work with clients such as PepsiCo, M&S and SABMiller to help build sustainable raw material supply chains, which reduce risks to the business and create competitive advantage. His experience includes engaging with agricultural producers to identify risks and opportunities, setting company strategy on key sustainability issues and advising on compliance issues. Alongside work for commercial clients Steven provides policy advice and support to government bodies such as EFSA, European Union directorates, Environment Agency, and Defra.
Steve Barker – Head of Energy Efficiency & Environmental Care Programme, Siemens Steve is currently the head of the ‘energy efficiency and environmental Care’ programme in the Siemens “Industry Sector” business in the UK . Steve is a chartered engineer with over 25 years post graduate experience. After several year experience as a power engineer in both end users and OEMs, Steve joined Siemens in 1990. Steve was part of Lord Teverson’s inquiry into private sector energy management that was launched in parliament in March 2011. Steve is also a former chairman of an IEC international
standards committee and is the current chairman of the VSD group of the UK industry association Gambica – as well as being a member of the supervisory council for the energy services and technology association (ESTA). Steve is also a fellow of Lord Redesdale’s energy managers association (EMA). Over the last seven years, Steve has been responsible for developing the Siemens Industry Sector UK strategy for energy management across a vast range of products, solutions and services. Steve has also developed and deployed a number of positive cashflow finance models and energy performance contacts.
Paul Buckley MES Consultant Lighthouse Systems Paul has 30 years’ experience in Manufacturing, working for high quality Factory Automation and MES Suppliers. He has a detailed understanding of the Manufacturing Processes involved in Packaging, Canning (both 2 Piece and 3 Piece Cans) Food & Beverage, Glass, Battery Manufacturing and the Medical & Pharmaceutical industry. Having managed both the Commercial and MES Divisions in Wonderware UK for 5 years, he joined Lighthouse Systems, 7 years ago. Paul now has specific responsibilities in developing the Food & Beverage Sector, managing multinational/multisite companies with their application and use of Lighthouse’s Shopfloor-Online Software from raw materials to finished goods and all points in-between.
Emmanuel Audoin Project Manager Food Sustainability Biofuels at Bureau His job is to identify, benchmark and developp new food related certification or auditing/inspection services, to coordinate Bureau Veritas ressources and services on these new products (from sales to auditor’s qualification, and service delivery). Emmanuel has been working within Bureau Veritas France Food Department since 2010 as project Manager for new Agro related services (Biofuel, Palm Oil, Pesticides, Pest Control, Gluten Free…). Prior to working for BV, Emmanuel has worked for about 15 years in various fields related to agricultural business. He graduated as an engineer in agriculture.
Clare Brass Director SEED Foundation Royal College of Art Clare Brass, designer, helps drive the creation of positive social and environmental futures. She was Leader of Sustainability at Design Council before setting up SEED Foundation, exploring design-led

Speakers entrepreneurship. She is a skilled business coach, helping young entrepreneurs turn their concepts for sustainable businesses into credible enterprise propositions. Clare set up and is now Head of SustainRCA, a cross-departmental research centre for sustainability at the Royal College of Art, inspiring, encouraging and supporting students from all Schools – Design, Architecture, Communications, Materials and Art – to embrace sustainability in their work. Beyond the RCA, through mentoring, workshops and consultancy, Clare helps people use their creative skills to find innovative responses to social and environmental issues. Clare is a mentor for the Ellen MacArthur Foundation, and is Senior Design Tutor in IDE (Innovation Design Engineering) where she is responsible for guiding students in Sustainability and Enterprise.
Diane Stevenson Director of Sustainability CSC Sugar LLC Diane is a key player in changing the way the industry thinks about sustainable options for cane sugar up and down the supply chain. In her prior role at CSC as Director of Quality and Research and Development, she helped many large brands revise their specifications for color resulting in the uptake of more sustainable options for purchasers of liquid sugar in the US market. In her current role in Sustainability, as the Vice-Chair of Bonsucro and a member of Fairtrade International’s Product Advisory Council for cane sugar, Diane works to increase the supply of sustainability sourced sugar for the global market. CSC is a leading importer of raw sugar into the US from Mexico and Central and South America supplying US refiners and food processors. Diane holds a BS in Food Science from the University of Illinois, an MS in Food Science from Cornell, an MBA from the University of Connecticut and an MDiv from Yale University.
Mark Varney Director of Food FareShare Mark is Director of Food at FareShare and leads a team responsible for FareShare’s partnerships with companies in the UK food industry. FareShare is a unique charity fighting hunger and its underlying causes by redistributing surplus food to more than 2 000 local charities across the UK. By ensuring good food is not wasted, FareShare turns an environmental problem into a solution, helping to feed over 100 000 vulnerable people every day. He led the development and publication of the innovative FareShare Food Efficiency Framework which was launched earlier this year and has represented FareShare at a number of cross-industry working groups.
Dr. John Lever – Senior Lecturer in Sustainability - Strategy, Marketing & Economics at University of Huddersfield Over the last decade, John has worked in UK universities in Bristol, Cardiff and latterly Huddersfield. His research and teaching in this period has focused on sustainable communities and many aspects of the global food system, including farm animal welfare, halal and kosher meat markets and local food systems. He is joint author of the recently published book from Routledge: Halal Matters: Islam, politics and markets in global perspective (2015). Mark was previously Director of Sustainable Business at leading behaviour change agency Corporate Culture, and during 7 years of incredible growth he was Head of Commercial Relations (Food and Beverage) at The Fairtrade Foundation, leading Fairtrade’s engagement with manufacturers, brand owners and retailers in the UK food and beverage sector. Prior to that Mark spent the first 8 years of his career at Procter and Gamble.
Marco Cinelli PhD Researcher Warwick Manufacturing Group Marco Cinelli is a final year PhD researcher from WMG Department, University of Warwick (UK), with expertise in sustainability assessment, sustainable development and decision support, having studied and worked in these areas since 2005. He obtained his Bachelor degree in Environmental Sciences from Padua University (Italy) in 2008 and his International Master in Environmental Sciences with a major in Sustainable Development from Ca’ Foscari University in Venice (Italy) and Hiroshima University (Japan) in 2012. He then pursued his PhD in Engineering at the University of Warwick (UK) where he focused on the integration of sustainability assessment tools with decision support methods. This allowed developing in-depth understanding of the most appropriate strategies to implement sustainability in practice through efficient multidisciplinary networks and easily understandable models for the interested stakeholders. He structured and brings forward international collaborations with high profile experts in the areas of sustainability and decision aiding, among which the Sustainable Technology Division of the United States Environmental Protection Agency in Cincinnati (USA), the sustainability and software consulting company GreenDelta in Berlin (Germany), the Laboratory of Intelligent Decision Support Systems of the Poznan University of Technology (Poland) and the Department of Logics in Uses, Social Sciences and Information Science of Telecome Bretagne University in Brest (France).
Adrian Rhodes Technical Director Byworth Boilers The MCPD is a proposed piece of environmental legislation intended to fill the gap between the Industrial Emissions Directive 2010/75/EU (the IED) and the “Eco Design” Directive 2009/125/EC. If it is passed into law it will apply to combustion plant rated between 1 MW and 50 MW thermal input. The proposed Directive places limits on the concentration levels of sulphur dioxide (SO2), oxides of nitrogen (NOX), and particulates in exhaust gases from affected plant. These Emissions Limit Values (ELV’s) vary according to the type of plant and the fuel used but the general aim is to reduce the background levels of these harmful substances. Furthermore it will be necessary to monitor (but not limit) carbon monoxide (CO).

He has over 100 international journal and conference publications and has three patents applications to his name in the medical and energy sectors. Aarti Krishnan PhD researcher University of Manchester I am currently pursuing my PhD (2013-2016) at the University of Manchester. Prior to my PhD I was a research associate (2010-2013) at Brooks World Poverty Institute at the University of Manchester on DFID funded project called ‘Capturing the Gains’ and the Sustainable Cocoa supply chain consortium, wherein I worked on building inclusive models to integrate smallholders and workers into mainstream supply networks, livelihood diversification strategies and food security, inclusive wealth measures, assets and also deconstructing impacts of climate variability/shocks on value chains, quantitatively and qualitatively, amongst other research. Between 2007-2010, I worked as a commodity analyst for a multinational trading organization. I was given the portfolio of oilseeds/oils and this gave me the opportunity to interact with a global network of stakeholders – from farmers at field level to retail houses and manufacturers in many countries. I also spent a year on carbon markets and climate based financial instruments including electricity futures and weather derivatives. I have an undergraduate degree in finance and masters in environmental management from the University of Manchester.
