Dawn Andersh
Dawn Andersh joined the Emporia Presbyterian Manor family in May as our new director of nursing. Dawn has been in long-term care for more than 20 years and says it was the residents she met while working as a certified nurse’s aide early in her career that inspired her to go into the field. Although she has only been at Emporia Presbyterian Manor for a few months, Dawn says the community has already made her feel at home.
I have several friends who like to knit. They create beautiful things through knitting. The churches I serve as a pastor Dinah Dutta make quilts that we send to Lutheran World Federation. They are distributed all over the world. Quilting requires choosing a fabric, cutting, piecing it together, and finally stitching and tying the quilt. I always wanted to learn to quilt. I could not find the time to meet groups when they met. Finally, I asked my church members who quilt, if they could give me a quilt to take home so that I can tie it. The quilting group from my church let me do that. I have to make marks on the fabric to tie the knots, slowly, carefully, I tie each knot. I learned patience and perseverance are very important to tying the knots. Well, where am I going with this?

Dawn has two children, one grandson (with another one on the way), two dogs and a cat. It’s always a good time to try something new and there’s never a bad time to explore a new recipe. Since September is SelfImprovement Month, our dining partner, Cura Hospitality, has provided us with a healthy recipe as part of their BeWell program.
For anyone wanting to eat healthier as part of our overall selfimprovement goals, give these N SUMMER SALAD recipes a try. Both are light on calories, but heavy in flavor. u

N SUMMER SALAD

Fresh Zucchini Fresh Yellow Squash Red Bell Peppers Green Bell Peppers 90/10 Olive Oil/Canola Blend Kosher Salt Ground Black Pepper Spring Mix Lettuce Fresh Cucumbers Grape Tomatoes Cannellini Beans
Cook
1.. Cut zucchini and yellow squash in half lengthwise. Cut peppers in half and remove white pith and seeds. Season with olive oil, salt, & pepper. Grill on medium high heat for 1 minute per side until char marks formed but still retain bright colors. 2. Cool grilled vegetables and then cut zucchini and yellow squash in 1/2" slices. Slice peppers into 1.5"x 1/4" strips. Place each vegetable in separate containers for service. Cool: Follow the appropriate cooling procedures and document on cooling record.

Fresh Peaches Apple Cider Vinegar Water 90/10 Olive Canola Blend Kosher Salt Fresh Basil

Combine
1. To Chiffonade Basil, place basil leaves on top of one another and repeat. Roll the leaves tightly into a bundle, julienne through revealing thin strands of basil. Set Aside. 2. Remove skin and pit from peaches and cut into 1/2" pieces. Chop fresh basil. 3. Place all ingredients except for olive oil in blender and puree on high speed until smooth. Reduce speed to low and slow add olive oil to emulsify.
4. Label, date, and store in a clean, sanitized, sealable container under refrigeration until needed for use.

Creating sew-less pillows Independent Living residents recently came together to create “sew-less” pillows. The activity was a fun project that resulted in something that each resident could then use for whatever they wanted, from napping to general décor. u

Emporia Presbyterian Manor shares customer service survey responses Emporia Presbyterian Manor continues to seek customer feedback through monthly telephone surveys. Each month, residents and their representatives are randomly selected to participate in telephone satisfaction surveys conducted by Pinnacle Quality Insight. The graphic highlights some of the survey results. All scores are given on a 5-point scale, with 5 being the highest score and 1 the lowest score. Between June 2021 and July 2022, Emporia Presbyterian Manor residents and their families gave the community high scores for providing safety and security, cleanliness and treating everyone with dignity and respect. “I appreciate their helpfulness,” said
one resident. “If you have question, they do everything they can to get an answer for you.” Another resident said he appreciates “the professionalism, the friendliness, the consistency of the food, and the strong nurses.” We greatly value the opinions of our
residents and their representatives about the care and services we provide, and we encourage them to participate honestly when contacted by Pinnacle Quality Insight. All state and federal confidentiality laws are met in Pinnacle’s service. u

Knitted together – continued from page 1 to my mind and reminds me that we are created by God beautifully and wonderfully, “For you created my inmost being; you knit me together in my mother's womb. I praise you because I am fearfully and wonderfully made; your works are wonderful; I know that full well (Psalm 139:14). As I write this note we have a difficult issue in front of us to process. Many young adults ask me to explain what is right, and what is wrong. I tell them I do not know what is right or wrong. I ask God to help me understand. Most importantly, as a Christian believer and an ordained pastor my

love, and forgiveness, we continue to knit together, make a new quilt, cutting, shaping, and tying ourselves and our communities in spite of all the confusion and chaos around us. understanding of Christianity and the faith I accepted through the baptism of water and the Holy Spirit is not about right or wrong. It is about following Jesus’ words, love your neighbor as yourself (Mark 12: 31), do unto others what you want them to do (Matthew 7:12). Therefore, knitted together in the image of God (Genesis 1:27), wrapped by His unconditional
