Changing courses Presbyterian Manor’s new chef switched career paths after he discovered cooking in college. When Saiket “Johnny” Patwary was a student at Emporia State University, he worked on campus as a dishwasher. One day, he came into the kitchen to find a counter covered in bread scraps. Patwary started to throw them away, but the chef stopped him. Those weren’t scraps, he said. He was about to make bread pudding. Patwary watched the chef concoct the rich dessert, then tasted it for the first time. As a Bangladesh native raised in Bahrain, Patwary was unfamiliar with most Western food before coming to the U.S. at age 19. But the more he watched the campus chefs at work, the more his interest in cooking grew. “I was telling everyone about that day,” he said. “I said, ‘I’m going to be like that guy.’ And he’s still my mentor.” Patwary graduated in 2006 with a degree in computer information systems. But after a one-year internship at Sprint in Kansas City, he CHEF, continued on page 2

Patwary comes to us from Friends University in Wichita, where he was a chef for two years. Before that, he spent several years back in the kitchen at ESU. Cooking for our residents isn’t all that different from cooking for students, he said, because he’s serving the same people every day. But instead of keeping up with the students’ favorite food trends
Patwary makes out the menus and then reviews them with Presbyterian Manor’s nutritionist and Atul Karki, dining services director. He appreciates having the freedom to try new things while doing his best to please as many diners as possible. “I feel like I’m still in a learning mode. Any chef should be, because someone else might have a better idea,” he said.
