Sending ‘Angels’ to the Good Samaritan Program Special angels will soon be adorning Christmas trees and holiday displays at every Presbyterian Manors of MidAmerica (PMMA) senior living community. The “angels” are paper ornaments that will arrive throughout the holiday season along with gifts to the annual Christmas Angel Appeal, which raises funds for the Good Samaritan Program for Benevolent Care. Donors who make gifts are asked to return paper Angel ornaments along with their gifts. The ornaments pay tribute to donors’ family members or friends and are displayed at PMMA communities designated by the donors. During the past two years, donors to the angel appeals have given more than $90,000 to the Good Samaritan Program. The program assists PMMA residents who have out-lived their financial resources through no fault of their own. Since PMMA began 66 years ago, no residents have been asked to leave because they exhausted their financial resources. Image of resident with July 4 decor wins award A portrait of Carolyn Chastain, a resident at Farmington Presbyterian Manor, won third place in Cape Girardeau’s Patriotic Photo Contest. The Patriotic Photo Contest is sponsored by Allen Laws Oliver Chapter of Sons of the American Revolution. Dianne Dickerson of Farmington took Carolyn’s picture amongst the patriotic floral arrangements Carolyn created around July Fourth in Farmington Presbyterian Manor’s courtyard. Bill Dickerson, also a resident at Presbyterian Manor, is Dianne’s father. The portrait of Carolyn was on display at the Cape Girardeau Public Library the month of September and then at the Art Council of Southeast Missouri Gallery during October. In November, the portrait is at Radiant Reflections Gallery in Cape Girardeau. — Special contributor Dianne Dickerson


Pumpkin donut tradition lives on

Amy McClure, director of dining services at Farmington Presbyterian Manor, may be a devoted pumpkin donut baker, but she’s also a master pie-maker.

Before pumpkin spice flooded our senses every fall, Amy McClure looked forward to her mother’s pumpkin donuts.

Once every fall, McClure’s mother would make dozens of the donuts for her dad and his coworkers at the lead mine. Every surface in the kitchen seemed to be covered in donuts. Her mother would roll out and fry the dough, and then it was young Amy’s job to roll them in sugar. Then they would load the treats into paper grocery bags for her dad to deliver. “It was a big thing that Jim would be bringing the donuts that day,” said McClure, director of dining services at Farmington Presbyterian Manor. Now, McClure’s family tradition lives on at Presbyterian Manor. For the last few years, she has made her mother’s pumpkin donut recipe with assisted living residents. McClure said she enjoys the opportunity for everyone to reminisce about holiday traditions and memories. After her father was laid off from the mine, McClure’s mother never made the donuts again. “I brought it up to her years back,” she said. “Mom dug out the recipe, and that got me doing it here.” Once the donuts have cooled, it’s time to cart them around Presbyterian Manor to share. “Whoever walks by me, I hand them a doughnut with a napkin,” McClure said. She also makes another family recipe, a pumpkin crumble dessert, for staff and residents to enjoy in the fall. Here are both recipes for you to try and enjoy.

Pumpkin Donuts Recipe courtesy of Amy McClure, dining services director

5 eggs, beaten 1 ½ cup of sugar 1/3 cup of oleo (margarine) or oil 1 can pumpkin (15 oz) 5 ½ cups flour 3 Tbsp baking powder 1 Tbsp pumpkin pie spice 1 ½ tsp salt Mix eggs and sugar until creamed. Then add oleo and pumpkin. Combine remaining dry items in another bowl. Slowly add dry mixture to egg mixture until all is combined. Refrigerate overnight The next day, roll 1/3 of the dough at a time and cut out doughnut shapes. Place in hot oil and turn until both sides are done.

Then roll in sugar mixture: ¾ cup sugar ½ tsp cinnamon ¼ tsp nutmeg

Pumpkin Crumb Dessert

2 cans pumpkin (15 oz.) 2 eggs 1 ½ cup brown sugar 1 heaping Tbsp of pumpkin pie spice 1 can of filled (evaporated) milk 1 butter cake mix 1 cup chopped pecans 2 sticks of butter Mix together pumpkin, eggs, sugar, and spice. Then add filled milk. Pour into greased 9x13 pan. Top pumpkin mixture with dry cake mix and pecans. Add butter, cut into slices, over the top of the cake mix. Bake at 350 degrees for 45-50 minutes.
