It always smells amazing when walking past SMOKE. on Cherry Street, so we decided to give it a try. I ordered the Monday Special (meatloaf), and the spicy blue cheese tomato bisque. Kenzi had the grilled sausage and pimento cheese board. It was all good, but my favorites were the bisque and the sausage. They also brought out a basket of housemade chips while we waited for our food. I would go again just for those chips.

Next, we stopped at Mi Cocina because I love their Mambo Taxi drink and Kenzi hadn’t had a chance to try it yet. It’s a frozen margarita with sangria swirled throughout. It was refreshing, tasted fantastic, and I’d say we got the most bang (or buzz) for our buck. The atmosphere was perfect for just relaxing at the bar and catching up on what had been going on in our lives. They also have fantastic Mexican food, but since we had already eaten, we stuck with just the drink this time.

Boomtown Tees is perfect for a T-shirt junkie. It’s a small shop, but it’s packed with an array of colorful shirts showing a lot of local love. And the service was great. I decided I wanted this cool raglan tee with an Art Deco print, but I couldn’t find it in my size. Travis immediately offered to print one for me in my size right there. I wound up finding my size and that wasn’t necessary, but that offer solidified some repeat business from me.

I never know how a show is going to go. I’d ask that same question of Tulsa. How is the show going to go? The audience controls that. You know, I’m getting older; I froze my eggs. I’ve been through a couple breakups. I’ve got a lot of anger, and a lot of new mistakes to talk about. I have family in Tulsa, but I don’t know if I’ve ever performed there. I’ll come in early and explore the city and explore the culture and try to incorporate some of that into the show.

I n my line of work, it’s about telling the truth and revealing your struggles in a comical way. I did a show on NBC [Whitney]. Being on television, there’s a lot of pressure. It got to me. I felt I was too thin, and I didn’t want to be a bad role model for girls. I made a conscious effort to put some weight on in defiance of this thin-obsessed culture.

veryone’s got their thing. My thing is, I’m a crazy dog E lady. For myriad reasons, I’ve started working with a lot of pit bull rescues. For every one pit bull saved, over 300 are euthanized. They are bred, then discarded. I have three pits, and two that I foster. There is an unbelievable number of dogs being euthanized, and it makes me crazy. I like to help people know more about the breed because pits are very misunderstood. There are 3 million dogs in shelters, so I encourage everyone to adopt. It feels like a manageable goal. When I go to a new town, I like “ I ONLY PUSH to go to the shelters AWAY THE PEOPLE and take pics of WHO ABANDON the dogs and help ME. WAIT…” spread awareness.

Talking with Shriners David May and Tommy Henshaw about the event is a bit of a circus itself. May is the circus office manager and Henshaw describes himself as the office’s “Jack-of-all-trades-master-of-none,” though May clarifies that Henshaw is the marketing director.
It’s a full three-ring circus, complete with lion tamers, big cats, high wire acts and death defying feats of skill. “And unlike some circuses, we still have elephants,” May brags. “We put together the best circus we can for the best price we can manage.”

This year the Akdar Shrine Circus promises to bring even more spectacles and amazing acts. “We have over 200 volunteers helping us make this a success,” says May. The internal units of the Shrine come together to make the circus happen every year. The Scooter Club handles tickets, including offering them for sale at Woodland Hills Mall and the Promenade. The Clown unit performs, mingles with the crowd, and offers picture buttons. The Dune Buggy unit works inside the ring managing elephant and pony rides for the children. The Mini Cars unit runs the spotlights. The Greeters provide the ushers.
The profits from Akdar Shrine Circus are used by the organization to help provide care to children in need of medical attention and care.
“The ladies help out as well. There’s face painting, balloons and novelty booths. All the help is purely volunteer. It’s all hands-on deck,” Henshaw says. “When we take that building over in February, we consider it our home. We make it as affordable as possible for families. And it is a family event. Lots of times we have grandpas who came when they were a kid bringing their grandkids to the circus.”
“The Shrine is a fraternity,” says Henshaw. “And the fraternity has a philanthropy. There are about 1,400 children from northeast Oklahoma who we sponsor to Shriner Hospitals where they can get a miracle regardless of their ability to pay. We have a transportation service and a telemedicine office so the children don’t have to travel for rechecks.”
It’s easy to see the amount of care and effort the Shriners put into the event and what an important fabric of the community the event has become. Many who could probably not afford to attend are able to, thanks the generosity of many members.

Just a simple drive through downtown Tulsa proves that this isn’t the same city that it used to be. So much development and growth has occurred that even visitors from bigger cities would be surprised to find such an energetic, thriving downtown scene here. And nowhere is this cosmopolitan vibe more present than in the shopping/multi-service retail center known as The Boxyard. Comprised entirely of shipping containers (39 in all), The Boxyard brings a new kind of aesthetic to downtown Tulsa. Conceptualized and owned by Tulsa local Casey Stowe, The Boxyard displays the kind of minimalistic, industrial chic that is usually only associated with larger metropolises like Denver or Austin. Stowe actually came up with the idea for The Boxyard while visiting London for the 2012 Olympics. “While I was in London, I would take the train to get around, and each day I would pass by this shipping container retail center,” says Stowe. “I was completely fascinated by it. When I got home, and people would ask me about the Olympics, I spent half my time talking about those shipping containers.” When the opportunity arose for Stowe and a few close business partners to develop a piece
of land, Stowe decided to replicate the design he had glimpsed in London. Two years later, in December 2016, The Boxyard had its grand opening. The stacked shipping containers form a two-story semi-circle around a center courtyard, and the containers house 20 independent, micro-crafted businesses — from coffee, candy, food, libations, and ice cream to clothing, gifts, toys, and locally made goods. There are also specialized services available, like a barbershop, foot and shoulder massage, and even a place to evaluate the quality of the tap water within your home. When selecting vendors for The Boxyard, Stowe had a certain feel that he was going for. “I wanted businesses owned by passionate people who were not only business owners, but also entrepreneurs. I wanted forwardthinking individuals who are just really, really into what they do. Carley Johnson, for example, owns one of our shops called My Modern Mess. She’s only 23 years old, but she’s so focused and excited about what she does that I knew I wanted to include her.” My Modern Mess is one of three women’s boutiques within The Boxyard, and it is certainly a great place to find a stunner of an outfit that no one else will have. And
the contemporary men’s clothing retailer, East + West, carries many items handmade in America, with other products coming from as far as Europe and Japan. They are also the only place in Tulsa to carry TOPO Designs — an ultra-exclusive backpack, bag, apparel, and accessories company out of Colorado. The STEMcell Science Shop is another entirely unique vendor within The Boxyard. Specializing in science, technology, engineering, and math (STEM), shoppers can find gadgets and gifts that will not be found anywhere else in Tulsa. Also opening in The Boxyard soon is WirWar, which is — are you ready for this — Tulsa’s first and only Belgian honky-tonk. Providing Belgian street food, beer, and hillbilly music, WirWar will bring a new kind of party to Tulsa. As if these business concepts aren’t enough Tulsa firsts, The Boxyard will also host Rose Rock Microcreamery. What is a Microcreamery, exactly? Prepare yourself — it’s small-batch ice cream made with 16 percent butterfat and less than 30 percent air, making for the most dense, creamiest ice cream you’ve ever tasted. With traditional as well as nontraditional flavors like lemongrass buttermilk and salted caramel, Tulsa will be screaming for Rose Rock ice cream.

Dwelling Spaces, previously located at 2nd and Detroit, has made its new home in The Boxyard as well. Dwelling Spaces offers a large assortment of locally made jewelry, apparel, accessories and other fun trinkets, as well as also housing local favorite coffee shop, Joebot’s. If you are looking for something stiffer than coffee, however, there is a high-end cocktail bar on The Boxyard’s second level called Open Container (which, incidentally, is also the best pun of the year). The bar itself is tiny — only one shipping container long. But there is an expansive deck patio just outside with an absolutely breathtaking view of the Tulsa skyline. Just across the way from Open Container is another expansive, open deck. “We plan to program out the second-floor deck with many nights of live, low key music,” says Stowe. “The Boxyard will also participate as a street party site during the larger Tulsa events like Blue Dome Festival and Tulsa Tough.”

With all of its incredible food, drink and tasty treat options set in such a stylish venue, The Boxyard will undoubtedly become the hot new place to meet up with friends once the weather turns warm. “One of the things I think we’ve done is created a place where Tulsans can sip a glass of wine while looking at the skyline and feel proud to be a Tulsan,” Stowe says. “I am so proud of all of our business owners working hard to make The Boxyard what it is. It’s certainly true if you consider all the trends that go back in time — 1950s-60s themed parties, the new ‘80s radio station for Green Country, Tulsa’s 1920s-themed Deco Ball and more. Perhaps it’s our fascination with art deco, our oil drilling heritage or our love of college football heroes, but Green Country loves its vintage and antique shops, which makes hunting for eclectic bargains a pleasure all throughout the area. How do these antique and vintage shop owners and sellers learn their stuff ? And how can you learn it too, if you want to get better at spotting high quality items before your fantasy appearance on PBS’ Antiques Roadshow? The answer is experience and study.

For nearly 60 years, Darryl Starbird’s National Rod & Custom Car Show has thrilled and awed automobile lovers from around the world. This year’s show, sponsored by 21R Youth Racing League, will welcome thousands of custom car enthusiasts and plenty of curiosity seekers into Expo Square for an already packed three-day line-up of fun and excitement. The car show has always had something for everyone to see. With over a thousand vehicles inside and many more expected
outside — weather permitting — automotive lovers can stroll through the exhibition, feasting their eyes for hours on some of the most beautiful, innovative and powerful cars ever built. Bryce Bledsoe, grandson of the founder, Darryl Starbird, and a huge fan himself of hot rods and custom cars, is fired up about this year’s show and all the events visitors can participate in. He says that people visiting for the first time are always surprised at the variation of automotive vehicles they’ll see.
INSPIRED BY NATURE, these beautiful, multi-purpose creations project earth, wind and fire through the use of color and shapes. They are designed to instill feelings of comfort, calm and harmony in both home and corporate settings. The artists of Tulsa Stained Glass have specially developed components, with over 45 combinations available, to help artists start their own unique creative journey. Garden Spirit Sculptures can be purchased online as a completed art piece, or in a kit to be completed in a live class experience at TSG studios, where customers can create their own garden sculpture.

“Most people who have never been to our show before are surprised by the entertainment. It’s a lot like going to the fair but the main attraction is, of course, cars,” Bledsoe says. “Our diverse vendors, the entertainment – everything, really – comes as a surprise to people that there are so many interesting things to do.” The best thing of all is that it’s all under one ticket price.” For example, since it’s offseason for bull riders, a bull riding competition that is free with an admission to the car show could potentially draw some big names in the rodeo and bull riding circuit, ready to strut their stuff. LJ Jenkins Bull Riding Tour is headlining the event. “Don’t hold me to it,” Bledsoe says, “but I’m told there could be some big names from PBR [Professional Bull Riders] because you’ve got some of them looking for venues around this time. It could be pretty exciting.” He’s also pumped about this year’s demolition derby Saturday night inside the Action Arena, an experience a lot of people have never seen in person. “So, we do two classes,” says Bledsoe. “One with the smaller cars and the other with the larger ones. We have eight or 10 cars. They just hit the heck out of each other until there’s a winner. It’s a mix of people from around here, Arkansas, Kansas, Missouri, all the neighboring states. It’s just another way for them to get out there and compete.” Other events expected to happen inside the Action Arena are a mini-bike drag as well as lawnmower races. For the second year in a row, the car show is throwing a party to coincide with the exhibition. The Rockin’ Billy Bash is back with more cool things to do in celebration of the custom car and hot rod culture. And this year, some pretty famous people are joining in.

Sass, curls, waist highs, red lipstick and tattoos will be on full display throughout the whole weekend. On the live stage, rock ‘n’ roll entertainment will be provided by Eddie Valen, Brian Lee Dunning, Kelli Lynn and the Skillet Lickers. For the dudes, a beard and mustache contest will feature four different classes: full beard, mustache, partial beard and free-style (whatever that may be). With two contests Saturday, some lucky guys will walk away as this year’s champions. All proceeds of the competition go to a cancer research fund in honor of custom car builder Bo Huff. “The beard contest always brings out some fun people who like to sport the beard,” Bledsoe says of one of his favorite parts of the weekend.
For owners of totally awesome cars who will not be able to show their car inside for the entire weekend, another cool aspect of the weekend is the Cool Car Corral. Anyone from anywhere who wants to drive their sweet ride to the event and participate by showing off its alterations can do so by cruising right into the outdoor showing area. “We know that not everybody has the time or the ability to stick around for the whole weekend,” he says. “So this way, people can come up to the show, and share what they’ve done with their car. There’s always a buzz when people show up with cool cars. We want to give people a chance to do so. Then, when they’re ready to leave, they can just drive off.” Those who participate and pay a flat fee get two weekend passes to the whole event.

Ever heard the expression, “Hitting too close to home?” Well, there’s no such thing as hitting too close to home when it comes to supporting local businesses. Making it a point to shop and eat at Green Country’s many locally-owned small businesses and restaurants isn’t just convenient. It’s actually a great way to support the local economy, develop Tulsa-area artists, have unique fun, and yes, even save money. Still, getting past the misconceptions people have about shopping local can be challenging. Many people expect to find the

cheapest deals and best quality at big box stores or national chain restaurants. There’s definitely an advantage in name recognition. After all, if you haven’t heard of Walmart or McDonalds, you might need to join the 21st century. But local shops have a lot of ways that they can outshine the big boys and keep you coming back for some of the best service, quality, fun and variety around. Here are several reasons why thinking small and shopping local might just be your next big thing to do in Green Country this year.
BETTER CUSTOMER SERVICE
Local businesses often rely heavily on serving their customers’ individual needs. Julee March, owner of Jules Boutique, an eclectic clothing shop in downtown Tulsa, says, “Local businesses can be more personalized, unique and customer friendly. We know your name after you have visited the store the second time. We will special order items in your size or color.”
BUILDS THE LOCAL ECONOMY
At Boomtown Tees, which offers Tulsa-themed t-shirts, souvenirs and custom designs, owner JoAnn Frizzell loves what small businesses do. “The country is basically run by small businesses,” she says. March agrees: “When many large corporations were leaving Tulsa, the economy didn’t dip as much as in many other states because of the many small businesses that were started,” she notes. “Tulsa has an entrepreneurial spirit that Tulsa should be proud of and support.”
LOCAL BUSINESSES SUPPORT EACH OTHER
It’s common for one local business to work with others, which ultimately keeps the area growing and benefits everyone. Bryan and Kimberly Winn, owners/operators of AJ’s Heavenly Pizza in Catoosa, which serves handcrafted pizza, sandwiches and salads, agree. “The money [customers spend] stays in the area, which benefits other business,” say the Winns. “From the local sign maker to the doughnut shop, everybody relies on the others to create a healthy community of stores.”
MAKES IT FUN TO GO OUT ON THE TOWN “Most of the small businesses in the Deco District consider themselves a friendly neighborhood,” says March. “Guests can visit neighbors to grab a bite to eat or drink, try on clothes, find unique gifts, tour awesome Art Deco buildings, run into friends and much more.”
This adds character to Green Country, says Frizzell. “All of us combined are within walking distance,” she says. “It adds a flavor to downtown Tulsa that hasn’t been here before.”
THERE’S ALWAYS SOMETHING NEW
To keep things fresh and inviting, local business owners innovate to keep customers coming in. For Tulsa Stained Glass owner Richard Bohm, that means new ways to incorporate art into your home. His latest innovation, new this year, is a line of Garden Spirit Sculptures — a custom kit available in three different designs and 12 color combinations so customers can build their own stained glass garden sculpture.
GREATER VARIETY, MORE OPTIONS Because local businesses don’t have to answer to a corporate headquarters, they can customize their offerings. “You get more options in a specialty store,” says Bohm. At Tulsa Stained Glass, customers can choose a series of classes or a single two to three-hour class. They can buy the tools and supplies to make stained glass at home, or they can bring in a design and let Bohm turn it into custom art for them. That’s a lot of choices, more than customers typically get at a national crafting chain store.
NOT AS EXPENSIVE AS YOU MIGHT THINK
“I’ve heard people say they’ve always thought of boutiques as expensive and just for petites,” says March. “Not all boutiques are expensive; they just carry unique clothes, in a smaller quantity, so that you won’t see someone else walking down the street in the same outfit. Most carry sizes XS up to 3X.”
GIVES BACK TO LOCAL CHARITIES
Many local businesses give actively to local charities, so the benefits of their giving stay in Green Country. Bohm says he gives to the DVIS Kennel, which allows women and children to bring their pets when they leave a violent, dangerous home. Customers can donate pet food and other pet items (not money) anytime at Tulsa Stained Glass.
BUILDS GENERATIONAL MEMORIES
Visit a local business and you’ll hear plenty of stories about their place in the community. Winn says, “One of the coolest parts of owning AJ’s Heavenly Pizza is hearing stories from customers about how AJ’s has always been a part of their lives. They’ll share how they used to work here when they went to school, or how they were the ones who created the Chicken Bacon Ranch pizza (there are quite a few creators out there). Some even have memories of the Pac-Man game that used to sit in the corner.”

“In all,” says Winn, “the best part of AJ’s is the customers.” That sentiment was seconded by every business owner we spoke to. Thinking small business and buying local is a good way to get what you, the customer, want and need.

People are increasingly taking to the mats to practice Brazilian jiu-jitsu, a combat sport used by mixed martial arts fighters. But the training benefits also reach well outside the match zone. By Michele Chiappetta
Mixed martial arts is so in right now that it’s probably no wonder your children are asking about training in the sport. Maybe you’re thinking about it too. Whether you’re watching MMA celebrities like Anderson “The Spider” Silva and Jon “Bones” Jones duke it out on the sport’s bar screen or watching from your couch in the comfort of your own home, this sport keeps viewers on the edge of their seats anticipating thrills, devastating athletic moves, and even some blood. It’s no wonder many people are itching to try out some of those moves for themselves. One of the martial arts in the MMA pantheon that people gravitate to in fascination is a seemingly simple yet potent fighting form known as Brazilian Jiu-Jitsu. Christian Derr, owner and chief trainer at Clinch Martial Arts Academy in Owasso, provides classes in Brazilian Jiu-Jitsu to many Green Country area residents. It’s a sport that is growing in popularity here. “Brazilian Jiu-Jitsu is a martial art very similar to wrestling,” says Derr, “but instead of trying to pin your opponent’s shoulders to the mat, we are trying to make our opponent give up or submit. There are not a lot of fancy moves but a focus on doing very basic techniques against a fully resisting opponent. It doesn’t rely on strength or power but on technique and leverage. Through the use of proper leverage and technique, a smaller, weaker JUSTIN SHEPHERD person can defeat a larger, stronger person.”

This ability to help a person of any size successfully engage in combat makes Brazilian Jiu-Jitsu appealing to many people who might otherwise be turned off by fighting techniques that emphasize height, weight or upper body strength. It’s something that the whole family can do, as the Shepherd family of Owasso — dad, Johnathon; mom, Jessica; and son, Justin — can tell you. The Shepherds’ journey into the sport was not a straight-line path. Johnathon grew up wrestling in school and encouraged his son Justin to wrestle too, but Justin never took to it. “He hadn’t had much success when competing and lacked confidence,” says Jessica. When Justin decided he wanted to quit, his parents cast about for another option. “We wanted to keep him involved in sports, as health and fitness are priorities in our family,” Jessica says. “He had tried soccer, football and basketball and didn’t fall in love with any of them.”
“It can be intimidating starting anything new, especially a martial art,” Derr says. “But once you start, you will understand that it is really a special community where people are just trying to improve themselves. It’s almost addicting because of how fun and interesting it is.” The Shepherds agree. “They say when you decide to train in Brazilian Jiu-Jitsu, you gain a family, and I believe that to be true,” says Jessica. “I love our Clinch family, and making the decision to train has been one of the best decisions Johnathon, Justin and I have ever made.”

That’s when a family friend who trained at Clinch suggested Justin try a class there. “The atmosphere at Clinch was so positive,” says Jessica. “The children were learning discipline, accountability, self-defense and respect all while having fun. Justin was excited, so we signed him up. He has been training for just over four years now.” Brazilian Jiu-Jitsu offers a lot of benefits both inside and outside the match zone. “You are getting in great shape,” Derr explains. “It is very stress-relieving. You are learning self-defense. It is a lot of fun. But if you stick with it, it becomes a strategic, creative method of solving problems — a method that you can use in all other parts of your life.” The Shepherds have all seen those advantages in their own lives. “JiuJitsu is really fun and challenging,” says Justin. “The biggest change and benefit [I’ve seen] has been gaining confidence and learning to deal with and overcome adversity.” “I love that it’s a constant learning process,” says Jessica. “I never go to a class where I don’t learn something new or realize a new detail to something I learned previously.” And it’s helped her to grow personally. “Training has affected how I approach situations, handle stress and problem solve,” she says. “Jiu-Jitsu is very humbling, and that has a way of carrying over into everyday life. “

Johnathan agrees. “As an impatient person by nature, I rarely take the opportunity to use patience,” he says. “In Jiu-Jitsu, if you are not patient and don’t use the techniques you are taught, then you will inevitability be humbled by those who are more experienced than you. Since I am new to BJJ, these humbling opportunities are very frequent.” He’s seen the results of that newfound patience in both his personal life and his professional career, he says. The Shepherds train three to four times a week, working hard to balance their time at Clinch with other obligations like work and Justin’s school schedule. “Brazilian Jiu-Jitsu is an important part of our life,” they say, “so we do our best to shuffle our schedules around to make time for training. We are spending time together doing something we all enjoy. We are there as a support system for each other and can encourage each other because we truly understand the struggles.” For those who want to get started in the sport or test it out to see if it’s right for them, Derr says the doors at Clinch are open wide. “Just come try a class,” he says. The classes are affordable, and you can start with just shorts and a T-shirt until you’re ready to invest in a gi (the uniform of all martial arts sports).

They seem to be under a spell, cast by the gods of luck. Talk to these casino-goers, and they’ll tell you they love the thrill that comes from the possibility of winning big and taking home boat loads of cash. And why shouldn’t they? It’s fun to dream. Where else but a casino can you enjoy fun and entertainment and have a chance to also walk out with a lot of money? Ask that same person what it is they love to do the most at the casino, and seven out of 10 times they’ll say, “the slots.” Seventy percent of the money spent on gambling in the U.S. is spent at the slot machine. Americans spend five times more every year at slot machines than they do going to the movie theater, and slot machines have now doubled the number of ATMs in America. But which slot machines do people prefer more? “Our customers prefer the machines that pay out the most,” Crofts says. “When you can stay on a machine longer, get the most bang for your buck, then that’s the one you’ll enjoy yourself on.” It’s not easy to hit it big at the casino, but if you take the chance, casinos like River Spirit can offer games that ratchet up the payoffs for the lucky winners. “We have machines where you play against the individual machine with jackpots up to $25,000 and $50,000,” says Crofts. “And there are

To keep things simple, dopamine is a neurotransmitter created in the brain that helps you feel good. When your body is producing it effectively, your brain helps you enjoy pleasure, feelings of reward and overall emotional well-being. When your body doesn’t produce it properly, you’re more likely to feel depressed and anxious. Physically, low levels of dopamine can cause achy joints, extreme fatigue and even tremors.

It’s a similar chemical process to the one that comes from exercising. After experiencing the rush, we do the thing again and wait in anticipation. Want to catch four local bands in one night at the most historic venue in the region without paying festival prices? The OklaHomeGrown Music Showcase, presented by the Tulsa Office of Film and Music Arts and Culture and the Oklahoma Film and Music Office, has got you covered. In true Oklahoma fashion, the members of Taddy Porter, Nicno-s, Skytown and Good Villains decided it was time to step onstage together. They’re coming together for the first time to give Oklahomans an opportunity to enjoy a full night of local music at the Cain’s Ballroom, in Tulsa, starting at 8 p.m. Friday, Feb. 17.
The OklaHomeGrown Music Showcase gives emerging stars and under-the-radar music acts the opportunity to expand their reach and fan base from within the historic Cain’s Ballroom. BY RACHEL WRIGHT
“We’ve been talking for a while about collaborating instead of competing and doing an ultimate show of Oklahoma rock bands,” says Blake Parks, fiddle player in Nicno-s and OklaHomeGrown Music Showcase coordinator. “It’s a representation of the great music being created in our state, and it’s a way to give back to the local scene by offering opportunities for bands to gain exposure in cities they may not normally play.” Parks says equality among bands has been a central theme throughout the planning process, refusing to name a headliner or giving any nods to the order of the lineup of the night. The four bands have been working closely with Hunter Rodgers, box office manager, to bring an idea that came about during shows last year. “Hunter has been a huge support to make this happen,” says Parks. “This is our first year and we’re hoping to get a response from the crowd that allows us to keep this going so we can showcase more local bands in years to come.” Having the show at the Cain’s Ballroom is quite the opportunity for local bands, with the venue bringing national and international acts on a regular basis, and because of the respect the bands have for the historic concert hall. “The Cain’s is a staple for music in Oklahoma and the region,” says Parks. “We all grew up

Taddy Porter _ Nicnos going to shows there, so we’re really excited to rock the Cain’s stage and light up the crowd.” Kicking off the night is Good Villains, a band that started in Tulsa as a two-piece, created by drummer Steven Davison and vocalist Caleigh Trotter. As their music began to progress, pianist Felicia Arnhols joined the group, followed by guitarist Ted Scott and bass player Todd Shaver. The storyteller theme surrounding Good Villains’ music is coupled by expert musicianship and an eerie sense of childishness. A heavy contender in the Doom Pop genre, Good Villains are force reminiscent of the ‘90s yet so full of the unknown and a ton of imagination. Tulsa-grown acoustic rock group Skytown is about more than just feel-good party music. With clean tones, soothing leads, and memorable hooks, their music keeps the tempo up and the crowds wild. The six-piece band has consistently released top-ranked music since their inception in 2012, and attracts hundreds of fans to their shows. Deriving influences from acclaimed powerhouses including Pantera, Black Sabbath, Counting Crows, and Dropkick Murphys, Skytown has concocted their own unique “sonic mashup” of folk, rock, and balladry. With a vocal palate akin to rust, Dale Crain serves as the band’s storyteller, welcoming listeners into the familiar world of lore.
Acoustic guitar duo Tim Burress and Jason Ford’s powerful, yet melodic foundation complements the steady bass rhythms, courtesy of Dave Williams. John Edens’ electric guitar riffs are crisp, complex and very funky. Drummer Eliot Cooper keeps it tight, commanding the stage even from the back. At the heart of it all, Skytown is a band of performers who truly know how to play their instruments. Each song has a soul of its own, and their ability to consistently make waves as rockers in the industry has established Skytown as one of the unique sounding bands today. Hailing from the heartland of Oklahoma City, Nicno-s expels elements of rock, blues, funk and bluegrass creating in the new vanguard of eclectic artistry. Drawing inspiration from Led Zeppelin, The Beatles, Punch Brothers and Dave Matthews Band, the five-piece is best known for their explosive yet fluid live performances. Lead singer, Josh Cox, is a vocal livewire, marrying a brooding blues tone with rock. Electric guitarist, Nick Sigman, is a master of tone, seamlessly laying down razor-sharp leads. The bluegrass rooted fiddler, Blake Parks, brings a delicate dynamic, adding a melodic rock-fiddle layer that uniquely contributes to their sound. High energy bassist, Jared Gaiser, flawlessly anchors in the foundation, inventively bringing the funk. On the drums, Jerred Bauer cleverly blends a rock core while infusing hip-hop grooves and fills. More than anything, Nicno-s is a band that needs
to be seen live to feel the energy and witness the way they all collaborate to create their Nicno-s sound. Rock quartet Taddy Porter was formed in Stillwater in October 2007 by singer/guitarist Andy Brewer, guitarist Joe Selby, bassist Kevin Jones and drummer Doug Jones. After building up a following around the Oklahoma City area, they were signed to Primary Wave Records for the release of their self-titled debut album June 29, 2010. Before the release, they earned airplay for the single “Shake Me” and placed their music on such television shows as Monday Night Football, ESPN’s SportsCenter, and Cougar Town. Their songs “King Louie” and “Mean Bitch” were featured on the season premiere of the TV series Entourage two days before the album’s release. The day after the Taddy Porter album appeared, the group launched its first national tour, running through the fall. They then joined Slash’s tour as opening act. Spending hours working toward your best imaginable bikini bod in time for vacation season? You should be seeing results by now — but are you? Well, it’s officially February, and if you can’t look in the mirror

and tell that you’ve been bustin’ your booty for a month straight (maybe even longer), then we’ve got a problem. Getting in shape can be a harrowing task — especially when you aren’t seeing any results. There comes a point in time, though, when you must realize when something isn’t working and make a change. We all slip up sometimes when
eating, and just about everyone makes mistakes at the gym — both gym rats and newbies — but what is it that is putting a damper on the progress?
Targeting the right areas for the type of muscle you want to build? Balancing in cardio and strength training? Coming to the gym prepared?
From the machines you’re using to the methods you used to contract your muscles, there are many common blunders that you could be making at the gym. Are you eating right ahead of time?
Don’t let simple mistakes hold you back from the body of your dreams. Break out of your bad habits now, and you will have time to sculpt that supermodel bod just in time for spring break.
WHAT TO EAT AND WHEN Trainers agree that one of the biggest problems people have when trying to achieve a certain body goal is the food they’re eating. Not just the weekly binges that might throw you off your diet for a couple of days, but the types of food you’re eating before and after your workouts. Everyone must eat before they work out at some point so that your body has enough energy to power you through a decent trip to the gym, but it’s what you’re eating after that could be affecting your weight loss/muscle gain. For those looking to cut fat, small portions of protein-rich food should be eaten after a workout; however, for those looking to build muscle mass, you’re going to want to eat a lot more. Large amounts of protein that is very low in fat content will work toward the quickest post-workout muscle regeneration.
GYM NECESSITIES Nothing cuts a gym trip short quicker than an uncomfortable environment. Make sure that you are prepared for the gym every time so that you have no excuse to try and dip out early. Wear shoes and clothes that you know are not going to bother you and get a locker for your keys, gym bag and other possessions to save the stress of your things being left unattended. Bring your own water bottle so that you stay hydrated without having to find a fountain every five minutes. And whatever you do — don’t forget your headphones! That’s a for sure way to retire just about any gym trip early.
MIXING UP EXERCISES Although there are different workouts for different types of training, you should never limit yourself to solely cardio or strength training. Remember: variation equals weight loss. Utilize different types of workouts to meet every need. Yoga is a simple form of strength training for those who are not into lifting weights and using complicated machines regularly. And for those who continuously skip cardio in their weekly workouts, throw in a jog a couple of days a week or try something in between like barbell workouts; these workouts often provide strength training while also working up our heart rate and giving just enough cardio to make you sweat.
UTILIZE SMALL EQUIPMENT Don’t act like the gym is only good for the big, fancy machinery — they’ve also got a wide range of gym materials that are just as beneficial. When you look at the range of exercises you can do with small gym equipment — hand and ankle weights, resistance bands, rollers, jump ropes, stackable step boxes, balance trainers — it really questions why we automatically think of machines when we go to the gym. Utilize the small materials that the gym offers just as much as large machines to sculpt new muscles and learn new workouts for the future; you’ll probably save time you’d normally spend waiting on the treadmill.
EMBRACE YOUR INNER MECHANIC You’re probably using many machines because they are the only ones you know how to operate. However, some of those might be wasting more of your time than building and breaking down muscle. Common machines to avoid are the elliptical, exercise bikes, leg curl and extension machines, abductor/adductor machines and most of those used to work your abdominal primarily. Google any questions you have before getting on a new machine, and don’t be afraid of the big, scary ones — you might be able to get several workouts in one from a single machine.

One of the hidden communities in Oklahoma is the Chouteau Amish, a population comprised of approximately 600 that enjoys a very simple, hardworking way of life. While much of the Amish community is very private, preferring to separate themselves from the English (nonAmish), there are things you can see and do to experience a taste of the Amish lifestyle. The Amish of Chouteau originally migrated from Ohio during the early part of Oklahoma’s statehood, its members searching for cheaper farmland to homestead. The Christian culture is one
of simplicity and nonconformity, leading to a life separate from the world. Women wear cape dresses fastened with pins instead of buttons and reaching down to the ankles, as well as mesh or linen prayer veils atop their head. Some wear scarves in cold weather, but not many. The men are clean-shaven until marriage, at which time they stop shaving and allow their beards to grow. Their haircuts are long and they usually wear straight collars. This fascinating culture is peaceful and generous, with several organizations
designed to bring aid and sustenance to other cultures and areas of the world. They participate in the Oklahoma Mennonite Relief Sale, a yearly event selling homemade quilts, apple butter, pies and more to raise funds for locations like Syria and Iraq. Every year they raise an average of $165,000. Even those who are not Amish are subject to the generosity of the Amish community. Bill Chupp, born and raised Amish, recalled when an English woman’s roof was torn off by a tornado in Mazie, Okla. “Fifty people showed up to replace the whole roof at no cost to her,” he says.

Other charity efforts include the Mennonite Central Committee, which distributes books and food to international locations, especially warravaged areas. The Amish also don’t believe in holding a grudge. “There was that shooting out in Nickel Mines [Pa.], where those Amish girls were killed,” Chupp says. “The parents of those girls attended the killer’s funeral to show their forgiveness.” They do not believe in commercial health insurance, and so the community has an insurance fund that raises money for hospital and doctor bills for all members. They travel by train, bus or by arranged car transportation, as they do not own their own cars. Chupp says that around town, buggies are only used on the weekends and travel is typically done by tractor. “Go around the back of the Amish Cheese House, and you’ll see the tractors lined up from the girls who work there,” he says. Despite the private nature of the Amish community, there are places to go and things to see and experience the Amish way of life. The Amish Cheese House, owned and operated by Wes and Leah Miller, is one of the most prominent businesses in Chouteau. Opened in 2000 and expanded in 2012, it hosts a full-service deli with over 50 kinds of cheese, a large grocery and bulk foods area with spices, candies, jarred goods, baked items, ice

cream, fudge and snacks, and a café serving homemade sandwiches, wraps, salads and paninis. Nettie Ann’s Bakery, located inside the building, bakes all the bread used. “Leah is from Ohio Amish country. An Amish all-you-can-eat buffet, it serves country-style homemade dishes served straight from old family recipes right up to a delicious variety of fresh pies for dessert. Owned by Eugene and Louise Detweiler, this Chouteau treasure has cooked for both locals and out-of-towners such as the truckers and travelers cruising by on the highway for more than 20 years. Black Buggy Days is a large Amish heritage event held on the second weekend of September each year. Young boys spend the day vying for prizes in barrel racing, foot penning and other rodeo contests. Food, both homemade and carnival, can be enjoyed while listening to bluegrass music and watching the children’s games. There are some houses, like the ones belonging to Fanny’s Country Cookin’ and the Millers, scattered through the area that open up their homes to the English and host group dinners so that outsiders can get a glimpse of the lifestyle and, of
course, the amazing food. Always call in advance and make reservations for events like this. In short, the Mayes County Amish community is small but incredible. Their devotion to living a simple and hardworking life and doing good for those around them is something the world needs more of. Everyone should take a moment out of their busy schedules to go visit, take in the fresh country air, and visit some long-standing places known for their quality traditional food.

Leave the miniskirts and low-cut tops for girls’ night out and save your fancy, high heel pumps for more romantic dinner dates, and you’ll leave your night floating on clouds — and not because your man has to give you a piggy back when your feet start to hurt. Figure out your plans for date night and put together an outfit that keeps you feeling comfortable and fabulous all night long.

The first date is crucial in determining the future of a relationship. You don’t want to reveal too much, nor do you want to cover up so much that you could be mistaken for your date’s mom. For your first date, you might be going somewhere low-key like a dinner and movie. This is your date’s first impression of not only your fashion sense, but how they feel when they are out with you. Dress to impress on your first date, but don’t overdo it. If you feel uncomfortable wearing an outfit in your own home, you’ll probably be messing with your clothes all night. Break out that lacy cocktail dress you’ve been waiting for an opportunity to wear; throw on a long jacket and thigh high boots to add a little suspense. Prepare for those Cain’s Ballroom date nights in either pants, a skirt or dress that moves willingly. Flowing skirts are great for dancing because they don’t stretch out or get in the way — just be sure to remember your Spanx underneath in case you get grooving a little too fast. Choose a pair of pants or jeans that don’t stretch out but do outline your body in a way that draws on your curves. Go with a top that is stylish but simple. And most importantly, choose shoes that are comfortable.

You may be doing something a bit more adventurous on your date night out. These are the dates you’re going to want to plan your outfit for accordingly. Mini golf and high heels are no dynamic duo. Prepare for action-packed date nights in clothes that are flashy while also functional, comfortable and appropriate for the place you’re going to. If you’ll be spending your night at any sort of go-kart racing/laser tag/arcade fusion, then a skirt or dress is probably going to be your least favorable option. Wear some destroyed jeans that you can move around in; or opt for leggings that you can drop down to the floor in if needed, and army crawl your way to a laser tag and overall date victory. Pair your high-waisted, black pleather leggings with a long-sleeved crop top and collared jacket; throw on some ankle boots and a baseball cap, and you’ll be looking sporty and chic without even having to try. Take the sportswear trend to a new level on other fun dates like bowling and casual date nights like Riverside strolls and picnics in the park. One trend to put into play is the tennis-shoe-dress-combo. It’s the fifth annual Arctic Cat Nitro Arenacross Tour with high-powered motorcycles that not only sound loud, but also have riders who always go big or go home. “We build a course of dirt ramps that make the riders fly as high as 20 feet and travel 60 feet across the arena,” says event coordinator Jay Reynolds. “It’s a family show, but it’s the most exciting family show that you’ll ever see. BLOCK PASS: When a racer passes another racer in a corner and makes them slow down or lose momentum.
CAN-CAN: When a rider moves one leg over the fuel tank to the opposite side of the bike while airborne.
CASED: When a rider comes up short on a triple jump and hits the backside of the landing.
CLAPPED OUT: A bike that has seen better days.

ENDO: To go head first over the handlebars.
HOLESHOT: Once the gate drops and the riders take off, the first one to the first corner gets the holeshot.
SQUID: A rider who could use some additional training on form and technique.

With a little bit of danger involved, the sport usually has its fans on the edge of their seats. It’s a wonder the tour ever sells any concessions with people watching in awe, unable to take their eyes off the spectacle taking place. “This sport began back in the 1980s,” Reynolds says. “People are always searching for new entertainment.” He said there are certain variables of this game that make it more satisfying to fans than even the top professional sports venues can match. “What other sport has flipping threewheelers or lets you meet the pros like we do Saturday night with interaction with fans?” Reynolds says. “These guys are some of the fastest in the nation and it includes children getting to compete with ATVs and side-by-sides.” Reynolds says this is the largest proam event of its kind in the nation, and it is going to get even bigger. “This is indoor motorcycles on steroids,” he says. “Even more intense than that. We currently are performing on this tour in eight states across the country, and next year we are going to try to expand that to 16 states.” The two-night event for adrenaline junkies begins with a pre-party featuring a musical artist to get the crowd’s blood flowing. There will be a free pit party for the everyday Joe to meet his favorite pros. The show kicks off with lasers, lights, fog, rocking music and more. As the heart begins to pump harder than ever imaginable, the Nitro AX Tour
pros battle it out for more than $70,000 in seasonal purse money with events that include motorcycle racing, ATV racing, UTV flips and a FMX pro jump off. The jump-infested arena floor will challenge the riders as they soar like they’ve been shot out of a canon. At times it feels like they might bump their heads on the roof that can’t be reached most days without a rocket for propulsion. From the children on their 50cc minis to the Nitro AX Tour pros on their 450cc fire breathing MX bikes straight out of a James Bond movie it seems these guys should leave you gasping for air as you see things you’ll never see again in a lifetime. Friday is free children night and Saturday night is the free track party. Motorcycle classes run both nights and ATV classes will race and perform Saturday night only. The great thing is that you don’t have to be a part of the tour to race. All racers are welcome to sign up and participate. When was the last time the NBA let you shoot some hoops right alongside Russell Westbrook or Stephen Curry? Reserved seating is $23 a night for adults and $16 for children. General admission in advance is $18 for adults (12 years old and up) and $12 for children (2-11 years old). Advance general admission ends Feb. 23. All prices include taxes and will increase by $2 at the door the day of the event. On Friday night, children get in free with each paid adult in general admission only.

ET EATS + TREATS The winter months can seem long and harsh, but thanks to the concept of “comfort food,” they don’t have to be entirely miserable. In fact, with the right combination of cheese, butter, bread and cream, winter evenings can become some of the coziest in the calendar
year. Comfort food is like an electric blanket for the soul, especially after a long day out in the harsh cold. So, put on some fuzzy socks, uncork a bottle of red wine, and throw some butter in the skillet for one of these to-die-for comfort dishes.

Adapted from thegarlicdiaries.com This is hands down the greatest grilled cheese you will ever have. Prepare yourself.
Ingredients: 1 clove garlic, minced 1 pinch thyme 1 pinch red pepper flakes 2 tsp. Dijon mustard 4 slices good quality bread (sourdough works well) 2 tsp. butter 2 slices Asiago cheese 2 slices cheddar cheese 2 slices Muenster cheese DIRECTIONS: 1. Melt butter in a saucepan over medium heat with garlic, red pepper flakes and thyme. 2. Lightly simmer, careful not to burn butter, while you prepare the sandwiches. 3. Lay slice of bread out and spread ½ teaspoon of Dijon mustard onto each slice. 4. Add one piece of each cheese to each individual sandwich (cheese should be touching Dijon). 5. Using a pastry brush, brush the melted butter onto the top and bottom slice of each sandwich until all butter is gone. 6. Heat a skillet over medium heat and toast the sides of each sandwich until cheese is gooey and spilling out of the sides. Serve hot by itself or with tomato soup for dipping.

1 pound penne pasta 2 tbsp. butter ¼ cup flour 2 cups whole milk 1 cup heavy whipping cream 3 cups shredded cheddar cheese 1 ½ cups blue cheese crumbles DIRECTIONS: 1. Preheat oven to 350 degrees. Butter a 13x9 baking dish. 2. Cook pasta in a large pot of salted, boiling water until tender, but still al dente. Drain and leave in strainer until the sauce is ready. 3. Melt butter in a large saucepan over medium heat. Add flour to make a roux, stirring constantly so flour does not burn. 4. Gradually whisk in milk and cream. Simmer until mixture thickens, whisking constantly. Reduce heat to low and add shredded cheddar cheese (reserving ½ cup for sprinkling on top before baking) and crumbled blue cheese. Whisk until cheese melts, about 2 minutes. Season to taste with salt and pepper. 5. Add cooked pasta to sauce, stirring to coat. Transfer mixture to prepared baking dish and sprinkle with remaining cheddar cheese. Bake until golden brown on top (sauce will begin bubbling), about 25 minutes.

Ingredients: 2 ½ cups flour (you’ll add more as you knead) 2 tsp. salt 1 ¼ tsp. yeast (or one package of active dry yeast) 1 ¼ cup warm water e xtra-virgin olive oil DIRECTIONS: 1. In a large bowl, add the flour, salt and yeast. Mix through. 2. Add the water and mix until dough has a shaggy-like texture. 3. In the bowl, use your hands to knead the dough. Dust your hands in flour as you go to keep it from sticking to your hands. Knead 3-4 minutes. The dough should remain light and sticky. 4. Once the dough is holding together well and still feels sticky yet firm, add a teaspoon of extra-virgin olive oil to the dough and shape into a tight ball (the olive oil adds flavor and keeps it from sticking to your hands). 5. Place dough in a bowl that has been lightly greased with olive oil. Cover with plastic wrap and a cloth towel. Allow dough to rise for one hour. 6. Once the dough has doubled, carefully remove it from bowl and place onto greased or parchment-lined baking sheet. Gently quarter the dough (being careful not to compress it too much as it will release all its gasses) and with floured hands, gently shape the dough into four individual dough balls. 7. With a brush, oil the tops and sprinkle additional flour to achieve a nice rustic look. 8. Cover dough balls with damp paper towel or plastic wrap and let them rise for an additional 20 minutes. While it’s rising, preheat oven to 500 degrees. 9. Bake bread for 10 minutes at 500 degrees. After first 10, lower oven temp to 325 degrees and bake an additional 25 minutes. 10. After bread is finished baking, remove to a cooling rack and let cool completely before slicing. Slice off the tops in a wide circle and fill with soup. Serve and prepare for raving compliments.

A warm, creamy pot of chicken soup in the winter is the perfect complement to a romantic night of Netflix binging.
Ingredients: 2 -3 cups chicken, cooked and shredded (either rotisserie or from crockpot) 2 bay leaves 2 carrots, peeled and sliced 2 celery stalks, sliced 3 cloves garlic, minced 1 medium white onion, diced 6 cups chicken broth 8 oz. package of wild rice ¼ cup all-purpose flour 1 tbsp. olive oil 1 tbsp. butter ½ cup heavy whipping cream 1 ½ cup milk ½ tsp. dried oregano ¼ tsp. dried thyme B lack pepper (to taste) Salt (to taste) DIRECTIONS: 1. In a large pot over medium heat, melt butter and olive oil. Add carrots, celery, onion and garlic. Cook until onions are translucent, stirring often. 2. Add bay leaves, thyme, oregano, salt and pepper. Cook and stir for 1 minute. Stir in chicken and chicken broth and bring to a boil, stirring often. Cover and reduce to simmer for 20 minutes. 3. In a separate bowl, whisk together milk, cream and flour. Whisk into soup until combined. 4. Stir in wild rice and simmer for another 20 minutes or until rice is tender. Ladle into individual bread bowls (or regular bowls) and serve hot.

Picking out a great bottle of Cabernet sauvignon at the liquor store, or even just a glass of Sauvignon blanc while out for a nice meal, isn’t as hard as some wine connoisseurs might make you think. Whether you spend it out on the town celebrating your liberating singledom, binge-watching with your boo, or giving it a shot with somebody new, we can all agree it’s a day decreed for love and good

times, candlelit dinners, flowers, chocolates and — our personal favorite — wine. Wine is the sophisticated, intelligent, I’m-anadult-and-I-drink-in-moderation-and-to-taste impression you want to make on a first date. It’s also perfect for a night in. It has a huge role in world history (the oldest winery is said to have been founded in Ancient Armenia, in 4100 B.C.), and as Lisa Hutchcraft, general manager at Modern Spirits says, it’s a natural fit for a romantic night. “Wine is romantic and adventurous,” says Hutchcraft, who is a red wine enthusiast herself. “I like talking to people about trying something from another country, because there are so many options, from boxed wines, which have come a long way, to a $100 bottle; the experience is different every time.” Learning to taste wine is no different from learning to really appreciate music or art in that the pleasure you receive is proportionate
to the effort you make. The more you finetune your sensory abilities, the better you’re able to understand and enjoy the nuances and details that great wines express. A wine beginner might know the basic differences between a red and a white, but it’s also important to learn all the wine types and varietals. With so many varieties and pairings, it can be a little intimidating, so let us walk you through some wine basics. Think of it as a Wine 101, which we hope will arm you with impressive conversation starters, solid pairing suggestions and the confidence to select the perfect bottle for your Feb. 14 festivities and beyond.
The Basic Terminology

COCKTAIL CONFIDENTIAL CC bodied wines are more watery and subtle, and medium-bodied wines fall somewhere in between. Dry wines have no residual sugar, so while you’ll still enjoy fruity flavors, they don’t taste sweet. All of these variations come in red and white.
The Reds
Cabernet sauvignon (Cab-er-nay Saw-vinyawn) is a full-bodied red, with black cherry, black currant, baking spices and cedar flavors. Its grapes were originally planted in the Bordeaux region of France. It’s the most popular wine in the world, and pairs well with lamb, beef and smoked meats. Merlot (Murr-low) is a commonly known close cousin of “Cab Sav” worth mentioning that usually has a lower price point and a smoother finish. Syrah (Sear-ah), also often known as shiraz, is a full-bodied red with a medium dryness containing blueberry, plum, tobacco, black pepper and violet flavors. With grapes planted in Australia and the Rhone Valley in France, these wines have intense fruit flavors and often aggressive meaty (think beef broth or jerky) tones. Syrah is best paired with lamb, and beef. Malbec, a noteworthy variation currently on list of trendy wines, is comparable to Syrah. Pinot noir (Pee-no Nwar), Modern Spirits’ number one wine seller, is a dry, light-bodied
red wine with cherry, cranberry and rose flavors often with hints of beet, rhubarb or mushroom. Also from France, it pairs well with chicken, pork, veal and duck. Zinfandel (Zin-fan-dell) is a medium-tofull-bodied red whose name may be best known in its Rosé variation, White Zinfandel, both of which are made with red grapes. It has a broad array of flavors ranging from overripe nectarine to raspberry, blackberry, Asian spices and sweet tobacco. Its grapes originated in Croatia and it pairs well with chicken, pork, cured meat, lamb, barbecue, and Thai, Chinese and Indian foods. Tempranillo (Temp-ra-neeyo), Hutchcraft’s favorite, is a full-bodied Spanish red often compared to Zinfandel and currently enjoying its time in the Trendy Wine limelight, alongside Malbec. For those planning a night in, it is a great choice for cooking and sipping. “I love a good Tempranillo, especially to cook with,” Hutchcraft says. “I recommend Radio Boca’s Tempranillo. It’s delicious and at only $10 a bottle, it’s a fantastic price point. I use it to make an easy shallot onion reduction to pour over a New York strip, then have a glass with dinner.”
The Whites
Chardonnay (Shar-dun-nay) is a mediumto-full-bodied very dry wine with citrus,
pear and apple and tropical fruits like banana and pineapple, often with cinnamon, butterscotch and toasted caramel. A French wine, chardonnay is well paired with seafood, chicken and pork and veggies. Sauvignon blanc (Saw-vin-yawn Blonk) is a dry, aggressively citrus-driven white with grapefruit, melon, kiwi, grass, mint and green pepper flavors. Another French favorite, this tart wine is best paired with fish, chicken, pork, Mexican, Vietnamese and French cuisine. Pinot Gris (Pee-no Gree) is a light-bodied white with delicate citrus flavors including lime water and orange zest, apple skin and floral and cheese rind notes. Originating in Italy, but widely planted in France and Germany, this sometimes-bitter wine is paired best with salad and seafood. Riesling (Reese-ling) is known as “off-dry” white, available in variations of sweetness, and has floral and sweet herbal elements as well as lime and lemon, peach and nectarine flavors. Originating in Germany, this acidic wine is best enjoyed with chicken, pork, duck, turkey, Indian, Thai, Vietnamese, Moroccan and German foods. Still feeling overwhelmed? Twist, Flick and Pop Even if you don’t care about wine origins or varieties, you should know how to open a bottle without looking like an amateur. Here’s our seven-step guide to not making a fool of yourself while opening a bottle. Just don’t break the cork. 1. C heck to make sure it’s a bottle with a cork. Seriously. The moment you realize you’ve been trying to uncork a screw-top bottle you’ll notice your face is a color resembling Cabernet.
4. W ith your dominant hand, place the tip of the corkscrew barely off-center of the cork, and push until you reach the first curl of the corkscrew. The corkscrew will need to be sort of sideways to push the sharp tip straight into the cork.
2. O nce you’ve confirmed there’s a cork to remove, get rid of the foil. Use the little blade on your corkscrew to slice and pull off the foil to below the lip of the bottle. If a piece of the foil is left above the lip of the bottle, you’ll make a mess when pouring the wine.
5. T urn the corkscrew clockwise and make sure you’re keeping the corkscrew centered in the cork. Turn until there’s one curl remaining outside of the cork.
3. T ake a firm grasp of the bottle by the neck with your non-dominant hand and place the bottom of the bottle on your hip.
6. S ecure the metal lever onto the lip of the bottle and, without pinching your finger, wrap one hand around the bottle neck and the lever, to ensure the lever doesn’t slip off the lip.

“We make our own pesto. We make a lot in-house,” he says. “Our Monday through Friday lunch blueplate specials incorporate a lot of our original ideas. Our Wednesday special uses a full New York strip, trimmed down and cooked in a chicken-fried steak style. We serve it with cream gravy, Yukon mashed potatoes and glazed carrots. Friday, for example, we do something special with hand-cut fries and fried catfish with coleslaw.”

Robinson knows the 95-year-old Art Deco styled building inside and out. The Grill, originally the Atlas Coffee Shop, still has remnants of its original character, like the rest of the Atlas Life building. Much of the enormous crown molding ceiling throughout the building and its original fixtures still exist,
Atlas Grill continues to honor Tulsa’s rich heritage, even naming many of their dishes after streets in the city like the Frisco, the Denver, the Boulder and the Boston, to name a few. Across from the Grill, on the other side of the building’s opulent hallway, the Tulsa Press Club serves the grill’s food, including the turkey and applesmoked bacon club sandwich called the prestigious Press Club.

“It’s pretty cool, all the history and everything that surrounds the building,” he says. “It’s between the Mid-Continent and Philtower. They constructed the tunnels between them and other buildings during Prohibition and the days of wealthy oilmen worried about their children being kidnapped. Most of them are blocked off now, but some are still around.”

“It’s fun being a part of downtown Tulsa history,” says Jake Robinson, the owner and chef of Atlas Grill. After falling in love with the place as an employee, he took the reins of the Grill by purchasing it in 2005. He appreciates how it’s surrounded by historical landmarks. Atlas Grill is located in the 12-story Atlas Life building, which was built in 1922 and added to the U.S. National Register of Historic Places in 2009. A statue of Atlas, the Titan of ancient Greek mythology, is on top of the building’s façade, and the most notable feature is on the front of the building: a four-story neon sign installed in the 1940s.

“I went to culinary school because I love doing it. I have a passion for it. It’s the only thing I know,” he says. “When I purchased the Atlas Grill, I saw it as a great opportunity, ready to move on to better things. The restaurant business is hard to find a job where you’re not still there at 2 a.m. Atlas Grill is different. We aren’t there in the evening, so that’s pretty nice.” Atlas Grill is proud of the freshness and quality of the food, but most proud of the awesome staff and how they are conscious of every customer’s need. Whether it be the downtown office worker trying to catch a quick bite before making it back to the grind, or tourists visiting the historical building for the first time, Robinson says that the staff does everything possible to meet the needs and wants of the customer. “We cater to every customer as best as we can,” he says. “We have a black bean veggie burger, which is awesome. Vegetarian customers come in here specifically for that,
and it draws in a lot of people for that reason.” Their salads are also a big reason why people see them as a great choice for lunch downtown. His favorite sandwich is the Boulder, a grilled Portobello mushroom sandwich with Boursin cheese, grilled peppers and onions, all between two amazing toasted buns. A secret tip from the owner: although it is a very tasty vegetarian sandwich, if requested, adding bacon to it makes it, in his words, “phenomenal.” The menu at the grill is tweaked from time to time, but the regulars would tell you that it’s basically the same menu since before Robinson started and that’s the way they like it. During the summertime, homemade ice cream can be expected, as well as more cakes, pies and cookies. Throughout the years, the Atlas Grill has been used as a catering service for wedding receptions and rehearsal dinners, where the historic building’s beautiful marble-floored lobby can be transformed into a five-star restaurant atmosphere resembling the roaring ‘20s. Lobster, steak, and nearly anything else requested can meet the needs of nearly any kind of gathering. Although the Atlas Grill has historically been a Monday through Friday, breakfast and lunch establishment, it has become one of Tulsa’s go-to brunch locations in the Inner Dispersal Loop on Saturdays and Sundays from 9 a.m.-2 p.m.

Mandarin Taste coalesces the cuisines of the Far East into one sumptuous whole with hot pot, dumplings, seafood and spicy and flavorful Szechwan food options. — BY DONNA LEAHEY
Hot Pot Have you ever tried a Chinese hot pot? It’s perfect for a long lunch or a leisurely dinner with family or friends, especially on a cold winter day in Oklahoma. And Mandarin Taste may be the only place in Tulsa to enjoy this traditional meal. Tucked away at the corner of 61st and Sheridan, this authentic Chinese restaurant is perfect for people hungry for genuine Chinese cuisine, whether they lived in China and miss the genuine flavors or are just ready to try something new.
To the best of Sally’s knowledge, Mandarin Taste is the only restaurant in the Tulsa area to offer hot pot. “It’s very popular in Asia — China, Korea, Japan, other parts of south Asia. The concept is like a fondue,” she says. “The pot is full of hot broth made by cooking pork and chicken for over three hours to create rich flavor. There’s also a tomato broth and a spicy Szechwan broth. The pot is divided so diners can try more than one flavor. Some customers like the spicy broth, but some prefer the original.”
Mandarin Taste’s manager, who prefers to go just by Sally, says, “I came to the states as an international student. I didn’t know how to cook when I got here, but I wanted food like from home in Beijing,” she says. “So, I had to call my mom and ask her how to cook.”
If you’re not familiar with hot pot, Sally is ready to help. “Sometimes customers come in and say this is their first time, so I will show them how. Some want to dump all the meat in to cook at once, but this is not best,” she says. “They should hold a slice of meat in their chopsticks and dip two to three times in the hot broth. The meat is cut very thin so it cooks quickly. Then, some like to use a dipping sauce, but if they used the spicy broth, often it doesn’t need a sauce. You can try the different sauces to see if they’re needed.”
Sally realized there were a lot of people looking for real, traditional Chinese cooking. “It’s a problem for a lot of people, especially Chinese people,” she says. “A lot of my American customers were looking for this kind of food. They’d been to China, or moved here from Los Angeles or New York City. I wanted to do this for that group of people who knew this kind of food. Or for my American customers who want to try something new, this is the place for them to give it a try.”
When you order, you choose the type of broth for your hot pot, and the items to cook in the pot. Meat choices include lamb, beef and pork. Adventurous diners can try beef tripe, pig kidney or even pig brain. Seafood options include scallop, fish and shrimp. Along with your proteins, you can add vegetables

like sweet potato, bamboo heart, and seaweed. Tofu is an option, along with different types of mushrooms and noodles. There are also combo platters to make it easier for a couple to enjoy a selection of different items.
“Men or boys especially like the pork belly with jalapeno. We have 100 percent satisfaction with that dish,” Sally says.
Also on the extensive menu is a selection of regular dumplings, noodle dishes, fried rice and seafood choices.
The Kung Pao Chicken is another popular choice. “It’s very traditional, not like what you’d get at a Chinese buffet. It’s very popular with Chinese people,” she says.
Children get free ice cream with their meals, and many adults enjoy the steamed or fried bread with condensed milk as a treat.
The cilantro shredded beef is the most popular beef dish. Sally suggests the garlic bok choy and the spicy dry green bean stir-fry off the vegetarian menu.
Sally’s personal favorite dishes? “I love the Jade fish.” It’s a beautiful seafood dish served in a bowl with Szechwan peppercorn and fresh green chili pepper. She also loves the Beijing meat pie. It’s like a small-sized pizza with ground pork and onion. There are three layers of meat and dough.
“Hot pot is really good for friends or families,” she says. “The more people the better. Having more people lets you have more things to try.” Each pot can feed six to seven people, so don’t be shy; invite a friend or two. “We’re always busy over the holidays like Thanksgiving and Christmas,” she says. “Families come in and enjoy time together. You cook it yourself, at your table. You participate, chatting, and enjoy the time together.” In addition to hot pot, Mandarin Taste serves spicy and flavorful Szechwan food.
Mandarin Taste also features a variety of different types of traditional dumplings. There are steamed buns, like the flavorfilled pork and onion. The popular pan-fried bun with pork adds a nice sear to the bun. The Chinese chive, egg and ground pork pie is like a little round pancake, stuffed with savory ingredients and lightly browned.
Mandarin Taste is a great choice for vegetarian diners or those who need to avoid gluten. Many menu items are gluten-free.

Katia Azar, owner of La Roma Pizza, loves what she does and what she does loves her back. “We create relationships with our customers and our employees,” she says. “It’s not just an exchange of food and money. The customers want to see us. We love them and they love us. That’s what makes La Roma rich. Everyone knows our names and we know theirs.” Azar’s restaurant is an oldie-but-goodie kind of place where generations of customers have made memories for decades. Since the mid-80s, Azar, along with her mother Souhaila, has ruled the kitchen at La Roma, constantly making sure that every meal served is the best ever. The menu hasn’t changed much through the years, in part because the unique combination of Italian pizza and Mediterranean dishes is what keeps customers coming back. Primarily measuring the ingredients by sight, the way most great cooks do, Azar says she can’t assure the food tastes exactly the same every time, but she does promise it will always taste great. “We want to impress people,” Azar says, with a twinkle in her eyes. “We’re cooking for our family and we want to make them happy.” Although it may not be on the menu, ordering a mana’eesh pizza is becoming more popular with customers. Thyme, oregano, olive oil, sesame seeds and, knowing Katia, other secret ingredients uniquely La Roma are perfectly mixed together to provide a delicious Mediterranean pizza that Tulsans can only get at this 61st and Sheridan pizzeria. The RJ, named after Azar’s late father, is another unique pizza that combines Azar’s Lebanese heritage with the traditional Italian-American cheese pie. Think tabouli, just the right thickness of cheese and homemade pizza dough. Customers have been raving about it ever since it was added to the menu. Lasagna and cabbage rolls are patron favorites; in fact, the cabbage rolls hold their own in a way that might surprise you if you haven’t tasted them yet at La Roma. And for dessert, La Roma’s baklava rivals any found at any other establishment in Tulsa, and that is saying something. The lentil soup is one dish that Azar is always extremely excited to make, a slightly different recipe from her mother Souhaila’s, but one she is proud of nonetheless. The year 2016 was a strange year for the restaurant when, in September, a pickup
truck plowed into the storefront. No one was injured, but the restaurant had to be closed for repairs. “When the accident happened, we were in complete shock,” Azar explains, looking around at the newly decorated dining room. “We thought that maybe after a week or so, we’d reopen. We told customers we’d be open soon, but the damage was too great. Sixty-nine days later, we finally reopened.” For most restaurants, in today’s down economy, being out of commission for even a week would be the kiss of death. But in their 28th year, La Roma’s customers refused to let that happen. When the restaurant reopened last November, it was like a reunion of the cast of Cheers. “We were shocked how many people came back and didn’t forget about us. They want us to succeed,” says Azar. “That was one of those things, you know. You’re losing business, and people make new habits and new routines. I didn’t want to be insecure, but I was afraid people wouldn’t make it back. But they did. They were interested about the new decorations and everything and how we were doing.”

As if on cue, while Azar was talking, customers entered the restaurant and volunteered to make statements about how wonderful a cook Azar is, and how much they love La Roma. “You know the second you open the door that you’ve come to the right place. Just the smell of it tells you that,” said one happy lady who recently hosted a wedding reception with catered food by La Roma.

Azar hates to repeat herself, but she says that her role as a master chef at La Roma isn’t about her; it’s about her family. “It’s a family in there,” she says, pointing to the kitchen beyond the iconic green, red and white awning, one of the things not destroyed in the accident. “We’ve got pictures of our employees on the wall. They become family to us. When we say La Roma is a family restaurant, we mean much more than my mother, myself or my fiancé. It’s our friends, our workers. We are family. Sometimes when we think of how our hours are long [as restaurant owners], we forget about it when we see our family. It’s about love in the food, love in everything we do.”

Whether it’s a baby shower cake so adorable that you won’t want to eat it, a birthday cake the likes of which few have seen or a wedding cake that stands as a true testament to your love, very few confectionary challenges are beyond the grasp of The Cake Lady. Not many things in life are as grand as a cupcake. With that upward swirl of sprinkled icing, these bright confections are like little joy bombs for the mouth. The Cake Lady, located on Main Street in Collinsville, knows the happy power that a good cupcake wields, and they bake some of the tastiest ones around. The Cake Lady offers buttercream cupcakes in the most enticing flavors, like strawberry milkshake and chocolate chip cookie dough (with cookie dough on top and in the center). They also specialize in mini pies, mini cheesecakes, cake pops, cookies, candy covered pretzels, decorated sugar cookies, and more. The genius behind these dainty delights is Ashley Williamson, owner of The Cake Lady. “Before opening an official brick-andmortar for The Cake Lady, I baked out of my kitchen for five years,” says Williamson. “The opportunity to develop an actual shop really just fell into our laps, and we went for it.” Williamson’s quaint, brick shop front is the most inviting place you’ve ever seen — that is, until you step inside and see the pastry case gleaming with a rainbow of treats. Children will beeline straight toward these sprinkly sweets, and adults will frankly have a hard time not doing the same. With a lifetime of baking knowledge, Williamson has perfected the art of enticement and taste. “I grew up in the kitchen, always helping my mom with the baking. I realized I was interested in baking when my mom was feeling overwhelmed by having to supply desserts for a large event. She asked me to help her figure it out, and so I did,” Williamson says while laughing. “I love baking because of the endless creativity options it provides. Every part of the process is so thought out — from the glaze, to the icing, to the toppings and garnishes.” By visiting her shop, anyone can see that Williamson indeed puts a lot of time and effort into both presentation and taste. With a bursting flavor menu that rotates according to season, visitors will almost certainly find that they can’t order just one cupcake. “In the summer we have lighter, more citrusy flavors like Key lime, lemon drop, and dreamsicle. When fall rolls around, we feature s’mores, pumpkin, and apple pie, and then during the holiday weeks it’s more about the peppermint, and the Andes mint explosion. In February, we will have chocolate-coveredstrawberry cupcakes and hazelnut crunch,” Williamson says. “A lot of care goes into each flavor profile and design. I won’t put anything
out there that I’m not willing to eat myself, so therefore everything is always fresh and never frozen.” Custom cake orders are also a huge part of what Williamson does at The Cake Lady. From weddings, graduations, and showers to smash cakes for a little one’s first birthday party (which she absolutely adores doing), Williamson is able to perfectly complement any event with a beautiful cake centerpiece. She has even constructed a cake that featured a suspended dragon blowing down fire, with actual electric lighting woven in to make the flames look real. “I love that the custom cake aspect is ever changing within the industry. We do a ton of different designs. Some of my favorites have been a groom’s cake in the shape of a bass fish, and a multi-tiered Harry Potter cake featuring the Sorting Hat. I’m also a sucker for an elegant wedding cake with fresh florals. I love getting to work with a florist to combine cake and flowers,” says Williamson. Williamson’s cake-designing prowess even landed her the opportunity to be featured on the Food Network’s popular television show, Cake Wars. “I have a really good friend, Beckie Osborn, who called me up and said she was selected to be on Cake Wars and wanted to know if I would be her assistant. I agreed, of course,” she says. “We made it to the second round, which was our goal. We didn’t win overall, but I couldn’t care less because it was so much fun.” Even if you live in Tulsa, you must make a Saturday jaunt down to The Cake Lady in Collinsville to sample the goodies and see Williamson’s eye-catching designs. And once you’ve tasted the magic for yourself, you will always know where to order your custom cakes from in the future. “I never make the same cake twice; they are always completely customized according to what each client wants. One of my very favorite aspects of baking is getting to be a part of a family’s special occasion in this way,” Williamson says.
