82 CULINARY CURVEBALL
From its Windy City beginnings in 1967 to its adult contemporary dominance in the ‘80s and ‘90s, no other rock band has done it better with horns despite lineup changes and over 50 years of touring.
We can’t all be hoop superstars, but we can enjoy watching March Madness and other sporting events from the comfort of the best bars and restaurants the 918 has to offer. Sure, there’s nothing quite like the electricity and fever of watching a big game in person, surrounded by thousands of rabid fans. But an awesome bar, pub or restaurant can come mighty close, and some might say, reaches its own level of bliss as a gathering place that offers a unique version of the sporting experience. It’s where you can collectively experience the triumphs, the heartaches, and the last-minute surprises of any game while either celebrating or sulking with great drinks and food.
Aussie songbird Olivia Newton-John revisits her enormous hit catalog with a voice that over the decades has lost none of its ethereal sweetness and emotional intimacy. And yes, she still honestly loves you.
If you can’t make it to the NCAA tournament, one of the best places to watch the games is in a sports bar or restaurant with multiple television screens, good food and drink, and a lively crowd supporting different teams. Sure, Fat Daddy’s is a sports bar with pool tables, TVs and plenty of suds. But it’s food that drives everything they do. And not just regular “bar food.” We’re talking top-notch pasta, steaks, burgers and a Reuben that has few equals in the area.

DOWNTOWN DINING Justin Thompson Restaurants has become a staple of the local food scene in
downtown Tulsa over the years. Chef Justin Thompson, winner of multiple Best Chef awards in the city, has a long history of developing well-known local
dining concepts and providing artful catering in Tulsa. www.jtrgroup.com
JUNIPER
SEASONAL FARM-TO-TABLE Justin's group was founded in 2011 with his first concept,
a seasonal farm-to-table restaurant called Juniper, which he and his father
designed and built by hand in the Blue Dome District. Juniper changes with the
seasons to bring guests creative, modern cuisine focused on delicious, locally
sourced ingredients and boasts a beautiful and intimate downtown setting with its rustic brick columns, commissioned art by local artists, and a warm and inviting
atmosphere. Since opening, Justin and the talented chefs at Juniper have created more than 2,000 different tasty and creative dishes that have made it onto their
popular weekly special menus. www.junipertulsa.com
PRHYME FINE-DINING MODERN STEAKHOUSE Following the success of Juniper, Justin expanded with a new
concept, PRHYME: Downtown Steakhouse in 2012. PRHYME is an upscale and modern interpretation of the American steakhouse
located in Tulsa's hugely popular Tulsa Arts District. PRHYME
immediately positioned itself toward the highest level of service and quality in dining in the city and specializes in fine cuts of
USDA Prime beef. In addition, PRHYME boasts seasonal seafood,
artistically plated appetizers, classic caviar service, and desserts. PRHYME also boasts a wine list with over 250 selections from
around the world, meticulously chosen and arranged by Justin's
expert team of certified sommeliers. www.prhymetulsa.com
I TAVOLO
URBAN ITALIAN BISTRO Justin brought a taste of Italy to downtown Tulsa when he opened Tavolo in 2013 in the Deco District. Focused on handmade pasta and seasonal chef-inspired dishes,
Tavolo brings the authenticity of an urban Italian eatery you'd find in a big city. Justin selected the beautiful and historic Philtower for the restaurant, utilizing its floor-toceiling windows to highlight the famous art deco architecture of the district. Tavolo
has mezzanine and private dining space available, offers daily $8 lunch specials,
monthly Winesday events, and is a perfect destination for a romantic dinner or night out with friends. www.tavolotulsa.com
MIXCO
SPEAKEASY ST Y LE BAR In 2017, Justin Thompson Restaurants added MixCo to the group — a speakeasy-style bar located across from the BOK Center in downtown Tulsa. Specializing in creative
and classic craft cocktails and delicious shareable plates, MixCo's kitchen stays open late and is the perfect place to grab a bite and a drink before or after your show
downtown, or just for a romantic and intimate dinner date. www.mixcotulsa.com
SO PROVIDING AN ENVELOPE OF CASH AND TELLING PEOPLE TO SPEND IT IN 48 HOURS ISN’T EXACTLY A CHALLENGE, BUT IT MAKES THIS ASSIGNMENT SOUND A LOT MORE INTERESTING.
918 $91.80 IN 48 CHALLENGE
STOP #2
STOP #1 Went to Savoy on a Sunday morning around 10 a.m. It was very busy and we had to take a number and wait to be seated. However, the wait was not long and before we knew it we were having a difficult time deciding what to order. We started off with their famous cinnamon roll. It was flaky on the outside and gooey on the inside. A perfect balance between sweetness and cinnamon.
The only catch was that they had to spend it at places, events or shops profiled in the February 2018 issue of Preview.
Later that afternoon we weren’t very hungry, but wanted to continue the $91.80 Challenge. We went downtown to Ida Red. I had a hot fudge sundae with chocolate whipped cream. It was everything you think a sundae should be. They gave me two scoops of ice cream, and I picked cookies and cream and chocolate caramel. It was delicious. Brittany got a chocolate milkshake, beautifully topped with whipped cream and a cherry. The service was great and very helpful. After our ice cream, we looked around the store. There was plenty of neat stuff with a very cool selection of unique Tulsa clothing and fun gifts. COST: $9
STOP #3
On Monday, we had dinner at Maryn’s Taphouse and Raw Bar in Jenks. When first walking in, we saw a big blackboard that showed all the specials they had throughout the week. Monday is $7 burger night. We only had about $40 left, and we knew it would be tight if we wanted to stay under budget. We started off with a half order of Oyster Lobsterfella. The appetizer is oysters topped with lobster, parmesan, spinach, cream cheese and Japanese bread crumbs. They are broiled and served on a bed of whole sea salt. I chose the jalapeno cream cheeseburger for dinner. It was really good. It came with a side of fries that were also very tasty. Brittany is a big fan of nachos and she had spotted that Maryn’s had a nacho selection. The nachos were fairly standard but with queso instead of shredded cheese and homemade tortilla chips. They, too, were very good. She picked the pork option, and it was moist and had a really good flavor. It came out on a fairly good sized baking sheet, more than enough for the both of us.
Brittany, wanting to venture out of the norm, decided on chorizo eggs Benedict. The hollandaise sauce was excellent and the chorizo had just enough spice to give it that extra bite. She paired that with a side of home potatoes; the two went together like Tulsa and road construction. I chose the chorizo skillet — a blend of eggs, chorizo and cheese on a bed of home fried potatoes. The plate was accompanied by a side of salsa, which I immediately used to top off this hearty breakfast fusion.
The mission posed to James Bailey and Brittany Spurrier was to spend $91.80 (we used the local area code for the amount) in two days. And if they could find fun and free activities … bonus.
We still had a few bucks left, so we found a dessert that fit our budget. The Chocolate Overload Cake is filled with chocolate mousse. It was served warm with a scoop of vanilla ice cream and drizzled with a bourbon and cinnamon cream sauce. COST: $38.49
END
We had a great time. I had not been to any of the places that we went, and Brittany had only eaten at Savoy once. I would recommend all of these places.
COST: $42

FROM ITS WINDY CITY BEGINNINGS IN 1967 TO ITS ADULT CONTEMPORARY DOMINANCE IN THE ‘80S AND ‘90S, NO OTHER ROCK BAND HAS DONE IT BETTER WITH HORNS DESPITE LINEUP CHANGES AND OVER 50 YEARS OF TOURING. BY DONNA LEAHEY PHOTOS BY PETER C. PARDINI
Chicago, the powerhouse self-described rock ‘n’ roll band with horns, enters its 51st consecutive year of touring. Billboard lists this iconic band as the greatest of all time in both singles and album chart success. As one of the rare rock bands backed up by the energy of brass and sax, Chicago has put out over 20 Top 10 singles, including “Does Anybody Really Know What Time It Is?,” “Feelin’ Stronger Every Day,” “You’re the Inspiration,” and “Saturday in the Park,” to name just a few. Chicago is bringing a show unlike any other that they’ve done to Tulsa. Chicago will perform their double album Chicago II in its entirety as the first set of the concert. Lots of bands perform a whole record as a show, but for Chicago, that’s just the first set. The band will take an intermission, then come back for “the world’s longest encore” filled with many of their greatest hits. Founding member Lee Loughnane called in from Las Vegas to talk to us about their upcoming show at River Spirit Casino Tulsa’s Paradise Cove concert venue.
Q.
WHAT SHOULD FANS EXPECT FROM THE LONGEST ENCORE IN HISTORY?
A.
Peter [Schivarelli], our manager, came up with that world’s longest encore thing. You know, normally you do one or two songs in an encore, but we are presenting the second album which, when we recorded it, along with the first album, that’s all we had in our legacy, so we only played the first and second album. We didn’t have enough hits back then, so we’d play some of the cover songs that we played in the clubs. We had some Beatles songs and a couple R&B tunes that we had to play to fill out our set.
Now we have so many hits, we can’t play them all in a one-night show. Because the first album [Chicago Transit Authority (1969)] has now gone into the Grammy Hall of Fame, the second album is in contention for it as well. So, we decided that we should relearn it and see if we can play it live for people. As we were relearning the songs, we realized that these are some really

Everybody who has come in as a replacement has made the band better. I’m not sure why that is still occurring, but it’s still happening now. We have three new guys. Wally’s [Walfredo Reyes Jr.] been with us, but he’s replaced Tris Imboden on the drums, and Wally’s brother, Danny Reyes, is now playing percussion parts. Jeff Coffey has left the band and been replaced by Neil Donell, a Canadian singer. And he is great. He got standing ovations at his opening. And Brett Simons is going to be playing bass parts and background vocals. Along with Lou Pardini and Keith [Howland], me,

A lot of the music that you hear is not as musically challenging as some of the stuff we do. CS CONVERSATION STARTER
As Olivia Newton-John arrived stateside in the early-‘70s, she quickly became a successful crossover artist, landing hits and awards in both the country and adult contemporary music genres. Her lead role in the movie version of the musical Grease, however, led to more movie roles and transitioned her into the pop charts, where she had her biggest career hit with the album and single, Physical. Her career may have slowed by the late‘80s, but after successfully fighting breast cancer in the ‘90s, she continued to record while also being active as an entrepreneur and activist for health-awareness issues. Her continued popularity included guest appearances on shows like American Idol, Glee, RuPaul’s Drag Race and Dancing with the Stars. Even after being re-diagnosed with cancer in 2017, Newton-John continues to tour.

20 MARCH 2018
SHORTLY AFTER PLAYING IN TULSA LAST YEAR, IT WAS REVEALED THAT YOU HAD BEEN RE-DIAGNOSED WITH CANCER, THIS TIME METASTASIZING IN YOUR LOWER BACK. HOW ARE YOU CURRENTLY DOING AND APPROACHING TREATMENT?
I’m doing great. I’ve done photon radiation treatment and many natural therapies, and I feel great. I postponed some of my shows from the summer after the diagnosis and finished rescheduling those in December. I am really looking forward to seeing my fans and being onstage in Tulsa.
YOU WERE ONE OF THE EARLY FEMALE ARTISTS TO STRADDLE THE LINE, EVENTUALLY CROSSING OVER FROM COUNTRY TO POP AND ROCK SUPERSTARDOM, ARGUABLY THE PREDECESSOR FOR ARTISTS LIKE SHANIA TWAIN AND TAYLOR SWIFT. DO YOU EVER CONSIDER THE ROLE YOU LIKELY PLAYED IN THAT EVOLUTION?
Grease was such a special time in my life and for my career. While on set, we knew it was special, but we had no idea how big it would become. I never went to a school like that in Australia, so it was a fun time shooting, and to this day, I remain close with many from the film, especially John [Travolta] and Didi [Conn]. When I was doing my show in Vegas, at the Flamingo, a lot of the film cast came to see the show and joined me onstage for “Summer Nights.”
IN 1980, YOU WERE THE FEATURED LEAD IN XANADU. ALTHOUGH THE MOVIE ITSELF BOMBED, THE SOUNDTRACK WAS
Q.
You know, they turned it into a Broadway musical, and it was fantastic. I was there opening night and laughed so hard. Dancing with Gene Kelly was a particularly fond memory. I mean, how many people can say that? And he was so wonderful and really helped me. I’m a lucky girl. I got to dance with John Travolta in Grease and Gene Kelly in Xanadu. Who could ask for more?
OVER YOUR CAREER, YOU HAVE PERPETUALLY CONTINUED TO EVOLVE MUSICALLY, AS WELL AS WITH YOUR BRANDING AND IMAGING.
A.
Q.
Yes, there were many script issues [with Xanadu], but Kenny Ortega, our choreographer, was truly ahead of his time by including street dance, breakdancing and so many types of dance in the film. Of course, the music was a big success, and that was John Farrar’s influence by writing some great songs like “Suddenly” and “Magic.” And Jeff Lynne [ELO] wrote the title song, which everyone seems to love.
I think as an artist, you are always looking to do new things and flex your creative muscles. I remember after we finished the song “Physical,” I had second thoughts and told my manager it was too much and that we had to pull it. He said it was too late as the song was racing up the charts. That song allowed me to move into some new music. [Released in 1981, “Physical” spent 10 weeks at No. 1 on the Billboard Hot 100 and became Newton-John’s biggest American hit.]
YOU’VE ALWAYS BEEN MULTIMEDIA SAVVY WITH A PRESENCE IN MUSIC, MOVIES AND TELEVISION. DID YOU SEE ANY NOTICEABLE BOOST IN
POPULARITY OR PUBLIC INTEREST AS A RESULT OF THOSE APPEARANCES?
A.
Q.
When fun opportunities come up, I do them. Glee was so much fun, and working with Jane Lynch was hilarious. RuPaul is just so wonderful and ahead of his time too. Dancing with the Stars was a fun opportunity, and Julianne Hough was about to play Sandy in a TV version of Grease, so it just seemed to be a fun thing to do. I had a blast on all three, and I’m sure it did bring a newer audience to my music.
WHAT OR WHO IS CURRENTLY IN YOUR PLAYLIST? WHAT CURRENT ARTISTS ARE YOU IMPRESSED WITH?
A.
Q. A.
There are so many wonderful singers out there. I love my daughter’s [Chloe Rose Lattanzi] music. I’m also a big fan of P!nk, Sam Smith, Rihanna and my fellow Aussie, John Farnham.
WHAT DO YOU HAVE PLANNED IN THE FUTURE? There are some upcoming projects in the works that I can’t talk about just yet, but at the moment I am so proud of my latest album, Liv On, which I recorded with my friends Beth Nielsen Chapman and Amy Sky. The album is meant to help people going through grief or some sort of loss. It’s overwhelming to see how many people the music is helping as they go through a difficult time.

After chasing the proverbial brass ring following their stint on The Voice, ALASKA AND MADI have found a
degree of contentment in their success thus far, while still working to expand upon it and reach the next level. BY G.K. HIZER
PHOTOS BY MARC RAINS
The first thing you’ll likely notice when sitting down to chat with Tulsa-area singing duo Alaska and Madi is just how relaxed and how much they seem unaffected by the level of success and fame they have achieved so far in their careers. Never ones to take themselves too seriously, the pair are equal parts friends and partners, polar opposites who came together to complement each other near perfectly. Since gaining attention as contestants on The Voice in 2014, the pair have bought a house in Nashville, Tenn. — splitting time between there and Tulsa — done their best to immerse themselves in the Nashville music scene, and toured nationally on the summer circuit. Even so, none of it has gone to their heads. Even a discussion of their career path comes tongue in cheek. When looking back at a relatively busy summer of touring in 2017, Alaska explains, “Our agent books mostly fairs and festivals, which is great, because we’d go to the fair pretty much every day if we could, just to eat.” “So we get paid to go sing and people bring us food,” Madi

follows, completing her singing partner’s thought. “It’s just about the perfect arrangement.” “Yeah, our life revolves around music and food,” Alaska expounds. “We’ve even got pizza on our contract rider — but it’s got to be a classic cheese pizza. It’s hard to screw that up.” That sentiment alone sets the pair off, reminiscing about the New Jersey based pizza that they found at the Pennsylvania State Fair last summer, where they opened for Cole Swindell, and vowed to take the pizza truck on tour with them, after visiting every afternoon while they were there. Make no mistake: these girls are serious about their food, as well as their music. Perhaps the duo’s success can be attributed as much or more to fate than any masterplan. This young pair’s partnership reaches back to middle school, when each joined the youth singing group, Oklahoma Kids. For Madi, who had been in gymnastics, an injury led her to redirect her attentions to her love of singing. For Alaska, the free-spirit with self-proclaimed “do whatever” attitude, after doing a little bit of everything, including pageants,
a decision to focus on singing led her to the group.
bribery (a promised trip to Schlitterbahn sealed the deal).
Admittedly, the two initially hated each other, as they fought over the affections of the same boy within the group. The pair were ultimately put together for a Christmas performance, however, and between rehearsals, performances and an in-between trip to Old Navy for matching belts, they formed a bond over their love of music and mutual frustration at the girl who did win over the boy.
By the pair’s own admission, the initial audition did not go well. “We sucked that day,” Madi shares with a laugh. “We did a country version of “Billie Jean” and it just didn’t go well.”
The two kept their bond throughout high school, even though Madi attended Jenks and Alaska was at Broken Arrow, and were set to go to different colleges: Alaska to the University of Tulsa and Madi to school in Texas, even though both agree it didn’t seem a good fit. That’s when fate and reality TV stepped in. Ironically, the duo had no intentions of auditioning for The Voice. It was at the suggestion of their mothers that The Voice became part of the conversation. And while the girls initially declined, citing a terrible experience when auditioning for X Factor at the age of 13, they relented with a little old-fashioned
Things went slightly better during their stint on The Voice. “We didn’t know it at the time, but later we found out that the president of the casting company was sitting in on each of our auditions,” Alaska says. “We’re still not really sure how we got so far, but apparently she liked us because we were just normal kids and relaxed. We really didn’t care, because we figured we had nothing to lose.” As the girls exited the show, both 19 years old, they found themselves at a crossroads, asking, “What now?” As the pair returned to Tulsa, they looked to find a manager and started work on their first album, which they completed in two months, recording the first seven songs they ever wrote, along with a few covers. The pair also met their current manager, Jim Halsey. Halsey has guided the careers

Two weeks after showing interest and getting their hopes up, Big Machine released a debut by Maddie & Tae, a similar female country duo. “We spent a lot of time trying to climb the ladder,” Alaska says. “At least that’s how I looked at it. I was always trying to figure out ‘How do we get where they are?’ or ‘How did they get ahead of us and what do we need to do to get there?’ “Now we just want to play. Of course, we’d still like a record deal, but most of all, we enjoy singing and just want to play.” Five years after graduating high school and their first audition for The Voice, things are moving a bit slower and that’s fine by this duo, as they’re settling into their lives. Madi is engaged and getting married in April, while Alaska is transitioning to Nashville and focusing on a songwriting career. “It’s funny to me now,” Alaska says, “because I wouldn’t have expected to be content with where we are now, but I’m really enjoying it.” Looking back on their experience with The Voice,, the pair agree
“It opened a lot of doors for us, but that window of opportunity is really about a year and a half, maybe two years max. Nobody cares now.” That’s not necessarily the case, as they still have fans out there and enough of an audience to keep them touring. This year promises to have them out on the road most of the summer playing the festival and fair circuit again. And as Alaska’s songwriting career gets traction, it could open more doors and lead to that elusive record contract, much like it has for Swindell and Maren Morris. In the meantime, Alaska and Madi will continue to shine with their performances and enjoy the opportunities in front of them — and the food that comes with it.

The duo seemed to be making headway and followed up some interest from Warner Brothers with a meeting with someone at Big Machine Records. “They asked us for a copy of our album and said they wanted to set us up with some songwriters,” Alaska says.
“We probably should have picked Adam [Levine] as our coach, but we picked Blake [Shelton] because he’s from Oklahoma and had been in Oklahoma Kids as well, so it made for good TV,” Alaska says. “I only wish we’d gone a few more episodes, so we’d have had a chance to build more social media following.

Flights of Fancy WITH SOME PIXIE DUST AND A LOT OF ENCHANTMENT, PLAYWRIGHT J.M. BARRIE’S FINDING NEVERLAND SPECTACULARLY SHOWS THAT NOTHING IS IMPOSSIBLE WHEN THE WONDER OF CHILDHOOD POWERS DREAMS AND HOPES OF LOST BOYS.
BY Gina Conroy PHOTOS BY Jeremy Daniel
If you think you know the story of Peter Pan, the boy who refused to grow up, think again. Finding Neverland, the musical based on the Academy Award-winning motion picture and Allan Knee’s 1988 play The Man Who Was Peter Pan, takes theatregoers on an enchanting journey into the life of J.M. Barrie and his struggle to find success as a playwright. Inspired by the make-believe world of not one, but four boys, Barrie learns to embrace his inner child and finds the courage to create the adventures of Peter
Pan. In doing so, he’s proven to audiences young and old throughout the century that if you follow your dreams despite adversity, something magical can happen when you believe. While Finding Neverland is inspired by true events and takes creative liberties regarding some of the facts of the real life Barrie and the Llewelyn Davies children, it is characteristic of the strict class system of 20th century Edwardian London. For the production coming to Tulsa, Karen Murphy

plays Mrs. Emma du Maurier, the grandmother of the boys — Michael, Jack, George and Peter. “She was proper with a capital P and manners with a capital M,” says Murphy. As socially conscious as the rest of society, du Maurier disapproves of the casual friendship her daughter, the mother of the four boys, had with Barrie, a married man. Though there was nothing inherently improper about their relationship, and Barrie proved to be a perfect playmate and father figure to the boys,
du Maurier and Barrie locked heads until they eventually arrived at détente.” Not only did Barrie defy the norm in his personal life, but in his professional life as well. While the upper-class expected a sophisticated theatrical experience, Barrie risked his reputation to unlock that place inside everyone who longed for the days of carefree childhood adventure. Though he met with opposition, including his own producer who believed Peter Pan held no appeal to high-society theatregoers,

the success of the show with all classes proved everyone desires to escape to an imaginary world of adventure, at least for a few hours.
“Children love the show,” says Murphy. “There are four boys under 12 and a dog. Young kids love seeing kids onstage. The boys get an enormous response every night.”
If you’re wondering if you’ll experience the magic and adventure of Peter Pan, stop worrying. “No one will be disappointed,” says Murphy. “Consistently all across America, families wait at the stage door to talk about what a powerful experience it was for them. It really is a bonding experience for the families.”
While the show will enchant the children, Murphy makes it clear Finding Neverland is not a children’s show — it’s a family show. “There is lovely adult humor that goes over the children’s heads and is steady throughout the show so the adults stay engaged as well.
The tremendous success of the touring show proves audiences long for the adventure Barrie and the boys brought to the stage. While many musicals are geared to an adult audience, Finding Neverland is family friendly, and has something for everyone. “That’s one reason it is such an enormous hit on the road,” says Murphy.

AS A PREMIER GAMING AND ENTERTAINMENT DESTINATION, HARD ROCK HOTEL & CASINO TULSA HAS A LOT TO OFFER TO RECREATE THAT VEGAS FEEL WITH OVER 2,400 E-GAMES, 34 TABLE GAMES AND 14 POKER OPTIONS. By Michele Chiappetta
Love the idea of hitting the Las Vegas strip, but the cost of airfare and hotel space isn’t in your budget? We hear you. Spring is in the air, but so is tax day, and you want to budget your fun and vacation time with that possible IRS payment due April 15 in mind. So, we’ve got the perfect suggestion for a way to have a budgetfriendly time that gives you a Vegas, rock ‘n’ roll feel here in Tulsa. We’re talking, of course, about the Hard Rock Hotel & Casino Tulsa, located conveniently right off Interstate 44 in Catoosa. As a premier gaming and pampering destination, Hard Rock has a lot to offer to recreate the feel of The
Hangover, without the price tag. (Maybe without the hangover, too, but that’s up to you.) The gaming available at Hard Rock is impressive, to say the least. Gaming manager Lee Egdorf shared about what the Hard Rock has to offer to those who love the bling, the lights, the clanging and ringing of slot machines, as well as those who can’t wait to live it up at the table games like a high roller. “We have over 2,400 e-games [electronic slot games], over 1,000 penny machines, up to three $100 machines,” says Egdorf. “There’s a game for any budget.” There are also 34 table

Other popular electronic games you might want to try out are the Superball Lotto, video poker, The Walking Dead, The Big Bang Theory, and other pop culture style games that feature video clips from their TV shows as part of the fun. And Hard Rock pays attention to what customers like. “We got Elvira and Ghostbusters just for Halloween,” says Egdorf, “but they were so popular, we kept them.” And with true Hard Rock style, some of the games tie into the music scene in unusual ways. “The ZZ Tops are signed by ZZ Top,” says Egdorf, who explains that the musicians signed all
On Rockin’ Tuesdays, members of the players club can show their One Star Rewards cards to redeem a coupon for The Buffet that’s either for half-off or two-for-one, their choice. There’s also a special kiosk game players club members can play to become eligible for different amounts of rewards play, ranging from $5 to $5,000. On Payday Thursdays, guests can play a special kiosk game where they can win rewards play and have a chance to win $10,000. It’s a lot of fun, says Egdorf, and people love it. Though there’s a popular misconception that casino games never pay off, it’s not true. They can pay off big time, and Hard Rock is happy to make those payoffs when they happen. “We paid one Wheel of Fortune winner over $600,000 last year,” says Egdorf. “I want my regular customers to be the ones who hit.”
The non-smoking area of the Hard Rock is expansive too. “We have the largest non-smoking section of any that I know of in the state,” Egdorf says. “We cater to this need. So, our non-smoking section is actually an entire building, a very large area, including the hotel, restaurants and even the bar. I don’t know of another non-smoking sports bar in the area.” This smoke-free area offers not just electronic slots but also many table games, to give visitors a wide choice of fun to choose from. Of course, Hard Rock visitors can also enjoy other events along with gaming, like a visit to the resort’s many restaurants, buffet, spa and concerts at The Joint: Tulsa.

If you are looking for the newest games on the market, Hard Rock is a great place to visit regularly. “We’re often first to market on new games,” says Egdorf. But of course, they also have the triedand-true games that everyone has loved for years, like Mr. Money Bags, Hot Red Ruby and The Simpsons.
Among the weekly gaming features that customers can count on are Rockin’ Tuesdays and Payday Thursdays, both fun and popular with regulars.
“I don’t smoke,” says Egdorf, “so I’m always really interested when I go someplace and they have a nonsmoking section. At Hard Rock, when you park in the parking garage and come in the door, you’re not walking through a smoking section.”

The statewide progressive e-games are played in just about every casino in Oklahoma, increasing in jackpots everywhere until someone hits for a payoff. Wheel of Fortune, Harley-Davidson and other similar progressives are very popular, and Hard Rock offers them all.
For those who visit the casino on a regular basis, Hard Rock is proud to offer a players club with rewards for regular, repeat visitors. “Our players club is one of the best around,” says Egdorf. “It’s free to join. When you sign up, you are vinyl [the first tier], and to get to gold [the second tier] is really easy because it’s only 200 slot points, two hours of table play or two hours of poker play to get there.” The players club offers great rewards too, like a birthday gift card or free play, retail and food discounts, and more.
Another popular misconception that Egdorf is happy to dispel is the idea that with casino gaming comes the inevitable cloud of cigarette smoke. That’s not true either, especially at the Hard Rock Tulsa, which is committed to offering a serious, luxurious, completely non-smoking gaming area for those who don’t smoke.

Among the slot machines are hundreds of styles and games to play, which means that whatever you like to play, you’ll probably find it on the Hard Rock’s casino floor. They make sure to offer the popular statewide progressive games, standalone games, old favorites and new ones, to fit every taste. “It’s kind of like a grocery store,” says Egdorf. “You’ve got milk and bread, and there’s specialty items.”

Rest assured, friends: You don’t have to be Martha Stewart to have your house looking spic and span this spring. But be sure to set aside at least a couple of days to tackle projects like the ones suggested here. Some cleaning experts even suggest dedicating 30 days for spring cleaning and handling a small amount each day.

WITH THE FOLLOWING DIY TIPS AND TRICKS, YOU CAN KNOCK OUT YOUR SEASONAL SPRUCE-UP QUICKLY SO YOU CAN ONCE AGAIN HAVE A PICTURE-PERFECT HOME. By Lindsay Morris
36 MARCH 2018
Also, consider taking a holistic approach to spring cleaning. You shouldn’t only focus on the inside of your house when you’re spring cleaning; you should also focus on the outside as it may have gone through a brutal winter and is preparing for a hot summer. In addition to cleaning, you should consider performing quarterly, monthly or perhaps even annual home maintenance tasks such as changing air filters and smoke and air quality detectors. With the following DIY tips and tricks, you can knock out your seasonal spruce-up quickly so you can once again have a picture-perfect home.
—
—
TEST SMOKE AND CARBON DIOXIDE DETECTORS Your detectors should have a “test” button. If you press it and the alarm sounds, your battery life is good. If not, it’s time to replace the batteries. If it still doesn’t sound after you replace the batteries, you may need to check for battery corrosion or look into getting a new detector. It is also recommended that you change the batteries every six months, even if they are functioning. —
—
CHECK EXTERIOR DRAINAGE IN YOUR YARD Does rain water flow away from the house? Puddles should not stand around your house for more than 24 hours. If water stays, first check your gutters. They may need to be cleaned, or you may have a bad connection. Second, you may need to do some grading with dirt around your home to prevent water collection. The third option would be to have professionals install pavement around the house. —
—
THROW TOYS IN THE DISHWASHER Children are always spreading germs, which inevitably get to their toys. Cleaning toys is quick and easy if you just throw them on the top rack of the dishwasher, though. As long as they aren’t electronic, of course. Stuffed animals can go in the washing machine on “gentle,” with warm water.

—
CLEAN CARPETS AND UPHOLSTERY Fabrics that have absorbed a winter’s worth of dirt and germs (yuck!) will need a deep cleaning to get them ready for another year of wear. If you choose to rent a machine to shampoo carpets or upholstery, practice first in an unobtrusive area to make sure you have conquered the machine and that the treatment won’t discolor fabrics or cause dyes to run. After you’ve cleaned the carpets, open the windows to speed the drying process. —
—
WORK FROM THE TOP DOWN Dusting, wiping down counters, cleaning windows, etc.,http://goodstuffnononsense.com/free-stuff should be done from the top-down to prevent having to clean the same areas multiple times and to consolidate cleaning space.

PROTECT YOUR FLOORS To protect the floors in your kitchen and other areas from another year of wear and tear, wax or apply a sealer. The simplest method is a combination wash-andwax floor cleaner. No-wax floors don’t need a polishing treatment, but an occasional makeover will keep them looking fresher and add a protective buffer that could help them last longer. You’ll be sliding in on those waxed floors like Tom Cruise in Risky Business in no time!

WASH WALLS, BASEBOARDS, CABINETS AND WOODWORK Use a sponge and dishwashing detergent to wash the surface of these areas in sections. A sponge mop will help you reach higher spots. Use two buckets: one for dishwashing detergent solution and another for wringing your sponge. Dry the walls and woodwork with a clean cloth. —
—
DON’T SCRUB THE MICROWAVE Cleaning your microwave is as easy as heating up a cup of water and vinegar for a few minutes. The condensation will soften any food debris stuck to the walls or door and let you wipe it off easily. This will also work with a wet sponge, and will sanitize the sponge at the same time. —

CLEAN CEILING AND LIGHT FIXTURES Zap dust and dirt from ceiling fans and air conditioner vents with a cloth and a vacuum with a soft nozzle attachment. A few minutes with a stepladder, allpurpose cleaner, a sponge and a polish cloth will help your home lighting to shine brighter. If your home has skylights or tall ceilings, you might want to invest in a stepladder and extended-reach dust-and-dirtremoval tools.
with an attachment hose to remove dust and lint. Built-up dust can shut down the unit by causing it to overheat. —
—
INVEST IN MAGIC ERASERS When in doubt, pull out the Magic Eraser. These things really are magic, and remove everything; including water stains, scuff marks, crayon on the wall, and grime around the sink drain. Keep a bunch of these handy, and they’ll make tough jobs simple and quick. —
—
CLEAN WINDOWS, BLINDS AND SCREENS Wipe down your windows with a rag and soapy water, then dry them with a dry rag. You could also invest in a windshield squeegee from an auto-parts store. Clean window screens with a scrap of carpeting. You’ll be amazed what a powerful tool it is at removing all the dirt. Use socks to clean blinds. —
— Where the locals have been going since 1975!
INSPECT COMFORTERS, BLANKETS AND PILLOWS If they look like they need spot cleaning, a run through the laundry or a trip to the dry cleaner, then plan accordingly. Sometimes, however, bedding just needs to be aired out. If that is the case, hang them on a clothesline for a day.

WHETHER IT’S A BRACKET POOL FOR YOUR OFFICE, FAMILY POOL FOR FUN OR BRAGGING RIGHTS AMONG YOUR BUDDIES, HERE ARE TIPS THAT WILL GIVE YOU A BETTER SHOT AT VICTORY. BY JOHN TRANCHINA Once reserved for just stat freaks and die-hard basketball fans, the phenomenon of March Madness bracket pools has gradually become a time-honored tradition for millions of people every year. The truth is, you don’t have to know a lot about college basketball to accurately predict how the annual NCAA tournament will play out. In fact, as many so-called experts will tell you, sometimes too much knowledge is a detriment. It’s easy to overthink it and often, that’s not necessary. College basketball’s championship derby is an entertaining blast — complete with thrilling upsets and buzzer beaters — but it’s increasingly become a pressurized, almost compulsory endeavor, as hardcore fans and newcomers crunch data, consult athletic friends, and cluelessly guess to select the winners of a tournament that concludes April 2 at the Alamodome in San Antonio. Each year, about 50 million people take part in online, office and “friendly” pools, filling out brackets and predicting how NCAA men’s basketball teams will fare with cash or bragging rights on the line. There’s no basketball spectacle quite like it, and no shared event that brings a workplace closer together, other than free doughnuts. The NCAA Tournament comes around every year, which is great
38 MARCH 2018
for those of us who believe it to be the greatest postseason event in sports — the first two days of which are particularly dramatic and exciting. But the reliability of this annual phenomenon comes with a downside — your boss knows that at best you’re going to slack off more than usual during these two days, and at worst you’ll be calling in “sick” at some point. Never mind that you’ve entered for the last 10 years, have had your bracket obliterated after the first weekend every time, and sworn you would never again waste time and effort on such a fool’s errand. This is your year, because you’ve learned from your mistakes and will do things differently this time around. Not sure about how to fill out a bracket for your pool? Fear not. Even the most respected college basketball experts can have a hard time figuring out which teams are destined for the Final Four. Luckily, years of trial and error have provided a rough blueprint for bracket success. With a combination of mathematics, a general understanding of bracket etiquette and a bit of research into tournaments past, even a novice has a chance at dancing their way into the Final Four alongside their Cinderella pick. Here are some things to consider that can help you do better in your pool this year.
PICK SOME UPSETS, DON’T JUST PICK THE HIGHER SEED
The first point is, when you’re dealing with the middle seeds, especially the 8-9 and 7-10 games, even the 6-11 seeds, there’s not a whole lot separating those pretty good, mid-range squads. There are always upsets in the early rounds, with double-digit seed teams advancing to the Sweet 16 almost every year. Last year, 11 seed Xavier played Cinderella, reaching the Elite Eight. But don’t go crazy picking a 16 seed to upset a 1 seed. That is almost a virtual certainty not to happen. It’s also extremely rare for a 15 seed to defeat a 2, or for a 14 to beat 3. You really can’t risk picking that, because everyone else in your pool will pick the 2 or 3 to win and if they do, and especially if they go deep in the tournament like many will likely predict, you will lose valuable points. If one of those monumental upsets does happen, don’t worry too much, because everyone else will also have picked it wrong, and it won’t cost you much lost ground.
And when deciding between the top four seeds in the Sweet 16 and Elite Eight rounds, don’t just pick the top seeds. If you look back, every year, 2, 3 and 4 seeds (or higher) have reached the Final Four. Last year, it was 7 seed South Carolina and 3 seed Oregon. Only once (2008) have all four top seeds made the Final Four in the same year. Still, count on at least one, probably two, 1 seeds getting that far. Plus, what’s the fun in just picking all No. 1s? That’s like going to England and eating frozen fish sticks.
PICK POWER 5 CONFERENCE TEAMS OVER MID-MAJORS
It used to be that the general rule was to pick the teams from the elite, so-called Power 5 Conferences (which includes the Big East in basketball, even though that makes six) whenever they faced a team from one of the midmajor conferences, because they were used to facing better competition. The last several years, though, that really hasn’t been as true, as top talent further spreads out across the

college basketball landscape. Of course, one prime example is Gonzaga, which plays in the West Coast Conference and reached the national championship game last year after spending much of the season as the No. 1-ranked team. Still, all that said, the savvy bracketeer would be more inclined to favor teams from the better conferences like the Big 12, SEC, ACC, Big 10 and Pac-12, as well as the Big East.
DON’T GET CAUGHT UP IN CONFERENCE TOURNAMENT RESULTS
It isn’t necessarily true that teams that win their conference tournament go on to enjoy success in the NCAA tourney, while the reverse is also accurate. If a high-level team loses early in its conference, it doesn’t mean they won’t advance far in the NCAA. So, don’t put too much stock in how certain teams do the week before the Big Dance. Last season, Kansas lost in the Big 12 quarterfinals, but was still a 1 seed and reached the Elite Eight. Iowa State ended up winning the Big 12 title, but the 5 seed lost in the NCAA second round.
Likewise, Duke defeated North Carolina in the ACC semifinals and won the tournament, earning a 2 seed for the NCAAs, but wound up losing in the second round, while North Carolina, of course, went on to win the national championship. South Carolina lost in the SEC quarterfinals, but advanced to the NCAA Final Four as a 7 seed. The list of examples goes on and on.
DON’T FALL IN LOVE WITH TEAMS ON WINNING STREAKS
Like the previous point, the hottest team doesn’t always carry it through the NCAA tournament, and any team can put it all together at the right moment. For example, Villanova entered last year’s tournament as a 1 seed on a 12-1 hot streak, including a Big East Conference title, but the defending national champions were upset in the second round by Florida. Florida, on the other hand, had gone 1-3 in its previous four games, including a disappointing loss to Vanderbilt in the SEC quarterfinals. They still earned a 4 seed, but were a team
many picked to get upset early. Instead, they wound up knocking off Villanova and advanced to the Elite Eight.
JUST ONE BRACKET
And one bracket only. Many would-be March Madness gurus decide to fill out multiple brackets in the vain hope of improving their odds at putting together a winner. Don’t be that guy or gal. In addition to drawing the ire of everyone you know, you’ll have spent hours hedging your bets with no guarantee of success. Do your research, make your picks once and hope for the best.
AVOID THE U
Sure, it’s fun to believe and pick your alma mater to improbably win game after game, but it doesn’t pay to let loyalty cloud your judgment. Do your bracket a tough but necessary favor and eliminate the school that handed you a diploma when your head tells your heart to get its act together. While you’re at it, do the same for the hometown favorite. Because everyone around you is more likely to give Homeboy U the benefit of the doubt, you’ll get an edge by bouncing them early if they choke and ruin everyone else’s bracket but your own.
If you are in an office full of Duke graduates, don’t go with the Blue Devils to win it all. If they do, you will have lots of company. And that means, for your bracket to come out on top, you will have to nail the early-round games.
THROW SOME DARTS
Maybe throwing darts at the team names will help. Or have your 2-year-old pick the teams based on the logos they like best. That may end up being just as effective as studying the lineups, figuring out who is injured, and which team does best against a pressure defense.
HAVE FUN
Don’t get discouraged. The key to winning any NCAA Tournament pool is not to have success early in the tournament, but to pick teams that last until the end. One or two teams can win it for you, even if your first two rounds seem to go horribly wrong. With office bragging rights on the line, it’s easy to forget that March Madness is, first and foremost, a sporting event. Don’t let your obsession with crafting the perfect bracket interfere with your ability to enjoy the games.

The
of
Happiness
LOOKING FOR A REASON TO VOLUNTEER? Start by looking in the mirror. While it would seem obvious that volunteering offers benefits to the community, it’s also good for us on a personal level.
With the natural disasters and man-made tragedies we’ve seen all over the country in the last year, we’re reminded time and time again that people can come together to take care of their own, no matter the cost or sacrifice. Tulsans are compassionate and willing to serve their fellow man, and we don’t just wait until some major catastrophe occurs before showing our kindheartedness. Wherever it is that we serve, volunteering helps others. It’s that simple. Tulsa and its surrounding communities rely heavily on the kind, considerate hearts of the people who live right here in Green Country. Those who have been on the receiving end of this benevolence know that volunteerism is alive and well in Tulsa. But what is forgotten sometimes is this: volunteering is darn good for you, too. Here’s a little bit we’ve found about why volunteering is the bee’s knees.
40 MARCH 2018
IT REDUCES STRESS When you help others, dopamine is released in the brain, providing a natural kind of high. This tends to lower levels of depression and reduces stress. The “Happiness Effect” recent studies have highlighted that the more you give to others, the happier you become, and therefore less stressed about any of your own burdens you may be carrying.
IT BOOSTS SELFESTEEM By helping others, a greater sense of trust and selfesteem is built. Knowing that others are relying on your help makes you feel more tied into society and feel more useful and needed, which organically leads to greater self-esteem. Knowing that others will do the same for you when you are in need promotes trust and generates self-worth and a greater appreciation of others.
In other words, the more you volunteer, the more you like people, including yourself.
IT EXPANDS YOUR NETWORK OF RELATIONSHIPS Connecting to others through volunteering adds to your circle of friends and acquaintances. If you do it often, these can become valuable relationships in the future — perhaps, even, some of your greatest life-long friends. Volunteering also helps us to keep friendships. By serving together, the camaraderie that can be created is priceless. The larger our social network, the healthier we are physically, mentally and emotionally.
IT JUST FEELS GOOD Any time you volunteer, it just makes you feel happy, knowing you made a difference in someone’s life. When you freely give your time to others, a personal sense of accomplishment develops,
which always has positive effects on our mood. There’s a threshold to reaping the full benefits of volunteering, though. Studies show that people who commit one to two hours of volunteering every week reap the fullest benefits from their service.
WHO NEEDS VOLUNTEERS? • Hospitals • Charities • Overseas development organizations • Music and arts festivals • Sporting leagues and events • Children’s camps • Libraries • Environmental organizations • Crisis lines and peer-counseling organizations • Human rights organizations • Religious organizations • Political campaigns • Senior living communities • Animal shelters and rescues
WHAT ARE SOME OF THE THINGS A VOLUNTEER CAN DO? • Coach a team • Read to children • Raise money for charity • Care for the elderly • Feed the hungry • Provide counseling and support • Run errands and do deliveries • Gather and analyze data • Raise awareness of important issues • Do cleanup and repairs in the community • Build houses or playground equipment • Care for animals • Stage concerts, plays and other cultural events • Protect the environment • Plant trees • Help out with a political campaign
IT LEADS TO LONGER LIFE Volunteering does more than just make you happy — it also has lasting benefits to the body. Studies have proven that volunteers experience greater longevity and less frequency of heart disease. The social interaction that is integrally part of volunteering significantly reduces the progress of memory loss, and may be an important way of avoiding Alzheimer’s and other types of dementia.
IT PROVIDES PURPOSE The older we get, the more we are at risk of becoming isolated and less connected to a purpose beyond ourselves. It’s easy to get set in our ways. We go to work, come home, enjoy the weekend around the house, go back to work and repeat. Volunteering constantly replenishes that sense of purpose in your life.
If you’re not sure where to begin to make a difference in someone else’s life, here are three ways to volunteer in the Tulsa area: 1
VOLUNTEER AT A SHELTER
Tulsa’s reputation for helping the homeless precedes itself. The Salvation Army Emergency Shelter downtown on Denver Avenue is part of the reason why. Food, shelter and recovery programs for people fighting poverty, homelessness, joblessness and substance abuse is what they do best. Volunteering with them any time of the year to help prepare meals provides a truly great feeling of giving back to the community. 2
HELP THE ELDERLY
Throughout the year, Life Senior Services of Tulsa has a ton of volunteer opportunities that, in and of themselves, are true rewards. Serving one-on-one or as small group assistants during activities like crafts, games, reading and special events can make a huge difference as this nonprofit changes the lives of those who have been traversing this life longer than the rest of us. 3
DONATE BLOOD
At this moment, someone like yourself is needing a pint or two, and your volunteerism is a matter of life or death. Maybe you gave during the holidays. That’s cool, but you can give again. We can volunteer blood every 56 days (eight weeks). Did you know that only about 5 percent of eligible donors ever share their blood in their entire lifetime? Encourage someone you know who’s never given, and you’ll be providing twice as much. Of course, there are hundreds of ways to volunteer in Green Country, and the benefits of doing so are limitless.

PLAYING HOCKEY IN YOUR 50S DOESN’T COME WITHOUT BUMPS AND BRUISES. BUT FOR GUYS LIKE TOM AURILIO — WHO DON’T LIVE FOR HOCKEY, BUT WOULD RATHER NOT DO WITHOUT IT — IT’S A RISK WORTH TAKING FOR THE ON-ICE PLAY, LOCKER ROOM CHATTER, AND POSTGAME BRAVADO AND BEERS. By John Tranchina Photos by Marc Rains
Tom Aurilio
42 MARCH 2018
Even though the Tulsa Knights surrendered a two-goal lead in the final three minutes, including the equalizer with just 21 seconds remaining, and wound up settling for a 3-3 tie (after no one from either team scored in the postgame shootout), the mood in the locker room afterward was still upbeat.
grew up playing hockey locally, in Broken Arrow, noted that he wouldn’t be deterred by a mere bruise.
“Hey, at least we still get to drink beer afterward,” jokes Knights defenseman Tom Aurilio, 58.
Ramon Cardiel, 59, has endured his share of hockey-related injuries, but he also still enjoys playing.
And yes, the Knights players, many of whom have been playing hockey together for over 10 years and range in age from mid-30s to early60s, were happily drinking beer even though it was about 10 a.m. on a Sunday.
“I’ve had five knee surgeries and a couple of shoulder surgeries, all from hockey,” reports Cardiel, who grew up playing roller hockey in Mexico City and has been playing with the Knights for about 10 years. “The knee was in ‘94, and the shoulders about five or 10 years ago each. I am put together with duct tape. You take a couple of Advil and you’re OK.”
That’s just how they roll. They love the game, don’t take themselves too seriously (after all, they are playing in the D League at the Oilers Ice Center on Mingo between 61st and 71st Streets), and have a lot of fun with each other — win, lose or draw. “I guess it’s just an escape from life,” Aurilio says. “You leave all that stuff outside, you come in here, you chase that stupid little black puck, and you don’t think about anything else. Everybody gives each other crap on the bench. We laugh the whole game away. It’s the last gasps any of us have of youth. We all feel like kids again.” The older gentlemen like Aurilio do have to deal with health issues, including occasional injuries, although it was the Knights’ 34-yearold goaltender, Rocky Ricci, who was hurt in this one when Aurilio’s stick inadvertently caught him in the neck at the end of the second period. Ricci stayed down for a while, but eventually got up and finished the game. “Tom was fighting with the guy in front and his stick got me in the neck,” Ricci says. “It’s sore, but I’m fine. It just kind of surprised me.” Ricci, one of the few guys on the team who
“It’s a good group of guys. It’s nice to get away for a while and just play and not worry about anything,” he says.
Cardiel points out that the game is not quite as rough as, say, an Oilers game at the BOK Center or the NHL. “The thing is, most people don’t realize hockey is a low-impact sport, as long as you don’t play checking, and the men’s league is no checking,” he says. Checking in ice hockey is any one of a number of defensive techniques, aimed at disrupting an opponent with possession of the puck, or separating them from the puck entirely. “It’s very low-impact on your knees, and you will have some contact, but it’s not anything like what you see on TV. It’s more finesse, lots of passing; it’s fun. Most of the old guys will have a very good time, do some cardio, and that’s it. No big deal.” While the Knights’ 3-3 tie with Mayhem Jan. 28 was pretty congenial, the games can sometimes get a bit intense, even in the D League (or officially, the Bronze Division), but as Aurilio points out, that depends on the make-up of their opponents. “It can get competitive every once in a while,” says Aurilio, who grew up in Boston as a
fan of the Bruins and Bobby Orr, and works for American Airlines. “It depends, usually, on the age of the team you’re playing. The younger the guys, the more competitive they want to be. Last week, we were in a real competitive game. We got beat pretty bad by some young guys who thought they were playing for the Stanley Cup. Most of the games are good, friendly games. Most every team is younger than us. There are very few guys our age playing.” “It used to be that everybody out here was so aggressive,” adds Mike Szymanski, 59, the team leader who started the Knights back in 1995 and is the manager of central operations for BP Oil. “You were playing like you didn’t have to get up for work tomorrow and you were getting paid for this. Now, it’s more about having a good time, everybody takes it easy. Even players on other teams, they get a little worked up, get a little enthusiastic, usually they listen to reason, and they take it down a notch. Because we’re old and we’ve got to get up and go to work the next day.” Besides the physical investment, playing hockey is a commitment for these guys. While their game against Mayhem had a reasonable start time of 8:30 a.m. Sunday, sometimes the games are at 10:30 p.m., sometimes during the week. They also pay a fee of $2,200 per team for the season, which, with about 10 players per team, works out to about $220 each. They just love playing hockey and will keep doing it for as long as they can. “It’s fun,” Szymanski says. “I know someday I’m not going to be able to play anymore, and I dread it.” “I notice one thing, though — the older I get, the better I was,” Aurilio says. “We talk about, if we ever get to the point where we can’t play anymore, we’ll still come out and meet in the parking lot and drink beer anyway.”

Hard Rock Hotel, & Casino Tulsa has gone all in to make sure the World Series of Poker s 46-event, 13-day tournament is a memory maker and POSSIBLE moneymaker for spectators and players. By ROB HARMON Last year, quite a few Tulsans experienced something most of the world has only seen on television. For a second year in a row, they’re going to do it again at Hard Rock Hotel & Casino Tulsa. Since the poker boom of 2003, when Chris Moneymaker won the World Series of Poker (WSOP) main event as an amateur, millions of new, inspired players from all over the world have anted up and put their poker faces on. Online poker rooms and casino tables have boomed. To be fair, that was 15 years ago. There’s been talk that a little bit of the luster has worn off. Fans of the game and those close to the industry might say it was the April 15, 2011, United States versus Scheinberg

indictment against the online poker industry — often dubbed Black Friday by the online poker community — that was the heaviest blow. However, the WSOP circuit is far from closing its tables. With the economy on a strong and steady rise, any decline in poker room attendance over the last seven years looks to be eclipsed by an explosion of tournament entries the likes of which have never been seen. Thanks to the poker gods and Hard Rock Hotel & Casino Tulsa, the 918’s hottest poker players are getting another seat at the table during a circuit event. Byron Long, senior manager of card games for Hard Rock Hotel & Casino Tulsa, has gone all in, using everything
in his arsenal to make sure the 46-event, 13-day tournament is a guaranteed memory maker. With a $1 million championship final event, it’s not just an assured moneymaker for the last player standing, but also a lot of other winners. Last year’s event saw over 7,500 entries, paying out over $2.5 million to entrants. Big names in the poker community, including the likes of Justin Gardenhire and others, will attest to the attention to detail and comfort for all the WSOP entries. “The feedback we got from the players last year,” says Long, “is that room set up and the comfort of the space we put the tournament in is the most comfortable the players have experienced. Sometimes tournaments happen on concrete floors, but being on
the Hard Rock property, the comfortable carpet flooring, the climate-controlled rooms, the 360-degree viewing of games during March Madness, for example, makes it a great place to participate in a tournament.” Long doesn’t like to brag, but he’s proud of everyone involved in the event and is sure it will be a tournament not to be missed. “The preparation that our teams at Hard Rock pulled off for last year’s event was unlike anything I’ve ever been a part of. We spent a lot of time meeting players, and there were very few problems,” he says. “I attribute that directly to the preparation Hard Rock put into planning the event. We take a lot of pride in making a good

Now in its eighth year, the WSOP circuit culminates at the Global Casino Championship ( formerly the national championship). The GCC is an exclusive, invitation-only event with a minimum prize pool of $1 million. At each stop on the circuit, which includes the Tulsa event, the main event winner earns a free seat to the GCC. The player with the most points in

In addition, another 100 players from the 2017 WSOP player-ofthe-year race each have the right to buy in to the GCC for $10,000. Any ring winner from the 2017-2018 season also has that right.

“Last year we created a players' lounge, close to the tournament area,” says Long, “where players could sit and relax between playing. They can order drinks and food and watch the ongoing action through live television feeds on big projector screens.”

Fourteen fantastic tables strategically placed around the room make it a spacious experience, which any card player will attest is quite comfortable, because bystanders don’t have to invade anyone’s personal space as they play. Considering that poker players can potentially sit for hours and hours, Long says that little things like the complimentary bottles of water, unlimited snacks and being able to charge personal devices are important elements.

I have a good eye for clothing styles, so here I am,” she says. She enjoys bringing her creative fashion flair to her customers to help them create their own personal clothing style. Though the shop’s original location was in downtown Tulsa, parking and foot traffic presented a challenge. So, the boutique moved to south Tulsa, where business is booming as ThomasMarch keeps Tulsans looking and feeling beautiful. The shop is a clothing maven’s dream for a lot of reasons, most especially ThomasMarch’s penchant for making sure there is literally something for everyone in her boutique.
“Jules carries items from $20 to $200 or more for younger ladies to the hip and fun 80-year-olds,” Thomas-March says. Sizes range from XS-3X, ensuring that everyone can find something that fits. And there are all sorts of interesting, unique, eclectic clothing, shoes and accessories to choose from, making it a different experience than shopping at a chain store. “For the most part, I carry brands not carried by big box stores or in some cases other boutiques,” she says. “Jules carries a brand of leather shoes not carried anywhere else in Oklahoma at this time. I even
have a customer who comes from Wichita [Kan.] to shop for shoes.” Favorite brands among Jules Boutique’s customers include Joseph Ribkoff, Finley, Piccadilly, Yest, Sharon Young, Jess & Jane, A.P.N.Y. and many more. “Two of my favorite brands are Dolcezza and Noah because of the fun, artistic look of both,” says Thomas-March. And there are some other unique options too. “Whimsy Rose allows a customer to design their own top or dress,” she says. “And I don’t think anyone else carries the cute, four different looks Zand skirt from Amsterdam.”

HF HEALTH + FITNESS Yoga has been touted as a powerful, lifechanging, even miracle-working way to take care of yourself physically, mentally and emotionally. The myriad health and wellness benefits attributed to yoga — weight loss, heart disease protection, alleviation of depression, and more — are enough to get almost anyone on the mat. But does it really work? Nearly 25 million Americans do some form of yoga, according to recent studies from the National Institutes of Health and the Sports and Fitness Industry Association. That’s a lot of sun salutations and downward dogs. Yoga started in India 5,000 years ago and comes from the Sanskrit work “yuj,” meaning “to unite or integrate.” We spoke with Tulsa yoga instructor Andrea C. Neil, who teaches studio and private lessons, and specializes in corporate yoga. A 200-hour registered yoga teacher (RYT), Neil is scheduled to achieve 500 hours of professional training by May 2018. She’s also a Trauma Informed Yoga teacher (TIYT). Her main area of interest is in helping those who suffer from chronic stress related to the workplace and everyday life. She has seen firsthand how yoga improves lives. “Some of the key benefits of yoga?” Neil asks with a smile. “There are a billion.” While we’re not going to list that many benefits here, we’re sharing several of the most important ways yoga can benefit you — starting from the moment you hit the mat. Let this list dispel the myths, answer your questions, and inspire you to get to the yoga studio and work on your body and mind.
54 MARCH 2018
The benefits of yoga transcend just getting a great body. With this not-just-forwomen exercise, you’ll most likely hone your mental focus, rid your system of toxins, and even be able to touch your toes. By Michele Chiappetta
YOGA IS FOR EVERYONE We know what you’re thinking — you must be fit, young, even female, to practice yoga. Not true. “We see lots of images of flexible, perfectly shaped, perfectly coiffed, perfectly dressed young folks doing yoga, which is great for them,” says Neil. “But yoga is for every body type. You do not have to compare your body or your yoga practice to anyone else, ever.” Many studios around Green Country feature instructors of different body types, teaching levels from easy to hard, making it easy to find the right class for you.
IMPROVES PHYSICAL HEALTH While any type of exercise can help improve our physical health, yoga has some cool physical benefits. For starters, yoga has been shown to reduce blood pressure, which is important for cardiovascular health. Yoga also reduces the levels of pro-inflammatory cytokines: proteins that cause harmful inflammation in the body, the precursor to many other illnesses.
BETTER FLEXIBILITY AND BALANCE Contrary to popular misconceptions, you don’t have to be super-flexible before you start a yoga practice. In fact, yoga is helpful precisely because it slowly and carefully trains the body toward increasing flexibility.
“The thing I hear most often is, ‘Oh, I’m not flexible enough to do yoga!’ Well, why do you think yoga practitioners are so flexible? Because they do yoga,” says Neil. And since flexibility and good balance help us avoid injuries, yoga is a great way to help our bodies age well.
BUILDS ENDURANCE AND STRENGTH Yoga isn’t a pseudoscientific fringe activity. It’s a legitimate form of exercise, as proven by the way it can tone your body if you practice it with regular discipline. Poses like the “plank” (the “up” position of a pushup) and “chair” (a squat that you hold) work glutes, hamstrings, thighs, arms and more. A fit yoga body is a real thing, if you work to get there.
OFFERS THE BENEFITS OF MEDITATION Yoga is more than a form of exercise; it’s also a form of meditation. It teaches practitioners to focus on the here and now, letting go of thoughts that cause stress and anxiety. Meditation has been proven to increase the brain’s gray matter. And it’s helpful at teaching us to reframe our emotional responses, giving us a greater sense of control and peace.
HELPS YOU RELAX This is a major benefit of yoga, says Neil. “In our culture, we are in a state of ‘fight or flight’
BRINGING YOUR BODY TO BALANCE
-
for long periods of time. This takes a huge toll on our immune system, and the proper functioning of all major systems of the body,” she says. “When we do certain types of yoga, we can engage the parasympathetic nervous system, allowing our body to relax. And when we relax, our bodies have a chance to heal, renew and reenergize.”
WEIGHT CONTROL Yoga’s stress-reducing power seems to have an added benefit to our bodies — weight loss. Studies indicate that by reducing our chronic stress and helping us be calmer and more in control of our emotional responses, yoga can also help us interrupt stress-related eating habits like chowing down on foods high in sugar and fat. And disrupting that habit is an important factor in keeping off weight.
CHRONIC PAIN RELIEF Because a well-trained yoga instructor can help people work carefully through body twists and other lower back and hip exercises, yoga is very successful at decreasing chronic back pain and hip or joint pain. And given how much we sit at office desks or hunch our shoulders while driving around town, we need activities that stretch out our hips and backs. Yoga is great for this.
GREATER SELF-AWARENESS Another added benefit of yoga’s meditative aspects is increased self-awareness. Yoga invites the practitioner to notice how their body feels, as well as where their mind is wandering off to, and even whether or not they are breathing deeply. As a result, says Neil, “we can learn to listen to our bodies, considering what is best and what feels good. Oftentimes in our culture, we ignore this.” Yoga helps us balance out that tendency and find a better way forward.
MAKING THE MOST OF YOGA NOW THAT YOU’RE CONVINCED ABOUT THE BENEFITS OF YOGA AND YOU’RE READY TO TEST IT OUT FOR YOURSELF, NEIL HAS A FEW TIPS TO HELP YOU GET STARTED. 1 Try different types of yoga to see what you like. “There are so many different kinds of yoga to choose from,” Neil says. “If you don’t like hot yoga, then don’t do it. There are plenty of places that offer non-heated, or warm classes. Want gentle yoga? It’s out there. Or is power more your style? Tulsa has that too.” 2 Tell the instructor if you have physical restrictions. Yoga poses can always be modified if you have lower back problems, arthritis, limited range of motion or other injuries. They can also modify poses for you if you’re pregnant. It’s best to let the instructor know before class begins, so they can coach you properly. 3 Use the buddy system. “If you need a little support,” says Neil, “invite a friend or family member to come with you. Some studios even have yoga buddy memberships.”

4 Ask for a tour or orientation if you’re new. Starting up yoga for the first time may seem intimidating, but yoga instructors can ease you into things. “If you are nervous, arrive early to class, and explain to the teacher that you are
new,” says Neil. “More than likely, they will be happy to show you around and show you the ropes.”
5 Don’t compare yourself to others. One of the great things about yoga is that it respects the individual and is a judgment-free exercise style. “Remember, we all started somewhere,” says Neil. You don’t have to be as flexible or as skilled as anyone else. You just have to do you. 6 Start out gently. If you are brand spanking new to yoga, start with a gentle class. “These classes go at a slower pace, giving you time to get your bearings,” she says. “Taking it slow and learning proper alignment will decrease the likelihood of injury, and increase your strength and flexibility at a faster pace.” 7 All you need is a yoga mat and comfy clothes. “Most studios have mats you can borrow or rent, but it’s nice to have your own if you think you will be practicing regularly,” says Neil. “So, investing in one you like is a good idea. As for clothing, just wear something that will allow you a greater range of motion — something stretchy.”

IN THE FIGHT TO LOSE WEIGHT, DO WHATEVER YOU CAN TO KEEP YOUR GOALS SUSTAINABLE AND NOT MISERABLE, WHICH WILL ALLOW YOU TO GAIN MOMENTUM AND BUILD UP TO HARDER THINGS. By Tiffany Duncan By the time you read this, I’ll be dead. Kidding! That’s just how these things always start. But really, by the time you read this, it will be the beginning of March, but magazine turnaround time makes it so that I’m writing this at the very beginning of February. Which means I have had one month so far in attempting to change my health and fitness habits in 2018. Admittedly, progress has been a bit slow, but at least it’s progress nonetheless. I’ve lost 6 pounds since I first weighed myself Jan. 1. It may just be fluctuating water weight, although I will say I feel like my face looked slimmer in some photos I was tagged in from various events, and I have started to feel less puffy in general. One big thing I’ve been making sure
to do this month is drinking tons of water; my water bottle is 32 ounces, and I’ve been trying to drink at least two full ones a day, as well as always choosing water to accompany all meals. In previous Januarys, I’ve found that I sabotage myself almost from the get-go by living under the pressure of making sure every single thing I put in my mouth could be deemed “healthy.” Therefore, I would buy a ton of groceries totally out of my cooking repertoire (all kinds of lettuce and veggies) that I did not actually know how to cook and eat. I guess I figured if there was healthy food in my general vicinity, I would automatically lose weight. Guess what? That never happened.
Keep a container of healthy, easy-to-eat snacks in your car to avoid spontaneous drive-thru visits.
Because I didn’t have a practical application for these grocery items before purchasing, I would fumble and fiddle around with them until I just got so starved and frustrated that I’d give up, and the foreign veggies would rot until I unearthed them from the fridge drawer sometime in mid-February.
OVERNIGHT OATS
This is how I make my overnight oats. This recipe makes two 12-ounce mason jars for breakfast two mornings in a row. I always start with a base of the following recipe: 1 cup rolled oats 2 cups almond milk sprinkle of chia seeds sprinkle of flax seeds 2 tbsps. honey (can also sweeten with pure maple syrup or 1 tsp. vanilla extract) I put all of this in a medium-sized bowl, mix it together, and then split the mixture into two mason jars. From there, I might add peanut or almond butter and a mashed banana to one, and frozen blueberries and a spoonful or two of Greek yogurt to the other. Other possibilities include a melted square of dark chocolate (at least 70 percent dark), carob chips, cinnamon, shredded coconut, cold brew for an added caffeine jolt, cocoa powder, or mixing in toppings like seeds, almonds, and dried fruit. Utilize Pinterest for more ideas.
58 MARCH 2018
But this year, I skipped the crazed and misguided dash around Whole Foods and decided to simply begin to make better food choices from what was already in my kitchen and let the momentum build from there. And lo and behold — it’s working! I started by changing my daily breakfast routine and worked with what was already in my food knowledge base. For example, I know that eggs and oatmeal are high in protein and low in fats and sugar, so I found ways to incorporate them into my mornings. Eggs are so insanely versatile that I rarely get tired of eating them. One morning I’ll eat two eggs fried in coconut oil on top of toasted whole grain English muffins, and then on another day I’ll make an omelet with chopped veggies and low-fat feta. Now, I know some people who’ve just read that will automatically pick up that I’m still eating wheat and dairy, but giving both of them up cold turkey is simply not feasible for me. I know myself, and I know that deprivation

BUDDHA BOWLS
In addition to overnight oats, Buddha bowls are my new food obsession. Not only are they easy to prepare, they are rich in nutrients and so satisfying. And the best part is they make it easy to meal prep for days ahead. Buddha bowls are a mixture of the following: Grains (1/4 of bowl): quinoa, brown rice, couscous, whole wheat or GF pasta. Protein (1/4 of bowl): black beans, edamame, chicken, salmon, chickpeas, or eggs ( fried, boiled, poached, scrambled). Veggies (1/2 of bowl): a mix of raw (leafy greens, carrots, cucumber, sprouts, onion, broccoli) and roasted (sweet potatoes, Brussels sprouts, zucchini, carrots, cauliflower, mushrooms, asparagus, bell peppers, beets). Toppings (a light amount): avocado, sunflower seeds, sesame seeds, Greek-yogurt based dressing, low-fat feta, lemon juice, balsamic, olive oil, hummus. will lead me to binging on something worse that’s full of carbs and fat because I haven’t yet learned how to get truly full and satisfied without wheat and dairy. Maybe down the road I’ll experiment with giving up one or both categories, but right now I’m simply choosing to make healthier choices. Another thing about breakfast: I’ve actually started eating it. Before, I would simply sleep as late as possible and skip it in my hurry out the door. I work part time in a coffee shop, so my decision to skip breakfast resulted in me absolutely starving by 9 a.m. and grabbing whatever was closest to me, which was almost always a hot and bubbly ham and Swiss croissant. I’m fairly certain I put on 10 pounds alone from them.
What’s also saving me from devouring pan cheese like Templeton the Rat (Charlotte’s Web) is my new favorite breakfast item: overnight oats. Overnight oats are rolled oats preportioned out and soaked in a liquid overnight. I use almond milk, but you can also use low-fat milk, coconut, soy, or whatever you prefer. Because overnight oats are prepped easily the night before, it’s easy to grab from the fridge and go in the morning even if you’re running late. Hearty, filling, versatile, packed with protein and absolutely delicious, overnight oats will revolutionize your
morning and allow you to begin each day with a strong start.
Overall, January was a slow start, but unlike previous years I haven’t given up yet, which is huge for me. Never discredit the small victories and simply start where you are. If you aren’t ready to give up bread, then don’t. Find other things that you can do, like switching to whole grain, drinking more water, making time for breakfast, or sweating it out in your living room, and not eating past 7 p.m. Do whatever you can to keep it sustainable and not miserable, which will allow you to gain momentum and build up to harder things.

My husband’s 30th birthday was also this month, so there was a whole week in there where I was baking cakes, cupcakes, and generally bad-for-you treats for his big blowout party. I chose to indulge a little bit and celebrate with him and everyone else, but I didn’t go overboard. I also drank a lot of water to help combat any celebratory bloating from beer and sugar calories.
I highly recommend finding a living room workout that works for you, whether it’s from a fitness DVD or YouTube channel. Getting those initial few workouts in is far less intimidating when there aren’t a bunch of strangers with perfect booties watching you.

To avoid this scenario, I do not skip breakfast anymore, and I’m happy to report that not once have I fallen prey to that desperate morning croissant, nor the resulting pan cheese. What’s pan cheese? CC COCKTAIL CONFIDENTIAL
62 MARCH 2018
There’s not much like a bloody mary to cure what ails ya on a weekend morning. Whether you like yours spicy, tangy, smoky, or loaded up with all sorts of gourmet garnishes, it’s easy to find a concoction that’s a bit more substantial than a mimosa. By Donna Leahey Whether it’s served alongside your brunch, is your brunch, or you just need a bit of the hair of the dog, the spicy and tangy bloody mary is one of the most popular morning cocktails. And with hearty garnishes, it holds its own later in the day as well. No one is completely sure who invented the bloody mary, but sommelier TC Safavi says most credit Fernand Petiot. “His granddaughter says he created it while working at the New York Bar in Paris in 1921 using just vodka and tomato juice,” Safavi says. “Most people agree it’s named after Queen Mary I for her short and bloody reign as she attempted to re-establish the Catholic Church in England.” The most basic bloody mary contains vodka, tomato juice, Worcestershire sauce, horseradish, black pepper, celery salt, and Tabasco sauce. It’s often garnished with celery, olives, lemon, and lime. “The lemon, lime, and olive contribute tart and salty flavors, just as they do for martinis,” explains Safavi. “The salt rim lets you control how salty your drink is personally. If you want less, drink through the straw. If you want more, drink from the rim. The celery is more of a visual effect and good for stirring the drink. Many people find it refreshing to eat the celery afterward, for the same reason celery is commonly served with Buffalo wings. After all that smoky and spicy, you want something crunchy with a high-water content to cool and cleanse your palate, and maybe make you feel like you ate a vegetable. “Salad is the general flavor theme of the cocktail, so bartenders everywhere will
get creative with additional vegetables, smoked meats, and other barbecue-style effects. Cherry tomatoes are popular, as is bacon.” What makes the bloody mary so popular? It has at least as much to do with when we drink it as where. Part of it is a simple love for salty things. But it turns out that everything about a bloody mary appeals to people who are drinking or have been drinking. “Particularly after a Saturday night spent drinking, the body is dehydrated, and the fatty, salty components of a typical Sunday brunch help restore your electrolyte balance,” explains Safavi. “With greasy bar food, a tart, refreshing drink provides a nice contrast and helps cut the grease. This is also why mimosas are popular. Champagne is tart, and so is orange juice. But the bloody mary — in addition to being cold, tart, and salty — is a socially acceptable way to consume a lot more alcohol before noon than half a flute of champagne.” In an extensive and varied career as a sommelier, Safavi has encountered copious creative variations on this classic drink. “Working at a French-Thai restaurant in my 20s we made bloody marys with Asian-inspired ingredients, such as Sriracha instead of Tabasco, or wasabi instead of horseradish,” she says. “At a high-end Latin club, we used michelada mix as the base. “A favorite personal recipe of mine is to go Italian with the theme and mix in roasted garlic and balsamic vinegar, then garnish with fresh mozzarella balls and basil leaves. Voila, its bloody
mary a la caprese. I almost always include paprika and cumin for their smoky, earthy tones that I feel round out the base notes of the drink. With only the bright, acidic tones of horseradish, tomato, and citrus at the forefront, a mix can start to taste like cocktail sauce to me. “Of course, some people lean into that effect and garnish the drink with chilled shrimp for good measure. That’s not wrong, but I prefer a darker and more developed flavor, like the quality a long-simmered meat ragu picks up versus a bright, fresh primavera. I am half Chinese and tend to favor Asian-style chili pastes in my recipe, particularly sambal oelek. It has a sweeter and more garlicky base, but lacks the vinegar content of Tabasco, so when I switch out the sauce, I’ll balance it with a few drops of sherry vinegar. I like to garnish with bacon, weaving a strip in between the olives, and I’m not above South Pacific-ing with fried Spam.” As the bloody mary grows in popularity, the extravagance of the garnishes grows as well. A slice of bacon or a few shrimp are one thing, but you can find bloody marys garnished with pizza, fried chicken, or full-sized bacon cheeseburgers. “There are some bars that make a game of how much food can we balance on top of this glass. There’s a point at which it’s no longer a garnish but simply the food you were going to eat with the drink, served on top of it rather than next to it,” says Safavi. “I enjoy the more outlandish garnishes visually, but I don’t fall in with the bigger-is-better fetishists.”

than that, it robs us of getting to experience what our own kitchens offer us. From chopping and dicing to simmering and sautéing, cooking is catharsis; it’s like releasing a pressure valve in the brain. Not only that, but getting comfortable in the kitchen is also empowering, as you will become less and less intimidated by the cooking process over time.
There are three pantry or fridge items most people always keep on hand: hummus, chicken stock, and guacamole. Learning to make your own version of each of these three staples will allow you to bypass the prepared foods section and avoid any added preservatives and sodium. Mastering them will also give you confidence that will serve as a jumping-off point to getting more comfortable and creative in the kitchen.
HOMEMADE CHICKEN STOCK
EATS + TREATS ET
Adapted from Dinner: A Love Story
One taste of this deep and rich stock, and you will never buy boxed, flavorless, high-sodium stuff again. Bonus: it makes your home smell like absolute heaven as it simmers. INGREDIENTS:
The bones, skin, and any leftover meat of a whole chicken (easiest to buy a rotisserie chicken for dinner one night, and then store the carcass in the freezer until you’re ready to use it). 1 large yellow onion, halved (no need to peel) 6-8 whole cloves garlic (no need to peel) Handful of celery stalks and carrots (the baby variety or real sticks)
DIRECTIONS:
1. To a large stockpot, add all ingredients and fill with water until everything is covered. Bring to a boil, and then reduce heat to a simmer for at least 2 hours, and up to 4 or 5. If stock reduces too much, add a bit more water. 2. Remove from heat and allow to cool a little. Pour the broth through a tight mesh
Handful of fresh and dried herbs of the following: sage, rosemary, thyme, parsley Any other veggies that need to be cleared out of your fridge (peppers, zucchini, scallions, parsnips, green beans, etc.) Chunk of Parmesan rind. It’s the secret ingredient that adds a creamy, sweet depth of flavor, and will have everyone slurping the last drops from their bowls. strainer into a large bowl and discard everything else. Let cool completely, then freeze 2-3 cup portions in freezer storage bags, unless you know you will be using the stock in a few days. 3. To thaw for use, run bags of frozen broth under warm water for 2 or 3 minutes.
ROASTED RED PEPPER HUMMUS
Adapted from cookingclassy.com and inspiredtaste.net
Whether you’re dipping veggies or pita chips, this satisfying hummus makes a great snack for busy schedules. INGREDIENTS:
1 (15 oz.) can chickpeas 2 large red bell peppers ¼ cup fresh-squeezed lemon juice (1 large lemon) ¼ cup tahini, well-stirred (easy to find at Trader Joe’s) 1-2 small garlic cloves, minced
DIRECTIONS:
1. Line a baking sheet with foil (not parchment), and core and deseed the bell peppers. Quarter them lengthwise. Align peppers on baking sheet and broil them in the oven for 10-15 minutes until well charred. 2. Remove from oven and transfer peppers to a gallon-size zip-close bag, seal it, and let peppers rest while you prepare hummus. 3. For hummus, begin by combining tahini and lemon juice in a food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then process for 30 more seconds (the smoother the tahini, the creamier your hummus will be in the end). 4. Add olive oil, garlic, cumin, vinegar and salt. Process for 30 seconds, scrape the sides and
2 tbsps. extra-virgin olive oil, plus more for serving ½ tsp. ground cumin 1 tsp. distilled vinegar dash of paprika, for serving
bottom of the bowl, and process again until well blended. 5. Open, drain, and rinse chickpeas. Add half of them to the food processor and process until smooth, scraping down the sides as necessary. Add remaining chickpeas and process until thick and smooth — 1-2 minutes. You will likely have to add tablespoons of water (or more olive oil if you prefer) if hummus is too chunky, until you reach that perfect texture. 6. If you prefer a little more tanginess to your hummus, add more vinegar ½ teaspoon at a time, to taste. Can also add minced jalapenos for extra spice, cilantro, or more garlic for the garlic lovers. 7. Returning to the bell peppers, remove them from the bag and slide the skins off. Dice them up and scatter over hummus, along with the paprika.
GUACAMOLE
The public obsession with guacamole is so ubiquitous now that you can literally purchase screen-printed T-shirts and tote bags proclaiming one’s love for guac. Why not learn to make and customize your own recipe for a Mexican-themed dinner party, or simply for a healthy, hearty midafternoon snack? INGREDIENTS:
4 large, ripe avocados ½ medium-sized red onion, diced 2 Roma tomatoes, diced 1 lime, juiced 1 jalapeno, seeded and minced fresh cilantro, to taste sea salt, to taste
DIRECTIONS:
1. Slice avocados in half and remove pits. Scrape avocados from their skins into a medium-sized bowl. Use a masher or the back of a large spoon to mash the avocados, leaving some chunks. 2. Add in diced onions and tomatoes, lime juice, and minced jalapeno. Mash together a bit more. 3. Tear as much fresh cilantro as desired and add to mix, along with the sea salt. 4. Stir until incorporated and serve with tortilla chips. 5. For more heat, add an extra minced jalapeno or even a Serrano pepper. For a fresher, more citrusy taste, add 2 tablespoons of juice from a freshly squeezed orange. Recipe makes enough for up to six people to snack on.

Just Dough It!
FT FOOD FOR THOUGHT
Making pasta is not as daunting or as messy an undertaking as you might have heard. In fact, making it from scratch is so simple and straightforward that there’s barely any learning curve. BY TIFFANY DUNCAN •• PHOTOS BY CHELSI FISHER Just the thought of making homemade pasta is enough to utterly confound most people, like it’s some esoteric practice belonging to tiny, hole-in-the-wall bistros in remote Italian villages. We will gladly eat handmade pasta when we see it on a menu somewhere, but making it at home? Forget it. After all, why in the world would anybody make pasta when it’s so readily accessible at the grocery store? Although dried pasta certainly has its place amid busy schedules — when even getting dinner on the table during the week is a miracle in and of itself — weekends offer the time to slow down and learn a new skill. Hand-making pasta is a good excuse to invite close friends over for an intimate dinner party, uncork a bottle of wine or two, and celebrate good food and friendship into the night. Or maybe begin a new family tradition Sunday evenings of making deliciously thick and slurpy noodles to go with chicken soup made with homemade stock. (Check out our recipe for a homemade version on Page 66.)
Making pasta may seem intimidating, but surprisingly, you probably already have everything needed to make noodles at home. There are only three ingredients involved: flour, eggs, and salt. And if you do not have a pasta maker, you can simply use a pizza cutter to cut the dough, or even a sharp paring knife. Note: This is a beginner’s recipe. Though pasta is assembled from very few ingredients, there are hundreds of variations out there using different egg-toflour ratios, using only egg yolks versus only egg whites (or combining a mixture of the two), or no eggs and using water instead. Some recipes also call for semolina flour — basically extra gluten-y flour to thickly bind the noodles. Learning to make pasta involves some trial and error, but this recipe will serve as a fun, hands-on introduction to the world of homemade pastas.
Step 1
Using a medium-sized bowl, pour in flour. Using your fingers, push flour to the sides, making a “well” in the middle of the bowl. Crack the eggs into the well.
Step 2
YOU WILL NEED:
2 cups flour, plus more for dusting ½ tsp. sea salt 3 large eggs plastic wrap
70 MARCH 2018
rolling pin a pasta maker, pizza cutter, or sharp paring knife a large, flat workspace
Using a fork, break up the egg yolks and begin to pull flour from around the sides into the egg mixture, whisking briskly from the wrist.
st h t!
FOOD FOR THOUGHT FT Step 3
Steps 6-9
(if not using a pasta maker)
When the egg-flour mixture gets too difficult to mix with a fork, use your hands to combine and make a sticky dough ball. Continue to manipulate dough and incorporate more flour until the dough ball no longer sticks to your hands. (You may not end up using all the flour.)
Step 4
Fold dough in half and roll out into an oblong shape once more. Repeat this process 6-8 times. The idea here is to get the dough as flat as possible. Using a pizza cutter or sharp paring knife, cut out lengthwise slender noodle rows. They will be long, so if desired cut them in half down the middle widthwise. Using a parchment lined baking sheet, create little pasta “nests” and cover with a slightly damp towel to keep them moistened until ready to boil.
Step 6 Dust a large, flat workspace with flour and knead the dough for 8-10 minutes. If it starts to get too dry, mist with a little lukewarm water. Once finished, mold dough into a ball and wrap tightly with plastic wrap. Place in fridge to rest for at least 30 minutes.
Step 5
Now it’s finally time to pass the dough through the pasta cutters (which feels remarkably like using a Play-Doh set from childhood). Crank the dough through either the linguine or the spaghettisized cutters (based on preference), shepherding the noodles through with your free hand. Noodles will be long, so you may cut them in half if desired.
Step 9
(using a pasta maker)
Using the widest setting on the adjustment knob, feed the dough through the flattening (not the noodlecutting yet) rollers on the machine. Fold dough in half, sprinkle with flour, and pass it through the rollers again. Repeat this process 6-8 times on the widest setting, spraying dough with lukewarm water if it gets too sticky.
Step 7
Remove dough ball from fridge and slice in half. Take half and using a rolling pin on a flour-dusted surface, roll out dough into a flat, oblong shape.
Step 8
Reduce the distance between the rollers by one notch and pass the dough through. Continue this process of reducing by one notch each time and passing the dough through until desired dough thickness is reached.
Using a parchment lined baking sheet, create little pasta “nests” and cover with a slightly damp towel to keep them moistened until ready to boil.
Step 10 Bring a salted pot of water to boil and toss in the noodles. Since they are already soft, the noodles only need to boil for about four minutes, or until al dente. Remove from heat and strain water from noodles through a strainer. Run cool water over the noodles to prevent them from sticking.
Step 11
At this point, you may do whatever you want with your noodles. Chunk them in a big hearty pot of chicken soup, or toss them with sauce. Since the noodles are delicious by themselves and don’t need a lot of dressing up, a simple pesto or light olive oil and tomato sauce will accentuate them best.

Tea Me, P lease Me
With a mission to help people build healthy lifestyles through the benefits of loose leaf tea, Tea2Go is offering plenty of satisfying options and varieties of one of history’s oldest thirst quenchers . By Lindsay Morris Photos by Chelsi Fisher When you walk into one of the two Tulsa-area Tea2Go stores, you feel like you’ve walked into a coffee shop. You’ll be greeted with an inviting beverage bar and friendly baristas. But instead of coffee, a sea of tantalizing loose leaf and brewed teas will surround you.
Business has been good for Tea2Go in the 918. The Owasso location is the top selling franchise in the entire company, which started out of Amarillo, Texas, just a few years ago. The company has a dozen locations (mostly in Texas); and Hardesty hopes to bring a few more to the Tulsa area.
Teresa Hardesty moved to the 918 from West Texas with her husband and six children in 2016. Soon after moving here, she realized something was missing — one of her favorite places to stop for a drink. Tea2Go was nowhere to be found in Oklahoma.
It’s easy to see why the Owasso location is so successful. Almost all the customers appear to be regulars. As soon as they enter, Hardesty and other employees ask if they’d like their usual or something different.
So, she got to thinking, “Why not open up a location or two?” Just 16 months after moving here, in September 2017, she opened Tea2Go in Owasso and in November 2017, opened Tea2Go in Jenks.

“We’re big on customer service and getting to know customers,” Hardesty says. In a world where Starbucks has claimed so many loyal customers through stars on their mobile app, Tea2Go has also created an incentive
program. They offer a loyalty gift card that customers can load with any amount. “You get a free drink when you load it and when you reload,” Hardesty says. It’s easy to understand how customers can become hooked once you taste Tea2Go iced chai tea that’s the perfect blend of sweet and spicy. Hardesty says they also offer a dirty chai with espresso shots. As delicious as the chai is, sweet southern peach is the most popular drink at the Tea2Go 918 locations. Customers can choose from any of their dozens of looseleaf teas — either hot or iced. In addition, Tea2Go offers a tea bar of 16 brewed iced teas, with offerings like Berry Mojito, Sweet Mint Black and Strawberry Hibiscus. Many tea bar customers even
purchase tea by the gallon for special events. Tea2Go is also all about bringing the health benefits of tea to the everyday person, Hardesty says. The company also seeks to make these healthy drinks affordable. “They’re prices that just about everybody can afford,” She says. A big part of the Tea2Go culture is educating the customers on tea. “A lot of people come in, and all they know about tea is sweet and unsweet. People don’t realize there are so many options,” she says. Tea is a huge part of culture in many parts of the world, and it’s slowly catching on in this country. “The U.S. is taking a trend toward the healthy,” she says. Tea2Go also offers matcha, a finely ground powder of specially grown and processed green tea leaves. “One cup of matcha has the health benefits of drinking 10 cups of green tea,” Hardesty says while sipping a cup, which gives her lots of energy and has even cleared up her skin.
If your tummy is rumbling during your visit to Tea2Go, never fear. They also offer snacks like beef jerky, chocolate-dipped peanuts, trail mix and cookies baked fresh each week by Cookie Mama.

Dave & Buster’s has made a name for itself for fun and food. In Tulsa, it’s pretty much one of the best headquarters for watching sports. Take your viewing to the next level at the bar with gigantic screen after screen, or anywhere you decide to sit. Any item you choose to eat during the game is always piled high with flavor. They’ve got burgers, wings, quesadillas and just about anything else you might think goes great with the big game. After guests have had their fill of that delicious, high-end food, it’s time to play. With over 80 game titles, Dave & Buster’s is certainly not lacking in outlets for fun.
Just across the street from ONEOK Field, Elgin Park has a lot of TVs and a ton of places from which to view them. However, you might forget to keep watching the game after digging into one of their amazing New Haven style, white clam or Hawaii style pizzas. With over 20 different kinds of pizza and several scrumptious flavors of wings (including vegan cauliflower wings), Elgin Park can always keep a game night rolling.
Fassler Hall has the tradition of being the most established biergarten in the state, perhaps the whole Midwest. What better place to catch the big games and watch your tournament brackets go down in flames, Cinderella style. Try a few trendy European draft beers or maybe a local one, like an F5 IPA from COOP. Munch on some of their famous duck fat fries while you’re at it. You’ll thank us for suggesting it.
One of the best neighborhood pubs on the south side of town, Fat Daddy’s is more than just a bar. Every neighborhood needs a neighborhood bar. For the last nine years, Fat Daddy’s Pub and Grille has been one of the best in south Tulsa. Nestled in the shops at the corner of 81st Street and Memorial Drive, Fat Daddy’s guides you in with a rainbow of neon signs in the floor-to-ceiling windows. The inside is dark and reminiscent of an old Irish pub. In
“It’s a neighborhood pub in its purest form. If you walk in the door more than once, you’ll see the same people,” he says. “We’re like a family. It’s an eclectic group.” Part of that family is the crew at Fat Daddy’s. He has a cook who has worked with him for nine years, and another for five. The ceiling near the bar is adorned with old fashioned stamped tin tiles and the hard wood floor holds lots of memories. The bar is festively decorated with purple Christmas lights. There’s a pair of pool tables, filling the space with the soothingly familiar sound

March is a big month for Fat Daddy’s. March Madness will dominate the TVs, and crowds will be there every night for the games. Spring break brings young adults back in town, and, best and biggest of all, St. Patrick’s Day, because everyone’s a little bit Irish on St. Paddy’s day. “We have traditional Irish stuff like Guinness Stew, corned beef and cabbage, and shepherd’s pie. We fly in Irish soda bread from a bakery in Boston, and we’ll be serving that until we run out of it. People love it. And Tulsa Pipes and Drums comes in in the evening to play.” So, if you’re looking for a place for some hearty traditional Irish food and music for your St. Paddy’s Day, Fat Daddy’s has the mood, the food, and the pipes. Welborn has a tough time answering the question of what’s most popular. “Everything sells,” he says. “Everything’s popular.” He concedes the Reuben is a popular choice along with the burgers. “We use certified Angus beef,” he says. “Not a lot of places in Tulsa do.” All the fried appetizers are tasty, but Welborn hopes you try the onion rings or the fried mushrooms. “If they try one of those, I know I’ve got them hooked.” He’s not kidding about those onion rings. They are seriously tasty as an appetizer or side dish, with tender, seasoned, light hand-breading. The thin-sliced onion is nicely caramelized and full of flavor.
84 MARCH 2018
If you like heat, Fat Daddy’s can set you up. But you better be serious about it before you order the sriracha burger, because it’s not playing around. They start with a thick Angus beef burger and top it with a layer of sautéed jalapenos, smoky ghost pepper cheese, and drizzle the whole thing with hot chili sauce. You’ll be surprised; often sriracha overpowers a meal, but with this burger, it complements the other flavors. The flavor of the jalapenos is enhanced by the sautéing and plays well with the creamy heat of the ghost pepper cheese. If you’re trying to watch your calories, Fat Daddy’s has a lighter side section with all entrees under 500 calories. Try their flavorful Mandarin chicken stir-fry or refreshing Greek salad. All the lighter side options are a great choice for a lunch that won’t make you want to nap all afternoon. For a hearty lunch, consider Fat Daddy’s spuds. You can get a traditional spud with butter, sour cream, bacon, scallions, and cheese, but why be traditional? Try a roast beef spud with caramelized onions, cheddar-Jack cheese, and a side of au jus. Or go south of the border for a spud loaded with chili, melted cheddar-jack, scallions, jalapenos, and sour cream. With six different spuds to choose from, you’ll find something to satisfy.

“Food drives everything we do,” Welborn says. He has a long background in hotel and restaurant management, which structures the menu and service. “It’s not just pub food. Not with my background.”
The Reuben is served on crispy toasted marble rye, filled with a generous serving of 100 percent certified Angus corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing. Its rich, complex flavors are balanced perfectly. Try it with the french fries, which are lightly seasoned, and perfectly fried for a crisp exterior and a light interior.

It only takes one taste of that secret seasoning, one bite of a Philly cheese steak, or one wing coated in a variety of delicious sauces for you to become an instant fan of the Memphis stylings of Rozay’s Wings and Things. BY DONNA LEAHEY • PHOTOS BY VALERIE GRANT
Roosevelt “Rozay” Walker is a Memphis native who found his way to Tulsa because he loves his wife. “She wanted to be closer to her family,” he says. He sees a great opportunity in Tulsa. “Nobody’s got the wing game. Tulsa doesn’t have a lot of wing spots.” Tulsa has lots of chicken. You’ve got wings, tenders, chunks, and nuggets; you can get it fried, roasted, rotisserie, or stir fried. You can go to a little local joint or a chain, a fancy sit-down or grab a bucket to take out.
Nestled at the far end of an unassuming strip mall, Rozay’s looks like just another diner. But wait till you get your hands on those wings, and you’ll be a believer.
But if you want some good, Memphis style and flavor, you don’t have to plan a road trip to Tennessee. Just find your way to 11th Street between Lewis Avenue and Delaware Place and let Rozay’s Wingz and Things serve you some of their extra tasty wings and things.
You can get your chicken served up just about any way you might like. They’ve got boneless chunks or tenders. You can get whole wings or wings traditionally cut into drumettes and flats. Then you can choose from all the different sauces and seasonings. And then you enjoy yourself some chicken.

The chicken is the star of the show, but make sure you don’t forget the “things” on the menu. They’ll serve you up a tasty hot dog or you can splurge on a slaw dog. They have a generous serving of savory chili cheese fries. Or you can enjoy a crispy and tasty serving of their fried tomatoes or fried pickles. They can also set you up with a burger or cheeseburger if you’re not in the mood for chicken. Not to mention a fried chicken sandwich, a grilled chicken wrap, or a crispy chicken wrap. Walker says that the five-piece wings is one of the most popular items on the menu. People love it with the honey gold sauce, which is a sweet sauce with a vinegary kick, and just a hint of heat. Walker’s personal favorite is the five-piece whole wings with his seasoning.

They’re the reason I do what I do. Without them, it wouldn’t be Chimi’s.” The Cherry Street location has incredible ambience that Fischer is very proud of. A few of the signs that used to be outside have been moved indoors, adding to the cantina feel customers have enjoyed through the years. The building that houses the restaurant was formerly an elementary school built on a bit of a hill on Peoria Avenue. It has one of the best views of the Tulsa skyline. Fischer also says that the convenient parking available is important to a lot of the customers and it’s a plus, when you consider other restaurants close to downtown don’t have many choices for parking.

“My general manager and kitchen manager met and got married here, and they’ve both been here for close to 20 years,” he says.
Originally from California, Fischer came to Tulsa as a young person, and after moving away, he had to come back to the area to make his mark on the restaurant business. He says the employees and the customers feel like a family and keeping them happy is of utmost importance.

Fischer says that nearly two dozen employees scattered among the three restaurant sites have been working for Chimi’s for over 20 years, including some who have happily married each other, as well as others whose children are now also employees of the restaurant. Fischer believes that the customers receive a sense of family when they arrive, because in a sense, he’s fostered that atmosphere in the staff members.
Customers always want to see something new, but Fischer is careful to seek input from the people who eat at the restaurant frequently. Sometimes changes he’s made have been reversed in order to keep clients happy.

“Customers and amazing employees, that’s it, 100 percent. We’ve got a great client base,” says Fischer. “We’ve got customers coming in who, 30 years ago, started coming in to eat with us. Now their children are bringing in their children.”
Fischer has enjoyed tweaking the menu here and there since purchasing the restaurant over 10 years ago, still holding on to a bit of the original Sonoran-style Mexican dishes. After all these years, the shrimp enchiladas are still the favorite of many patrons, as well as a tasty, rich seafood chowder that is impossible not to overeat. The chimichangas fly out of the kitchen as a favorite to many. Fischer recently introduced a rib-eye carne asada. It’s juicy, charred just right, and a perfectly smoked dish with tons of flavor. Without a doubt, it is destined to be a crowd pleaser. The legendary Chimi’s tortillas, made fresh in front of the customers through a glassed-off area, are some of the most flavorful tortillas around.
CA
Generations have enjoyed some of Green Country’s best Mexican cuisine at any one of the three Chimi’s locations in Tulsa. Owner Brandon Fischer attributes the restaurant’s ongoing success to devoted customers, excellent employees and the great food, of course. The chef and owner refuses to take any of the credit for the legend that is Chimi’s.
“Maybe it was my birthday coming here as a kid, something like three times. We came on a Friday once and they had the shrimp enchiladas, and I thought it was the most amazing thing I’d ever eaten. Back then, they only served it on Fridays. Now, we serve it every day of the week.”

This sounds an awful lot like Chimi’s, where the legend has continued since 1983.

Here’s how a legend is born: It begins with an incident or event worth repeating, something so special and interesting that people are compelled to repeat it. It then gets passed along by wordof-mouth, from person to person, and from generation to generation until it has been talked about time and time again, existing in the hearts and minds of countless admirers.

McDaniel’s love for everything barber-related started at a young age. “When I first started my career, I was 16 and doing an apprenticeship,” she says. “I knew I CRYSTAL MCDANIEL loved what I was doing, but I didn’t know what the next step was. So, I got with some friends and we made a beauty shop in McAlester [Okla.].” McDaniel worked there for 20 years, until she and her wife decided on a move to Tulsa at the end of 2016. Tonsorial (adj.) — a word you may not come across often, but by the end of this Once in Tulsa, McDaniel investigated rental article, you’ll be glad you did. Part old-school barbershop and part hipdestination salon, tonsorial (the lowercase “t” in the name is intentional) is the brain child of Crystal McDaniel, who prides herself on offering excellent hairstyles for those who love short hair. Tonsorial draws both men and women, though the clientele tends to skew toward men for one obvious reason — McDaniel and her fellow barber, Meriah,
“The space was small, and it was easy enough for me. I thought I would be a single chair,” she says. “But then it got busier and busier. I thought, ‘I’m going to have to hire somebody.’ So we picked up the other chair, and Meriah moved here from California.” It was a match made in barber heaven, clearly, since Meriah fit right in and helped tonsorial double its clientele in no time.

It’s not her style to do the same-old, same-old over and over, and that love of discovery proves its worth with customers who are happy to benefit from McDaniel’s experience. “We’re going to a barber expo in Connecticut in April,” she says. “We’re really excited about that, just to make sure we’re spot on with what we’re doing. Last year, I went to a shave class in London, just to make sure I’m constantly growing.”

If you’re looking for what’s super popular right now in short hair, McDaniel recommends the undercut as one option — a hairstyle where the scalp is shaved underneath, and the remaining hair hangs over it, a throwback to ‘80s style that is making a comeback. She also gets asked for cropped textured fades. The Caesar-style haircut is also in again, she says, with some tweaks that make it fit for 2018. Traditional haircuts are also always popular, as are well-trimmed beards. McDaniel can offer tips on beard care for those who need some coaching.
