APPLE CRISP TARTS INGREDIENTS • • • • • • • • • • • •

2 pie crusts, homemade or refrigerated store-bought 5 Granny Smith apples, peeled, cored, and diced 1/4 cup granulated sugar 1 tsp cinnamon 2 tbsp lemon juice 1 tbsp corn starch 1 cup flour 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1/2 tsp kosher salt 2/ 3 cup rolled oats 10 tbsp cold unsalted butter, diced

Preheat oven to 350°. Use cooking spray or grease two muffin tins. Cut 24 2-inch circles out of the pie crusts (if you run out of pie crust, gather your scraps and re-roll them to 1/4-inch thickness). Add the pie crust to the muffin tins. In a small saucepan add the apples, sugar, cinnamon, lemon juice, and corn starch. Cook for 5-7 minutes until the apples are softened and thickened. To make the crisp topping add the flour, sugar, brown sugar, salt, oats, and butter to a bowl and combine with a fork or pastry cutter. Add one tablespoon of apple filling to each muffin well. Add one tablespoon of the crumble topping on top. Spray the tops with cooking spray to help hold the crumble topping together. Bake for 18-20 minutes. Let cool completely before carefully removing.

21/2 pounds (roughly 8 cups) apples, peeled, cored, and sliced 2 tbsp lemon juice 2/ 3 cup light brown sugar 2 tsp cinnamon 1/2 cup apple juice or apple cider 2 tsp vanilla extract, optional

Add apples to a 5-quart Dutch oven or stockpot. Toss apples with lemon juice to prevent browning. Sprinkle brown sugar and cinnamon over apples. Toss to coat well. Stir in apple juice (or apple cider) and vanilla. Cook over medium heat until apples are tender. Use an immersion blender to puree apples. Alternately, transfer batches of apple mixture to a blender to process until smooth. Reduce heat to low. Cook, stirring occasionally, for 11/2-2 hours. Apple butter is done when it is thick and jam-like. It should hold its shape on a spoon and not slide off immediately. You can also test by creating a straight line through the mixture with a spatula. If the mixture holds its shape and does not immediately close the gap, it is done. Add to clean storage containers. Cool to room temperature, cover, and chill until ready to use.

Add the apples, oranges, and spices to a large stockpot. Cover with water, leaving about an inch or two of space at the top of the stockpot. Heat the cider over high heat until it reaches a simmer, then reduce heat to medium-low, cover, and simmer for about 2 hours, or until the apples are completely soft. Using a potato masher or a wooden spoon, mash all of the apples and oranges against the side of the stockpot to release more of their flavors, then cover and simmer for 1 more hour. Using a fine-mesh strainer or a cheesecloth, strain out all of the solids (apples, oranges, spices), pressing them against the strainer to release all of their juices. Discard the solids. Stir in your desired amount of maple syrup or brown sugar, to taste. Serve warm.

NOTE For a tasty apple cider cocktail, add rye whiskey or rum.

Preheat oven to 350°. Line an 8-inch or 10-inch bread pan with parchment paper or spray with cooking spray. Cream butter and sugar (see below) in a mixing bowl. Add in eggs, milk, and vanilla and stir to incorporate. Mix in flour, salt, and baking powder. Fold in apples and nuts. Transfer mixture to prepared baking pan.

Combine butter, flour, both sugars, and cinnamon with a fork or pastry blender until crumbly. Sprinkle over batter in pan. Bake for 55-60 minutes, until toothpick inserted in bread comes out clean. Let cool then remove bread from pan.

Combine melted butter, powdered sugar, milk, and vanilla in a small bowl, then drizzle glaze over the top of the bread.

Place softened butter and sugar into large mixing bowl. Mix, using hand mixer or stand mixer on medium speed 1-2 minutes, or until butter mixture is pale yellow, light and fluffy. Use a rubber spatula to scrape the sides of the bowl once or twice while mixing.

Directions: 1. Heat the oven to 400°F. Line 2 baking sheets with parchment paper. 2. Sprinkle half the brown sugar on the work surface. Unfold the pastry sheet on the work surface. Sprinkle the pastry with the remaining brown sugar. Roll the pastry sheet into a 14x10-inch rectangle. Cut the pastry sheet in half lengthwise. Cut each half crosswise into 18 (3/4-inch wide) strips, making 36. 3. Cut the bacon slices in half lengthwise, then crosswise, making 36 (about 5x1/2-inch) strips. 4. Place 1 bacon strip on each pastry strip. Twist the pastry and bacon together and place on the baking sheets, pressing down the ends. Stir the cheese and cayenne pepper in a small bowl. Sprinkle the pastries with the cheese mixture. 5. Bake for 15 minutes or until the pastries are golden brown and the bacon is crisp. Let the pastries cool on the baking sheets on wire racks for 5 minutes.

ROASTED TURKEY INGREDIENTS

In a small bowl, combine all ingredients and stir together. Set aside.

Preheat the oven to 500°. Rinse the turkey inside and out. Pat the skin dry and place on a roasting rack inside a large roasting pan. Stuff the cavity of the bird with the orange, lemon, apple, garlic, and herbs. Tuck the wing tips under the turkey. Carefully loosen the skin by running your hand between the skin and the breast meat working your way down to the leg. Take 1/4 of the butter mixture and rub it under the skin over the breast and leg meat being sure to coat as much of the turkey as possible. Repeat on the opposite side and then coat the remaining butter mixture over the skin, being sure to cover the entire turkey. Sprinkle the breast and legs of the turkey with salt and pepper and tie the legs together with kitchen twine. Roast the turkey on the lowest level of the oven at 500° for 30 minutes, and then turn the oven temperature down to 350° and insert a probe thermometer* into the thickest part of the breast. Set the alarm on the thermometer to 160°. A 14-16 pound turkey takes approximately 2-21/2 hours of roasting time total. Remove from the oven and cover with foil. Let the turkey rest for approximately 30 minutes before carving.

RIB ROAST INGREDIENTS • • • • • • •

8 pound bone-in rib roast 1 cup butter, softened 1/4 cup fresh rosemary, minced 8 cloves garlic, minced 1 tbsp sea salt 1 tbsp fresh ground black pepper 2 tsp ground thyme

Preheat oven to 450°. Let rib roast come to room temperature (this will take 3-4 hours). Combine butter, rosemary, garlic, salt, pepper, and thyme to create a paste. Rub paste all over rib roast, then place in a roasting dish, bone side down. Roast for 15 minutes, then reduce the temperature to 325° and cook for about 21/2 hours. Check the temperature of the meat by inserting an instant-read thermometer into the center of the roast. Cook to 125° for medium-rare and 130° for medium. Remove from oven and tent with aluminum foil. Let rest, tented, for 15 minutes.

12-14 pound cured and smoked bone-in ham 1 cup pure maple syrup 1/4 cup smoked paprika 2 tbsp ground cinnamon 2 tbsp ground cumin 2 tbsp garlic powder 2 tbsp onion powder 2 tbsp fresh coarsely ground black pepper

Preheat oven to 350°, with the rack in the lower third of oven. If your ham has a layer of fat, use a sharp paring knife to score the fat in a diamond crosshatch pattern, about 1 inch wide and 1/2 inch deep. Brush the ham with maple syrup (reserving some syrup for basting while cooking). Combine the rest of the ingredients in a medium bowl, then rub all over ham, pressing into syrup to adhere. Position roasting rack in roasting pan, pour 2 cups water into pan, and place prepared ham fat side up on rack. Cover pan with foil and bake 1 hour. Remove pan from oven, remove foil, and brush ham with reserved glaze or maple syrup. Increase the oven temperature to 400°. Return ham to oven uncovered. Bake 40 minutes to 1 hour more, until glaze has caramelized and the ham’s internal temperature reads 135° when an instant-read thermometer is inserted in the middle of the ham (avoiding bone). Let rest 10 minutes before carving.

Preheat oven to 250°. Butter (or use cooking spray) a 13x9-inch baking dish and set aside. Scatter bread in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool; transfer to a very large bowl. Meanwhile, melt 3/4 cup butter in a large skillet over medium-high heat; add onions and celery. Stir often until just beginning to brown, about 10 minutes. Add to bowl with dried bread then stir in herbs, salt, and pepper. Drizzle in 11/4 cups stock and toss gently. Let cool. Preheat oven to 350°. Whisk 11/4 cups stock and eggs in a small bowl. Add to bread mixture; fold gently until thoroughly combined. Transfer to prepared dish, cover with foil, and bake until an instant-read thermometer inserted into the center of dressing registers 160°, about 40 minutes.

Place potatoes in a large pot and add enough cool water to cover. Bring to a boil. Cook for 15-20 minutes, until potatoes are tender and a fork can be inserted into the center of the wedges easily. Drain potatoes in a colander. Add butter, cream cheese, 1/2 cup milk, kosher salt, and pepper to the still-hot pot, then place the hot potatoes on top. Let sit for about a minute, then use a potato masher to combine until the butter and cream cheese have melted. Leave as-is for chunkier mashed potatoes, or for smoother potatoes use a hand mixer or a stand mixer fitted with the paddle attachment to gently combine to desired consistency, adding additional milk as needed. Don’t over-whip, or potatoes will become gluey. Season to taste with additional salt and pepper and serve.

Preheat oven to 375°. In a bowl, mix honey, balsamic vinegar, olive oil, salt, and pepper to make a glaze. On a baking sheet, combine carrots, thyme, and 3/4 of glaze, ensuring carrots are coated as evenly as possible. Roast for 15-20 minutes or until the carrots begin to caramelize. Remove the baking sheet from the oven, flip the carrots, and pour over the remaining glaze. Return to the oven until nicely browned and sticky. This can take up to another 20-25 minutes depending on the size of your carrots. To serve, pour over any remaining glaze from the baking sheet and sprinkle with parsley.

Melt 2 tablespoons butter in a large skillet; add onion and sauté until softened. Add bell pepper and mushrooms. Cook until softened and most of liquid has evaporated. Season with salt and pepper. Set aside to cool. Fill a large bowl with ice water. Bring a saucepan of water to boil, add beans, and cook until just tender, about 4-5 minutes. Drain beans and plunge into ice bath to stop cooking. When cooled, drain and add to mushroom mixture. Melt remaining 4 tablespoons butter in medium saucepan on medium heat. Add 4 tablespoons flour and whisk constantly until mixture begins to turn golden. Pour in milk, whisking constantly, until mixture has thickened. Stir in cayenne and nutmeg. Remove from heat and let cool to room temperature, stirring occasionally. Pour over beans and toss to combine. Preheat oven to 350°. Butter a 2-quart casserole dish. Spread half of the green bean mixture over the bottom. Sprinkle half the Parmesan over the top, then spread with remaining green beans. Combine remaining Parmesan with the bread crumbs and sprinkle over the casserole. Cover with foil and bake for 20-30 minutes until casserole is bubbly and heated through then uncover casserole and bake under broiler until top is golden brown.

Heat canola oil in medium skillet. Toss shallots with remaining 2 tablespoons flour. Fry until golden brown. Sprinkle casserole with fried shallots, serve immediately.

In medium saucepan over medium-high heat add sugar, orange juice, water, cinnamon, cinnamon stick, salt, and cranberries and bring to a simmer until cranberries start to pop. Continue to simmer, stirring occasionally, for about 15-20 minutes until slightly thickened and popping stops. Pour into serving dish, cover, and refrigerate until chilled, about 30 minutes.

Add the yeast to the bowl of a stand mixer. In a saucepan heat the whole milk, water, and butter until very warm (use a thermometer to ensure the mixture is between 120° and 130° degrees). Add the warm milk mixture to the yeast and let it sit for 5 minutes. Add 11/2 cups flour, sugar, and salt and combine using the whisk attachment for 2 minutes on medium speed. Preheat oven to 350°. Carefully place the pie crust into a 9-inch pie dish. Spread pecans evenly inside pie crust. Set aside. Whisk the eggs, corn syrup, brown sugar, vanilla, butter, salt, and cinnamon together in a large bowl. Once completely combined, pour evenly over pecans. Bake the pie for 40-50 minutes, or until the top is lightly browned. After the first 20 minutes of bake time, place a pie crust shield (or strip of aluminum foil) on the edges of the pie to prevent the burning. Remove finished pie from the oven and place on a wire rack to cool completely. The pie filling will settle as it cools. Slice and serve pie warm or at room temperature.

Preheat oven to 400°. Adjust oven rack to lowest position and place rimmed baking sheet on the rack. Whisk cream, milk, eggs, yolks, and vanilla together in medium bowl. Set aside. Combine pumpkin puree, yams, sugar, maple syrup, ginger, cinnamon, nutmeg, and salt in large heavy-bottomed saucepan; bring to a simmer over medium heat, 5-7 minutes. Continue to simmer pumpkin mixture, stirring constantly and mashing yams against sides of pot, until thick and shiny, 10-15 minutes. Remove pan from heat and whisk in cream mixture until fully incorporated. Strain mixture through fine-mesh strainer set over medium bowl, using back of ladle or spatula to press solids through strainer. Whisk strained mixture again. Place pie crust in pie dish and carefully place dish on the preheated baking sheet. Pour the filling into the pie crust and bake for 10 minutes at 400°. Without taking the pie out of the oven, reduce the heat to 300°, and continue baking until edges of pie are set, 20-35 minutes longer. The center 2 inches of the pie should look firm but jiggle slightly; the pie finishes cooking with residual heat. Transfer pie dish to wire rack and cool to room temperature (do not refrigerate until pie has come to room temperature). Cut into wedges and serve at room temperature or chilled with whipped cream.

Heat sugar in a medium saucepan over medium heat, stirring constantly with a high heatresistant rubber spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn. Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added. Stir the butter in until it is completely melted, about 2 minutes. If you notice the butter separating, remove from heat and vigorously whisk to combine it again. Very slowly drizzle in heavy cream while stirring. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble when added. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils. Remove from heat and stir in 1 teaspoon of salt. Allow to cool slightly before using. Caramel thickens as it cools. Place apple slices into a very large bowl. Add sugar, lemon zest, lemon juice, flour, cloves, nutmeg, and cinnamon. Gently toss to combine. Set aside. Carefully place one pie crust into a 9-inch pie dish. Trim the overhang of crust and discard. Fill the pie crust with the apples. Pile them tightly (they will create a tall pile). Drizzle with 1/2 cup of the salted caramel, reserving the rest for topping. Preheat oven to 400°. Place the second pie crust on a lightly floured surface. Using a pastry wheel, sharp knife, or pizza cutter, cut 16 strips 1/2-inch wide. Carefully thread the strips over and under one another on top of the pie, pulling back strips as necessary to weave. Trim the overhang of crust and discard. Crimp the edges of the dough with a fork or your fingers. Lightly brush the lattice top with the egg wash. Sprinkle with coarse sugar. Place the pie onto a large rimmed baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 375° and bake for an additional 40-50 minutes. If the top of your pie is getting too brown, cover loosely with aluminum foil. The pie will be done when the caramel begins to bubble up. Allow the pie to cool for 4 hours before serving. Drizzle the pie with the extra caramel sauce to serve.

Put a twist on a classic homemade pie that goes beyond how you garnish it. This delicious recipe takes the classic Thanksgiving pumpkin pie and fills it with HERSHEY’S Milk Chocolate Chips. The result is an extra rich dessert that everyone will want to save room for. And it's still easy to make!

INGREDIENTS 1 (6 oz) packaged chocolate flavored crumb crust 1 egg yolk, slightly beaten 1 egg, slightly beaten 1 can(15 oz.) pumpkin 1 can (14 oz.) sweetened condensed milk (not evaporated milk) 2 teaspoons pumpkin pie spice 3/4 cup HERSHEY'S Milk Chocolate Chips. Divided Whipped cream Additional HERSHEY'S Milk Chocolate Chips for garnish

DIRECTIONS 1. Heat oven to 350° F. Brush bottom and side of crust with egg yolk to seal crust. Place crust on baking sheet; bake 5 minutes. 2. Blend remaining whole egg, pumpkin, sweetened condensed milk and pumpkin pie spice in large bowl. Stir in 1/2 cup milk chocolate chips; pour into crust. 3. Place remaining 1/4 cup chips in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir. If necessary, microwave at MEDIUM an additional 10 seconds at a time, stirring after each heating, until chips are melted and smooth when stirred. Drizzle melted chocolate over pie in decorative pattern. 4. Bake on baking sheet 50 to 55 minutes or until wooden pick inserted into center of pie comes out clean. Cool 1 hour. Serve topped with whipped cream; garnish with additional milk chocolate chips, if desired. Cover; refrigerate leftover pie. Makes 8 servings.

In a large bowl cream butter and sugar (see page 11) until light and fluffy. Beat in the egg, then sour cream and vanilla. In another bowl mix the flour, baking powder, baking soda, salt, and cinnamon. Gradually beat into creamed mixture. Divide dough into three portions. Shape each into a disk and wrap in plastic. Refrigerate for 30 minutes or until easy to handle. Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4” thickness. Cut with floured cookie cutters to prevent sticking. Place cookies 2 inches apart on greased baking sheets. Bake for 10-12 minutes or until light brown. Remove to wire rack to cool completely. In a small bowl mix the powdered sugar, vanilla, salt, and enough heavy whipping cream to reach desired consistency. Tint with food coloring. Decorate cookies as desired with icing and sprinkles.

HELPFUL HINT You can freeze unbaked cookie cutouts on baking sheets until firm. Place in freezer bags. Freeze up to 3 months. No need to thaw. You can bake cookies as directed, adding an extra minute or two to baking time.

Add wet ingredients to dry and fold together until a ball of dough forms. 4. On a floured surface, knead dough together to fully incorporate ingredients, being careful not to overwork. Pat dough into a rectangular shape until it is approximately 1" thick. 5. Using a pizza cutter or sharp knife, slice evenly into quarters. Slice each quarter in half diagonally, creating 8 equal triangles. Repeat the last step to create 16 equal triangles. 6. Coat a sheet pan lightly with nonstick spray. Place triangles on pan and bake until golden brown, approximately 15-20 minutes. Remove from oven and let cool.

For apple spice scones, substitute pumpkin purée with unsweetened apple sauce and pumpkin pie spice with apple pie spice.

Maple glaze 1. Combine maple syrup, butter, and powdered sugar in a small saucepan over medium-high heat. 2. Bring to a simmer, whisking constantly. Reduce until thickened. Remove from heat, whisk in yogurt, and cover to keep warm until scones are ready to be glazed. 3. Drizzle glaze over scones as desired.

2 tbsp olive oil, plus more as needed 1 tsp sea salt, plus more to taste 1/2 tsp paprika 2 large sweet potatoes, peeled and sliced into 1-inch thick rounds 5 ounces crumbled goat cheese 1/ 3 cup candied walnuts or pecans 1/ 3 cup dried cranberries 2 tbsp balsamic reduction 3 tbsp honey Zest from one lemon 15 small basil leaves, for garnish

Preheat oven to 500°. In a small bowl combine the olive oil, sea salt, and paprika. Coat sweet potato rounds in the olive oil mixture. Place them in a single layer on a large baking sheet. Bake for 8-10 minutes on each side until golden. Transfer to a serving tray and top with the goat cheese, candied walnuts, and cranberries. Spoon some honey on top and sprinkle with the lemon zest. Just before serving, finish with a light drizzle of balsamic glaze and garnish with fresh basil.
