Toughest Monster Trucks
We’ll be bringing in 80 dump truck loads of dirt to build lots of big dirt jumps that include old-school crush cars and racing that involves lots of turns which is often just as exciting as the freestyle.. 2025 Ben Myers Ridge-A-Thon
Each year Ridge-A-Thon participants and donors help encourage donations for the Emergency Medicine Fund at Taos Community Foundation. The Fund provides grants in the area of health and basic needs in Taos and western Colfax Counties. Ridge-A-Thon is a breathtaking snow sport event at Taos Ski Valley. In 2025, for the 29th annual event, participants will lap the hike-to terrain over two days, February 21st and 22nd (Extreme Ridge Challenge). Roswell UFO Festival
In early July 1947, a mysterious object crashed on a ranch 30 miles north of Roswell. The Roswell Army Air Field (RAAF) issued a statement claiming to have recovered a crashed “flying disk,” and an article ran on the front page of the Roswell Daily Record. MainStreet Roswell, Roswell Parks and Recreation, Roswell Museum and Art Center, the Roswell Runners Club, and Roswell Lodgers Tax invite UFO enthusiasts and skeptics alike to join in the celebration of this “debate,” of the Roswell Incident at the UFO Festival. Salt and black pepper
2 tablespoons olive oil
4 cloves garlic, minced
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cups beef broth
2 sprigs of fresh thyme
2 bay leaves
8 ounces mushrooms, quartered
1 cup pearl onions, peeled
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and black pepper to taste Chopped fresh parsley for garnish
1 cup red wine (preferably Burgundy)
• Season beef ribs with salt and pepper. Sear in an oven-safe pot.
• Remove ribs and sauté garlic, onion, carrots, and celery in the same pot.
• Return the ribs, add red wine, beef broth, thyme, and bay leaves. Simmer, cover, and transfer to the oven at 325°F (163°C) for 2-2.5 hours.
• In a skillet, sauté mushrooms and pearl onions in butter until golden. Remove from skillet.
• Make a roux with flour in the skillet and cook until golden.
• Strain the cooking liquid from the pot, return beef, and add the sautéed mushrooms and onions. Thicken the sauce with the roux.
• Return to the oven for 15-20 minutes.
• Serve hot, garnished with fresh parsley.
• Enjoy with mashed potatoes or crusty bread.

For the Macaron Shells:
1 cup almond flour
1 3/4 cups powdered sugar
3 large egg whites
1/4 cup granulated sugar
Gel food coloring (your choice)
For the Filling:
1/2 cup softened unsalted butter
1 cup powdered sugar
1 tsp vanilla extract
Fruit jam or chocolate ganache for filling
• Sift almond flour and powdered sugar.
• Whip egg whites with sugar until stiff peaks form.
• Fold in dry ingredients and add food coloring.
• Pipe small rounds onto baking sheets and let rest for 20-30 minutes.
• Bake at 300°F (150°C) for 15-18 minutes, then cool.
• Prepare the filling by mixing butter, powdered sugar, and vanilla.
• Assemble macarons by piping filling and adding jam or ganache.
• Optional: decorate with sprinkles.
• Chill for 24 hours in the fridge to enhance flavor.
• Serve and enjoy your cute French Macarons!

Las Fiestas de Taos
As they have for centuries, the people of Taos celebrate the Feast of St. Anne and St. James. The annual event, popularly referred to as “The Taos Fiestas,” allows the local population to put aside their labor for two days and bask in the leisure of the holy days. Today the Fiestas encompass a roster of activities. Musical and dance performances are scheduled on the Plaza every hour. A commemorative Mass and procession from Our Lady of Guadalupe Church officially opens the event on Friday evening. 313th Fiesta de Santa Fé
