WELCOME TO OUR CENTENARY ISSUE!

In the very first edition, the editor wrote: ‘The policy of The Ideal Home is to cater for the wide circle of the middle class. Every matter of interest, from the designing of the house and garden to its finishing touches, will be explained and illustrated by experts.’ Today’s team is proud to uphold that pledge and hopes that you love this great old brand as much as we do. Since that first issue, Ideal Home has integrated itself into British life: it gave away architectural plans to boom-time self-builders, then, in wartime, dispensed government information about rationing, blackout and air raids. Later, it converted London townhouses into modern show flats and even built a housing development in Peterborough. But, you don’t reach 100 years without having some people to thank: first in line has to be the homeowners who have graciously let us photograph their homes. Secondly, the star staffers who have made it great, including Mary Berry and the legendary interiors journalist Barbara Chandler. And, of course, the behind-the-scenes heroes who have given so many years to the brand: stylist Sarita Sharma (25) and photographer Dom Blackmore (nearly 40); this issue’s cover stylist, Charlotte Boyd, her father and great-grandfather; Lisa Fazzani, who is still writing fab features for us 27 years on. Finally, of course, I have to thank you – our lovely readers – who are the most important part of the Ideal Home family. Cheers!

From the ground up Why remodel when you can rebuild? Lauren and John Conroy scrapped a dingy bungalow and used the land for their dream home, complete with living spaces that open to the garden and a basement swimming pool

Welcome to my home

Lauren Conroy, an interior stylist and lifestyle blogger (laloves.co.uk), lives here with her husband John, a property developer, and their children aged six, seven and nine.

THE PROPERTY A six/seven bedroom detached new-build house in London.

Our home mixes traditional and modern style, with a nod to our South African heritage

W

hen Lauren and John Conroy spotted a ‘For Sale’ board outside a bungalow during a Sunday afternoon drive, they were quick to arrange a viewing the next day. ‘We loved the spacious plot, views and proximity to good schools, but the layout didn’t work for us,’ says Lauren. ‘It had been extended several times over the years and you had to walk through one bedroom in order to get to another.’ On the advice of Architecture Initiative, the couple decided to demolish the bungalow and build a new house. The new design is longer and slightly narrower than other homes on the street, and has a basement level swimming pool and family room. On the ground floor is an open-plan kitchen-diner and living space with an adjacent scullery and pantry, a playroom (or second living room) and a flexible en-suite bedroom/ office. There’s also a boot room and garage. On the top floor, the main bedroom suite is joined by four bedrooms, a family bathroom, two en suites and a laundry room, plus a granny annexe which has its own separate entrance. ‘We love the style of

traditional English homes, so we used reclaimed London stock bricks for the frontage,’ says Lauren. ‘The contemporary rear was inspired by homes in South Africa, where we’re from. It has an indooroutdoor feel with lots of light coming through.’ The project took longer than expected. ‘Planning permission took a couple of years as we changed a few details. The build took another two years, while we rented nearby. We used contractors from John’s firm, so it ended up on the back burner.’ Even with the shell done, the end was a long way off. ‘Choosing finishes took ages and the snagging list seemed endless. I remember brushing my teeth one morning while someone was painting the bathroom door!’ Lauren took charge of the interior design, with advice from her friend Emma Oldham of Solange Design. ‘The walls are mostly white. Natural oak or concrete flooring has been used throughout and I’ve used artwork to add the odd pop of colour,’ she says. In the summer of 2017, they finally moved in. ‘John says this is our last project, but I’m not convinced. I’d love to build a place in the countryside one day.’

Everything in our home has been collected with love and serendipity – that’s what makes it so special

uilt in the Victorian gold rush era, Belinda and Patrick Hall’s home is in one of Melbourne’s oldest tree-lined suburbs while its heritage as a former dairy gives it much character. ‘When we first viewed it, I loved the traditional brickwork, stately front rooms and original floorboards,’ says Belinda. ‘There was an extension at the back with a modern kitchen, living room and bathroom, which offered a lovely feeling of light and space, too.’ While the neighbourhood norm was to retain the elegant front rooms and erect a ‘white box’ rear extension, the Halls felt that more structural changes weren’t necessary. ‘We saw it as a blank canvas and set about adding meaning to the space,’ says Belinda. ‘I wanted a unique interior that felt inviting and relaxing. The design evolved over several years,’ she adds. ‘To make it feel warm, layered and enriching, we used a deep blue wall colour. It took courage to paint the whole renovation and a long time to find the perfect colour. It transformed the house, adding depth and style to the open-plan spaces. We also lime washed the floorboards to update them.’ With her partner at interior design firm Richard Hall & Son (richardhallandson.com.au), Belinda designed separate areas that allow the family to congregate or separate, depending on the mood. ‘I love it when we’re milling about in one space, reading, drawing, watching TV, cooking – but all together,’ says Belinda. ‘The warmth of the colour at night is cosy on cold evenings, when the open fire is a blessing.’ The couple have collected furniture, art and rugs, and Belinda has used wallpaper for wow factor, teamed with brass vases, sculptures and wool cushions. They may add rooms when the kids become teens, but Belinda feels it’s ideal for them. ‘The single level means everything is close at hand,’ she says. ‘We have lots of light and access to great outdoor areas. We love our home, but we’d never say no to another challenge in future.’

I didn’t want a cold and clinical contemporary look. I want people to feel cosseted as soon as they walk in the door

didn’t have the budget for a place with a sea view so I went inland,’ says Jill Stein. ‘Having worked on a number of client projects in the area, I knew the lay of the land well. This place was a wreck, but the right price, and it certainly ticked the “project” box! ‘Originally a Victorian barn and cottage with extensions, it was deceptively large once inside. It’s like a Tardis from the exterior; when you step inside, it goes on forever. It had been very neglected, so there was lots of work to be done, but I like a challenge. Instead of an architect, I enlisted the help of a friend, Tim Perring, who is a building contractor, and we worked out what to do by ourselves, taking decisions as we went along. ‘The original kitchen had been in the centre of the house, but I thought it would work better as a living room. It proved a bit of a challenge though. We put a Velux in the ceiling to bring in more light, but actually, I preferred the room being cosy. You don’t need to flood every room with light. I also installed a woodburner as most of the time we have cold weather and the design had to accommodate that. ‘I wanted the house to have a cottage feel, so the ceilings were opened up in many of the rooms and beams added to make it look older. Tim found the old beams used in the kitchen/dining area (which had originally been a garage), at a local reclamation yard. ‘The structural work took a couple of years, but the interior decor went smoothly and I’m thrilled with the end result. ‘I aimed to do what I felt would look right. I had lots of ideas and I poured them all into the house and garden. The garden is the first “room” you come to on your arrival – it’s all about expectations and the fragrance of plants is so important. It’s a small garden, but it gives as much joy as the interior of the house.’

Our stuff looks so much more impressive against the dark, inky wall colours

uszi Saunders and her husband Nat moved with their toddler son, Teddy, to this double-fronted house in London’s Corbett Estate from a cramped flat in nearby Lewisham. ‘I’d wanted to take on a wreck, but Nat was worried it would be hellish to live in while doing it up. And he had a point. So what we got instead was something cosmetically bland, with holes in the walls and a gross, studenty kitchen. Not a wreck, but still with plenty for me to do! The house was wide but not deep, but there was room to push out into the garden. ‘With the help of Minifie Architects (minifiearchitects. co.uk) we knocked two reception rooms and a galley kitchen into one big living room, incorporating tall steel and glass doors to the hall, and built an extension at the back to house a new kitchen, dining and family space. I didn’t used to be into interiors at all,’ says Suszi. ‘I just didn’t get it, and used to be very boring and magnolia in my choices. My husband Nat was always the creative one and I had yet to find anything I felt a real passion for. But when I discovered interior designer Abigail Ahern, I had a moment! I fell deeply in love with the boldness of her style. And then after trawling through Instagram, I found a whole family of like-minded, inky-hue advocates. So, moving into this house, I’ve gone for an all-dark scheme throughout. ‘I’m always on the lookout for pre-loved pieces or salvaged finds for the house. I scour local reclamation yards for antique chandeliers and light fittings and I stalk eBay for pieces to upcycle. It’s become a bit of an obsession! I’d never felt that excited about anything until I had that first proper browse of other people’s dark and moody homes. And now, other people seem to be loving my Instagram posts, so I must be doing something right!’

What was your career journey? I studied textile design at Glasgow School of Art, then worked for several fashion brands before later transitioning to interiors. Describe a typical day’s work. It is busy, but exciting and varied – I’ll often be looking at designs, discussing a painting technique or looking at vintage textiles. Plus, I have lots of meetings to talk about product, photography, and styling. What has been your proudest moment? ■ ‘In nature, we often see terracotta boldly contrasting vibrant greens,’ says Jane Rockett, founder of Rockett St George. ‘Do this with accents such as houseplants, Tamegroute pottery or a green jute rug – or you could paint your doors and frames in a silky woodland-green tone. The contrast is spectacular and reminds me of the painted buildings in the souks of Marrakech.’ ■ ‘Use darker shades in north-facing rooms and more watered-down versions in south-facing ones where the light has had a chance to reflect back,’ advises Irene Gunter of Gunter & Co Interiors. ‘It’s best to embrace the darkness in north-facing rooms to create cosy, inviting spaces.’ ■ ‘Terracotta can be paired with warm metals to add an extra layer of sophistication, or with pale marbles for a crisp contemporary look,’ says Roselind Wilson of Roselind Wilson Design. ‘These striking finishes showcase the versatility of terracotta, adding a sense of depth as well as warmth and character to a space.’ ■ ‘The palette has moved on from the stippled paint-effect Tuscany style of the nineties,’ says Tor Vivian of Tor Interiors. ‘Update it with dove grey, or stronger colours like teal, black and white for a warm space with graphic accents.’ ■ ‘An earthy palette like this lends itself to lots of natural texture, so accessorise with linens, weaves, velvets and rough artisan ceramics,’ says Nicky Phillips, decorating editor, Ideal Home. ■ ‘Whites work well with it, creating a glamorous, 1960s vibe – especially if you use white walls with a terracotta-coloured floor,’ suggests paint and colour expert Annie Sloan. ‘I also love teaming blue-grey with terracotta; it contrasts beautifully to create a delicious, juicy contrast.’ ■ ‘Terracotta transcends the lifestyle of the Mediterranean,’ says Thomas Griem of TG Studio. ‘If teamed with pastels, I would use a dark shade to create a strong base. THE WINDOW DRESSING EXPERT Bhavin Taylor of Bhavin Taylor Design reveals this insider know-how: n Window treatments can be expensive, so choose wisely and think long term, rather than treat them as a fashion accessory to change up frequently. n When it comes to longevity, there’s no simple answer to choosing shutters, blinds or curtains – it all depends on your interior and the style of your home as to what will suit best. It’s your home and it should reflect you and your personality – that’s how to get a look that lasts for you. n Choosing a pattern for curtains or blinds needn’t be daunting. For those of you taking

your first pattern step, choose a pattern that you love, and try to keep the colour palette of the pattern to just one or two colours, so it doesn’t become too specific to your current interior, allowing you to ring the changes without changing the curtains or blinds. n If you can afford it, go for made-to-measure when it comes to curtains or blinds. Treat them as an investment and get them made by a good curtain maker. There is nothing nicer than a hand-sewn or hand-finished pair of curtains that have been made for the specific dimensions of your window.

THE KITCHEN EXPERT John Sims-Hilditch from Neptune has this advice: n Timelessness is down to the quality of the materials and craftsmanship. To me, that’s proper timber and tried-andtested joinery techniques. You can always repaint your cabinets and change your kitchen’s look. n Black granite might be one of the most common worktop choices, but with good reason – it’s naturally hard-wearing, the colour and pattern disguise any marks it does get, and, being a natural stone, it’s full of variation. n Brass and bronze taps will make a real statement, but a chrome tap in a classic style will never feel dated. Likewise, for handles, black-bronze is one of our most popular finishes. Hardware is the best place to experiment as it’s simple to change in years to come. n Islands have been a feature of our kitchens since the mid-20th century, when open-plan living first became popular, so they’ve proved their staying power already. If you are unsure, try a free-standing option. Don’t discount the dining table though, we’re seeing a return to the large, farmhouse-style table as the centre of kitchen life lately, especially in smaller kitchens that can’t fit an island and a table.

n The best choice for long life and enduring style, for me, has always been a beautiful wooden floor. It is timeless and can work equally well in a living room with rugs on top as much as in a utility room. Therefore, as rooms change their use over the years, a wooden floor can accommodate those changes. The right choice of wooden floor can also highlight the period, style and scale of a house beautifully, to give a nod to the era they were birthed in. n The only rooms that should ever be carpeted downstairs are reception rooms and, even then, I think a wooden floor with rugs

would still be a more preferable choice 90% of the time. Upstairs, however, and in hallways and on stairs, carpet is a lovely flooring choice, giving that warm, soft feel underfoot and helping to keep the space as cosy as possible. n I’m a huge fan of sisal – it’s a wonderful alternative to beige and grey carpets. It comes in a range of patterns and can be a very stylish and hard-wearing choice. n Herringbone is a very popular laying pattern for wood – it’s been around for decades and decades and is as popular now as it’s ever been. Try larger herringbone planks for a more modern feel.


STYLE & DECOR THE WALLPAPER AND PAINT EXPERT Ruth Mottershead from Little Greene advises this: n Consider the function and orientation of each room when choosing colour. Creating continuity also means thinking about how a space is used to build a versatile palette with longevity. Focus on choosing specific colours for the atmosphere you want, not current trends, then relate these tones subtly from room to room. n Some of the oldest colours on our colour card remain the most loved. Celestial Blue is a beautiful soft hue, which is popular for front doors and originates from 1807. French Grey is actually a Victorian tone. Blue and grey are colours

that we feel comfortable with and have a lovely history to them. n When it comes to choosing a wallpaper that you’ll love for years, start by finding a few designs that you really like. The right design will please your eyes and mind every time you look at it. n Our wallpaper collections are all drawn from history. But it is an expensive purchase if you are likely to go off it after a few months. Ask yourself if the colour you are tempted by is one readily found in other areas of your home – or even in your wardrobe. If it is, the chances are it’s a colour you will love long-term. n Brassware is not an area to scrimp on; we use a bathroom tap up to 20 times a day, so the better quality you buy, the longer it will last. A modern tap with a nod to traditional style looks great in most bathrooms, and for finish, brass is a classic style that won’t date, and the patina

looks better with age. Black is increasingly popular and is likely to have lasting power because of its versatility with modern and classic style bathrooms. n Metro-style tiles are classic and unlikely to date. But if you want something less ubiquitous, change the layout from brick to chevron or herringbone. The key element to choosing a tile that survives the trends is selecting a shape, colour or style that you know you’ll always love regardless. n Industrial-style shower screens look great and will continue to be popular for a long time yet. But what we will see is a variation of glass, so more frosted, textured and fluted versions.

I love the peaceful and cosy atmosphere here. After a stressful day at work, it’s so nice to come back to such a calming home

aving built their own home in 2007, Kirsi and Janne Kemppainen craved another project. ‘I found this plot with planning permission, a 45-minute drive from our jobs in Helsinki,’ says Kirsi. ‘It was at the end of a high cliff road and we fell in love with the amazing views.’ Janne works in construction, so drew up plans for a 150sqm house. ‘We didn’t want to do it all ourselves, so we used a company which prefabricated the walls. We wanted a single-storey black wood house to blend into the landscape and created a wish list based on what we’d learned from our previous build. The most important thing was positioning the house so the living and dining areas had countryside views. Our children have their own kingdom on the other side of the house, with a living room between their bedrooms which is screened off by double doors. So, although we’re together a lot in the open-plan areas, everyone has their own retreat.’ The couple also built a sauna in a separate outbuilding. ‘Just a few steps across the terrace and we’re in a different world.’ The one-year build was on schedule and on budget. ‘It was stressful, but we got the house we wanted. It’s not too fancy, but suits our family. Although it has black window frames and black wooden cladding, it’s very light inside.’ Kirsi opted for an interior she describes as ‘modern hygge’. She says, ‘I learned that simple is beautiful. I didn’t want it to be clinical or monochrome, so I’ve given it a cosy feeling with soft furnishings, rugs, lighting and artwork.’ Although the couple dream of a holiday cottage by the sea one day, they consider this their forever home. ‘My most cherished memory is the day of the move, when we finally got to carry our things inside. It feels like we’ve always lived here now.’

HOW SOPHIA AND COOKIE DID IT ‘This is our first home together and it needed complete renovation. It had a galley kitchen with strip lights and shabby, mismatched units. Next door was a bigger, brighter dining room with a door out to the garden. We decided to knock an opening between them and swap them over to have a kitchen in the larger space so we could cook, eat and chat together, as well as entertain friends here, too. We

had clear ideas of what we wanted and stuck to colours and features that reflect us. For the cabinets, Pluck’s colourful, laminated ply furniture had the right look. The building and installation work took approximately five weeks, and cost around £6,000, as part of a complete house renovation. We didn’t want a typical kitchen, and we both love what we’ve achieved. I’m glad we went for something a bit different.’

HOW EMMA AND PETER DID IT ‘The kitchen, dining room and living room were all separate, but we wanted to cook, eat, socialise and relax all in one place, so we knocked them together and extended. I wanted a simple, classic kitchen with a fresh, modern edge. Our ‘musthave’ was a big island, inspired by our favourite tapas bar, which has food prep and storage on one side and seating on the other. We loved Higham Furniture’s high-quality, handbuilt cabinets and we added

quartz surfaces to keep the prep areas easy to clean. Peter loves cooking, so he helped plan the layout and chose the bespoke range and electric oven. A tall larder unit in the far corner is fitted with shelves, drawers and racks to keep his ingredients to hand. The building work took three months and cost around £50,000. The kitchen fitting cost £3,750 and took 10 days. There were lots of decisions to make, but it was rewarding to watch the space come together.’

HOW CARRIE AND ED DID IT ‘When we moved here, we decided to extend and build a new master suite overlooking the garden. We wanted the bathroom to feel luxurious and look in keeping with the Victorian property. I can be a bit of a design magpie, and have made mistakes before, so we asked designer Katie Knight (katieelizabethdesign.com) to help. She planned the layout and helped us choose fittings. It was money well spent, as we were struggling with ideas that didn’t go together and she had the technical know-how to liaise with the plumbers and builders. Fitting the bathroom took six weeks and cost £8,000, while the building work was £7,000. I wanted a tranquil look, but not bland or boring. Top of my list were twin basins, a walk-in shower and a deep, free-standing bath to relax in. The design is a mix of contemporary and period style, so it fits in with the rest of our home. I love the touches of pink and brass, but the bath under the beautiful sash windows is my favourite feature.’

‘I wasn’t sure about wall-to-wall tiling, so the pink paint breaks it up and lifts the grey tones. ‘We hire out our house as a location for shoots (6ixteenhouse.com), so we use the top floor as a private retreat when it’s in use. We made do with the old bathroom for six years while we did the rest of the house. I always thought the bath was in an awkward position in the middle of the room, and the shower wasn’t symmetrical. I really wanted a window in the sloping roof overlooking the fields at the front, as well as built-in wardrobes and panelling (which we’ve used throughout the house). We went for a simple look and nothing was very expensive. The story of the build

Amie bought the building in 2017, found an architect and applied for planning permission.

In January 2018, a new floor was put in, creating two levels; the walls were insulated and Velux roof lights fitted.

H

aving renovated her previous home in London, Amie Oyston was looking for a new project when she was told about a run-down single-storey brick building in Hackney, east London, that was ripe for conversion. ‘It was originally part of a steelworks, then later it was used by a mechanic as a car repair workshop,’ says Amie. ‘There’s no denying that turning it into a home has been an enormous challenge.’ REVIEWING THE PROPERTY ‘The empty workshop was crammed onto a small site between Victorian terraces and lit from above by a roof light,’ says Amie, who worked with her father and a local builder

on the project. ‘It’s a tiny Conservation Area plot, right next to a listed building and when I bought it, it had no planning permission at all, which meant that we weren’t able to knock it down or extend. SPLIT-LEVEL LAYOUT ‘Fortunately, my architect Stuart Hatcher (stuarthatcher.com) came up with a brilliant split-level design, which was granted planning permission. His plan included a new basement, which involved excavating hundreds of tons of earth from the site.’ A steel glazing framework was installed, which included a large roof lantern as well as remotecontrolled roof lights. ‘There are no conventional windows, so I used glass in different ways to make the

interior as bright as possible,’ says Amie. ‘Now that the build is complete, the house is a bit of a Tardis. There are no windows overlooking it, so it’s a completely private space, and the whole area is really bright, too, thanks to the central glazed courtyard that acts like a light well, allowing daylight to reach every corner of the house.’ INDUSTRIAL DESIGN Amie chose to complete the project with polished concrete floors, oak parquet, black steel and areas of exposed brick. These finishes give the space a contemporary, industrial feel, as well as being a nod to its original use. ‘External walls were painted black and the matt black kitchen was spray-painted to echo the steel staircases and glazing – there are

even black appliances to continue the theme,’ says Amie. ‘There was enough space at the front of the basement to dig out a really large bathroom and install an enormous boat-like bath, as well as a walk-in shower and double washbasin.’ THE FINISHED PROJECT Now, split levels make the most of space, with a bathroom and utility room in the basement. There’s an open-plan kitchen-diner on the ground floor, plus a guest loo and internal bike store. Steps lead up to a guest bedroom and the main bedroom, set beside a courtyard light well. On the first floor is a living room plus a third bedroom and stairs to a roof terrace. ‘My main aim was to demonstrate that a tight site can still give scope for a really exciting design.’

aving lived in the terrace since 2006, the couple longed to stretch out and get more space. The original house was small, with the main bedroom overlooking the street. ‘We knew we wanted a new living space and bedroom that faced the garden,’ says Harriett. ‘As well as space for me to work from home.’ PERMISSION ISSUES The couple took their plans to the local council before applying for permission and their architect Neil Dusheiko (neildusheiko.com) built a model of the proposed extension. ‘We went to two pre-planning sessions and had to make a few changes, including reducing the roof height slightly and extending out a few feet less, but eventually the plans went through and we got started.’

DESIGNING THE INTERIOR Harriett and Jeremy wanted an open space with a mixture of traditional and modern elements. ‘I wanted to keep the brick of the original exterior wall of the house, but paint it white,’ says Harriett. The kitchen features oak and stainless steel. ‘The different materials came from an idea that Jez had about the space working like a drum kit. Neil suggested adding concrete, which gives another texture. The new space feels so calm.’

riven by the desire to reveal nature’s hidden intricacies, Evi Antonio’s work creates the same sense of curiosity and wonder that a museum specimen cabinet holds. From her studio in London, she combines digital technology with traditional oil glazing techniques to express her vision.

I’VE ALWAYS BEEN INSPIRED BY THE LITHOGRAPHIC PLATES and hand-coloured engravings of the 19th century which were used to document the scientific discoveries of the time. So I’ll usually source a specimen to work from. I need the real thing in front of me.

I GREW UP IN NORTH LONDON AND DREAMED OF THE COUNTRYSIDE. I was fascinated by the images in early natural history books and always loved drawing. I can’t remember when I didn’t carry a sketchbook and pencils with me. After graduating with a degree in Scientific and Natural History Illustration from Middlesex University, I worked as a natural history illustrator. MY DREAM OF LIVING IN THE COUNTRYSIDE WAS REALISED WHEN I MOVED TO WARE, Hertfordshire, where I ran an illustration agency with my husband from our studio on the Amwell Nature Reserve. I was able to look to the beauty of nature for my inspiration. After having and raising two children, I returned to the studio and decided to explore a new contemporary fine art form. I’d used watercolour paints at the start of my career, then as technology

Loaded mini jackets SERVES 6-8 as a snack READY IN 1 hr INGREDIENTS ● 1kg baby potatoes ● 2tbsp salted butter ● 2tbsp double cream ● 2-3tbsp vegetable oil FOR THE CRAB FILLING ● 1 dressed crab ● 2tbsp creme fraiche ● 1 red chilli, chopped FOR THE CHEESE AND BACON FILLING ● 80g Cheddar, grated ● 200g smoked bacon lardons, cooked ● 3 spring onions, finely sliced

1 In a pan boil the potatoes

for 20-25 mins, until cooked but firm. Leave to cool.

2 Preheat the oven to 220C/

Gas 7. Halve the cooled potatoes, and scoop out the flesh – we did this using a melon baller. Put the flesh into a small bowl, add the butter and cream, and mash with a fork. Place the skins, empty side up, on a roasting tray, drizzle with vegetable oil, season, and roast for 15-20 mins, until crisp.

3 To make the fillings, divide the potato flesh between two bowls. Add the crab filling and creme fraiche to one bowl, and the cheese and bacon to another, and blitz with a hand blender until combined. Fill half the potato skins with the crab filling and half with the bacon and cheese, then garnish with chilli and spring onion.

Squash, pickled beetroot and burrata salad SERVES 4 READY IN 1 hr 20 mins INGREDIENTS ● 400g cherry tomatoes, halved ● 5tbsp olive oil ● 1 butternut squash, sliced into discs ● 10 baby beetroots, peeled and halved ● FOR THE PICKLE ● 250g sugar ● 100ml white wine vinegar ● 1tsp mustard seeds ● 1tsp coriander seeds ● 1tbsp fresh dill, chopped ● TO SERVE ● 1 burrata ● Bunch of basil

1 Preheat the oven to 180C/

Gas 4. Place the tomatoes on a baking tray with 1tbsp of olive oil drizzled on top. Place the squash on a separate baking tray and drizzle over the remaining oil. Roast both for 1 hr until golden, turning the squash halfway through.

2 Meanwhile, cook the

beetroots for 20 mins in a pan of simmering water, until just tender; drain.

INGREDIENTS ● 2tbsp olive oil ● 1.4kg chicken ● 330ml can IPA beer ● 1 lemon, quartered ● 1 bunch of fresh parsley, chopped

INGREDIENTS FOR THE PASTRY ● 190g plain flour ● 20g cocoa powder, plus extra ● 50g icing sugar ● 150g cold, unsalted butter, cubed ● 1 egg ● FOR THE FILLING ● 250ml double cream ● 100ml Frangelico, or hazelnut liqueur ● 300g 70% dark chocolate, broken ● Edible gold leaf, to serve (optional) YOU WILL NEED ● 23cm fluted flan case with a removable base

1 Preheat the oven to 180C/

Gas 4. Rub the oil all over the chicken and season the skin. Cut the strings to open the chicken.

2 Open the beer and place it onto a roasting tray. Sit the chicken on top of the can, so that the can fills the central cavity.

3 Roast for 1 hr 30 mins,

until the juices run clear. Remove the chicken from the beer can (be careful, as there may be some beer left in the can) and place it on a serving platter. Tie the legs together, as it’s easier to carve this way.

3 To make the filling, place

the cream and Frangelico in a pan until just simmering. Remove from heat and stir in the chocolate until it melts.

4 Leave to cool slightly, then

pour into the case. Chill for 1 hr, then dust with cocoa and top with gold leaf, if using.
