DO YOU TAKE THE STICKERS off your fruit before you arrange them in a bowl? If you do, you’re halfway there to my favourite style hack from this issue. Yep – styling with fruit is a thing. The last time I sold a house, for the photoshoot and inspections I displayed an oversized white bowl piled high with Granny Smith apples in the middle of the dining table. (We ate a lot of apple crumble that month). I thought it added a sculptural element and a pop of colour. The real estate agent even joked that the apples were so shiny it looked like I’d polished each one. I was too embarrassed to admit I had. Anyway, my point is that even the most everyday things can be used to create decorative interest, and from p79 we’ve done just that with persimmons, fresh borlotti beans and more! From the simplest decor tweaks to something more substantial: kitchens and bathrooms. This issue we’ve compiled a guide to the latest trending looks (p105) for these two spaces should you be intending to renovate or build. Plus, there’s also advice on choosing tapware, joinery and the myriad uses for laminate. Honestly, you can create just about any look with this surface. Curved rangehoods? A L E X A ’ S British fashion designer Alexa Chung is known for her inimitable style, and it turns out her take on interiors is just as irrevently cool photography matthew donaldson words lindyl crabb

HOW DO YOU DEFINE A STYLE ICON LIKE ALEXA? Put her sartorial make-up under a microscope and you’d find Jane Birkin, Bowie and indie bands such as The Strokes, but Alexa Chung’s aesthetic can’t be distilled in a lab. A best-dressed list veteran, author, tv presenter (she currently co-hosts the Netflix series Next In Fashion) and designer, Alexa is one of the most influential, and Instagram-able, multi-hyphenates of her generation, due in no small part to her remarkable talent for turning obscure pop culture references into trends and curating achingly cool outfits that are still recreated by women decades later. In 2017, Alexa made the leap and launched her own label, AlexaChung, and with each new collection we get a closer look at how her style is evolving and the myriad inspirations that inform her brand. And wouldn’t you know it, her London office is another, albeit much bigger, manifestation of the moodboard inside her mind. Alexa’s work space is like a greatest hits album of interior styles – mid-century design makes an appearance, the pink and green colour scheme is millennial-approved and despite the industrial architecture it’s got the soul of a cottage in the English countryside. Here, Alexa discusses her ideas, her new Suburban Punk collection, and of course, her interior style. A

Business model The charmingly decorated office invites collaboration. “It’s easier to work alongside people because the exchange of energy or ideas helps spark a unified direction,” says creative director Alexa Chung, pictured standing beside an Anthropologie armchair. real living

real talk with Alexa Chung How do you come up with your best ideas? “I have days when I’m flooded with ideas and then there are times when it feels like really hard work. You have to capitalise on the fruitful days and store away the ideas like a squirrel. Making sure I am exposed to new things and follow my curiosity usually helps.” How do you translate your ideas? “At any given time I can be drawn to a plethora of things and fall down Google holes researching. It could be a cluster of subjects that seemingly aren’t related but clash, or a search for why multiple themes might all be relevant to now. This is what results in a collection.” Tell us about your new collection Suburban Punk... “It’s about the spirit of DIY dressing. I was looking at pictures of club kids and punks in England in the ’80s and late ’70s, but imagining their parents and the humour in someone dressing like they were sitting down to dinner with their boring family.” What do you love most about this collection? “It’s the one I’m most proud of so far. It feels potent and looks exactly as I wanted it to. There’s a balance between the sedate and the dangerous. So if there’s a houndstooth it’s trimmed in shiny black leather or the plain shirts have extravagant pearl buttons.” What are your enduring creative influences? “Music, first and foremost. This is something I’ve only just properly embraced, that the common thread throughout our collections has always been bands; their aesthetic and attitude. It really resonates with what I’m aiming to create. If you’re in a band you occupy a space where fear of being judged doesn’t exist and peacocking or indulging in a look is almost necessary. And then there’s the British affection for practicality which is heavily coded into our DNA. I can’t bring myself to make clothes that won’t work or last or be adaptable.” How would you describe your interior style? “My office is quite eclectic and mixes mid-century furniture and lighting. At home I’m a total Victorian. I love anything moth-eaten and old. I basically live in a house that looks like a dusty attic.” What inspired the office scheme? “I looked in interiors magazines and someone had mixed pink and forest green and then I ripped it off! Almost all my saved pictures on Insta are interiors and 80 percent have pink walls or hand-painted tiles.” What’s next for AlexaChung? “We’re about to work on a summer collection and continue our Barbour collab. There’s also more YouTube videos in the pipeline and a really fun drop launching on our website inspired by the movie Clueless.” R

FROM LEFT Power plants “I always say I want things to feel like a handsome solid house with weird unexpected things inside. That’s probably what our office is, too,” Alexa says of her work space in East London. On what she’s learned since designing her first collection, Alexa says, “A lot of design in a commercial sense is about being creative within a set of parameters. Weirdly though it’s easier to make things when you know what the boundaries are”. A

“IT IS MORE MY LIFESTYLE THAN MY JOB,” says Nuria Cruelles, the perfumer behind Loewe’s new line of interior fragrances. Since joining the luxury fashion house in late 2018, Nuria has translated creative director Jonathan Anderson’s visionary ideas into singular olfactory experiences and their latest collaborative project was indeed all-consuming. “Jonathan Anderson always had in mind the idea of making candles and home fragrances,” Nuria says of the initial concept, which was inspired by his childhood memories and scents redolent of his many travels. Jonathan wanted to recreate “something in between a botanical garden and an apothecary”, Nuria says. “He gave me a list of plants that he wanted to include. The first proposal was a long list of 60 plants... we narrowed it to 11.” Comprised of honeysuckle, tomato leaves, oregano, liquorice, coriander and juniper berry, to name a few, the collection of 11 scents is a sensory homage to the humble vegetable garden. “We wanted to bring a greenhouse into a home, bringing nature closer while enjoying soft smells and aromas,” Nuria tells. “The scents had to be subtle so everyone could feel comfortable, yet have a distinct aroma that could be a signature fragrance for your place.” Naturally, she began her research in London’s iconic Kew Gardens and visited several greenhouses to gather her own inspiration. “As a perfumer I always rely on my own olfactory memories for each project, how I remember each plant or the moments I recall when smelling them,” Nuria explains. “Then in the lab, I experimented with oils and extracts in order to recreate the smells... we tried to keep the essences as close as possible to the plant that we represent in each smell.” Every essence is expressed in the form of a candle, wax candleholder, home fragrance, rattan diffuser and soap, and each one involved different techniques and challenges. Not only must they smell divine, but the candles should burn properly and the scents need to evaporate from the diffusers slowly. As Nuria eloquently puts it, “the creativity part must shake hands with the technical part more than ever.” Loewe’s home scents are much more than ephemeral experiences – Nuria says Jonathan designed the candle containers and bases to live on as interior objects. A Greek drinking vessel from the 5th century BC informed the ribbed shape of the ceramic candle pots while the holders are based on Louis XIV-era French candlesticks. Jonathan’s interest in recordings of plant life inspired the packaging, which reinterprets the work of artists who documented flora during the Age of Discovery. Photographer Erwan Frotin collaborated with the Loewe team to create beautifully detailed images representing each of the 11 plants, and just like the candles, these boxes require no extra embellishment. Nature is the muse, Nuria says, and “should be represented without ornament.” R FROM TOP Wax poetic The candle pots and holders are embossed with a Loewe monogram and the words ‘Made in Spain’. The candle wax is derived from natural ingredients. Scientific scents The process required to create a candle, fragrance and rattan diffuser differs for each product. The collection took about a year and a half to develop. Natural selection For Nuria, picking a favourite scent “is like saying you have a favourite child”. Instead, it’s about the mood. “If I need energy I will light a tomato leaves candle... If I want something more relaxing I light the ivy or honeysuckle.” Garden variety Nuria wants people to be surprised by the scents and find “that beetroot, for instance, is the perfect smell for their place.” She also says the products are designed to be layered. For example, the liquorice and coriander work beautifully together.

SHE LEADS A DIZZYINGLY DYNAMIC LIFE in London, but food entrepreneur Cassandra Stavrou’s home is a breath of fresh, Mediterranean-style air where time seems to move a little slower. Cassandra, however, is not one for wasting time, so when she purchased this spacious 19th century terrace a few years ago she already knew how she wanted her home to look and feel. Reflecting on the brief she gave interior designer Rebecca Sicardi, Cassandra says, “I wanted it to be Mediterranean but not rustic, feminine but not girly, minimalist but not cold”, and that’s exactly what Rebecca delivered. SALUBRIOUS STYLE The meditative interiors are an antidote to Cassandra’s high-pressure career and the covetable selection of decor certainly befits a successful businesswoman. “Rebecca totally got me and what I wanted,” Cassandra says. The communal layout of the kitchen and dining area was informed by her Greek Cypriot heritage and ingrained love for entertaining, and now Cassandra and her partner Charlie Tarr spend Sundays cooking and eating with friends around the concrete island, its corrugated design a modern interpretation of feminine frills. An oak display shelf along the kitchen wall breaks up the concrete-heavy scheme and beautifully infuses the industrial elements with decorative ceramic wares. STATEMENT PEACE To achieve the desired sense of warm minimalism, a palette of white-oiled oak, Italian stone and concrete is tempered with unbleached cotton and linen textiles. This allowed Rebecca to be little more outgoing with the furnishings and finer details. Sculptural shapes add a dose of visual drama to every space, from the big stone bathtub to the bouclé wool Cloud sofa in the living room, which is like a piece of interactive art. Subtle rose-coloured accents feature throughout the neutral scheme, though every so often these tones appear in full bloom – the bathroom tapware is bright red and Cassandra’s bedroom, which she calls “my retreat-within-a-retreat”, is tucked away behind a crimson curtain. The oak-framed windows fold out onto the garden, the custom oak joinery is by Greg Cox and the dining table and chairs were commissioned by Rebecca and designed by Fred Rigby. A lofty fiddle leaf fig emphasises the room’s proportions; beside it is a Julian Chichester ‘Yoga’ lamp. Joiner Greg Cox created DJ decks and a shelf for Charlie to play and display his records. Art exhibit Sculptural objects are arranged along the living room’s custom cabinetry. Ahead of the curve Cassandra sits in the study, which doubles as a guest bedroom when required. The 1950s stool is from Lawrence Prentice Art & Antiques at Spitalfields Market in London. Red between the lines While the overall scheme is minimalistic, Cassandra wanted to express her playful side in less-frequented spaces including this ensuite with bold red tile grout and cheeky plates by Toiletpaper. Natural warmth Architect Joseph Edwards worked on the project alongside Rebecca. To let light in from the hallway, Joseph created a fluted glass wall with frames painted rich rust brown (opposite). The hallway is laid with a mix of Italian stone from Trunk Floor. A real living

Grand opening Carpeted stairs lead to the master bedroom, which is elegantly concealed by a thick wool curtain. The bespoke bedhead is by The Headboard Workshop, Fred Rigby created bedside tables using reclaimed panels from Retrouvius and the lamp is by HK Living. Cassandra says her home’s soft minimal style “is like a blank canvas. It can be our safe space for winding down during the week, or we can be dancing with a gang of friends on a Friday night”. Play ground Two double-storey voids are criss-crossed by nets, which delineate the upstairs reading and rumpus rooms. Exposed beams create extra height and guide the eye towards the garden. On the net Architect Chris Gilbert instilled warmth and quietude by layering natural timber textures. Inex wallboards by Ubiq with timber frames are used throughout the new extension (opposite). EVERY DETAIL IN THIS HOME is a true reflection of the family of five who live here. Even the name, Harry House, is a tribute to Harry their lovable Labradoodle. For owner Tania Nishimura, creating a home that respected her Japanese heritage and her aesthetic was deeply important, so when she engaged Archier studio to design a new extension for the weatherboard house where she lives with her husband and three children in Coburg, Melbourne, she and architect Chris Gilbert connected over the philosophy that honest, functional design can also be beautiful. BRANCHING OUT When Chris first saw the property, he was drawn to two proud figs trees in the backyard. “A connection to the garden was a priority for our client who’s an avid gardener,” Chris explains. Tania wanted the kitchen and master bedroom to be embedded within the garden and having noticed a cubby house in one of the fig trees, Chris says “it was clear that that was what the house could become”. He devised a two-storey extension with ceiling-high windows that blur the line between the interior and outdoors, and he selected timber frames over aluminium, which “would detract from the natural aspect”. Lit up at night, the home now illuminates the garden like a lantern. PHYSICAL CULTURE The extension’s pragmatic layout and visually poetic spaces take inspiration from Japanese interiors as well as Tania’s insight as a mum. She was “instrumental with creating the bathroom/laundry layout that is super efficient for a busy family – you enter the kids’ bathroom via the laundry so dirty clothes are naturally left in the right spot!” Chris says. The textural use of raw natural materials such as Victorian ash also reflects this cultural influence. “Japanese architecture has a rich history of timber craftsmanship,” Chris explains. “The exposed joists and timber-clad interiors are a nod to that.” IN FULL SWING The dining area, open plan kitchen, laundry and bathroom are streamlined downstairs, making it easier to maintain order. Upstairs, the master bedroom and bathroom are redolent of a treetop retreat with reading nooks that double as hammocks. Tania had wanted more space for the kids, but Chris says they’d run out of room. His solution? These playful break-outs with net floors provided a double-height void from below and didn’t need any furniture. The end result is honestly breathtaking: materials kept in their natural state and unfiltered views of children playing among the fig trees. R Just height To maximise the floor area and reduce the visual mass of the island, Chris designed a sunken kitchen. “The island becomes more akin to furniture and doesn’t dominate the space,” he says. Now that the bench and the Omann Jun table are aligned, the Bentwood chairs can be used at both. “There’s an invitation to sit and talk with people cooking in the kitchen. Even the smallest member of the family can pass by and see what’s going on.”

Family trees With net floors beneath your feet and foliage within reach, the extension feels like a treehouse. “We took the glass all the way to the ceiling so you can view the sky and not just the tree canopies, bringing light from the second level into the living space,” Chris says. Of the double glazed, thermally-efficient windows, Chris says the architecture uses light “to take you from one space to another. As you turn a corner there is always a window drawing you through the space to the end of that site line, rather than a blank wall.” Going bush Rough sawn and charred Frencham cypress designAclad was used for the exterior of the extension. This tactile material works in harmony with the leafy backyard. Japanese influence “Given the family includes three young children, we needed it to be robust but it also needed to speak to the client’s Japanese heritage,” Chris says of the elegant joinery, which highlights the thoughtful application of hard-wearing materials. Turn a new leaf While Tania selected the furniture, decor and art, a team of builders and engineers from CBD Contracting and Co-Struct worked on the build. The garden was landscaped by Phillip Withers and Three Colours Green. “We like to facilitate a space for people and the things they already have and love, helping to make a house while allowing them to create their home,” Chris says.

SOMEONE WILLING TO PURCHASE AND RENOVATE a 137-year-old apartment with dilapidated flooring and six layers of wallpaper peeling from the walls is quite rare indeed, but it seems Swedish interior designer Louise Liljencrantz has a knack for seeing past terrifying first impressions. “We already lived in the same building, but in a smaller apartment,” Louise says of her family home in the heart of Stockholm. “When the opportunity for more space in a familiar setting presented itself, we seized it.” While the property was structurally sound and the original architectural features were intact, the apartment required a face lift and significant renovations to become what it is today: a soothing study in visual serenity, capable of catering to a growing family while being blissfully clutter-free. REBORN Her home now has a living room, dining room, three bedrooms, two bathrooms, kitchen and office, all in tranquil shades of white and grey, with grounding accents in black and dark brown, a tonal display that champions texture and contrast over colour. Pale timber parquetry appears throughout the home, while a selection of wood, fur, stone, flax, glass and wool ensures the interior scheme is anything but boring. Soothing but bold, the restrained palette makes an impact thanks to the clever arrangement of light and dark elements – an effect that very much reflects Louise’s previous experience working in fashion and graphic design; it’s edgy, fresh and contemporary. “The light and the shadows that change throughout the day are what bring the rooms to life,” Louise says. LIGHT SHOW “The most challenging part of the renovation was working within the tonal colour palette – the colours in the textiles, the paint and wallpaper need to work together in all kinds of light,” Louise says. Sophisticated, minimal and warm, the house offers a gallery-like experience to its occupants. Stark white sculptures sit upon sleek surfaces, while lamps, vessels and vases with striking silhouettes fill the negative spaces in-between. The visual harmony of the home is never uninterrupted, each room flowing effortlessly into the next. “Art helps create the magic of a home,” Louise says. “Without art, home wouldn’t feel like home at all.” R

CHANNELLING THE WARMTH OF regional Italy into an austere glass box at the base of a commercial tower in North Sydney may seem like an impossible task, but design studio Alexander & Co pulled it off at Glorietta. The vaulted cloudscape of rattan caging gives the high ceilings a sense of intimacy, while timber boards, stone off-cuts and polished concrete flooring lead the way to a contemporary selection of communal tables that strike through the centre of the dining space, punctuated by rust red tabletops, low-lying benches, a cane sofa that serves as something of a centrepiece, and an impressive olive green leather banquette that runs the length of the periphery. A soothing palette of mustard, teal blue and apricot further softens the space, while sheer curtains counteract the hardness of Glorietta’s commercial shell. Upon entry, guests are greeted by views of the pizza oven, bustling open kitchen and bar, igniting an electric atmosphere that only a shared love of great food and wine creates. The space feels alive, and it’s evident that every material and colour has been selected to subtly reference the agricultural ancestry and tone of Italy. R

WHERE DOES A SERIAL ENTREPRENEUR with a PR agency and six brands under her belt find inspiration? For Ana Piteira, founder of Reliquia Jewellery, Respiro and Valet Studio, the creative process starts at home. “My home is the platform that often kickstarts a new idea,” says Ana, who has been collecting art since she first moved out and is galvanised by “colourful and texturally-diverse” interiors. Best summed up as curated maximalism, her style is shaped by memories of her grandmother’s jewellery collection and trips to Portugal. “I’m drawn to bold colours, visible texture and vintage aesthetics from varying eras,” Ana says. When styling displays, Ana mixes items of different heights, textures and volumes to create interest. “Pick a focal piece to zero in on and work around that. I’ll place a standing candle among coffee table books, varied vessels and my favourite trinkets.” And given that she’s building her own style empire, it’s no surprise Ana decorates with hair clips, handbags and jewellery, which “deserve more attention than being stored away in a wardrobe”. A Trend setter “I never create something that I wouldn’t personally wear or style in my home,” says Ana, pictured in her living room in Sydney. Homewares from Ana’s newest brand, Aeyre, will launch in October and include candles, coloured glassware, Japanese incense and brass holders, resin trays and more. show-off your true colours Ana is a self-described maximalist when it comes to mixing styles and decorating with colour. “I like that a gallery wall provides additional colour,” she says of her art collection. “It also offers a simple and curated way to display personality, merging personal momentos, photography and local artists.” And the bold hues don’t stop there – Ana layers bright textiles, too. “Throws and pillows are great because you can move them around and update them to keep a space feeling fresh.”

DESIGN The French Riviera is a classic interiors muse. Here’s how to make the look feel modern

FOR MANY OF US, SPRING IS A TIME for planning overseas holidays, but now that we’ll be spending 2020 on home soil the bittersweet arrival of this season has left us with a whole lot of unrequited wanderlust. Lucky for us, there’s a world of interiors inspiration out there to whisk you off to your dream destination and this India Mahdavi-designed home in the south of France certainly provides that escapism. We love the way India has reimagined the villa’s original Provencal-style scheme in a modern way – it’s a refreshing example of how to dip your toes into a Mediterranean look without diving in all the way. Let’s explore how she did it… GRAPHIC SHAPES Architect and designer India Mahdavi is an artist when it comes to working with bold shapes. Throughout this villa she’s used cement floor tiles that feel right at home in the French Riviera, but the graphic, hexagonal design gives the overall look a contemporary edge and the asymmetric pattern feels more modern than a checkerboard. These monochromatic Rain tiles, which India designed for Bisazza, are also the perfect segue to outlining the windows and doors in graphic black. The statement frames not only draw attention to the arched entrance and views, but they could work just as beautifully in your home, too. REFINED MATERIALS Words like raw, unpolished and visible texture come up a lot when talking about interiors native to the south of France. But not in this case. India has chosen furnishings made from natural materials, but the design and finishes are quite refined so the scheme doesn’t feel at all rustic. Take India’s Henri dining table and Cap Martin armchairs – their sculptural silhouettes feel contemporary, yet the rattan material appeals to a coastal aesthetic. Another trick is to select major items in natural materials, like a linen sofa, then decorate with polished textures such as brass, glass and velvet, as India has done with aplomb. STYLISH SURPRISES It’s so refreshing to see India has mixed styles and design eras within this relaxed, summery scheme. For example, she’s teamed the dining table with her modern nylon and metal Afro chairs. Against the warm neutral palette, these bright yellow chairs make you smile without confusing the aesthetic. And then there’s the leaf-shaped Bambiloba bench by Claude Lalanne. You may not expect functional art in a coastal villa, but a single overt element of luxury, particularly one as elegant as this, is a welcome addition in any interior. Consider it your carte blanche to splurge on something, simply because it’s gorgeous. R

Rich & opulent The owners requested ‘rich and restrained’ opulence for both of these bathrooms, which was achieved through the use of two main materials: purple veined marble, inspired by the purple stained glass window in the room, and Marmorino plaster which was applied to the ceiling and walls. The children’s bathroom drawers are made from white timber, a lighter alternative that’s easier for little hands to open, while the vanity in the parents’ bathroom has marble joinery. Dark bronze wall light fixtures add subtle contrast to the bathroom and the floating mirrors open to reveal storage cabinets.

the look Studio Griffiths was tasked with creating a luxe monochrome bathroom that felt elegant yet masculine without coming across as overly dark or oppressive. A colour palette of black, white and muted grey was chosen and teamed with dark terrazzo tiles, a slimline steel console with white porcelain benchtop and sheer curtains that soften the hard lines of the bathroom while diffusing natural light. the look The owners of this kitchen asked Wowowa Architecture & Interiors to create a confectionery-inspired kitchen that felt whimsical and fun with industrial elements. Taking cues from the existing brickwork in the home, a palette of candy hues in red, pink, tan, mustard and brown was chosen and paired with tactile materials such as graphic marble, warm-toned timber, bronze cabinetry and copper handles. The end result is a kitchen that packs a personality punch while providing plenty of storage options, functionality and a design scheme that pushes the boundaries without being ‘over the top’. FOR MANY OF US LIVING in inner-city apartments with limited access to greenery, and even those in more suburban or rural areas, caring for and tending to plants in our homes is something we should eagerly embrace. Growing and looking after an indoor garden is rewarding; a therapeutic endeavour that can help foster a better relationship with the natural world. At a time when negative human impact on the environment has never been more apparent, learning to appreciate the value of nature and how it sustains us is of the utmost importance. Perhaps this goes some way to explaining the increasing popularity of indoor gardening in recent times. Now, more than ever, we need to reassess the way we live and learn how we can tread more lightly on our planet. It’s time to cultivate a connection to plants.

Syngonium podophyllum is the most commonly cultivated Syngonium species. Native to the tropical and subtropical climates of many countries, it grows very happily indoors. It is a prolific grower with leaves that become larger and more arrow shaped as they age. These plants are great for beginners as they’re unfussy and tolerant of some neglect.

This stylish and highly soughtafter house plant will add serious panache to your indoor jungle. Bright, indirect light is important for maintaining the strong and beautiful variegation of its foliage, and a well-draining potting mix that is sufficiently aerated is best. It can tolerate drier conditions and will thrive in the low humidity of many indoor environments.

The ornamental yam is a dramatic vine with intricate and unusual variegation on its heart-shaped foliage. Its flowers, which bloom in drooping clusters, are small, white and perfumed, but unlikely to occur indoors. This plant will appreciate at least four hours of gentle morning or late afternoon sunlight, but bright, indirect light will also be tolerated.

A very dainty alocasia indeed, the Alocasia zebrina has upright arrow-shaped leaves that extend from fantastically striped stems. This plant likes high humidity and spritzing the leaves will help, but be careful to provide adequate ventilation so that water isn’t left sitting for long periods of time on the foliage. The zebra alocasia also enjoys gentle morning rays.

spiced lamb with prunes Serves 4-6 Prep time 20 mins Cooking time 2h 20 mins 1 tbsp olive oil 1kg lamb shoulder or leg, deboned and cut into 6cm chunks 1 onion, finely chopped 2 tsp cumin seeds, dry-roasted and finely ground with a mortar and pestle 2 cinnamon quills, broken in half 4 cardamom pods, bruised

1 tsp cayenne pepper 2 garlic cloves, finely chopped 6 prunes, pitted and halved 3 tsp honey, or to taste coriander leaves, pomegranate seeds, roasted slivered almonds and thick Greek or natural yoghurt (optional), to serve

Heat oil in a casserole over high heat, then add lamb chunks, working in batches, and cook, turning occasionally, until golden brown all over (3-5 minutes). Transfer lamb to a plate with a slotted spoon and set aside. 2 Add onion to casserole and cook over medium heat, stirring occasionally, until starting to turn golden (6-8 minutes). Add spices and garlic, and stir until fragrant. 3 Return lamb to casserole with remaining ingredients, except prunes, and 400ml water, or enough to just cover everything. Bring to a simmer over a low-medium heat, then reduce heat to low and simmer, stirring occasionally, and adding prunes in the last 30 minutes of cooking, until lamb is tender (1½-2 hours). 4 Remove lamb and prunes from casserole and set aside in a bowl. Increase heat to medium and simmer cooking liquid until reduced to a thin sauce (15-20 minutes). 5 Return lamb and prunes to the sauce and serve topped with coriander leaves, pomegranate seeds, almonds and yoghurt.

Heat half the butter and half the oil in a large saucepan over medium heat. Add carrot and a pinch of sugar, and stir until caramelised (3-5 minutes). Set aside. 2 Add remaining butter and oil to pan. Add onion and stir until tender and translucent (6-8 minutes). Add rice and stir to combine, then stir in sultanas and saffron water. Pour in enough stock or water to cover ingredients by 5mm, season and stir to combine. Bring to a simmer, then reduce heat to low, cover with a lid and cook until rice is tender (15 minutes). Remove pan from heat and remove lid. Cover pan with a tea towel and set aside to steam (5 minutes). 3 To serve, add carrot, herbs and nuts to rice, and stir to combine. A 1

spinach and yoghurt dip with sabzi khordan Serves 4-6 Prep time 20 mins Cooking time 10 mins

3 bunches (about 900g) English spinach, trimmed and well washed 350g (1¼ cups) Greek-style yoghurt, drained in the fridge* 2 garlic cloves, finely grated on a microplane olive oil, for drizzling

roasted walnuts, coarsely chopped, to serve dried mint, to season fresh herbs and vegetables such as mint, radishes and spring onions, to serve flatbread such as Afghan bread, to serve

Heat a large saucepan over hight heat. Add spinach, with residual water from washing, in batches, and stir until wilted (20-30 seconds). Transfer to a colander to drain and cool completely, then squeeze out excess water, coarsely chop and transfer to a bowl. Stir in yoghurt and garlic to combine and season to taste. 2 Drizzle dip with olive oil, scatter with walnuts and dried mint, and serve with fresh herbs, vegetables and flatbread. 1

* Use a good-quality pot-set plain yoghurt and drain it in the fridge in a muslin-lined sieve over a bowl for long enough to achieve a thick spreadable dip (4 hours or overnight).

beetroot, chickpea and za’atar salad Serves 4-6 Prep time 20 mins Cooking time 1h 6 medium beetroot, trimmed 170g dried chickpeas, soaked in cold water overnight juice of 1 lemon 1 tsp white wine vinegar 100ml olive oil 1 garlic clove, crushed

Preheat oven to 220°C. Place beetroot in a baking dish with 1cm water, season, then cover with foil and roast until tender (1 hour). Set aside to cool, then peel and cut into thin wedges. 2 Meanwhile, drain chickpeas and transfer to a large saucepan of water. Bring to the boil, then add 250ml cold water, bring back to the boil, reduce heat to low and simmer, top up water as necessary until tender (40 minutes to 1 hour). Drain chickpeas and set aside to cool. ZA’ATAR 3 Pound herbs with a mortar and pestle until coarsely crushed. Add sesame seeds and sumac, and pound until finely ground. 4 Stir 3 tsp za’atar with lemon juice, vinegar, oil and garlic in a bowl to combine, and season to taste. Add half the za’atar dressing to beetroot in a large bowl and toss to combine. Transfer to a serving platter. Stir remaining za’atar dressing with chickpeas and mint in a bowl to combine, then spoon over beetroot. Garnish salad with extra mint leaves and a sprinkle of extra za’atar to serve. 1

HARISSA 1 Dry-roast cumin and caraway seeds until fragrant, then finely crush with a mortar and pestle or spice grinder. Combine chillies and garlic in a jug and blend with a hand-held blender until finely chopped. Add ground spices and a large pinch of salt, then blend, gradually adding oil, to a coarse puree. Season to taste. 2 Heat oil in a large saucepan. Add harissa and stir until fragrant (20-30 seconds). Add mussels, cover with a lid and shake pan occasionally until mussels open (3-5 minutes). Transfer mussels to a serving plate as they open along with cooking juices. TOMATO-LEMON SALSA 3 Toss ingredients in a bowl to combine and season to taste. Spoon salsa over mussels and serve with flatbread or couscous and yoghurt, if preferred, and with lime cheeks and coriander to finish. A

LIME-ROSEWATER SYRUP 400g caster sugar ďŹ nely grated zest of 1 lime juice of 2 large limes 1 tsp rosewater

SYRUP 1 Bring sugar and 600ml water to a simmer in a saucepan over medium-high heat, stirring to dissolve sugar. Remove from heat, stir in lime zest and juice, and rosewater. Pour into a plastic container and freeze, scraping occasionally with a fork until frozen and smooth (6 hours). 2 Meanwhile, soak vermicelli in a large bowl of boiling water until very tender (10 minutes). Drain, cool under cold running water and drain again. Stir into frozen syrup. Return to freezer to ďŹ rm up (1 hour). 3 Serve faloodeh topped with cherries and their syrup, scattered with pomegranate seeds and pistachio nuts.
