OVER THE PAST FEW MONTHS I’ve become obsessed with gardening. It started in autumn when I ordered a box of 16 small hydrangea plants online. (It still amazes me that you can receive plants by post!) I planted them in my backyard and watched as they withered to bare sticks over winter. Then spring came. Well! Now, they’ve filled out with lush green leaves and have started blooming. Similarly, the old olive tree we were lucky enough to inherit when we bought the house is bushier than ever after a pollarding disaster last year. It was cut back so hard I thought we’d lost it – little did I know it would go crazy with new growth. That’s the beauty of gardening. Every season there’s something new to look at, a sentiment I like to apply to decorating, too. New season, new look. This issue, our stylist Lisa has created three beautiful console looks to show how you can rearrange your tabletop surfaces (p107). Books, vases, candles, objets d’art – Lisa shows you how to play with shape, height and perspective. Try swapping items from room to room, or jump online to buy something new to add to the mix. The point is that restyling even a small part of your home can make things feel fresh again. If you’re after a larger change, why not buy a new occasional chair for your living room or bedroom? Our round-up from p85 showcases all the best seats in the house, for every style and budget. Still life Partners Iñigo Aragón and Pablo López Navarro of Casa Josephine Studio worked with Spanish architect and artist Elvira Solana on the wall frescoes throughout their bed and breakfast. “We wanted the paintings to make reference to objects that are, or could be, in the house,” Pablo explains. “Elvira imagined what the plan of the house would look like with more rooms and annexes. She drew the plan and then painted the walls, niches and windows of this imagined architecture.” A

CASA JOSEPHINE STUDIO has been described as “the studio most likely to design your dream home”. But as founders Pablo López Navarro and Iñigo Aragón tell it, the business began with a design project that Pablo calls “an unwise decision with good results”. It’s not your typical success story, but then again the duo take a refreshingly honest approach to everything they do. LEAP OF FAITH With a combined background in art history, fashion and tourism, Pablo and Iñigo embarked on their debut design project in Spain’s Rioja wine region after re-evaluating their careers and deciding to join forces. “The area was starting to get attention as an up-and-coming tourist destination. We felt it was the right time and a good place to be,” Pablo says. The Madrid-based couple moved to Rioja and bought this late 19th century country house from Iñigo’s family. Sure, the house had potential but, as Pablo explains, “what really motivated us was a mix of insanity, lack of experience, and a dose of blind unfounded faith in our energy”. Three months into the redesign the pair realised they were in way over their heads, but it was too late to turn back. “We were naive and thought we could do everything ourselves with two pairs of hands. We can laugh now, but we had no plan B or financial backup if we failed.” AUTHENTIC AESTHETIC When Pablo and Iñigo opened the doors to their beautifully redesigned Casa Josephine bed and breakfast, guests began approaching them for interiors advice. Thus, Casa Josephine Studio was born. Their design practice continues to expand and while this project doesn’t define their style, Pablo says it does reflect their respect for local traditions, influences and materials. “The most important thing is to ‘listen to the house’. This sounds very esoteric but it simply means to study the language of the pre-existing elements. We believe in decoration that is coherent to the place and time. It isn’t a logo that can be stuck anywhere – it must have a reason,” he adds. COUNTRY STYLE This design philosophy underpins every element of Casa Josephine bed and breakfast. “We wanted the house to have a summer feel, but in a specific way,” Pablo tells. “We had in mind a family’s summer house in the country. They gradually bring pieces from their city apartment to their country house – a set of old chairs... a lamp that is no longer in fashion – and mix them in a carefree way.” The house is furnished with French and Italian designs from the 1970s because, as Pablo explains, it’s hard to buy antiques in Spain due to its troubled economy during the 19th and 20th centuries. The rich colour scheme was informed by the original floor tiles and artist Elvira Solana designed the lifelike architectural wall paintings. Paint is also used to continue the colour of the floors and ceilings up and down the walls, which Pablo says is quite common in rural houses. “Paint was historically an inexpensive way to decorate and create visual effects. This is a house in a village – it made sense to find inspiration in local traditions.” R Heart of gold The bed and breakfast caters for up to 12 people with six bedrooms and two living spaces. Iñigo built some of the furniture including this sofa, which is made from two recycled doors. Its cover and cushions are by Casa Josephine Studio. The chairs are a 1960s French design, the coffee tables are by the French ceramicist Roger Capron, the floor lamp is a 1970s Italian design and the ceramic piece is by Mambrou Picaguillou. Find & seek Pablo and Iñigo are always sourcing furniture and decorative objects and have a showroom in Madrid where they sell 20th century designs. Despite romantic stories about interior decorators finding rare items in unexpected places, Pablo says they buy at professional markets and fairs. “As much as we love those stories, that may have happened once... or never!” The bed cover is by Casa Josephine Studio and the blue artwork is by Jean Picart le Doux. Colour chameleon Pablo and Iñigo have painted the house twice – the first time with pastel blues and greens, and again with stronger shades of ochre and red. “We often forget how colourful traditional architecture was... with trade and money came vibrant pigments,” Pablo says. In the kitchen is an Ikea counter customised with an old marble top from a butcher’s shop. Above it are 1970s ceiling lamps from a nightclub. The curtains are by Casa Josephine Studio.

Set the scene The stunning oor tiles throughout were produced in the 1920s in a local factory and were the inspiration for the rest of the home’s colour palette. The 1960s chairs are from Spain, the decorative dishes on the wall were sourced in Spain, France and Romania, and the painting is an early 20th century piece.

AN ANTIQUE SHOP is the sort of place you’d expect someone to get lost in, but it just so happens this is where Hannah Ward found her calling. For 15 years, Hannah worked in marketing by day and spent her free time trawling auction houses and vintage stores collecting furniture and jewellery. “For me,” she explains, “jewellery has an enduring power; it can comfort, inspire, evoke memories and tell a story. But when I looked for a jewellery box that spoke to me with equal meaning and felt as valuable as the pieces it held I couldn’t find one.” And so in September this year Hannah launched Trove, a line of charming handcrafted boxes. With no design background, she describes the project as a step outside her comfort zone and a “leap of faith”, but adds, “I thrive on researching and building a concept and I trust my instinct when it comes to design”. Hannah’s experience with antiques and her large collection of jewellery boxes also came in handy – the Trove ‘Trunk’ designs are based on an antique from 1880, which Hannah says “would have been owned by a very stylish woman at that time”. Each box features gold foil details and luxe lining redolent of a more romantic era, but the glossy lacquered exterior appeals to a modern aesthetic, and this is what makes Trove so special. For Hannah, it’s what you keep inside the box that counts. “The boxes come to life when filled with precious pieces that tell someone’s story and spark memories,” she says. “Some may use it for jewellery, others for love letters or tickets... I encourage people to embrace their collection.” R

Modern heirlooms The Trove collection includes round Sidekick designs (above and below) and Trunks (opposite), which come in two sizes and multiple colours. Hannah, pictured, says choosing the colours with a friend was the most fun part of the process. “We spent days spilling over gorgeous swatches. The way lacquer renders colour is so luxe!” And what does Hannah store in her Trove boxes? “My treasured jewellery, stones from beaches around the world, treasures from flea markets and precious objects my children have given me.”

Born in Italy, Elsa studied interior design before moving to New York to further her modelling career in 1968. The city’s disco scene quickly embraced her and before long she was creating jewellery for her new friends including the luminary fashion designers Oscar de la Renta and Halston. More than a muse, Elsa created the bottle for Halston’s iconic perfume (at one time it was the highest-selling fragrance after Chanel No.5) and when a few of her designs debuted at a Giorgio di Sant’Angelo runway show they became an instant success. When Elsa Peretti joined the luxury retailer Tiffany & Co. in 1974, it signalled a visionary new wave in jewellery design. Elsa eschewed jewel-encrusted styles for refined, sculptural silhouettes and her strong yet sensual creations appealed to working women like herself. “For me,” Elsa once said, “good line and good form are timeless.” Everything Elsa touched at Tiffany & Co. turned to gold, or in this case silver – her Bean, Bottle and Open Heart collections all elevated sterling silver to luxury status. Elsa encouraged women to wear diamonds in a nonchalant, modern way with her Diamonds by the Yard fine chains and bezel-set stones while her Bone cuffs are an icon of female grace and strength. The elegantly contoured shape resembles a heroine’s armour and draws attention to the beauty of the wrist. In the 1980s, Elsa’s work for Tiffany & Co. expanded into silver, crystal and china objects for the home. Elsa’s tactile homewares are as fluid, sculptural and timeless as her jewellery collections, and like her “style is to be simple” philosophy, these designs continue to endure. R

Award-winner Charles Wilson has been right at the forefront of Australian design for 30 years THE RELATIONSHIP BETWEEN INDUSTRIAL DESIGNER Charles Wilson and Australian furniture manufacturer King Living is a very special one. It all began 10 years ago when Charles received an email expressing interest in his designs from founder David King. “I was the first independent designer to work with King Living and we’ve gone on to create some of the company’s best sellers together, such as the Zaza sofa,” Charles explains. The Zaza sofa is, in fact, one of his favourite pieces, proudly showcased in his own living room: “It feels like an expansive and glamorous piece of work.” After diving headfirst into industrial design at Sydney College of the Arts straight after high school, Charles has spent the past 30 years developing innovative products for premium brands such as Woodmark and Herman Miller. He believes the way a piece of furniture makes you feel is of the utmost importance. “My design philosophy is a classic modernist take on function, form and materiality,” he says, “and that suits a brand like King Living. [Designing] is all about catering to aspirations, to comfort and posture, and to all sorts of body types, and while I will sometimes design with a specific end

user in mind, I find it best to design for myself. If you can’t design something you want to own yourself, then you’re probably not designing something anyone else wants either.” Wearing his industrial designer hat, Charles partners with brands to create new products, identifying gaps in collections and designing elements to enhance them. “A beautiful piece of furniture should feature clever use of materials,” he says. “It should be structured or put together in an unexpected way and have a presence within a space. Great furniture can improve lives in many ways, and longevity and reliability of a piece ensures it doesn’t have to be replaced after a year. For example, King Living offers massive warranties on the steel frames of its furniture so it can be reupholstered and reused long after purchase.” While he believes some designers might worry the integrity of their designs could be compromised by such relationships, Charles confirms it’s a truly positive experience with King Living. “We discover more efficiencies and innovations working through development as a team. It’s a very respectful process and seeing that final product has become all I hoped it would be – that’s a wonderful thing.” R real living

SCORING THE PERFECT TOWNHOUSE in one of New York’s most eligible neighbourhoods is rumoured to be as competitive as the city’s dating scene. So it’s no wonder that when fashion designer Ulla Johnson and her husband, Zach Miner, found this 1850s brownstone in Brooklyn with a spacious floorplan, sunny garden and tree-lined surrounds, they didn’t just put in an offer, they got to know the owners. Their extra effort sealed the deal and the couple began planning their dream home renovation. NEW LIGHT Ulla had worked with architect Elizabeth Roberts and interior designer Alexis Brown on her two New York stores so she jumped at the chance to work with them on her home. Given its age, many of the original architectural details such as the crown mouldings needed restoring. Once the repairs were complete, the team balanced these ornate elements with clean and modern light-enhancing features. An elliptical skylight now appears to float over the staircase, pearlescent plastered walls radiate texture and a solarium wall was added onto the kitchen and dining area, immersing the entire space within the garden. As Elizabeth notes, this addition nods to Ulla’s love of nature. LUXE LAYERS When it came to selecting the materials and furniture, sensorial experience was just as important as style. “Ulla’s style is fresh and layered – she wanted the interiors to feel calm and reflect her interests in art, textiles and design,” Alexis says of the brief, which called for “exceptional finishes and textures” that were still suitable for three young children. Hand-loomed carpet, unlacquered brass hardware, ikat textile upholstery and Douglas fir wood floors weave layers of texture into the fabric of each room. While Ulla was happy to embrace their inevitable patina and imperfections, Alexis kept the look sophisticated with sculptural custom joinery and monumental stone features including the kitchen island and master bath. PERSONAL STYLE With careers in creative industries, Ulla and Zach were both heavily involved in the design. “I wanted to show their personal tastes and collections and to harmonise Ulla’s brand with the family’s life,” Alexis says. The living room sofa fabric was custom developed for Ulla and textiles from her private collection were turned into cushions. Vintage quilts and textiles by Native American and African artisans bring warmth to the bedrooms, although Alexis says they avoided using too many prints, because “Ulla works with tonnes of pattern and colour”. The couple’s art collection also feels at home amid the updated architecture and tactile decor. “The art was all them,” Alexis says. “We just found ways to display it and set it off.” R Arts & craft Tactile artworks collected over time fill the living room with colour and texture, but it’s the owners Ulla, Zach and their children (all pictured) that give this home heart. homes Fashion sense Creating a serene yet visually inspiring home was a key part of the brief. After all, Ulla is known for designing clothes that feel as beautiful as they look. In the master bedroom is a 20th century Swedish rug. Behind Ulla and her daughter is an artwork by Bill Lynch. Rose gold Alexis says she is proud of the dynamic kitchen design (opposite). “We incorporated a lot of natural elements including Murano glass, sycamoreinspired veneer cabinetry and the stone. It came together in a special way without feeling overbearing.� The tapware is Vola; the vase is Arne Bang. A

Roses only “We wanted to create subtle but memorable moments with materiality and colour,” Alexis says of the onyx sink, tiles and tapware chosen for the powder room. A marble fabricator helped the design team create the patchwork stone floor. Upon reflection Above the hand-carved fireplace in the master bedroom (opposite) is a custom Rogan Gregory mirror. WHEN ROBIN MONKHOUSE walked into this light-filled 1930s Art Deco apartment in a tranquil part of Sydney’s Eastern Suburbs she knew it was ‘the one’ and had a strong urge to tell the others at the inspection to go home as she intended to buy it! Not only did the two-bedroom home have all the elements she and her husband Sean O’Riordan wanted, it also faced a park. “It’s like being in a treehouse,” Robin says. “You can literally go on the balcony and touch the trees.” Within 16 days, they snapped it up. NATURAL BEAUTY While many original features were intact, the interiors needed an update, having probably last had a facelift in the ’80s. “All the walls had been dusty pink rag-rolled,” Robin recalls. The new palette is softer and more subtle. “I wanted the colours to reflect the outside, with layered soft greens and very natural materials such as the stone benchtops and wooden floors.” The couple engaged Tom Mark Henry studio to overhaul the bathroom, add storage and turn the second bedroom into a dining room that Sean uses as an office. Of the lighting, Robin says, “I wanted them to be beautiful objects in their own right.” A PLACE TO ENTERTAIN Robin enjoys cooking and often has people over for lunch so she was particularly attracted to the size of the kitchen. “I set up all the food on the long benches and we do a buffet-type thing,” she explains. She and her guests then head through the original 1930s archway into the living room to take advantage of the gorgeous light, sinking down into the super-comfy Leila sofa from Jardan. This is the heart of the home with doors leading to the balcony, dining room and bedroom. At the end of the day, Robin loves nothing more than retreating to the bedroom. “It’s the most restful place to sleep,” she says. R

High lights Robin loves the Applique de Marseilles wall lamp by Le Corbusier from Mondoluce for its classic styling. The dark green Hay vases and Mud Australia fruit bowl blend in beautifully with the simple palette. Lookalike Robin is thrilled with the drama of the honed Super White benchtop, which looks like marble but without the price tag or high maintenance. Access all areas From the entrance hallway (opposite), which boasts a Duomo sconce, you can enter the bathroom, kitchen and living room. Room to relax The carpet was taken up to reveal fabulous floorboards. “They were so good we just sanded them back and put a colour on top to soften them,” Robin says. Her favourite piece of furniture, the Leila sofa from Jardan, was chosen for its comfort and its wide arms to accommodate Monty the cat. Atop the B&B Italia coffee table from Space is a Maison Balzac ‘Pomponette’ bowl and a Glossy Cow vase by Jessica Hans. The Flos ‘Snoopy’ lamp adds a playful element. “It just makes me smile,” Robin explains. A photo of policewomen in the ’60s that Robin had enlarged adorns the hall wall. A @reallivingmag

After finishing school (at Dad’s insistence) and with an Armani lookbook and iconic photographers fattening her portfolio, Candela embarked on an international career that saw her flitting between New York, Paris, Tokyo and Milan, draped in the likes of Dolce & Gabbana, Moschino and Gucci. Along the way, she gained not only a familiarity with the creative process that helped evolve her career into the Insta-age, she also met and married Milanese architect Fabio Novembre. Though the marriage wasn’t to last, it produced three beautiful children and an appreciation of what makes a house a home. THE PERFECT SPACE The apartment Candela moved into with her children five years ago was only supposed to be a transitional pad, furnished and decorated in a hurry, but it turned out to be the perfect space for her to juggle work and family life. The realisation sparked a major renovation, for which she called on her friend, interior decorator Gaia Venuti. “I had to admit that I’m not as good at furnishing spaces as I am at showcasing them!” Candela laughs. “We needed to make the home ours, so I asked for help from Gaia. I gave her carte blanche. We chose the colours and a few details with my daughters… I took a work trip to Lapland and when I got back, we had a new home!” MAGICAL MAKEOVER Gaia remembers Candela’s words as she handed over the keys: “I don’t want to know anything. I trust you.” She worked her magic in just 20 days and Candela adores the result. “I love coming back here. I know now that it couldn’t have been any other. Here I have my rituals, my candles. I love its clean smell and the light that changes depending on the hour of the day.” R

Something old Candela’s penchant for vintage pieces – whether clothing or furniture – is evident throughout her home, including an elegant 1940s bar cabinet. On top is a Gohonzon for her Zen Buddhist meditations, a practice she took up nearly 20 years ago. Beautiful silk panels from Misha adorn the walls, and the Pelleossa chair is designed by Francesco Faccin. A

Traditional features The apartment’s original chevron parquet floor is showcased in its naked glory in the dining area. The 1950s table and chairs were a fantastic flea market find at Mercatino Penelope in Milan. “I have a thing for modern antique furniture,” Candela says, explaining “they didn’t come as a set, even though they’re a perfect match. When things come together, it’s so satisfying!” The hand-painted leaf wall coverings are from Misha. A

There’s also a hexagonal Riad table, designed by ACdO and Francesco Faccin. Books and decorative pieces do nothing to detract from the Maison du Monde bookshelf and the Misha wallcovering decor panel adds an arty touch. Strike a pose Candela wears fashion label Loewe standing on a cc-tapis ‘Envolee’ rug. In this just-opened Paris hotel, creative extraordinaire Luke Edward Hall has concocted a visual degustation of design’s most decadent eras with a side of eclectic British style Pop palette Set in a Haussmann building in Paris, Hotel Les Deux Gares is a new destination by the Touriste hospitality group and the latest interiors project by British artist and designer Luke Edward Hall. The decoration is an ‘anything goes’ fusion of colour, pattern, furniture and fixtures inspired by Empire, Art Deco and ’70s design. In the pea-green lobby is a 19th century French gilt wood table and mid-century Spanish pink ceramic lamps. Luke designed the mirror. Wild side Classic toile de Jouy wallpaper, black and white chevron marble floors and a vintage leopard print sofa feature in the sitting room (opposite). This ebullient mash-up reflects Luke’s design concept of an eccentric time-travelling Parisian who collects furniture. “It’s this combination of styles that I hope will intrigue guests,” he says. Made you look Displaying posters from past art shows is a more affordable way to incorporate works by your favourite artists from different decades. For example, Luke sourced posters from Andy Warhol, David Hockney and Jean Cocteau exhibitions for this project. The striped armchairs are by Italian designer Paolo Buffa. Hotel sweet Luke furnished the bedrooms with pieces inspired by French Empire antiques and ’70s-style geometric rugs. Striped bedheads and velvet armchairs in solid colours pop against the brightly painted walls, while the adjoining Art Deco-inspired bathrooms are clad in colourful tiles with pastel fittings, pillar wall lamps and Greek key motif details. Artist’s own The lampshades in the guest suites are decorated with Luke’s drawings, which he has also framed and hung on the walls (opposite).

get the ‘hotel les deux gares’ look Luke’s wickedly decadent approach to decorating isn’t for everyone, but if there’s a room in your home that could do with a bit of drama, there are ways to dabble in this dapper look. A hallway, staircase or ensuite bathroom is the perfect place to try a bold shade of paint, patterned wallpaper or colourful floor-to-ceiling tiles. Luke takes it even further by painting the cornices a contrasting colour but avoids fussy patterns and flimsy fabrics so it doesn’t feel confused. If you’re drawn to this eclectic mix of design eras, you don’t need to be an expert in antiques to do it yourself. While Luke sourced several vintage and antique treasures, he also used new pieces such as rugs and lamps that are inspired by Art Deco and mid-century design. Upholstering a new sofa or chair in an eye-catching fabric is another way to tap into this aesthetic if you don’t have time to trawl vintage stores. R

Green house One thread that binds Cécile’s days together is her relationship with nature. “I work with plants every day. I do gardening, help the flowers that are blooming, and water them if necessary,” she says. “But sometimes, I simply stop and observe the beautiful nature that surrounds me. It gives me ideas for work and space to breathe.” A real living

CÉCILE DALADIER Paris-born artist Cécile Daladier lives with her husband Nicolas Soulier, an architect, a dog and two cats in a stone farmhouse perched 800m above sea level in Drôme, in the southern French region of Rhône, where grassy pastures meet rocky mountaintops. The couple first acquired the property in 1985 and spent years refurbishing it. Cécile explains how, at first, making use of the property’s 30ha of land required a certain level of creativity. Formed by steep slopes rich with wild vegetation and limestone soil, the land suitable for gardening was limited and only specific species were fit for planting. “It’s not a garden in the traditional sense,” Cécile says. “It’s more of a wide-open space.” Although she does take care of the trees (and the weeds!) that grow on the steep hills, Cécile has also created a strip of cultivatable land along the walls of her house where she can let her passion for gardening loose. Here, she mixes species from the surrounding fields with those she finds at local nurseries. “I like to go from wild to cultivated,” says Cécile, who discovered over time that the key to good gardening lies in acknowledging and appreciating your surroundings and in letting nature do its work. “My philosophy is to start with what I have, what’s existing in the garden, then build on it,” Cécile says. “Before creating a garden, you have to live in it for a few months – maybe even a year – to observe what happens, what grows and what disappears.” R

snapper carpaccio with yuzu kosho, orange and fennel Serves 4 Prep time + cooking time 30 mins

Yuzu kosho is a Japanese yuzu and chilli paste that has been fermented. It’s super spicy but the citrus fragrance that comes from the yuzu is incredible. It’s a great pantry staple to put on fish and meat, but I like how its intense heat is balanced by something fatty, as it is here with the crème fraîche. Togarashi is another Japanese chilli mixture, but this one is a dried powder with black sesame seeds. Both types of heat complement each other and are definitely worth seeking out at Japanese food stores or online. 600g snapper fillet, skin and pin bones removed, trimmed of most of the bloodline 2 tbsp crème fraîche 1 tsp yuzu kosho paste grated zest of ¼ orange 25g shallot, finely diced 1 tbsp lemon juice 1 tbsp chardonnay vinegar 60ml (¼ cup) extra-virgin olive oil, plus a little more for the carpaccio 1 fennel bulb, outer layers trimmed and fronds reserved edible flowers, tender greens and/or baby snow peas (mange tout), to garnish 4 pinches togarashi, to serve Slice the snapper fillet thinly into around 16-24 pieces. Arrange 4-6 slices on a piece of oiled baking paper. This will be one serve. Cover with another piece of baking paper and, using a rolling pin, gently but firmly tap the fish out to a thickness of 2mm. You want it to be thin while still retaining some texture. Refrigerate the fish, still sandwiched between the paper, until ready to serve. Repeat with the remaining fish. 2 Mix the crème fraîche and yuzu kosho paste then refrigerate. You can add less yuzu paste if you don’t like your food too spicy. 3 Combine the orange zest in a bowl with the shallot, lemon juice, vinegar and a pinch of salt. Allow that to sit for 15 minutes, then add the olive oil to complete the vinaigrette. Thinly slice the fennel on a mandoline and also set aside. 4 When you’re ready to serve the dish, spread ¼ of the crème fraîche mixture on the bottom of each individual plate. Peel one side of the paper away from the fish and layer the fish slices onto the plates, along with the shaved fennel. Season the fish with salt, then pour a generous spoonful of stirred vinaigrette over the top. Finish by topping with the fennel fronds, edible flowers or the small, sweet snow peas and a sprinkle of togarashi. A 1

triangoli with asparagus and ricotta Makes 40 triangoli Prep time + cooking time 60 mins

Sometimes a dish comes to you that’s so good it can’t be improved upon. This is that dish for me. To make triangoli you need some additional tools: a spray bottle filled with water; a ravioli cutter (or a knife will do); and piping (icing) bags for piping the filling. When made, line the triangoli up on semolina-dusted trays and don’t let them touch one another. DOUGH 250g 00 flour 1 egg 5 egg yolks 2 tsp olive oil semolina, for dusting FILLING 60g green garlic, minced 40g butter 400g asparagus 350g best-quality ricotta

TO SERVE 6-8 asparagus spears, thinly sliced 80g butter grated parmesan 60g toasted pistachio nuts, crushed 1 lemon, juiced

TO MAKE DOUGH 1 Place the flour in a mound on your workbench. Make a little crater in the centre of the mound and drop in the egg, yolks, a pinch of salt and the olive oil. Use a fork to slowly incorporate some of the flour into the centre of the mound. Eventually lose the fork and start using your hands to knead everything together. Knead for about 10 minutes until the dough becomes smooth and elastic. Add flour as needed if the dough feels sticky. Cover the dough with a damp dish towel and allow it to rest for 30 minutes at room temperature before proceeding to roll it out. TO MAKE FILLING 2 Sauté the green garlic in the butter in a pan over a low heat until soft and fragrant. Snap the woody ends off the asparagus and thinly slice the rest. Increase the heat. Add the asparagus to the garlic with a splash of water. Immediately cover with a lid and allow asparagus to steam for one minute. Remove the lid and sauté the asparagus for another minute or two until tender but still a bright green. In the bowl of a food processor, blend the ricotta and asparagus-garlic mix until well combined, but not completely smooth. Check for seasoning and add salt as needed. Scoop this mixture into a piping (icing) bag and set aside until you’re ready to fill your pasta. 3 Roll out your pasta thin enough to see your hand through the dough. Using a knife, cut out 7cm squares of dough and try to minimise as much waste as possible. Pipe approximately 20g of the filling into the centre of each square, then spray the square with a little bit of water and fold one end over to meet the other to form a triangle. Press around the edges to seal it shut and squeeze out any air from around the filling. Trim the two pressed edges with a ravioli cutter, then place on a semolina-dusted tray and continue until all the pasta and filling mixture has been used up. 4 Bring a large saucepan of well-salted water to the boil and cook the triangoli for 2 minutes. Throw the sliced asparagus into the saucepan for the last 30 seconds, and then drain everything. Brown your butter in a large frying pan over a medium heat until it has a deep caramel colour, then toss the drained asparagus and pasta with the butter. Spoon 8-10 triangoli onto each plate. Sprinkle with parmesan cheese and toasted pistachios, then add a final squeeze of lemon juice.

lime curd tart with toasted meringue Serves 8-10 Prep time + cooking time 90 mins + chilling

As much as I love lemon, I do think the flavour of lime is more interesting. Growing up, we had a lime tree in the backyard, and I remember every night before dinner Mum would say, “Go and grab a lime”. I learned early how to figure out which limes were ripe and which were too green due to youth. This is probably where my incessant need for a splash of lemon on everything came from – ironically, with a splash of lime.

LIME CURD 5 large egg yolks 120g caster (superfine) sugar 120ml fresh lime juice (approx 5-6 limes), plus the microplaned zest of the limes 120g butter, cubed

MERINGUE 6 large egg whites 340g caster (superfine) sugar ¼ tsp salt ¼ tsp cream of tartar (optional, but it helps to stabilise the meringue)

PÂTÉ SUCRÉE (SWEET PASTRY) 230g unsalted butter 170g (¾ cup) caster (superfine) sugar 1 egg 1 egg yolk, at room temperature 1 tbsp vanilla extract

2 tsp salt 35ml cream 500g (3 cups) plain flour

Bring your butter to just below room temperature, so it’s cool to the touch but still pliable. Drop it into the bowl of a freestanding electric mixer fitted with the paddle attachment. (If you have one of those fancy paddles with rubber sides that scrapes the edges, use that one.) Add the sugar and cream together on a medium to high speed for 5 minutes. Stop the machine and scrape down the sides a couple of times during those 5 minutes. Next, add the eggs and vanilla and beat until all combined. Add the salt, cream and flour, and beat on a low speed to incorporate so the flour doesn’t fly everywhere. When it has just come together, dump it onto your bench. Divide it into two equal balls, flatten them into discs and wrap tightly in plastic wrap. Refrigerate for at least two hours, or freeze if you’re not using it that day. Allow to defrost in the fridge overnight. If you’re making individual tartlets, divide the pastry into 6-8 pieces, depending on the size of your moulds. From here, the instructions are all the same whether you’re making one tart or multiple small ones. 2 Roll the dough out between two pieces of baking paper until it’s 2mm thick. Remove the top sheet of baking paper and then flip the dough onto a tart mould with a removable base. Pull off the other baking paper sheet and gently push the pastry into the creases of the tin. If any pastry snaps off, simply press it back into the mould until the tin is completely covered and you have a bit of excess hanging off the side. If you have too much excess, simply trim with scissors, but leave enough to allow for shrinkage during the baking process. Place the tin on a baking tray and put it in the fridge or freezer to chill for an hour. This second chilling stage will prevent the pastry from shrinking too much. 3 Preheat the oven to 175°C and set an oven rack in the lower third of the oven with a baking stone on top. 4 Remove your tart from the fridge and place a piece of baking paper on top. Fill the tart with baking weights or dried beans or rice. Bake for 30 minutes until the edges are just beginning to brown. Remove the weights and baking paper and return it to the oven for another 10-20 minutes, until the base and sides are golden brown. If the edges are brown but the base is still slightly undercooked, cover the edges with aluminium foil and continue baking until the base is done. Remember, the crust will continue baking once it’s out of the oven, so remove it when it’s one shade lighter than you want it to be. 5 Allow it to cool completely before unmoulding the crust. 1

LIME CURD 1 Set a heatproof bowl on top of a saucepan of simmering water. Ensure the bottom of the bowl does not touch the water. In that bowl, off the heat, whisk together the egg yolks, sugar and lime zest until light and fluffy – it takes about 3 minutes. Add the lime juice and a pinch of salt, and mix to combine. Place the bowl over the saucepan of water and whisk constantly until the mixture has reached 79°C on a cooking thermometer and is nice and thick. Immediately pass the curd through a fine mesh sieve into a bowl. Add the butter and whisk until the butter has fully melted. Place a piece of plastic wrap directly on top of the curd and refrigerate to chill slightly. Once cool to the touch, mix the curd until smooth again and pour it into the baked pastry case. Refrigerate to set and cool, about 2-3 hours. MERINGUE 2 Combine the egg whites, sugar, salt and the cream of tartar in the heatproof bowl from a freestanding electric mixer. Place the bowl over a saucepan of simmering water, just like you did with the lime curd, and use a spatula to mix until a thermometer inserted directly in the whites reads 70°C. This should take about 10 minutes. Once you reach that temperature, transfer the bowl to the electric mixer fitted with the whisk attachment. Whip on high speed until the whites are voluminous and glossy. This takes about 5 minutes. Transfer the meringue mix into a piping (icing) bag. 3 Pipe the meringue on top of the set tart in whatever pattern you like. Use a blow torch or the grill to toast the meringue before cutting slices and serving up. R
