eally, it’s the only kind of entertaining I go for because I am easily distracted when I have a house full of fun people, and have been known to leave them stranded for hours without lunch. I’ve accepted that I’d rather be deep in the party than finishing tricky dishes in the kitchen by myself between courses. I like simple shared food, not too many brimming plates on the table and not too many dishes to wash – and rest assured you’ll be helping yourself to drinks from ice buckets placed in strategic positions around my house. paper snowflakes YOU WILL NEED
These are simple to make if you follow the steps. Use paper that is firm enough to hold its shape, but not so thick that it won’t fold smoothly. For smaller flakes, wrapping paper or regular printing paper is fine to use. Thin card will have better hold for larger ones.
STEP 3 Mark a point of a standard length

a semi circle like the one below. An averagesize baseline is 18cm, which will determine the diameter of your snowflake.
STEP 5 Once your template is cut out, it’s

To create the increments, mark the 15-degree points in pencil outside the edge of the protractor, then draw lines from the centre of the circle (in this case it is half of 18cm, which is at 9cm) to the points. along the arc of the semi-circle. These will eventually be your snowflake’s tips.
ready to fold. Follow the lines to do this. For thicker paper or card, it’s a good idea to score the lines using the back edge of a scalpel blade. This will help to create a much cleaner line and, ultimately, make your snowflake look a lot more crisp.
STEP 6 Repeat the steps three or four times,
depending on how full you want the snowflake to be (ours were mostly three or four semi-circles). Join the overlapping end pieces together with glue or double-sided tape. *If you want a tighter fan, create 15 or more sections (eg. 180 / 15 = 12 degrees).

variations to the snowflakes round to make your circle/semi-circles: a glass, cup or even a plate. Just apply the 12 sections and 15-degree-rule. A protractor or compass will help, too. ADDING CUT-OUTS If working with light-weight paper, take your folded semi-circle and cut small shapes along the folded edge, either a half diamond, a triangle or a semi-circle. If working with thicker card, you will need to do this on your flat semi-circle before folding up the fan. Simply mark out the shapes on your fold lines. It is useful to draw concentric circles or arcs with a compass; that way your shapes will appear aligned when folded. One you have marked them out, cut with a scalpel. CREATING LAYERS Making double flakes is simple. We used gold paper for our top layer, but you could use thinner paper from a craft store. To layer the flakes, stick to 12 increments per semi-circle, no matter how large the arc of the flake. Your increments are consistently 15 degrees, so the two flakes will always fit together. GARLAND HANGING Make six to eight snowflakes of different sizes and attach to fine ribbon or string with tape or by hand-stitching. Vary the lengths of the string so the snowflakes sit at different heights. Cluster them together so the width of the garland is approximately 90cm and the height is 100cm.

Chunks of limestone are transformed into wondrous works of art at the hand of this talented, self-taught Melbourne sculptor
How did you discover you had a skill for sculpting? I’m fortunate
that being able to think spatially has always been a strength of mine. As a kid I worked for my dad, who’s a landscape gardener and stonemason, and I picked up on how the treatment and arrangement of natural materials can affect how we experience and interact with the spaces we inhabit. You have a background in landscape design, jewellery design and furniture making — how has that led you to sculpture?
I was studying a masters in landscape architecture and worked for a few different design studios on some really interesting projects. Even though I enjoyed the work itself, I quickly realised I was much more of a hands-on person and wanted to be making as well as designing. My first taste of running a small business was when I began creating jewellery, then I moved into furniture making. I started with sculpture purely out of curiosity, drawing on the skills I’d developed through my career. After posting some images online and experiencing a strong response to them, I was motivated to keep going. Finding there was an audience for my work, I guess I just went with it. So your experience has turned out to be nicely complementary?
Yes, all of these practices have inherently sculptural elements to them, so the methods and design thinking do translate between them. I think that’s the reason I’ve been able to move back and forth between those mediums – it feels natural. Although they’re diverse fields, I’m applying the same basic concepts of shape, form and balance across the varying scales of each practice. Do you create for art or functionality? Well, I don’t see the two as mutually exclusive. I want my pieces to sit somewhere in > 42 | INSIDE OUT

between both art and function, with the individual choosing how to view it or use it. I don’t want to prescribe how my work is consumed or enjoyed. I think this is important, particularly when it comes to the very personal act of decorating your home. I love seeing the different ideas people have when arranging my work in their spaces. What draws you to working with limestone? I find that limestone is such an interesting and unique medium. Its unpredictable nature makes it really special, because it enables dramatic variations in colour, texture and density. This means no two pieces are the same – I love that. Your business is called Neighbourhood Studio — where did the name come from? When I started out, I was making furniture
and sculptures in my garden and selling them to my neighbours. Even now, many of my customers come over to pick up their pieces and I enjoy that interaction, being able to meet the people who’ll have my art in their homes. I put so much of myself into my art and it’s rewarding to hand it over in person. What’s your proudest professional moment so far? I was just nominated for an emerging designer award by The Design Files. That was a pretty huge moment for me! What’s next for you? I would like to branch out and experiment with new materials. I never want to stop learning new skills and expanding my practice beyond what it is now. Where do you find your inspiration? In contemporary art, architecture and design, and in the natural landscape. With its hard edges, soft curves and jagged, textural finishes, my work references Cubism, Greek Classicism and Romanticism. These movements seem a natural departure point for such an analogous craft. I want to give my pieces a contemporary feel that references the classics… without me recreating them. What motivates you to create? I’m lucky enough to have been able to turn my passion into my job. eelong-raised homeowners Peta and
Fletch spent many restless nights debating whether to move back home or stay in Melbourne. After a final commitment, it was decided they would remain in the capital until their two daughters had reached high-school age, but following a serendipitous find, neither party could deny the pull of perfection. “I was away on a girls’ trip to Noosa in 2014,” says Peta, “when Fletch and Lauren, my best friend, found this place separately and sent it to me. The decision to buy it was then made quite quickly.” The location, a leafy inner-west suburb of Geelong called Newtown, was just too good to resist and the stumbling blocks fell away. “It was in an amazing area with a real community feel,” says Peta. “Beautiful schools and a vibrant village were all within walking distance.” Another clincher was their ability to lock down star architect Ben Robertson of Tecture for their project, which was one of his earliest. During the design process, the couple lived for two years in what Peta admits were “pretty shocking conditions”, with no heating and an interior that hadn’t been touched in over 40 years – by which time it was apparent that their dream home needed to be built from the ground up. So at the end of 2018, the family finally moved out and readied themselves for a 12-month renovation. As the street is heritage listed, the home’s beautiful Edwardian-style facade was retained while, behind the walls, an exciting new home began to

SITTING ROOM Tucked away on the other side of the living room sits the real heart of the house, the star of which came from a school fete. “I knew the couch had to be mine!” says Peta. “It was ridiculously affordable, in the most incredible condition, and I was going to make it work no matter what!” Picking up where the velvet sofa left off is the Winston armchair from Jardan and Freedom side table. emerge. “The brief was lots of natural light, storage, and white brick detailing with a neutral palette, among other things,” says Peta. Her non-negotiable? “Black steel windows and doors.” Travelling overseas frequently for work, Peta found design inspiration in the beautiful cafes and restaurants of Antwerp and Paris, replete with light bright interiors and architectural accents such as the must-have steel detailing. “I would have eaten rice for the rest of my life to get these doors into the house,” says Peta. Having planned the home for so long, she knew exactly what she wanted when it came time to engage Lauren and Matt from Built By Wilson for the build. “I love marble terrazzo and blond timbers with black finishes. I’d always dreamt of this look and stuck to this timeless aesthetic.” The layout of the house was important for the full-time working family with two young girls, and the kitchen, living and laundry spaces needed to be hardworking but stylish. “We love that everything is hidden and streamlined and we worked with Ben to create a family-friendly island bench,” says Peta, adding that it’s the perfect perch for watching Fletch cook up a storm. As big entertainers, the couple felt that a seamless connection from their living space to the outdoors was essential. “I have a Maltese heritage, so food plays a huge part in our lives and especially in our Christmas traditions,” says Peta. “When we’re not in lockdown, we love hosting family and friends.” Their big backyard has different zones for impromptu barbecues and long lunches, with room for a pool one day. “The backyard is east-facing, so we get sun beaming through the floor-to-ceiling windows, and the timber slats create amazing light and shadows,” says Peta. It makes their mammoth undertaking more than worth it. “This place is so relaxed and calm, it feels like home as soon as we walk through the door. KITCHEN “We love the streamlined look and that everything, including the integrated appliances, is hidden,” says Peta. The kitchen’s cabinetry and bespoke island bench with rounded legs took their cues from the Muuto stools. Peta didn’t want a line through the marble, so the top is made with the largest single slab of Carrara that was available. Open shelving above the splashback holds a number of Peta’s collected curios and her beloved Andrea Shaw original artwork. BUTLER’S PANTRY (opposite top) For keen entertainers Peta and Fletch, a place to stash the mess, with a second sink and dishwasher, was essential. Custom V-groove cabinetry in Dulux two-pack Vivid White flows through the kitchen into the pantry. of the Gold Coast, within strolling distance of natural playground and swimming spot Tallebudgera Creek and Burleigh Point, the house that JTech Design & Construct owner Josh Torney and his wife Joelle Setiawan brought to life is an undeniable showstopper. With its tantalising interplay of lines, angles and tactile materials, the home’s dramatic facade hints at a world of possibilities beyond the front door. And for the parents-of-one, as well as the home’s building designer, Surfers Paradise-based Reece Keil, it’s exactly this double-take reaction from intrigued passers-by that they were hoping to achieve. “Our vision was to bring a new level of design to the area – a very bold statement to the street front by creating mass and volume but still keeping a soft, floating feel that draws you in and through the house,” says Josh. “The home captures you and takes you on a journey.” Reece concurs, adding: “The built form of the home is such that it dominates the street with its sharp architectural lines and textured wall surfaces, offering everchanging surface shadowing as the sun moves from east to west.” Encased by coastal greenery, the compact 530-square-metre block on which the 420-square-metre home rises was formerly occupied by a little 1960s pink-brick cottage. “We loved that the site has a north-east aspect and is surrounded by national park – it’s the perfect backdrop to watch the sunset over the tree line,” says Josh. “Reece and I were very passionate about the project and had a combined vision from the start.” In fact, Josh and Reece took determining the site’s prime orientation to a new level – in more ways than one – at the beginning of the planning process. “I told Josh I’d meet him on his site on Monday afternoon if he brought a ladder and some beers,” says Reece. “Come Monday afternoon, we climbed up on the roof of the original home and shared a six-pack of beer while we studied the aspect as the sun went down. The neighbours were confused, to say the least,” he says, adding with a laugh, “but the rest is history!” Due to this great early communication, Josh and Reece had a similar vision from the outset. “We wanted to build a unique family-friendly entertainer that completely maximised the small site, with an architectural aesthetic of mixed materials unlike any other in the area,” says Reece. And as the works began in earnest, an especially joyous reason to meet the deadlines presented itself. “Joelle and I had our baby girl, Cedar, the day before the demolition of the original house,” says Josh. “Which was very positive motivation to complete the project and create a place to call home.”
KITCHEN (this page and opposite) “I like the fact that the house is unexpected — its look, its layout and its finishes,” says Joelle. “The breakfast bar and timber mouldings are Cirque Tasmanian Oak from Porta, and we used Smartstone Premium Plus in Ash Naturale from Stone Corp for the tops.” Smeg appliances have been integrated into the custom cabinetry by local company P&J Cabinets. The finish is Honey Elm in Nuance by Laminex, which was also used in the open butler’s pantry (top). LANDING (above) On the first floor is a large corner window that illuminates the staircase and upper level. And that they did. For despite its bold design, this is a house that was created first and foremost for liveability. It was important to everyone to strike a balance between the two. “While the outside is very structurally architectural, we wanted the inside to feel relaxed and homely,” says Joelle, who looks after interior design and staging for JTech. Inside and out, the generous use of timber, stone and exposed brickwork lends a sense of warmth and laidback style to the airy living domains. Expansive walls of glass and sliding glazed doors to the alfresco zone and pool create an easy connection with the sunny outdoors, filling the home with life-affirming daylight. “We incorporated a lot of corner windows because they let so much light into the house, as well as really capturing the surroundings,” says Joelle. “There is so much greenery in the local hills, and it’s lovely to be able to enjoy those views from the house. It makes you feel as though you’re in your own little oasis in the suburbs.” When it came to the interiors, Joelle happily took charge, further softening the home’s angular lines, soaring ceilings and robust finishes with an eclectic mix of furnishings and artwork, beginning with the beautiful internal flooring in Balmain Oak herringbone from Floor Distributors. The soft and sandy palette perfectly references the beach location. “The style is modern coastal,” says Joelle. “I wanted to incorporate lots of organic materials, such as linen and rattan, in different textures and colours that complement each other. I do love natural textures, and tend to go for an earthy look and feel. This is a summery house, and yet it’s also lovely in winter with the open fireplace.” Joelle and Josh have relished seeing their vision come to life, but they’re ready to embark on a new chapter, just in time for the festive season. “We recently sold this place and will start building all over again,” says Joelle. “We would love to find a block in Burleigh, but we’re open to Palm Beach or Currumbin and will know it when the right block comes along! Of course, it is a little bittersweet to move on, as we do have an emotional connection to the house. But it’s lovely to know that another family is going to enjoy it this Christmas. W
hat happens when a rampant ideas
person and her builder partner buy a home? They find themselves living in a blissful but bonkers state of constant reinvention. That is clearly the case for Jill Mee Lyme and her husband Peter, who juggle changing up their home on a regular basis with raising their three gorgeous children. Jill is the well-known stylist/writer behind Shades of Grey, and interior design (especially the possibilities of rearranging and restyling homes) is her passion. Peter specialises in brick and stone works on a large scale and so, while some of his wife’s domestic projects mean “a little more work in the evening”, nothing seems to faze him. Their design story started a few years back, during their search for a home. As soon as they arrived at a 1950s bungalow in Kastrup, a suburb of Copenhagen, the ideas started flowing. “Even at that first showing, there was so much to think about,” says Jill. “Peter said that if we removed all of the stuffing [the unnecessary walls of the home], it would be possible to put in a new open kitchen-dining area, and dig out the basement for more rooms.” With that in mind, the contract on the 175 square-metre home – which wasn’t fit to live in – was promptly signed and the couple got to work. Today, the living area is one large 85-square-metre space comprising a combined kitchen-dining zone and a sitting room that once was much smaller but is now big enough for the whole family. Tying all the zones together is new herringbone oak parquet flooring with an oiled finish. “We spent a long time and way too much money choosing materials for the home we were dreaming of,” admits Jill. “I can spend days looking for inspiration

on the internet and in magazines, and was keen on a few expensive joinery styles for the kitchen, but Peter’s priority was the appliances.” To balance the budget, the couple bought affordable Ikea elements, which they spiced up with new fronts from Form Plus and handles from Buster and Punch. That way, Peter got his Gaggenau stovetop, two ovens and a wine cooler. All are in full use in December, when the family entertains at scale after rolling out a new Christmas look. To accompany their menu, the setting has to be novel but nuanced, in line with the home’s grey palette and golden highlights. “My only true Christmas tradition is changing the style every year – and adding about three kilos to my weight,” says Jill, laughing. “One year it was classic red, another time it was turquoise, and once it was pink.” The family’s festive paraphernalia and regularly circulated furniture and accessories (featured in Jill’s blog) are kept outside in a huge industrial-size storage container, which the Lymes acquired during their renovations as a temporary storage solution. Now it’s like a treasure chamber for all her projects. “My parents are no longer with us, and so changing the yearly Christmas style has become my way of turning Christmas into something extraordinary,” she explains. “When our house was finished, I decided to go for it and bought pretty much every Christmas ornament I had always wanted – in colours and expressions that fit our home as it is now.” But despite her enjoyment of the status quo, it seems Jill’s flirtation with flipping her home is far from over. “I still have plans for it,” she says with a twinkle in her eye. “Our house is an ongoing project, and my next one is a little balcony in the kitchen, or maybe a first floor – when Peter has time.” See more of Jill’s styling work at shadesofgrey.dk

This space gives you the full picture of a unique house
Architect Rachel Hudson of RH/a was first approached about this project on Sydney’s northern beaches in 2014. It took a few years for the owners to commit to the undertaking, but what they’ve emerged with is a contemporary coastal home with beautiful materials and furnishings that express the sense of calm and refinement its creator intended. Finding the right pitch for the roof was an esssential step in the design process, and the rafters on the flip side look stunning in the same white as the walls and even upholstery, against the oak floor. reezy barefoot ease flows through this coastal
family home on the northern beaches of Sydney. A neutral palette of natural materials and paredback decor instantly lowers the heart rate, and the seamless transition from indoors to out is literally a breath of fresh ocean air. The owners, Cassandra and Carlo Campana, bought the property in 2012. They’d lived in a neighbouring suburb, but wanted to be closer to the beach and schools for their three daughters, Chloe, Bella and Olivia. This house was perfect. “It was originally a cute double-brick house, but was too small for us,” says Cassandra, who, along with Carlo, loves entertaining at home. “From the get-go, we were thinking about a renovation,” she says. “It just took us a while!” The couple worked with architect Rachel Hudson of Rachel Hudson Architecture (RH/a,) drawn to her refined design aesthetic and the serene feeling her projects create. “She was also a good listener, so I knew she was right for us,” offers Cassandra. They initially signed with Rachel in 2014, but the process was paused when life diverted the family’s focus. The year-long renovation finally commenced in 2018, with construction company Peninsula Projects at the helm. While the facade of the original brick home remains, the reconfigured layout – complete with stunning new roofline and entertainer’s backyard – has given the close-knit family ample room to kick back and relax.

The Campanas wanted a home that tapped into their neighbourhood’s laidback lifestyle and so they were keen to open up the layout and maximise the entertaining areas, indoors and out. “We’ve always been really big entertainers,” says Cassandra. Top of the wish list was a self-contained studio in the backyard to provide accommodation for guests, and a second-storey addition to the main house that would give Cassandra and Carlo a relaxing retreat. “I wanted the house to feel calm and inviting, but have lots of warmth at the same time,” says Cassandra, who loves raw materials such as sandstone, timber and concrete: “I feel peaceful when I see those beautiful materials together.” With her confident sense of style, Cassandra looked forward to decorating the home slowly over time. “I didn’t want to rush around and just buy things to fill the house up,” she says.

While the mission was to preserve the shape of the home’s original frontage, the roof line and floor plan had to be completely overhauled. “There was no connection between the interior of the home and the sunny backyard,” says architect Rachel. The effortless merging of indoor and outdoor space was engineered by shifting the bedrooms from the rear of the home to the front and pushing the living spaces to the back, where they could flow out to the backyard across a covered deck. A steep gabled roof was Rachel’s solution to the couple’s fear of a second-storey addition looking like it was unceremoniously tacked on to the old home. “They did not wish for the second storey to appear bulky and incongruent with the cottage, like it was ‘piggy-backing’ the dwelling, so to speak,” says Rachel. The new profile encompasses two levels in an elegant singular form and gives the home the dramatically pitched ceilings that the family – and their guests – love so much. Inspiration flowed freely when the time came for the Campanas to discuss the aesthetic direction of the home with Rachel. “I had a scrapbook of images, and Pinterest was my best friend!” says Cassandra. The keen ideas hunter also used social media to source furniture and fittings. “I found so many suppliers by searching hashtags on Instagram,” she reveals.

Classic Concrete Co did the concrete flooring throughout the home. It has a burnished finish with a penetrating sealer that gives it a raw look. To emphasise the already light space, the walls are painted Dulux Vivid White.

The renovation was a relatively stress-free process. “We were very lucky to have a build with ample access and level land, and fantastic clients that made any potential challenges easy to mitigate from the beginning,” says Beau Jones, managing director of Peninsula Projects. That’s not to say Beau’s team cruised through the build. “Creating the 45-degree roof meant many weeks of hard work at height,” he explains. With the soaring 7.5-metre ceiling in the main living space, the exposed rafters painted white, and pocket sliding doors that open to the deck, the overall effect is of a weight lifted off your shoulders. The sandstone fireplace anchors the voluminous area, featuring sun-bleached sandstone pavers that were part of the original home. The peaked roof (which encases the new mezzanine level with main suite) and the high-contrast colour palette of Dulux Night Sky and Vivid White sit very comfortably on the street. Beau, whose company has been building in the area for more than 25 years, says, “All the aspects of the home have been wonderfully curated to enhance what a coastal lifestyle provides.” That’s precisely what the Campana family were looking for when they started the process. “I’d be happy to live here forever,” says Cassandra. “My husband says he’s still got one more renovation in him, but I don’t know about that,” she laughs. any other year, but throw into that the complete chaos of 2020’s COVID-19, social distancing, statewide travel bans and Melbourne being closed for half the show and it is a complete miracle that these homes were even finished, let alone to such an incredible standard! It will be interesting to see what happens come auction time, but in the meantime here are my pick of the strongest spaces from each of the five teams.
STYLE STEALS
tash & harry Inspired by the 1920s Though it may have scored poorly and
had plenty still left to paint, the facade of this 1920s gem is a striking beauty that balances contemporary design, a welcoming aesthetic and a slice of early-century charm. The father-anddaughter team’s living room with its modern minimalism was a hot contender for the win in that category, but who can go past the delicate quaintness of their front yard? The soft white-on-white palette is perfect for this period, and the layered planted elements look smart. White PGH bricks formed into a delicate curve of tiered steps brings the home into the 20th century and adds a lot of softness to the space. The timber fretwork and Juliet balcony chosen by Harry and Tash create plenty of character and, as their yard is the biggest and most secluded, it’s sure to appeal to a growing family. Inspired by the 1940s George and Sarah nailed it with their ensuite and cemented

themselves as a powerhouse couple way back in week four of the competition. A perfect antidote to their lacking main bedroom, this space ticks all the boxes and then some. Though softened with curves, the bold black bath and tapware have quite a strong presence. This, however, has been perfectly balanced by installing a muted mauve (I don’t want to say nude, pink, blush or rose) tiled feature wall. I love the texture in the floors, and the way the tiles create movement underfoot, plus the layout is really spot-on. The lighting is subdued enough to make the space feel intimate and cosy, and although it’s usually considered a no-no to use four tile selections in one bathroom, the subtlety in all of these gets Sarah and George off the hook – just.

Inspired by the 1930s Daniel and Jade rolled the dice and offered
up an extra bedroom way back in week five when the rest of the contestants only submitted the one bedroom and bathroom. Though their floor space remains the same (hence the bedrooms are smaller), this sets them apart from the others, and having the only five-bedroom home is sure to grab the attention of bigger families at sale time. A quick search shows the huge milliondollar price jump between the average four- and five-bedroom home in Brighton, and I’m sure that it’s this decision that will either make or break the South Australian couple. Their girl’s bedroom is an exhibition in colour and shape, lending tones of rust and terracotta, while the boy’s (pictured) is a masculine but very versatile space. The topographic wallpaper sits well with the moss green bedspread, and the uniform stripes with Mouille-inspired wall light is a nod to the mid-century, tying the home’s story to the modern needs of a family.

Inspired by the 1910s The kitchen is the heart of any home, and a respect for their nominated

era balanced with modern tech and contemporary finishes set a strong heartbeat for Luke and Jasmin. We all need to celebrate our COVID curves and house four was ALL about curves: in the walls, skylights, mirrors, bedheads and even the kitchen sink! The curves in the island bench and its opposing wall are accentuated by the curves in the scalloped timber cladding, and the contrasting white stone benchtop and cabinetry are simply divine. Pops of gold bring a bit of 1910s bling, and the fluted glass (more curves) is a solid nod to that time. The warmth of the timber would make any lucky buyer feel right at home, and the stack of appliances, spacious butler’s pantry and endless storage could satisfy the fussiest of chefs. Despite their rocky start, Luke and Jasmin have continued to stun us with their modern yet organic take on the 1910s brief, delivering warm tones, eclectic styling and clever design.

love affair and we lapped it up! The story told in their house is one of fun, colour and consistency, and this Palm Springs-style facade is the first page, setting the stage for what happens inside. Jimmy and Tam’s bold statement is also sure to drum up interest at auction. Brickwork (supplied by PGH) forms the framework and low-water plants ensure that the owners’ weekends won’t be spent gardening. The scattered granite monoliths pair beautifully with the desert grasses, mother-in-law’s tongue and multiple cacti, and the breeze blocks are a great choice, lovingly watched over by a giant palm they’ve called Darren Palmer. In a warm, muddled-pink tone, the front door is perfect, but what really captures the Palm Springs aesthetic is the chimney’s column of blonde brick and mid-century signage. The Junction really sums up this home – a crossroads of modern Melbourne design and eclectic 1950s living.

I want to create a kids’ retreat for my girls to relax and hang out in with their friends, but I don’t want them to outgrow it. Do you have any tips for designing a space that my children can enjoy now, and when they’re older?’ One of the key design considerations we bring to our projects is working out how a space can grow with the evolving needs of a family. For a kids’ retreat, I would suggest a soft, neutral palette, as those colours create a calming and welcoming environment. It is also unlikely that your kids will fall out of love with muted tones, so they are a safe bet. To add interest, play with textures in the form of a sculptural armchair, a fun ottoman, a natural textured rug or some printed cushions. A neutral coloured wallpaper is also a great way to inject some fun into the space, without going crazy on colour.

Penny, via Instagram My advice would be to select a chair designed in the same era, or sympathetic to the style of the era. Look for something with tapered legs, which would work well against your table. A coloured upholstered chair could add interest as well as comfort. service hatch or room from which meals were served to the wider household, while keeping ‘the help’ obscured. However, today’s serveries focus on improving the connection between the kitchen and an adjacent outdoor space by way of a wide, opening window and extended bench space. As open-plan and outdoor dining options grow in popularity, the servery has emerged as a way to support barbecues and alfresco living, and to allow people in the kitchen to be more involved with those outside. And of course, it allows food and drinks to be quickly delivered without tracking back and forth.

size and scope
A servery is easiest and cheapest to install as part of an extension or renovation, as adding a servery to an existing wall will require interior and exterior alterations to the home, the replacement of windows and benchtops, and potential structure work if the wall is load-bearing. Ensure the window for your servery is wide enough to accommodate the number of people you plan to seat at it. “Generally, 70–75cm per person is enough space for someone to talk to people on either side, and get on and off their stools,” says Fiona Shakespeare, director of Sydney’s Shakespeare Design. “If you want a sink in front of the servery, make the benchtop slightly deeper, around 68cm. The depth of the external servery should be a minimum of 30cm, ideally 35–40cm.”

Picking the perfect window for your servery is key to its functionality and visual appeal, so consider options such as bifold windows (easily opened fully for unobstructed views and access) or a more affordable gas strut window (simple to open and takes up little space, it offers an unobstructed view when open or closed, and can act as an awning when open). Whatever you choose, ensure the window has a good seal from the elements to prevent dust and water seeping in.

To make your servery aesthetically pleasing, the benchtop should flow seamlessly from the kitchen and be made from UV-resistant, weatherproof material, such as engineered stone, marble or tile. “Alternatively, timber works well if you like a rustic beach house look and don’t mind staining the wood regularly, or letting it weather naturally,” says Fiona. “Make sure you design the servery in a warm spot that catches the sun and is out of the wind, so people want to spend time there.”

If it’s in an open setting, your servery may need shelter from the elements. “A retractable canvas awning over the servery window adds colour and will protect you from the sun and even a light rain shower,” says Fiona.“Make a sophisticated statement with fabric in a black and white stripe, or choose grey and white or yellow and white for more of a beach-shack or cafe feel.”

Overhead lighting is a practical option for a servery as it requires little to no space – just make sure there’s adequate task lighting for food prep and service. “Overhead spotlights, or exterior lights mounted on the walls to either side of the window, are ideal as they won’t obstruct its opening and closing,” says Fiona. “Lights should be able to pivot, so they can be directed onto the bench surface where people are sitting.”

As a servery only offers a shallow bench space on the exterior side, stools are the best seating option in terms of space and aesthetics. “The most comfortable stools have a back, are weather-proof and easy to keep clean,” says Fiona. “They should also be made from a UV-resistant material, such as a treated timber or man-made rattan, so they stay in good condition and can be wiped down. Breakfast stools are usually 65cm at seat height, which suit servery benches that meet the standard kitchen bench height of 90cm.”

nnika Kaban’s Christmas traditions are a self-confessed ‘mixed bag’, with every second year spent with husband Tom’s family in Adelaide, a plane ride away. “We almost always pay extra for luggage for the presents!” she says. Alternate years are spent in Sydney with Annika’s family, where her Italian mum serves lasagna or pasta over baked ham and sends everyone off for a snooze. Her Ukrainian father follows the Julian calendar for an Orthodox Christmas on January 7, filled with dumplings, borscht and stuffed cabbage. This year will be Annika and Tom’s first in their new home, and they’re looking forward to opening presents with sons Henry and Archer. “To see the joy on their faces will be priceless. At such a tough time in our lives, simple pleasures mean the world!”

The plan for this festive menu was to make everything delicious but stress-free. So we called in food stylist Steve Pearce and recipe writer Jessica Brook from Sage Creative Co to share their secrets for a lovely, lazy Christmas meal. “Some salads just get better with age,” says Jessica of the supplementary offerings they came up with. “Potato salad always tastes best when it’s had time to sit in its dressing, so this is perfect to make a day ahead of time. And always peel the skin to allow the dressing to flavour the flesh. “The bread and heirloom tomato salad also gets better the longer the ingredients have had time to sit,” she continues. “In-season tomatoes and the chargrilled bread soak up vinegar and dressings, and taste better after marinating. I like to chargrill the bread a few days in advance and keep up to a week wrapped in cling film. On the day, you simply add the burrata and spoon over the oil. “A glazed ham is a great carve-as-you-sit option. The glaze can be made up to a week in advance, using really simple ingredients that you can reduce down into a stunning glaze. This particular ham cooks flesh-side down, which creates a self-glaze cooking process. And I would recommend you glaze the ham a day ahead, then reheat any additional glaze in a small saucepan over a low heat to serve.” “And a no-stress dessert is essential,” adds Steve. “Pavlova is a show-stopper and perfect to make a couple of days ahead, as you need time for it to cool slowly in an oven, drying the shell to crispness, leaving you free to throw on easy storebought toppings as you serve.”

2kg chat potatoes 200ml tub crème fraîche 1 tbsp Dijon mustard 1 tsp finely grated lemon rind 2 tbsp lemon juice 1 tsp honey 2 tbsp mayonnaise 200g mixed radishes, trimmed and halved 1 bunch yellow beetroot, trimmed and scrubbed 2 tbsp white-wine vinegar 2 finger limes, pearls separated 2 tbsp chopped chives Edible flowers, to serve
2 cups (500ml) pineapple juice 1 cup (250ml) ginger ale 1 cup (250ml) spiced rum ¼ cup (60ml) soy sauce 100g ginger, sliced 1 star anise 1 cinnamon quill 1 tbsp fennel seeds 1 tbsp Chinese five spice 2 whole dried chillies 1 cup (220g) firmly packed brown sugar ½ cup (180g) ginger marmalade* 1 x 8kg whole leg ham (we used one from Otway Pork) 2 small pineapples, quartered lengthwise ¼ cup (60ml) apple cider vinegar 2 star anise, extra 2 cinnamon quill, extra
1 Place the potatoes in a large saucepan of cold salted water. Bring
to the boil and cook for 8 minutes or until tender. Drain and set aside to cool slightly. Peel and halve the potatoes and place in a large bowl. 2 While the potatoes are cooking, whisk together the crème fraîche, mustard, lemon rind, lemon juice, honey and mayonnaise. Season with salt and pepper. Pour half the dressing over the warm potatoes, add the radishes and gently toss. Refrigerate until cold. 3 Thinly slice the beetroot using a mandolin. Place in a bowl with the vinegar and toss to combine. Set aside to pickle for 10 minutes. 4 To serve, toss the potatoes and radishes with the remaining dressing. Top with beetroot, chives, finger lime pearls and flowers. TIME-SAVING TIP You can boil the potatoes and toss them in the dressing a day in advance. POTATO SALAD WITH CRÈME FRAICHE, YELLOW BEETROOT, HERBS AND FINGER LIMES
1 To make the glaze, place the pineapple juice, ginger ale, soy sauce,
spiced rum, ginger, star anise, cinnamon, fennel seeds, Chinese five spice, dried chilli, brown sugar and ginger marmalade in a large saucepan over a high heat. Bring to the boil, reduce the heat to medium and simmer for 30 minutes. 2 Preheat oven to 200°C (180°C fan forced). Use a sharp knife to score the skin around the sides and hock of the ham, before using your fingers to gently remove the rind. Trim any excess fat. Wrap the ham hock in non-stick baking paper, then aluminium foil. Pour ¾ of the glaze in the base of a deep roasting tray. Place the ham, top-side down, in a large deep-sided roasting pan and roast for 20 minutes. Turn and roast, basting every 10 minutes with the glaze, for a further 20 minutes or until the ham is golden and sticky. 3 Place the pineapple, remaining glaze, vinegar, extra star anise and cinnamon in a deep-sided roasting tray and cook for 30 minutes, turning half way, or until golden and caramelised. 4 Serve the ham sliced with glaze and pineapple. TIME-SAVING TIP You can glaze the ham and cook the pineapple a day ahead and serve cold. *Ginger marmalade is available from supermarkets. You can use orange marmalade as a substitute.

1 sourdough baguette, halved lengthwise 1 clove garlic ¼ cup (60ml) extra-virgin olive oil, plus extra to brush ¼ cup (60ml) sherry vinegar 2 tbsp caster sugar 1 tsp flaked salt 1kg heirloom tomatoes, small halved and large sliced ¼ cup mint, chopped ¼ cup flat-leaf parsley, chopped ¼ cup tarragon, chopped ½ cup baby rocket leaves, chopped 1 bunch red salad onions, thinly sliced 125g burrata Baby lemon verbena leaves*, to serve 1 Preheat a chargrill pan or barbecue over a high heat. Brush each
side of bread with oil and rub generously with the garlic. Grill the bread for 1 minute on each side or until charred. Placed on a large platter and set aside. 2 Whisk the sherry vinegar, sugar and salt together. Arrange the tomatoes on top of the bread and spoon over the vinegar. Refrigerate for 15 minutes so the tomatoes can marinate and the bread can soak up the vinegar. 3 Combine the mint, parsley, tarragon, rocket and oil in a small bowl. Just before the meal, spoon the herb dressing over the tomatoes and serve topped with onions, burrata and lemon verbena. *Available in small punnets from greengrocers. 225ml egg white (approximately 6 eggs), at room temperature 1½ cups (330g) caster sugar 1½ tsp white vinegar, plus ½ tsp extra ½ tsp pepperberries, crushed 250g mascarpone cream 300ml thickened cream 1 tsp vanilla extract 2 x 125g punnets raspberries ½ cup (125ml) hibiscus flowers in syrup 1 Preheat oven to 150°C (120°C fan forced). Place the egg white
in the bowl of an electric mixer and whisk on high speed until stiff peaks form. Gradually add the sugar, 1 tablespoon at a time, whisking for 30 seconds before adding more. Once all the sugar has been added, scrape down the sides of the bowl with a spatula and whisk for a further 6 minutes or until the mixture is stiff and glossy. 2 Add the vinegar and whisk for 1 minute on low speed until combined. Fold through half the pepperberries. Spoon the meringue onto a baking tray lined with non-stick baking paper, shaping it into a rough 22cm round. Add the remaining vinegar to the remaining pepperberries and scatter over the meringue. 3 Place in the oven, reduce the temperature to 120°C (100°C fan forced) and bake for 1 hour 30 minutes. Turn off the oven and allow the meringue to cool, with the door closed, for 1 hour. 4 Whisk the mascarpone, cream and vanilla in the bowl of an electric mixer until stiff peaks form. Spoon over the pavlova. Top with raspberries and hibiscus flowers in syrup, which you can buy from selected delis and liquor stores. TIME-SAVING TIP You can bake the pavlova a day in advance as long as you store it in an airtight container.

One half of Feather and Bone pastured products, this biodiversity advocate and educator is leading the charge for a sustainable future ago, my [life and business] partner Grant Hilliard was working as a sommelier and manager while he also tried to get a filmmaking career off the ground. It occurred to him that there was something peculiar about the way that wines are fussed over for their pedigree and provenance but meat was largely generic, with no info about breed, production method or place. Propelled by a burgeoning interest in sustainable agriculture, a passion for artisan culture and a courage born of ignorance, he found some farmers growing rare breeds of sheep, some chefs willing to buy them and, lo and behold, Feather and Bone was born.
Why is nose-to-tail education so important when it comes to how we consume meat? We’re increasingly disconnected from
the sources of our food and we are losing knowledge at an alarming rate. For example, the beef cuts that are commonly available in butcheries or supermarkets are only a fraction of the possible variety of cuts available from a whole carcass. But the commodification and intensification of livestock production have narrowed and we’ve gradually lost the skills that allow us to utilise the whole animal. If consumers don’t request varied cuts, butchers won’t offer them. This is regrettable for so many reasons. It’s a serious thing to take a life to feed yourself and we should respect that by celebrating every part of the animal. What are the biggest questions we should be asking when buying meat and produce? And why? Every time we buy
something, we are voting for the system that produced it. Consumers are active agents in the food landscape and an ‘ethical omnivore’ is someone who is doing their best to take responsibility for their choices – making a decision to seek out and support food-production systems that align with their value systems. Ask your retailer about the breed of the animal, the age 128 | INSIDE OUT
at slaughter, whether the retailer has visited the farm, and what they know about the way it’s managed? What will sustainable biodiversity look like in 2021? Diversity is at
