This is a holiday season like none we can remember. Here at Style at Home that means we’ve set aside our usual stories about how to entertain big gatherings. Now is a time for small, selective circles of family and friends. This year, it’s the gift of health we want to give our dear ones and the wider community we belong to. But that doesn’t mean this special season is cancelled. I believe it’s more important than ever to make our homes beautiful with festive flourishes, to create comforting, cozy touches, and to find safe ways to welcome the few who will visit us this year. The homeowners and designers featured in this issue are my source of inspiration. Like Dharshini Wijayakamar and her husband Krish Parameswaran (“All Is Calm,” page 56) – the guiding light for their two-year renovation was: what will our home look like at Christmas? Or the jawdropping salute to the season designer Chandra Payer mounted in her clients’ Kelowna, B.C., home (“Enchanted Forest,” page 70). And I love the more subtle but no less beautiful approach designer Myriam Freedman brought to Hannukah celebrations in her home (“Festival of Light,” page 82). I feel privileged that we’ve been invited to these homes and I’m thrilled to invite you along. tip Fragrant flower petals add an exotic, romantic accent to special recipes. Use them for flavour and to give vibrant colour to jellies, ice creams and cakes.
2 cups all-purpose flour 1 cup semolina flour 3 tbsp poppy seeds 2 tsp ground cardamom 1 tsp each baking powder and baking soda ½ tsp salt ¼ tsp ground turmeric 1 cup unsalted butter, softened 2 cups granulated sugar 2 tbsp lemon zest 4 eggs ½ cup 35% whipping cream Glaze & Toppings 1 cup icing sugar, sifted 2 tbsp 35% whipping cream (approximately) 1 tsp vanilla extract Orange blossom water Dried rose petals Chopped pistachios
DIRECTIONS Preheat oven to 350°F. Generously grease an 8-cavity mini Bundt pan. In bowl, whisk together flours, poppy seeds, cardamom, baking powder, baking soda, salt and turmeric. Using electric mixer, beat together butter, sugar and lemon zest until creamy. Add eggs, one at a time, until smooth. Add flour mixture alternately with cream, making three additions of flour mixture and two of cream. Pour into prepared Bundt pan; bake until cake tester inserted in centre of cake comes out clean, about 25 minutes. Let cool slightly in pan on rack. Turn out directly onto rack; let cool completely. Glaze & Toppings In bowl, whisk together icing sugar, cream, vanilla and a few drops of orange blossom water until well combined, adding more cream if necessary for a pourable consistency. Drizzle glaze over cooled cakes. Garnish with rose petals and pistachios before serving.

Without this bench, the mudroom would have felt a pinch too perfect.”
Hey, Jute “It’s important to layer in softness in a primarily ‘hard’ space like a country mudroom. I love adding a jute rug because jute hides everything and, again, has a natural, organic element that references the outdoors. Sisal works well, too, and you could opt for a large door mat instead of a runner.”
Country Storage “Baskets not only introduce more interesting textures, they’re a great place to stash scarves, hats or other small accessories for creative mudroom storage. Make sure to stick to natural materials – I gravitate to wicker, rattan and worn leather, all in organic earthy hues – and look for tighter weaves that help hold and conceal contents.”

Step One
Sketch the desired design’s layout directly onto a primed wall using the yardstick, angle finder and pencil.
Step Two
Frame out the big squares first with 1" x 2" primed pine trim cut-tosize. Begin in the wall’s centre and work your way out. Nail each big square in place with a pneumatic nailer. Keep adding trim pieces until all the big squares are in place. (Picture a giant crossword puzzle with blank squares.)
Step Three
Build onto the basic grid by adding the inner squares, cutting the trim to fit nicely together before nailing into place.
Step Four
Measure and cut the smaller detail pieces. This is where the electric mitre saw especially comes in handy. Nail each into place, filling out the overall design.
Step Five
Once done, use wood putty to fill the nail head holes and also caulk any gaps between the wood and the wall for a seamless finish.

I’ve put together my best advice so you can get your guest room in top-shape before your loved ones arrive. From decorating tips to the latest little extras, I’ll show you how to kit out your guest suite so beautifully that you’ll be tempted to move into it when your loved ones leave.

My favourite way to dress the bed is with classic white sheets topped with a duvet, pillow covers and a throw in seasonal colours.

If visitors are sharing a household bathroom, have guest towels folded and waiting in their room so that they know the towels are clean and exclusively theirs. A shower carrycaddy will help them bring toiletries back and forth from their room.

F
rom our home’s inception, every design decision we made had to pass the Christmas test,” says Dharshini Wijayakamar, referring to the remodelled four-bedroom Oakville, Ont., house she shares with husband Krish Parameswaran and their two sons, Ojas, 3 and Adi, 2. “I’d look at every room, every detail and wonder, how would this look at Christmas?” She credits this sentiment to growing up in a home that came to life during the holiday. “My parents implanted a real sense of wonder in us kids. Christmas was a truly sensorial experience,” she remembers. “You’d smell the shortbread cookies baking and see the garlands on the stairs. That’s something Krish and I wanted to pass along to our boys.” Before this could happen, though, some serious work had to take place. “This was a 1960s house that had never been updated,” says Dharshini. So the couple spent the next two years working with an architect and builder to open up the layout and increase the square footage. “By the time we got to

The nearly-Nordic look of the raised island provides a smooth transition to the adjacent open family room. To up the cozy factor, Brittaney layered leather stools with sheepskin. It’s a place the family naturally gravitates to during the holidays. “Growing up, our home was filled with the aromas of my mom’s Christmas shortbread cookies, which she sprinkled with crushed candy canes,” recalls Dharshini. “I love passing traditions like these along to Ojas and Adi.”

In lieu of a sectional, Brittaney suggested two sofas covered in winter-white performance fabric and paired with a duo of swivel chairs in cloud-grey. For warmth, she added a wool sisal rug, and cushions in cozy tones. The woven-wicker chest contrasts with the smooth porcelain fireplace surround. “I love this room,” says Dharshini. “Something about the tones and textures in here feels like permission to plop down and relax.” Brittaney’s Christmas decor takes its cues from nature. “Who doesn't love the smell of eucalyptus?" says the designer. “And fresh greenery adds the prefect pop."

furnishing our new space, we had two little kids and a serious case of decision fatigue,” says Dharshini. “Knowing more hands make for light work, we turned to a designer to make our rather empty looking house into a home.” Enter designer Brittaney Elgner of Olly + Em Interiors, who embraced the family’s vision for a relaxed, open home filled with easy-care furnishings. To that end, she brought in comforting textural layers and a downy palette of winter whites and warm grey tones. The aesthetic plays beautifully all year long and especially shines at Christmas. Brittaney had a hand there, too, adorning the home with aromatic eucalyptus, lush evergreen boughs and earthy pine cones. Says Brittaney: “The look is relaxed enough to be modern, but traditional enough to convey the magic of home.” The perfect setting to create new holiday traditions.

ABOVE and LEFT Brittaney adorned a flocked Christmas tree with gilded decorations and nestled it in the corner. “It has a perfect balance of snow and greenery, transforming the room for the season,” she says. A cuddly sheepskin is fashioned into a snowdrift at the tree’s base. OPPOSITE “The simplicity of a wreath goes a long way,” says Brittaney. She hung two in the family room, and propped two more below. The room’s swivel chair can turn toward the twinkle of the Christmas tree or to the window to watch the falling snow.

At Christmas, rich red blooms and a pretty wreath duo at the mirror extend the holiday feeling throughout the home.
The master bedroom’s canopy bed is enclosed enough to be cozy yet also open and airy. Deep-toned Kelley Wearstler lamps with brass accents are paired with white-washed bedside tables; at the foot of the bed is a cushy bench covered in sweater-like wool. The fluffy feather wreath and faux-fur throw nod to the season, as does an understated vase-full of greenery. Brittaney kept the room open and fresh by choosing simple furnishings with clean lines, and pulling in layers of wool in a variety of textures to soften hard surfaces. The fragrant aroma of fresh pine boughs, spicy ginger cookies and buttery shortbread fills the air as a close circle of family arrives at Peter and Tracy Bissonnette’s lakefront getaway in Kelowna, B.C. The home is as warm as a mug of hot chocolate and as festive as all get out, which makes designer Chandra Payer pretty pleased. “I wanted it to feel cozy and nostalgic with a touch of whimsy,” says Chandra. Backcountry Style
Canoes, snowshoes and skis are key in the rustic decor. “These are from the owners’ curated collection of antiques,” says designer Chandra Payer. “They wanted the space to feel like a whimsical spot where guests could drop their skis and snowshoes and sit down for a warm meal by the fire.” Colourful Hudson’s Bay stripes play off the fireplace’s deep blue paint, which evokes a waterway. The dining room’s showstopper cabinet (opposite) echoes this with its porthole shape.

Green Christmas
In the dining room, Chandra and Tracy channelled the feeling of a magical wintry lodge. They chose hunter-green paint to envelop most of the space, and stained and lacquered the wall of wood panelling for rustic charm. “I wanted a woodsy, outdoor ambiance so added full-sized artificial pine and spruce trees wrapped in burlap,” says Chandra. A dramatic salvaged antler chandelier furthers the lodge look, while the custom-made table with sleek brass-like finish is set with wood chargers that layer in warmth and texture.

“The stunning La Cornue Grand Palais stove in Lafayette blue was the jumping off point for the kitchen’s colour scheme,” says Chandra. “We designed and customized the cabinetry in an identical blue and added brass accents to work seamlessly with the stove, which is truly a piece of art.” The interesting wall treatment is a plaster finish designed to mimic old-world stone masonry. This impressive backdrop is augmented by the most humble of holiday accents: handmade cedar wreaths and simple red cushions, which inject a pop of festive colour. Chandra says, “A fresh potted miniature pine tree adds a holiday vibe, while gifts in quaint brown paper with beautiful bows play up the anticipation of Christmas morning surprises.” STOVE, La Cornue. Into the Woods
The stunning and highly imaginative powder room is decidedly dramatic. “The double-arched doors were designed to create a unique entry into a magical, forested powder room,” says Chandra. “The application of green tiles on the entry wall adds visual and tactile texture and creates a hint of what’s to come.” The customized wall mural transforms the interior into a deep forest green space that was played up for the holidays. “The black coated wall-hung sink with metal ladder mirror provide a spot to incorporate festive pine cone and berry accents.” The embroidered monogrammed towels are a luxurious element. W
hen your entree to the design world comes via 15 years as co-owner of a wholesale bakery – with a side foray as a fashion stylist – it makes absolute sense that your holiday decorating centres around food. That’s the case with Vancouver designer Myriam Freedman, whose bright, contemporary home fills with the delicious scents of baking all through the holidays. Myriam’s switch to a career as a designer really accelerated about 10 years ago, when she and husband Mason began to renovate his childhood home, which they’d bought from his parents. “The house worked for us,” says Myriam. “We didn’t even need to add on or change the rooms. The main idea was just to open it up and let in the light.” In the process, they ended up completely transforming the house into an open, contemporary family home, warmed by natural textures and sun-filled, leafy views. The home’s abundant charm springs from a wealth of unobtrusive but highly personal details – from the main staircase, whose treads were milled from an ancient cedar tree that once grew in the backyard, to the blackvelvet-covered dining room chandelier. Rather than fight
its elegant, monochromatic look, which would run counter to Myriam’s preference for minimalism anyway, her holiday decorating leans towards small but inviting “moments.” The goal is to create both a visual treat – incorporating subtle delights that evoke the season and the happy mood – and often, a gustatory one as well. “I love to cook. It’s my second favourite passion after design,” Myriam laughs. She loves to put out trays of edible delights throughout the main floor, so that family can help themselves and Myriam can relax and not have to fuss with serving. The fact that the food also forms part of the holiday decor, she says, just adds to the convivial mood. “We love entertaining family this time of year. We celebrate Hanukkah, which is a happy time – it’s to celebrate a miracle, especially around food. Our motto really is eat, drink and be merry!”

“My kitchen is fairly open and minimal in design, so I wanted white with pale colours for the decorations,” says Myriam. Along with another highly textural dried-fern garland suspended over the island, Myriam brought in floral arrangements featuring white, cream and pink blooms with a splash of green for a holiday touch; white milk-glass vases pull disparate floral displays together visually. There’s also a bit of fun in the style of the white cake, which is topped with gingerbread reindeer and rosemary sprigs, and a tower of holiday-themed cookies on a gingerbread “tree.” FLORALS, The Flower Factory. “Especially with all the trees visible through the windows, I love to bring the outdoors in, with simple greenery, pine cones or even an actual tree.” OPPOSITE Myriam wanted son Izzy’s bedroom to feel like being in the woods, but with lots of red, too, seeing as it’s one of his favourite colours. “The red makes a statement all on its own, so I just wanted to add some whimsy,” says the designer. That’s accomplished handily with a reindeer rocking chair, tree-printed bed linens, and a tree hung with a few offbeat ornaments.

For the holidays, she added blackand gold-wrapped presents (Myriam likes to spread them throughout the house rather than relegating them to just one room). Hanukkah decorations are hard to find, so Myriam fashioned this Star of David using woolen balls, a craft-store wooden star and a glue gun.
ABOVE For Myriam, it’s about creating moments, small vignettes to catch the eye and set the mood rather than anything too elaborate, especially in such an understated setting. Here, a twig ladder with extra blankets, dressed up with a simple wreath and pine cones from a nearby park, doubles as decor and storage. An old-school letter board sums up the holidays in a few evocative words.

Away from the busy family home in the master ensuite, there’s one little gesture – an arrangement of dried roses and sprigs in a milk-glass stemmed vase – that’s just for Myriam and Mason. “Everyone decorates all the important rooms, of course, but no one else sees this,” says Myriam. “I love that it’s just for us.”

GLUTEN-FREE POTATO BREAD
GLUTEN-FREE POTATO BREAD MAKES 1 LOAF

small russet (baking) potato cups millet flour cup potato starch cup tapioca starch tbsp granulated sugar tsp instant dry yeast tsp xanthan gum (gluten-free, if needed) tsp fine salt tsp baking powder (gluten-free, if needed) cup warm water large eggs, room temperature cup extra-virgin olive oil tsp white or cider vinegar
Peel and dice the potato and place in a small saucepan. Cover with water (add a little salt if you wish) and boil, uncovered, over high heat until fork-tender, about 10 minutes from when the water begins to boil. Drain the potato and mash by hand or by pushing the potato through a ricer. Set aside to cool to room temperature. Grease a 9" x 5" loaf pan and line the bottom and long sides of the pan with parchment paper. Measure the millet flour, potato starch, tapioca starch, sugar, yeast, xanthan gum, salt and baking powder into a large bowl or into
the bowl of a stand mixer fitted with the paddle attachment. Add the water, eggs, olive oil, vinegar and cooled potato. Using electric beaters or the mixer at low speed, blend to combine. Once the dry ingredients are worked in, increase the speed to medium and blend until smooth, about a minute – the mixture will look like a thick cake batter. Scrape the batter into the prepared pan and
let sit, uncovered, on the counter for about 45 minutes, until the batter climbs almost to the top of the pan. Preheat the oven to 350°F. Bake the loaf for about 40 minutes, until a tester inserted in the centre comes out clean. Cool the loaf for 15 minutes in the pan on a cooling rack, then tip the loaf out to cool completely on the rack. The loaf will keep, well wrapped, for up to 3 days. STYLEATHOME.COM NOVEMBER 2020

NAN’S WALNUT ROLLS MAKES 3 ROLLS (12 TO 16 SLICES EACH)
Dough 3¼ cups all-purpose flour 3 tbsp granulated sugar 1½ tsp instant dry yeast 1 tsp fine salt ½ cup full-fat sour cream ¼ cup unsalted butter ¼ cup 2% milk 2 large eggs, room temperature 1 egg whisked with 2 tbsp 2% milk for brushing Walnut Filling 2½ cups walnut pieces ½ cup granulated sugar ½ cup 1% or 2% milk ¼ cup unsalted butter Pinch ground cinnamon 1 tsp vanilla extract Dough In the bowl of a stand mixer fitted with the hook attachment, stir the flour, sugar and yeast together and then sprinkle the salt on top. In a small pot, heat the sour cream, butter and milk over medium-low heat, whisking until the butter has melted and the mixture is smooth. Cool to about 105°F (41°C). Add the cooled liquid ingredients to the flour along with the two eggs and mix at low speed until the dough comes together. Increase the speed one level and knead until the dough becomes elastic. Transfer the dough to an ungreased bowl, cover the bowl well and let rise for an hour on the counter, until almost doubled in size. Walnut Filling Pulse the walnuts with the sugar in a food processor until finely ground. Place in a medium saucepan with the milk, butter and cinnamon and bring to a simmer over medium heat. Cook, stirring often, until thickened, about 10 minutes. Remove from the heat and stir in the vanilla. Transfer the filling to a flat dish to cool to room temperature. Line a baking tray with parchment paper. Turn the dough out onto a lightly floured surface and divide it into three pieces. Roll out the first piece of dough into a 10-inch square just under ½ inch thick. Spread a third of the filling in a thin layer over the dough and roll up quite tightly. Place the nut roll, seam side down, on the baking tray and press the roll to flatten it a little. Repeat with the remaining

pieces of dough and filling. Cover the tray with a tea towel and let rest for 20 minutes while you preheat the oven to 350°F. Uncover the nut rolls and brush them with egg wash. Dock (poke holes in) the rolls with a fork and bake for about 30 minutes, until the rolls are a rich golden brown. Let them cool on the tray on a cooling rack for 20 minutes and then remove them from the tray and cool completely on the cooling rack. The nut rolls can be stored, well-wrapped, on the counter for 3 days, or frozen for up to 3 months.
HOT CHOCOLATE NANAIMO BARS MAKES 18 BARS
Crust ½ cup unsalted butter, cut in pieces ¼ cup granulated sugar ¼ cup cocoa powder ½ tsp salt 1 large egg, lightly beaten 1½ cups graham cracker crumbs 1 cup sweetened flaked coconut or toasted sliced almonds
Filling ½ cup unsalted butter, room temperature 1½ cups icing sugar, sifted (divided) ⅓ cup powdered hot chocolate mix 2 tbsp vanilla custard powder Pinch fine salt 3 tbsp 1% or 2% milk Topping 4 oz semisweet couverture/baking chocolate, chopped 2 tbsp unsalted butter 1½ cups mini marshmallows Sea salt, for sprinkling (optional) Crust Place the butter, sugar, cocoa powder and salt in a metal bowl and set over a pot of gently simmering water, whisking until the butter has melted. Add the lightly beaten egg and whisk until the mixture thickens to the consistency of pudding, about 1 minute. Remove the bowl from the heat and stir in the graham cracker crumbs and coconut (or almonds). Scrape the crust mixture into a 9-x-9-inch pan and spread to level it. Chill the pan while preparing the filling. Filling Beat the butter with 1 cup icing sugar until smooth. Stir the hot chocolate mix, custard powder and salt with the milk (it will make a thick paste) and stir into the butter mixture until smooth. Beat in the remaining ½ cup icing sugar. Do not overbeat – the filling should be smooth but not fluffy. Spread evenly over the crust (no need to refrigerate). Topping Melt the chocolate and butter in a metal bowl placed over a pot of barely simmering water, stirring gently with a spatula until melted. Cool the chocolate slightly and then pour over the filling, spreading to cover it. Sprinkle the marshmallows on top of the chocolate in an even layer (it will not fully hide the chocolate) and, if you like, finish with a sprinkle of sea salt. Chill the pan for about 2 hours before slicing into bars. Nanaimo bars will keep in an airtight container in the fridge for up to 1 week.
CHOCOLATE CUPCAKES MAKES 12 CUPCAKES

½ cup full-fat sour cream ½ cup vegetable oil 3 large eggs 1 tsp vanilla extract Vanilla Frosting 1 cup unsalted butter, room temperature 4 cups icing sugar ¼ tsp fine salt 2 tbsp 2% milk 2 tsp vanilla extract Chocolate Frosting 1 cup unsalted butter, room temperature 3½ cups icing sugar ½ cup Dutch process cocoa powder, sifted ¼ tsp fine salt 3 tbsp 2% milk 2 tsp vanilla extract Preheat the oven to 350°F and line a 12-cup muffin tin with paper or foil liners. Sift the flour, sugar, cocoa powder, baking powder and salt into a large bowl. In a separate bowl, whisk the sour cream, oil, eggs and vanilla together. Add these wet ingredients all at once to the flour and whisk well by hand for a minute, until smooth. Use a scoop to divide the batter between the cups. Bake the cupcakes for about 25 minutes, until they spring back when gently pressed on top. Cool the cupcakes in the tin on a cooling rack for 15 minutes before removing from the tin to cool completely before frosting.
Unfrosted, the cupcakes can be stored in an airtight container at room temperature for a day, or frozen for up to 3 months. Frosted cupcakes will keep in a sealed container in the fridge for up to 2 days, but freezing is not recommended. Vanilla Frosting With the paddle attachment, beat the butter at high speed for 2 minutes, until fluffy. Add half of the icing sugar and beat, starting at low speed and then increasing to high, stopping to scrape the bowl once or twice. Add the remaining icing sugar and salt, and beat again at low speed and then increase to high, scraping the bowl once or twice. Add the milk and vanilla and beat at low speed and then increase to high. Beat for 3 to 4 minutes until fluffy and light, and to build structure so your frosting will hold its shape. Chocolate Frosting Follow the instructions for vanilla frosting (above), and add the cocoa powder at the same time as the salt. Use the frosting immediately, or chill in an airtight container for up to 4 days or freeze for up to 3 months. Let chilled frosting come to room temperature and re-whip it at high speed for 3 minutes before using.
