The outdoor room on our cover this month is so welcoming, don’t you think? Right now, I can’t think of anything nicer than plonking down on that sofa, putting my feet up and pouring a G&T (though it does look like minted water on the coffee table). It’s the styling that makes this scene so friendly. The seating is pulled in close, perfect for great conversation should a friend stop by, and all the furniture is accessorised as if it were in an indoor room, layered with throws and cushions. With a few tweaks like these, it’s easy to give your outdoor seating a style update in time for summer. MEET ADELAIDE-BASED EMMA KLAU, AN ARTIST AND GLASSWARE DESIGNER WHOSE DIVINE PIECES ARE BLOWN BY HAND – AND ARE EXACTLY WHAT YOUR DINNER TABLE IS MISSING RIGHT NOW How did you discover your love for glass work? Emma: “I began a visual arts degree [at the University of South Australia] and had the opportunity to try other mediums in my first year. When I hit glass I fell in love with the medium; its ability to expand, move and stretch, and the physical nature of working with the material is a dance with heat, gravity and fire.” How did you start your own business? “Participating in markets such as The Big Design Market have been fantastic opportunities for growing my business in Australia.” What is your proudest professional moment? “Running a successful glass production business for the past six years!” Is your work functional or art? “My products are definitely functional and they’re meant to be used in homes and restaurants. My artworks are sculptural.” What is the hardest part of what you do? “There are variables when working with molten glass. ike all the best holiday romances, Carol Crawford’s love affair took shape in Italy, in the rustic mountain-top town of Volterra. “I brought a piece of rough alabaster stone home in my suitcase,” explains the sculptor, who works out of her studio in Sydney’s Surry Hills. “I carved that first stone intuitively, keeping the integrity of the stone. I still do exactly the same thing now, only in a slightly more refined way.” Carol came to sculpting later in life, although her distinct eye for form and beauty was nurtured from an early age. Her mother was a trained opera singer and her father, a “deep thinker”, was one of the pioneers of the Australian textile industry. “My parents were immigrants from Europe and sole [WW2] survivors of their families, bar one,” says Carol. “[They] gave me the space to dream and make my own way in the world.” Although she studied art history at the University of Sydney, it wasn’t until her youngest son turned five that she enrolled in a workshop with renowned Australian sculptor, Tom Bass. It was here, during Tom’s traditional atelier method – where experienced sculptors worked alongside students – that he taught Carol to truly ‘see’. “When I first walked into [Tom’s] studio school in Erskineville, it was like entering a magical, light-filled creative space, where all the worries

of the world were left behind,” says Carol, who continued to study under Bass from 2002 until he passed away in 2010. “[The workshop] was a place where, during the obligatory tea time, philosophies of life and art were discussed.” Today, Tom’s teachings still sing throughout the airy, sun-drenched walls of Carol’s own studio. “I feel comforted and surrounded by love when I walk into my studio – every sculpture has a different personality,” says Carol, of the voluptuous, polished knots that line her space in varying stages of completion. Capturing organic, feminine form has long been an influence for Carol, whose work evokes a deep sense of humanness. “The sculpture and I are interconnected in many ways,” she says. “When I am carving and ‘talking to my stone’ I am in another world – everything stops.” Exhibiting mainly to private viewings and several public commissions, including two portraits for Cootamundra’s ‘Captains Walk’ in NSW, Carol’s work has strong sentimental and metaphoric ties. “Whenever I experience deep emotional stress I express these feelings by creating beautiful, soothing forms that convey love and comfort,” says Carol. Reflecting the imperfections of life and love is at the core of Carol’s work as she, so elegantly, reshapes the narrative to seek beauty among the flaws.

Designed for their extended families to enjoy, the home’s downstairs living space is all tactile fabrics and raw appeal. the main living room is a drawcard for all Boyd and Geordi’s family, from teens through to grandparents. Notably, every room in this divine holiday home has been designed to bring the outdoors in and drink in the beautiful outlook. Here, artworks make a bold statement – the bottom print is by artist Walter Battiss, while the other artworks are by unknown artists – and pick up the vibrant colour theme of the layers on the sofa, upholstered in Romo tie-dye fabric.

C

atering to everyone’s tastes and preferences isn’t without its challenges when you’re part of a large family. Yet for interior designers Boyd, co-founder of internationally acclaimed design studio Cécile & Boyd, and his sister and business partner Geordi, the combined input of their entire family – from tweens, teens and grandparents alike – proved to be a style winner when creating this family’s stunning multigenerational weekender, an hour’s drive from Cape Town. “We had a democratic approach to the process where everyone had a say from the youngest to the oldest,” recalls Boyd. The family bought the property, named Abraça, in 2018 for its generous double plot and the existing building’s potential. And in the hands of Boyd, whose design firm has created some of the most luxurious lodges in South Africa, it’s safe to say the vision for the home was profound. Boyd first set out to devise two distinct central areas to be used as communal spaces, with the exterior outlook always top of mind. “We created a double living room upstairs, with a TV area and a fire area both orientated out to views,” he says. “The second centre is the combined kitchen and dining area downstairs that leads out to the entertainment area, garden and pool.” Laid out over three floors that stagger over each other, Boyd split the home up into three further zones: the lower garden level for Geordi, her husband Anton and their three children; Boyd’s wing on the upper loft level; and their parents’ wing running parallel with the kitchen and entertaining areas. “I wanted the bedrooms to be super-generous and comfortable, and so each has a desk, reading chair and lamp, as well as ensuite bathrooms,” Boyd says. “It was important to create areas that offered further retreat for those in search of privacy and quiet time.” The family’s desire to have everybody’s input saw them vote every Sunday on the design direction and any proposed structural changes. But happily, Boyd had full say on the interiors and was left to his own devices as he sought inspiration from the surrounding landscape and the home’s existing “farmhouse-meets-beach” architectural style. He also ensured that every family member felt included. “I added pigmented colour and contemporary art for the young ones, edgy cane furniture and lighting for Geordi – who wanted modernity – and soulful Indian country antiques for mum and dad,” he adds. “While the stripped, pared-down colour palette with monastic stone floors, whitewashed walls and exposed beams are all me.” A great achievement is the way in which the garden mirrors the L-shape of the home in a series of outdoor rooms. Boyd’s partner Athol, a landscaper, was instrumental in achieving this. “For me, one of the most beautiful views of the house is seen from the pedestrian gate, looking across the garden toward the courtyard,” says Athol. “From this angle, the two wings of the L-shaped house are seen on the diagonal and look like two outstretched arms, ready to embrace you.” Which is incredibly fitting given that, in Portuguese, Abraça means just that, an embrace or a hug. ENTRANCE HALL Connecting the kitchen, dining and outdoor areas with the bedrooms and lounges is a long entrance hall (top right) that looks out onto the fire pit area. The hall is dominated by an antique Indian country chest (try the Indian teak storage trunk from Water Tiger for similar), while glass pendants light the way. LIVING ROOM Hand-crafted shutters built by Geordi’s talented

husband Anton, who custom-made all the internal timber shutters throughout the home, frame a leafy view (right). The rustic coffee table, marked by character and history, has been in the family for years. >

The kitchen has a warm, lived-in feel, thanks to an antique wooden island with brass handles, shelves filled with copper bowls and wooden servers and an old country dining table, all sourced in India (top left). Comfort is key in the upstairs living room (above), where the family has added a handy bar so they can grab a hot drink while watching a movie. Or better yet, a sundowner on the terrace for taking in the sunset. KITCHEN Leading out to the deep,

covered verandah and pool area, the kitchen (opposite) is very much the heart of this home. “When we’re here as an extended family, the kitchen provides a lively meeting place, with my dad seated at the fire in a comfy occasional chair, while whoever is cooking is able to be in the mix in the kitchen too.” >

BEACHSIDE BLISS Weekends are about escaping the city and heading to the Sunshine Coast for homeowners Ian and Kim (pictured, opposite, with their six-year-old twins Max, left, and Tate, and pooches Ollie, left, and Scarlett). When the couple bought the 1970s cottage two years ago, Kim’s vision was for a light-filled retreat that combined the original architecture with the luxury of extra space and creature comforts. To unify new and old, the lower level was rebuilt and clad in James Hardie Stria cladding to match the original upper exterior, and everything was painted white – the walls in Resene Double Alabaster and the roof in Dulux Surfmist. Honed matt concrete is a sleek pool surround, and waterline ceramic mosaics accentuate the water’s reflective qualities. The TK Maxx side table is one of the many pieces Ian and Kim brought when they relocated from the US back home to Brisbane to raise their family. ome the weekend, as soon as Kim, Ian and their twins Max and Tate arrive at their beach house on Queensland’s Sunshine Coast, their bags are promptly dumped at the door, their shoes are kicked off and they head to the beach, which is conveniently just across the road. “Depending on the tide, we either explore the rock pools for small fish and crabs, jump the waves or build dams in the small freshwater creek that flows into the ocean,” says Kim. “Saturday night is always takeaway fish and chips, then we’ll ease into Sunday with a beach walk and pancakes. It’s our weekend escape from the everyday.” Having lived in the United States for more than a decade before returning to Brisbane, the couple discovered this magical part of the world several years ago. Then, in 2018, when Kim, who had studied architecture, was looking to sink her teeth into a renovation project, a little beach shack came up for sale. “The place was quite humble from the street,” she recalls. “It was painted sage green and mustard and there was a collection of thongs nailed to the timber posts under the deck, but inside it was amazing. It was filled with character and I loved the incredible mezzanine sleeping area.” A deal was struck, and within two days Kim sketched the designs for a renovation that embraced the home’s bones yet incorporated a modern extension.

Her inspiration came from stays with friends in homes along the US east coast. “We had lived in Boston and I loved the New England aesthetic – styles such as Cape Cod cottages and saltbox houses with their pitched roofs and timber panelling,” says Kim. “Internally it was important the design could accommodate larger get-togethers with friends and family, and intimate areas to retreat to with a book.” Kim donned the hats of building designer, project manager and interior designer during the five-month transformation. Upstairs, the 1970s mission brown rafters and dark timber veneer walls were revitalised with white paint and a swathe of fresh finishes, and stairs were added. The ground level was gutted and extended to encompass three additional bedrooms, bathrooms and a striking galley kitchen. Cane furniture and vintage pieces collected over the years were taken from their family home in Brisbane, while nautical touches such as timber oars are a nod to the beachside location. “I’m really drawn to texture and eclectic pieces, so I spent an awful lot of time on Gumtree,” says Kim. Her own artwork adorns the walls, while curio-laden shelves feature watercolours of the local area that were painted by the previous owner and gifted to Kim and her family. The result? Far from a bare-bones holiday house, this is a richly layered haven filled with mementos and the essence of escapism.

“It links the front living areas and the back bedrooms and bathrooms,” says Kim. And thanks to a suggestion from their builder, Tom Van Iersel of Envi Construction, it gets ocean glimpses. “Before the slab was laid, he suggested I step the floor up,” says Kim. “He got me to stand on a bucket so I could see the water for myself. It was a fabulous idea.” Ikea cabinetry is customised with Smartstone benchtops in Vanilla, while a piece of silky oak timber, milled from a tree on their property, forms a floating shelf adorned with textural pieces and artworks by the home’s original owner. A Moroccan pendant found on Etsy, reminiscent of a big straw hat, hangs above a spectacular timber dining table sourced via Gumtree from a Sydney restaurant. >


LIVING ROOM Sliding doors help draw in the sounds and smell of the nearby

ocean. Kim’s persistence trawling Gumtree paid off with the cane lounge setting, which she had upholstered in heavy-duty stain-resistant outdoor fabric to withstand the rigours of two young boys and two mini schnauzers. Cushions from Freedom, Ikea and Kmart provide added comfort, and a large coffee table brought back from the US is just right for popping a drink (or your feet) on – get a similar industrial-look table from Provincial Home Living. For a similar lounge suite, try the ‘Batavia’ rattan setting from Naturally Cane. In the background, the oar is a Gumtree find.

UPSTAIRS LIVING The kitchenette in the first-floor living area is a mini version of the fit-out downstairs, with white walls a pristine setting for eclectic pieces and original Thonet chairs bought second-hand. Gumtree was the source of the table and mirror. Instead of a stair rail up to the sleeping loft, Kim used rope from Rope Galore, for a nautical feel. Countless Pinterest images helped inspire the sleek ensuite (above left & above right) in soothing grey and white. “I wanted a seamless look and feel, which the concrete floor achieves by flowing through to the shower area,” says Kim, who used ‘Bora Ice White’ polished 600mm x 600mm tiles from Cheap Tiles Online to create the illusion of concrete continuing up the walls. The vanity features the same Smartstone used in the kitchen and is paired with Mondella tapware from Bunnings. The organic curves of a round custom mirror are echoed in a Caroma ‘Aura’ freestanding bath from Reece and, with a stool from Gumtree, bring a sense of softness. BOYS’ BEDROOM

Sure, there are plenty of beds to choose from in this holiday home, but Max (pictured right, at left) and Tate (right) love bunking together. Appliqué quilts that Kim had custom made in the US when she was expecting the twins present a splash of colour. “I found an image of an old quilt that had planes on one side, and I decided to have a map of Paris on the back of the quilts, because that is where Ian proposed,” she says. Red and blue Ikea cushions join forces with a Kmart jute rug to form a play-zone. “I stuck with concrete in the bedrooms because, unlike carpet, it doesn’t trap sand and feels great underfoot, particularly in summer,” adds Kim. Achieve a similar look with ‘Grand Manhattan’ slab tiles in Grey Silk from Beaumont Tiles. For the oar, artwork, side table and stool, Gumtree was again consulted. >

GRAND DESIGNS A warm elegance imbues the northern Sydney home

of interior designer Joumana, her husband Daniel, and their three daughters Grace, 14, Olivia, 11, and Charlotte, 4. The couple has slowly amassed their eclectic collection of antique and contemporary pieces, decorating room by room, after they moved in to their new-build 15 years ago. “We came into bare bones,” says Joumana. “By the time we finished, we practically had to start all over again!” A pair of the Boyd Blue ‘Lennon’ slipper chairs are ready for conversation in the airy living room, while two black console tables (one, pictured opposite) sourced from Cromwell Australia flank the fireplace. Both have been topped with artfully aged mirrors from Temple & Webster, while on this one a ‘Maeve’ sculpture from Boyd Blue adds a luxurious touch of marble – one of Joumana’s favourite materials – and is styled beside a tactile bowl from Coco Republic. >


W

hether it’s 50 family members for Christmas (yes, 50) or an intimate soirée, the home of interior designer Joumana, her husband Daniel and their three daughters in Sydney’s northern suburbs was built for endless entertaining. “Our home is always open,” says Joumana with a warm smile, proffering a plate piled high with cannoli. “We love having people over.” Having built the home together as newlyweds, the couple were able to design every centimetre with their future family in mind. “I poured my heart and soul into this home, because I knew we would be living here for a very long time,” says Joumana. “I was on site every day for two years, heavily pregnant by the end. We moved in two weeks before I gave birth to my eldest.” That was Grace, now 14, and now there’s also Olivia, 11, and Charlotte, four. With a family full of builders – “I was raised on building sites,” says Joumana – the couple were well versed in what it takes to build a new home. Smart details such as soaring 3.2-metre ceilings imbue each room with a sense of grandeur, while wall panelling lends a sense of history that belies the home’s real age. “I’ve always loved the juxtaposition between traditional architecture and contemporary fittings,” says Joumana, who was inspired by time-old Parisian apartments. “They have traditional bones that have been there for hundreds of years, but they’re filled with amazing modern furniture.” An air of relaxed luxury pervades each space, with undeniable opulence tempered by calming neutrals and natural materials. The wonderfully warm colour palette flowed naturally from the stunning stone flooring (Crema Marfil marble from Stone Design) that Joumana fell in love with at first sight. “We pulled all of our paint colours and warm tones from the marble,” she reveals. “This was 15 years ago. I know everyone’s been into cooler tones since then, but now warm tones are coming back! If you keep the bones of your home classic, you can’t go wrong.” The foundations laid, the home’s interiors have become Joumana’s unfolding project. A recent refresh saw traditional crystal chandeliers replaced with an eclectic array of mid-century modern lighting, along with a fresh coat of paint and standout new items of furniture. “We kept a few of the more unique and antique pieces, but we also wanted to inject a more modern feel,” explains Joumana. And no doubt, there’s more re-tweaking to come. “My husband says nobody has drilled more holes in the walls than we have, because I’m always moving paintings and mirrors around,” she admits. “But I love it!” LIVING ROOM An ode to classic luxury, this welcoming space is a

haven of opulent textures, while a restrained palette makes the room a restful haven to be in. A magnificent ‘Black Pearl’ rug by Catherine Martin for Designer Rugs grabs the attention and is balanced by the contemporary edge of a ‘Baleno’ marble-topped coffee table from Coco Republic. The majestic ‘Clifton’ buttoned bench is also from Coco Republic and is a delightfully chic addition while the majestic Arteriors ‘Haskell’ chandelier − a true showstopper − is from Boyd Blue as is the ‘Bloquer VI’ artwork above the fireplace. “I love things that are different and interesting, but I’m aware of paring back other elements so they’re not in competition,” says Joumana. >

Joumana designed her sumptuous bedroom around an extravagant hand-carved bedhead found at Laura Kincade, a store the interior designer regularly returns to for one-of-a-kind finds. “It’s very ornate, but I fell in love with it!” she says. “I knew it would make a massive statement, so I calmed it down with some contemporary finishes.” They include Sheridan bedlinen and a Private Collection throw. Regency Distribution bedside tables complement the piece without fighting for attention, and are topped with Visual Comfort x Aerin ‘Alabaster’ lamps from Bloomingdales. OUTDOORS The site of countless barbecues, this entertaining area

was designed to complement the home’s internal living zones. Cross-cut travertine from Stone Design marries with the marble flooring indoors, while a Quartzite splashback is a luxe backdrop. “The splashback is indestructible,” says Joumana. “We also chose it for its beautiful veinery.” The stone harmonises with the tones of the Le Forge outdoor table and Yardware chairs. Joumana installed a bulkhead to conceal “the big, ugly outdoor rangehood” above a BeefEater barbecue, plus overhead heaters for winter gatherings. “We spend time here all year round, but we really live out here in summer,” she says. “We’re very blessed.” >

W

hen interior designer Adriana embarked on building her dream home in a beachside suburb of Perth back in 2016, she knew exactly what she wanted. She was also no novice, having built her previous home in the city’s northern suburbs. “That was a really good stepping stone to the building game,” says Adriana. “I enjoyed the process, and that’s when I thought, ‘I want to build again, I want to get the house that I want.’ As an interior designer, it’s hard to live with something someone else has created.” Before putting her stamp on her new home, she had to demolish the existing 1930s asbestos cottage. “It was green and purple,” she remembers. “It was awful!” In September 2017, the slab was laid, and by the following April, Adriana moved into her fresh and bright two-storey home, where not a dab of the former garish colour scheme survives. “I wanted the home to reflect the area I was now living in, but just touches of that,” she says. “I didn’t want obvious coastal.” A driving holiday around Australia after finishing her studies in interior design in 2007 may have laid the groundwork for the subtle palette she favours, muses Adriana, who founded Hatch Interiors in 2013. “I definitely took the coastal routes, because I am someone who completely loves the coast,” she says. “I think that having seen that, as well as the colours of the outback up north, perhaps that does shine through in the home.”

Abundant light also shines through the spacious home that features dual living areas, and where warm timber touches and shellpink tones hint at seaside sunsets against walls in Dulux Lexicon Half. “Downstairs is where I entertain,” says Adriana, who shares her home with Alfie the cavoodle. “Upstairs, another open living area is where I watch TV at night. It’s less formal, a bit more ‘loungie’.” That said, for this avid foodie, the downstairs living space – anchored by an open-plan kitchen and dining area – is the perpetual drawcard, especially when family and friends gather to sample her homemade pasta. “My outdoor area opens up with stacking doors and the dining area opens up with a sliding door,” says Adriana. “So I can open the spaces to be one big, cohesive area. And as I have a fire pit outside, even in winter I still keep those doors open.” However, it’s this time of year, scented with balmy salt breezes, when “the warmth of the home comes out”, according to Adriana. She loves to invite friends over for wine-tastings… good thing she factored in a wine cellar. “Everyone brings a bottle of wine and we’ll end up doing a big grazing station on the kitchen bench,” she says. “I’m Italian, so my whole life is based around food and wine!” Adriana was also savvy enough to build with an eye on the future. Those dual living spaces will appeal to a multi-generational family or someone downsizing. “I’ve built a home I love but I know I’ll want to build again,” she says. “But this is a dream home to me right now.”

Swapping in a sink is easy but Daniela advises using a licensed plumber so the job is done right and warranties remain valid.

SWITCH HANDLES “Introducing new door handles is a simple update and easy way to retrofit,” says Sarah of Home by Belle. Three stunning options are pictured above, above right, and right. “I consider door handles the jewellery of the kitchen; they are small accessories that create a big impact and are an essential finishing touch to any kitchen.” And if you’re handy with a drill, it’s something you can do yourself. Before you commit to the placement, put them on your cupboards or drawers with Blu Tack.

REVIEW LIGHTING Replacing lighting (opposite) is an easy update, but you need to hire an electrician to ensure the job is done safely. “The cost and difficulty of replacing your lighting depends on the existing fittings and ceiling height,” says Jess Paladino, lighting designer at Beacon Design Studio. “You’ll need a professional to patch existing fittings, alter placement or install new light fittings that aren’t DIY compatible; the kitchen is a task-oriented area, so ensure the space is well-lit.” >

TINKER WITH TAPWARE Updating an old tap to something that has a little glitz and glamour (see above left, above right, left & opposite for inspiration) will add instant pizazz to your kitchen. “Retrofitting can be a very budgetfriendly way to update, simply by replacing what’s currently there,” says John Hoogendoorn, creative design manager at Phoenix Tapware. “However, costs can increase if you choose to move from traditional hot and cold taps to mixers, as the in-wall plumbing will need to be replaced.” One very modern swap out would be to swap in a gooseneck kitchen sink mixer with pull-outs, that according to Daniela of Reece, continues to be a crowd favourite. “The ability to wash around the sink and spray vegetables with ease is a key factor, and sensor taps are the latest in kitchen technology – perfect for when you have your hands full!” she says.

Caroma’s Smart Command technology allows owners to track everything from water usage to the speed at which water flows from the taps by using an app connected to fixtures. “We’re so obsessed with looking at our smartphones and how many steps we’ve hit today, but what if we could do that with water?” says Lottie Dalziel, author of the Waste Less Workbook and founder of Banish. “Having this data empowers us to make changes.”

STREAMLINE YOUR TOILET

Installing a dual-flush toilet, like the one seen in this luxe bathroom by Zephyr + Stone (above), is one of best things you can do to save water, but there are other factors to consider. “These days, toilets are designed to use less water,” says Druce Davey, environmental designer at Greener. “Even the shape and material they’re made from can affect the efficiency of the flush. It’s important to factor these things in from the outset.”

Until recently, most water-saving showerheads have been rated three stars in the WELS (Water Efficiency Labelling and Standards) scheme but there are now more 4-star showerheads. “There are a lot of products in that 3-star domain – that’s 7.5-9 litres per minute – whereas 4-star showerheads use 6-7.5 litres per minute,” says Daniela Santilli, bathroom & kitchen merchandising leader at Reece. >

5 INSTALL A THERMOSTATIC MIXER

The less time you spend adjusting water temperature and flow rate, the more water you will save. That’s where thermostatic mixers come in. “Using a standard mixer, controlling water flow and temperature accurately is a challenge,” says Daniela. “Thermostatic mixers control water flow with one dial and temperature with another.” Although available in Europe for some time, these clever devices have only been on the market in Australia for the past 12 months.

ALL IN ONE

The Roca W+W (above), is a basin and toilet all in one and uses the waste water from the basin to flush the toilet. “It was predominantly designed for commercial applications,” says Daniela from Reece, “but we’ve seen around the world that this model is a great choice for powder rooms where sustainability and water-efficiency is important.”

Designers are beginning to look at changing the shape of baths to make them more water-efficient. “I’ve seen some amazing water-wise baths that are completely different to the usual,” says Druce from Greener. “They use a lot less water but still give you a really beautiful bathing experience. They’re experimental now but on the cards for the future.”

ith our days getting hotter and our summers longer, it’s time to turn your mind to how to keep cool without running up your energy bill. Independent energy adviser Tim Forcey says there are lots of actions you can take and the gains are huge. “You could reduce your carbon footprint from the cooling perspective to a tenth of what it used to be,” he says. Mahalath Halperin, director of Mahalath Halperin Architects, is already reaping the benefits at her sustainable home she designed. “People say it’s expensive but for the slight premium we paid to build this we’re going to save $200,000 over the next 25 years in heating, cooling and energy,” she says.

INSULATION AND SHADING One of the first things to do is to check your insulation. “I go up into a lot of roof spaces and find the insulation is strewn all over the place,” says Tim. “It’s often because somebody went up there to change a light bulb or work on the NBN or fix a water leak and they moved all the insulation out of place.” Another easy home cooling tip is to shade your windows. “Start with the outside so you don’t let the heat come into the home in the first place,” says Amelia Taylor, head of product at Wynstan. When the sun does manage to get in, ‘cellular’ or ‘honeycomb’ blinds can help. “The heat goes into an air pocket and it sits there in a circular motion and it doesn’t come through the other side of the fabric,” explains Amelia. >


WINDOWS 101 Your next line of defence is double-glazed windows. When choosing windows, make sure you check out the frame, too. “Aluminium is a ridiculously good conductor of heat,” says Joel Seagren, director of the Australian Passive House Association, of this metal’s not-so-green quality. Luckily, window suppliers have frames that “thermally break” the connection between the exterior and interior aluminium, but they’re not standard issue in Australia so it pays to ask. Consider the type of windows, too. “Louvre windows have come a long way,” says Mahalath from Mahalath Halperin Architects. “If you place them strategically, you can manipulate the way breezes come in.” And you still need to respond to the weather. Set up a bunker-down routine for those really hot days (and they will come) by shutting all the blinds and curtains in the morning to be opened only when that cool breeze eventually arrives.

MIND THE GAPS While you can close up your home on a scorcher, if the hot air can enter through gaps in your walls and ceiling, you’ll still end up feeling the heat. The solution is to find out exactly where they are with something called a blower door test, which can be done by an air tightness tester (for a list of testers, search online for “ATTMA Australia”). “They put a blower on your front door and mask off the rest of the door and then they try to suck all the air out of the house,” explains energy expert Tim. “They can see how leaky your house is with pressure-monitoring devices.” You can also see where those pesky gaps are by using a small handheld smoke generator. Once you know where the gaps are it’s a matter of plugging them up (or getting someone around to do so if you’re not that handy). “We can improve the air leakage of Australian homes by a factor of 10 without spending a lot of money or time,” says Tim. And, if you’re looking to sell, prospective buyers are likely to be impressed by the airtightness of your property.

TIME FOR BACKUP Sometimes, despite your best efforts to keep your home cool in passive ways, you’ll need to switch on a fan or the air con. If you’re buying a new air conditioner, refrigerant reverse-cycle models are more energy efficient compared to evaporative cooling. “The top-of-the-line models these days carry a seven-star energy rating,” says energy expert Tim. “Every extra star means you’ve reduced your electricity use by 10–15 per cent, but even a six, five or four star model is still pretty good.” It’s also important to buy the right-sized unit. “A unit too small for the space may work harder to run and a unit too large for a space may use unnecessary energy,” says Linda Louskos, marketing manager, air conditioning at LG. Before you turn on the air con, try a fan or dehumidify the air. “A lot of air conditioners have what they call a dry button,” says Tim. “Even though the temperature hasn’t changed, it’s pulled the humidity out and made it feel cooler.” Cleaning the filter on your air conditioner will also improve its efficiency. Don’t forget the outdoor unit. “Make sure it has free air flow around it,” says Joel of the Australian Passive House Association. And when you do turn it on, have the set-point higher. “If you set your air conditioner to be one degree higher in summer, the general rule of thumb is that it will probably save you about 10 per cent in energy,” says Joel.

PORK LARB WITH GREEN BEANS, CUCUMBER & MINT Serves 4-6 100ml chicken stock 500g coarsely minced pork 100g green beans, cut into 2cm batons ½ Spanish onion, thinly sliced on a mandolin 2 Lebanese cucumbers, half-peeled, thickly sliced 1 cup firmly packed mixed coriander and mint Iceberg lettuce leaves Red chilli, fried shallots and steamed rice, to serve

Toasted Brown Rice Dressing 1 tbsp brown rice 1½ tsp aniseed or fennel seeds 100ml lime juice (about 3 limes) 15g ginger, coarsely chopped (3cm piece) 4 kaffir lime leaves, coarsely chopped 2 lemongrass stalks (white part only), finely chopped 2 tbsp fish sauce 1 tbsp crushed dark palm sugar 1 tsp roasted chilli powder

1. To make toasted brown rice dressing, dry-roast rice in a frying pan over high heat, stirring constantly, for 1 minute, or until light golden. Add aniseed and toast for 1 minute, or until fragrant. Finely grind with a mortar and pestle, then process in a blender with remaining ingredients until mixture is very finely chopped. 2. Bring stock to the boil in a new frying pan. Add pork and simmer, stirring occasionally, for 4-5 minutes, or until just cooked, adding beans in the last minute of cooking time. 3. Transfer pork mixture to a bowl. Add toasted brown rice dressing, toss to combine and season to taste. Cool briefly, then add onion, cucumber and herbs. Serve warm with lettuce cups, chilli, fried shallots and steamed rice. >

Corn, Radish & Coriander Salsa 2 corn cobs, husks and silks removed 1 avocado, diced ½ small Spanish onion, thinly sliced on a mandolin 3 radishes, thinly shaved on a mandolin 1 cup firmly packed coriander, plus extra to serve 1 clove garlic, crushed Finely grated rind and juice of 1 lime, or to taste

1. Preheat oven to 220°C. Dry-roast cumin and coriander seeds in a small frying pan over medium-high heat until fragrant, then crush with a mortar and pestle. Add garlic and sea salt, pound to a coarse paste, then stir in half the olive oil. Transfer to a bowl, add steak and massage paste into meat. Set aside. 2. To make corn, radish and coriander salsa, heat a barbecue or chargrill pan over medium-high heat. Barbecue corn, turning occasionally, for 5-8 minutes, or until charred and just cooked through. Cool briefly, then slice off kernels and place in a bowl with remaining ingredients, toss to combine and season to taste. 3. Brush steak with remaining olive oil, season well and grill, turning once, for 4-5 minutes each side, or until browned all over. Transfer to a roasting tray and roast for 5-7 minutes for medium-rare, or until cooked to your liking. Rest for 10 minutes, then thinly slice. 4. Process sour cream and chipotle chilli in a small food processor to combine and season to taste. 5. Char tortillas for 30 seconds-1 minute each side. Top with sliced steak, chipotle sour cream and salsa. Scatter with extra coriander, season to taste and serve with lime wedges and hot sauce.


CAULIFLOWER, SILKEN TOFU & WALNUT RICE BOWL Serves 4 400g brown rice, rinsed 50ml rice wine vinegar 2½ tsp caster sugar 1 tsp salt 100g walnuts 1 small cauliflower, cut into small florets 50ml grapeseed oil or other neutral-flavoured oil 1 tbsp furikake rice seasoning, plus extra to serve 300g silken tofu, cut into 1.5cm cubes

3 spring onions, thinly sliced 200g kimchi, thinly sliced Shiso leaves, to serve (optional) Ginger-Soy Dressing 80ml grapeseed oil 60ml rice wine vinegar 30ml light soy sauce 1½ tbsp caster sugar 1 tsp finely grated ginger ½ tsp roasted sesame oil

1. Preheat oven to 180°C. Cook rice in a large saucepan of boiling water for 20-25 minutes, or until tender. Drain well, transfer to a bowl and stir in vinegar, sugar and salt. 2. Meanwhile, spread walnuts on an oven tray and roast for 5-6 minutes, or until golden. Remove walnuts and increase oven temperature to 250°C. 3. Toss cauliflower with oil and furikake in a roasting pan to coat, season to taste and roast for 8-10 minutes, or until tender and starting to blacken at the edges. Cool briefly. 4. To make ginger-soy dressing, process all ingredients in a blender to combine. 5. Divide rice among serving bowls. Top with cauliflower, tofu, walnuts, spring onion, kimchi, extra furikake and shiso leaves. Drizzle with ginger-soy dressing and serve. >

TROFIE WITH POTATOES, BEANS & PISTACHIO PESTO Serves 4-6 500g dried trofie pasta (or try penne or ziti) 1 large sebago potato (about 275g), cut into 1cm dice 175g butter beans, cut into 3cm pieces 175g green beans, cut into 3cm pieces 20g butter, diced

Pistachio Pesto 1 cup firmly packed basil, plus extra leaves to serve 185ml extra-virgin olive oil 30g pistachio nuts, plus extra, crushed, to serve 3 tbsp finely grated pecorino, plus extra to serve 2 small cloves garlic

FOR A SUBTLE TASTE VARIATION, SWAP THE PISTACHIOS FOR PINE NUTS

1. To make pistachio pesto, process all ingredients in a food processor until smooth and season to taste. 2. Cook pasta in a large saucepan of boiling salted water for 8-10 minutes, or until al dente, adding potato in the last 3 minutes of cooking time and beans in the last minute. Drain, reserving 40ml cooking water, and return pasta and water to pan. Add pesto and butter, toss to combine and season to taste. 3. Serve hot, topped with extra crushed basil pistachio nuts, and grated pecorino.


GRILLED TUNA WITH BLOOD ORANGE, FENNEL & BLACK OLIVE DRESSING Serves 4

LAMB KOFTE WITH PEA TABBOULEH & GARLIC YOGHURT

LAMB KOFTE WITH PEA TABBOULEH & GARLIC YOGHURT Serves 4 Olive oil, for drizzling 250g Greek-style yoghurt 1 small clove garlic, crushed Coriander cress, sumac (optional) and lemon wedges, to serve Lamb kofte 500g coarsely minced lamb 1 small Spanish onion, finely grated 2 cloves garlic, crushed 2 tsp baharat Middle Eastern spice mix ¼ tsp ground chilli ¼ tsp ground allspice

Pea tabbouleh 500g frozen peas 2 Lebanese cucumbers, seeded, coarsely chopped 1 cup loosely packed mint, finely chopped 1 cup loosely packed flat-leaf parsley, finely chopped 3 spring onions, thinly sliced 60ml extra-virgin olive oil 1½ tbsp lemon juice 1 small clove garlic, crushed Finely grated rind of 1 lemon Pinch of ground chilli

750g piece skinless yellowfin tuna Olive oil, for brushing and drizzling 3 tsp fennel seeds, crushed with a mortar and pestle 3 blood oranges, rind of 1 finely grated, all peeled, thinly sliced, seeds removed ½ head radicchio, torn 1 fennel bulb, shaved on a mandolin, fronds reserved 1 large golden shallot, thinly sliced on a mandolin 1 cup firmly packed basil, plus extra to serve

Black Olive Dressing 100ml extra-virgin olive oil 50g black olives, pitted 2 tbsp red wine vinegar, or to taste 1 small clove garlic, crushed ½ long red chilli, coarsely chopped Finely grated rind of ½ blood orange and juice of 1 2 tsp brown sugar

1. To make black olive dressing, pound or process all ingredients in a blender until combined and season to taste. 2. Heat a barbecue or chargrill pan over high heat. Brush tuna with oil, press fennel seeds all over fish and season to taste. Drizzle with oil and grill, turning occasionally, for 4-5 minutes, or until charred on the outside and rare inside. Rest for 1 minute, then thickly slice. 3. Combine blood orange, radicchio, fennel, shallot and basil in a bowl. Dress with half the black olive dressing, toss to combine and season to taste. Serve salad with tuna and scatter with extra basil and fennel fronds, and drizzle with remaining dressing. GRILLED TUNA WITH BLOOD ORANGE, FENNEL & BLACK OLIVE DRESSING

1. To make lamb kofte, heat a barbecue or chargrill pan over medium-high heat. Combine lamb, onion, garlic and spices in a bowl and season generously to taste. Knead for 1-2 minutes, until mixture comes together and is slightly sticky. Divide into 12 balls and thread onto metal skewers. 2. To make pea tabbouleh, cover peas with boiling water in a bowl, then strain and pulse in a food processor until coarsely crushed. Combine in a bowl with cucumber, herbs and spring onion. Whisk olive oil, lemon juice, garlic, lemon rind and chilli in a separate bowl to combine and season to taste. Add to salad just before serving, tossing lightly to combine. 3. Drizzle lamb kofte with oil and grill, turning occasionally, for 5-6 minutes, or until browned and just cooked through. Rest for 5 minutes. 4. Combine yoghurt and garlic in a small bowl, season to taste and drizzle with olive oil. Scatter lamb kofte with coriander cress and sumac, and serve with pea tabbouleh, yoghurt and lemon wedges.

What is your earliest memory of being in the kitchen? “Being of Lebanese heritage, there was never a dull moment in the kitchen. From soup or stews to dishes like beef tongue or brains on the menu. There is a lot of inspiration on the Jimmy’s Falafel menu from my mum.” “[Comedian] Ricky Gervais’ laugh is so infectious and I love what he does for animals. Also James Gandolfini [late The Sopranos actor] and Dolly Parton [singer], just so we could sing ‘Jolene’ together on repeat after a few drinks!”

What would your last meal be? “My last meal would have to be a massive Lebanese breakfast or brunch spread. It is all about generosity. There is something so comforting about that meal for me.”

f ever there was a time to take a breath and reflect on the way we live, this is it. Emerging from a devastating drought and one of the most horrific bushfire seasons on record to find ourselves in the midst of a pandemic, we are now spending more time in our homes than ever, which in turn has informed our desire to create a home of comfort and cocooning, a haven filled with meaning. Supporting Australian businesses has also never been more important than it is today. Thankfully, the two go hand in hand. Just ask Grace Brennan. When the Warren, NSW, local started the now-famous #BuyFromTheBush hashtag in an attempt to bring a degree of economic relief to drought-stricken communities like her own, she never dreamed it could have such a profound impact. Mere weeks after Grace posted her first photo, rural Australia Post franchises started selling out of parcel packages, country boutiques sold out of stock and local makers increased their social media audiences by thousands. “More and more consumers want to shop with purpose,” Grace says of a movement that will continue to shape the trends of tomorrow. “They want to connect with the stories behind their products and make spending decisions not just based on price or convenience.” Consider this your guide to tapping into our ‘The Quiet Place’ trend to make meaningful purchases that help those around you, while making your home a beautiful place to be.

CHAMPION TRUE CRAFTSMANSHIP “What we need is to stop and think about what we’re buying, and maybe sometimes buy a little less, but buy really well,” says Sasha Titchkosky, who co-founded Koskela, an emporium of incredible Australian-made designs, 20 years ago. “In the past people really saved for the perfect sofa, and they treasured it.” When you buy a piece of furniture made by hand, you’re helping to preserve time-old techniques and honour true craftsmanship, while creating a home that’s uniquely yours. “It’s about understanding the story behind your things and knowing who made them, under what conditions − there’s a feeling you get from living with these pieces that you don’t get from something mass-produced,” Sasha says.

SUPPORT LOCAL MANUFACTURING Believe it or not, it is possible to have sofas, lighting, textiles and furniture all made in Australia. “The market is flooded with cheap imports in large chains, so the Australian manufacturers struggle to compete,” says Brenda Jarman of Harvey Norman, who notes that only once local manufacturers see strong growth will they be able to expand their range in order to compete with imported prices. But thankfully, the tide is slowly changing. According to Roy Morgan’s latest data, 90 per cent of Australians are now more likely to buy Australian-made products when given the choice. “I think people are trying to make more conscious decisions when it comes to design,” says Australian designer Emma Elizabeth, who curates Local Design, a website devoted to celebrating our best and brightest. >

BUY GOOD, DO GOOD Beyond the obvious ethical implications of supporting local manufacturing (“If I look at a $4 shirt from Kmart, it isn’t hard to imagine that somewhere along the line people aren’t getting paid properly,” Sasha says), buying from like-minded makers often means buying into initiatives that will really make your heart sing. Take Australian textile label Seljak Brand, which sends a beautiful wool blanket to the Asylum Seeker Resource Centre for every 10 wares sold; or Koskela, which donates a percentage of profits to Aboriginal- and Torres Strait Islander-owned art centres to support their work (to the tune of $550,000 so far).

SHOW REGIONAL AUSTRALIA LOVE We’ll let Grace explain this one: “When someone decides to buy a hand-painted card from Coonamble, NSW, they are supporting that artist, the local printer she prints her cards with, the local post office franchise, the bakery she buys her breakfast from when she has some extra cash and the painter she can now afford to pay to paint her room,” she explains. “One in five businesses we’ve featured on Buy From The Bush has employed staff as a result of business growth. Many local designers have ‘available now’ or ‘short lead time’ sections on their websites if you have a spot at home you want to fill, stat. Across the board, lead times are generally far shorter than imported products. “A fabric lounge would take between five and eight weeks,” says Brenda from Harvey Norman, a brand that champions Australianmade. “Fabric choices are wider, after-sales support is normally easier, spare parts are easier to get, and general support is quicker when you only need to call the local factory for a quick solution.”

hose lucky enough to have had a childhood of Australian summers most likely also have a memory montage filled with sunburn, blowing out a thong mid-sprint, dropping an ice-cream cone before you had the chance to take a lick… and bikes. Nothing provided more of a taste of two-wheeled independence than a bike. With a working chain and enough sugar-fuelled energy, your little world instantly grew a tiny bit bigger. A park or beach that was once just a bit too far to walk to was suddenly in reach. For generations of Australians, that first intoxicating taste of wind in the hair and grease on the ankles came courtesy of a Malvern Star. Yes, it sounded like a suburban newspaper – remember them? – but its pedigree stretches back to 1903, when the first Aussie team to take on the Tour de France had Tom Finnigan’s steeds beneath them. They’re still going strong, albeit with model names updated from the rather pedestrian-sounding ‘5 Star Dural’ to ‘Storm’ and ‘Hurricane’. Eventually, brands that sounded a little sexier to say – such as Schwinn and Huffy – found their way to our shores. They launched millions of fractious school and velocity debates, not to mention the subsequent race challenges, which themselves resulted in the stinging application of mercurochrome or gentian violet. Being the 1960s and 1970s, our bikes reflected the strict gender stereotypes of the era’s toys. That meant boys got lightning-bolt graphics on powder chrome red and blue chassis, while girls were stuck with pastel pinks and a white plastic basket barely big enough to carry a Bonnie Bell lip gloss filched from an unsuspecting sister. Just as we would later do with our homes, Aussies were seized by the need not so much for speed, but customisation. Entry level here was a playing card in the spokes, which resulted in a rapid rat-a-tat-tat sound effect that was a bit like an underpowered engine. If you were more the visual type, some leftover ribbon taken from the Christmas wrapping bonanza and a bit of gaffer tape was all it took for a glistening array of tinsel to hang from the handlebars. At speed, the effect was spectacular as they billowed parallel with the ground.

As impressive as all of these modifications were, they paled in comparison to the Harley-Davidson of bicycles, also known as the ‘Chopper’ model. Taking their high-handled, low-slung and angular inspiration from the motorbikes favoured by Hells Angels and Peter Fonda in Easy Rider, they were “rad” before the term was invented – especially if you could get your olds to stump for the model with the glitter-speckled effect on the seat and back tyre that kicked out to the side if you applied the brakes at just the right moment. Like all trends, the Chopper burnt brilliantly for a few years and then faded. By the 1980s, it was all about bikes we could jump over dirt ramps without fear of them shattering. We didn’t mind if we did. A little local film called BMX Bandits may have something to do with it. As did its flame-haired star… wonder what happened to her? Fast forward to 2020 and it’s tempting to say that bikes are having a renaissance, but that’s not really the case. Hit up your average cafe on a Sunday from the aughts onwards, and you’d be presented by a phalanx of middle-aged blokes in frighteningly sheer lycra clip-clopping to the counter as their featherlight carbon rides took

up most of the pavement outside. With bike paths sprouting across Australian cities, the rage today is for electric versions. This basically means you can go further and faster with not as much effort. What we lose in service to the BMI, we make up for in KPH. The tech might have changed, and society along with it, but once the pedals are in motion and the muscle memory kicks in, a little glimpse of that first bike-bound summer of freedom will reemerge. All you need to do is peel, blow out a thong in mid-sprint and drop an ice-cream cone before you’ve taken a lick. Now, on your bike.
