The countdown to the 12th edition of Melbourne International Coffee Expo is on. Lock in your coffee friends, build up your caffeine tolerance, and prepare to dive into the most jam-packed lineup to date of the Southern Hemisphere’s largest dedicated coffee show.

From 20 to 22 March 2025, the international coffee community will gather at Melbourne Convention and Exhibition Centre in the heart of the city for three days of fun, flavour, education, networking, and business. For the global industry, MICE is an annual opportunity to catch up with friends, discover new products, and grow the community they are so proud to be part of in a city that’s been integral to its success.

If you’re returning this year, welcome back to the new era of MICE. And if you’re new, we’re thrilled to have you here. Everyone is welcome: from newbie brewers and café enthusiasts to barista champions, coffee farmers, and equipment specialists. MICE is a space to connect, share ideas, and be inspired –whatever your coffee background.

This year, MICE introduces the new Roasters Playground and its biggest lineup of Australia’s favourite roasters. The unique addition to the show – supported by La Marzocco, Riverina Fresh, and Milklab – will see a rolling schedule of coffee roasters take over their own space for half-day sessions, where attendees can sample their latest beans,

glean brewing tips, and chat all things coffee. In total, more than 40 roasters will make an appearance at MICE2025, with a star-studded lineup of brands filling the Roasters Villa for even more tasting opportunities.

The Roasters Playground isn’t the only fresh addition for 2025. As part of MICE organisers’ major drive to satiate the industry’s increasing appetite for educational content, a new demonstration stage supported by Breville will host a series of tutorials, demonstrations, and workshops. With a custom-made mirrored backdrop, audiences will be able to watch all the action behind the machine while international coffee talent share their skills and knowledge.

What’s more, there’ll be more chances to get a bite of the educational cherry at the Café Education Series and Global Coffee Report Breakfast Symposium panel discussions. Come to watch some of the industry’s most prominent CEOs, thought leaders, and experts discuss timely and relevant topics and issues, such as the coffee pricing conundrum, scaling up café businesses, menu design, and more.

All good things must come to an end, but we’ll be eking out the feelgood MICE vibes a few hours longer at the Official MICE After-Party – and you’re invited. For the three days each year that Melbourne International Coffee Expo (MICE) takes over the Melbourne Convention and Exhibition Centre, there’s a palpable buzz of excitement in the city that helped establish the specialty coffee culture we now find right across the world.

As the Southern Hemisphere’s largest dedicated coffee event, we recognise the role MICE plays in connecting international players, breeding innovation, and sharing knowledge to ensure the industry continues to thrive. This year, to make sure MICE remains a valuable opportunity for those who attend, we introduced an Advisory Board of industry leaders to help us make 2025 the best show yet.

Their expert feedback, experience, and ideas exceeded our expectations and we cannot wait to share the results with you when the doors to MICE2025 open on Thursday 20 March. This year, we’ll welcome a record number of roasters in both the Roasters Village and the new Roasters Playground, which will see 36 of Australia’s best coffee companies rotate to offer a rollcall of tasting experiences.

Aware of the growing appetite for knowledge in the coffee sector, in 2025 we’ll also be delivering even more educational content than ever before. What’s more, in 2025 we’re opening up MICE to an even larger audience. What an amazing opportunity for us to come together and celebrate our proud Australian coffee industry, which originated here through the bold and courageous efforts of Italian migrants and is now recognised globally for its innovation and exceptional quality. It is comprised of thousands of artisans and businesses, and this collective genius deserves a moment in time to unite and celebrate their crown as the world’s best, while also exploring through their shared curiosity how to push the boundaries even further.

In mid-2024, the team at MICE reached out to a diverse range of coffee industry players – myself being one of them – to participate in the creation of an Advisory Board tasked with reimagining a new era for MICE. A key question was posed: what should a coffee show look like in today’s world, especially for the most sophisticated and mature specialty coffee market, where standards are already so high?

we will continue to elevate our industry’s profile, attract everyday coffee lovers, and educate consumers about the efforts that go into the miraculous coffee journey. We aim to position our coffee on par with high-quality wine, warranting a similar price.

The diversity of the show enables coffee roasters to engage with a broader range of businesses attending than ever before. Leaders are there to learn how integrating coffee as part of the customer experience can grow their respective businesses. We are seeing luxury car manufacturers, AFL teams, and fashion retailers integrating coffee into their customer journeys and workplace experiences, and welcoming the sense of community coffee brings with it into their businesses.

MICE thanks the Advisory Board members for their contribution to this year’s event: Barry Moore of La Marzocco Australia, Nick Calabrisello of San Remo Australia, Craig Shapiro of Riverina Fresh, Lachlan Ward of ST.ALi, Mike Brabant of Single O, Trent Knox of St Remio, Maurizio Marcocci of Service Sphere, Craig Dickson of Veneziano, and Bernard Peters of Bombora Supplies.

The group was bustling with ideas on transforming the show. First and foremost, it was about putting specialty coffee at the centre while adding high-value content that would genuinely interest and serve café and venue operators. How can MICE help their businesses thrive, not just survive, especially in light of the current micro- and macro-economic conditions impacted by extreme climate effects and rapidly changing geopolitical events affecting the livelihoods of those in the complex coffee economic chain.

What you can expect from this edition of MICE is a show curated around some of Australia’s best roasters, along with an education series that provides leading industry insights and inspiration.

At the same time, by activating the vibrant ‘coffee loving’ city of Melbourne,

I believe you will find this edition of MICE exuding a real hospitality vibe – beyond just amazing coffee. Both elements are interconnected. After all, it’s how you make people feel, not just what they taste, that truly builds brand loyalty and subsequently sustainable businesses.

At La Marzocco, we have a manifesto: “The frontier is a zone typically touched on by artisans. Difficult and dangerous, invisible to the naked eye, and practically inscrutable to market research, the frontier can, at best, be sensed by using qualities that are rarely accepted by present-day industrial culture: intuition, sensitivity, and a desire to accept managed risk as an essential part of our work.”

I truly believe the Australian coffee and hospitality industry is on its very own frontier, and we will witness this at MICE2025.

Ready to deep dive into the world of coffee? With a host of exciting new events, awards, and exhibitors, MICE is back with a bang for 2025. Here’s what to expect from 20 to 22 March.

The coffee industry’s fast-paced, innovative nature means it constantly adapts to deliver the best products to its increasingly discerning customers. Over are the days when quality coffee was only available to a niche audience in specialty shops. In 2025, consumers expect high-quality coffee from all manner of venues and in a wide variety of serves.

The coffee landscape has evolved – as has the tradeshow that puts Australian café culture on the world stage.

Over the past year, the organisers behind Melbourne International Coffee Expo (MICE) have been collaborating with key players in the industry to ensure the three-day event continues to deliver value to those who exhibit and attend.

With a new advisory board of coffee professionals providing feedback and ideas, MICE2025 is set to be the best yet and include a jam-packed schedule of new events, educational content, awards, competitions, and – of course – a killer after party.

One of the most exciting new elements to be rolled out at MICE2025 is the Roasters Playground. Supported by La Marzocco, Riverina Fresh, and MilkLab, the new

section of the show gives attendees the opportunity to discover a whole host of roasters they might not have come across and try a kaleidoscope of coffees.

Over the show, the Roasters Playground will welcome 36 roasters to showcase their products, host tasting sessions, and interact with the coffee community. The roasters will change throughout the day, so attendees will have a rolling selection of beans to sample and brands to discover.

“We know roasters are the heart of the Australian coffee industry and

they deserve to be front and centre at Australia’s only dedicated coffee expo,” says Lauren Chartres, MICE Show Director.

“Thanks to the generosity of our partners at La Marzocco, roasters can access MICE without having to sacrifice too much time spent away from their roastery or café. We want roasters to be able to focus on what they do best, which is to provide Australians with delicious coffee.”

La Marzocco will provide all the equipment for the roasters to craft excellent coffee, while Riverina Fresh and

MilkLab will supply dairy and alt-milks for the baristas to fashion flatties and lattes for attendees.

But the coffee exploration doesn’t stop there. At the Roasters Villa, attendees will be able to immerse themselves in the caffeinated world as some of Australia’s best loved roasters takeover stands for the entire show. Expect immersive events, barista showcases, interactive tastings, and so much more.

COME TO LEARN

The coffee industry is hungry for knowledge and MICE is dishing up a feast for those who attend in 2025. Building on its popular educational content in 2024, the 12th edition of the tradeshow will feature even more opportunities for knowledge sharing and skills building.

“We’re imbedded in the Australian coffee community and what’s clear is that there’s a huge desire for educational content right now,” says Lauren.

“People not only want to learn from their peers but also from other players in the

The Café Owners Education Series and Global Coffee Report Breakfast Symposium are both set to return with extended programs of panel discussions and case studies. Industry and thought leaders from across Australia and beyond will deep dive into topics such as menu curation, the rise of signature drinks, how to go viral on social media, the role of automation in the café, and so much more.

“We’ve created an amazing mirrored stage, so viewers will be able to see everything that’s going on behind the espresso machine,” says Lauren.

“As well as tutorials, the stage will also be used to do interactive tastings and host other hands-on educational sessions.”

COME TO DO BUSINESS

One of the main draws of MICE is the national and international exhibitors who gather at the Melbourne Convention and Exhibition Centre to share their products and services with the thousands of coffee enthusiasts and professionals who visit. Over the years, the tradeshow has become the place to do business, and to reflect its role, organisers have introduced a dedicated Espresso Bar, sponsored by specialty roaster The Bean Cartel, within Melbourne Coffee Festival.

More than 120 companies will be exhibiting at MICE2025.

MICE2025 will feature the show’s biggest educational lineup to date.

The new addition is a space for attendees and exhibitors to relax, have a coffee, and talk business.

“ We wanted to introduce an interactive space where people can gather to network or simply chill out,” says Lauren.

“In the mornings, there’ll be an espresso bar fuelling the conversation, while in the afternoons there’ll be DJs and drinks to create a social vibe.”

COME TO CELEBRATE

The inaugural Australia’s Favourite Coffee awards were such a hit at MICE2024 that the attendeevoted competition will return this year – alongside an extended lineup of accolades.

To finish MICE2025 with a bang, the MICE Awards will be held at Showtime

Events Centre, a stone’s throw from the main tradeshow. As well as naming Australia’s Favourite Coffee and the winner of the Product Innovation Awards, the ceremony will see the coffee community acknowledged in new categories including Lifetime Achievement, Next-Gen Talent, and Community Champion, as part of the Coffee Industry Heroes awards.

“We’re really excited to present the new awards to acknowledge some of the incredible talent in the coffee community. The winners will be decided by an independent judging panel and announced at the afterparty event,” says Lauren.

“The aim is to be inclusive of the whole industry. We’re not just celebrating amazing baristas but also marketing

managers, equipment technicians, packaging designers, and more.”

After the awards ceremony, which will be open to anyone in the industry, the Official MICE After-Party will go into full swing at the same venue. Everyone’s invited to mingle with fellow coffee folk, celebrate the winners, and raise an espresso martini to MICE2025. Tickets can be purchased in advance from the MICE website.

THE COFFEE PRICING CONUNDRUM

Is it time for coffee prices in Australia to increase and, if so, how should cafés go about making the change?

When you compare average coffee prices in similar markets across the world, the cost of a coffee purchased from an Australian café is one of the lowest. According to Friendly Finance, the average small flat white in Australian capital cities comes in at $4.78, but there are fluctuations in different states and territories, with the number closer to $4 in New South Wales and the average just over $5 in Victoria and Queensland.

Despite the slight regional differences across the country, Australia still comes out towards the bottom of international rankings. Data acquired by Sydney-based roaster Pablo & Rusty’s suggests the median price of a flat white in cafés in 11 countries with similar coffee cultures was AU$7.43 – more than $2.50 more expensive than the average here.

Queenstown, New Zealand, had the lowest median price of the comparison countries at AU$5.10, while the three highest were Dubai, United Arab Emirates,

(AU$9.39); Athens, Greece, (AU$9.91); and Basel, Switzerland (AU$10.32). While Australia’s low coffee prices may seem like great value for consumers, some professionals believe they pose a serious threat to the country’s coffee industry.

STAGNANT PRICING

Abdullah Ramay, CEO of Pablo & Rusty’s, thinks it’s an issue that’s been swept under the carpet for too long.

“For a long time, coffee prices haven’t changed in Australia and that’s not good for any industry – let alone one that’s seen the cost of its core ingredient steadily rise,” says Abdullah.

“Over the past five years, inflation has gone up a couple of per cent each year, but because these numbers were on the lower end, no one was increasing their prices, despite energy bills, rent, wages, and the cost of ingredients going up.”

It wasn’t until mid 2024, when green bean prices reached record highs, that the issue gained widespread attention – from

both people in the industry and the public. With the cost of Arabica coffee rising more than 60 per cent in 2024, coffee roasters around the world are paying more for their raw materials.

The global price rises in green coffee have been sparked by a number of factors, including extreme weather events in Brazil, Vietnam, and Colombia – the world’s three largest coffee producers. Transportation costs have also increased due to disruption to shipping routes and most the world’s coffee stocks have decreased while demand has grown.

“It’s been suggested that roasters will need to raise their bean prices by around 25 per cent over the next year. I don’t think we’ll see that level here in Australia, but prices will go up,” he says.

Abdullah, and many others in the industry, believe it’s got to the point that café owners will no longer be able to absorb the cost and will need to pass on the increase to their customers.

“This has been a problem we’ve been talking about for years and the recent market prices have brought it into sharp focus,” he says.

“The current prices don’t add up when you’re considering a beverage that requires a barista to make it, using $40,000 worth of equipment, and

sourcing high-quality specialty-grade beans. Compare this to something such as bubble teas, which cost around $6, and it simply doesn’t make sense.”

THE FEAR FACTOR

According to Andrew Low, CEO of Coffee Supreme, there’s more to the issue than inflation and rising costs. He believes there’s an emotional and cultural value tied to coffee, especially in countries like Australia that are known for their café culture.

“Coffee isn’t just about the cost of green beans, milk, and labour,” he says. “It’s about the service, the craftsmanship, and the sense of community that cafés create. Yet, many café owners are stuck in a hand-to-mouth survival cycle, fearing that customers won’t pay more for better quality. This must change.”

Both Andrew and Abdullah believe many café owners are fearful of losing out to competitors if they increase their prices. Cafés are locked in a race to the bottom in order to keep their customers happy.

“Café owners are afraid that they’ll lose customers, while consumers complain about the cost of their daily ritual, comparing it to making coffee at home,” says Andrew.

“We are at a critical juncture in the

specialty coffee industry. If we want to support the diversity of small businesses and artisan roasters, we must increase prices. The alternative is decreasing quality, decreasing farmer conditions, and going back to chains because they do this better.”

PRICE INCREASES 101

So, as a café owner or manager, how do you go about increasing prices? Is it a rip it off like a Band-Aid situation, or take it slow and steady? Andrew and Abdullah agree that making small, regular changes is the best strategy.

“As a café owner, you know prices need to rise, but you can’t afford to lose too many customers or anger them. It’s better to try something new than hope for different results from the same old methods. So go slow, but do something,” says Abdullah.

To start the process, he advises café owners compare their prices to other venues in their area, assess the competitors’ quality and online reviews, and then analyse their own coffee prices. Next up is planning where they want the café to be in 12 months’ time and making a roadmap on how to get there in three or four stages. He suggests small increases of around 15 to 20c every quarter.

“You probably won’t lose many customers, especially if you provide a great experience and friendly service,” he says.

“However, you must shift your mindset from volume at all costs to sustainable pricing. You should be willing to lose some volume in exchange for sustainable pricing. Without change, the quality of your café may decline – or it may shut down.”

One of the most nerve-wracking parts of increasing prices for some café owners is explaining the change to customers. Andrew believes that messaging shouldn’t focus on the cost of ingredients but instead the experience of the product.

“It’s not about explaining the cost of farming or labour as people get bored and turn off. Comparison is a great tool because what something is worth is a relative thing. I like to use simple

examples, such as why am I OK paying $5 for a bottle of water, which costs about 40c to make, but I’m upset paying $5 for a coffee that’s hand- picked, processed, roasted, and brewed in front of you? It defies logic,” he says.

“We are at a critical juncture in the specialty coffee industry. If we want to support the diversity of small businesses and artisan roasters, we must increase prices.”

Melbourne’s specialty coffee culture has been highly influential around the world.
How Australia led a specialty coffee revolution and continues to be a global icon of independent café culture.

For a country of just 27 million people spread across 7.7 million kilometressquared, Australia punches well above its weight in the global coffee scene. The country’s thriving café culture isn’t just respected: it’s been replicated in cities, towns, and villages across the world, where baristas craft flat whites and long blacks to be served alongside Aussieinspired brunch dishes.

But what is it about the Australian coffee scene that’s made it such a trendsetter?

Sarah Baker, MICE Education Moderator and BeanScene Publisher, believes the country’s independent spirit and community focus have paved the way to its success.

“Unlike the European and American markets, what’s unique about Australia’s coffee culture is its specialty coffee scene, celebrated by independent coffee shops with their own individual style, design, and boutique coffee offerings that celebrate community and their customers,” says Sarah.

“For years there was a resistance to coffee chains here, which helped shape the DNA of the Melbourne coffee scene in particular. It also built the city’s reputation for having a discerning market that is truly locally supported without international influence.”

Despite Australia being a largely consuming country with a very small producing community, this focus on specialty products, small-scale roasting,

an unparalleled reputation as a market influencer for beverage trends, equipment, café design, and barista skill.

“For a long time, Australian baristas have been sought out on the international scene with signs on café doors citing, ‘Australian baristas wanted’. There is a strong commitment to training and education of Australian baristas that makes their penchant for quality coffee production in high-volume environments extremely desirable on the international stage,” Sarah says.

“For this reason, it’s common to see Australian-inspired specialty coffee venues pop up in tourist hotspots, such as London, New York, Tokyo, and Bali, providing a sense of trust and relief in cup quality and overall customer experience.”

While the third wave coffee movement of the early 2000s has shaped the ‘antipodean’ coffee experience that’s now prevalent across the globe, the origin of Australia’s coffee culture goes back to the 1950s.

“There’s been an intense debate between Australia’s coffee capital, be it Sydney or Melbourne, but it’s thanks to early Italian migrants in the 1950s and 1960s who brought with them a love for espresso culture that started the espresso movement from what was originally a British-influenced tea-drinking demographic,” says Sarah.

“Espresso culture continued to evolve, and with access to such high-quality dairy production and quick turnaround from crop to cup, the country fell in love with milk-based coffees such as flat whites and lattes, which still dominate consumer preferences.”

The jury may still be out on which country originally masterminded the flat white (New Zealand also lays claim to the title), but Australia’s influence on the size, composition, and style of coffees being served across the world is indisputable. This influence over international trends has seen the country become a testing ground for equipment innovation and new technology.

“International manufacturers have been known to look to Melbourne and Sydney markets to experiment with machine prototypes, from new steam wand technology to flow meter systems, signature beverages, and espresso chilling devices,” says Sarah.

“It’s thanks to the country’s passion and innovation that industry barriers continue to be pushed, and why international collaborators look Down Under as the gold standard of coffee excellence.”

According to Maurizio Marcocci, Managing Director of Service Sphere, one of the country’s leading coffee equipment and service providers, the contrast of Australia’s coffee habits compared to traditional coffee-drinking countries such as Italy has seen many manufacturers modify their equipment to the Australian market.

“In Australia we are lucky to have very good quality milk available nationally, which traditionally wasn’t the case in Italy. Therefore, in Italy milk-based beverages weren’t often on the menu, and when they were they were short six-ounce cappuccinos or caffè lattes,” he says.

“With a quality supply, Australia has been able to finesse its milk and now we have a population who largely favour milk-based drinks. However, this calls for equipment, specifically espresso machines, that can handle high volumes of milk steaming, and manufacturers have had to adapt equipment to cater to this demand.”

The home market here is also influential. Maurizio says brands use Australia as a

testing ground for new products.

“We have a very interesting market with a switched-on customer base. There are many coffee lovers in Australia with more than one coffee preparation apparatus in their home, who enjoy producing coffee in lots of different ways,” he says.

“I think that comes from our thriving café culture, which has been able to communicate and educate the population about quality and pass on a passion for the craft.”

This focus on community, connection, and education is what inspired the launch of Melbourne International Coffee Expo (MICE) in 2013. According to Sarah, it originated as a platform for Australia’s independent roasters to connect with national café operators.

“MICE was a destination to do business, create connections, network, and celebrate the fabric of our coffee community. It has since evolved as a global destination to connect buyers and sellers, and remains the largest dedicated coffee tradeshow in the Southern Hemisphere,” she says.

“MICE continues to be a showpiece for Australia’s coffee culture, and an annual celebration of the people, products and innovation that makes our industry so admired at a national and global level.”

The ever-evolving nature of the coffee industry means knowledge-sharing is one of the keys to success. As a long-time supporter of the event and a member of the MICE Advisory Board, for Maurizio education is where MICE attendees get the most value.

“I’ve been in the coffee industry for more than 25 years and I haven’t stopped learning,” he says.

“MICE is a hub for anyone in the sector, whether they’re baristas, decision makers, consumers, or café owners. It’s a space to ask questions, solve problems, and share skills. It’s also an opportunity to get together with the wider coffee community to talk coffee and see what can be achieved together.”

To quench the industry’s thirst for knowledge, in 2025 MICE is hosting its largest ever lineup of educational content. Panel discussions will take place every day of the event and will cover topics such as navigating menu pricing, how to

utilise social media, and the future of the coffee industry. There’ll also be a new demo stage where attendees can watch tutorials and talks to upskill and learn from some of the best in the industry.

“MICE2025 is shaping up to be the most value-driven expo to date. It’s not only a hub to celebrate coffee, but to empower the industry with knowledge that can help business owners and operators thrive and survive in this challenging market climate,” Sarah says.

“We’re excited to have the attention of the international market, to welcome new visitors, and re-energise the industry for a big year ahead.”

Huskee and MICE are teaming up to set a new benchmark in sustainability at this year’s event.

Very few names have managed to become synonymous with the concept of circularity. Yet, reusable cup brand

Huskee has done just that.

The company has carefully curated a range of reusable products with an ethos to make sustainability accessible to all. This includes its HuskeeOriginal range made from waste coffee husk, the HuskeeRenew range which is certified 50 per cent recycled plastic, and its latest HuskeeSteel range made from 91 per cent post-consumer recycled stainless steel. However, among the company’s hallmarks is its cup exchange program, HuskeeSwap,

which is designed to replace single-use by having customers present a used HuskeeCup to a café that will swap it for a clean one. This simple, opt-in ownership model offers additional benefits to BYO and can be seamlessly paired with order-ahead apps.

The company also has a solution for end-oflife cups.

“We offer different incentives depending on the customer – such as free cup replacements for sites in our HuskeeSwap program or wholesale credits for cups returned to us,” says Michael McFarlane, Huskee Head of Sales and Marketing.

To build on their service offerings, Huskee has addressed the two main barriers for reuse at scale: customers forgetting their cup, and cafés having to wash cups. In February 2025, Huskee’s new program Borrow will be launched, designed to make reuse even more convenient.

Borrow is an app-based model in which consumers download the Huskee app, borrow a cup from participating cafés, and have 14 days to return it. Cups can be returned either to the café or to one of the brand’s smart bins, which are placed in various locations such as cafés, corporate buildings, university campuses, and airport lounges. Huskee then collects the cups from the bins, washes them, and repacks them into reusable tubs for cafés to reorder.

“We call it a turnkey reusable program because we handle everything: the washing, collection, tech, and providing the cups,” says Michael.

And this year, Huskee is showcasing a culmination of years of sustainability experience at full scale at MICE. As a first for the tradeshow – and for any Australian events close to this scale – single-use cups will not be available as the Borrow program will be in full force.

“Borrow builds on our years of experience in the reusable space. After promoting BYO and the successful HuskeeSwap program – now with more than 1000 sites registered worldwide –Borrow aims to bring reuse to scale, with the goal of 100 per cent adoption and city-wide implementation,” says Michael.

“The goal is to replicate the single-use journey but with reusable cups,” says Michael. “For the consumer, it’s the same experience: order a drink in a cup, enjoy it, and then drop it in a bin. The difference is that with Borrow, it’s with a reusable cup and the process is tracked via the app.”

The café will order and receive boxes of washed cups, similar to how they would receive single-use cups. They unpack the cups, place them next to the POS, and they’re ready to go. There’s no hardware or additional technology required – everything runs

He adds that the reason the app is used in the Borrow program is to ensure there’s real value to the cup and to incentivise its return. Without holding the consumer accountable for returning the cup, Michael says the return rates wouldn’t be high enough because a reuse system requires a return rate of at least 95 per cent to be effective.

“If cups are simply handed out and not returned, it defeats the purpose of reuse and contributes to environmental waste – essentially flooding the world with plastic cups. We need the cups back to continue the cycle of reuse and our wash hub also helps remove any cups that have reached the end of their life, adding a quality control element,” he says.

For events, whether open or closed, Michael says the app is optional, but the cups can still be returned through smart bins or regular bins, where they’ll be

At MICE, consumers won’t need to download the app, since the event is closed with controlled entry.

“We’re partnering with MICE organisers to provide our cups to all exhibitors serving hot beverages. Attendees will receive their drinks in a Borrow cup and once they’re done, they’ll drop them in designated bins across the event grounds,” he says.

However, there will be incentives and rewards to the value of $750 for those

Michael says MICE is a rare opportunity for a diverse array of companies to come together, connect, and learn from each other, especially in terms of sustainability.

“There’s the ‘alt milk movement’, which highlights the growing trend in sustainable products. Espresso machine and coffee equipment manufacturers are also increasingly focused on creating more energy-efficient products, or at least equipment that doesn’t

“These are brand-new products, so many visitors will be seeing them for the first time,” says Michael. “This is a pivotal moment to showcase the power of circular economy and innovative solutions. By bringing our reusable coffee cup model to life, we’re not just setting a new standard for the coffee industry in Australia but inspiring others to embrace a more responsible future.”

Michael’s vision is to demonstrate elegant reuse at scale, inviting everyone to experience first-hand the efficiency of a circular system.

“As we expand our offerings,” he says, “we’re excited to share how Huskee is leading the way in forwardthinking solutions.”

BREWING CHANGE

CafeSmart on a successful year of fundraising, its growth curve, and what’s in store for its 15th anniversary.

Over its 14-year history, CafeSmart has grown from a grassroots campaign into a movement embraced and celebrated by the coffee industry across Australia.

What started as a simple idea to leverage the coffee industry for social good has evolved into a beloved fundraising event, supporting grassroots community partners dedicated to combating homelessness.

Led by Liz Bayrak, the non-profit organisation’s Community Campaign and Events Coordinator, the campaign has experienced a surge in popularity, fundraising, and community involvement.

The concept is simple: participating cafés donate $1 for every coffee sold during CafeSmart Week, which takes place in August.

The campaign takes advantage of Australia’s ingrained coffee culture to make a tangible difference in the lives of those experiencing homelessness. Most people are going to grab their morning coffee anyway, so why not contribute to a good cause while doing it?

But according to Liz, it’s not just about the money raised: it’s also about creating a community of people coming together for a common cause.

Since its inception in 2011, CafeSmart has raised a cumulative total of $2.2 million, with 2024’s efforts bringing in $210,000. Liz says the manpower behind this latest effort is just as impressive as the donations.

“2024 was incredible. We had 800 cafés participating, 50 roaster partners, and hundreds of thousands of coffee drinkers supporting the cause,” she says.

“The response from the coffee community was overwhelming. It really felt like there was a renewed energy around the campaign.”

These numbers are swelling each year as more cafés and roasters join the cause, with a 10 per cent increase in participation from the previous year.

“We had 80 more cafés join in 2024, which was amazing,” says Liz. “And we’re aiming even higher for 2025, with a goal to reach the 1000 café mark for our 15th anniversary.”

Participation is simple, according to Liz, with CafeSmart doing lots of the heavy lifting – cafés just need to show up ready to make a difference.

“It’s about making it easy for cafés to participate, and making sure everyone feels like they’re part of something bigger,” she says. “We send all marketing material to the venues, and they make the event their own.”

While CafeSmart started with a strong base in Melbourne, the initiative now spans across Australia with cafés in every state and territory joining the cause.

“We have some great regional involvement. It’s been fantastic to see all corners of the country getting behind the campaign,” says Liz.

“But our goal is to expand even further, especially in remote areas where community support can have such a profound impact.”

One of the standout features of CafeSmart is the support from roaster partners, who play a vital role in recruiting cafés to join the campaign. In 2024, brands such as Zest, Locale, and Seven Miles helped recruit their wholesale networks to significantly expand the campaign’s footprint.

“Our roasters help spread the word so we can reach so many cafés,” says Liz.

of homelessness. Liz and the team at StreetSmart, the organisation behind CafeSmart, are dedicated to directing funds where they are most needed, with a focus on supporting local communities through targeted assistance designed to make a meaningful impact.

“We always prioritise smaller, local grassroots charities,” says Liz. “Homelessness is a complex issue and each community faces different challenges. By keeping the funds local, we ensure they go directly to the organisations best positioned to support people in need.”

Across Australia, this means funds may support food relief services in some suburbs, while in other regions donations might go towards emergency housing or domestic violence services.

Liz adds these grassroots organisations often don’t receive government funding, so they rely heavily on community support.

While CafeSmart’s coffee-loving supporters are the backbone of the campaign, Liz says that collaboration is key to its continued success and wider reach.

“It’s about building relationships, whether with cafés, roasters, brands, or local charities,” she says.

In the lead-up to CafeSmart Week in 2024, the team had the help of partners such as Vitasoy and La Marzocco to pack hundreds of event packs, including posters, stickers, and other materials for the participating cafés.

During the campaign week itself, Liz says the energy is palpable.

“The social media buzz is crazy, with photos of cafés dressing up in yellow, putting up posters, and getting creative with their fundraising ideas,” she says.

Some cafés go the extra mile by hosting events such as bake sales, live music, or raffles to engage their customers. One of the most memorable moments for Liz in 2024 was a pop-up café event in collaboration with Golden Brown and La Marzocco in Melbourne, which included a DJ set, a raffle for a La Marzocco coffee machine, and an opportunity for the public to donate to the cause through coffees, paninis, and merch sales.

“StreetSmart is a small team based in Melbourne, so it’s amazing for us to

see involvement from a café in Western Australia or the Northern Territory,” says Liz.

“Our cafés send us messages, wishing us ‘good luck’, or thanking us for hosting the event. It’s happening all over the country and it’s fulfilling to know everyone is enjoying getting involved.”

At the conclusion of CafeSmart week 2024, regional Victorian café Allee Espresso raised more than $4500 and took top spot for its fundraising efforts.

“It’s amazing to see cafés like Allee really get behind the cause,” she says.

“They have built such a strong community and are the ones making it all happen on the ground.”

As CafeSmart prepares for its 15th anniversary in 2025, Liz and the team are already thinking about how the campaign can continue to grow and evolve.

“We want to keep pushing the envelope, collaborating with new partners, and reaching more people,” she says. “We’d love to do more events in major cities next year, especially pop-up cafés, to really amplify the campaign.

“It’s a fun, simple, and impactful way to make a difference. And, let’s be honest, we all love having an excuse to drink more coffee.”

“We’ve worked with the industry to curate an amazing schedule of engaging topics and themes we know baristas, café owners, roasters, and anyone in the industry are hungry for more information on,” says Lauren.

The Café Owners Education Series is designed to give café owners practical information that will help their businesses thrive. As part of the 2025 schedule, there will be discussions on menu curation, the rise of signature drinks, how to go viral on social media, the role of automation in the café, and so much more.

La Marzocco will also host sessions that discuss coffee as part of high performing teams, perfecting hospitality workflow, the importance of incorporating social responsibility into your business, and coffee traceability and sustainability.

“We know café owners are often so busy that they have little time to talk to people in the industry and find out how others are addressing problems such as rising coffee prices. MICE awards season has been revamped this year, with three new categories focused on the people who continue to evolve the industry and their communities.

For MICE2025, show organisers have introduced three new awards to celebrate outstanding individuals in the coffee and café sector. Professionals from across the industry have nominated their peers in three categories of the inaugural Coffee Industry Heroes awards: Community Champion, Lifetime Achievement, and Next-Gen Talent.

Lauren Chartres, MICE Show Director, says the new awards are a way to celebrate everyone who contributes to the coffee industry – from marketing and sales to baristas and roasters –because each role is vital to its success.

“The Coffee Industry Heroes awards are an opportunity to recognise the passion, dedication, and innovation that drive the industry forward,” she says.

In a people’s choice style, nominations were submitted through the MICE website, with entries closing on 14 February. An independent judging panel was selected to decide the Coffee Industry Heroes, with the winners to be announced at the Official MICE AfterParty on Saturday March 22.

“We’re thrilled to see such strong participation in the nominations process, and it’s exciting to recognise the incredible individuals who make a real impact in the coffee industry,” says Lauren

“We created the MICE Community Champion Award to recognise the unsung heroes who make a real difference in their communities,” says Lauren.

“It’s so important to celebrate those who use their position in the coffee industry to give back, inspire others, and drive positive social change – reminding us all that success is about more than just business.”

LIFETIME ACHIEVEMENT

The Lifetime Achievement award recognises an individual who has been a part of the coffee and café industry for more than 20 years and has made positive contributions towards the Australian and/or global coffee market. The recipient’s long-serving career will be honoured for championing growth, innovation, and serving the coffee community.

“These heroes have shaped the coffee industry over decades with their dedication and vision,” says Lauren. “They have not only helped grow the industry but have also paved the way for future generations of coffee professionals.”

NEXT-GEN TALENT

The Next-Gen Talent award recognises an individual in the coffee and café industry under 30 years of age, who exudes passion for their craft and has made a significant contribution to the business they are part of. This could be via financial growth, successful social media campaigns, positive client feedback, product innovation, implementation of new technology, and/ or a positive influence on their peers.

“These individuals bring fresh ideas, passion, and innovation, and are making a lasting impact on their businesses and the industry as a whole,” says Lauren. Alongside the fresh accolades,

MICE2025 will also feature the popular Product Innovation Awards, which highlights boundary-pushing products or services, and Australia’s Favourite Coffee, which puts the power of judging in the hands of the public.

PRODUCT INNOVATION AWARDS

The Product Innovation Awards recognise the best innovations from exhibitors at MICE2025 and offer the chance for exhibitors to showcase their newest products to the wide-ranging MICE audience. The award celebrates products that have stretched the boundaries of what currently exists on the global coffee market, or provided an upgrade or updated service to the industry.

REINVENTING THE WORKFORCE

Barista Group introduces new technology it believes will provide a solution to current labour shortages and help café owners retain skilled staff.

Joe Chalhoub is a problem solver. As the Founder of Barista Group, one of Australia’s leading café equipment suppliers, he loves nothing more than finding solutions to the issues café owners experience every day – whether they’re technical hurdles, streamlining workflow, or finding the best-looking piece of kit.

Joe says the economic pressures of rising coffee prices and the persistent shortage of skilled staff are creating a tough environment for café owners.

Each unit independently delivers its contents to a singular spout through a dedicated tube to eliminate any risk of cross-contamination.

“The beauty of the product is that the café can start with just the one module, and then add more as and when they are ready to expand their menu. Most people choose to start with two or three so they can offer two different milks alongside something like cold brew,” says Joe.

The under-bar concept ensures most of the machine is hidden from the customer’s view, freeing up space for baristas to prepare other drinks. While the minimalist unit looks slick as part of a coffee shop’s aesthetic, for Joe the most valuable thing the Übermilk Plus delivers is time.

“It’s a fantastic tool to speed up workflow as the user only has to press a button, rather than standing around while the milk

staff as it’s very simple to use,” he says. The flexibility of the machine also enables café owners and managers to update their menu seasonally. The modules for chilled liquids can hold a whole spectrum of readyto-pour options, from signature drinks and iced teas to chilled chocolate and specialty cold brew.

With the Übermilk Plus, Joe says café owners can give their customers more choice without needing to invest in multiple pieces of equipment. An automated internal cleaning system makes switching up the menu easy and ensures there’s no risk of cross contamination. It also ticks off another job on the barista’s end-of-day checklist.

In a country where espresso is king, one filter coffee machine brand is going against the grain.

Australia is a nation of espressobased coffee drinkers, with filter coffee often overlooked. Yet, Dutch machine specialist Moccamaster believes it can shift the opinion of the nation.

The established brand has created a filter coffee machine that incorporates a minimalist design while still prioritising consistency and precision. Moccamaster Australia Director Josephine McKayEngdahl says the machines are built for coffee lovers who appreciate the finer details, as it is designed to extract the full flavour potential of each bean.

According to Josephine, what sets this machine apart isn’t just its sleek design or accurate brewing capabilities but the philosophy behind it. With a design that’s remained mostly unchanged since its prototype in 1968, the machines stand the test of time and are still hand-built in the Netherlands.

“Founder Gerard Clement Smit said he wanted to create a coffee machine that would be the last one anyone would ever need to buy,” she says.

“It brews at the correct temperature and uses a copper element – finer details that ensure optimal flavour extraction without the risks of wear and tear that come with some tech-heavy machines. It’s simple, but ingenious. There are no moving parts, electronics, or screens that can deteriorate. The design is durable and timeless.”

Moccamaster made its Australian and New Zealand debuts in 2010, around the time when specialty coffee culture was burgeoning. This, according to Josephine, set the stage for the rise of alternative brewing methods.

“The beauty with filter coffee is that

it lets you taste the true essence of the coffee bean, especially in single-origin brews,” she says.

Josephine says the Moccamaster celebrates each cup, allowing coffee enthusiasts to appreciate the nuances of high-quality beans. She believes the Moccamaster is an asset to any café’s portfolio, especially those that offer single-origin coffees.

Alongside its well-known domestic range, the company produces larger commercial brewers, such as the 1.8-litre-capacity Thermoserve and the CDT Grand.

The Thermoserve has a capacity of 144 cups per hour while the CDT Grand can brew 1.8-litres in eight minutes, making the machines ideal for fastpaced environments.

Dissatisfied with the coffee options available, Leihn invested in a roaster and dedicated himself to creating the ideal brew. After ten months of meticulous experimentation, Leihn perfected and released the roaster’s first product – the Saturday Light Roast: SingleOrigin Aussie.
