recognition program. We’ve packed the supplement with mouthwatering recipes and must-try cooking tips, not only from these five culinary rock stars but also top Oceania chefs, including renowned French chef Jacques Pépin, Oceania’s executive culinary director. For example, we give you recipes for Carpenter’s Sambuca-Glazed Chilean Sea Bass and Jacques’ Roasted Chicken, Pépin’s signature dish. As the ClubCorp Chef of the Year, Carpenter will be on board the 1,250-passenger Oceania Marina for a seven-day Monte Carlo to Barcelona cruise, Nov. 9-16, along with members of ClubCorp clubs. He’ll be co-teaching a cooking class and spending time with passengers at a cocktail reception, on an excursion to one of Europe’s colorful food markets, and at mealtimes. Like Carpenter, is your club’s executive chef a rock star? If so, you’ll soon be able to put his or her name in the running for the 2018 Chef of the Year. ClubCorp will be accepting nominations from Oct. 1 to Nov. 5. For details on how to give your chef a much-deserved shoutout, turn to page 23. You can join the winning chef next year on a 16-day Oceania cruise from Montreal to Miami, departing Oct. 30, 2019. — DON NICHOLS don.nichols@clubcorp.com

ust as i settle into my racer, the track monitor hands me my safety helmet to put on. I take off my glasses to fit it over my head, then realize the helmet fits so snugly that I can’t put my glasses back on. Slightly panicked, I quickly alert the monitor. Looking unsure how to respond, he asks if I can see to race without them. My vision’s not the best, but there’s no way I’m missing this chance to hit the track in this speedster, so I tell him, “Sure, I’ll be fine.” I grip the steering wheel nervously and, 30 seconds later, I’m speeding down straightaways and navigating hairpin twists and turns, thrilled to be having my Jeff Gordon moment. Well, sort of. I’m not in any high-speed NASCAR race, but rather I’m zooming around a two-level, 1,000-foot-long track in an electric go-kart that tops out at 30 mph. I’m not on terra firma, either; I’m atop the new Norwegian Bliss, the 4,004-passenger ship that Norwegian Cruise Line officially launched in June. Although it has a similar track on its China-based Norwegian Joy, NCL touts the Bliss speedway as the first one on a North American-based ship — and the longest on any ocean liner. This new beauty, the third vessel in NCL’s Breakaway Plus Class, comes with an impressive bevy of restaurants and bars, a spa, a casino, and other exciting activities that impress, but I’ll most remember channeling my inner speed demon at sea. No matter I finished dead last in my race; I chalk that up to my slightly impaired vision. 866-234-7350; ncl.com FA L L 2018
The Bliss comes with other NCL don’t-miss firsts, including … 1 A visually striking Observation Lounge offering 3,500 square feet of floor-to-ceiling windows delivering awesome 180-degree views, NCL’s most expansive at sea. 1 The Horizon Lounge, a similar two-level hideaway in the Haven, NCL’s premium hotel-within-a-hotel concept. 1 An open-air laser tag course in a setting designed to look like an abandoned space station. 1 Q, a Texas smokehouse, serving barbecue and a mustorder banana pudding made from the time-tested recipe of the aunt of an NCL executive with deep Texas roots. Wear your boots because the restaurant turns into a lively Western club after dinner with live music and boot-scootin’ on the dance floor. 1 A-List Bar (named after NCL’s president and CEO Andy Stuart), serving premium spirits, handcrafted margaritas, and more. Laos Goes Luxe A DA M H. G R A H A M
the relaxed laotian cultural capital of Luang Prabang, on the banks of the Mekong River, teems with centuries-old temples. Now its lodging options are quickly multiplying with the recent opening of these three luxury properties packed with charm.
1
AVANI+ LUANG PRABANG. Avani unveiled its major rebranding of Aman founder Adrian Zecha’s short-lived Azerai Hotel in March. The refurbed property, which retains a few of Zecha’s minimalist touches, occupies a classic French-colonial building on the most convenient corner in town. Fifty-three compact rooms bathed in neutral batik textiles and warm local woods overlook an 80-foot-long courtyard pool shaded by banyan trees. From $200. 844-646-6724; avanihotels.com
2
PULLMAN LUANG PRABANG. A short boat ride from the Pha Tad Ke Botanical Garden, this hotel debuted in June with 123 rooms housed in villas that pay homage to Laos’ steep-pitched temple roofs. The villas come with modernist wicker furniture and spacious terraces overlooking a palm-tree-spiked rice paddy and three outdoor pools. From $135. pullmanluangprabang.com
3
ROSEWOOD LUANG PRABANG. This 23-room, serene getaway in a hilltop forest just 3 miles from town center opened in March. Pool villas feature hand-painted walls and tiled plunge pools overlooking a gushing ferndraped stream, while secluded riverside villas (right) come with king-size beds and balconies with oversize daybeds. If you’re a thrillseeker, timber-legged luxury tents, a first for Rosewood, are draped in indigenous Hmong textiles and art and perched in the treetops, offering up views of the Luang Prabang mountain range. Grocery Shop, Laotian Style Luang Prabang overflows with excellent restaurants, but head to the bustling (and, yes, sometimes eyebrowraising) Morning Market to really get to know Laotian food. You’ll find everything from locally grown coffee beans to crispy, charcoal-grilled bee larvae and edible rats. Open daily from dawn to noon, the relaxed, tidy street market — just steps away from the Mekong riverbank — runs for about four blocks along two lanes forming a T-junction in the city’s gridlike center. Many vendors come by boat with fresh produce from their farms and foraged seasonal specialties from mountain jungles. I quickly learn how early the action starts. I arrive at 8 to score white termite mushrooms, available in rainy season, only to learn they’d already sold out. I see dozens of vendors, mostly women, crouching over bamboo mats arranged neatly with stacks of dusky, rose-colored banana flowers (right), piles of green chilies, pyramids of limes and pomelos, and perfectly combed bunches of riverweeds, edible flowers, and fragrant grasses. Giant sacks spill over with rice and violetblushing eggplants the size of pingpong balls, while smaller wicker baskets — always worth peeking into — brim with silky river fish, dried frogs, and the live larvae of wasps and scarab beetles. I walk past bouquets of small crabs strung together with dried grasses, strips of dried water buffalo skin, and chickens either live in basket-cages or freshly killed and plucked. An elderly woman missing her two front teeth chuckles when I cringe after eyeing a dead 3-footlong monitor lizard stuffed into her bucket. Thankfully, a few vendors sell more approachable prepared food. Fermented pork sausages stuffed with sticky rice, lemongrass, and galangal sizzle on several grills. At Khao Bun Nang Ou, where tables spill onto a makeshift patio, locals slurp down bowls of khao soi, a Luang Prabang specialty made with rice noodles fried in scarlet red curry and floating in pholike broth topped with minced pork. As I wander the market, I see zero tourists, and locals greet me with smiles and cheery sa bai dees, the oft-heard Laotian greeting. Unlike other markets in Asia, there’s no hustling and bargaining isn’t commonplace, making exchanges straightforward and honest. The only trouble you’ll have? Mustering up the courage to try some of the dishes. — A.H.G.

Three dough geniuses recently debuted next-level pizza spots that do pies right — crisp and chewy with perfectly charred edges BY

JEN MURPHY
Perfect Union Pizza Co. Chef Nick Badovinus, founder of Fireside Pies, the local chain that raised the bar for Dallas pizza, is behind this artisanal pie spot. Artist-designed skateboard decks, an American flag, and a vintage Ducati motorcycle give the white-tiled interiors a rock ’n’ roll vibe. Badovinus divides the menu equally between red and white pies. Oven: A deck oven fired at 700 degrees bakes pies for about three minutes. Crust: Dough punched twice, fermented for 24 hours, and dusted with semolina is the secret behind the crackly, blistered thin crust. Pie to try: Jonny Slapps, a white pie with guanciale, broken egg, and pea tendril Side order: Meatball and garlic knot slider Details: 214-559-4245; perfectunionpizzaco.com New York City

Folk James Beard–nominated chef Philip Krajeck launched this pizza-centric restaurant as the follow-up to his Italian-influenced Rolf and Daughters. He serves up pizzas with veggie-focused seasonal sides and natural wines. Oven: Two wood-fired brick ovens from Sonoma-based Mugnaini reach up to 900 degrees and cook pies in about 90 seconds. Crust: Naturally leavened dough (i.e. flour, water, and indigenous wild yeast) is a mix of organic Lindley Mills and Carolina Ground flour, milled in small batches. Pie to try: Krajeck’s salad pie, an ode to seasonal produce, features piles of flavorful herbs, lettuces, and flowers. Side order: Radishes spritzed with sauvignon blanc and served with a sea lettuce-dusted mascarpone-and-butter blend Details: 615-610-2595; goodasfolk.com 12

Anthony Mangieri’s pizzas are about as close to Neapolitanstyle nirvana as you can get stateside. So when he returned to New York City this spring, even Manhattan’s most die-hard pizza snobs rejoiced. Unlike his three successive and now shuttered locations in New Margherita Jersey, New York’s East Village, and San Francisco, his fourth pizzeria offers small plates and desserts courtesy of chef-partners Fabiàn von Hauske Valtierra and Jeremiah Stone, co-owners of Manhattan restaurants Contra and Wildair. Oven: Handcrafted Acunto ovens can be found in Naples’ most legendary pizzerias. Wood-fired to about 900 degrees, pizzas cook uniformly in about 90 seconds. Crust: Naturally leavened, double-zero-flour dough makes for a perfectly chewy, tender, charred crust. Pie to try: Mangieri is a master of minimalism; his Margherita would hold its own in Naples. Side order: Chickpeas and lobster crudo Details: 646-692-3475; unapizza.com

Rome’s ubiquitous pizza al taglio (“pizza by the cut”) — defined by its airy dough, rectangular shape, and cracker-crisp crust — has invaded America. At pizzaiolo Gabriele Bonci’s Pizzarium in Rome, the pies are so magical that Bonci has been called “the Michelangelo of dough.” In June 2017, he opened his first eponymous pizzeria outside of Italy in Chicago’s West Loop (312-2434016; bonciusa.com). Just as in Rome, staffers slice them with scissors and price them by the pound. With the restaurant an instant sensation, he followed up with a second, larger Bonci (872-829-3144; bonciusa.com) in Wicker Park in April. The al taglio trend has also popped up on the coasts. In March, highly respected Italian pizzaiolo Angelo Iezzi opened PQR (pqr-nyc.com) on New York City’s Upper East Side in collaboration with Fabio Casella, owner of local pizzeria San Matteo. At PQR, a casual, counter-service space, Iezzi uses a higher water content and longer fermentation time for his dough, yielding ethereal squares with fewer carbs and more protein than a standard pizza. In LA, bread queen Nancy Silverton and longtime collaborator chef Matt Molina have been selling seasonal, scissor-cut slices by the ounce at Triple Beam Pizza (323-545-3534; triplebeampizza.com) since February. The Highland Park spot has plenty of vegan and vegetarianfriendly pies. — J.M.
Puck’s Classic Lives On
A
t josé andrés’ new restaurant in the Bahamas called Fish, at the Cove at Atlantis, Paradise Island resort, the celebrity chef features an unusual menu item: lionfish, the spiny, invasive species causing severe damage to the island nation’s coral reefs. By rallying with the Atlantis Blue Project Foundation — the resort’s nonprofit that supports marine conservation challenges — Andrés hopes he can make a difference. He’s donating a portion of his lionfish sales to the foundation. Wearing his chef’s coat over bright orange swim trunks and Birkenstocks, he sat down to talk lionfish with writer Kelsey Ogletree just hours before Fish’s opening in April. Q: Why serve lionfish? A: If you’re able to convince people to catch lionfish and ensure they make a living doing so, you’ve got an item that adds a sophisticated touch to the menu, and at the same time you combat a pest. Q: With all of their spines, lionfish are scary-looking. How do you convince people they’re safe to eat? A: When preparing this fish, you must be careful of its many venomous spines. We use kitchen shears and heavy-duty scissors, and we wear gloves. I’m sure one day lionfish will be a standard. Q: What makes lionfish taste so good? A: A lionfish has light, flaky white flesh, so it’s perfect for many different uses, kind of like snapper. We prepare it simply, just fried with our cornmeal batter and served with herb oil and tartar sauce. We serve the fillets alongside the fried spine [the backbone] and head so you can enjoy the whole thing. The fillets are flaky and buttery. We fry the spine twice so it gets extra crunchy — it’s so good!
It’s brash for an Austrian chef to reimagine one of Italy’s most beloved foods. But in 1982, Wolfgang Puck debuted a smoked salmon pizza with caviar at his original LA Spago to instant acclaim. The now iconic dish served at Oscars after-parties remains as popular as ever, with Las Vegas as proof. At his new Spago at Bellagio Resort & Casino — after a 25-year-run, Puck closed the original Vegas outpost at the Forum Shops earlier this year — the chef added wood-fired, marketinspired pizzas such as prosciutto, fig, burrata, and arugula as menu exclusives, but he says the signature decadent pie still holds its own on the Strip. 3600 Las Vegas Blvd. S.; 702-693-8181; wolfgangpuck.com — J.M. Two hotels in one, this waterfront development has a split personality. The 188-room Douglas, a design-forward Autograph Collection property, has a quirky feel, from its glowing-log check-in counter to its rustic-chic rooms. The 329-room JW Marriott presents a relaxing, familiar retreat with all the upscale JW touches seen worldwide, including rooms with plush furnishings and soft colors.
You’ll feel like you checked into a hip, urban Airbnb or a local boutique property even though you’re in a 404-room, 28-story high-rise. We especially like the lobby’s “living wall” of vines behind the check-in counter, which helps create a calm, welcoming oasis from the start of your stay. Bright and cheery rooms are filled with fresh, modern furniture and decorated with custom travel photographs as dazzling as the stunning views of the waterfront and Toronto skyline.
EATS
Eight restaurants and lounges take you globetrotting, but for a feast fit for a medieval king, try the Victor steakhouse and seafood bar. Start with Quebec foie gras and king salmon tartare, graze on oyster platters and decadent mac and cheese waffles, then cut into its signature shared entree, a 50-ounce Tomahawk Angus reserve steak on the bone.
Nobody goes hungry here, with seven separate spots to get food and drink, from fine dining to an express café. Be sure to grab a meal at Maxx’s Kitchen, with floor-toceiling lakeview windows. Bite into comfort food, such as fresh fish and chips, or go more upscale with East Coast salmon in pea puree with a fennel slaw.
AFTER HOURS
The Parq boasts several high-spirited bars, but the Douglas’ D/6 Bar & Lounge has become a prime Vancouver hot spot. Imbibe a Douglas Fir, with pine-needle infused local gin, or sneak behind a bookcase’s hidden door to enjoy the signature Parq Mule (a vodka, ginger beer, and apple spice concoction) in a private room.
Drink in the views over the sparkling lights of the Toronto skyline as you sit windowside at the Perch lounge on the 28th floor and sip its signature Falcon Goddess gin-and-juice cocktail.
MARQUEE ATTRACTION
BILL FINK
Vancouver meets Vegas in the 72,000-square-foot, two-level casino. The popular baccarat tables, adjacent tea lounge, and Mrkt East Asian streetfood café show Vancouver’s Asian influence, while the poutine, Montreal smoked meats, and televised hockey games at the BC Kitchen remind you you’re still in Canada.
The “Ten X Toronto” fitness center, a 90,000-squarefoot indoor complex, is a destination within itself: four indoor tennis courts (with city views and a 50-foot ceiling), nine glass-backed squash courts, four fitness studios for classes, a rooftop pool, a golf simulator, an exercise room with enough equipment to turn you into an Olympian — and more.

Vantage Points
Aston Martin upgrade will make you drool BY
M I C H A E L F R AN K
W
Lighter equals better: The Vantage’s lighter weight comes not just from the carbon fiber and aluminum used to make the body but also an all-aluminum substructure composed of pressed panels that are bonded together rather than cast, explains chief engineer Matt Becker. This technique borrowed from stateof-the-art aircraft manufacturing results in an ultrarigid car that at 3,373 pounds is 298 pounds lighter than the Porsche Turbo. Becker says you can always make a car faster with more horsepower, “but the magic of low weight is something a lot more playful.”
Athletic, not fierce: We found the new Vantage perfectly balanced, even with its capability for speed on the road or the track. One of Aston’s core DNA principles, Becker says, is that “you don’t have to make a car uncomfortable to make it handle well.” Indeed. While the Vantage was never meant to be the most extreme Aston, we found it can certainly romp but, as Becker says, “won’t muss your hair too much.” Geared your way: You can get one now with an eight-speed paddle-shift transmission, or you can pre-order and wait a year or more for a manual gearbox. Why get the manual? It’s more involving, and with manual gearboxes heading toward extinction, it will increase your investment’s value, since scarcity factors into collectibility. On the other hand, the paddle-shift has an automatic mode, so it’s easier in traffic. Details: From $153,081; astonmartin.com
DOMINIC FRASER
ith the highly anticipated release of the 2019 Aston Martin Vantage, the British manufacturer as synonymous with James Bond as a shaken, not stirred martini unveils a rear-wheel-drive, two-seat super sports car rivaled only by the likes of the Porsche GT3 or, indeed, the more expensive Porsche Turbo S. For the Vantage’s first upgrade in more than a decade, engineers have finely tuned the suspension and used carbon fiber and aluminum to craft a rigid, low-weight body that feels playful and nimble even at around-town speeds. That’s in stark contrast to many of its peers that can feel comatose unless you’re driving them on a racetrack (or driving so fast you’re risking arrest). Read on for a few more reasons the new Vantage could be your next supercar crush.
Reliable engine: Niche brands frequently try to build their own engines, an expensive process that can create headaches when a car needs repairs. But in exchange for a small investment stake by Mercedes-Benz, Aston Martin instead procures its from Mercedes’ performance AMG division. Chief benefit: a worldclass, extremely reliable 4.0-liter V-8 spitting out 503 horsepower and capable of propelling the car to 60 mph in 3.5 seconds and 195 mph top speed.
Civilized sound: Although inheriting an engine from Mercedes assures reliability, Becker says Aston had to make sure the car still had its own distinct sound. “Their sound is thumpy and deep. So we tuned ours to reduce that low growl, with more mid-tone.” He says the car already looks visually arresting enough; customers don’t need to shake up the neighbors every time they pull out of the driveway.

A new links layout in China? Where to play it. BY

swath of land along the fringes of sprawling Shanghai has taken on a wispy Scottish look. You notice the resemblance the instant you lay eyes on Yangtze Dunes, a newly renovated course at the 36-hole Lanhai International Country Club that takes golf design in China in a fresh direction. Where most mainland layouts are patterned on the posh, modern country club model — lush emerald turf, man-made water hazards, and fleets of golf carts — this one cuts the profile of a roughhewn throwback links. Designed by Australia-based Ogilvy, Clayton, Cocking & Mead, Yangtze Dunes’ holes buck and roll over a rumpled dunes-scape shaped with sand from the Yangtze River delta. Unruly native grasses line the fairways, which are firm and browned in patches, touches that Tom Morris would Hole No. 11 appreciate. No cart paths thread the course because it’s walking-only, a rarity in China that not everyone embraces. “A couple of people have complained because they’re so used to riding,” says Jay Porter, Lanhai general manager. “But our members love it because it’s unlike anything in Shanghai, or anything in China, frankly.” The convention-bucking Dunes course covers the old footprint of one of Lanhai’s two original tracks. Its sibling course, the Woodlands, remains unchanged, offering a scenic but familiar golf experience.

I’m hitting ball after ball with a 7-iron from one of two instructional bays at the Golf Learning Center at Casa de Campo Resort & Villas, which opened in May on the Dominican Republic’s southeast coast. I’m focused only on my feet — specifically, where my weight is positioned and how it transfers forward, back, and from side to side during the swing. Between 70 and 80 percent of my weight should be on my left side at the point of impact, explains Eric Lillibridge, Casa de Campo’s head teaching professional, yet almost 40 percent remains behind the ball, much of it in my right foot’s heel. I know this because I’m standing on a wireless Boditrak mat that measures where a golfer exerts pressure on the ground and how that pressure changes during the swing. The learning center was developed through a partnership with renowned PGA instructor Charlie Epps, who serves as the center’s executive director and plans to spend more than half his time teaching there. Besides Boditrak, the facility features TrackMan software and two ToughLie 360 units — angled, octagon-shaped hitting stations in which golfers can replicate the awkward shots they’ll face on the resort’s three Pete Dyedesigned courses. 855-580-4814; casadecampo.com.do

Celebrating African Art BY
R O B I N C H E R RY

n cape town, south africa, the Zeitz Museum of Contemporary Art Africa (MOCAA) opened to international fanfare last September. Now, yet another new museum ratchets up the city’s growing reputation as an arts center: In the Steenberg area, adjacent to Table Mountain National Park, the Norval Foundation art museum opened in April showcasing the Homestead Collection, contemporary African works owned by property magnate Louis Norval and his family. What you’ll see: Norval has been collecting art for more than two decades and owns the entire Bruce Campbell Smith Collection (more than 450 works by emerging modern black artists from the 1920s to the present), as well as the archives of groundbreaking artists such as painter Alexis Preller. The museum also features works by Gerard Sekoto, considered the pioneer of urban black art; sculptor Edoardo Villa; and the Amadlozi Group, a multiracial collective that developed a uniquely African modernism influenced by indigenous cultures. The foundation will not have a permanent display but will host two major exhibitions and four to six smaller shows each year featuring pieces from both Norval’s collection and other collectors.
ON VIEW: See the granite and steel Holderbestolder by Angus Taylor in the Norval sculpture garden.
Khanyisile Mbongwa. An award-winning performance and installation artist, Mbongwa is known for championing provocative dance, music, and performative installations that explore South Africa’s sociopolitical and socioeconomic landscape. Environmental consciousness: Architects designed the 130,000-square-foot building to limit its environmental impact, a Norval passion. More than 150 rooftop solar panels power the building and a grey-water purification system limits the museum’s reliance on municipal water, important in a city with water concerns. The surrounding wetlands are breeding grounds for the endangered Western leopard toad, so tunnels built under the road the museum fronts ensure they can access the land. A museum for all: To help make the art accessible to everyone, the foundation charges no admission fee on Mondays, and admits children under 18 free daily. At mealtime: The Skotnes Restaurant, named for artist and teacher Cecil Skotnes, serves classical South African cuisine made with ingredients from local, small-batch producers. Try the grilled calamari served with chakalaka, a spicy vegetable relish. norvalfoundation.org
Outdoor display: Art and nature complement each other in a 10-acre sculpture garden surrounded by mountains and indigenous flora. Performance art: Unlike many private museums, the foundation also focuses on performance art and hired a performance art curator,
Pacific Northwest Must-See In Seattle, the Nordic Museum has reopened in a handsome $50 million building in Ballard, the neighborhood where many Scandinavian immigrants settled after they started arriving in the 1890s. The 57,000-square-foot museum covers 12,000 years of Nordic history and culture and will captivate you with its exhibits and wide array of artifacts, including an intricately carved bridal chest from Denmark (circa 1644) and a two-man dory used for halibut fishing in Puget Sound in the early 1900s. 206-789-5707; nordicmuseum.org — D.N. 22

The Truth About Lies
Experts’ top secrets for getting out of uneven situations on the course BY
T O M M AC K I N
A
PLAY IT AS IT LIES: Dustin Johnson hits confidently from a downhill lie.
MATT SULLIVAN/GETTY IMAGES
ll lies are not created equal, especially on the golf course. Some are perfectly reasonable — others, not so much. The ball could be above or below your feet. Or it could be sitting on a downhill or uphill lie. These situations affect the stance you take and the swing you make. If not handled properly, each lie can also adversely impact the shot’s result. “No matter what level of golf, when you walk up to a lie, you need to have a checklist of what to do,” says instructor Allen Terrell, who works with World No. 1 golfer Dustin Johnson. “You shouldn’t be trying to figure it out for the first time when you have that situation. Executing the shot is a different matter. But having that checklist in mind will make you much more successful.” On the next pages, Terrell and other golf professionals share their secrets for handling specific lies so you can devise your own checklist and better prepare yourself for each circumstance.
For some, it’s sitting down to the first five-star dinner of the trip, and being transported by the rich, unexpected flavors awaiting you. For others, it’s sailing into an exotic, remote port without another ship in sight. And for you, it’s the little things. Discover your moment.

/The Game/ DOWNHILL LIE Instructor Laird Small: Director of instruction at Pebble Beach Golf Academy in Pebble Beach, Calif., Small has been on Golf Magazine’s Top 100 Teachers list since 1996. His students have included professional golfers Tom Kite and Kirk Triplett, as well as A-listers Warren Buffett, Bill Gates, Oprah Winfrey, and Steve Young.
“With this lie you have to realize the ground comes sooner during the swing. To execute the shot, tilt your shoulders to match the ground’s downhill slope. For a right-handed golfer, the left shoulder should be lower than the right shoulder. That creates a new ‘bottom’ to the swing. Take some practice swings to see where the club touches the ground — that is your new low point for this lie. Most amateurs don’t position the ball in that spot; they mistakenly place it in their normal ball position. The ball tends to fly lower and farther from this lie due to a flatter trajectory. So a 7-iron acts more like a 6-iron. A hybrid can add elevation and work well from this lie. Aim more to the left because the clubface will likely stay open in this swing.”
KEY TIP: “Take a little more club because an uphill lie adds loft to any club you choose.”
KEY TIP: “Place more weight on your lead leg. Doing so will feel awkward, but that’s OK. Take a threequarter swing and try to remain in balance.”
Instructor David Champagne: Named 2017 Golf Professional of the Year for the Northern Ohio PGA Section, Champagne is director of golf at Firestone Country Club in Akron, Ohio. He has qualified for six PGA Professional Championships.

“Play the ball more forward in your stance than normal. Position your shoulders parallel to the slope of the ground. I see a lot of amateurs make the mistake of taking their normal stance, which creates a digging motion that you do not want. With an uphill lie, it’s harder for your weight to transfer to the front side due to gravity, which often results in swinging more with just your hands and arms. That means the clubface will close at a faster rate, usually making the ball move to the left. To help prevent that, align yourself slightly right of your target. The uphill lie will also produce a higher ball flight taking more club, and a less-thanfull swing will reduce that height to a degree. The trajectory and spin of the ball is reduced if you have this lie in the rough, but having your stance and shoulders parallel to the slope of the ground will promote cleaner contact in that situation.”

UPHILL LIE
KEY TIP: “No matter your height, your weight should be balanced midfoot.”
BALL BELOW YOUR FEET Instructor Allen Terrell: Director of coaching at the Dustin Johnson Golf School at the Tournament Players Club in Murrells Inlet, S.C., Terrell works with Johnson, whom he recruited and coached at Coastal Carolina University. Terrell has coached more than a dozen players on the PGA and European Tours to more than 15 victories.
AIM TARGET
“This is a difficult shot for pros and amateurs alike. Don’t try to fight this lie. Amateurs get into trouble when they try to hit it straight from this lie. The ball will likely come out low and to the right. Aim a bit left of the target and move the ball slightly back of middle in your stance. Doing those two things gives you a better chance of a proper strike if you lose your posture during the swing. Also, get lower in your stance at address by bending your knees and/or hips. Taller players like Dustin Johnson may have to bend more than shorter players. Because you really need to control your balance from this lie, take a three-quarter swing and use more club since the ball won’t stay in the air as long as usual. If you have this lie in the rough, shift more weight to your front foot to create a steeper angle of attack. Doing so helps you hit more ball first rather than grass.”
KEY TIP: “You really need to limit your lateral motion with this lie, so don’t shift way back on to your right side during the swing. Stay over the ball.”
AIM
TARGET
DAVID CANNON/GETTY IMAGES (OLSON)
BALL ABOVE YOUR FEET Player Amy Olson: A member of the LPGA Tour since 2013, Olson has earned two top-10 finishes this year. As an amateur, she won the 2009 U.S. Girls’ Junior and played on the 2012 USA Curtis Cup team. She is also the winningest female golfer in NCAA history, capturing 20 titles while playing for North Dakota State University.
“I always choke down on the club, sometimes all the way to the shaft, depending upon the severity of this lie. People usually grab the club first, use their normal grip, and then set up to the ball. Instead, you should set the club down, get into your stance, and then grip the club. I leave the ball in the middle of my stance. Bend your knees and feel your weight between midfoot and the balls of your feet and keep it there. Do not go back onto your heels. Work with the slope of the ground by swinging in-to-out. With this lie, hitting from the rough will turn over the clubface and make the ball go even more left, so adjust by aiming farther right.”

, Puebla Mexico Discover this charming baroque beauty south of the border — a well-kept secret among Americans until now
needing a snack, I’ve rambled over to Calle de los Dulces (Candy Street), a fantasia of delight that stretches across several blocks of the five-centuriesold, UNESCO-listed historic district of Puebla, Mexico. Fringed by age-old, brightly colored buildings, this street draws hungry tourists and locals (called Poblanos) alike in a search for sugary sustenance. As I walk, I’m challenged to choose between shops, each tiny and old-fashioned, each immaculate and curated. Offering dessert specialties from sombrero-shaped confectionery to camotes (candied yams) to Tortitas Santa Clara (a frosted cookie), the stores present their goods in displays that often artistically incorporate Puebla’s famous Talavera pottery. When I do choose a shop, I buy the frosted cookies, which the saleswoman wraps in shiny, white paper, tying them with a blue ribbon, the resulting color combination mimicking both the pottery the store sells and the cobalt and snow-white facades of Puebla’s many Talaveraflanked buildings. The vendor tells me all her baked goods come from bygone recipes, most developed by the nuns who inhabited the city’s variety of convents in former times. “Cooking was like a prayer for them,” she says. One taste of a cookie, powdery and sweet, and I feel the invocation from long, long ago. I spent my summers in Puebla as a child. My grandfather, a peripatetic, bohemian ex-pat, lived here, married to a woman my brother and I called “the aging flamenco dancer,” a gorgeous Poblana who seemed as ornate as the baroque buildings emblematic of Puebla’s distinctive downtown. My memories, snapshots, awaken as I explore the cobbled streets now as an adult. Passing the old market, I remember sneaking away to it with cousins to consume street food, something my parents forbade me to do, worried I might get sick, which I did. Although my childhood introduced me to Mexico’s fourthlargest city (population: 2 million), many Americans know very little about this charmer that has long been a popular weekend getaway for well-heeled Mexicans from nearby Mexico City. That’s now changing. Once the world-class International Museum of the Baroque came on the scene in 2016, followed by the opening of two luxury hotels over the last 18 months — one by a well-established luxury brand in the U.S. market, Rosewood — the city has started grabbing the attention of savvy

American travelers, especially those who have done the Mexican coastal resorts. I’ve returned after some 20 years to stay at these new hotels, visit the museum, and reacquaint myself with Puebla-style hospitality and cuisine — to remember what makes this city so special and to see how much it has changed, if at all. about 80 miles southeast of Mexico City, Puebla occupies a verdant valley, encircled by a quartet of towering volcanoes — most notably the ashbelching wonder, Popocatépetl. As the New World’s first planned city, Puebla was built on the verge of ancient villages and constructed from scratch by the Spanish to showcase Spain’s opulence and largesse and to impress the king and queen. Consequently, its urban fabric evokes a European vibe, with arcades, wide boulevards, ornate buildings, and such — all reminiscent of Madrid or Seville. Meant to be emblematic of the riches garnered and foraged by the Spanish, no expense was spared, so the city became one of the world’s most notable examples of baroque style. Puebla maintains that same regal appeal today with its jewel box of embellished churches, chapels, and convents, and with its extravagant houses, many layered with Talavera tiles, some with

extraordinary plateresco (silverworklike doors), all boasting eye-catching hues of stucco, from yellow to pink. One afternoon, I leave the bedlam of Puebla’s busy zócalo (town square) to take refuge in adjacent Puebla Cathedral, said to be Latin America’s tallest. Inside, I let the sanctum’s frigid temperatures cool and calm me. I recall the mortifying moment in my childhood when a priest admonished me for coming to Mass in a miniskirt, demanding I wrap myself in my grandfather’s long coat. But this morning, miniskirts and shorts appear in profusion. That observation makes me think both how much and how little the city has changed since those summers more than two decades ago. Back then, I learned Spanish on the streets, as not many spoke English, though now many Poblanos do. I studied baroque architecture on the heels of my parents and their artist friends, who tutored me at every turn as we walked the streets. Today, visitors can see all the same buildings I did, thankfully protected by UNESCO, though urban sprawl on the city’s fringes manifests the style of modern times. As a child visiting, I learned about saints and mummies, seeing one and the same, a centuries-old holy man encased in a glass coffin at San Francisco Church in the town’s oldest part. He’s still there, and the church, right across from Rosewood Puebla, is an architectural wonder itself. Finally, in Puebla I learned to cook mole FA L L 2018
Originally hailing from Spain, Talavera, a type of decorated ceramics, quickly took root in Puebla during colonial times due to the high quality of the region’s natural clay. A complicated process, the hand-thrown pottery requires many steps, rituals that have not changed for centuries. Since the 1990s, Talavera workshops have had to follow strict guidelines regulated by the government. You can identify genuine Talavera by checking for a workshop’s name etched on the base of a piece. You should also see a destination of origin number. Artists produce jars, plates, tiles, vases, and more. While prices vary by size and maker, expect to pay about $35 for a plate, with a 53-piece table setting (one of the most popular purchases) averaging about $1,100. part of puebla’s allure comes from the pre-Spanish heritage that encircles it. Various villages, designated by the Mexican federal tourism board as pueblos mágicos (magic towns), manifest the culture of Mesoamerican people. As a child, I visited Cholula, a short drive from downtown Puebla, to see its Great Pyramid, an adventure that awakened a lifelong love for history, mystery, and archaeology. In my memories, I was the only person at the pyramid. On this visit, I’m in the company of many visitors. In turn, we enter the 3,500-year-old structure’s bowels, wandering with guides through undulating tunnels once used by ancient people. Eventually, I pop out on a wide lawn, near an amphitheater, part of the 25-acre empire, where ingenious acoustics and mind-boggling artifacts — such as a stone slab for sacrifice — bring the past to life. The pyramid is just as moving as I remember it. Later in the day, I visit Santa Maria Tonantzintla, one of Cholula’s most ornamented churches, just a stone’s throw from the magnificent pyramid. the history comes together for me. Amid all the expected adornments, this little chapel reveals the secret resistance of indigenous workers, who crafted the interiors with cherubs in their own image and incorporated local symbols into the embellishment — including a Virgin Mary who bears a crafty resemblance to a local goddess. The passion of it, and the palpable soulfulness of the region, brings me unexpectedly to tears. Some say that the Puebla suburb of Angelópolis is just the opposite of ancient Cholula. Modern, trendy, luxurious, dotted with skyscrapers, universities, malls, and upscale developments, it contrasts sharply with Puebla’s historic center. Fitting right in to that urbanscape, the 2-year-old International Museum of the Baroque is housed in a startlingly contemporary building. I reserve an entire afternoon to peruse it — and that’s not enough. A feast for the senses, the museum draws me in at the door with baroque background music, tunes that have a Pied Piper effect as they lead me from chamber to chamber. A blurb on the wall says that baroque (the
abundantly extravagant, even edgy, style that defines Puebla’s historical architecture) was meant to inspire awe. I’ve felt and seen that around the city. But in this canny, hands-on museum, I discover baroque was so much more. A clever labyrinth of themed rooms reveals how baroque infiltrated more than architecture — it showed up in music, design, science, art, literature, fashion, and beyond. Baroque was Rubens, Shakespeare, Vivaldi, gilt buildings, hoop skirts, and medicine’s strides via anatomy, too. Within a somewhat whimsical structure conceived to make one reflect (it has pools of water for metaphor and walls that look like folded origami paper), I follow a

in my grandfather’s Talavera-lined kitchen. I still have the secret family recipe, but it never tastes as good as it does in Puebla, where it remains a sacred favorite. Hankering to taste again the city’s most famous culinary dish, mole poblano, and its festive, seasonal summertime splurge, chiles en nogada, I take a seat at El Mural de los Poblanos, one of Puebla’s most renowned dining spots. At a small table beneath the restaurant’s namesake mural, a massive stretch of Diego Rivera-like wall art, I gaze up to see the history of Puebla unfold. Historical scenes and figures, such as Gen. Ignacio Zaragoza, look down at me as I sip a beer — a drink the staff encourages all diners to help themselves to from a large, ice-filled bathtub by the door. It makes waiting for a table at this buzzy spot a breeze. Mole, legendarily invented when nuns wanted to surprise a visiting cardinal with a feast, doesn’t have an exact recipe, with chefs closely guarding the way they make it. Nevertheless, this mix of various, unexpected ingredients, which range from chocolate and raisins to chilies, nuts, and stale bread, always emerges tasting sweet, smoky, and piquant simultaneously. Traditionally, Poblanos serve it atop chicken or turkey, crowned with scattered sesame seeds. Mine arrives at my table with turkey. After a moment with the mole, I turn my attention to my other plate — chiles en nogada, a fat poblano pepper stuffed with spicy ground beef and blanketed with a creamy walnut sauce. The taste? It’s like poetry.

path from room to room that presents baroque as a global movement, always bringing the style back to Puebla. A replica of the historic district in one room, for example, displays all the town’s many baroque structures. I leave the museum thinking it a masterpiece, a destination in itself. My last afternoon, I visit Capilla del Rosario, a stunning, gold-abundant, Talavera-bedecked baroque hideaway within the Church of Santo Domingo in the historic district. Once called the “Eighth Wonder of the World,” this tiny gilded room achieves baroque’s ultimate goal of exuberance and profusion. Awed, like many before me, I sit surrounded by glimmer, long enough for a priest to enter. When he does, I nervously realize that I’m wearing a miniskirt in this holy, glittering place — a mistake I shouldn’t have made twice in Puebla. I expect him to throw me out when he turns to speak to me. Instead, he says, “They say architecture is music made from stones. Can you hear Puebla sing?” I do. I certainly do.
Step out from the Cartesiano into Puebla’s electric historic district, a place awash in baroque, chic, old, and new. Formed from two centuries-old mansions plus a modern building, the 78-room hotel defines Puebla’s ongoing connection between the present and the past. Upbeat and contemporary, it nevertheless provides an intimate mansion experience with sleek furnishings and vibrant artworks.
Rosewood Puebla Look
In the oldest part of town, just across from San Francisco Church, the Rosewood comprises a cluster of refurbished homes and buildings from past eras joined together to create a haciendalike outpost that fuses Puebla’s history with its contemporary outlook. Restored with ancient stone, found doors and furniture, and contemporary art and amenities, the 78-room hotel looks as if it were built for a king.
Vibe
Stylish and very Mexican in mood, it manages to be as welcoming to families as to honeymooners. The friendly, casual service creates an ambience that makes guests want to hang around the hotel.
You’ll rush to breakfast just to see the sunrise from the terrace at Centena Cuatro, which overlooks Popocatépetl puffing its volcanic smoke. The restaurant serves an all-day, modern interpretation of regional Mexican cuisine. Café Hercilia, the more informal courtyard restaurant, offers fast bites.
Eats
The hotel offers several dining options, all with Mexican flair. Try Pasquinel Bistrot, an all-day dining experience with a formal edge — as ideal for Mexican breakfast as mole enchiladas. The more laid-back Cafe Azul Talavera has a stellar Mexican wine list. Los Lavaderos, a bar built into an old outdoor laundry expanse, serves craft cocktails amid a historical yet hip ambience.
Don’t miss the Spa Cartesiano, a refreshing haven that crowns the rooftop. Services go beyond anatomical; for example, a reiki treatment restores energy flow and activates mind, body, and spirit.

Bouncing Back
We sent writer Jen Murphy to California to check out how Napa and Sonoma counties are rebounding after the deadly fires that swept through this famed wine region a year ago
N
ear the summit of Mt. Veeder, a few California winemakers have gathered at Sky Vineyards in Napa to toast resiliency. Sky’s estategrown zinfandel and syrah sit on a picnic table surrounded by blackened vines and stumps. The charred surroundings serve as a reminder of the wildfires that swept through Napa and Sonoma counties a year ago and California’s unprecedented wildfire siege at press time — new fires that haven’t seriously threatened this celebrated wine region this year. With experts predicting wildfires to be a fixture in California’s future, winemakers fear travelers may start choosing alternate vacation destinations, but those in unaffected areas that rely so heavily on tourism need visitors now, more than ever, and they’re prepared to welcome them. The raging flames seen on TV last fall devastated Napa and Sonoma tourism, even in areas untouched by the fires. Tasting rooms sales plummeted, and the region lost millions of tourism dollars.
Yet, of the hundreds of wineries in the area, only about 30 suffered damages. Sky, a remote appointment-only winery just over the county line from Sonoma was one of the unlucky. Skyla Olds points to the blackened outline of earth where her family home once stood. Her father, winemaker Lore Olds, moved here in 1972 and still handcrafts wine using a centuryold wine press, making only 1,000 cases a year. While flames claimed her home and went through much of the vineyards, they just licked the winery, leaving a long, black streak across its wood-paneled side, and 80 percent of the vines have recovered. “As long as we can still make wine, we’ll be OK,” she says, raising a glass. Our makeshift tasting is proof that Sky is ready to welcome visitors in whatever way it can. Other winemakers have embraced this same let’s-move-forward mentality, using a bit of ingenuity. Take Ray Signorello Jr. at Signorello Estate in Napa, for example. Fire reduced to rubble his eponymous, familyowned winery, leaving a visible scar along the Silverado Trail. Despite losing his home, winery, and hospitality center, Signorello remains positive. “No one got hurt, and we didn’t lose our vineyards,” he reasons. “We grow everything on property, and some of those vines are 40 years old.”
He also didn’t lose any wine. He had stored the 2015 and 2016 vintages off property and had already picked and safely stored the 2017 grapes in tanks. He plans to harvest his 2018 grapes this fall. Construction of a new winery will likely take three years, but Signorello still shares his coveted cabs, chardonnay, and white Bordeaux blend in a temporary appointment-only tasting space on the estate. The winery also takes its experience on the road. Clients provide the location, and the Signorello Estate team creates an elaborate seven-course, wine-paired meal, complete with an educational wine component. “We’ll fly anywhere in the world,” he says. This resiliency now prevalent throughout Napa and Sonoma makes this a good time to visit (and support) this wine region on the comeback trail. Need more convincing? The Araujos have replanted the existing vineyards and started a biodynamic farm with fruit orchards, edible gardens, olive trees, bees, and chickens. Most Napa winery startups take years to garner attention and even longer to earn respect. But the wine world welcomed friends Tom Garrett and Todd Newman with almost instant praise when they debuted their first vintage of Dakota Shy Cabernet Sauvignon in 2008. In the 1950s, Garrett’s great-grandmother purchased a historic Oakville vineyard that lies within the legendary To Kalon vineyard. He still sources grapes from here to make his family’s highly regarded, limitedproduction Detert Vineyards wines. He has also been mentored by winemakers at Joseph Phelps Vineyards and Turley Wine Cellars, and by consulting winemaker Heidi Barrett. At Revana Family Vineyard, he worked alongside Newman, a North Dakota native who honed his love of wine while working at Napa’s beloved and now-shuttered Martini House. While at Revana, the friends plotted running their own winery one day. Last year, that vision became a reality when they opened Dakota Shy’s doors to the public. The duo meticulously source mountain- and valleygrown grapes from both historic vineyards and new plantings. The result: small production, deftly balanced wines. the trip begins in Kyoto’s thick bamboo forest and carries us toward the coast to catch the start of the Nakahechi trail, the most popular of the Kumano’s thousand-year-old network of routes, for both modern and ancient pilgrims. Many roads on the Kumano lead to a triad of grand shrines collectively known as Kumano Sanzan, the main artery of Japan’s sacred heart. Visit all three, it’s believed, and you’ll attain spiritual purification — necessary in particular for emperors nearing the end of their reign. “Deities in the Kumano area are very compassionate,” Fumiko explains with a wry smile. They welcome anyone from anywhere, regardless of gender, creed, or class — even religion. Japan itself is syncretistic, where its native Shintoism is practiced in tandem with Buddhism, which arrived under Chinese influence in the sixth century. It was believed that the Kumano area, a sacred site since prehistoric times, housed Shinto incarnations of Buddhist deities. As a result, Buddhist monks adopted it by the eighth century and used it as a training ground to gain spiritual powers. Three hundred years later, emperors took to the pilgrimage as well. The 400-mile round-trip journey took as long as a month to complete, crew members creating an ant trail more than a mile long behind the emperor. Though I reach Kumano Sanzan after only three days on the Nakahechi, the retired emperors’ traditions quickly become my daily practice. I learn to bow before the red torii gates

that mark the entrance to shrines, but only after rinsing my hands and mouth at the always-adjacent temizuya, a ground-fed fountain sometimes with a dragon spout. These — the mouth and hands — cause the most harm, Fumiko explains, and so we must cleanse them before entering a sacred space. Cleanliness is paramount to both Shintoism and Buddhism, neither assumed nor taken for granted. As we snake the Kumano through the Kii Mountain Range, my fellow trail-worn travelers and I are easily indoctrinated, thirsting for stone baths of hot onsen water that welcome our practiced muscles at each inn. Night after night, I sit alongside other women on a low stool in front of a shower head, together washing the day away. Once clean, I wade into the natural hot spring, body melting into the lightly sulphured bath, gaze softening on the exposed horizon as the sun shares one last wink of light.
A
after we spend days traveling by foot, the speed of a train railing toward the Central Alps and the – Way jars me, my body unaccustomed Nakasendo to moving so fast and my mind unable to keep up. We’re approaching modernity, and it’s palpable. Each day’s hike no longer leads to a guest house snuggled somewhere between the Kii Mountains’ peaky shoulder blades. Now we chase the sun’s last rays down narrow roads that unfold into small post towns populated by two-story wooden buildings housing family-run inns and shops. We’ve moved into the Edo period, Japan’s final era of traditional life before ports opened to foreign trade and, in effect, influence. Ieyasu Tokugawa, the Edo

By day, I move, sweat burning puddles across my arms and face, knees greased against the weight of a daypack. By night, I fold into curative onsens, don a traditional yukata robe, and dine on wild spreads of unfamiliar provincial fare, sharing cheers of “Kanpai!” with new friends. That’s why I can’t tell where my buzz stems from as I float down a street somewhere between Kyoto and Tokyo, feeling dumb but happy — buoyant even. Because I’ve imbibed on Japan’s seductive cocktail of wide-eyed wonderment and midmorning sake tastings, of samurai stories and matcha ice cream cones, of mountain myths and holy waterfalls. Because I’ve seen where tiny moments and small joys meet the sublime. How I’m so lucky to be here — in this moment, with these people, feasting on our collective experience — I don’t know. Shochu, So Good Top bartenders share their favorite cocktail recipes for this Japanese spirit now tempting U.S. palates BY
K AY L E I G H K U L P
P H OT O G R A P H Y BY
shochu, a japanese spirit made mostly from rice, sweet potato, or barley, has long been lauded in its homeland as a low-proof, foodfriendly sipper and cocktail base — and now American imbibers are catching on. According to Japan’s National Tax Agency, U.S. shochu sales increased 27 percent from 2014 to 2017. Traditionally drunk on the rocks or with water in Japanese gastropubs called izakayas, shochu — with its malty, earthy, and sometimes fruity flavors — pairs nicely with snack foods such as salted edamame, lightly grilled meats, and fermented seafood.
GREG MILANO
– Drinkers may also order a chuhai — a highball made up of shochu and soda water, maybe with some yuzu or other fruit juice — for a refreshing cap on a long day. But some of America’s top bartenders are ratcheting up the innovation, pairing shochu with other traditional Japanese ingredients to meticulously create cocktails capturing the attention of U.S. audiences. How better to get to know this on-therise spirit than to give it a taste. Here, seven flavorful drinks you can impress your friends with at home.

3. 50 Shades Of Jade

“This is a delicate and floral cocktail with sweet plum and bitter lemon peel notes. It’s very quaffable, despite being all spirit, thanks to the lower proofs of the shochu and sake. I like it best as an aperitif, maybe on a sun-drenched patio. You can also pair it with seafood or salads with vinegary dressings.” — Eric Trousdale, beverage director, Arbella, Chicago 1-1/2 ounces dry shochu 1/2 ounce sweet shochu 1 ounce plum-infused sake 2 dashes plum bitters 1/4 ounce amaro 1/4 ounce créme de violette liqueur lemon peel for garnish
Combine all ingredients except the amaro, crème de violette, and garnish in a mixing glass and stir. Strain into a coupe glass. Express the lemon peel and place in the glass. Add amaro and crème de violette on top with a pipette.
1. The Dejima
“The name ‘Dejima’ derives from a Dutch trading post in Japan that once was the major outlet of sanctioned trade between Japan and the Western world. The gin has warm overtones of Thai pepper and lemongrass, held in balance by the soothing structure of the malted rice in the shochu. Muddled cucumber brings a fresh, vibrant note along with the rhubarb’s floral tartness. The subtle cedar aroma of the masu box adds to it.” — Janis Martin, owner, Tanuki, Portland, Ore. 4 slices cucumber 1-1/2 ounces rice shochu 1-1/2 ounces Bombay Sapphire East gin 1 ounce elderflower liqueur 3 dashes rhubarb bitters pinch of sea salt In a cocktail shaker, muddle 2 cucumber slices. Fill shaker halfway with ice and remaining ingredients. Shake vigorously for 15 seconds. To serve, strain into a cedarwood masu box (traditional sake cup). Garnish with 2 other cucumber slices.
2. Chichibu Rebellion
3
“This drink is named after an uprising by Japanese farmers in the Chichibu district to protest oppression after the Meiji Revolution. The shochu adds to the aromatics with its citrus notes, while the barrel-aged gin offers a toasted note and imparts a whiskey character. It’s similar to the classic Manhattan cocktail and a little boozy.” — Anna Shin, general manager, Momotaro, Chicago 1 ounce barrel-aged gin 1 ounce sweet vermouth 1/4 ounce maraschino liqueur 1/4 ounce citrus-flavored shochu 2 dashes Angostura bitters orange peel for garnish Add all ingredients to a mixing glass. Stir and strain twice into a martini glass. Garnish with an orange peel.

4. Sleepwalk
“A refreshing, shochu-centric beverage reminiscent of a piña colada, this refined drink’s tropical ingredients result in a delightful, silky cocktail to drink on balmy nights.” — Frank Cisneros, consulting bar director, Bar Moga, New York 1/2 ounce lime juice 1/2 ounce cream of coconut 1/2 ounce ginger syrup 3/4 ounce Yuzu Omoi (sake infused with yuzu) 1 ounce Mizu lemongrass shochu rose water lemon twist for garnish
4
Whip-shake (shake with only a few chips of ice to aerate) lime juice, cream of coconut, ginger syrup, yuzu sake, and shochu. Pour over crushed ice in a rocks glass. Top with a spritz of rose water and lemon twist.
5. Spring in Tokyo
“Savor the different notes of bright citrus that are both delicate and delicious. The umeshu offers an added sweet and sour taste, while the yuzu rounds out the drink with its exotic citrusy fragrance, topped by an egg white foam cap for texture.” — Katsuaki Asai, lead mixologist, Azabu Miami Beach, Miami 1-1/2 ounces lemongrass shochu 1/2 ounce umeshu Japanese liqueur 3/4 ounce yuzu juice 1/4 ounce simple syrup 1 egg white matcha tea powder for garnish small edible flower for garnish
WHERE TO FIND SHOCHU Previously carried almost exclusively by Japanese distributors for Japanese bars and restaurants, shochu has expanded its reach as of late, with many fine U.S. liquor stores stocking and shipping it. You can also find shochu at Japanese markets. These purveyors feature selections worth checking out.
Shake shochu, umeshu, yuzu juice, and simple syrup together with ice. Strain onto a sphere or large square of ice in a rocks glass. In a cocktail shaker, shake egg white without ice until frothy. Top the drink with the egg white foam and garnish it with matcha tea powder and an edible flower.

6. Uchiba Shiso Tini
“Honkaku-style shochus feature ripe pear and honeysuckle blossom notes, sometimes even with ripe red plum and fresh cooked rice. The acidity in this drink balances well with the shochu’s savoriness. Served ice cold, it has a light yellow tint and is very drinkable. It reminds you of a Meyer lemon with apricots as you bring it to your lips.” — Chris Melton, beverage director, Hai Hospitality (which owns Uchiba), Dallas 1-1/2 ounces vodka 1/2 ounce Honkaku-style or barley shochu 1 ounce lemon juice 3/4 ounce yuzu honey (recipe follows) shiso leaves Add all ingredients to a cocktail shaker with ice and one shiso leaf and shake well. Double strain and serve in a chilled glass. Garnish with a fresh shiso leaf. Yuzu Honey 2 ounces yuzu juice 2-1/2 ounces clover honey Mix ingredients. Store remaining honey for future use.
7. Yuzu Shiso Sour
“Yuzu is a tart, aromatic citrus. It’s very refreshing, while the shiso has a basil-mint quality. The rice shochu is very neutral with a few tropical fruit notes. It’s designed as an aperitif, but goes great with grilled meats with a light soy glaze.” — Courtney Kaplan, co-owner, Tsubaki, LA 2 ounces rice shochu 1 ounce yuzu juice 1 ounce shiso syrup (recipe follows) club soda yuzu peel for garnish Add the shochu, yuzu juice, and shiso syrup to a Collins glass with ice. Top with club soda and yuzu peel. Shiso Syrup 16 ounces water 16 ounces sugar shiso leaves In a pot over high heat, heat water and sugar until dissolved. Add a handful of packed shiso leaves and let sit until cooled. Strain.
New Shochus to Try Now AOKAGE: Barley shochus can sometimes be dry and grassy, but Aokage is a mouthful of velvety chocolate, says shochu expert Stephen Lyman, an educator for the Sake School of America. Expected to arrive in the U.S. this fall, it mixes well in warm cocktails. yanagita.co.jp MIZU LEMONGRASS SHOCHU: The Mizu brand was the first to break out into the New York cocktail scene with its barley expression, and its second release is the first lemongrass shochu made in Japan with organic lemongrass harvested near the distillery and a rice and white koji base. It works as a beer replacement when mixed with lots of ice and soda water, Lyman says. mizushochu.com

TOJI JUNPEI: This traditional handmade shochu hit U.S. stores in April. Made with purple sweet potatoes, it is richly aromatic with a sweet, yet complex flavor profile. Lyman calls it “extremely versatile,” so drink it how you like. kodamadistillery.co.jp

Coupes Du Jour BY
MICHAEL FRANK
The season’s best new coupes eclipse the style-over-comfort sportsters of yore. While past coupes always featured two doors, designers now play with two- and four-door low-roof designs. These latest models prioritize the needs of full-size humans and what they carry and still turn heads on the roadways. If you’re looking for something functional, versatile, fast — and sexier than the norm — you’ll want to kick the tires on four of the most fun rides debuting right now, ranging from the upscale to the more economical.
Bentley Continental GT FIRST IMPRESSION: Exceedingly steeped in tradition, Bentley has been making coupes since 1952. So this complete remake of the Continental GT might not appear like a radical departure — until you look beneath the skin. Visually, its muscular lines make it more handsome than pretty and, hewing to Bentley’s stately tradition, that’s just the effect the British brand was after. INSIDE LOOK: Crack the very substantial driver’s side door and you realize you’re about to enter a space more akin to a salon than a car. The seats feature diamond quilting that took 1-1/2 years to develop, with each patterned square receiving 712 stitches of embroidery, and the cabin uses several steers’ worth of leather. One bit of theater: Bentley engineered a trick panel at the center of the dash. When the ignition’s off, it showcases veneer. Fire up the engine, though, and the veneer rolls into the dash like something out of a sci-fi film, and in its place a modern touchscreen appears. ON THE ROAD: You might expect a car weighing nearly 5,000 pounds to be ponderous. This machine, thanks to a stiff chassis, just feels uncannily agile — and, wow, can it fly. A monstrous 664 pound-feet of torque from its 12-cylinder engine provides a punch rarely felt in non-race cars. Not temperamental in the slightest, it cruises around as easily as a Honda Accord. Just, you know, a tad more exclusive. TRY THIS: The optional 2,200-watt, 18-speaker Naim audio system had us nearly weeping at music we thought we knew — and now know far better. DETAILS: From $214,600; bentleymotors.com

Mercedes-Benz CLS450 4Matic FIRST IMPRESSION: Mercedes, slowly revising every car it makes toward a smoother, less angular look, endows the CLS with a flowing, liquid quality, redolent of 1930s cigarette boats. INSIDE LOOK: A display screen covers more than half of the dash, giving the cockpit the perception of added width, enhanced further by a sturdy plank of optional open-pore wood trim pierced by air vents that look like jet engine exhausts. Every bit as slick as the exterior, the cabin changes hues with ambient illumination (think puddle lighting you’d find in an opera house), which you can customize in any of 64 colors. Turn the temperature down and the accent color switches briefly to blue; increase the heat, and it briefly shines red. It’s a nifty trick, even if the CLS’ best virtue isn’t a sleight of hand of any kind, but rather its supreme comfort. ON THE ROAD: We tested the CLS in Germany, where we got the most out of its mild hybrid package that pairs a small electric motor with 184 pound-feet of torque to the in-line six-cylinder, 362-horsepower gas engine. We found effortless acceleration — 0 to 60 in 4.8 seconds — as well as a hushed cabin, perfect for long stretches of autobahn. Smart cruise control not only paces traffic, it reads speed-limit signs, automatically slowing the car as needed. TRY THIS: Looking for a bit more oomph? The AMG CLS 53 gets a more potent, 429-horsepower, six-cylinder engine that knifes about a half-second off 0-to-60 sprints. DETAILS: From $72,000 (estimated); mbusa.com

Audi RS 5 Coupe FIRST IMPRESSION: To the untrained eye, you’re looking at just another sporty vehicle. Designers penned a restrained rather than flamboyant shape, with somewhat wider fenders and a lower stance only slightly belying the athletic prowess of Audi’s hottest four-seater. INSIDE LOOK: Simple, functional controls include a digital gauge cluster that transforms from providing driving information, such as g-force under acceleration, to showing Google Earth-based navigation and turn-by-turn directions. It’s all deeply, immediately intuitive, so you find yourself tapping fewer switches. Other notables: sports seats with 14-way adjustment and massage functions, useful pockets and storage throughout the cabin, and a versatile trunk. At one point, we hauled a bicycle, a backpack, a case of wine, and a few bags of groceries — all at once. ON THE ROAD: The biturbo, 444-horsepower V-6 under the hood changes personality depending on whether you drive in comfort, auto, or dynamic mode. The latter quickens shifts from the eight-speed automatic and increases the exhaust’s rasp. It also stiffens the suspension, which automatically resists the load shift created by cornering, to prevent body roll. At its fiercest, you can dash to 60 mph in 3.7 seconds. Or, thanks to that comfort mode, you can whip off the superhero guise and just tool along comfortably. TRY THIS: The $3,350 Dynamic package includes both a sportier suspension and a luscious exhaust note. DETAILS: From $69,900; audiusa.com
Volkswagen Arteon FIRST IMPRESSION: With its blacked-out, half-chassis glass moonroof that extends the windshield’s sweep, plus a long, low hood and ultralow grille, the Arteon looks exceptionally sporty. Taut, horizontal lines give it an aggressive vibe that fits the car’s driving persona. INSIDE LOOK: Sliding into the interior feels like slipping on a custom-tailored suit — everything just fits. The neatly leatherwrapped steering wheel provides grip and comfort, metal brightwork rims the dash but doesn’t look garish, and you can option all four all-day-supportive seats with both heating and cooling. The trunk swallows nearly 20 cubic feet of cargo, big enough for a pair of golf bags plus weekend luggage, and with those aft seats folded, you’ll have more cargo room than many wagons. ON THE ROAD: The Arteon proved its mettle on both the German autobahn and on backcountry forest roads. You can toggle the suspension from comfort to sport modes, but even in comfort we found the car remains poised when cruising at higher speeds. Sport mode hunkers the coupe tautly for juking around rolling lanes. The turbocharged 268-horsepower, four-cylinder engine jumps to life quickly, too, so while the Arteon wasn’t designed as a sports car, it’s spunky, quick, and immensely entertaining. TRY THIS: The 4Motion all-wheel-drive option transforms the Arteon’s personality so it claws harder around corners and brings out that much more fun. DETAILS: From $36,500. vw.com

This summer, ClubCorp paired with Cobra Puma Golf to provide junior members of ClubCorp clubs Rickie Fowler the opportunity to purchase the same polo and hat PGA Tour star Rickie Fowler wore during Friday’s round of the 2018 PGA Championship. In addition, participants of a “Look Like Rickie” contest entered for a chance to win a trip to the 2018 World Golf Championships — Bridgestone Invitational at Firestone Country Club in Akron, Ohio, and to meet Fowler and watch him in action. Contest winner Christopher Hastings, a member at Quail Hollow Country Club in Concord, Ohio, scored the tickets for himself and his 4-year-old son, Stone, who spent one-on-one time with Fowler on the course’s driving range prior to tournament practice rounds.

With exceptional courses designed by award-winning architects, the fairways of Omni Hotels & Resorts offer exciting challenges to players of all abilities from coast to coast. Nestled at the base of breathtaking Camelback Mountain, Omni Scottsdale Resort & Spa at Montelucia is strategically positioned in proximity to nearly 200 courses in the Scottsdale area. Spend your time off the links basking in one of three pools or indulging in a soothing massage at the Moroccan-inspired Joya Spa. Slated to re-open in 2019 after a $150 million expansion, the new Omni Barton Creek Resort & Spa goes beyond a typical renovation — it’s an evolution of the entire experience. Consistently ranked one of the top courses you can play by Golf Magazine, Fazio Foothills recently emerged from a course renovation that features, among other improvements, a new drainage system that enhances the playability and overall enjoyment of the entire course.

Ride in Royal Style to Machu Picchu
P
ointing to a cluster of gear-strapped backpackers atop a rocky crest, our server Agustin announces, “This is where the Inca Trail begins.” My four fellow passengers and I swap waves with the cheery bunch from across the Urubamba River. Our terminus is mutual — the Inca citadel of Machu Picchu in Peru — but as the hikers fade from view, the difference in our mode of transit feels as wide as the Sacred Valley we split. In March, Inca Rail, one of the leading train services to Machu Picchu, renovated and upgraded its three existing trains and added a fourth one. In doing so, it also rebranded itself as the “Machu Picchu Trains by Inca Rail.” I’m aboard its Private Machu Picchu Train, the only private charter service to Peru’s famed ruins. My carriage, which can accommodate a group of eight, impresses with its meticulous design, open bar, and Peruvian vocalist and guitarist for added ambience. A grueling, multiday journey by foot this is not. An ultraluxe ride through plush, mountainous terrain it most definitely is. We’ve departed from the Ollantaytambo Station, about 50 miles northwest of Cusco, for the 90-minute ride. I’m expecting a mix of high-end service and exotic flavors of Andean cuisine — and I’m not disappointed. Upon boarding, I’m greeted with a citronella-scented

cold towel and Peruvian “welcome drink” — the classic pisco sour — impeccably served with the train’s first movement. Moments later, the pop of Champagne echoes through our coach as Agustin unveils the tasting menu. An amuse-bouche of Andean cheese atop quinoa tabbouleh arrives first, followed by strips of trout ceviche in a yellow chili cream. With each plate, Agustin offers regional wines. I opt for fresh pineapple spearmint juice to go with my grilled-vegetable carpaccio entree. “The adventure [to Machu Picchu] starts on the train,” Maritza Montero of Inca Rail tells me. An adventure, this is, indeed — hiking boots not required. — T.J. OLWIG Details: $5,500 one-way for eight; $9,000 round trip. incarail.com
