Oh, Happy Day! Tiger basks in his win at the 2019 Masters.

DAVID CANNON/GETTY IMAGES (TIGER)

ear Members and Guests, The world watched this past April as Tiger Woods won at the Masters, his first major win in 11 years. Whether you are a golf fan or not, seeing Tiger’s win and his subsequent celebration with his family was a touching moment and one to which many of us felt a connection. We watched his career begin more than 20 years ago, saw him go through his many high-profile personal and physical problems, and — through drive, commitment, dedication, perseverance, hard work, and focus — find his way back to the top. Tiger’s life journey is relatable because everybody, at some point in life, has had to overcome adversity. His win was our win, too. He inspired everyone who watched. We felt a connection and a sense of ownership, which is the heart of what sports are about. That also is the heart and soul of club life. Your club should provide you with emotional connections that inspire you and make you feel like you are part of something bigger. Connections with your family, friends, and colleagues. Experiences that bring you joy, help you focus on what is important to you, and drive you to succeed. Whether it is on the golf course or tennis courts, in health and wellness, in the business world, or in building — and enjoying — personal and professional relationships, our clubs are here to help you live your fullest life. Although your life victories may not include winning a green jacket on the world’s stage, they are just as important. We are honored to be a part of your journey — your accomplishments, milestones, celebrations with family, and everyday life — and we hope you experience many extraordinary Magic Moments along the way. Thank you for your membership. You can contact me anytime at my email address below.

8 Travel Discover more than 20 reasons to head to Europe this summer, maneuver a self-drive river cruiser through a Canadian canal, climb 154 flights on Manhattan’s new landmark, glamp responsibly at new high-end eco-camps, and soak away your woes in hot springs at a remote new resort in the Arizona desert.

From the Editor European Charm

up the sky yellow-orange. Three years after visiting Switzerland, I still remember the stunning view as I walked through the hillside vineyards of Vevey on pastoral Lake Geneva. One look at this issue’s cover and you know why I haven’t forgotten that day. Aah, Europe delivers beauty in spades, no matter the country, one reason I never pass up any opportunity to venture across the pond — and then there’s all the history, the various cultures, the people, the art, the architecture, the food. I know you share my enthusiasm because our reader surveys tell us that European countries rank high on your list of favorite international travel destinations. Knowing that, we put together our cover story (“20+ Cool New Reasons to Cross the Pond,” page 8), in which we tempt you to book your next European sojourn by spotlighting what’s new there. I’m drawn to Cox & Kings’ Armenia and Georgia tour, especially since I’ve never spent any time in Eastern Europe. Being that I’m an avid power walker, a just-developed walking trail that crosses Liechtenstein sounds inviting to me, as well. With the majestic Alps rarely out of sight, the views would no doubt trump those I see on the track at my gym in Dallas. Maybe I’ll see some of you other power walkers out on that Alpine trail. — DON NICHOLS don.nichols@clubcorp.com

ARMENIA & GEORGIA Do: Cox & Kings’ nine-day “Armenia & Georgia: Past and Present” private tour provides a fascinating look at the ancient and modern-day gems of these relatively undiscovered countries. Bookended with visits to the vibrant capitals of Tbilisi and Yerevan, the itinerary makes stops at important historical churches, monasteries, and UNESCO World Heritage Sites, some dating back to the first century. 800-999-1758; coxandkingsusa.com

FRANCE Do: Known for its fairytale landscapes, the Dordogne region, about 80 miles east of Bordeaux, blooms during La Félibrée, a celebration of its Occitan language and culture, held in a different village each year on the first Sunday of July. Marked by ancestral costumes, parades, a familial sit-down meal, and miles of colorful flower garlands, La Félibrée unfurls for the 100th time this summer in Périgueux, inviting visitors to partake in a treasured local tradition. enjoydordogne.com — KIMBERLEY LOVATO

See: People most closely associate Leonardo da Vinci with Italy, but the Renaissance painter spent his final years in Amboise, France, at the behest of King Francis I. Inspired by the 500th anniversary of da Vinci’s death, a series of art, music, and cultural events will take place across the Loire Valley. Head to Château du Clos Lucé (where da Vinci died) to see a monumental tapestry based on his Last Supper, shown for the first time outside the Vatican (June 6-Sept. 9). At nearby Château d’Amboise, the exhibition “The Death of Leonardo da Vinci — the Construction of a Myth” (through Sept. 2) includes five new canvases by Italian graffiti artist Ravo, capped off by a summer-long da Vinci-themed concert festival. www.vivadavinci2019.fr/en/ 1 Dive deep into Musée Mer Marine’s collection of more than 10,000 marine-related objects, including scale models, navigational instruments, maps, and artwork inspired by the sea. Stroll to a sandy beach, enjoy sunsets by the pool and alfresco dining, and indulge in yoga and spa treatments. The hotel offers shuttle service to Gigaro beach and La Croix-Valmer’s village center. For the centennial, Germany created the Grand Tour of Modernism, a self-guided route (by car or train) of some 100 Bauhaus and modernist architectural landmarks around the country, such as the Bauhaus-Archiv. Stop in Weimar, the movement’s birthplace, to see the world’s oldest Bauhaus collection at the Bauhaus Museum Weimar, which debuted in April. Navigate a historic Canadian canal on a sleek self-drive river cruiser BY

T. J. O LW I G

T

he heavy splash of water from the canal lock’s upper gate spills alongside the boat, slowly lifting us higher. To steady our position, I give a firm yank of the deck rope that’s looped to a drop cable hanging from the chamber wall. Despite my satisfaction with myself, my stern duties are a cinch compared with the labor being done on dry land. There, on opposite sides of the canal, a trio of green-clad lockkeepers in Parks Canada gear twirl their arms in a speedy rotation, manually opening each gate, ultimately setting us free. It’s October, and nippy air and autumn-tinged trees welcome me on my first morning of a three-day boat trip through the lakes and rivers of Ontario’s Rideau Canal — a 126-mile waterway connecting Kingston to Ottawa, and North America’s oldest continuously operated canal system. With three other passengers, I’m aboard a new Horizon 4 river cruiser from Le Boat, the self-drive boat-vacation company that sailed into Canadian waters a year ago, its first destination outside of Europe, where it operates in eight countries. We just climbed

ON THE MOVE: Maneuver Le Boat’s Horizon 4 river cruiser through the Jones Falls lock.

the 59-foot rise at Jones Falls, the highest of the 45 locks on the Rideau Canal. From here, we’ll head north through the open waters and serene shoreline, eating, drinking, and soaking up a smorgasbord of small-town Canadian charm along the way. Aye Aye, Captain “So it’s a boat with cabins, not a floating house?” an inquisitive dock-side onlooker asks at Chaffey’s Lock, where a caravan of kayaking children ascends the stone lock beside us. Indeed, with a fully equipped kitchen, four en-suite cabins, and sleeping space for nine, the sleek Horizon 4 wasn’t designed to just get you on the water, but to keep you on the water. From our first mooring to our last, curious passersby gawk at our cushy digs, stopping to natter about amenities and electricity, drivability, and availability, with a few folks even jumping aboard for a tour. Long has the Rideau been a place of recreation for Ontarians and their families, but the canal’s original purpose was strategic. After the War of 1812, with Canada under British rule, fear spread that the United States would cut off the supply chain at Lake Ontario. So, by way of a canal, plans were designed to connect Ottawa and Kingston, deterring any such invasion. In 2007, UNESCO praised the canal as “a masterpiece of creative genius,” giving Ontario its first official World Heritage Site. Today, using the same 19th-century engineering on all but three lockstations, the lock system operates from May to October under the wings of Parks Canada. Le Boat adheres to the same schedule, and wannabe skippers 18 and older don’t even need a boating license to head out on the canal in one of its boats. Even a boat-inept guy like me, with the help of thrusters and a detailed nautical chart, can play skipper for

an afternoon — and I do, redlining it through Upper Rideau Lake at a top-end speed of 6 mph. Lucky for us, and the migrating loons just off the bow, designers built the Horizon 4 for leisure, not to crack the record books. Oh, the Places to Go With Le Boat, a jaunt on the Rideau tailors to do-it-yourself travelers. When you pick up your boat in Smiths Falls — a 45-minute transfer from the Ottawa airport — you have the freedom to craft a hard-nosed itinerary, hopscotch from shore to shore, or opt for a hybrid of the two, as we do. Boaters can also rent bicycles for exploring when on land. At Chaffey’s Lock, we spend a couple of hours on the rolling lawns of the Opinicon, an idyllic vacation resort known as the “Grand Old Dame of the Rideau.” With its quaint cottages and red Adirondack chairs, I liken the resort’s Old World ambience to Dirty Dancing, the hit 1980s romantic drama. As it turns out, owner Fiona McKean agrees, describing the historic property as “the Group of Seven meets Dirty Dancing.” Inspired by childhood summers in its ice cream

shop, McKean purchased the decrepit Opinicon on a nostalgic whim in 2015 through an online auction. After a hefty renovation, the resort is attracting droves of boaters once more. Our outing there consists of cold beer and nachos in the pub and a visit to the retro tiki bar. It culminates with double scoops of ice cream all around, mine topped with a double espresso. Farther up the way, we dock in a quiet canal outside the Village of Newboro, where the main attraction is Kilborn’s on the Rideau, an expansive department store in the center of town. We arrive by boat and take a five-minute saunter through the woods to get there. Anchored for the night, we snack beside a campfire, sipping wine and swapping stories beneath a starlit Canadian sky. Stopovers are diverse and aplenty along the banks of the Rideau. In the artist community of Merrickville, funky shops and Victorian-era houses fill its postcard-worthy streets. There’s a glassblowing studio, a candle-making company, and my personal highlight, Canada’s best gelato — literally — at the awardwinning Stella Luna Gelato Café. In the Village of Westport, after a brisk hike alongside Foley Mountain, we wander the vineyard and eat woodfired pizza at the family-owned Scheuermann Winery. In many ways, it’s the hospitable and kindhearted citizens of the Rideau — waving and welcoming us everywhere we go — who take our experience to memorable heights. I suppose Curtis, the smiling deputy harbor master in Westport, exemplifies it best: “You’re Le Boat number 222 this season. I’ve been counting all summer.” With the larger Horizon 5 just added in May, his tally will grow that much more. 800-734-5491; leboat.com

Nordisk Village Goto Islands Japan

Neighbor to the existing Nayara Resorts in Arenal Volcano National Park, this camp opening this fall will spread 21 deluxe tents across a forested hillside with panoramic views of the active volcano. Designed by Luxury Frontiers, which has created atmospheric African camps such as Chief’s Camp in Botswana and Swala Camp in Tanzania, the canvas accommodations each include an outdoor shower, a canopied bed, a spacious bathroom with a freestanding bathtub, and a plunge pool filled from the nearby hot springs. Amenities to come in 2020 include a swimming pool with a swim-up bar and a restaurant.

Named for its spacious Danish-made Nordisk tents, this second Nordisk Village — run by Japanese hotelier Fujita Kanko — opened in the Nagasaki Prefecture last fall (the first debuted in Venice in 2017). Its 10 tents marry Danish minimalism to Japanese love of nature in the Goto Islands, home to one of Japan’s first Christian settlements dating back to the 16th century and, collectively, a UNESCO World Heritage Site. Nearby lie pristine beaches with sunrise views over the East China Sea.

ECO-CRED

Nayara has created a sloth preserve on a protected hillside habitat planted with 1,000 Cecropia trees favored by the animals.

The property recycles an abandoned elementary school campus, with the original wooden school building serving as reception, café, and restaurant.

The off-the-grid retreat — alert: no Wi-Fi — practices no-trace camping principles with a shared chemical toilet (though there are hot showers).

Twelve tents connect in pairs to make family tents. Guests will have access to all the amenities of adjacent Nayara Resort, Spa & Gardens and Nayara Springs resorts, collectively including six restaurants and two spas.

Five new solar- and wind-powered camps string out along the Salkantay Trek to Machu Picchu, a less-crowded alternative to the Inca Trail, in a glampto-glamp route called Peru Ecocamp. Hike from one camp to the next, each of which has an organic vegetable garden, bar and restaurant, and domed-shaped sleeping tents with wood stoves and private bathrooms, including showers. Average six hours of backpack hiking daily in cloud forests, along mountain ridges, and beside glacier-fed lakes.

In December, time-travel-channeling designer Bill Bensley of Rosewood Luang Prabang and Capella Ubud, Bali, fame debuted this project — his most remote — about three hours’ drive south of Phnom Penh in western Cambodia. Most of the 15 grand tents are spaced out on a 3/4-mile-long cantilever along a rushing river, each with dining terraces, outdoor bathtubs, and furnishings that evoke vintage 19th-century safaris. Kayak, take river-based wildlife safaris, and join anti-poaching ranger expeditions to check wilderness camera traps on the 860-acre property.

Water is filtered and treated with UV light, making tap water safe to drink and reducing the use of plastic bottles. Composting waste systems fertilize the gardens.

Bensley and associates are working to protect the estuarine ecosystem that connects Bokor National Park to Kirirom National Park. Harnessing the tourism economy to conservation, it provides job training, environmental education, and employment to locals.

Trips end at the lost Inca city high in the Andes for one night at the eco-friendly Inkaterra Machu Picchu Pueblo Hotel.

e’re seven miles into our drive down a bumpy dirt road when I suddenly spot the unexpected in Arizona’s Sonoran desert: rows of tall palm trees and a green lawn. We’ve arrived at the Castle Hot Springs resort about 60 miles northwest of the Phoenix/Scottsdale metropolitan area, deep in the Bradshaw Mountains. Distinguished American families with names such as Rockefeller and Vanderbilt often checked in here after it first opened in 1896, but the resort closed in 1976 after a fire severely damaged one of the main buildings. It subsequently went through several owners and various uses but never reopened as a luxury resort again until February of this year, having been restored by local investors who bought the property in 2014. Guests can now come to this remote hideaway again to Outdoor tub enjoy its two natural hot springs, thought to have healing properties, and partake in other wellness activities, from spa treatments to yoga, tai chi, and other Eastern healing arts — though some just come to unplug. They settle into 29 sumptuous bungalows and cabins with amenities such as indoor/outdoor fireplaces and outdoor tubs they can fill with water piped in from the hot springs. Just before sundown, meet up with agronomist Ian Beger for a tour of the resort’s organic farm that’s planted with more than 100 varieties of vegetables and herbs at any point, all used in the restaurant and bar. As he walks you through the beds, the personable Beger will periodically stop to give you tastes of what’s growing, perhaps French sorrel or onion flower. The tour includes a visit to a citrus grove and greenhouse, where he uses the high-wire technique to grow tomatoes.

9 p.m. End your day where you started it, soaking in the hot springs, but this time complemented with stellar stargazing in the dark sky. Eats and Drinks Given the resort’s small size, you’ll get to know the food and beverage team well — they’re very visible and as personable as agronomist Beger. I had a good chat with executive chef Christopher Brugman (below right) while he roasted onion products from the farm on an outdoor grill. He explained that the seven-hour process results in a native onion ash used as the base coating and seasoning rub on the prime rib-eye served in Harvest, the resort’s restaurant. When I asked him to describe the restaurant’s cuisine, he used the term “Contemporary American” and said he meets with Beger every morning to determine the daily menu, based on what’s available from the farm that day. Farm products also play a big role in the bar. Mixologists Thomas Burris and Russell Greene regularly experiment, infusing liquors with a variety of vegetables and herbs to create unique flavors. No run-of-the-mill gin and tonics here. “We try to break people out of their shells and get them to try something different,” Greene told me. On my visit, the mixologists were just about ready to start serving a Rémy Martin VSOP cognac infused with allspice berries, apricots, cardamom pods, orange peel, pecans, piñon nuts, and vanilla bean. — D.N.

ne glimpse of the towering Claes Oldenburg and Coosje van Bruggen typewriter eraser sculpture at the entrance to the Norton Museum of Art in West Palm Beach, Fla., and you know you’re in for a special visual treat when you step inside. The 78-year-old museum reopened in February after a three-year, $100 million expansion that has given it not-to-miss status. Enhancements include 12,000 square feet of additional gallery space, a 37,200-square-foot garden designed by Lord Norman Foster, and a 3,600-square-foot, oculus-topped Great Hall with a 44-foot ceiling. The museum can now showcase significantly more of the impressive art in its collecting areas — American, Chinese, Contemporary, European, and Photography. Especially noteworthy is the European collection, featuring masterpieces by the likes of Paul Gauguin, Claude Monet, and Pablo Picasso. 561-832-5196; norton.org

ot long ago, imbibers who yearned for a taste of coffee in their cocktails were limited to either hot and all-toosweet after-dinner concoctions or martinis punctuated by overly aggressive espresso shots. But now, with the advent and emergence of cold-brew coffee as a cocktail ingredient, bartenders are embracing the roasted notes of small-batch coffee beans and creating complex libations. The coldbrewing technique, which uses cold water to produce a slowly brewed concentrate, has influenced the way many java fanatics think about their iced coffee, which now extends to its adult-only iterations. As sips of the following three cocktails prove, coffee — when it’s coldbrewed — makes a dynamite accoutrement for spirits of all types, be it Irish whiskies, smoky mezcals, or aged Caribbean rums.

That took some time, but it’s now a dream come true. In November, Couples cut the ribbon on Twin Dolphin Golf Club, a dramatic layout with an austere beauty that marks a stark departure for Cabo-

area golf. Where many local courses feature lush landscaping that would look at home on a tropical isle, Twin Dolphin works in harmony with its high-desert surrounds. Its broad, buckled fairways give way at their fringes to craggy ridges and arroyos. Cacti and rock outcrops frame its greens and tees. That almost every hole offers views of Santa Maria Bay and the turquoise-colored Sea of Cortez adds to the distinctive sense of place. Twin Dolphin, which Couples crafted in collaboration with the architect Todd Eckenrode, takes its name from the famed hotel and celebrity hideout that once stood on the nearby shoreline. That hotel is long gone, but its luxury and

exclusivity have been taken up a notch by its replacement: Twin Dolphin Los Cabos, an upscale development that includes a private residential community as well as high-end Montage Resort & Residences Los Cabos. Guests of the resort enjoy limited tee times at the golf club, which is brawny enough, when played from the tips, to entertain a golfer of Couples’ talents, but friendly and forgiving from the forward tees. “This is a place where I can come with my buddies and we can all have a good time,” says Couples, who owns a home within Twin Dolphin. “That’s what I wanted — a course that’s fun for everyone.” twindolphinloscabos.com

hile we look out over the short par-3 ninth hole, head golf pro David Foley tells our group, “This is your picture shot right here.” Even on a gray day with blistering winds that demand a stocking cap and multiple layers of golf attire, this signature hole shines. Engulfed by fescue and undulating dunes, the large amphitheaterlike green is punctuated by the sight, and sound, of Atlantic whitecaps crashing onto Islay, a secluded Hebridean island off mainland Scotland’s west coast. Last September, the Machrie Hotel & Golf Links reopened after a multiyear renovation. Each of the hotel’s 47 rooms — including the split-level Ben Hogan Suite and four standalone luxury cottages — provides unobstructed views of Laggan Bay, the links, or the isle’s signature peat fields. Inside the restored Victorian structure, the aroma of smoke from wood-burning fireplaces trails me from one cozy lounge to the next, where guests can sip afternoon tea, Champagne, or one of Islay’s famously smoky whiskies, a spirit I liken to “a campfire in the mouth.”

Nongolfers unwind at the spa, catch a flick in the 30-seat movie theater, or hike 7 miles of windswept coastline. Willie Campbell designed the links course, which opened in 1891, with an excess of blind shots that has always made it a difficult play. But now, after a rerouting and modern refresh by DJ Russell, a former assistant captain on the European Ryder Cup team, it’s far more fun while still being a proper links test. Playing 6,800 yards from the tips, the distance might seem meager, but plenty of knee-deep fescue and heather await the errant swing. The real showstopper, however, is the sweeping landscape, home to grazing sheep, trickling burns, and vibrant yellow gorse blooming in every direction. Less-serious players can do their shot-making at a putting course or the six-hole, par-3 Wee Course. Once you tally up your scorecard, stop by the 18 Restaurant & Bar perched above the 18th green. Head chef Darren Velvick plates seasonal Scottish fare to the tune of fresh-caught Islay brown crab and oysters from nearby Loch Gruinart. Velvick himself often forages for wild garlic and morel mushrooms. For a nightcap, a single-malt whisky from Islay’s Kilchoman Distillery delivers the perfect peaty finish to a charming Scottish getaway. From $305. campbellgrayhotels.com/ machrie-islay-scotland/ Getting there: Daily flights are available from Glasgow to Islay as well as daily ferry service. Experts’ tips for hitting go-to shots favored by the game’s big guns BY

UP AND OVER: Phil Mickelson hits his trademark flop shot.

T O M M AC K I N

P

ro golfers draw from a deep and varied arsenal of shots, and their ability to perform those shots in pressure situations sets them apart from the bulk of us. How do they do that consistently? Technique, practice, and more practice. That’s why they’re always ready to execute the not-so-simple shot called for in a not-always-so-easy situation. Whether it’s a Mickelson-like flop shot, using a stinger off the tee, or making a pitch shot stop on a dime, you can save strokes and play like a pro by adding the go-to special shots on the next pages to your own bag of tricks.

When you’re missing a lot of greens, try …

When you want to pitch it close, try …

The Flop Shot

The shot: “Pitch shots that roll way past the hole create difficult putts. That’s why when the pros find themselves with a good lie five to 20 yards off the green, they’ll hit a pitch shot that bounces once or twice and then stops suddenly, usually leaving themselves a short putt. To do that, position the ball just back of center in your stance. That helps create a low launch angle since the club — use a lofted wedge — comes in steeper. To create backspin, maintain speed through the shot while holding the clubface square to the target. Ariya is strong and can maintain the speed necessary for this shot.”

The Quick Check

Tips from

GETTY IMAGES: STACY REVERE (MICKELSON), TODD KOROL (JUTANUGARN), KOHJIRO KINNO (WOODS), ILLUSTRATIONS BY RON THOMAS

Dave Pelz The Texas-based instructor works with current PGA Tour pros, including five-time major champion Phil Mickelson, 2018 Masters champion Patrick Reed, and three-time PGA Tour winner Brendan Steele.

The shot: “The ideal lie for this shot is when the ball sits in a fairly tight lie about a quarter of an inch off the ground. To hit it, align your shoulders, hips, and feet left of the target and keep the clubface wide open so it’s almost facing skyward. Keep the ball just ahead of the middle of your stance. If you hit the ball with a descending blow, and the clubface is open enough, the ball will rise up quickly. You have to swing hard to make this happen though, because the open clubface doesn’t add much forward momentum to the ball. You want the club to meet the ball at the very bottom of the swing arc and have your arms fully extended at impact, as you do when hitting a driver.” Practice drill: “To develop this shot, first go to a wide-open driving range and practice it. When you can hit it successfully 10 times in a row, find a hedge (or an obstacle that won’t propel the ball back toward you), stand 10 feet from it, and work on hitting the ball over the hedge or obstacle. Move progressively closer as you continue working on executing the shot.”

Ariya Jutanugarn

Practice drill: “Create a ‘gate’ (i.e., string or PVC piping hanging 3 feet in the air between two poles placed 4 feet apart) on the fringe of a green. Stand close to the gate and launch pitch shots just below it and onto the green. Move progressively farther away from the gate to lengthen the shot. Work on keeping the clubface square to your target throughout the shot. Maintain constant grip pressure and finish with your weight on the front foot.”

Tips from Pia Nilsson The co-founder of Vision54, a program and golf school based at Talking Stick Golf Club in Scottsdale, Ariz., ranks 14th on Golf Digest’s “50 Best Teachers in America” list. She works with numerous LPGA players, including 2018 Rolex Player of the Year Ariya Jutanugarn.

IN ACTION: Tiger Woods hits his dependable stinger at this year’s Masters.

When you need more control of your shot trajectory, try …

The Stinger Tips from Jason Birnbaum One of Golf Digest’s “Best Young Teachers in America”, the director of instruction at Manhattan Woods Golf Club in West Nyack, N.Y., works with PGA Tour player Roberto Díaz and Web.com players Oscar Fraustro and Alex Rocha.

The shot: “Made famous by Tiger Woods, the stinger is useful on narrow courses because it’s easier to keep the ball in play, and also on windy days because of its lower flight path. Take a narrower stance than usual, feet just barely within shoulder-width. Keep 60 percent of your weight on the front foot, choke down slightly on the club, and forward press your hands about an inch ahead of the ball at address. Keep the ball position pretty neutral, which when using long clubs means just in front of center. Avoid placing the ball way back in your stance; doing that can change other parts of the swing, notably the impact point.” Practice drill: “This shot requires a shorter follow-through than usual. Using a driving iron, make your regular full backswing at normal speed, but try to stop the swing almost immediately after impact. Exaggerating such an abrupt end will create crisper contact and helps lower the ball flight. The club shouldn’t rise above your hips on the follow-through.” S U M M E R 2019

/Tennis/ Q+A

Meredith Walton

The director of tennis at the Clubs of Kingwood near Houston on the backhand, a weakness for many club players BY

E LAI N E G LU SAC

The best backhands in the men’s game?

And in the women’s? Venus Williams for the two-hander, with her wider base, ability to generate power with open stance, and explosive torque rotation. Justine Henin, who’s retired, for the one-hander. I liked her efficiency of preparation and the extension and release of her swing.

Your best tip for amateurs hitting a backhand? Understanding proper spacing away from the ball and initiating movement instinctively. You have to initiate with a shoulder turn and a pivot of the outside foot. At the point of contact, you need full arm extension. If you’re crowded, you’ll have a bent elbow, which gets the wrist involved and can lead eventually to injury. For two-handers, it’s important to utilize the nondominant hand in generating racket-head speed and promoting extension of the

Venus Williams

Roger Federer

arm. Players need to learn both topspin and underspin when developing their one- or two-handed backhand.

Some good on-court exercises for perfecting the backhand? Bounce catching with tennis balls so you’re working on movement and spacing instinctively. Also, shadow swinging. Place one cone in center court where you want to recover and one outside where you’ll be swinging. Lastly, figure eights. Turn your shoulders, move to the outside cone and swing, transferring your weight forward so you’re coming around the outside of the cone; recover in front of it with a crossover step and then take a couple of shuffles back to the other cone.

And off the court? Medicine ball training, with or without a partner — and focus on coiling and uncoiling, loading and unloading. Coiling is turning out and loading with the legs and uncoiling is throwing the ball using your hips and shoulders, with full arm extension. Keep your eyes and head forward as if you’re tracking the ball. You’re building strength with lower-body loading, and rotating the shoulders and hips gives you more power from your core when you release.

About the expert: Walton joined Kingwood as a tennis pro in 2012 and became tennis director a year ago. She brings plenty of experience to the club — she competed on the women’s professional tour for four years and coached women’s tennis teams at two Division I colleges, the College of William & Mary in Williamsburg, Va., and the University of Texas at Austin.

GETTY IMAGES: TPN (FEDERER), CAMERON SPENCER (WILLIAMS). RON THOMAS (WALTON)

Hitting a good backhand is about preparation, weight transfer, diversifying spins, and maneuvering ball placement. Roger Federer has one of the best one-handed backhands; it’s beautiful to watch because of the fluidity and accuracy. Novak Djokovic has one of the best two-handers, with his symmetry of alignment and cleanliness of technique.

ROYAL EVENT

With the 2019 Open Championship returning to Northern Ireland for the first time in decades, we sent golf writer Tom Mackin to play the upgraded host course. You’ll want to tee it up here, too — and walk in the footsteps of the world’s best pros.

S

hort of a generous post-round tip, there may be no sweeter sight for a Royal Portrush Golf Club caddie than his player striping a drive down the middle of the first fairway. That’s how my round starts on this sunny and windless day, putting a smile on the face of Mark McClelland, a Portrush native carrying my bag. It’s a good start on the Dunluce Course, one of the world’s finest links layouts, where the Open Championship returns this summer after a 68-year absence. In Northern Ireland 60 miles north of Belfast on the North Antrim Causeway Coast, Royal Portrush hosted the Open in 1951 — the first and only venue to host it outside of England and Scotland. With a

current rotation of nine courses in those two countries virtually set in stone for the championship, a return to Royal Portrush had long been doubtful. But its successful hosting of the 2012 Irish Open caught some eyes at the R&A, which manages the major. The spotlight that shined on Northern Ireland thanks to a combined six major wins by natives Darren Clarke, Graeme McDowell, and Rory McIlroy since 2010 also helped. Plus, a calming of the country’s volatile and often violent political landscape (known as the “Troubles”) further eased organizational concerns. As McClelland and I stand on the tee of the par-3 third hole overlooking the entire course, he acknowledges not having expected the major championship to return to his hometown. “With the Troubles and

everything, I thought they would leave it a while longer,” he says. “I didn’t think it would be here in my lifetime. But the course itself is certainly good enough to host it.”

Royal Portrush. Some 30 miles south of Belfast sits Ardglass Golf Club. Opened in 1896, the course has a striking collection of par 3s — highlighted by the second hole, which requires a tee shot over a wide, rocky gap and the Irish Sea far below — and claims the world’s oldest clubhouse, part of it a former castle from 1405. At Royal Portrush, I long for a speck of Joe Carr’s talents as my scorecard fills up with more bogeys than pars on the front side. Ever the savvy looper, McClelland distracts me with an array of stories, including one as we stand at the back of the fifth green overlooking a beach and the Atlantic Ocean. “One day out here we saw guys in costumes dancing around a campfire that way on the beach,” he says pointing eastward. “Then we looked the other way and there were 20 guys on horseback wearing fur jackets and holding spears. They charged the campfire guys and had a pitched Hole No. 15 of the Dunluce Course

battle.” Not one guy spilled blood, however, for this filming of a Game of Thrones episode.

D

espite righting the ship with a few pars, and even a birdie on the par-5 12th, I’m not exactly doing what this year’s Open champion will need to do: Hit a low ball, manufacture shots, and be very creative. And I’m enjoying calm and sunny conditions, a rare combo in a place where weather can be as unpredictable as the bounces golf balls take on fairways. But it’s the final five holes where Royal Portrush gets especially tricky. Each requires, as Northern Ireland native Liam Neeson has said in numerous movies, a very particular set of skills. You need a precise approach to hold the elevated green on the 14th, while the dogleg-left, par-4 15th requires a supremely

o argument there. The seaside setting, the rumpled fairways, and the tight turf all fit the bill. Still, the club made definitive changes in preparation for the Open, none larger than eliminating the relatively weak former 17th and 18th holes (which will instead host the championship’s tented village and hospitality area) and building two new holes (now the seventh and eighth) using land previously part of the adjoining Valley Course. That forced a renumbering of other holes, plus the club added numerous bunkers and back tees throughout. Finally, it built a well-hidden tunnel inside a large grassy mound behind the sixth green to expedite access to multiple holes for Open participants. One person who wouldn’t be surprised to see the Open return to Royal Portrush would be the late Joe Carr, Ireland’s most decorated amateur golfer. “My father won one of his three British Amateurs there in 1960,” says his son Marty, who runs Carr Golf, a Dublin-based international travel business that won a Golf Digest Editors’ Choice Award for Best Tour Operators last year. “He said if he could play a golf course for the rest of his life, it would probably be the Old Course at St. Andrews. But if he had to play a golf course in Ireland for the rest of his life, it would be Portrush.” Marty Carr has seen visiting golfers, especially Americans, increasingly gravitate to Northern Ireland on trips deftly organized by his company in recent years, thanks in no small part to the popularity of the spectacular Royal County Down Golf Club in Newcastle, 90 miles north of Dublin and ranked No. 1 in the world by Golf Digest last year. But the roster of worthwhile courses also includes Portstewart Golf Club, where an unforgettable front nine moves up, over, and through massive sand dunes, all a short drive from

accurate tee shot. But you can’t avoid Calamity Corner — it’s the name of the famous par-3 16th hole. “You’ve got to stay left to avoid the steep drop-off down the right side,” advises McClellan on that tee. “Use the mounding just left of the green and your ball will roll onto it.” My swing, club, and ball don’t listen, so we watch my tee shot fade into a deep, dark recess of high grass 30 feet below, and right of the green. Purgatory, the par-4 17th, is less painful. After sinking a par putt there, I ask McClellan’s predictions for this year’s winning score. “If the wind picks up, you’ll see plenty of high 70s and 80s,” he says. “Great leveler, the wind. But otherwise, I would expect 12- to 14-under par as the winning score.” After pulling my drive left on the par-4 18th (formerly the 16th), I bounce a 9-iron approach off a mound right of the green, ending up 25 feet directly above the hole. The day’s four-ball match has come down to the last hole. Come July, a grandstand full of 5,000 spectators cheering on the champion golfer of the year and winner of the 148th Open Championship will border this 18th green. Today, only four caddies, three other golfers, and a few disinterested seagulls formed the crowd. But as my putt drops into the cup for the win, I gladly settle for the muttered groans of my opponents. Want to play Royal Portrush? Carr Golf offers tours with tee times there and on other Irish courses you’ll want to play. 855-617-5701; carrgolf.com

owhere have the changes in the Irish golf scene been greater than at Adare Manor, where billionaire owner J.P. McManus gave designer Tom Fazio the nod to renovate the existing Robert Trent Jones Sr. layout, with a caveat to keep the layout recognizable to the original. While maintaining the previous routing and hole corridors of the parkland layout, Fazio changed virtually everything else during a three-year project that began in 2015 and earned Best Renovation of 2018 honors from Golf Magazine after reopening in April 2018. “The fact that we regraded the property, making 15- to 20-foot cuts in the ground and creating a whole different experience, makes this a brand-new golf course,” says Fazio. “What we’ve done in place of more bunkers is created challenge around the greens with elevation changes. More bunkers would mean less area to play golf on the ground.” Fazio sought the perspective of Irishman and three-time major winner Padraig Harrington, bringing him to tightly mowed chipping areas around greens with the most severe drop-offs (particularly on the ninth and 18th holes). “I asked him, ‘What club would you use for those shots?’ ” says Fazio. “He told me, ‘The hardest part about those shots is you’ve given me options. For good players, options create confusion, which adds to doubt in some fashion, which in turn leads to more challenge.’ A highS U M M E R 2019

espite a proud history spanning more than a century, Lahinch has never hosted the Irish Open. That changes in July when the tournament arrives for the first time since the course debuted 127 years ago. British course architect Martin Hawtree, who completed a major renovation at the famed County Clare layout during the 2000s, returned over the past 18 months for further tweaking. He lowered the left-hand side of the second fairway by a few feet to open up a view of the green, reworking bunkers in that area as well. Similar work on the par-4 15th opened up a view beyond the left fairway bunker. A new back tee on the 13th — a drivable par 4 with a green bracketed by bunkers on the left and a deep grass pit on the right — plus new back tees on 17 and 18 push the routing just over 7,000 yards. “That’s kind of the magic number these days, and the new tees allow us to go farther back on those holes if we want to,” says club manager Paddy Keane. The green on the famous fifth hole — “the Dell,” a short par 3 created by Old Tom Morris, who used a tall mound to block the view of the putting surface — was re-turfed in late 2016 and is now in prime condition. What will the pros think of a blind par 3? “We’ll find out,” says Keane with a laugh. “But they played the Irish Open at Royal County Down in 2015 and obviously there are six or seven shots there to the green where you can’t see it. The pro who is 2 or 3 under on the Dell for the week will like it!” “The difficulties [of Lahinch] will depend on the strength of the wind,” says Hawtree. “Then the defense mechanisms of the surrounds and the contours on the greens will come into their own.”

JACK HARDY (ADARE)

handicap player would certainly rather have those options than be in a bunker having to play a high, lofted shot out of the sand. That’s where the fun part of the course comes in — and it’s why there aren’t many bunkers.” There’s not much rough, either. “Mr. McManus is a big fan of always being able to hit the back of the ball,” says Andy McMahon, director of golf. “Even if you’re in the trees, he wants you to have a swing at it.” Overlooking numerous holes, most prominently the 15th and 18th greens, the luxurious Adare Manor received its own multimillion-dollar renovation (featuring a new 42-room wing) and now showcases a deft melding of contemporary touches with the rich history of a structure dating back to the 1830s. “When you look at the practice facility, the course, and the grounds, this is now an international golf destination that any big event could be played on in terms of quality and space between holes for spectators and grandstands,” says Fazio. “You could pick it as a tournament venue one week and go play it the next week because of all the infrastructure that has been created.” The renovation makes Adare Manor the early favorite to host the 2026 Cup — which would be a dream come true for McManus, an avid golfer and Limerick native who has gone on record about his hopes of bringing the biennial competition to the resort. As for Fazio, he has only one regret with the project. “I’m disappointed that it’s finished,” he says. “I love that place.”

il Hanse, one of the world’s most sought-after course architects, is putting his stamp on this low-profile links in northwest Ireland. He, partner Jim Wagner, and their team began the renovation work last year. The course, purchased by area native Liam Mc Devitt and business partner Larry Foley in spring 2017, will feature 16 new greens, 18 new tee boxes, and five new par 3s. The work’s final phase begins in October with a planned May 2020 completion (the course will remain open during the project). Hanse calls Narin & Portnoo one of the most beautiful settings for golf that he and Wagner have ever seen. “With the course on a peninsula, the views all around it are stunning, with different bodies of water,

islands, and hills providing a great panorama,” he says. “We have also never worked on a true links site, so the opportunity to work on a site that is pure sand, pure golf, and stunningly beautiful was an opportunity that Jim Wagner and I were excited to take on.” Mc Devitt, who grew up playing the course, acknowledges the good fortune in attracting the acclaimed design team to the project. “Everything that Gil and Jim have put down on paper has been implemented,” he says. “The feedback we are getting from guys who have played the course for the last 30 to 40 years is they can’t believe the changes, the time frame they are being finished within, and the quality of the work. It’s like they have a brand new golf course.”

ortmarnock, celebrating its 125th anniversary this year, enhanced its layout in preparation for hosting the 2019 British Amateur in June. To counter longer hitters, architect Martin Ebert extended nine of the championship tees and added six new strategic bunkers on six holes. He also incorporated a mounding program to enhance some flatter areas of the course; specifically on the left side of the second hole and between the ninth and 10th holes. Doing so prevents players from taking shortcuts off the tee and forces them to play those holes the way they were meant to be played. A revamped practice ground features a double-sided range, as well as new chipping and putting greens. Portmarnock previously hosted the British Amateur in 1949, the only other time the event has been held outside of Great Britain. Although the club has 27 holes, the championship routing consists of the Red and Blue Nines. Long considered a challenging but fair test, it has earned praise for its high quality from the world’s best golfers, including major champions Padraig Harrington, Rory Hole No. 12 on Portmarnock’s McIlroy, Phil Mickelson, and Tiger Championship course Woods, among many others. xtensive course renovations, begun in 2014 and now complete, include a new green at the third hole and a new par-3 14th hole. The project had various purposes, according to Martin Hawtree, who oversaw the changes: “to get rid of the quirks and mannerisms of the original [a 2002 Greg Norman design]; introduce some design features already essayed at Trump Aberdeen in Scotland, such as grass pathways; and repair the very considerable damage encountered during the 2014 storms, including adding some new holes and relocating some.” The renovation wrapped up its final chapter in early May on the par-4 sixth hole with the relocation of the green farther away from a cliff edge to minimize erosion and saltwater-related damage incurred in recent years. Off the course, plans call for an estimated $45 million expansion, including ballrooms, a new restaurant, new leisure facilities, and new homes. But the memorable views from many holes remain unchanged — most notably from the ninth, 14th, and 18th holes, all set adjacent to the Atlantic Ocean and crescentshaped Doughmore Bay (where you’ll often see surfers catching some waves).

Let the Sunshine In Doff your lids this summer and take to the streets — and bring the family along. Some of the season’s best new convertibles were made for you enthusiasts who want a little excitement but aren’t after pure sports cars. You’ll get performance, sure, but without the hard edge that makes your passengers wince over every crinkle in the asphalt. These three cars’ tops feature the finest new technology, meaning they’re far quieter and faster to open and close than those ragtops of yore. BENTLEY CONTINENTAL GT CONVERTIBLE

Another Level of Quiet

Ordinarily you choose a convertible because you want to drive with the lid down. But Bentley has all-purpose comfort in mind, so its engineers crafted a brilliant fabric top — one that’s so quiet when closed, the interior noise level actually matches that of the prior-generation metal-roofed car. The yacht of cars: Yes, other cars offer wood trim, but if you want wood in your Bentley, we recommend choosing from a pairing option that combines two complementary veneers offset with chrome striping, similar to what you might find on the deck of a yacht. Options include walnut, eucalyptus, and Hawaiian koa wood. You can further customize the look with a dyed leather headliner for the inside of the convertible top. Heavy metal: Don’t dig wood? Trim your cabin in what’s called Côtes de Genève, an aluminum finish ordinarily reserved for watch faces. Craftsmen buff away the scantest amount of metal, creating a waved surface that has an uncanny heft when you touch the panels. For the creases on the car’s exterior, technicians use a process called superforming, in which they heat materials to nearly 1,000 degrees so they can bend with exceeding precision.

Super cruiser: Thrilling. That’s a word frequently associated with a Lamborghini or Ferrari, but we found this 626-horsepower, 12-cylinder Bentley thrilling, too, precisely because the carmaker didn’t try to make a direct rival to those fire-breathers, which demand a breakneck pace to feel alive. This Bentley thrills at all speeds — whether we were loafing along with the lid dropped catching rays in the seaside towns of southern Spain, where we tested ours, or plying high-velocity corners carved into the Andalusian hills. True, at full-bore, the air-suspended ride yields excellent handling, but back off and soak in the view and you learn that this car’s really all about a Bentley-esque, above-the-fray manner that left us grinning even after eight hours at the wheel. BMW Z4 M40I

Same Name, Different Car

Making room: Are you a taller driver who feels hemmed in by most two-seat convertibles? The driver’s seat supplies an extra-long rake for longer legs, and added width increases

PREVIOUS SPREAD: MARK FAGELSON (BENTLEY)

Carmakers, like winemakers, don’t throw away good names. If you make a great Barolo in Italy, you don’t trash the name and start over with each new vintage. So though the BMW Z4 label sticks around, as it has since 2002, engineers started fresh to make the new-for-2019 Z4 quicker, with a muscular in-line six-cylinder engine producing 382 horsepower, and added leg and shoulder room, too.

Suspension + engine magic: The new Z4 features the around-town playfulness of a Mazda Miata, yet can be pushed toward a very spunky edge thanks to its wider track offering more lateral grip and electronically controlled dampers so you can stiffen handling at will. It vaults to 60 mph in just 3.9 seconds, and its paddle-shift, eight-speed gearbox will erase any desire you may have for a traditional manual.

elbow room. Plus, the 9.9-cubic-foot trunk gulps golf bags or a three-day weekend’s worth of luggage. Smart tech: Pair your phone to the car’s digital systems and the Z4 learns your driver preferences. For example, the car’s Intelligent Personal Assistant learns your most frequent destinations and suggests rerouting along the way in case an accident blocks your usual commute.

Likewise, it knows your seat-heating preferences and your musical tastes, too, and can join teleconferences at your request and read out your emails. Plus, it auto-updates over home Wi-Fi, so new features, such as an update to mapping software or even a new app, won’t require a dealer visit. Awesome options: We like the headsup display that superimposes speed and

navigation instructions on the windscreen, so you don’t even have to look at the gauge cluster. Also, get the wind baffle that nests behind the front seats, because it significantly cuts ambient noise during top-down driving. With the Comfort Access option, you can drop or raise the car’s cloth top while the Z4’s parked in your driveway just by using the key fob. More info: From $63,700; bmwusa.com

MERCEDES-AMG E53 CABRIOLET

New Engine With Lots of Tricks

BERNHARD LIMBERGER (BMW-3)

The E53 uses an in-line six-cylinder engine mated to an electric motor as well as an electric auxiliary compressor and turbocharger. The electric power plant drives all four wheels as you leave a stoplight and spins the electric auxiliary compressor, forcing more air through the engine. All that technology combines to make the E53 exceedingly quick, with a 0-to-60-mph time of 4.4 seconds. Even better, its torquey engine (384 pound-foot) pins you to your seat from a start and remains ultraresponsive, so you always have instant passing power. Still, you get good fuel economy at 20 city/26 highway, in part because when the car’s Eco Start/Stop is activated, that electric motor doesn’t burn gas in stop-and-go traffic.

Good genes: This E-Class’ multilayered lid was co-engineered with its more expensive sibling, the $134,000 S-Class Cabriolet, making both cars ultraquiet, even with the tops down. You can unfurl the convertible at up to 30 mph — handy in case the sun pops through the clouds while you’re cruising. Add and delete: These days, lots of buyers prefer fewer logos and less chrome. Mercedes took note, so now — for no charge — you can order your E53 minus the Turbo 4Matic+ badge on the front fenders and without the AMG E53 logo on the trunk deck lid. But don’t stop there. Get the Night Package, which converts chroming at the front air intake and below the rear bumper into deep gloss black, and blackens the chrome tailpipes, too. This transforms the E53 into a sportierlooking machine, especially if you opt for one of eight different silver, white, or black paint hues. Always versatile: The E53 benefits from both an air-sprung system and driver-adjustable dampers. We found ourselves supremely entertained while ripping along two-laners in backcountry Georgia. The song of the AMG-tuned exhaust reached a howl near redline, and this Benz’s quick-shifting, nine-speed gearbox with paddle controls gave us a measure of control ordinarily preserved for true manuals. Add in the utility of a trunk-pass-through for longer luggage and all-weather traction, and you have a super fun, 365-day dream of a drop-top. More info: From $80,350; mbusa.com

ood trucks and vendor carts continually pop up across the country, intensifying our appetite for at-the-ready small bites. For a vacation from heavy knife-and-fork fare, tap into the country’s vibrant street culture with these nontraditional pot stickers from a ClubCorp chef. Then turn the page for two more fresh, authentic roadside foods you can whip up in your own kitchen. Shrimp Scampi Dumplings Executive chef Stephanie Schifrin Salas of the Dayton Club in Dayton, Ohio, puts a zesty spin on typical pork dumplings with a fresh and flavorful seafood filling. 1/2 pound raw shrimp, peeled and deveined 1 tablespoon white wine 1 teaspoon lemon juice 2 tablespoons fresh parsley, finely chopped 1 tablespoon plus 1 teaspoon olive oil 1-1/2 teaspoons cornstarch 1 teaspoon garlic, finely chopped 1/8 teaspoon salt 1/8 teaspoon ground black pepper 2 tablespoons Parmesan cheese, finely grated 25-30 wonton wrappers (if using frozen, defrosted) Garlic Butter Sauce (recipe follows) microgreens Roughly chop half of the peeled, deveined shrimp and place in a medium bowl. Finely chop the remaining shrimp and add to the bowl. Add the white wine, lemon juice, chopped parsley, 1 teaspoon olive oil, cornstarch, garlic, salt, pepper, and Parmesan to the bowl. Mix well to combine. Place one dumpling wrapper in the palm of your hand. Scoop a scant tablespoon of the shrimp mixture onto the center of the wrapper.

Using your free hand, dip the tip of your index finger into a small bowl of cold water and wet the edge of the dumpling wrapper all the way around. Fold the wrapper in half and crimp the edge of one side while pinching both edges together to seal the dumpling shut. Repeat with all the filling to make your dumplings. Place a large, nonstick skillet over medium heat. Pour in 1 tablespoon of olive oil and heat up the skillet. Once hot, turn down the heat to medium-low and arrange 10 to 15 dumplings in the skillet. Cook until the undersides are golden, about 4 to 5 minutes. Then add enough water to come 1/3 of the way up the dumplings. Cover the skillet with a lid, turn the heat down to low, and steam dumplings for 5 or 6 minutes, until the water is completely absorbed. Remove dumplings from the skillet and repeat with other dumplings until all are cooked. Serve hot with warm Garlic Butter Sauce and garnish with microgreens. Yield: 25-30 dumplings

GARLIC BUTTER SAUCE 8 tablespoons salted butter 6 tablespoons olive oil 6 garlic cloves, minced 1 pinch ground black pepper 1 pinch crushed red pepper 1 teaspoon kosher salt 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh chives 2 teaspoons lemon zest Melt the butter in a small skillet or pot over mediumlow heat. Once melted, stir in the olive oil and garlic and let cook for 1 minute. Remove from the heat and season with the black and red peppers, salt, herbs, and lemon zest.

Chef’s Tip

“To make these pockets quick, purchase a Sur La Table Dumpling Press. For less than $10, you can make 30 dumplings in less than 10 minutes. ” —E xecutive chef Stephanie Schifrin Salas Dayton Club, Dayton, Ohio

Chef’s Tip

“Always use the freshest, highest grade tuna available. It should be deep red to pink, shiny, and smell faintly of the sea.” — Executive chef Lewis Butler Center Club Orange County, Costa Mesa, Calif.

Ahi Tuna Poke Raw Bowl Executive chef Lewis Butler of the Center Club Orange County in Costa Mesa, Calif., serves this power bowl of nutritious, cooling, and delicious poke, a customizable Hawaiian-born street food that has taken off nationwide. Poke is pronounced poh-key and means “to cut.” 3 pounds fresh ahi tuna, center cut 1 cup Tuna Marinade (recipe follows) 3 tablespoons sesame seeds, toasted salt and freshly ground pepper 3 cups sushi rice, steamed 2 carrots, grated or julienned 3 watermelon radishes, thinly sliced 2 large avocados, diced 3 green onions, chopped 1 cup cashews, chopped and toasted

Dice the chilled tuna into 1-inch cubes and place in a medium bowl. Add enough Tuna Marinade to coat all the tuna pieces thoroughly. Sprinkle the sesame seeds over the tuna and season to taste with the salt and pepper. Add freshly steamed rice (about 1/2 cup per person) on the bottom of each bowl. Scoop the tuna to one side

of the bowl, covering about half of the bowl. Then add the grated carrots to one side and the watermelon radishes to the other side. Place the diced avocado in the middle and sprinkle with green onions. Drizzle Tuna Marinade around each bowl and sprinkle the cashews on top. Serve immediately. Yield: 6 servings

TUNA MARINADE 1 cup soy sauce 1/2 cup sweet soy 1/4 cup sesame oil 1/4 cup olive oil 1 tablespoon rice wine vinegar 1 tablespoon Sriracha sauce 1 tablespoon fresh ginger, minced 4 green onions, chopped In a medium bowl, stir together all ingredients. Store leftover marinade in a jar and refrigerate. Shake well before using.

Indian-Spiced Chicken-Mango Kabobs With Pineapple Curry Sauce Executive chef Kevin Schwab of Timarron Country Club in Southlake, Texas, marries fruity flavors with just the right amount of heat in these juicy kabobs served with an exotic curry sauce. To amp up the chicken marinade, he makes his own Indian spice blend. 2 pounds boneless chicken breast, cut into 2-inch pieces 1 cup plain yogurt 1 clove garlic, minced 1/2 tablespoon lemon juice 3 tablespoons Indian Spice (recipe follows) 1 teaspoon red or yellow curry paste 6 wooden skewers (10 inches long) 2 mangoes, peeled and cut into 2-inch cubes 2 tablespoons coconut oil Pineapple Curry Sauce (recipe follows) Place the chicken pieces in a baking dish. In a large bowl, combine the yogurt, garlic, lemon juice, Indian Spice, and curry paste, and mix well. Coat the chicken

pieces evenly with this mixture. Cover the dish and refrigerate for 4 hours. Remove the dish from the refrigerator and let it sit for 30 minutes or until room temperature. Soak wooden skewers in water for 30 minutes. Alternately thread the chicken and mango pieces onto skewers. Discard the marinade. Heat a grill or a large grill pan to medium-high heat and add the coconut oil. Once oil starts smoking slightly, add the kabobs and cook evenly for 4 or 5 minutes per side. Once the internal temperature of the chicken is 165 degrees, remove the kabobs and place onto a serving dish. Serve with Pineapple Curry Sauce. Yield: 6 servings

INDIAN SPICE 1/2 teaspoon onion powder 1/2 teaspoon ground ginger 1 teaspoon salt 1/2 teaspoon turmeric 1/2 teaspoon white pepper 1/2 teaspoon tandoori spice 1/2 teaspoon dried oregano In a small bowl, mix all ingredients. Store in an airtight container. PINEAPPLE CURRY SAUCE 2 teaspoons Thai red curry paste 1/2 fresh pineapple, peeled and diced 1 pinch ground ginger 1 teaspoon white sugar Place all ingredients in a medium saucepan and cook on medium heat until boiling and slightly thickened. Remove from heat. Cool slightly and blend the mixture in a food processor.

Chef’s Tip

“Don’t overcrowd ingredients on your skewer so that everything cooks evenly, and place heavier ingredients on the ends of skewers so nothing falls off.” —E xecutive chef Kevin Schwab Timarron Country Club, Southlake, Texas.

Break bread at Flintrock Falls Grille (above), transformed with modern furnishings, flat-screen TVs, and additional outdoor and indoor seating ideal for dinners in the Texas Hill Country. Formerly an open-air pavilion, the newly enclosed ballroom (left) provides 3,400 square feet for receptions, banquets, or corporate events.

At ClubCorp clubs across the country, members are embracing a new pastime: pickleball. For this fast-growing sport with the funny name, players use oversize paddles and plastic wifflelike balls in singles and doubles matches combining elements of tennis, badminton, and table tennis. About 3.1 million people play pickleball in the U.S., according to a report from the Sports & Fitness Industry Association, and a 2018 ClubCorp amenity survey lists 37 clubs as having indoor or outdoor pickleball courts. Why so popular? “It’s an easy game to learn, it’s very social, and playing it connects you with people you wouldn’t normally connect with at your club,” says Patrick Guion, director of tennis at Mission Hills Country Club in Rancho Mirage, Calif., which has 175 active pickleball-playing members and a dedicated pro and plans to expand from four permanent pickleball courts to eight this year. Here’s how a few other clubs are beefing up their pickleball agendas and facilities: 1 With more than 200 active pickleball players, Anthem Golf & Country Club near Phoenix just added a pickleball pro and plans to convert its stadium tennis court into four permanent pickleball courts in June. It offers a full lesson program and 10 open plays each week. Though participants have skewed older in the past, director of racquet sports Chris Brewer says he’s seeing an influx of players in the 35-to-45-year-old range. 1 At Chantilly National Golf & Country Club in Centreville, Va., about 30 members take part in pickleball activities, which include open play on Friday nights and Sunday afternoons, informal instruction clinics, and social events. 1 The Clubs of Kingwood near Houston offer weekly open-play days on Tuesdays, Thursdays, and Sundays, and this summer has monthly tennis and pickleball mixers planned to introduce more members to the sport. — LOUIS MARROQUIN S U M M E R 2019

aging through Assouline’s new Roy Lichtenstein: The Impossible Collection, connoisseurs of bookmaking and pop art will find common cause to celebrate. The 200-page coffee-table treasure features more than 100 of Lichtenstein’s most famous works — cartoon parodies including “Whaam!” and “Drowning Girl” — reproduced using hand-inked color plates. The artist — part of “a generational revolt, shocking and invigorating the American art scene,” according to the book — famously riffed on comic books and their melodrama, including magnifying the Ben-Day dots that accompanied photographic images in reproduction. This was his way of stimulating a discussion about art and appropriation and elevating the ordinary to high-art status much as Andy Warhol did with Campbell’s Soup cans. Presented in a linen-lined case, the limitededition book is printed on heavy paper and bound by hand, applying the ancient art of bookbinding to the modern art of homage. We think Lichtenstein would approve.

It’s time to test your mettle on this rugged masterpiece. Renowned course architect Gil Hanse has transformed what Donald Ross first carved out of the sand a century ago into 18 dramatic holes you’ll want to play again and again. Introducing the latest championship course at Pinehurst. Mention CLUBCORP19 and receive 20% off any vacation package. Village of Pinehurst, North Carolina | 866.291.9428 | Visit pinehurst.com
