here is something about the summer months that makes us feel more alive! As I write this, the outside temperature is a balmy 30 degrees and I am looking out at clear blue skies, the sun is shining through the swaying palm trees and I can almost hear the sound of the waves at the nearby Cotton Tree beach. Bliss! So what better time to talk about all things health and wellbeing! This month we have a fabulous magazine in store for you, full of inspiring stories and of course all the latest in fashion and beauty products to get you summer-ready. A heartfelt thank you to our amazing cover girl entrants. It never ceases to astound me the number of talented people we have right here on our doorstep, and it was a pleasure to read each and every one of your stories. While it wasn’t an easy decision, there can only be one winner and that is … drum roll please … Rachael Witton. Congratulations Rachael. The black tie event not only supported the region’s rescue helicopter service, it was a wonderful excuse to don some glamorous threads and enjoy a gourmet three course dinner (including a selection of Balgownie Estate Wines), along with some lavish entertainment. Wishlist Spring Gala Luncheon The stars came out in force at the recent annual Wishlist Spring Gala Luncheon, which raised in excess of $150,000 for the Diversional Therapy Program in the Children’s Ward at Nambour General Hospital. The event’s entertainment line-up included hosts Natalie Barr and Mark Berretta, along with acclaimed model, actress and television personality, Annalise Braakensiek, and hair stylist to the stars and television celebrity, Joh Bailey. Fashionista Friday The last Fashionista Friday for 2013 was held last month at One on LaBalsa and as always, was a great success. Showcasing the fabulous new spring/summer range from Gingers Boutique, the lunching ladies raised more than $4000 for the Alex Dekens Trust. Alex lost her parents in tragic circumstances recently and the funds will go some way towards helping with her long road to recovery. Local business owners dug deep, contributing prizes for the raffle and auction – a testament to the generous tight-knit community we have here on the Sunshine Coast.

Let’s face it, parenting is never easy at the best of times, but add a blended family to the mix with step children, ex spouses and new partners thrown in and things can get very tricky. But that’s not to say it can’t work as I recently discovered over a delicious lunch at Daisy’s Place, where I caught up with a bunch of gorgeous women from both nuclear and blended families who shared their thoughts on what is often a complex situation.

F

amily – the meaning of the word has changed so much from our grandparents era when blended families were very much in the minority. How times have changed. These days, families come in all shapes, sizes and configurations. From same sex parents, to single parents, to blended to nuclear – it’s not a one-size-fits-all arrangement and fortunately we have become more educated in our approach, and more accepting of families that don’t fit the “normal model”. I had the pleasure of sitting down over a leisurely lunch with a gaggle of gorgeous ladies recently to wax lyrical about the topic and discovered just how far we have come. One of the ladies is even in the process of designing an app to help blended families to communicate more efficiently. Co-hosting lunch was the lovely Sandra Wills, owner of WealthWays, joining us was Angela Culling from Maps, Mandy Davies from Network Seven, long time friends Bernadette Cassidy and Mary Jenkins and last but not least, Profile photographer, Carly Head. profile: Ladies lets cut to the chase, do blended families work? angela: I had my first daughter at 19, was married six years later and had our son a year later. Unfortunately it didn’t work out with my husband and we parted company. But from the very beginning we agreed it had to be about the kids. Since then we have agreed on raising them together. I have remarried and my ex husband has a lovely fiancee who loves my children dearly. So I look at it as though they have four parents and if my children accept my ex husbands partner then I accept them too. It is hard in the beginning, there are a lot of emotions to deal with, no question, but we have made it work. mandy: Generations ago we lived around our family, aunts, uncles and cousins and we called our parents friends aunty and uncle. A blended family is a bit like that. You are raising them together. If you don’t have any antagonism towards each other, the children probably won’t either.

bernadette: We are a traditional family but our children have been raised by my friends too and I have helped with theirs, so I guess we are a kind of different blended family. We all raised each other’s children. We are always there for back up and the kids were all happy with each other. sandra: It is so refreshing to hear Angela and Mandy’s stories because you see so many blended families that don’t work and you want to give the parents a good shake because it can work. The kids come first but you need to have two sensible adults to start with. No one plans for their marriage to break down and blended families can be complex. My ex husband and I parted company when our two boys were babies but I am very fortunate that my boys father and myself have always communicated very well. He is a devoted dad and we have always put the boys interests first. profile: How did you cope with introducing new partners, what were the challenges you faced? sandra: I remarried ten years later. I guess it took me that long because I was reluctant to bring another person into the boys lives. I was concerned for Tony my now husband. Even though he is fabulous, I didn’t want to bring a man into that relationship to be their father. Having said that, he has always been a fabulous role model for the boys and such a wonderful husband to me. I am so lucky. mandy: I moved into a relationship quite quickly, I didn’t plan it that way, it just happened. My younger child Marcus was just eight and didn’t have much time to adjust so he found it hard. There are still some times he finds it hard. I found him drawing our old family structure recently, so I guess he is still living that fantasy somewhat. In the beginning it was very hard but it does get better. angela: I have a wonderful husband and the children love him but every now and then it’s hard. My daughter asked me recently what happened and why can’t it be the way it used to be but I just reassure her that we wouldn’t be

happy the old way and turn it into a positive. profile: What about the issue of discipline, that must create some challenges in a blended family? mandy: We have always had the understanding that when we are living in the same house, rules were respected. My husband doesn’t discipline the children as their father but as an adult there is respect. angela: My husband is very accepting that my children will always be part of our lives and he disciplines them fairly but he never tries to take the role of their father. We discipline as a team. The kids have respect for both myself and my partner. He always backs me up. mandy: The key is boundaries, not only with your children but with ex partners. profile: Are there any benefits to having a blended family? sandra: Tony has two children also and so because we had shared custody, we would have all four children one weekend and none the next! That was kind of a nice bonus. Some of our friends were quite jealous about that actually! profile: It must be difficult as a step-parent also? sandra: I think it is very difficult to be a step parent. My ex husbands partner is lovely and has been fantastic with the boys. Even if they came home and whinged about something I would always back her up! carly: I am from a blended family but I guess I never knew anything different as I was only a baby when my mum met her new husband. I did used to think that my stepfather loved his biological daughters more but I think that was just my teenage years. We get along very well now. profile: Do you think there is still a stigma surrounding blended families? mandy: The media have started to portray blended families in a much better light. doesn’t have to be a negative experience. It is good to see the change in perception. Blended families with intelligent parents can work. I think also we have a new generation of people who are from separated families themselves and don’t want to replicate their own experiences. mary: I think just because you are from a nuclear family doesn’t necessarily mean it’s better. I think there are a lot of people pretending to be a functional nuclear family. profile: How do you deal with confrontation when it arises? What mechanisms do you put in place? angela: If the children have an issue, I go straight to James (my ex husband). But I will admit that even though you sometimes go in with your back up and get defensive, often when you talk to the other parent and they explain the story there is usually a good explanation. It’s one of those times you need to trust that they also have your children’s best interests at heart. mandy: I guess we treat it differently, like it’s none of our business. We shut it down and encourage them to talk to the other parent. Because what is going on in the other household is none of our business. You have to have the belief that they are not going to do anything to put the children in harms way. profile: It must take a while to adjust to be able to approach it that way? mandy: In the beginning it is hard. You could drive yourself crazy. I have friends who are constantly worrying that something is going wrong and in some cases it may but most times if you know your ex partner is a good parent they are going to be fine. mary: I guess you can’t take on their household problems. angela: My parents have played a big part in my kid’s life and my parents know my ex husband very well. My mum has relayed lovely things back to me about his partner Bec and I know she loves them which makes it easier.

profile: Tell us about the app you are designing Mandy? mandy: The four of us (my ex husband and I and our respective partners) were sitting around the dining table discussing the children’s diet because you tend to cross over with things such as take away, dining out and treats, so we had to work out how to manage it and keep everyone in the loop. I came up with the idea of an app where we could all share information to make it easier and accessible for each other. sandra: I am just fascinated you are sitting around the table discussing it! mandy: The nice thing about my husband and his ex wife is that they have always managed their separation well. Every relationship is hard when you first break up but they have made a conscious decision that it would be about the kids and not them. If you are a separated person the gift you give to your child is that you can still respect their other parent and still communicate in a healthy way. My parents separated when I was 16 and I didn’t want to replicate the same experience for my children. You have to suck it up sometimes. It’s not about you it’s about the kids. mary: I can see how it would be a great way to pass all that info in the best possible way because I imagine it would be hard to remember it all and keep everyone up to date! mandy: The app is all about being able to communicate. It’s the little things like diet, medication, friends contact details, after school schedules, school notes that need to be signed etc. The other benefit is that you don’t have the confrontation at handover time as that is the time when tempers tend to flare about different issues. It takes the emotion out of it too. So there you have it. I came away from our lunch with a much better understanding of some of the extra challenges blended families face on a daily basis. However, it was refreshing to see how these young, modern, working women have found a way to make it work through love, patience, care and acceptance. At the end of the day, the message is clear, blended family or otherwise, it is the welfare of the children that must come first.

DAISY’S PLACE, GLENVIEW

I have dined at Daisy’s Place a number of times now, and it never fails to amaze me what a hidden gem it is! In fact, it astounds me that more people haven’t discovered this little culinary treasure trove right here on our doorstep. Steeped in history, owner Sue Joseph has a history of her own in the area. As a young girl she spent long days strapping horses for owners at the local stables. Even back then, a bond with Daisy’s Place began when it was known as the Rustic Cabin – the family regularly dropping in for a soda and the yummiest scones on the Coast. “Daisy’s Place is not about me,” Sue says. “We’re paying homage to a truly great lady who originally owned and almost single-handedly ran the Rustic Cabin. It will always be a huge part of the local community, and will keep giving travellers a place to enjoy themselves for many years to come.” Sue began rebuilding the venue in October 2010, breathing new life into it, but there is still a lot of Daisy in Daisy’s Place. On attending with my ladies at lunch, the menu at Daisy’s place was varied and delicious. Spoilt for choice, the entree selection offered an array of mouth-watering dishes including crispy calamari served with Sue’s favourite sauce and Mooloolaba prawns in garlic and white wine sauce, but the beetroot trio with goats cheese and balsamic onion was the winner for me – I couldn’t resist! A choice of mains was just as difficult, with dishes such as seared Tasmanian Salmon and 250g Cape Grim Scotch fillet vying for my attention. However, being a lover of Italian cuisine, I decided on the pasta of the day – a delicious seafood linguini. Light and flavoursome, it really hit the spot. If sweets are your thing, the dessert menu at Daisy’s is sure to satisfy also, with favourites such as the traditional vanilla crème brûlée, chocolate panna cotta and ice cream sundae on the menu. Once again, my dining experience at Daisy’s Place lived up to my expectations. Great food, great service and great location! Monica Topliss

She started life as Monica Zanni from Bristol. Now, she’s Monica Topliss from Buderim. Although a lot has changed in Monica’s life, her fascination with food has remained a constant for more than 40 years. Tonia Zemek meets the chefturned-author who’s serving up appetising alternatives for food allergy sufferers.

W

hen I found out I was interviewing Monica Topliss in Italy, I had my passport packed faster than you can say ciao bella. Not so fast signora. You see Monica had access to Skype, so my little Italian trip quickly took a dip. As it turned out, Monica was in Pallanza, about an hour from Milan. She was visiting her parents and celebrating her Italian father’s eightieth birthday. It was also perfect timing to toast her first recipe book, Topliss In The Kitchen. The rather risqué title is of course a play on words, but this book is anything but frivolous. Inside is a range of gluten-free recipes Monica has painstakingly researched and perfected over several years. Diagnosed with coeliac disease at just two years of age, Monica describes her childhood photo album as somewhat alarming. “I looked like one of those children from a third world country,” she says. “I was very skinny but I had this big pot belly from malnutrition.” Monica goes on to clarify that, although she had a good appetite and a plentiful diet, as a coeliac sufferer she was unable to reap the benefits from what she ate. As an adult, Monica has undertaken countless hours of research on 14

the subject of coeliac disease but as a child it was her mother who did the educating. In those early days, Monica’s mum carefully monitored her daughter’s diet and did her best to adapt the family’s daily meals around gluten-free cooking. “I have the most caring, giving mother in the world,” Monica says with great pride. “I feel so lucky to have grown up in a family with such a caring Mum. She was a great role model.” Her father was also a wonderful influence in those formative years. He raised his young family in Bristol, but his Italian heritage was the foundation of his parenting and his profession. As a chef, he contributed to a string of successful Italian restaurants throughout the United Kingdom. At just 13 years of age Monica started working in the kitchen of one of her father’s restaurants in Bath. “It was a great learning ground, and I’ve consequently grown up with a really good work ethic.” Her professionalism and prowess in the kitchen led to an impressive culinary career working with some of London’s leading chefs and restaurateurs. Unfortunately Monica’s love affair with her career didn’t extend to her country of birth. “I hated England,” she says rather matter-of-factly. “It rained all the time profilemag.com.au

and I was definitely one of those people who needed the sunshine.” In her mid-twenties, she found those elusive yellow rays as a backpacker in Airlie Beach. By the sand and surf, she met her future husband, Paul. “I’m very in-tune with myself and I knew I was in the right place with the right person.” The pair married and Monica took Paul’s surname, Topliss. She admits to being an introvert and the attention Monica’s new moniker gave her was never something she sought or fostered. The pair set up home on the Sunshine Coast and went on to have two children, Michael and Emma. Together the Topliss tribe turned around the fate of Tanawha’s old dinosaur park, transforming the site into Ristorante Topo Gigio, an Italian restaurant named after Mickey Mouse. “We had a thriving business, but it was so hard going to bed at midnight and having the children wake up at 5am.”

The work/life juggle continued when they left the restaurant for an organic juice bar and café in Maleny. Eventually the Topliss duo went out on their own, establishing Topliss Tarts in 2003 and selling their wares at the Eumundi market. Monica’s meticulously prepared menu included everything from risotto balls and homemade sausage rolls to lentil patties, but it was her gluten free goodies that proved overwhelmingly popular. Topliss Tarts Gourmet Gluten-free went from strength to strength. Monica set up a home-based commercial kitchen and packing room, supplying dozens of outlets around the country. Fast-forward to today and Monica is now the Executive Chef at Kunara Organic Marketplace, previously known as the Natural Foodstore, at Forest Glen. As well as preparing gluten-free meals and treats, she also caters for vegans and customers with other dietary requirements. “My role in life is to adapt recipes for people suffering from food allergies, and my niche is being able to share that with people through my writing.” The proof really is in the pudding. Monica’s first gluten-free recipe book, Topliss In The Kitchen, is already being met with high praise from foodies and home cooks alike. “Whenever I taste something delicious, I want to recreate it to that standard or better using gluten-free ingredients,” Monica says. “I go to bed thinking about food, and the minute I wake up in the morning I’m thinking about what we’re going to have for lunch and dinner. Life’s too short to just eat anything.” I’ll drink to that!

They are the proud and tireless workers who make their living off the land and from the cows who slowly graze on it. One such farm is Maleny Dairies, a fourth generation family-run dairy farm, nestled in the sweeping green mountains of the Sunshine Coast hinterland. It is a bubble of heritage, and a farm that has kept its values and traditions through its 64 years of existence, despite the changing frontier of the dairy industry. From the minute you step out of the car or tour bus, and breathe in the crisp fresh air of the hinterland, the authenticity of the dairy farm is magnetising. The dairy is a drawcard for tourists and locals alike, with visitors from the region and Brisbane, school groups and families, all delighting in the experience of a farm tour and the sampling of the freshest local milk products. Originating from the patriarch and matriarch of the farm, Harold and Dorothy Hopper, three of their four children, Ross, Keith and Kay grew up on the farm, working alongside their parents, and today, they are joined by grandchildren.

The dairy farm sits on 200 acres of lush hinterland property, home to the 160-strong herd of Guernsey cows, with Ross, Keith and Kay’s family houses dotted the countryside skyline. Since the deregulation of the milk industry in 2002, the dairy started bottling its own milk under the Maleny Dairies label and thanks to its flawless reputation and high demand for its products, now employs over forty staff. The popular tours that the dairy is renowned for originated ten years ago when the family began charging visitors two dollars to look through a glass viewing window into the production area to watch the production process. From there, interest grew, and the family saw it as a way to educate people on the farming industry. The fully guided tours run twice daily, and are operated by Kay, a member of the staff or recently, Kay’s son Lachlan, who delights visitors with his knowledge of the farm and occasional reference to his grandfather as he chronicles the rich family history. The tour guide hand milks Millie The Cow for demonstrations, and visitors are able to taste the fresh milk first hand, as close to nature as possible. Chickens and roosters cluck softly in the

background, mixing with the sounds of children laughing with delight at the baby farm animals. Visitors are given a virtual look at the complete dairy process, from where the cows are milked (producing up to forty litres each), to the viewing window in the factory where workers monitor the production line and vats swirl the creamy milk. The tour finishes with a nine minute informational DVD. After the tour, guests are able to soak up the farm ambience and grab a coffee or sample some of the delicious milk products. Set in the centre of the farm with a grassed area for the kids and a BBQ, the picnic area is ideal for sitting back and watching the farm come to life, with a breathtaking panorama of the mountains providing a sensational backdrop. The heritage of the farm is deeply embedded in the grains of the wooden structures, the grooves and fading wood reminiscent of eras gone by. The original office building is onsite and an old workers cottage has been converted into a hen house. The family presence offers a strong and steady undertone to everything undertaken at Maleny Dairies. Agricultural sustainability is paramount for the dairy, and the milk is processed onsite, with a large tanker then transporting it 100 metres from the dairy to the factory, where the milk is tested, processed, bottled, showered, stacked and stored in the cold-room. Due to the demand for the milk, the dairy works with eight additional farmers from Maleny, Gympie and Peachester, taking pride in supporting local dairy farmers. From the sweeping lane leading up to the dairy, to the lush rolling mountains and innate sense of family, Maleny Dairies offers a captivating remembrance of tradition for all.

Maleny Dairies has won various awa rds at the Brisbane Ekka and the Sydney Royal Easter Sho w, with every single product (either milk, yoghurt, cust ard, cream or flavoured milk) winning Gold, Silver or Bronze in each category. Julia Richardson used to be a smoker in a high stress corporate job in Sydney, that is, until she gave it all up. Having lost her partner and having nearly died herself, Julia is a lesson to us to make the most of every moment, as Jessica Jane Sammut discovers.

J

ulia Richardson is one of life’s infectiously positive go-getters – a woman who can’t help but radiate vibes of empowerment with each step she takes. A true example of mind over matter and a fierce subscriber to the ‘I can, I will’ school of thought, Julia survived a harsh and violent upbringing involving stints in a children’s home, before working her way to the top without a tertiary education to run some of Australia’s most prestigious corporates. Warmth and high energy flows in abundance from this petite power-pack, so it is little wonder that everything she sets her sights on comes to fruition, including a total life change when she hit 40, which saw her exit from the fast-paced hedonistic city existence she had been living to start again – a notion of new beginnings she was not altogether unfamiliar with, having washed her hands of her homeland at 24 years old. “Born and raised in Scotland, I didn’t have a happy childhood. When I was 16, I went on my first holiday to Ibiza with a girlfriend, and it opened my eyes. I discovered the wonder of travel. When I was 24, I therefore packed my bags to explore the world, my mother predicting that I would never return. And she was right. On arriving in Australia, I couldn’t believe how free I felt and how much opportunity there was. You can be anything you want to be here with a bit of hard work and the right attitude.” Within six weeks Julia had picked herself up a kombi van within which to get to know her new homeland, and had secured a coveted position working on the management team of the 500CC Grand Prix and Formula One motor racing taking place at Phillip Island, Adelaide and then Eastern Creek. “I worked cyclically for three months solidly on each race and then I’d have 24

profilemagazine

leave, taking off in the kombi, my job funding my travels. This went on for some time, until I felt ready to settle down and get a permanent job. And when I did, it was then that I found Pete, my partner.” Julia took up a high flying role at the Institute for International Research (IIR) in Sydney and having secured herself a true love, the tough life she had left behind in Scotland seemed a long way away. But sadly, tragedy was soon to strike. “I had just taken a position in Hong Kong with IIR to set up a new branch there, when Pete was diagnosed with Non-Hodgkin’s Lymphoma. He had been complaining for a while about pains in his legs, but had been referred to physios to fix them. The medics thought it was shin splints. The cancer had therefore been misdiagnosed for about two years. Eventually it was picked up, and we were devastated.” Returning to Sydney, Pete started chemotherapy and Julia took up a management role at Legal and General. After the first round of treatment, things were looking good and the medics seemed to think that Pete was cured. “We were extremely relieved, but it was strange because Pete looked very yellow,” explains Julia. “On further investigation, the doctors realised that in fact the cancer had spread to Pete’s liver, so further chemotherapy occurred and then a bone marrow transplant was organised. Within 48 hours of receiving the transplant, Pete was dead. His white blood cell count had been knocked out, and as a result, the dreaded golden staph infection had entered his body. I was stunned. There had to be an inquest as it should not have happened, and after this, I threw myself into work.” Standing back up after she had been knocked down so fiercely was the only option for Julia, demonstrating a resilience that would have been left profilemag.com.au

Julia went on to become the youngest senior manager at Commbank at the age of 32 soon after. She was the only senior manager who had not been to university. “Time went by, and I was nearing the age of 40, now working for AMP, who had approached me to take over their operations centre in Sydney three years earlier. I suddenly felt I needed change. My blood pressure was through the roof, I was working all hours of the day and my lifestyle was unhealthy. I had experienced a spontaneous pneumothorax when I was 28 and 31, and had lost a lung as a result. In fact, the second pneumothorax nearly killed me. I realised if I kept going, I was going to be dead very soon. So that day, I stopped smoking, joined a gym and started planning my escape. It was time to retire.” Within several months, Julia was tucked up on the Sunshine Coast, living the dream and getting fit. Not one to do things by halves (most of us might join a gym and attend a couple of times a week), Julia embarked on a personal training course run by the Australian Institute of Fitness, completing it in six weeks and starting at Fernwood Fitness soon after. This, from the woman with just one lung. After spending a few years with Fernwood, Julia went on her travelling ways once again, when she received a phone call from Jetts while in the UK to see when she was back in Australia. “They wanted me to assist with Jetts in Mooloolaba as it was not doing so well,” explains Julia. “After four months I joined the team at Jetts head office. I went on to open 72 Jetts clubs in Australia and New Zealand.” Yes, this is the lady that can’t sit still. Returning to personal training after some further worldwide travel (and a short stint with the Mooloolaba Bowls Club as their events manager), Julia is now back at Fernwood as club coordinator, not to mention a food coach and boot camp tyrant as well! “I have never felt better,” beams Julia. “Life is all about the way you think. It is perception. If you believe you can, you will. If you think you will fail, you will. It is all in your mind. You have to challenge yourself and rise up to meet that challenge. Do you want to be here or not? Make a choice. Only you are responsible for your happiness.” From a woman who has lived by this philosophy her whole life, Julia is a lesson to us all that life is a book of chapters, of which we never quite know the end. But one thing is for sure. Life is for the making. Don’t be cosy. Don’t opt for easy. Push. And push far and high. “Be a climber, not a puller,” Julia smiles. “Notice the colour of the sky, take it all in. For life is what you make it.”

Caring too much was a ‘character flaw’ which left Rachael Witton out of the booming debt-solution business founded on her own kitchen table eight years before. But the crushing blow was never going to keep this mother-ofthree down. In a powerfully candid interview, the 41-year-old exposes her childhood sexual abuse for the first time, shares the battles of her ex-partner’s mental health issues, and reveals her plan to spread more ‘blue skies’. There’s little doubt she will. After all, this is the lady who can eat her own weight in chocolate freckles …

“S

ome people really see you,” cautions Rachael Witton, the super successful business founder, financial adviser, and single mother, her brown eyes boring into mine. “Other times, you just need to fold the socks.” It’s Rachael’s code for getting on with life’s less enjoyable experiences. The tone is well and truly set for our catch up at Cotton Tree’s hot meeting spot, The Silva Spoon. Our whirlwind exchange of theories on the meaning of life which follow are interspersed by Rachael’s self-deprecating one-liners, which expose her razor sharp wit and mothering nature where she actively seeks to change a stranger’s day on a regular basis. But Rachael explains her values of success were ultimately not aligned with her business partners at the company she co-created in 1995 to help find solutions for people in debt. “I’m the same in every aspect of my life. In the corporate space I was in, it was very much people in crisis and helping them find blue sky and showing them they need to believe in something else while I ‘directed traffic’ so to speak.” It was her burgeoning passion for wanting to go that further step in helping people that proved the climatic catalyst, which would see Rachael walk away from the business she founded. “They (her partners) told me I cared too much. There is nothing wrong with that, but I was told it was not what they needed.” Rachael adds. “I want to talk to that interstate truckie who can’t pay his mortgage. I want to talk to that guy and feel what he is feeling and show him there is another way and that it is worthwhile. That was pretty tough – really tough. But you think okay, I need to find a space where caring too much is not a character flaw.” The timing couldn’t have proven less welcomed. Rachael and her three children, Jade (13), Lewis (10) and Meg (six) had just started to find their feet after Rachael’s partner of four years had left the family home at her request. Rachael explains she had fallen hard for this man several years her senior, which followed her divorce from her husband of 17 years. It was only after

the birth of their child, Meg, that his mental health battles came to light. “People look at me and say ‘How on earth did you get caught up in this?’ And I say well they don’t all come with a full disclosure statement.” Their acrimonious split, Rachael says, was long and combined with several attempts to patch it up before the final curtain fell. “I had no idea what mental health was. How destructive or how quickly it gets a grip. It’s not an easy space, and it was extremely traumatic for the children.” Rachael speaks with incredible pride of the “evolved little creatures” of whom she is lucky to call her children. “I was so determined my family was not going to be a statistic from this. I was probably hanging on too long so that my older kids did not go through what I went through,” Rachael says of the collapse of her own family at 14. “But children are selfish little creatures. As long as their world is kept relatively the same, and they have loads of love, then they will go on their merry way.” Rachael went on to put pen to paper of her battles being the partner of someone suffering with mental health issues, ultimately winning a Black Dog Institute Award and the subsequent national publication for industry workers and families. It’s irrefutably apparent that Rachael’s ease today in reflecting on her most recent fight has been some time in coming. “It’s very raw. I mean, it’s not fun. And I guess one of the things I wrote about was to ditch the superwoman cape. After walking away from her lucrative business, Rachael went on a holiday which she was adamant would not be an opportunity for too much self-reflection. “I only need five minutes to sit in the corner and suck my thumb, and then I am well and truly over myself,” teases the petite brunette immaculately dressed on this Spring day in fresh white lines of seasonal cigarette pants and buttoned chemise. It’s no small feat for a woman who endured years of unthinkable crises by the time she hit high school.

By only the smallest of miracles and a last minute change of heart by her then teenage mother, Rachael missed becoming a newborn in a foster home. And so she maintained a collision course with the greatest love of her life. “My dad is my great love – my greatest inspiration,” she says of the man who, luckily for her, walked into the life of Rachael’s young mother and together then had two more children. Her dad, then going on to be the mastermind behind her ultimate meeting at 17 with her biological father. That friendly relationship continues today. “People see me with the man I call Dad remark how much we are alike. We have a little snigger and he kicks me under the table. I am a lot like him.” One secret though threatened this bond. At the age of 13, while her mother and father were away for a day out, Rachael’s world shattered into a million pieces when a long-time family friend sexually abused her. Rachael declines to go into any details, but describes the level of that single episode of molestation as an “eight” on a scale of one to 10. For 10 years she carried the secret, even supporting the family’s ongoing ties with her assailant to avoid triggering any questions, but the memories are as fresh today as they were on that fateful day. “I didn’t tell anybody for 10 years. I thought people wouldn’t believe me or would question whether I had done the right thing. It’s a really vivid thing. I can tell you the colour of the stitching on the ceiling. Not a lot of people know. It is a part of too many people’s lives. If we had a better understanding of it …” Rachael’s voice trails unfinished into a thick silence. Over the next decade, which included her parents’ traumatic divorce just one year later, Rachael says her father would occasionally ask his A-grade but always pre-occupied daughter if there were any worries she wanted to unload. At the age of 23, and on the move to the Sunshine Coast, Rachael broke her silence. “I needed for dad to know that as a parent, his instinct was right. I have a few people who see what I do, but there are a handful of really amazing people who really see me.” Now life’s silver lining is abundantly clear, Rachael, who when asked for a list of vices, reveals an impressive appetite for chocolate freckles. “Everything happens for a reason. I have to find a silver lining. The silver lining living in a destructive mentally unstable relationship is my daughter. She is the ultimate silver lining,” Rachael says. “If I can’t find one, I just look harder. Sometimes you look at it too hard and

you can’t chase it down, but it will come back to you.” It’s her current journey as Business Development Manager for SunnyKids, a charity dedicated to breaking intergenerational cycles of poverty and disadvantage that has her excited for life again. It came from a chance encounter with SunnyKids CEO Chris Turner last year. In search of a new challenge, Rachael signed up for a 110km Sunshine Coast charity bike ride. She never passed a single rider in the marathon ride, but as fate would have it, only Rachael could find last place the perfect place to network with some fortuitous business contacts. A plan was set up to meet at dinner that night where she crossed paths with the SunnyKids CEO. “When Chris started to tell me about SunnyKids and what they do, I got goose bumps. The personal philosophies hit like a ton of bricks. “I am loving my new role at Sunny Kids,” Rachael says of the job offered to her after she co-ordinated an incredibly successful Father’s Day fundraiser for the charity.” “It’s all those things I believe in – making sure kids are okay and giving every kid an equal opportunity to shine,” she says enthusiastically. “Kids present with symptoms when struggling and then that presents at school. My job is to join the dots for SunnyKids to be sustainable and go forward in their future direction and incredible vision.” Rachael is also developing a website, It’s Your Rich Life, which focuses on a very personal passion for educating young people about becoming financially intelligent and independent. “I believe schools have a necessary focus on numeracy and literacy, but nothing goes to money management. How is it that I can meet a 23 year old who has finished school and uni, is out in the work force for a year and is bankrupt? We’re not talking about kids with no education and no skills, just an environment where they are sucked in by the retailers who show you can have a big screen TV if you have no money for zero interest.

But there is a base line of financial intelligence that is necessary to prevent you from learning the hard way.” With a string of successful careers, personal triumphs, a newfound stability and a new career she is passionately fulfilling, just what is in the cards for this fabulously single mother who is relishing the freedom of her 40s? “For so long, I felt like I had never been enough. Feeling like I never loved my ex-partner enough and that’s why he got his mental illness, or it’s why my family is fractured, or I trusted someone too much and that’s why he abused me as a kid. I wasn’t enough of a business partner,” says Rachael, her walls well and truly now crumbled around her feet. “I’m no longer plagued by those thoughts. I realise now that my measure of success is being able to make a significant contribution to the community, and if somebody in that crisis space recovers, that’s great, I love that,” she says as our meeting draws to a close and the sun begins to sink behind the Maroochy River. “But if my contribution also just frees up some brain space and someone can see enough blue sky, then I’ve had that holistic impact I want.” What’s in her master plan ahead? “My 40s are going to be pretty cool. I’ve always been a lot older than I am, until now. You know, when I was younger I was so determined with so many responsibilities – mortgage at 18, married at 20, I jammed a whole heap of stuff in a short space of time. Now I am at 40, a lot of that stuff you typically do I’ve done already – all the character building. Now maybe it’s time to have some fun!”

ESTLED in the hinterland behind Noosa is a town rich in culture, diversity and charm unlike any other on the Sunshine Coast. Spawned from a community of artisans, Eumundi is crawling with creativity - from the vintage corner store to the market district and homes stationed on the hillside. The people here are just as inspiring. Thriving on how their quaint little town can quickly turn from tranquillity to hectic with the dawning of Saturday’s sunrise. This is when Eumundi’s heartbeat really comes to life. Thousands of tourists arrive in droves to discover the wonders of Australia’s biggest art and craft market and more than 600 passionate stallholders come out to sell their products. The bustling markets offer a smorgasbord of homemade, home-grown and handcrafted treasures, from original artworks, sculptures, craft, furniture, toys, homewares, skincare, fashion, jewellery, local produce and more. And if you look closely through the shoulder-to-shoulder crowds that fill the gravel paths, you may even find the odd quirky stall or two – and you’ll be amazed

to see what some people will come up with! For foodies the markets are a haven of culinary delights. If the smells of international flavours wafting through the air aren’t enough to draw you in, you’re bound to succumb to the homemade cakes, slices, relishes and dips, or freshly squeezed orange juices, homemade lemonade and ginger beer on tap. It is hard to imagine that when the Original Markets opened in 1979 that a mere eight stallholders made a $30 profit. Now, the fair has expanded to include the Eumundi Square, Eumundi Parkside, and the EDCA, which fringe the Original Eumundi Markets. There is no denying these market festivities have a tendency to steal the area’s limelight, but if you look a little closer - and dig a little deeper - a treasure trove of sight-seeing, history and beautiful walking tracks will emerge. Towards the top of the wide main street on Memorial Drive rests a quaint café, come gift and homeware store, set in a 111-yearold bakery - a Eumundi icon. Stunning heritage-listed fig trees line the street opposite the cafe, planted in memory of fallen WW1 soldiers in 1918. There are art galleries galore, from

traditional Indigenous work to glass blown vases and canvases layered with colours. Just peek behind these gallery doors and you will find a character and story just waiting to be told. Pop in to the local bookshop for a vintage romance or history novel, or scour the endless shelves for quirky gift ideas - some exclusive to Eumundi. If you need to freshen up and want to indulge in a little more history, try the Imperial Hotel. Here you can enjoy a pint of their home-brewed lager while having a look around the historic building, which is currently in its second stage of a three-stage refurbishment. After a busy day on your feet, take the time to enjoy the scenery on the steps to the memorial gardens, while perhaps indulging in some culinary delights picked up throughout the day at the markets. Weekends could be wasted away wandering around Eumundi, as any visit promises to be as intriguing as the first. Rich in its culture, electric in its art, and offering a wide array of cafes and restaurants, it is hard to find something not to enjoy. Even if it is just a simple breath of good clean country air.

ALKING around the markets at Eumundi in toewith Louis Fermosa is like walking through a castle with a king.

He is a proud dad on the side of the running track, yelling out words of encouragement… “Go get them”… “You’re doing great”… “Keep it up”. The reasons for Louis’ proud as punch attitude comes from 20-years as owner and founder of the Eumundi Parkside, Eumundi Square and Eumundi and District Community Association Section. “The market fair is like its own community within a community,” Louis says, opening his arms to present the stalls. “See the families and the children, they have been raised here and have become part of the market family.” As a child growing up in Europe, Louis lived around the bustling market fair and had a yearning to one-day start one of his own. So, 20 years ago, he packed up his family and moved to the Sunshine Coast, purchasing a parcel of land at Eumundi. His land is now filled to the brim with more than 300 stallholders, showcasing their talents and selling merchandise from across Queensland. “The markets started small, only about 20 people. It quickly grew to 100 people and now we have so many, it’s quite nice,” he says modestly. Eumundi Parkside is one of the largest in the district, with about 100 stalls selling everything from jewellery, fashion, bakery goods, ginger bear and coffee beans. Opening on Saturday and Wednesday mornings, Louis explains the Eumundi Parkside is a commercial market full of merchandise from around the world. “There is something for everyone at Eumundi Parkside,” he says. The Eumundi Square is the next pit stop, and what Louis proud describes as the “micro-business incubator”. “Here is all about helping small businesses that don’t have their own office space start up,” Louis says. “We have had many, many success stories here, which is why we are now open Saturday, Sunday and Wednesday mornings.” Days off are no rest for Louis either, candidly taking up to 50 calls to potential stallholders, all vying for the opportunity to sell their unique goods at his markets. Despite his busy schedule, Louis still finds time to see how his stallholders are fareing. “They call me the benevolent dictator,” he says with a laugh. “I care and I want them to succeed but it is a business as well and it’s their business that needs to succeed.”

I wish I had been told to use this extra money to then reduce the home loan much faster, and not fall into the same trap again and again – burning up precious equity that could have been used for investing.

One and a half million people in Australia invest in property, only 0/5 per cent get to five properties or more. Why? They don’t keep their personal and investment money separate. I wish I had learned the key to successful investing and stress-free living was to keep these sides quite separate from each other.

NOT TO ASSUME A HOME LOAN IS A LONG-TERM DEBT

I wish I had been taught that a home loan doesn’t have to be a stone around my neck for 25 years, or best case, if I paid weekly or fortnightly, 17 years. What most people don’t know is that handled correctly a mortgage should be paid off in five to seven years just by doing your banking differently.


WEALTHY ‘N’ WISE Don’t believe what your parents told you. The biggest fallacy our parents taught us is to believe your home loan is a ‘long-term’ debt. Most of us saw our parents work hard all of their lives to pay off their mortgage, and then struggle to retire comfortably. It is nurture not nature that keeps most of us imprisoned on the debt mouse wheel. Our grandparents, God bless their little cotton socks, were taught by the banks how to do their banking. They passed this on to their children who passed it on to you. They had a lot to say about money …

RECOGNISE THESE SAYINGS? • “Money doesn’t grow on trees”. • “A penny saved is a penny earned”. • “If you count your pennies, the dollars will take care of themselves”. • “If you can’t pay for it – don’t buy it”. Most of us believe that we should work hard, save to buy our home, spend the rest of our lives working to pay it off, and hopefully, save a bit to retire on. It doesn’t have to be that hard. By treating your money right in the first place, learning the benefits of how loans should work, and setting up the correct finance platform for both fast debt reduction and smart wealth creation, most of us can pay our homes in five to seven years instead of 25 and get 10 properties in 10 years without struggling with the holding costs. It’s just a matter of setting up your loans properly. Look at your current situation. Have you been paying your loan off for years and seem to be getting nowhere fast? Add up the amount you have paid into your loan to date. Your monthly payment is say $2k x 12 months x 5 years = $120k. Most loans have only reduced by $5k or so in that time. Now we have an OMG moment! Time to do things a bit differently. Change the way you are doing your banking … if you follow the next six steps you will be well on your way to making a huge difference and will get out of debt fast.

STEP 1 GET THE RIGHT LOAN I believe the most powerful way to take control of your money (and life) is to set your financial platform up properly and have a clear plan of how to achieve your goals. I use a line of credit as my preferred option for fast debt reduction. I also prefer to split the debt into two sections, a line of credit and a term loan – both interest only. This enables you to have a smaller chunk of debt to concentrate on paying off at first, therefore you can see a bigger result more quickly which will keep you focused and motivated to do more! How do you eat an elephant? One bite at a time!

STEP 2 SET UP YOUR MONEY PLAN – (CASH MANAGEMENT) The next vital step is to work out what money comes in and goes out. I use the term ‘money plan’ instead of budget, as unfortunately, the word budget is often associated with pain and restrictions. A money plan is just getting organised with your money, keeping track and making sure that your proposed spending is less than your income. It is also very important to track what you spend against what you planned to spend, otherwise your efforts of debt reduction will always be thrown off track by the ability to afford to re-spend these savings on ‘stuff’ and shoot your debt reduction plans in the foot!

STEP 3 USE A CREDIT CARD Using a credit card for all of your spending, and then paying it out on the due date, means you are using the banks money free of charge for up to 55 days. Yes FREE. Now look at it in simple terms. Most people deposit their money into a bank account, and the banks pay little or no interest, and in fact, charge a monthly fee for the privilege of holding your cash. They are also usually sitting on a mortgage with the same bank and paying 6 or 7% interest on the money the bank has lent them. To top it off, they then borrow a few more thousand on a credit card and pay through the nose for the ‘short-term loan’. And worse still, continue to pay that money again and again and again making the item they purchased with the card five times more expensive than if they had paid cash! Let’s break the cycle! (Sorry, getting off the soap box now!)

By reducing debt, you are creating more and more equity in your home. Combine this with the natural growth in property and you can start to use this equity to create wealth with the purchase of investment properties and the like. Then the fun really begins. Ahhhh … but that is another good story. STEP 4 BANK YOUR PAY INTO YOUR LOAN Let’s cut out the middle man, your bank account that earns you nothing but costs you to have it is like the middle man in a transaction. Banking your money straight into your home loan is like going straight to the wholesaler – saving you a fortune! Your line of credit is just like a bank account. You can bank money in, set up direct debits (but first check if the direct debit can be on the credit card for no extra cost), and you can use an Eftpos card to withdraw cash. All the while your cash is sitting on your loan, reducing the principal and you are paying much less interest. All of your normal spending is being done on your credit card, and you are paying no interest at all on the card. The credit card can be paid out in full on the due date from the line of credit. This can also be set up automatically so you don’t forget!

STEP 5 STAY ORGANISED This method works so well. But … you need to stay organised. It is much less effective if you don’t actually do Step 2. Because your money is mixed, you can’t look at the available balance of the line of credit to determine what you can or can’t afford. This will often lead to a financial catastrophe, as you get a false sense of wealth. By constantly re-spending the amount you have reduced your debt by, you will never pay off your loan. This loan is like a loaded gun. In the right hands, it can be a safe and easy method of beating the banks at their debt game. In the wrong hands, or misused, it can shoot you in the foot.

STEP 7 KEEP PERSONAL AND INVESTMENT BANKING TOTALLY SEPARATE The main reason people struggle with their finances is because they do not separate personal and investment income and expenses. By mixing your money you will feel every hiccup of the investment journey in your hip pocket. This is a huge part of my clients’ success. Most of them are on a ‘10 properties in 10 years’ path. This is made easy and stress-free by following this simple rule. We then concentrate on reducing the debt on their own home, allowing for an improving lifestyle, while being able to easily create wealth for retirement by having a self-funding investment portfolio.

STEP 6 NOW START REALLY GETTING AHEAD ... INVESTING


WEALTHY ‘N’ WISE Most of us yearn for financial freedom, the power to leave our day jobs and enjoy a long, leisurely retirement. In reality, we all know that working hard, paying extra cash into our super fund and banking on a nice hefty payout at the end of our career isn’t necessarily going to provide enough wealth for us to retire on. Sure, it might give us some spending money in the short term, but many of us will live well beyond our 60’s and 70’s. So what do we do when our super dries up? There’s the pension, but after living on $50,000 to $60,000 a year, will you be happy settling for an $18,000 or so hand-out from the government? The good news is that with a bit of foresight, some smart strategies and the old reliable bricks and mortar, we all have the capacity to make our golden years even more comfortable and a lot more prosperous!

WHY PROPERTY? Property is a basic commodity. We have 70 per cent ownership in this country so it stands to reason that around 30 per cent of the population rents at any given time. This means you have a consistently significant pool of people requiring rental accommodation. Property has certain advantages over other asset classes, such as shares. It is less volatile than the stock market and historically, property has always increased in value. It has it ups and downs but it’s relatively dependable if investors are wise enough to understand that ‘time in’ the market is just as important as timing the market. If you get the right advice, and you buy the right property at the right time, you will always end up with more than you started with. Some of the most important points in property investment are as follows.

‘ ... it is the capital growth in property that makes it possible to retire on property returns ...’ THE POWER OF EqUITY The constant growth and reaping of equity can help build massive property portfolios without impacting on your income or your personal savings from working, allowing you to fund your holidays and cars from personal exertion income. In Australia, most property investors started out by using equity (leveraging) in their own home. If you are not willing to do this, it is very unlikely that you will get ahead unless you’ve managed to make a lot of money from other things.

‘The constant growth and reaping of equity can help build massive property portfolios without impacting on your income ...’ HOW MUCH IS ENOUGH So if equity is the golden goose that will provide for us in retirement, how much is enough? And for that matter, how much money makes for a comfortable retirement? While it would be awesome to plan to have a multi million dollar income and be able to fly all over the world … in reality, replacing your current income in retirement without working is a good, comfortable goal to aim for, and by following the right plan, easily achieved. Rule of thumb says that five median-priced properties paid out completely can provide investors with the ability to replace an average income. In Australia, rent tends to be about a quarter of the average income so by pure calculation, you would need four debt-free properties to give you an average income with a fifth property to pay for all of the rates, body corps and expenses.

PROPERTY THAT PAYS The next step is to consider what type of property provides this kind of return and can generate the level of income we are talking about. Most experts say acquiring a decent capital growth should be the primary aim of all property investment endeavors. Traditionally, it has been held that high growth properties will produce low rental yield, and vice versa. So if capital growth is of the utmost importance, yet living off the rental income stream that the properties can provide is the long-term goal, how can we achieve both outcomes with the one portfolio? The answer is that properties that begin as negatively geared should, if selected carefully and managed proactively, become positive cash flow producing assets over time. Although many investors may be tempted to reach for higher rental returns in favour of having to make up a cash shortfall with negatively geared investments, it’s important to realise that it is the capital growth in property that makes it possible to retire on property – not just the rental yields. Applying sunscreen is a vital part of sun protection and essential in keeping your skin shielded from the risks of sun damage. If your parents were into prevention, you may have had a colourful sports mouth guard made to protect those two front teeth from the trauma of a collision or impact with a football, soccer ball, netball, opposition or teammates’ elbow or head! Such knocks happen more often than you realise. If you did not wear a mouthguard and subsequently sustained an injury to those two front teeth, you may well have had one or both totally knocked out of your mouth. Do you find yourself irritated, not able to feel excited, or constantly thinking negatively? Do you have trouble sleeping, your mind won’t stop racing, or you wake too often through the night? Do you get anxiety at bed-time where you can hear your heart beating while your head is on the pillow?

It can be passed on from person to person very easily, and so more than one person in a household may be suffering from similar symptoms and both may be affected.

One single underlying issue can cause all of these symptoms including anxiety, nervousness, depression, or lack of excitement and motivation for life. Stress feels overwhelming, and little upsets cause feelings of anger. Palpitations, excessive heat in the body, tingling in the hands or feet, irritable bowel syndrome, foggy brain and lack of concentration including ADHD in children, can also be present. Often these symptoms have been going on for months, years or even decades. You may suffer just a few of the above symptoms or perhaps all of them.

Often, sufferers are able to correlate the first sign of symptoms, coinciding with a trip overseas where they experienced a tummy bug causing diarrhoea or vomiting. Australia is so close to the Indonesian countries it can be transmitted from, and Australians travel there often for their holidays, so imagine the amount of people coming back who could be infected and how it can be passed on quite easily through schools, day care centres, or places of work.

The cause has been found in the gut and seems to be widespread throughout the community. It is a malicious infection mainly picked up from travelling overseas, or having contact with someone who has travelled which is often only detected in specialised testing. This infection has been shown to release a neuronal toxin, affecting the nervous system physically and

ocal personal trainer, Odette Lydford, may now be the picture of health and vitality, but she also knows what it feels like to be on the wrong side of the scales. As an overweight young adult, tired of feeling unhealthy and unhappy, Odette, a former teacher, utilised her science, biology and health background to change her lifestyle and lost thirty kilos in the process. Celebrate the season! Nathan Spurling Sports presenter channel seven Christmas is always a fun time of the year. A time to put your feet up and relax with family, whether it be lying by the pool, eating way too much food, and of course opening presents and seeing the reaction on the faces of your young nieces and nephews. This year will be the best one yet for my wife, Jenna, and I. We had our first child in July, Aidan James Spurling, and while he’ll only be six-months-old come December 25, my wife, whose favourite time of the year is Christmas, will make sure this will be a day never to forget! There will be plenty of photos taken, presents to open and the obligatory Christmas onesie outfit for our son. No doubt I’ll get to enjoy that ‘Dad’s Tradition’ on Christmas Eve, of staying up to the wee hours of the morning trying to piece together some of his toys – quite a challenge considering ‘handy man’ isn’t high on my resume. It will all be worth it when we see the look on Aidan’s face as he tries to unwrap his presents and play with his new toys. I’m sure it is going to be the first of many great Christmas traditions to come.

The whole family helps out and everyone has a couple of special decorations only they can add. We always go to at least one ‘Carols by Candlelight’ – that’s a tradition. Once you have children, I think you realise how important those rituals are. Christmas morning is always so incredibly frantic! The children are awake ridiculously early. There are presents to unwrap, and then it’s time to get ready for church so we can get back in time to start cooking! We usually celebrate at our home and I like to have the tables looking special. I do that while Joe takes over in the kitchen. He loves it! People come and go all day - eating and drinking - until in the evening when we finish off with family games. We laugh a lot and argue a little! At the end of the night, I reluctantly switch off the lights on the tree – sad that it’s over. Until next year!

Annette Sym Author Symply Too Good I love Christmas and always enjoy having my family with me on this special day. This year for the first time in more than 20-years we will be celebrating Christmas on the Northern Beaches in Sydney with our elderly parents who are now in their 80’s. We are all big kids, so our traditional day starts with the giving of presents. I love to spoil my family and at Christmas time it gives me the great excuse to indulge in my passion for shopping. Following the opening of presents we then have our traditional Christmas brunch, which is the most important part of the day. Bill and I cook a fabulous healthy spread (yes, even at Christmas we do healthy) then the rest of the day is spent relaxing, swimming, watching a movie and just being together as a family.

Dan Sowden Selling principal for Ray White Maroochydore Every Christmas I drive up to the family farm at Gunalda, near Gympie to catch up with friends and family. It is a chance to slow the pace and spend time with loved ones, especially my little niece Mia. I spend Christmas day eating lots of fresh food, waking up to the sound of the coffee machine, instead of an alarm clock, before heading outdoors for some swimming and clay pigeon shooting. Christmas and Boxing Day is all about slowing the pace a little for a few days and getting out and enjoying the beautiful summer weather.

We all lead busy lives these days and for us it’s a chance to catch up and reflect on the year, and look forward to what awaits us in the next 12 months. Lorrell and I have been following the same traditions since our kids were little; we put up the same decorations on our Christmas tree, enjoy a great roast with all the trimmings and invite our family over to enjoy the best the season has to offer. We love to have a chat and catch up on all those things which can be missed in the hustle and bustle of our day to day lives. Before Christmas day itself we try to get to as many carols as we can, especially now that I am mayor. We also like to go to the vigil at the local church the night before to recognise the purpose behind Christmas. I really enjoy that service every year; I find it both relaxing and rejuvenating, and the perfect preparation to get into the spirit of the season.

I am a little crazy about Christmas. I decorate the whole house, spend too much money and generally force John to fake interest in menu planning, furniture relocation and exotic drink production. Other than that, we watch Ray Martin’s Carols in the Domain on Christmas Eve while I wrap presents and cook the last food. In the morning we go to the beach before Mass, come home and open presents. John always gets a new DVD from the kids which we watch after lunch. Then in the afternoon we get together with our friends Jen and Lorrie and whoever else is around for drinks more food and lots of Christmas love. On Boxing Day our youngest, Jemima, will turn 17 and we’re off to Woodford. Happy Christmas everybody – lots of love to you all!

1 ½ cups raw macadamia nuts ¾ cup desiccated coconut 8 medjool dates (pips removed) 1 tbsp coconut oil

Filling ingredients

A handful of chopped goji berries

From the 4 Ingredients Christmas Cookbook 1 1/4 cups caster sugar 1 tbsp cornflour Edible flowers; Petunias and nasturtiums Method

Preheat oven to 130 degrees celsius. Line a large baking tray with baking paper. Beat the egg whites in a large bowl with an electric mixer until soft peaks form. Gradually add the sugar, beating until dissolved. Use a large spatula to fold in the cornflour. Pile the meringue into the centre of the prepared tray, then with the spatula, spread the meringue into a 23cm circle, making a shallow well in the centre. Reduce the oven temperature to 100 degrees celsius and bake in the lower half of the oven for 1 1/2 hours or until dry and crisp. Turn off the oven and cool the pavlova in the oven with its door ajar. Serve topped with whipped cream and randomly scattered edible flowers. 70

A handful of coconut flakes zest of one lime

Method

Pulse all base ingredients in a food processor and then press into a spring-form cake tin. Pop it in the fridge. Pulse the avocados, coconut oil, raw honey, coconut cream and lime juice in the blender or food processor until it’s smooth and creamy, then pour on top of the base. For the topping, sprinkle the chopped goji berries, lime zest and coconut flakes on top of the filling and put it in the freezer for three hours or until set. Once it has set, remove from cake tin. 10g pkt fresh sage leaves 1 cup Panko breadcrumbs 1 teaspoon crushed garlic ½ cup onion finely diced ½ cup celery finely diced ⅓ cup dried cranberries 1 teaspoon salt-reduced chicken stock powder ¼ cup walnuts chopped Chicken:

2 x 500g double skinless chicken breasts wooden toothpicks 1 tbsp plain flour 1 oven bag cooking spray Method

Preheat oven 180ºC fan forced. For the stuffing: remove stalks from sage leaves then finely chop. Place all stuffing ingredients into a medium size mixing bowl and combine well. Leave to one side and start on the chicken. Tidy chicken edges and remove fillets. Using a meat mallet or rolling pin, flatten chicken to an even thickness making sure you keep each double breast together. Then place half the stuffing on the inside part of one double breast, and spread evenly over chicken. Lift other half of breast over top of filling to encase in the chicken. Use toothpicks to secure edges, so no filling will escape. Repeat this with other double breast. Place flour into oven bag and shake. Spray tops of chicken with cooking spray then place into oven bag and tie opening. Prick a few holes into top of bag then place onto a flat baking tray. Bake for 35 to 40 minutes or until chicken is cooked through. Remove from oven and leave chicken to rest in bag for 10 minutes. Lift chicken out of bag and strain residue liquid from bag into a small saucepan to make gravy. Remove toothpicks then carefully slice chicken with a sharp knife. Serve hot or cold. november 2013

“Some day they’ll find us, the Rainbow Connection, the lovers, the dreamers and me ….”. The age-old magical tune of that little green frog in our childhood promised a future of endless wonders, enchanted meetings and wistful dreams. Decades later, empowerment guru, Julie Rainbow, is helping women rediscover that connection to dreams and a road less travelled.

I

t’s a cool spring start to the week, and I first spy her sitting alone, patient and quiet, at a Mooloolaba café, staring wistfully out to a slightly chaotic ocean. Sensing she is being watched, she turns and spies me striding towards her for our first introduction, Julie Rainbow’s trademark mega-watt smile lighting up her face. The effervescent 42-year-old, born with her delightful surname, is the first to admit, the interview is likely to be her only moment’s peace that day. But it’s a testament to that little banjo-strumming frog sitting astride a log. He was onto something – Rainbow has nothing to hide. I’m a self-confessed privacy zealot. From checking my social network privacy settings twice daily to my disdain for internet banking. And I’m not alone according to my girlfriends. Airing personal errors in judgement or mistakes to potential public condemnation literally sends me into cold sweats. So when I discover what Julie does, it is not surprising that I can barely lift my jaw off the ground to interview her as she approaches the 10-year anniversary of her ‘life-changing’ event. Son Oliver was just two when he was admitted to hospital with meningitis that was so severe Julie was unsure her youngest child would ever come home again. Oliver’s prognosis improved, but he required constant care, so Julie handed over the family’s finances to her loving husband, including her own award-winning business. Unbeknownst to Julie, her husband had also been given a loan of $250,000 by Julie’s parents and a further loan by her brother, among others. It wasn’t long before Julie started receiving phone calls from debt collectors and shady business colleagues of her husband’s. His physically aggressive responses to her polite inquiries only cemented her fears. The money was all gone. To this day, Julie still does not know where it went or where her now ex-husband disappeared to after she kicked him out of the house eight years ago. What Julie also didn’t know was that there was further struggle around the corner, as she lost her family home, car and business, ultimately having to declare bankruptcy. “All I could ask myself was how could this happen? I’m a smart educated woman,” Julie says. Over the next seven years, Julie, Oliver (now 12) and her 18-year-old daughter Bethanie became an even tighter unit. Julie credits her ‘extraordinary’ and beautiful childhood as her saving grace, thankfully november 2013

giving her the incredible work ethic she needed to survive. Her face visibly falls in fact when Julie explains how the bad loan given to her ex-husband became the reason why her parents had to delay their retirement until their early seventies. But Julie’s faith never faltered, and her steady return from the brink prompted many requests for advice from friends and even business contacts on how she did it.

How do you function when you don’t have that?” After much discussion with her children and subsequently their emphatic support, four months ago Julie bared her soul and story in her website Clarity Road – a project from the heart designed to help people to cope when that truck they never saw coming, lands them squarely in the face. Offering support services, workshops, mentoring and information from all aspects of life – professional, personal and emotional – without the ‘spiritual’ stumbling blocks of similar self-help sites that many women find difficult to navigate, it is a haven for many. Love is also back in her life in the form of long-time partner Matthew, who fervently supports Julie’s dream. So steadfast is Julie’s resolve to help women, financial incentives from interested business sponsors are never a determining factor. “I’ve come up with a ‘circle of friends’, designed to show people and services who match our values without any financial kickback. It can seem like overkill having two sets of professionals advising you on your financial future. It would be great if one person could advise you on your complete situation – but accountants and financial planners have quite specific areas of expertise.

So unless your accountant is a planner (or vice versa), then I would recommend that you have one of each.

Can I remodel my jewellery into a new design?

Well, one option is to have income of less than around $30,000 per annum, however, hopefully you’ve been working, enjoying a comfortable lifestyle and putting something aside for the future, which has now arrived.

So you’ve got a great start-up business idea, but are struggling to know where to start when it comes to financing your grand plan. What should you do?

Towards the end of a thirty to forty year working life, with a little knowledge, some discipline, combined with the power of compounding, you should be able to own your own home and have an even larger nest egg of property, shares, or managed funds generating at least $50,000 per annum of ‘passive income’ (rents, dividends and interest) to replace your employment income, enabling you to maintain the lifestyle to which you have become accustomed. At this point, you are financially independent – you can stop work if you choose to, and replace your employment income with passive income from your investments.

The first step to securing funding for your new venture is to draft a solid business plan with the assistance of your accountant or business adviser. This process will help you devise business goals and a financial strategy that are clear to lenders or potential investors.

But will you have tax deducted from your investment income?

Your overall business plan should include details of how much money will be required and when, where the money will be sourced, what it will be used for, and when the borrowings will be paid back or when investors can likely expect a return. Having a thorough understanding of the plan’s strengths and limitations will help you define your financial requirements and identify your most likely sources of funding.

If you own your investments in your own personal name, then the earnings are included in your personal tax return and taxed at marginal tax rates. If your earnings are $50,000, you pay $7,797 tax, leaving you with net income of approximately $42,000 to live off.

You may choose to invest your own or other stakeholders’ funds into your business in exchange for partial ownership or you may decide to borrow funds to cover your costs that you will pay back with interest within an agreed time frame.

If you own the same investments inside your superannuation fund, instead of in your own personal name, then the earnings are included in your superannuation fund’s tax return and taxed at superannuation fund tax rates. The tax rate of a superannuation fund in ‘pension phase’ is zero per cent. You pay NO tax on the same earnings of $50,000, leaving you with net income of $50,000 to live off.

If you are looking to borrow funds to finance your business, keep in mind that there are a wide variety of business loans available from a range of different lenders, including (but not limited to) a variable rate, fixed rate, combination between variable and fixed rate, principal and interest or interest-only loans.

Of course, the tax and superannuation systems are too complex to explain comprehensively in this article, so it pays to get good advice from a Certified Financial Planner® at least five to ten years prior to retirement, to make sure that you have the right strategies and investments in place for the future*.

If you are a real estate owner, offering your property (be it your home, an investment property or even a commercial property) as collateral for the loan can be a way of securing a lower interest rate. E

mily Wilson is a lover of travel, sand, surf, hills, rolling mountains, sunlight, trees, flowers, laughter, hugs, kisses and love. So, capturing blushing brides, besotted lovers and laughing families surrounded by nature in a snapshot of emotion that will last forever is, in her eyes, the most picture perfect way to spend her time. The self-taught photographer has been on a whirlwind since launching her photography business, Emvy Photography, in December 2012, with the pace gaining further momentum as time flashes by. “It has all happened so much faster than I anticipated!” Emily enthuses. Emvy Photography is approaching its one-year mark, and already Emily’s diary is full with appointments from Brisbane to Noosa, with interstate enquiries beginning to flood in also. From being the “friend that would always steal cameras at parties to take photos,” Emily soon clicked that this was something she was very passionate about. “I was working in retail and had done a year of a Diploma in Events Management. I wasn’t sure where I was going or who I would be, until an inspirational friend introduced me to the world of photography. It was then that I found my place doing what I love, and I haven’t looked back since.” Emily followed her friend to shoots, helping out wherever she could, and soon was ready to step behind the tripod herself. Currently juggling work for Emvy three days per week with a part-time customer service role, Emily counts herself lucky that her hobby is her work. “If I’m not at work, I’m shooting or editing at home,” she explains of her home office in the house she shares with her supportive partner of two years, Gaine, and two housemates – also photographers!

Michele McGregor

C

elebrating the joy of special occasions is part and parcel of Michele McGregor’s life. From working in third world countries to the achievement of owning and running her own business, Michele’s love of creativity, community and opportunity have led to her present success. Since the business was established in 2009, Michele and her husband have delighted their customers with their unique tailor-made hampers. “It has been a challenging journey,” Michele shares. “However, we are used to projects, budgets, business management and the general ups and downs of work. We have the skill-set in place.” The skill-set Michele refers to has been obtained from a thoroughly different career however, seemingly a different world. In a former life, Michele was a health professional and spent almost five years working in the Middle East, from Lebanon to Dubai to Kuwait. Born in Vanuatu, Michele originally came to Australia to study nursing, where she met Peter working as a health administrator. As husband and wife, Michele and Peter became a strong team, taking their health expertise to third world countries, working tirelessly in the hospital systems. The project work was fulfilling, but the pull of Australia and their five children and seven grandchildren ultimately became too strong so they returned to the Sunshine Coast, and it was there that Celebration Hampers and Gifts first started. The business was soon up and running, and before long Michele was struggling for space and moved to new business premises. Joining her was Tanya, a business partner who is the perfect complement to Michele. Making sure her eggs aren’t all in one basket, Michele is diversifying with an online store, and is also expanding an organic babywear line. “For me, it’s about customer service, being an ethical company and finding unique, quality products,” she muses. profilemag.com.au

s the local owner/director of recruitment agency, Dove Personnel, Debbie Rawlings has much to be proud of. After the departure of her business partner in early 2013, Debbie was faced with the prospect of either taking on the business on her own (after 11 years of being part of a duo), or walking away. With strong support from her husband, family and staff, Debbie rose to the challenge and hasn’t looked back. Having lived a lifetime full of unique experiences, from travelling the world, to living on a yacht with her husband and four children, Debbie has now found peace and balance in her acreage paradise.

MILESTONES Life changing milestone 1: Travel to Europe and England for one year In 1989, I was 27 years old and my husband and I were seven years into our marriage. I had just lost my mother whom I shared a very close bond with, and with her loss, I felt a strange sense of self-determination and independence. I needed some time away, so my husband, Mike, and I decided to move overseas for a year. We landed in London with 80 pounds, no jobs and nowhere to live, but within a week I had secured my first office temping role and my husband was teaching. We bought a little convertible car that took us around the UK and Europe, and I celebrated my 28th birthday at the top of the Matterhorn in Switzerland. We both look back on this year as a treasured time of our lives. We were totally free. Life changing milestone 2: Offspring Mike and I were never ‘clucky’ for kids. However, once we decided we were ready for a family and experienced being parents for the first time, we went on to have four! We had two boys and two girls within six years and are awe-struck with the whole experience, from changing cloth nappies to the four young adults we now call our children. Nick, 22, Anna, 21, Mikayla, 17 and Eric, 15 constantly challenge us and keep us young by allowing us to be involved in their individual paths. We have always considered it to be our utmost responsibility to do the right thing by them. They are our most humbling achievement.

Life changing milestone 3: Sailing the high seas It was actually my husband’s dream for us to own a boat. Out sailing at Mooloolaba one day, Mike’s eye was caught by an old wooden sailing yacht anchored in the harbour. As we were preparing for a family camping trip around Australia, our dream to become boat owners was still very much in the planning stages. This chance sighting of the 60-foot timber sailing ketch, the Stephen Davies, resulted in our new adventure and a vessel which took us to fresh horizons, creating many memories in the process. After we returned from our trip around Australia, we moved on to the boat in Christmas 2002. In 2005, we took three months off to travel north to the Whitsundays. We built fires on deserted beaches, made footprints on untouched stretches of sand, lost track of the days, forgot routines and our destiny for the next day was determined by the tide and the wind. We made long-term friendships and bonded as a family. Life changing milestone 4: Acreage living This is my dream come true. We moved to six acres in Rosemount in 2009, to a property with rainforest, a dam and a beautiful Queenslander house. After living on the boat, I found we couldn’t cope in suburbia and I needed to find an area of tranquility to balance the stress of work. I love living here. The peace, the serenity and the silence of my acreage property are my haven – offering the balance between deadlines and the pressure of work. I never thought I would be a gardener, but I have found solace in my thriving vegetable garden. I find it therapeutic. I love sharing my fresh produce and eggs, and living a healthy sustainable lifestyle. I get to have the Shetland pony I dreamed of as a child, along with my daughter’s Clydesdale horse, two cats, two dogs, goldfish, guinea pigs, ten chickens and two goats. Life changing milestone 5: Becoming a sole business owner The retirement of my business partner in early 2013 resulted in me having to face the decision to continue running the business on my own as sole director, taking on total responsibility, or walking away after 11 years with the company. There was so much I still felt I could achieve at Dove Personnel that I decided to embrace the challenge. Consequently I feel motivated everyday. Luckily, I have an amazing team, and in turn they have inspired me to make sure the business is a success. The business still trades as Dove Personnel, however the new company entity name, The Lighthouse Keeper, is a name that I chose because it signifies strength and the ability to weather all conditions. Now, after almost 25 years of trading, Dove Personnel stands strong, and I am feeling more settled in my role as sole business owner. I look forward to seeing my own personal growth, along with financial security and the ability to spend more time with my husband and family.

Kylie Patchett grew up subscribing to a way of life which made her unhappy, but it wasn’t until her beloved father died that she saw the light. Jessica Jane Sammut talks to Kylie who reveals the ups and downs of her journey and why we must look after ourselves.

F

rom forensic scientist to holistic peacemaker, Kylie Patchett is a woman of two halves. Born and raised to believe in the traditional notion of getting a good education to obtain a secure job, Kylie, like many of us, subscribed to a belief system not of her own making, suffering depression and anxiety in the process as she battled to make sense of the conflicting voices inside her head. But as she grew older, she got braver in listening to those voices, and the more she did, the better she felt, ultimately leaving the life she knew behind to follow her heart and achieve her destiny. But it was a rocky road, and one that Kylie is keen for those around her, including her two daughters, not to repeat. “As a child, I found school easy. I was naturally bright I suppose you could say, so an academic pathway unfolded in front of me. I had always been interested in naturopathy having been helped by a naturopath when I was in grade 12 suffering from glandular fever. But my dad said ‘No’. I was consequently guided with a firm hand into science and then forensic science, obtaining a Masters in the subject and becoming a lecturer at Griffith and QUT.” By the time Kylie had spent a few years in the industry, she had managed to climb to the top of her tree in Queensland Health, and consequently went on to secure a position as the head of a private sleep clinic at The Wesley Hospital in Brisbane.

“It was not inspiring,” explains Kylie. “Here I was, ensconced in Western medical methodology, and all I wanted to do was practice natural medicine. “I didn’t like the way Western medicine treated an ailment individually without connection to the rest of the body. There was never any talk at the sleep lab about how mental health or nutrition could be affecting the body physically. There was never any discussion about the body being looked at as a whole – mind, body and soul – with one affecting the other. “So, what did I do? I continued to use natural medicine at home, and to grit my teeth and get on with my job at work. I enjoyed the financial reward of the role – I got paid very well. It was a high-end corporate position after all, and I had been led to believe my whole life that this was what success looked like. “However, on the inside I was dying. Each time I placed my hand on the door handle to enter work, I felt like I was haemorrhaging joy. I used to daydream of an escape.” Little did Kylie know that a change in life was just around the corner – one which would take her on a journey which would ultimately lead to her destination. Kylie discovered she was pregnant and in fact, went on to have two daughters in the same year, while at the same time her beloved father endured a stroke at 85 years of age and came to live with her. “I was suddenly a full-time mum and carer. Life was unrecognisable,” explains Kylie. “We moved from Brisbane to the Sunshine Coast, taking dad with us, and I went from managing a sleep laboratory in a highly driven and pressured environment to being contained within four walls with two young kids and an elderly unwell father. profilemag.com.au

“Consequently I fell into a black hole and was diagnosed with depression. I nearly lost my marbles. The unhappiness I had supressed inside for so long began to unravel as I found myself desperately searching for answers.” In March 2011 Kylie’s father sadly passed away, and she was bereft. Kylie fell deeper down that black hole, but sometimes you have to touch the bottom before you can come up for air as they say, and the event seemed to be the catalyst that Kylie needed to change everything. “As an only child, and with dad living with us, he was my number one rock and supporter. I embarked on a pathway of self-destruction, losing my identity and sense of place. I put on 25 kilograms in three months and became an aggressive mess. I was deeply unhappy. “One night, however, when I was sitting outside under the stars, I realised that dad had died at 91 having never expressed who he was or what he wanted. It was like a lightening bolt. I picked myself up and decided then that it was high time to redesign my life.” Searching for a way to combine her Western medical knowledge with her interest in Eastern medicine, Kylie contacted a lecturer from the Institute for Integrated Nutrition asking for a job, and incredibly was offered one in november 2013

America, moving her family to Portland and then New York. “I realised I had been living my life according to duty and someone else’s set of rules. I was never going to achieve my potential if I continued to do this.” Completing the Institute of Integrated Nutrition course, which combined Eastern and Western values into one bundle, Kylie became a health coach, and immediately began to feel more in tune with her calling, writing her first book The Tall Poppy Project while in New York, and returning to Australia to set up her own human behaviour coaching business, www. kyliepracthett.com. “Extra weight, excessive drinking, unhappiness at work – they are all symptoms of a problem underneath. I know this now. I want to help other women break down that rubbish in their head. This is my specialism.” Now running a thriving practice offering one-to-one coaching to unfulfilled high achievers, Kylie has finally found inner peace, following a path she had wanted to pursue all those years ago. “We are about to move to Maleny and the girls are booked in to go to the neo-humanist school there – where education of the whole person is endorsed and encouraged. I don’t want what happened to me, to happen to them. “Kids are not just brains on legs. I see plenty of smart people very unhappy with no idea how to help themselves. I was one of those people. If we are all taught how to look after ourselves, we can be who we want to be. I never want my children to sit behind a desk for the sake of it, unhappy and empty. Life is about making your heart sing, after all. “Nothing holds you back except your own idea of what is possible.” And that is a message for us all. profilemagazine

•• 135ml sunflower oil

•• 360g MGF flour blend

•• 170ml coconut milk

•• 140g raw almond meal

•• 150g pumpkin puree

•• 200g rapadura sugar Method Preheat the oven to 170°C. Put the flax meal and water into a small bowl and leave to gel for 15 minutes. Place the next four ingredients into a mixing bowl. Pour the oil, coconut milk and pumpkin puree into a separate bowl. Add the flax gel and whisk to combine. Pour the wet mix into the dry mix. Add your flavourings, and spoon into paper-lined muffin cases. You will achieve the best result if you only fill every second muffin hole – it will take double the trays required, but the muffins will cook more evenly using this technique. Bake for 30 minutes. Once baked, the muffins are best eaten the same day.

Geoff Campbell is the owner of successful fresh food franchise Raw Energy, which he and wife Liz founded in 1998. They now have five cafes on the Sunshine Coast and one at Coolangatta on the Gold Coast. We caught up with the down to earth local to find out what he gets up to when he’s not working.

Most people don’t know that I … am a qualified marine biologist and landscape designer

I start my day by… either with a swim in the ocean or with a walk with my wife Liz and out three pug dogs George, Vinnie and Poppy.

My favourite holiday spot is… Byron Bay or Nusa Lembongan in Bali…or Kavieng in New Guinea… I don’t know, they are all good!

I would love to be a better... surfer. I have been surfing for 43 years and for all that time I still think I’m only mediocre. But I still love it and I’ve never had a bad surf. It’s just that some are better than others.

Most people don’t know that I… am a qualified marine biologist and landscape designer.

I am happiest when… I’m on holidays with all my family down the coast somewhere preferably surrounded by good surf and bush. I love bush. When I am not working I am… spending time with my family and pug dogs… and surfing. I wish I could… be more patient. I am not a very patient person. I have always got too much to do.

The best meal I have had was at… Sardines in Seminak, Bali. It was the most amazing setting in amongst the rice paddies and the food was fantastic. My favourite restaurant is… Hungry Feel Eating House in Buderim. The food is always fresh, light and yummy.

When I was growing up I wanted to be… a marine biologist because I’ve always had a love and respect for the ocean. My greatest achievement is… having such a wonderful family and giving our children the best educations we could afford. Starting up Raw Energy 15-years-ago and keeping it going is also another great achievement. I have met some wonderful people along the way. In five years I hope to be… taking it a little bit easier but still running Raw Energy. Fortunately I enjoy work. The one person I would most like to meet… David Attenborough.
