GET MOVING BEFORE THE END OF YEAR

We’ve all done it, greedily indulged over the festive season, then in a food-comatose haze vowed to lead a healthier lifestyle at the turn of the New Year. We often see a life of health and happiness as a fairytale, perhaps at the strike of midnight our fairy godmother will magically melt those kilos away and make our dreams come true.

I

’m sure I’m not the only person who eats everything in sight as the days in December whittle away, determined to start the New Year with a clean slate and state of mind. I also become reacquainted with the gym, having avoided their ‘we miss you’ texts and phone calls for months. It’s a New Year and it comes with a fresh start right? Around half of the population make New Year’s resolutions, but only eight per cent achieve them. The top 10 are: lose weight, get organised, spend less and save more, enjoy life to the fullest, stay fit and healthy, learn something exciting, quit smoking, help others in their dreams, fall in love, and spend more time with family. Of the resolutions made at the beginning of 2015, 75 per cent were kept within the first week, 71 per cent made it past two weeks, 64 per cent extended one month and 46 per cent made it past the six-month mark. I’m not surprised the most common resolution is to lose weight, given it’s top of my list and many of my friends every year. In an attempt to make sure it sticks in 2016, I went looking for some inspiration and came across Dr Cris Beer, a health consultant and specialist in nutritional medicine, who has some nifty ideas to beat the bulge. profilemagazine

Start an exercise routine before the New Year rolls around, that way you are already in the habit of exercising before the hustle and bustle of the next calendar year starts.

BE PREPARED TO SAY NO! You can feel pressured at different gatherings and functions to drink more than you should and eat less healthy options but if you have it in your mind ahead of time that you will politely refuse then it is easier when this situation arises. Eating something light before you go out can also stop you overeating when you get there.

ASK FOR FITNESS CLOTHES AND ACCESSORIES Instead of receiving another pair of socks or scented soap for Christmas this year, consider asking family to buy you some exercise clothing, a pair of running shoes, a Fitbit, a gym membership or even just a voucher to go towards these. This way you will be all geared up and ready to start training in the new year.

INDULGE ON CHRISTMAS DAY Focus on keeping to your healthy eating plan for the whole of the Christmas/New Year period but enjoy indulging on Christmas Day. Do this without guilt knowing that you have been sensible at other times throughout the silly season festivities.

WATCH THE DRINKS Alcohol can quickly add up the calories. With the stress of the end of year close of business preparations, many people turn to too many drinks either at the end of their day or on the weekends to unwind. Consider reducing the alcohol and choosing healthier de-stress tools such as meditation, yoga, deep breathing, and walking.

Existing as an unwell, desolate law student was no way to live, but for ‘Elle Fit’ it was her normal, until she discovered the benefits of stretching. Now the social media queen of yoga is leading a wellness revolution, trading her books in for yoga mats and the power of Instagram.

O

fficially, she’s Eliza Landgren, but her 175,000 followers and devotees know her as Elle Fit; the lithe alter-ego that’s become her way of life and her livelihood. The iconic photos for which she is ‘Insta-famous’ for capture Elle in seemingly impossible postures silhouetted upside down at Point Cartwright, anchored by a single foot on the sand at Noosa or stretching easily on a grassy knoll at Moffat Beach. Although I’m very active and even take the occasional bikram yoga class, my flexibility and balance isn’t a strong point, so watching our photographer snap Elle as she contorts smoothly into an array of backbends, a scorpion pose and inversions leaves me slightly envious. However, Elle, 24, is quick to assure that her yogi abilities follow two years of hard work, turning her life literally upside down in pursuit of wellbeing after a long battle with health issues. Elle grew up in Cairns with her sister and parents, leading a very active, sporty childhood before moving to Brisbane for university in 2011. Choosing to study law and work as a secretary, “I don’t know what drew me to law but it was a nice challenge,” Elle grew disillusioned with the legal profession. Sure, a 20-something-year-old rethinking their study choices is common. But Elle was suffering from much more than doubt. It had started with anxiety as a child; then anxiety and autoimmune skin disorder psoriasis as a high school student; swine flu and a ravaged immune system during first-year university; a cervical cancer scare at age 20; a double dose of depression and anxiety; food intolerances; chronic fatigue; and back issues of sciatic pain and scoliosis. By 2012 Elle was barely functioning and juggling a lifestyle of late night study sessions, junk food, nights out and academic commitments. “Having chronic fatigue, anxiety and going through a bout of depression leads you to hit a point where you need to change things and that’s the point I reached,” Elle shares. “The chronic fatigue was a slow and progressive thing that gets worse and worse. And the sciatic pain and scoliosis was crippling pain at 22 years old and I just couldn’t deal with it.” In 2013, Elle started exploring alternative healing, stretching to help with her back pain and seeing a naturopath to help with her food intolerances (an eventual coeliac diagnosis). “It’s not necessarily something you can fix with medicine, it has to be a lifestyle change,” she says.

“I started yoga but I didn’t have the money on a uni student budget to go to classes all the time so I started stretching at home,” says Elle. Elle soon noticed the flow-on benefits and began to track her progress on Instagram by setting up @elle_fit in early 2013. “At the start I was not very flexible, I was just trawling the internet and seeing yogis on Instagram and learning a little bit on my own,” she says. “It was my online diary and just before I launched the brand I had 50,000 followers on Instagram so I already had a market and it just evolved naturally into a business.” In April 2014, Elle Fit Active was launched, before Elle deferred her fourthyear law studies in late 2014 and moved to the Sunshine Coast to join her family. She focused on her brand, launching

posters and a trilogy of e-books; Get Bendy stretching guide, lower body guide Get Split, and the advanced Get Inverted, featuring herself photographed in the range of poses. “It took lots of practice and falling,” she laughingly admits of the process. Elle’s passion for yoga deepened and she undertook yoga teaching studies. “I’ve done the 200 hours of yoga teacher training, 90 hours of Acrovinyasa (an acrobatic style), a Chair Yoga course, an Assisting and Adjusting course and a Mindfulness course, so my year off from law has been busier than law,” she laughs. With six subjects of her law degree to go, Elle says she will chip away at the subjects and finish her degree, but for now her focus is her business, and with the Sunshine Coast her virtual office, Elle’s soaking up the blissful lifestyle. “I’m a lot happier here doing yoga, doing what I love and being able to help people,” she shares. She’s a keen surfer, follows a gluten and dairy free diet, and practices yoga Asanas daily, while managing her back and fatigue issues. “It’s something I always have to be conscious of. This year I’ve had low energy levels but I’ve been getting back on top of it. With the scoliosis and sciatic pain, I haven’t felt any spasms starting which has been a lifesaver,” she says.

Elle Fit Active now encompasses two Instagram accounts, a thriving website with more than 20,000 guides sold to date, including a pregnancy and postpartum stretching guide, inspiring blog posts, and an international following. Elle’s also collaborated with Running Bare, Billabong and Lorna Jane. “I’ve created a very positive space, I’m happy to open up discussion but I’ve kept it happy and clean. It’s a nice online community … it’s a cool way for people to connect who have a common interest around the world regardless of what language you speak, what job you do,” Elle says. What started as an online diary to track her health, has given Elle her vitality back and enabled her to change lives along the way, sharing the many benefits of yoga from mindfulness through the breathing and meditation, to the strength and recovery associated with stretching. Following our interview, I attempt some of Elle’s more basic poses at home and I’m pleasantly surprised at how relaxed I feel and how quickly I can master some of the stretches. “I want everyone to know about stretching and how simple it can be, you don’t need to do fancy poses to get a benefit from it, even just super basic stretching gives you so much,” Elle says. Anthony and Vivienne Gorman take a less corporate, more personal approach to business through their boutique agency Gorman & Gray Property, injecting inspiration from their own cultural experiences as well as trinkets from their travels to ensure holidaymakers feel right at home on the Sunshine Coast.

iao, Anthony and Vivienne. Ben arrivata!” This warm welcome to Venice from their smiling Italian host has the pair relaxed in an instant. Anthony and Vivienne have traversed Italy twice in the past two years, soaking up the country’s bountiful culture, history and cuisine. They speak about travelling, art, food and wine with such fervour it’s alluring and hearing about their “very best holiday experience” back in Venice, it’s obvious holidays are valuable to them. The roaring of the ocean almost drowns out our voices as Vivienne, Anthony and I enjoy another perfect Sunshine Coast afternoon from the balcony of one of Gorman & Gray’s most prestigious holiday rentals. Actually it’s lucky we were able to secure the location for our interview and photoshoot given they’ve experienced record-breaking bookings this season. “Occupancy rates in 2015 far exceed those of last year and property guests are booking up to 18 months in advance,” says Vivienne. “Every single house was booked. The quiet times are getting shorter.” Gorman and Gray have been growing their suite of holiday homes every year to cater to the increasing demand and are always scouting for more beautiful properties – from Caloundra to Coolum, out to Buderim and in the Hinterland. “To cope with demand, we really need more homes,” says Vivienne, “Beachfront with pools, or homes that offer guests a unique experience.” “Our main area is beachfront which is nice and it’s always booked so well. We have no trouble letting them, we need more houses. “Holiday renting is ideal for homeowners as your home is better looked after when it’s a holiday rental than it would when it’s permanently let, because you’ve got staff every week checking on the property.” Holidaymakers come from far and wide such as Sweden, America, New Zealand, the United Kingdom and interstate. “Holiday homes are becoming more popular,” Vivienne says, “in Europe and America it’s very big, it’s taken us a while to catch on.”

Here on the Coast, Gorman & Gray are filling a niche in the holiday accommodation market, offering luxe properties for shortterm let complemented by personalised and boutique-style service. “We popped our names together on the door and are doing things the way we like to experience it,” says Vivienne. “We’ve been doing the holiday letting side for four years and that’s been growing organically through word of mouth and positive experiences.” Along with professional styling of each home, Vivienne has also injected a personal touch with some homes adorned with her commissioned art on the walls. They’re also drawing on the handiwork of other talented creatives, stocking locally-made soaps and handwashes, as well as showcasing local produce. “Viv is a talented artist, she paints beautifully,” Anthony says, evidently proud of his wife who has shown at the Canterbury Art Show in Melbourne and is highly sought after for commission work. Vivienne is also a trained florist and has a double degree in

This is an idea the Gormans have also adopted, often taking holidays with extended family and friends along with their two children – in fact the weekend after our interview they were heading off on an impromptu trip to the Gold Coast with the whole clan. Along with family holiday bookings, many of their homes are also popular for yoga retreats, business workshops and training and family reunions. “There are many different reasons why they come but most centre around family,” says Vivienne. “We get lots of families holidaying together because the homes usually sleep eight to 12 people,” Anthony adds. “Which is more cost-effective than getting multiple hotel rooms. He was also an owner/chef of two cafes, one was in an old baptist church dating back to 1904, “We love food, love entertaining,” says Anthony. Anthony and Vivienne, who have been married 13 years, moved from country Victoria to the beautiful Sunshine Coast in 2004 when Anthony took a job as a real estate agent with Ken Guy. In 2009, he branched out and opened Place Estate Agents in Mooloolaba, upon which time Vivienne joined him in the industry. But a year ago, Anthony and Vivienne wanted to focus more on holiday letting and operate with a “less corporate, more personal” approach and opened their own agency – Gorman & Gray Propery. “It’s nice to do something I have passion for,” says Vivienne. “I love holidays and travelling and staying in holiday apartments and homes and feeling like you’re part of the community when you stay there, whereas if you stay at the chain hotel it’s the same wherever you go. “We always stay at a boutique place where we can,” adds Anthony. Vivienne says one of the burgeoning travel trends is taking a holiday with the whole family – grandparents and all, as well as groups of friends booking extended stays together.

Anthony and Vivienne’s favourite things. “Holidays, food, family, styling, art, architecture, entertaining and all that combined,” says Anthony, “it’s all about what we like to do and where we like to do it”. “And we appreciate good service, so we want to make sure we give people good service,” Vivienne adds. Gorman & Gray Property have now swung open the doors on their new office in Buddina and are expanding the business with new staff. Anthony and Vivienne are planning their next getaways for the New Year, with Byron Bay, the Mornington Peninsula and New Zealand high on their list of to-do’s. “We’ll do some research, we’re touching base with people who are doing similar things in a lot of places, we’ve just got to get there and see how other people do things, there are a couple of businesses who have a good reputation and are doing it nicely. We are always looking at ways we can offer better service to our clients and guests.”

Rachael Paxton is fighting fit. Having won countless triathlons locally and abroad, Rachael was at the top of her game, but as quickly as she reached her peak, her performance went into a descent for no apparent reason. That was until an unrelated health check led to a cancer diagnosis.

F

resh from a morning run, Rachael Paxton sits down opposite me and looks the picture of perfect health, but beneath the shiny exterior lies a sinister secret. “The biggest misconception is unless you’re bald, you don’t have cancer,” she says. Born in Roma and raised on a large cattle station, Rachael led an active childhood, riding horses and motorbikes and playing team sports including netball and basketball. But when Rachael ruptured her ACL (Anterior Cruciate Ligament) in her knee when she was nine years old, doing a handspring on her front lawn, she was forced to slow down – albeit just a little. “It went ‘crack’ and felt like I’d broken my knee,” she says. “My dad is one of these hard country men and said, ‘Get up you’ll be right’. So I kept going and played basketball and netball for five years before I had it reconstructed.” Harbouring a keen interest in sport and its effects on the human body, Rachael, went on to study Physiotherapy at the University of Queensland and in 2005 was offered the sole graduate position at Nambour General Hospital. “I spent two-and-a-half years at the hospital and decided to move into a private clinic because I wanted to do sports and musculoskeletal work.” But the biggest life changing moment happened at the end of 2006, when Rachael was in a RPM spin bike class. “The instructor said to me, 'You've got potential to ride a real bike and I've seen you run on a treadmill. You should try triathlons, you don't need to know how to swim!’ I had never considered doing triathlons before, I didn’t even really understand the order of it or anything.” Keen to give it a go, Rachael ordered a bike and entered a race one week after it would arrive. “I was living at Alex and came down to the car park at the library and rode around, practiced clipping in and out for 30 minutes and then I’d ride out to Fishermans Road and back – I was ready for my first sprint race tri.” Rachael finished fourth in her category and a few months later completed her first Olympic distance triathlon. Within a year Rachael was top of her age group at the Mooloolaba Triathlon, ranked second in her age group at the 2008 World Championships in Vancouver, won the 2009 Perth

Triathlon/Australian Age-group Championships, and came second overall at the 2009 World Championships on the Gold Coast. This all culminated in October 2009 with her professional international debut at the Putrajaya 70.3 in Malaysia, where she won her race. In 2010 to 2011 Rachael competed in a string of international races with some impressive results, but within 18 months her performance declined for no apparent reason. “I was never sick but had some hormone imbalances so was sent to see a specialist doctor,” she says. “With triathlon and the amount of training you do, it can really affect your female hormones. I hadn’t had a period for seven or eight years and my GP was very persuasive to see a specialist.” The endocrinologist found a suspicious lump in her neck and within two weeks Rachael was diagnosed with papillary carcinoma – thyroid cancer. “I was thinking, how can I have this when I’m not even sick and am still training? The day I was diagnosed I’d swam 5km, had ran 10km and then went to the doctor at 9.30am,” she says. “The day before my first major op I swam, worked and went for a run. I continued to do what I wanted because it helped me cope mentally.” Following Rachael’s first operation in July 2013, she had radioactive iodine treatment – as thyroid cancer is slow-growing, chemotherapy is ineffective. “The thyroid absorbs iodine,” she says, “it’s a one-off treatment where they give you a pill and shut you in an isolation room for three days, because your whole body is radioactive.” In February 2014, Rachael had a recurrence and had one lymph node cut out, then another round of radioactive iodine, this time hit with six times the dose. But a review in August 2014 found the cancer had returned, prompting a third operation, but it didn’t work. In December 2014, Rachael had what she thought would be her last operation, but four months later a biopsy behind her sternum showed more bad results. “It’s a surgical cure so they’ll try and cut it out ahead of it spreading,” she says bravely. Rachael is now facing the biggest surgery of her life, one which could stop her sporting career in its tracks. “The surgery in my neck will potentially paralyse a vocal chord. That will mean half my airway will be permanently covered so normal breathing shouldn't be difficult but exercising to intensity will not be easy for me,” she says. “It’s horrible. The worst thing is not being able to finish on my terms.” But before Rachael has to rack her bike, she’s aiming to complete an Ironman in 2016 – there’s no doubt it’s going to be a big year! summer holiday issue

Celebrating 20 years on the Sunshine Coast, Underwoods Fine Jewellers is a local institution. We catch up with the general manager of the family-owned business to discover the secrets behind their longevity and continued growth and success in such a competitive industry.

Jewellery is given at sentimental moments that stay with us for a lifetime, that’s why it’s so important each piece is made to stand the test of time. His bride-to-be was blown away that her man had gone to such lengths, she absolutely loved the ring.” Tracye says many couples return to Underwoods some years after their wedding to upsize or re-design their original engagement ring when they are in a better financial position and Underwoods has put in place a special program designed to make it more affordable when the time comes. “We offer a program called The Dream Big Program because what you can afford today is probably not what you can afford some years down the track. We are so confident in the diamonds we sell, you can bring it back at any time and we will buy it back at the same price you paid for it so you can put it towards a new, larger diamond. “We recently helped a beautiful man who has been with his wife profilemag om a

Next year marks the 20th anniversary of the business and to celebrate, Underwoods at the Sunshine Plaza will undergo a complete refit to better showcase the stunning pieces they have on offer. “We are very excited,” says Tracye. “If you go to the Plaza right now you will notice a large portion of the shop is taken up by the jeweller’s benches, so we can’t show everything we have on hand. The new store will be double the size and we will have a separate soundproofed workshop at the back. “The refit will better reflect the craftsmanship produced by our amazing people. The quality and design that is being produced at the Sunshine Plaza store is absolutely astonishing and all our employees and customers deserve an environment that reflects that.”

Jodi Chapman is changing people’s lives for the better every day through natural medicine. Based on her own history of chronic illness, the now super healthy mother of two is passionate about sharing her knowledge with others so they too can live life to the fullest.

A

s I sit down for an early morning chat with Jodi Chapman, she and I reflect on how her life story reads a bit like the script from the 1998 movie Sliding Doors, exploring the nature of fate and self-determination. If it were not for a chance meeting with a somewhat unorthodox healer at the age of 23, her life would be completely different to the glowing success story it is today. To fully understand the gravity of that meeting, and how it was the catalyst for a lifelong journey towards healing herself and then others through natural medicine, let me take you back to where it all began for this passionate naturopath. The middle child of three, born and raised in a typical Australian family in the western suburbs of Sydney, life changed almost overnight for Jodi, who at the age of seven began to suffer unbearable migraines. The constant and intense pain would plague her throughout her teenage and adolescent years, ruling her life and crippling the once straight-A-grade student’s schooling in Years 11 and 12. “I remember the migraines were so bad, just touching my face was extremely

painful. I couldn’t even bear having a hat on my head because of the pressure,” says Jodi reflectively. Forced to rely on a number of painkillers each day just to manage her pain, Jodi became increasingly depressed and disillusioned with traditional medicine. “I was raised in a very orthodox family that followed traditional Western medicine, I saw the same doctor my whole life,” says Jodi. “Each time I saw another specialist, I would come away with more medication. They simply didn’t have any answers for me.” Continue over the page

Things went from bad to worse when Jodi lost her mother suddenly at the age of 20 and within a week of her passing, developed psoriasis - an autoimmune condition and ulcerative colitis, a form of inflammatory bowel disease. The overwhelming stress on her body led to her being hospitalised for weeks. But it was during this tumultuous time in Jodi’s life when things took a remarkable turn for the better that would see her life take a very different course. “I had just come out of hospital and I was on very high doses of medication and cortisone to control the migraines and bowel disease,” says Jodi. “It really was my lowest point.” But as fate would have it, Jodi was introduced to a holistic practitioner who was practising deep tissue massage to help people with arthritis and inflammation. “He was not formally trained and he actually started working with greyhounds and horses and progressed to deep tissue massage on humans to break down toxins in the body using a metal tool to get right down into the organs to break up obstructions,” says Jodi. “He believed that you could break down the build up of things that clog the body such as extra calcification around the bones that cause arthritis.” With nothing to lose, Jodi put her faith in his unconventional treatment and within the first couple of visits, despite some bruising from the deep massage, she began to see a drastic improvement in her health. “The first thing he did was break down the buildup of toxins in my head,” says Jodi. “I had been full of sinus congestion for 23 years.” But as Jodi would later discover, that was just part of the reason behind her relentless headaches. “He also worked on my gut. I had to come off all the medications that were controlling my disease and he gave me a

book on food combining. I came off all dairy and wheat, and although I didn’t know it at the time, dairy was a major problem for me. By following a non-processed diet, no sugars, just fruit, veg, meat and little grains, it worked. I was blown away, my life changed incredibly.” With a new zest for life and inspired by her holistic practitioner to study natural therapies, Jodi took a leap of faith and enrolled in a Bachelor of Health Science at university. Once again the universe stepped in and on the day of her orientation a naturopathy major was being introduced to the course for the first time, guiding her towards the life she was meant to live. “Coming from a time in my life when I had no control over how my body was responding to everything I touched, to becoming well again drove my passion,” says Jodi. “Every time I found something new, I was very excited by that. Your passion comes from your experiences in life, that’s why everyone has different passions.” However, as is often the case with success stories, it wasn’t all smooth sailing for Jodi and, during the next few years life became a balancing act as she and her then husband juggled the rigours of work, part-time study and two young daughters. In search of a change of pace from the frantic Sydney lifestyle, the couple packed their bags and moved their family to the Sunshine Coast where Jodi completed her degree and opened her business Advanced Wellness & Behavioural Centre in Buderim. The next few years would see Jodi’s business boom, the increasing number of staff requiring her to relocate her business not once but three times. It’s testament to her sheer hard work and passion for helping others through her own health experiences. “My main problem turned out to be a couple of common food allergens,” says Jodi. “The majority of my work includes changing my patient’s diet. Bacteria are controlled by the type of diet you eat. It’s all linked. If you are eating a poor diet you are promoting the bad bacteria and they grow and multiply and become destructive to the good bacteria in your gut. “There are layer upon layer of things that can impact your body. The human body and brain is genius. One little thing can cause a bit of an issue but the body learns to deal with it. It’s when you have one thing on top of the other, the body can’t deal with the level of pressure and your brain will drop in function – oxygen levels will drop, your nutrient levels will drop and your serotonin and other neuro transmitters will drop in production and then you don’t have anything to keep your brain alert and functioning at a high level. People will often complain of foggy brain, lack of concentration, trouble sleeping, poor memory and then depression and anxiety can come along and high levels of stress because they are not coping.” Jodi says all new patients are screened for the risk of allergy and other diseases, then simple blood tests are taken, which gives her a good indication of where to start with their treatment. “The tests do pick up a huge range of responses to anything that will inflame the gut wall. It’s a very simple blood test and we have the results in a week. You can start making changes to your diet based on the results straight away and often people are feeling much better within a few days,” she says. “When you realise they have gone 40 years with the same symptoms you suffered for the first 20 years of your life and then being able to change that in a very short space of time drives that passion even further. “I still get goose bumps every day. It might be someone who is only four weeks into their treatment and they come in saying they feel so much better – I think yes!,” says Jodi, fistpumping the air! Not surprisingly, Jodi says the results from the tests show a direct correlation between the number of allergens detected to the patient’s diet growing up. profilemagazine

“When I test those who are 60 and over, their allergy levels are typically fairly low. Even though they had a staple diet of bread and potatoes, their breads were made clean without chemicals and preservatives so there was nothing for the body to react to. They also had a high vegetable and meat diet. When you eat meat with carbs the protein protects you from the insulin the carbs produce. “Then you have those sitting between age 35 to 60 and their number of allergens are three times the amount of the previous generation. It makes sense because food was beginning to be processed around the ‘70s, we started to add chemicals and flavourings and foods like margarine were introduced. “The children of that generation have between 70 to 100 food allergens on average and the only reason for that is because their diet is laced with chemicals and preservatives.” While there are those who are still sceptical of a more holistic approach to health, choosing the traditional route every time, Jodi says there are many different styles of naturopathy these days, it’s just a matter of finding one that suits your needs. “Naturopaths have changed a lot over the years. knew disposable nappies took a while to break down but did you know it takes more than 300 years! Yes, you read that right, 300 years! There really is nothing “disposable” about them. While those statistics are shocking indeed, as a mother of three, I am all too familiar with the convenience they offer, especially during the first sleep-deprived year of your child’s life, when they require up to 10 nappy changes a day. But what if you could have the convenience of a throw-away nappy while still being kind to the environment? Founder of Eco Nappy Sean O’Donnell says you can. He’s created a biodegradable nappy made primarily of bamboo and other organic products that is highly renewable and breaks down in less than 12 months. “We created Eco Nappy to give a biodegradable product for mothers that provides comfort and excellent absorbency for their children, without compromising quality, while having less impact on the environment around us,” says Sean. “So many mums I talk to say ‘I wish they were around when I had kids ... if I knew what an impact the nappies I used had on the environment I would have looked for an alternative’.” Sean was inspired to create the biodegradable nappy while filming for an

environmental organisation, surveying the Great Barrier Reef a few years ago, during which time he was made aware of some of the man-made products causing great harm in our oceans – the disposable nappy being one of the worst offenders. “I was shocked to discover a nonbiodegradable nappy put in the ground can take 300 years to break down. I knew I had to do something to make a difference,” he says. Growing up in a remote town west of Gympie, Sean says he has always been environmentally aware. “Around the age of 10 I set up buckets outside our house and asked my family to recycle well before recycling was even recognised in Australia, it must be in my DNA.” Sean says not only is bamboo biodegradable, it also has no pesticides or herbicides, and contains natural antibacterial properties, perfect for those with sensitive skin. “I have one customer whose baby (Belinda Owens and baby Evie, pictured) was plagued with terrible rashes from every nappy she tried until she swapped to Eco Nappy. She did nothing except change nappies and it cleared up straight away. Belinda later told me how as a new mum looking for a natural alternative, she was delighted. Those sort of

• Bamboo is an eco-friendly, highly renewable material which grows much faster than wood. • Some types of bamboo can grow a metre in 24 hours and 20 metres high in 40 to 50 days. • Bamboo can be harvested and no re-planting is needed due to the root system remaining every harvest, which also helps to greatly decrease erosion. • Bamboo has few pests so pesticides are not required and in its natural environment it will need no irrigation and no fertiliser. • Bamboo is also an excellent sequester of carbon, up to 70 per cent more per year than a hardwood forest. • All these factors keep the carbon footprint low and you using a highly sustainable material.

For 15 years, Ash Gierke was a disciplined professional swimmer, who at her peak was representing Australia and while that brought her incredible glory and satisfaction, nothing compares to the rush she feels when on air for Hot 91.1 – this is where she is her happiest.

A

sh Gierke’s heart pumps faster as she looks up at the clock, it’s almost 1pm. Then as the hour strikes and the red on air light beams, she’s live. “When you’re going live it’s an adrenaline hit, each and every time,” Ash says with a beaming smile. “I always relate it back to my swimming because I got that adrenaline hit when I used to race and it’s the same thing here, it’s a challenge, it gets me excited for what I’ve got to do – I love radio, it’s everything.” Sunshine Coast born and bred Ash, now aged 25, participated in 15 Australian championships, taking out fourth place at the World Cup in Sydney 2008. And when she just missed out on qualifying for the London Olympics, Ash thought her dreams had come crashing down around her, but in fact those broken pieces paved the way for a bright future in radio.

Ash has become a familiar voice on Sunny Coast radio airways, owning the 1-4pm time slot every weekday and co-hosting breakfast with Blake every Saturday between 6-9am. “If I can have fun every single day it’s not work. I come here and I get to work with some of my best friends and talk for a living,” she says. “I want to be really good, I want to be a household name and if I can push myself and be thrown in the deep end, I like the challenge.” Of Ash’s seven years in radio, she has also spent the last three years in promotions and marketing, handling all external marketing of the radio station as well as all of the major promotions heard on air. One of the station’s premier events is the annual Hot 91 Sky Show, which will be held on 23 January, 2016 at Cotton Tree Pool. “The first year we got 10,000 people, the second year we got 18,000 and we’re hoping to go bigger next year,” she says. “We do it for our listeners, it’s a way of us saying thank you to them because they listen to us all the time and we feel like we’re always with them and it’s a good way for us to give back. “It’s something for the families because we’re very family orientated, it’s right up our alley.”

ith a few Coopers ales under his belt, Scott Roberts made a casual comment to long-time friend Jack Childs about buying one of his businesses. But it wasn’t the beer talking, it was a genuine offer to buy Think Speakers and Events – and ironically the idea was touted at a TSE event; Lunch with a Legend with Glenn Cooper. “When you have a few drinks you start loosening up in your conversation a bit more,” says Scott, “but I’ve always loved the concept of Think Speakers and Events, it just so happened an offhand comment to Jack has lead to where we are today”. Sitting around the marble boardroom table, Chris and Jack Childs of Think group of companies and Scott and Fiona Roberts of IBN Direct, meet to nut out the final details of Think Speakers and Events’ change of ownership and both parties are equally as excited about the growth of the business. Chris and Fiona have been friends for 15 years, having met in Rockhampton where Chris was a mortgage broker and Fiona was a business development manager with a lending institution. “It’s going to be a match made in heaven for these guys to run Think Speakers and Events,” Chris says. In late 2014, Chris and Jack launched Think Speakers and Events to fill a gap in the market and have brought the likes of profilemagazine

By the end of 2016, Think Speakers and Events will have expanded to take in the Sunshine Coast, Brisbane and the Gold Coast and by the end of 2017, it will be a national brand, also covering Sydney and Melbourne. “We don’t like to do things in a small way, so we’ve reached out to some pretty big names, we want to bring some heavy hitters to the Coast,” Scott says. “From where TSE was 12 months ago, it’s a completely different company now, so what we’re taking over has had a great foundation and we just need to continue building on that. “I’ve lived on the Coast for most of my life, and rarely have we had an event company on the Coast who can bring these type of people here – that’s a great credit to what Jack and Chris have done with Think Speakers and Events.” Chris and Jack will remain heavily involved in Think Speakers and Events as the major sponsor. Starting out selling rubber sponges door-to-door at the age of 10, Allan Pease has mastered the art of communication, offering such a unique insight into human behaviour he is now sought after by some of the world’s most respected and prominent leaders.

Although the coffee order was lost in translation for Putin, there was no language barrier for Allan, who is fluent in body language.

Putin had not long resigned from the KGB and orchestrated the seminar for 300 of the nation’s new leaders, having been appointed the role of Deputy Mayor under Mayor Anatoly Sobchak’s leadership. Allan has watched Putin’s rise to Russian presidency with keen interest, eyeballing his every move to see how much he adopted of his teachings. “Russians have what I call the Soviet face, which means the whole time they look really serious, and that’s okay within Russia,” he says. “When you look at Putin, he wears this face, and one of the most important things I teach Russians is if you’re going to impress foreign leaders you can’t look like that when you have other world leaders like Malcolm Turnbull and Barack Obama smiling and Putin showing no emotion.” Allan’s infatuation with body language began in the 1950s, when he would shadow his father, an insurance salesman, around his hometown of Lorne, Victoria. “Back in those days, insurance salesmen would go out and collect the premiums and, as a form of canvassing for new business, would try to sell more insurance and try and meet the neighbours,” he says. “My father would take me with him two or three nights a week, the strategy was, there would always be women at home and a man on his own had trouble getting inside, but with a five-year-old they always invited him in for a cup of tea. “Rather than studying my homework I’d sit around watching my dad negotiating and presenting. He’d tell me if the price is too high, they’ll move back and put their hand on their face or on their head; if they’re interested they’ll lean forward and ask a question. I thought everybody knew this.” By the time Allan was 10, he got his first job knocking on doors selling rubber sponges and then as a teenager, spent five years selling pots and pans on weekends and after school. “At 19, I joined the life insurance industry, which was big time selling,” he says. “I wanted to give it a go because I was a crack salesman, the best pots and pans salesman you ever saw.” After 12 years in the insurance business, Allan went into business with Kerry Packer and Tony Greg, founding Lion Insurance Brokers. “When I was selling pots and pans, they’d get me to stand up in front of the sales group every week and teach them how to sell, I started my career as a teenager talking about handling objections, observing people, what

customers were likely to do by the way they behaved,” he says. “That was extremely popular so I put it into a 20-page handbook that I’d sell for $10 and they would knock me over in the rush to get one.” In 1976, Allan, then aged 26, released his first book Body Language, not long before he was picked up by Mike Walsh, who started The Midday Show. Three weeks later Body Language was number one in Australia. “I remember thinking if I can sell 10,000 of these it’ll be a smash hit,” he says. Not one to rest on his laurels, once the book hit 30,000 copies, Allan scoured foreign phone books for big publishers in

Unfortunately Allan was turned down by everyone, so bought a cheap plane ticket to New York and walked up and down Wall Street, knocking on doors. After further rejections, a tenacious Allan signed with an agent who sold the book to Bantam Books. Body Language soon went number one worldwide and was translated into 54 languages – last year it was still number one in six countries, almost 40 years on. “I knew it was going to be successful but I hadn’t thought about it being a global thing because I was only in my early 20s,” he says. In the 1980s, Allan had his own TV series airing across the Southern Hemisphere, and was a regular guest with TV personalities including Don Lane, Daryl Somers, Ray Martin and Kerri-Anne Kennerley. “It all expanded from a practical thing of going out with my father and watching how he would present,” he says. with wife Barbara, sold 13 million copies, eclipsing Body Language’s six million copies, his third book sold three million copies and his fourth sold another two million copies. Allan and Barbara became a worldwide smash hit and for the next 15 years, travelled around 70 countries on book and seminar tours. Today they still travel three months of the year, spending the most time in eastern Europe, especially Russia and Siberia. Over the years, Allan has met and appeared alongside a bevy of big names. Most recently, he was in Moscow with Richard Branson, he’s sat in green rooms with Yorkshire Ripper Peter Sutcliffe; Lindy Chamberlain; Princess Anne of England; and met British football player Will Carling on the night the story broke he was having an affair with Princess Diana. Allan also has a state-of-the-art recording studio at his home in Buderim, which sees him often rubbing shoulders with the stars – Curtis Stone recently dropped by to record a voice-over for his television series California Dreaming; and his studio engineered the title track to the movie Home, with Rihanna. But while Allan enjoys dabbling in such industries, his passion is human behavioral studies, his bibles are Charles Darwin’s The Expression of the Emotions in Man and Animals from 1888 and Desmond Morris’ The Naked Ape written in the late 1960s. “Some body language gestures are universal, the most universal one is flashing (raising) your eyebrows, monkeys and chimps do it too,” he says. “It’s an eye-widening signal used by primates to communicate, ‘I see you’ and it has a powerful effect on others when you meet them.

“We started putting this biology into business training, for example, if you go to a coffee shop there’s a line of six people and you’re debating whether to stay or go, we’ve found if the person serving gets your eye contact, you’ll stay seven minutes longer before you leave, because you’ve been recognised with an eyebrow flash.” Another observation from within large corporations is as people, mostly men, are promoted, they show less gestures and keep a straight face when meeting people and shaking hands, whereas people in lower ranks tend to eyebrow flash, nod, and smile with their teeth. “Showing your teeth when you smile is the second most common gesture and primates do this too; we’re the only land animal that reveals their teeth and doesn’t bite next,” he says. “By showing you my teeth and giving you an eyebrow flash, you instantly feel comfortable and not threatened, whereas when someone who meets you and shows no expression are intimidating. “These are only little signals but they’re enormously powerful in making first impressions because first impressions happen in under four minutes, that’s when people decide up to 90 per cent of their opinion about you.” Not long before our interview, Allan penned the last sentence of his new book, within its pages are the letters he wrote spruiking his first book, and all of the replies. The book titled The Answer is about how to get what you want out of life and if the tales Allan has just spun are anything to go by, it’ll be another best seller.

There’s a buzz in our region surrounding the proposal for an undersea data communications cable, that if approved will place the Sunshine Coast firmly on the map as a digital hub and internet gateway attracting global corporation headquarters. Anna Rawlings investigates.

I

t’s the development that could be a vital element of the Sunshine Coast’s evolving digital landscape and the region’s sustainable future, linking directly to foreign internet connectivity and global communications systems to form a strategic piece of national infrastructure. A proposal outlining the installation of an undersea data communications cable on the Coast, was pitched to thenCommunications Minister (now Prime Minister) Malcolm Turnbull at the Sunshine Coast and the New Economy Forum on 4 September, 2014 at the Sunshine Coast Airport. Already garnering support from the private sector and some key political figures, including Fairfax MP Clive Palmer, the concept would see Australia more intricately networked with data systems in Asia, the Pacific and the United States; and if successful the project will be backed by a consortium of private and public sectors. From an economic standpoint, global consultants AEC Group has independently forecast $700 million to be injected into the Sunshine Coast’s economy, and $1.1 billion to the Queensland economy, annually. Driving the bid are computer engineer Gavin Keeley, who is responsible for the initial idea to bring the cable to the Sunshine Coast; and Schoolzine chief digital officer Craig Josic. Craig (CJ) is part of the local ‘Silicon Valley’-esque movement of the Sunshine Coast. “The Coast is an innovative location and the undersea cable is a massive game changer for that,” CJ shares. “Connectivity is really important in every business and innovation, digital and creativity transcends across all industries, and we can recognise this opportunity is unique.” CJ imparted this message in September upon invitation from Mayor Mark Jamieson, at the Sunshine Coast and the New Economy Forum. “Our goal as a business community and at the forum was to highlight this opportunity to approve the cable submission so we can take it to the next level,” he says. profilemagazine

“The cable will lend itself to creating a NEW CULTURE in the business community and people will see the Coast as a place to do BUSINESS.” “We have great pillars of success; tourism, agriculture and building will always be here but we always need to look to the future and global opportunities. “Some people like to keep the status quo,” CJ admits, “but to maintain the lifestyle we have, we need to encourage different businesses and demographics. “The cable will lend itself to creating a new culture in the business community and people will see the Coast as a place to do business. “One of the most important things is to secure such a direct backbone, such as the cable and therefore attract a major global player to look at placing a head office here to create activity and employment, transcending the Coast to be a serious player.” Technologist and business leader with a career in international consultancy spanning 30 years, Gavin Keeley moved to the Sunshine Coast nine years ago, and after working on similar IT and communications projects internationally, incepted the idea four years ago and is welcoming the progression of the proposal. “What the council has done (with the forum) is take the lead in order to demonstrate political will and force the state and federal government and other political players to align,” he says. The cable would be Australia’s sixth undersea data communications cable; Sydney has four, Perth has one and the Coast’s will be one of the world’s most modern with the last cable of this nature being installed more than 10 years ago. With areas further north than Noosa classed as National Parks or lacking population density and shallow Moreton Bay and built up infrastructure of the Gold Coast to the south, a 1km wide and 40km long suitable corridor on the Sunshine Coast has been identified, although Fisheries and the ACMA are still assessing the intended protection zone. profilemag om a


“There is only one place suitable in Australia and it is the Sunshine Coast. You only have to go 40km offshore to get the Continental Shelf and it drops into 2000m of water, so there’s only a short run where the cable is exposed to shallow water,” says Gavin. “A lot of that area is equivalent to the Sahara Desert, which is good as we don’t have to destroy any marine habitats and sandy seabeds.” Gavin is still in the preliminary stages of liaison with cable manufacturers and a seabed surveyor, however, “we know what the cable run would look like and have prelim costing.” The five existing submarine cables are reported to carry around 98 per cent of Australia’s international internet traffic, with 80 per cent of the content we access mostly from the US, and the NBN increasing only domestic capacity; which Gavin compares to an analogy of a busy airport hub, and he pinpoints the four cables in New South Wales as vulnerable points of failure. “One of the reasons for wanting to put a cable into Queensland is geographical diversity so we aren’t beholden to those Sydney cables.” The Coast’s cable will link with one of the existing cables connecting Guam to Sydney, and meet land at the Sunshine Coast Airport, reported by Fairfax Media to have an estimated cost of $200 million to implement. As the proposal is still in the early stages, Gavin has to keep much of the technical information under wraps for legal reasons but says the cable’s build, lay and connect process is estimated to take 12 months, and will be installed by ships, of which there are only four in the world capable of such a task. But in the meantime, “We still need local and federal government permission and legal clearance. We’ve had different political parties in different levels deliberately disagreeing with each other ... what we are now trying to do is get all of them on either side totally supporting it, because then the investors will get on board,” says Gavin. CJ is optimistic. “I believe there is a good chance it will be successful, and especially after the forum, it will set a great foundation to show we are a growing economy, our region can be a significant global player and we can make a difference in Australia’s economy,” he says. “The next step for us is getting that message very clear through the approval process and then taking it to the next level and riding that wave.” Stay tuned to Profile Magazine and the Sunshine Coast Council website for further announcements on the undersea communications cable development, and follow the hashtag #speeditupsunshinecoast online. AVOIDING CONFLICT AT SCOTT LORBACK PIPPA COLMAN & ASSOCIATES SOLICITORS

hristmas is a time to come together, to enjoy the simple pleasures of familiar company among those we know best. For the millions of Australians living in separated families, however, Christmas can be a poignant reminder of the loss and division created by past relationship breakdowns. Children are often caught in the parental crossfire of December hostilities – an unfortunate trend we see repeated every year amongst clients old and new. Although every family is unique, and subject to its own particular personality dynamics, many of the problems we deal with every Christmas can be minimised by applying some simple principles to any family dispute involving children.

THINK LONG-TERM One of the most important things we tell clients to do is to focus on long-term outcomes. Like it or not, you and your former partner or spouse are going to have to communicate for years to come. As the kids grow up, the need for co-operation will inevitably arise. Decisions about things such as the child’s health, education or newfound love of death-metal require parental consultation. At the very least, there will be decades of joint attendance at family events. Doing what you can now to maintain workable communication will pay dividends for everyone involved in the future. If this means swallowing your pride and letting the kids go on that summer camping trip with the other parent – it is probably an investment worth making. profilemagazine

COMPROMISE WHEREVER POSSIBLE You should be trying to resolve difficulties, not win battles. If you see conflict looming and are preparing to dig in for holiday warfare, stop and ask yourself: what is the real motivation behind your resistance to the other parent’s wishes? Are you considering the children’s best interests, or are you resurrecting old grievances? Do the kids really need to listen to your Uncle Arthur’s annual Christmas speech, or are they better off spending quality time with their dad, even if he is someone you can’t stand the sight of?

KEEP YOUR COOL If your former partner is impossible to deal with, or deliberately frustrates your Christmas plan, try your best not to let it get to you. Yes, the other parent may be three hours late dropping the kids off, or has fed them entirely on sugar and lies for a week, but this is probably done only to get a reaction from you. Don’t give them the satisfaction and don’t let the children see you lose your cool. There is a lifetime of Christmases to enjoy. If you are part of a high conflict family, one of the best gifts you can give your kids is a Christmas without confrontation. This might mean changing, postponing or even cancelling your short-term plans but in the long run it will benefit the children.

It goes up on the first of December, and comes down on Boxing Day – because I crave five days of peace and reflection in anticipation of the New Year. A chance to reflect and learn from my journey of the past year, and the excitement of fresh challenges that lie ahead – a new story to be written. Ahead of writing this column, I started thinking about what I’ve learned this year and what I want to achieve moving forward, and the result is my top five tips for an awesome year ahead:

PRIORITISE YOURSELF. This is my big lesson for the year. I spent a lot of time in 2015 allowing my actions to be defined by obligation – real and imaginary. Being true to yourself is absolutely essential for your happiness, and the happiness of those around you. Being your best you (for me that means being healthy, happy and calm) means you inspire those around you to be their best selves also. It also has the side benefit you can nail any challenges easily as they arise. Trying to change the world is an admirable cause, but change yourself, and the world will reflect your change.

BE PRESENT. This is another ‘biggie’. It’s hard in this world to avoid distractions, but they can be minimised. Eat at the table with your family. Turn off the TV and put the phone away every now and then. Immerse yourself in the moment and enjoy it.

eing in business is tough. There will always be competition, periods of uncertainty when the economy is challenging and pressure to stay ahead of the pack to find that elusive niche in the marketplace. But for those who are passionate about being the best in their field, the rewards far outweigh the challenges as I discovered during a recent lunchtime chat with the Blokes About Town at Ricks Garage, Palmwoods. Despite being from vastly different industries, there was a common thread among these successful businessmen when it came to what they considered to be most important to their business – customer service. profile: Tell us a little about you and your business? neil: I have been in jewellery for 40 years. We started off in a shed behind my grandmother’s house in Parramatta in 1968. My eldest brother kicked it off, then my other brother joined him and then me. We started our apprenticeships at 14 years of age. My uncle and cousin are also jewellers. We later discovered that 100 years ago the family were silver smiths in England. I opened Underwoods Fine Jewellers in the Sunshine Plaza 20 years ago and we also have a store at North Lakes. craig: I work for Think Money. We provide investment advice for creating wealth through property. My background is in marketing and I am also a business coach. We test and measure everything so we know it works. Our lead generation and sales are up 30 per cent from last year. You have to spend money to make money. When business is tough you can’t pull back on marketing too much or you will have no business at all. profilemag om a


neil: It’s taken me 40 years to learn what you’re talking about. If someone had explained that to me 30 years ago, I would have been 30 years better off by learning from someone who has actually been trained in the skill. scott: SPC is a finance brokerage business operating for 21 years. We do finance for motor vehicles, plant equipment, earth moving, trucks ... mainly for small business but also for consumers and individuals. We also have a home loan section which does commercial property, which is run out of our Brisbane office. Our niche is knowing how to put an application together particularly for new business ventures which are traditionally hard to get. leunis: Jaguar motor vehicles deals in the upper end of motor vehicles. It’s extremely busy at the moment. The market on the Coast has grown quite significantly in the area of luxury SUVs and luxury sport cars. paul: Aspire Real Estate has just turned 12 months old. It has been a big journey. My partner started the business and his goal was 24 properties for the first year and we have sold nearly 60. The market has been fantastic. gerry: I run Think Speakers and Events, bringing high profile and entertaining speakers to the Sunshine Coast. We run business breakfasts, sports luncheons and inspirational dinner events. We have had the likes of Amanda Gore, Ray Martin, Lisa Wilkinson, Sarina Russo, John Anderson, who started Contiki tours and Glenn Cooper of Coopers Brewery. We finish the year with Allan Pease who is a world class guest speaker and very funny, so we are looking forward to finishing on a high with lots of laughs. profile: What makes your business stand out from the crowd? neil: Ninety five percent of jewellery in Australia comes from India, Thailand or China and the life expectancy is roughly 14 years. However, we believe jewellery should last forever so we took that approach from the start. We might be 10 per cent dearer but we sell only quality pieces and give a 10-year warranty. malcolm: I would say it’s the relationship we build with our customers, that is our biggest driving force. Ricks Garage has become almost an institution on the Sunshine Coast. Well known for its award-winning burgers and unique,1950s-themed diner filled with interesting memorabilia from yesteryear, the family-owned restaurant has done remarkably well since opening its doors in 2011, putting the hinterland town of Palmwoods firmly on the map. I’m not surprised either, as a resident of Palmwoods myself and regular visitor to Ricks Garage I have never been disappointed. On the day of our visit we were treated to a selection of delicious starters from the menu to begin with including spicy chicken wings, garlic bread, salt and pepper calamari (some of the best I have eaten) and delicious oysters. The extensive range of mouth-watering burgers makes it difficult to choose. The signature Ricks Burger was a firm favourite among the blokes, with the chicken burger following a close second. Vegetarians are also well catered for and I can highly recommend the vegetarian burger. Diners can chose from regular or mini-sized burgers depending on your appetite and the chips are an absolute must! The casual outdoor beer garden is ideal on a laidback Saturday or Sunday afternoon when you can enjoy some chilled live music and let the kids play on the grassy area. Mortgage brokering is no longer about men in suits speaking in tongues, just ask Donna Martin and Meagan Sing – two mums with banking backgrounds changing the way finance is done.

I

t’s an appointment mortgage broker Donna Martin has been in many times before, sitting opposite a bank manager to discuss the details of a home loan. But this time, Donna was there as a mum. “My 20-year-old has just bought his first home,” she says with a big smile, “it was great, I was so pleased I had the knowledge to share with him because I certainly didn’t have it when I bought my first home. “To be able to put everything in simple terms, the reward came when the solicitor and real estate agent each sat down with him to discuss their requirements, and spoken like a typical 20-year-old, his reply was, ‘Yep I understand all of that, Mum’s gone through that with me’. That, for me, was lovely and he truly did understand everything.” Donna and her business partner Meagan Sing, who collectively own and operate BeMyBroker, pride themselves on providing the personal and nurturing service often missing from financial transactions. At average interest rates that costs them nearly $3000 a month in repayments and more than $300,000 in total interest. With my fellow financial literacy campaigner, Paul Clitheroe, I recently assessed the nation’s household finances and graded them on ‘money smarts’: we failed the average household on the basis of too much debt attracting too much interest. MODERATION NOT DEPRIVATION – if you’re a bit of a health and fitness junkie, you have the right mentality to optimise your money – intake, output, focus, determination. But like good health, good wealth has to be sensible and sustainable for a lifetime. Don’t forget to reward yourself either – I love the 80:20 noble-to-naughty ratio. AMASS A CASH STASH – Albert Einstein took time out from physics for a little finance in his time, proclaiming compound interest as the eighth wonder of the world. His Theory of Relative Worth went that, “He [or she] who understands compound interest earns it; he [or she] who doesn’t, pays it”. If you can make an average 8% annual return, you can be a millionaire by 60 if you save $190 a month from age 15, $1052 a month from 35 or $5496 from 50. So get cracking!

W

omen often look at the photos of women adorning the walls of Paula Brennan’s boutique Mooloolaba studio and exclaim at their ‘unachievable beauty’. “Yet every single person in my photos is real, not a model,” smiles Paula. Before moving to the Coast in 2012, Paula ran a successful wedding and portrait studio in western Sydney for 10 years, photographing over 700 weddings and winning multiple awards during her 16 years in the industry; still in such demand she regularly travels back to Sydney to shoot weddings. Photographing women at their weddings has meant the transition to shooting women in portrait sessions has been a natural progression for Paula. “It’s been overwhelming but very rewarding,” says Paula. “The challenge is getting women to give themselves permission to do the photos, they put everything else on their priority list!” Part of Paula’s decision to move to the Coast was to be a “more present” mother for her eight-year-old daughter Aria, and having battled her own challenges, empathises with her subjects. “I know what it feels like to feel insecure, so I make women feel like they are enough.” Paula recently launched a video series of her clients’ transformations, and is now working on Christmas gift packages, and a project focusing on positive body image messages from mothers to young girls. “It’s so emotional that something as superficial as getting your hair and make-up done and photographed is so empowering. All I’m doing is showing them a different mirror.”

The way people consume media has changed so much with smart devices, consumers are more savvy, and the market is changing with technology.” As for the future, Nita says, “What the Fox will be where I want it to be when our clients are being recognised for amazing marketing strategy that turns heads, and keeps people interested and engaged”.

fter 10 years in the United States, Vicki Cooper and her husband Bryan returned to Australia in 2005. While he was looking forward to a quieter time after a long career as an international advertising executive, Vicki was keen to resume a life in real estate, which had been put on hold during their time in America. Regular holidays in the Noosa area had convinced the couple that the Sunshine Coast was where their future lay. But when they began to search for a house Vicki was dismayed to discover that perceptions of the real estate business seemed no better than when she had been working as a sales agent in Brisbane many years earlier. “Over the years I have met lots of honest, very hardworking agents who have their customer’s best interests at heart. But unfortunately it’s the ones who don’t do the right thing that still seem to attract all the attention and give our business a bad name,” says Vicki. “I suppose part of it is training, but the major issue is the focus on transactions rather than relationships, which is the opposite of the way a modern service business needs to be. “When we opened Star Noosa early in 2008 the property market was at its peak but the GFC was about to take prices over the edge of the cliff. “People were very stressed about losing money. Many agents were afraid that if they told sellers the truth they would lose the summer holiday issue

But right from the start I decided I would tell clients what they needed to know – and not just what they wanted to hear. “We quickly discovered many people were looking for a genuine alternative and we began to attract business through word of mouth recommendations and through our innovative approach to marketing.” Six years later Star is the number one agency in the area and in the last three years Vicki has personally averaged a sale every eight days. From a base in Peregian, the agency is now active along the Coast from Marcoola to Noosa but has no plans to grow at the expense of service.

Woombye is part of the Sunshine Coast, which we rate as one of the strongest up-and-coming markets in Australia. And, in numerous different ways, Woombye has better statistics than Sunshine Coast averages. It is more affordable, its houses sell faster, its discounting levels are (slightly) lower and its long-term growth rate is (slightly) better. Woombye is a hinterland town of about 3,000 west of the Bruce Highway, inland from the coastal strip. This means it’s about hills and acreage living rather than beaches and apartments. It also means it has an advantage the coastal suburbs lack – it has a train station with rail links to Brisbane. Woombye’s history is as a hub for pineapple and citrus farmers. It’s now making a gradual transition to urbanization in an area where the acreage lifestyle is popular. Gradually it is merging with neighbours Nambour to the north and Palmwoods to the south. Woombye is a comfortable drive to Sunshine Coast shops, beaches, restaurants and nightlife. Selangor Private Hospital is also at Nambour. The Sunshine Coast Regional Council has its HQ in Nambour. State Government agencies in Nambour include Primary Industries, Natural Resources and Transport. The Nambour Civic Centre offers a 900-seat concert hall and a 200-seat theatre. Parmalat, a subsidiary of dairy giant Pauls, has a milk processing plant in Nambour, while the Department of Primary Industries Maroochy Research Station at about 3km from Woombye. There are numerous schools and colleges within easy reach of Woombye residents. Woombye township has the Woombye Primary School and Suncoast Christian College, while Nambour Christian College and St Johns Catholic College are on the southern fringe of Nambour, within 2km of Woombye township. Nambour has numerous other primary and secondary schools, plus the Sunshine Coast TAFE Nambour Centre. Affordability, solid rental yields and low vacancies are key characteristics of the Woombye property market. The median house price is $435,000, compared with the Sunshine Coast average of $500,000. Its long-term capital growth average is 3% per year, compared to the Sunshine Coast average of 2.4%. Typical Woombye houses sell within about 90 days (Sunshine Coast average 125 days) and discounting is typically around 6%, slightly better than the area average. The median rental yield is a little over 5% and the vacancy rate is low around 1%. Woombye’s future appears to be as an acreage lifestyle suburb on the fringe of the Sunshine Coast, with good proximity to the Maroochydore CBD, the Sunshine Coast Airport and the services and amenities of Nambour. The airport, where a $450 million upgrade is planned, is a 20-minute drive from Woombye.

When assessing the appearance of your home before putting it on the market, do a check list and be brutal. Research either online or do drive bys. Look at properties in your location and of a similar price range. What separates them from each other? At first glance what grabbed your attention? What made you want to enter the house and look further?

ow try and apply this to your property. Remember first impressions are the most important. Buying property is emotional unless you are an investor. Start at the very front, look at the letterbox, is it in good repair or should you replace it – is it in keeping with the style of the property? In the front garden and pathway, does the vegetation need cutting back or possibly some more interesting plantings, is the pathway even and neat? Is there foliage surrounding the house and blocking light, if so remove or trim? And make sure there is no rusted guttering or peeling paint. Take a look at your front door – does the door need replacing or perhaps in need of paint, do you need to replace door handles with something more modern or in keeping with the house style? These actions are quite minor yet can make a huge difference to the street appeal. You want the potential buyer to want to enter this property and look further. Emotion is the biggest element in prospective buyers purchasing a property. The heart rules first, then the head. You need to harness the emotion by creating the property to connect with the buyers. The buyers have a lot of choices and you need to stand out from your competition. Generally a buyer will connect with a property in the first few minutes of viewing. Now look at your own property, what could you do to make some of these changes. We all have those ooh aah moments when we visit show homes – you should ask why? It is because it presents so beautifully that we can imagine living in this space. Make yours do the same! on the move

Throughout the early establishment of the Sunshine Coast, Nambour was the thriving epicentre of the region. But during the early 1960s, as the Coast grew and Maroochydore became the central location, Nambour experienced a downturn and was no longer the beating heart of the region – but all that is about to change.

T

he hinterland town of Nambour is now in the early stages of a long-awaited revival. In late 2013, major businesses began moving back into the area, and throughout 2015, savvy entrepreneurs saw the potential in Nambour and set up in town, and a host of existing shopfronts underwent extensive refurbishments. The biggest turning point was in October 2015, when Sunshine Coast Council endorsed the Nambour Activation Plan, giving the community the green light to reactivate the hinterland town. “Nambour has already embraced increased business investment and the final Nambour Activation Plan further empowers the business sector and community to use their innovative ideas to build on Nambour’s strengths,” Divisional Councillor Greg Rogerson says. “The plan has been developed as a collaborative project by the Nambour Project Working Group – consisting of local residents, members of the business and notfor-profit communities, education leaders, clergy and the Nambour Alliance – and is a culmination of previous planning and projects, community aspirations, and the outcomes of recent community consultation. “Based on the feedback received, the plan

places more significance on being family and pedestrian friendly, improving the ‘look, feel and lovability’ of Nambour, and the importance of building on existing cultural and heritage assets.”

The plan idenTifies four key sTraTegic projecTs:

· Creating Petrie Creek as a major pedestrian and green spine · The Nambour Heritage Tramway Project · Investigation of a Nambour water splash park and leisure corridor · Connecting the town centre to the event hub at Nambour Showgrounds.

Cr Rogerson says one of the key recommendations is a funding request to undertake a $60,000 feasibility study for a water splash park in association with the Nambour Aquatic Centre, as part of 2016/17 budget considerations. “The study will explore a range of splash park elements, consider the traffic

management and car parking of the site and determine what might be viable,” he says. Cr Rogerson says the plan is a contemporary and creative approach to urban renewal and sets a framework to guide activation of businesses, streets and public places in Nambour. “The plan’s success relies on an ongoing collaborative approach and council looks forward to working with the community and focussing on opportunities to make Nambour an extraordinary place to live, work and play,” he says.

T

he Sunshine Coast is one of the strongest up-and-coming regional markets in Australia - and the inland town of Nambour is one of the strongest parts of it. Median prices have risen 9% for units and 7% for houses in the past 12 months, but the market remains one of the most affordable in the Sunshine Coast region. Rental yields are also strong, with a 6.8% median yield for units. Nambour, with a population around 10,000, is a comfortable drive to coastal shops, restaurants and nightlife – but it doesn’t really need to be, because Nambour is a self-contained regional centre, with an array of shopping, business, government and other services.

It’s the administrative centre for the Sunshine Coast Region. The Sunshine Coast Regional Council has its HQ in Nambour. State Government agencies in Nambour include Primary Industries, Natural Resources and Transport. The Nambour Civic Centre offers a 900-seat concert hall and a 200-seat theatre. Nambour General Hospital, a major regional hospital, recently had a $24 million expansion and employs around 2,500 people. It is currently the major hospital for the Sunshine Coast region (until the $2 billion Sunshine Coast University Hospital at Kawana is completed). Selangor Private Hospital is also at Nambour. Parmalat, a subsidiary of dairy giant Pauls,

has a milk processing plant in Nambour, while the Department of Primary Industries Maroochy Research Station is nearby. Nambour has numerous primary and secondary schools - including Nambour Christian College, St Johns Catholic College, Nambour State High School and Burnside State School - plus the Sunshine Coast TAFE Nambour Centre. The key centres of Maroochydore and Mooloolaba, as well as the Sunshine Coast Airport where a $450 million upgrade is planned, are all within 20 minutes by road, while Noosa Heads is a 40-minute drive. Nambour has a busy property market, with over 200 houses sold in the past 12 months. Affordability is a key market driver. The median house price is $350,000, compared with the Sunshine Coast average around $500,000. The Nambour median has grown 7% in the past year. The median rental yield for houses is 5.6%. Rents are expected to remain strong, as the vacancy rate is below 1% (and has been consistently below 2% for the past three years). The unit market has recorded 60 sales in the past year at a median price of $245,000, up 9% in 12 months. This market has attractive rental returns, with a median yield of 6.8%. Nambour, overall, presents an attractive package to property investors: an affordable precinct backed by strong services and amenities, in a growth region, with low vacancies and strong rental returns.

ince Simone Butchard became a health coach in 2013, it has been her mission to spread the message of health and happiness to all. Simone was encouraged to create a positive ripple effect to enrich the lives of others, either through one-on-one coaching, workshops, blogs or health products. “For me being a health coach is purely leading by example. When you walk your talk and live an authentic life, you naturally inspire others to do their version of the same,” she says. profile: How important is it to nourish your body with healthy food and exercise? simone: One of my favorite sayings is, “Take care of your body. It is the only place you have to live in”. Our bodies are awesome machines that do so much for us on a day-to-day basis. We each only get one body in this lifetime so it makes sense to nourish and nurture it as much as possible. Eating clean, healthy food and moving your body daily, will give you the best fighting chance to thrive and ward off sickness or illness in their tracks. Just like you would fuel and service your car, it’s important to look after your body too.

profile: What is your approach to health and wellbeing? simone: My approach is through kindness and awareness. Being kind to your body by nourishing it with nutrient-dense wholefoods, enjoyable exercise and just the right amount of shut eye; being kind to your mind by feeding it with positive, uplifting thoughts; and being kind to your spirit/soul by living with passion and purpose. And on those days when all this fails, it is about being kind to yourself and remembering no one is perfect.

profile: What advice do you have for people who need a kick start in the right direction? simone: My best piece of advice is to begin with small baby steps. Often people try to change everything at once, which can leave them feeling overwhelmed and more likely to quit. You are better off starting out with small, achievable goals like ditching the soft drink for a month, or increasing your water intake, and then documenting how you feel after each one.

profile: What are some of the quickest and easiest ways to incorporate healthy food into your diet? simone: Healthy food doesn’t need to be complicated, gourmet or time consuming, it just needs to be as close to its natural state as possible. For your main meals, keeping it simple is key. Granny was right with the meat and three veg, however some extra leafy greens wouldn’t go astray. A great way to super-charge your food from here is by adding some living sprouts (full of enzymes and phytonutrients), toss through some mineral-rich seaweed flakes (choose from kelp, dulse or wakame) or include a generous serving of sauerkraut (a natural probiotic for a happy, healthy tummy.) If you are stuck for a healthy snack idea, try grabbing a piece of fruit, a celery stick filled with nut butter or an avocado topped with activated pumpkin and sunflower seeds. A homemade smoothie can be whipped up in next-to-no-time too.

Things like fortified breakfast cereals, low fat stir-fry sauces, instant soup packets, margarine and microwave meals may look appealing to the eye, however they often come loaded with chemicals, preservatives, fillers, hidden sugars and a whole lot of artificial junk; that really have no purpose in the body. We were never designed to eat this fake stuff made in science labs, so over time it is proving to cause a huge detriment to our health and vitality. Sticking to the motto “nature knows best’ and hitting up your local farmer’s market is where it’s at I say.

profile: Who was your earliest influence when it comes to fashion? kayla: Our earliest influence would be our Nanna, as she handmade our clothes for us when we were children and she also taught us how to sew. meaghan: We were also influenced by many Australian designers such as Alex Perry, Collette Dinnigan and Sass & Bide, as it encouraged us to stay true to Australian made. profile: How would you describe your own fashion style? kayla: I feel my own style is casual chic. I like to wear things that are comfortable, but nice at the same time. meaghan: I don’t believe I have a certain style, I like to mix styles together depending on how I feel, what the occasion and season is. profile: What is your favourite season to design for and why? kayla: Summer is our favourite season to design for as we enjoy designing for our climate and using bright colours. meaghan: Summer for us is the highlight of the year, it really shows our creative side and it is something we always look forward to showcasing.

He’s represented the nation as a soldier, entertained the nation as a reality television contestant, and now Matt Filippi is resolute about doing his bit for a healthier nation, too. The boot camp trainer opens up about life in the military, fame, fitness, and his exciting future.

t could easily be a scene from an army barracks, as a fit, tanned silhouette loads heavy sandbags, tyres and ropes from a shed into the back of a ute. It’s not however; it’s a shed in industrial Kawana, but for personal trainer Matt Filippi, 30, his preparation to train his group fitness troops is inspired by the military regimes of his past. Originally from Victoria, Matt, his twin brother and parents moved to the Sunshine Coast when he was 14 years old. “Going through school I didn’t want to be a typical tradie on the Coast. I decided to join the Australian Army and it’s the best thing I ever did,” says Matt. After finishing high school, Matt joined the Australian Defence Force and was posted to Townsville and Darwin with the rank of a private, or soldier. “The job was infantry, in the army we are known for doing the job on the ground, the gritty stuff,” Matt says. In 2006, as part of Australia’s military involvement in the Middle East, Matt was deployed to Iraq for three months, his first ‘boots on the ground’ mission, and undertook border security. Then in 2007, Matt spent seven months in Afghanistan, tasked with protecting the engineers rebuilding schools, hospitals, and army and police checkpoints. “Our job was to keep the Taliban away because they would try to fire rockets and set off bombs to stop the engineers from building,” says Matt. “There were some heated moments where we were under fire, definitely.” Tragically, among the mateship and bravery, there was loss. “In the first two weeks I was over there one of my mates got killed when he was driving one of the tanks,” says Matt. “We were kind of pumped to do our job and then that happening blew us back a bit, we realised – we’re actually in a warzone now,” Matt remembers soberly. “It’s devastating. When you’re over there you can’t let it get to you, the next day we’re out on patrol again. profilemag om a

And I believe you’re not really wealthy until you experience wealth in all five areas – a fulfill-ionaire,” beams Andrew Roberts. The exuberant author of What The Hell Are You Chasing?! has more than one reason to smile, achieving happiness and fulfillment as a motivational business coach, working with companies in the coveted BRW rich list while running his most fulfilling venture yet – a happy life. After buying into a business coaching franchise at 24 years old, Andrew struggled for two years, ending up $180,000 in debt and at “breaking point” with depression, a relationship breakdown and turning to alcohol. “I had a business mentor, and I kept convincing him everything was okay. It all came out when I told him I was bankrupt,” Andrew explains.

“I was sitting there crying and he said to me, would you give me your arms for a million dollars? How about your legs – would you cut your legs off and give them to me for a million dollars? “He said, ‘I can see you’re stressing about not having money but you won’t give me your arms or legs, you’re worth $2 million. You’re focusing on what you haven’t got, not focusing on what you have’. Two years after this “lightbulb moment”, and Andrew was CEO of a $3 million business, but ultimately became consumed by the running of his lucrative company. And then the question, what the hell was Andrew chasing?, was answered in 1995 while he was trekking the Kokoda Trail. “I’m there sitting up in the communities in the mountains, and they are laughing and relaxing. I had forgotten in the pursuit of success the real purpose of life, which I saw in those mountains was community, connection, enjoyment. “I made the decision; I’m going to go back, sell my company and downsize my life, and write a book.” Andrew did just that, penning the self-published What The Hell Are You Chasing?!, which has sold 20,000 copies worldwide since launching in 2011, followed by his ‘Flip Your Life’ course. He has contributed a chapter to a Business Millionaire book, and is working on his second title, as well as online mentoring, podcasting and webinars. And, as part of his sea change from Sydney to the Sunshine Coast, Andrew has implemented a disciplined health, meditation, reflection and fitness routine, and recently married in Germany. “I’m very lucky, I’ve found my calling with this. The more people you help, the more fulfilled you feel,” he smiles. “When I saw those kids in the Papua New Guinea mountains laughing; that’s why I wrote the book. Poppy Inkwell is one of those people who seems to have lived 1000 lives in one. Having immigrated to Australia from the Philippines as a toddler, it is Poppy’s appreciation for multiculturalism and love of literature that has seen her latest progression as a children’s author. Now living in Noosa, Poppy shares what lead her to Alana Oakley.

A

lthough she admits that she has only skydived once, there is not a lot that Poppy Inkwell hasn’t embraced with vigour and passion. Whether it is spending a year in Japan as an exchange student, an interpreter for a Japanese ultra-marathon runner or sharing her excitement for literacy through her Ready2Read program, Poppy is a woman who appreciates that she is the sum total of her experiences. It is this passion for literacy and children as a mother of five that led her to writing the Alana Oakley series where she is able to open young people’s minds to the multiculturalism of the world around them. Given the wealth of difference experiences she has had throughout the world, Poppy says it is only natural she has taken some of that to develop the characters in Alana Oakley. “I am the person I am today because I was born in the Philippines, grew up in Campbelltown, went to a Catholic co-education school, was friends with the ‘nerds’, ‘jocks’, the ‘arty kids’ and all the kids in between at high school; did crazy, stupid things at university and lived and worked abroad for 15 years,” she says. “It’s these experiences that inform the content of the series, like the issues I write about and my writing style which is absurd. “From my books I hope readers are in stitches from laughing but also experience a sense of empowerment, particularly girls who have a multicultural background or belong to a minority ethnic group. “I want them to feel good about themselves and proud of their unique heritage.” With three books so far in the series – Mystery and Mayhem, Torment and Trickery and the third Bloodlust and Blunders, to be released in early 2016, Alana is the story of a 12-year-old who, thanks to a slightly erratic mother, feels like she is going on 24. Given the wealth of interesting characters in her books, Poppy says people have been particularly intrigued by their ethnic makeup, because diversity is a hot topic in kid’s literature these days. “People have started to question if there’s enough diversity in the books we offer children,” she says. “All children deserve to be visible in stories, but they also need to see themselves represented equally, not just as the means to communicate serious cultural, religious or political issues. “We need books about diversity, as well as books that represent diversity, which makes me think that on both counts, we have some way to go. “Children are much more accepting of a multicultural society now and I believe by focusing on what we have in common, and respecting our differences, we can continue to foster greater tolerance and understanding.” profilemagazine

Food flavours and combinations are constantly evolving and changing - or are they? Is there really anything new to be discovered, or are they simply different ways of making dishes that have been around for years?

Y

ou’ve probably made a ‘bone broth’ by now, or at least eaten one. And I think for most people, bone broth popped up out of nowhere and appeared to be a brand new ‘thing’ – a little bit cutting edge, something your mum’s never made. But it’s not new at all or even fancy. It’s the staple in kitchens that you’re taught before anything else. It’s the horror story every chef will have, “I made this stock, it took hours, it contained my blood, sweat and tears (not literally), then just before knocking off after a 16-hour shift, I asked the dishy to strain it. I came back in the morning to a pot full of old bones and disintegrated vegetables, and my precious, golden liquid had been poured down the sink.” Yep, we’ve all got a version of that to tell. Same deal with fermented foods. They were invented because fridges didn’t exist, they’ve been around a long time. You’ll probably agree that 2015 has been not so much about individual ingredients or food items (if we ignore the explosion of tacos) but all about diet trends – paleo, vegan, raw food, and fasting to name a few. My money’s on things changing in 2016. For sure, there’ll be at least one in every group who can’t or won’t eat something (or most things) on the menu. But I hope there’ll be fewer rules, less of ‘this is the only way to eat’ and more of grabbing the best from every culture, and every diet. I hope we’ll keep using our hands to eat our food so we feel more connected with it. I hope home kitchens all across the Sunshine Coast will keep trying new recipes for kombucha and kefir and kimchi. Every year our world becomes smaller, a little more accessible and open minded. Martyna Angell was 12 when she discovered her passion for cooking – rummaging through the kitchen and preparing a dinner menu for her parents to order from. That passion has since evolved into a love of blogging, styling and photography, culminating in her cookbook The Wholesome Cook. profile: How do you achieve a healthy and balanced diet? martyna: I follow the 90/10 rule – eating well 90 per cent of the time, eating the best food for my body, avoiding additives, preservatives and excess sugar, and indulging a little. If you are starting to make the change to wholefood, go 80/20 or even 70/30. The other tip is not stocking ‘offenders’. It is easier to reach for junk food and overeat when it's there in your pantry. If you do buy them, opt for the smallest packet and treat it as your indulgence. profile: How do we navigate the landscape of over-processed foods? martyna: The first is sticking to eating real foods like vegetables, fruit, pasture-raised meat and wild seafood. The second is getting to know the processed foods you buy. Read the ingredients on the back, not just the marketing spiel on the front. Quite often "light" or "no added sugar" products contain artificial sweeteners or fruit juice concentrates that are far worse than a little unrefined sugar. You will also avoid ingesting a whole range of additives and preservatives. profile: How can we avoid temptation during the festive season? martyna: The festive season is, in a big way, about getting together with your loved ones and sharing a meal together, indulging in the season's bounty and treats. There's nothing wrong with that. If you follow the 90/10 rule you can relax it a little and go 70/30, and if you're cooking from scratch it will be easier to know what's in the food you're sharing. To balance things out, include more salads and vegetables in your menu and try to have a serving of vegetables with your breakfast or enjoy a wholefood smoothie instead. This way you'll be able to indulge a little later.

Coconut poached chicken and crab salad Coconut Poached Chicken • 1 cup filtered water • 400ml can coconut milk • 2 chicken breast fillets Salad • 1 ½ tablespoons raw cashews • 2 tablespoons shredded coconut • 1 cup cooked crabmeat • 2 cups mixed salad greens • 1 small Lebanese cucumber, seeds removed, chopped roughly • ½ long red chilli, deseeded and sliced finely • ¼ small red onion, sliced finely • 1 small handful Thai basil leaves • a few Vietnamese mint leaves Method To poach the chicken, place water and coconut milk in a small saucepan and bring to the boil. Add the chicken breasts and bring back to a boil, reduce heat to a low simmer and cook for two minutes. Turn off heat, cover with a lid and allow to stand for 25 minutes for the chicken to cook through. Once ready, remove chicken from poaching liquid and slice thinly, or shred with your fingers. Meanwhile to make the salad, toast cashews and coconut in a small frying pan set over medium heat, stirring until golden. Combine all remaining salad ingredients, including chicken, in a large bowl and toss to mix well. profilemagazine

They are the foodie influencers, the gastronomic game-changers who have the key ingredients; ownership of a restaurant, the qualifications of a chef and the marketable persona that’s the recipe to success. And the Sunshine Coast’s latest chef to emerge as a serious restaurateur frontrunner is Angelo Puelma, owner and head chef of See Restaurant in Mooloolaba.

“I

’m aiming to be one of the 50 best restaurants in Australia,” Angelo affirms, words accentuated by a subtle Chilean lilt. At just 29, Angelo’s impressive career spans a decade, with his younger years spent in the cultural mecca of central and southern Chile, before becoming a chef at 19-yearsold in America; working for Disney World, then a cruise ship around the Bahamas and the Caribbean before coming to Australia, landing See Restaurant three years ago and completely overhauling its concept. “It’s different to be the chef of the restaurant and concentrate on doing your own food, it’s your name and face out there,

so it’s more of a challenge to please everyone in a way, like your pride is always on there,” Angelo says. Angelo made the unique decision to trade the usual kitchen complement of head chef, sous chef, chef de partie and apprentices, for a team of apprentices to give the young head chef the opportunity to train their raw talent in the style Angelo desires. Inking the deal to be part of the family ownership arrangement of the waterfront restaurant in the heart of Mooloolaba was a substantial decision, but it’s given Angelo freedom to flourish in the kitchen, as opposed to working primarily as a chef. And, when it comes to the business side of running a busy restaurant, Angelo’s father,

the charismatic and familiar face to regular diners, Antonio shares his son’s vision. “Dad is one of the big pillars to take advice and guide me better to not make that many mistakes, but mistakes are good at the end because you can come out even better and stronger,” says Angelo. The success is measured by the figures, as Angelo shares that since the takeover, reservations are increasing almost daily, and many functions over the holiday period are already booked. The family-owned restaurant has also scooped recent coveted awards; with a finalist accolade for the Sunshine Coast Gourmet Club Dinner of the Year 2015, a Savour Australia Restaurant & Catering profilemag om a


PROFILE Award for Excellence finalist ranking and a first place Chicken & Chablis Food Club award. “I’ve been learning, it’s been a big jump, I have to learn day by day. I finish working all day here then I go home and try to make a new plan for the next day because maybe the day before the plan didn’t work so I try to make it flow a bit better,” Angelo shares. “I don’t mind working for another person and getting the chance to improve their business. But it’s the freedom of doing what you love to do without limitations because sometimes people are afraid to change, many times I tried to change the menu and change this and that and they would be afraid because they didn’t know if it would work or not.” Naturally upon taking over, one of the first decisions Angelo and his family made was to introduce the seasonal menu at See Restaurant, which currently features a mouthwatering selection of food. Kicking off with appetizers, perhaps fresh oysters plated up with beetroot tempura and kiwi aioli may tempt you, or traditional

It takes the challenge and pride of a chef to keep achieving more and more.” Case in point, Angelo shares his plans for future endeavours such as introducing cooking classes and starting a Youtube channel.

“It’s DIFFERENT to be the chef of the restaurant and concentrate on doing your own food, it’s your name and face out there, so it’s more of a CHALLENGE to please everyone in a way, like your PRIDE is always on there.” Chilean-style empanada pastries oozing with corn and prawn. There’s a buzz in the kitchen as the young apprentices plate up; a divine entree of lemon sole fillets rolled with blue swimmer crab and baby spinach topped with dill appears next to a dish of grilled Mooloolaba king prawns; a waiter weaves through the room with a herb crusted spring lamb rack with a Chilean vegetable medley, baked polenta cake and rosemary jus, while the dessert menu ranges from creme brulee to a Belgian chocolate and banana mousse, accompanied by dessert wines, cognac or tea. “The food culture here (on the Coast) is still developing. I can’t have one item through the whole year, I have to play with my food. So the menu changes, it’s always evolving to reach perfection,” Angelo says. summer holiday issue

“I want to take it to the next level, because now it should not just be the chef just cooking but it should be flexible in what you can do, you can never stop learning, better quality food and presentation, more this, more that,” he says passionately. “And with TV and people getting more into food these days, every day is demanding, people compete more and it makes it more exciting too.” So, is Angelo the local answer to the next celebrity chef? A New Year heralds new beginnings, a change, a fresh start. But while the intentions are evident, do we really bother with the formality of making New Year’s resolutions anymore? I caught up with a group of savvy local businesswomen to get their take on resolutions.

A

t the end of the year, as January 1 looms, I find myself devouring naughty food and snubbing the gym – I’ll be really good next year, I promise myself. It’s a ‘resolution’ I make every year, to lead a healthier lifestyle, and it’s one a lot of others make too, judging by the influx of people pounding the pavement, hitting the gym, or opting for an acai bowl and green smoothie in lieu of a decadent eggs benedict with extra bacon. Research shows of the resolutions made at the beginning of 2015, 75 per cent were kept within the first week, 71 per cent made it past two weeks, 64 per cent extended one month and 46 per cent made it past the six-month mark. But what I wanted to know was, do many people really set resolutions anymore? Joining me for lunch was Jessica Wicks, owner of Indrah Swimwear; Vivienne Gorman, Director and Property Manager at Gorman and Gray; Kelly Powell, owner of Kapow’s Commercial Cleaning; Bridget Dyer, owner of Diamond Partners Wealth Management; Anne Luxford, Account Manager at Profile Magazine and Tanya Chesterton Smith from Chesterton Smith Photography. profile: Do you make New Year’s resolutions? anne: I do end of year planning every year, but I don’t know whether that’s a resolution. I do financial planning and holiday planning so I know going into the next year what my goals are. That’s as close as it comes to having a New Year’s resolution. jessica: No I don’t, I don’t believe in New Year’s resolutions, I think you can make them at any time of year, it doesn’t necessarily have to be a New Year’s one. I’ve never done them. kelly: I don’t do them either, I never have. bridget: I kind of did last year, it wasn’t even the new year, it was around October and I thought my life cannot be the same this time next year, something has to change and unless you change it yourself it doesn’t happen, you just plod along. jessica: I think that’s what I find, I’m doing it constantly, it’s something I’m always thinking of. vivienne: I used to … but now if I feel like one part of my life is falling I know I have to work on that area. kelly: I tend to make decisions based on what opportunities pop up. It may have some planning around it as it happens, but it’s around opportunities, not a day or a year.

profile: Does that also translate into your business? bridget: I think business-wise you have to, when you’re on your own you’ve got to set weekly or monthly goals because it’s very easy to fill your week with stuff. You know where you want to be in five years, but you’ve got to have the small steps to get there. Personally as well, I try and practice what I preach, so budgeting and that sort of thing, but I don’t live by it, I don’t get up and think, ‘what am I going to do today?’ profile: Why do you think people set New Year’s resolutions? kelly: It’s starting fresh for some people. jessica: I think it’s so they can get some momentum. anne: It’s good to look back at what you’ve done and how you can do it better and the beginning of the new year is a great time to do that. kelly: I’ve never stuck to anything that I started at the beginning of the week or at the end of the year. I think it’s because if you really want to do it, you’ll just do it, it doesn’t matter what day of the week it is and if you don’t want to do it, it’s not going to happen. That’s why I don’t do the New Year’s thing, I think it’s nice to see an old year out and a new year in and you hope for new opportunity. profile: Does setting resolutions put too much pressure on achieving goals? kelly: Some people really like saying, ‘On the first I’m going to do this…’, I’ve got friends who have 12-month, 18-month, two-year, five-year, 10-year goals – I couldn’t even tell you what I’m going to do tomorrow; I know what I’m doing, but they’re not goals, they’re not set in stone. We’ve had so many things pop up, if everything was locked in we wouldn’t have been able to go ahead and do them because we weren’t flexible. jessica: That’s so true. That’s something I found in my life when I was younger, my teachers would get me to put down a five-year plan and I struggled with that, ‘I’m going to earn this much money, I’m going to do this and that,’ for me that doesn’t work. I don’t believe in that concept for myself. profile: In setting goals, does it help to have them written down or portrayed on a vision board? jessica: A vision board would be my idea, I scrapbook notes and things but I’m not definitive, ‘this is what’s going to happen on the fifth year’. profilemagazine

bridget: If you’re too structured with it and don’t integrate it into the flow of your day or your life, when you don’t hit it at that time it can be quite disappointing, rather than doing really well with something. anne: I’m somewhere in the middle, I’m not unbelievably structured, but I’m not unstructured. If I didn’t have some sort of organisation or milestones I don’t know how I’d go with it. jessica: I find I go with the flow, but with an intention. bridget: You don’t want it to become a job, you don’t want it to be tedious and another thing to do, you just want to know what you want and figure out how to get there, but not be too hard on yourself. profile: What are your goals for 2016? bridget: To survive my first year of business, I’m well and truly surviving, but I have goals in that regard. vivienne: Every three months have a weekend away and go somewhere we haven’t been before. bridget: I’d like to go away more on weekends too, sometimes you feel life happens when you’re planning it, you need to unwind and recharge, so that would be nice. anne: To have more weekends away. I love to try and go to different places, so we try and go somewhere new and exciting and have a new adventure, even if it’s up to Montville for a weekend. jessica: I’ve got a few friends who are leaving the Coast, so I’d like to make some new friendships. kelly: Our daughter is moving back to the Coast and our son starts Grade 11, so making sure we continue to spend the time with them. And from a business perspective, I’d like to keep the momentum going. With a clear vision of prospering businesses and vows to take more breaks throughout the year, the lunching ladies and I left feeling refreshed, and energised and ready to take on the new year. Bring on 2016!

ith regular media appearances and health and fitness consultant roles under his belt, Luke appeared with friend Scott as ‘the boys from Bondi’ on My Kitchen Rules 2013, becoming popular contestants for their healthy dishes. Post-MKR, Luke has integrated ‘paleo’ into his diet and gone on to become a brand ambassador, published writer, released recipe books, and toured with MKR judge and paleo advocate Pete Evans on his national ‘The Paleo Way’ tour. Profile chatted with Luke during his raw food workshop at the Sunshine Plaza as part of The Summer Sessions. profile: What’s your go-to super food ingredient? luke: Cacao – I’m a massive chocolate lover! It’s versatile, you can use it in anything from a smoothie to a raw mousse, and you can bake a beautiful chocolate cake with it too. profile: If you were trying to convert someone to a paleo diet, what dish would you make? luke: I’d probably do spaghetti bolognese on zucchini noodles. I think the freshness of the zucchini noodles with a beautiful rich sauce like that, you can’t go wrong. profile: Why does paleo seem to be the ‘lifestyle choice/diet’ that receives so much criticism? luke: I think for one, Pete Evans is an easy target. The media likes to have a go at him. But paleo also puts pressure on the pharmaceutical industry, and two of our biggest industries in agriculture, grain and dairy, and concern also comes from a sustainability perspective. But they could put in place 100 per cent grass fed farming now, set up natural agricultures, etc. profile: What was the highlight of touring with Pete on ‘The Paleo Way’? luke: When you’re travelling with Pete Evans there’s never a dull dinner because he knows where to eat, or he cooks what you want to eat! The biggest highlight on the tour was meeting and connecting with so many everyday Aussies. profilemagazine

SALTED CARAMEL THICKSHAKES Ingredients • ½ cup of unsweetened coconut or almond milk • 1 tablespoon of hazelnuts • 2 pitted medjool dates • 1 banana • Pinch of sea salt • 1 teaspoon of maple syrup • 3-4 ice cubes • 1 teaspoon of chia seeds

Method

Combine all the ingredients, except the chia seeds, in the blender and blend until smooth and creamy. Serve sprinkled with the chia seeds.

profile: What’s your opinion on the power of social media? luke: We’ve seen a massive switch, especially in food culture, to ‘food tribes’. Everyone wants to wear the badge of their food tribe, paleo, vegan, vegetarian, and social media means people have a voice. Now, that voice has to be used very mindfully. I write what I’m passionate about and what I believe is good for me but I’m also aware that it might not be good for everybody. I try to make sure I give people thoughtprovoking ideas but it’s ultimately them that make up their minds. profile: What’s next for you in 2016? luke: It’s going to be a good year, I’ve got a lot of projects happening. Creating new superfood recipes, touring, more books being written as a solo experience (after having partnered with MKR teammate Scott on previous recipe books). For me, it’s about reaching more of Australia with my message. profile: What advice do you have for our readers to stay healthy over the summer season? luke: Keep your goals quite simple, because they are more manageable that way. Make sure you track it and reward yourself – with a new outfit, new swimwear, a holiday or some healthy treats! profilemag om a

ince Guy Sebastian’s career launched into the international stratosphere off the back of songs such as first solo single Angels Brought Me Here, the Malaysianborn singer has gone on to become the only Australian male artist to have achieved six number one singles and two number one albums; received 22 ARIA nominations, released 11 top 10 singles and three other top 15 singles; achieved multi-platinum and gold certifications; and collaborated with international superstars. With his own industry launchpad being reality television, Guy has been a judge on X Factor in 2011, 2012 and 2015, sharing his experience and talent as a mentor. “My manager and I were talking about this the other day – I always laugh and say, if I get a gig come through, I still feel like I can’t believe I’m getting paid to do this,” he smiles. At home, Guy and his wife, Sydney-based television presenter and stylist Jules Sebastian, are parents to their gorgeous young sons Hudson and Archer. In 2016, Guy will head out on his first regional tour in more than two years, and took time out from his hectic schedule as an artist, songwriter and producer to chat with Profile ahead of his performance at The Events Centre in January. profile: What can Sunshine Coast audiences expect when you perform at The Events Centre? guy: I’ve been working on some new music, a new direction for me electronically and there will be a bunch of some of my older stuff. It’s been a little while since I’ve toured regionally, I miss being in a more stripped back setting, where I can really feel my audience up close and see expressions, but also stripped back in a musical nature where I can be a bit more free and jam. It’s going to be a different tour for me, I’ve got a pretty incredible vocal section and really cool sounding band.

profile: From opening for the likes of Taylor Swift and working with prolific songwriters, who’s been your favourite collaboration? guy: Lupe Fiasco (who Guy collaborated with on Battle Scars, which went Platinum in the US in 2013). He’s such an amazing creator and innovative rapper, his content has depth it’s not just about shaking your booty in a club, it’s got meaning! He absorbs the world around him and then has the ability to put that world in text. profile: What changes have you seen during your career in the Australian music industry? guy: The industry’s definitely changed a lot. There used to be a lot of surplus cash to treat everyone and now it’s a pretty tight game, all the revenue is taken up in other places. Even though I’m a huge advocate for streaming as a music lover, as a producer and a writer it’s tough, I’ve seen it evolve and multiply by an exponential level. I remember when I was young, there were maybe four massive artists at one time, it might have

been Farnham and maybe on a rock level Seven Suns, and now everyone and their dog is an artist – but it’s a great thing, there’s a huge amount of resources out there for people. I think that’s why we’re seeing such a huge amount, like on X Factor, of young, completely unafraid talent. profile: What advice do you have for such up-and-coming talent? guy: Going on a show is no different to doing a radio contest or winning Battle of the Bands, it’s a good platform if you’re a musician. But unfortunately some people do get caught up in the fame side of things as opposed to creating art. Once you win it’s the start, now people know your name but that’s not enough, you’ve got to make a name mean something. If you want to be an artist it has to be songdriven and you have to work your ass off because you’re up against international artists and they have lots of resources.

profile: What’s the inspiration behind your new direction? guy: I would say in general the biggest inspiration is streaming. I’ve discovered so many great artists and so much great music and especially independent music. Through streaming I’ve just really fallen in love with music more now than ever and as a producer I’ve been really challenged by sound and designing and getting more of a soulful electronic feel. I’m really enjoying mixing the elements, some organic elements and electronic ambient sounds, it’s a really fun time for musicians to explore new sounds, sample banks, synths and just write and not be bound to anything.

profile: How do you juggle your family with work demands? guy: My kids don’t know anything else, it’s just a matter of bringing them along for the ride. If I’m on tour we work out dates they can come to. Doing X Factor this year was also part of me just wanting to be at home, every time I did X Factor in the past we set up a creche in my dressing room and it was hang time with my kids. I think I’m really lucky, a lot of my friends in Sydney or Melbourne leave the house at 7am and don’t get home until 7pm and maybe get to give the kids a kiss goodnight, whereas I have the liberty of making music late at night when family time is done. When I’m home I’ll wake up with my kids and spend time with them and drop Hudson at school and then I’ll pop back from the studios to come and do bathtime.

This hidden freshwater fall in the Sunshine Coast Hinterland is the spot for you and your family to visit. CHOOSE A DESTINATION Don’t just aim to ‘travel more’. Be very specific. Find the city you have always wanted to visit, or landmark you have always wanted to see. Walk the cliffs of the Amalfi Coast in Italy, witness the spectacular Northern Lights in Norway or bike ride through vineyards in France. Once you have decided what you would like to ‘tick off’ you can start planning. PICK A DATE Okay, so it is time to pick a date. Take into consideration when you can take time off from work as well as the seasons and weather for your chosen travel destination. Does escaping winter to experience a European summer sound like your kind of holiday? Or would you prefer to spend your next trip skiing Queenstown or the Swiss Alps? Whatever season you are chasing, choose a date which suits you and lock it in. PLAN YOUR AGENDA Once you have your destinations in mind, plan some experiences to look forward to. Check out the original Mona Lisa at the Louvre Museum in Paris, visit the smallest country in the world, The Vatican City, or simply plan to stroll through Hyde Park then pop into Harrods in London. Learn a few local phrases – order a stein in German, or thank the taxi driver in Spanish. It is all part of the experience. Lisa Curry is best known for her long and successful swimming career, having competed in three Olympic Games, two World Championships and three Commonwealth Games. Lisa’s competitive swimming career spans 23 years, during which she collected 24 gold medals, 21 silver medals and eight bronze medals at international competitions – and she was ranked in the top 25 swimmers in the world during her career. After battling with her own weight issues and overcoming a heart problem, Lisa, a mother of three, embarked on a journey to shed the weight and regain her former healthy self. Lisa now passes on her knowledge and inspiration to others through her 10-week Kiss Club and is a well known health and fitness advocate throughout Australia. I grew up in … Brisbane. Weekends at the Gold Coast. Weekdays at the pool! If I could be better at anything … I’d love to sing and dance, it’s something you can do forever, unlike elite level sport. But as I can’t do that, I’ll crochet cool things for people I love and drink good wine. I am at my happiest when … I see my kids happy and content and when I’m with my grandpuppy Cleo. I wish I could … see my coach Mr King one more time to tell him how I’m going and how everything he taught me helped me to help so many people. My biggest fashion blunder was … wearing knee high socks over my jeans – oh my, what was I thinking? Most people don’t know that I … would rather camp under the stars than in a five-star hotel. When I was growing up I wanted to be ... a Phys Ed teacher. I guess in a slightly different way, I am. I couldn’t live without … my mum, my kids and my friends. My friends are the cheapest counselling I ever need! Oh and good coffee, a good wine and my Kombi. My greatest achievement is … helping people realise their dreams and changing their lives through my online weight loss programs and road trip visits around Australia.
