I
t’s December! The sun is setting on 2016 and fresh promises of 2017 are in the air. I am a twice yearly goal setter, vision-boarder and general has-life-planned-out type personality, (aka nerd) setting and achieving goals puts a spring in my step and gives my journey a purpose and direction. But, when our editor Ingrid asked what was on my bucket list I had to really think … because a bucket list is the ultimate list. These aren’t just your run-of-the-mill monthly or yearly goals. Your bucket list is a compilation of the ultimate experiences you want to have achieved before you ‘kick it’ out of this world for good. I am happy to have ticked one thing off my list this year – completing the 20km Tough Mudder obstacle course. Funnily enough at the time I was five weeks pregnant, I just managed to complete it before the morning sickness and fatigue set up camp for the next four months and made walking to the letterbox an ordeal. (Side note: I abstained from doing the ‘Arctic Enema’ and ‘Electroshock Therapy’ obstacles, they didn’t sound too pregnancy friendly). Approaching the end of the year, I am very close to ticking off another bucket list item, giving birth to my second child early January and completing my family. Needless to say my summer holidays are going to be spent in air conditioning or floating about in the pool to keep cool. Another item that is high on my bucket list is to see the Northern Lights, this has been on my list for a few years now and is something I hope to see in my lifetime, although with a four-year-old and a newborn, this one might just be staying on my list for a few years yet!

What fills your
bucket? WORDS NICOLE FUGE
Visit the Egyptian pyramids. Run a half marathon. Start your own business. Build your dream home. Have a family. At this time of year, it’s almost an automatic response to reassess your life and look at all of the outstanding items on your bucket list of life. But it can also be very overwhelming.
H
ow do you map out your life plan? Do you have a vision board with clippings from magazines and brochures decoratively displayed? Do you read affirmations every morning before you start your day? Or do you write your goals down in a diary to hold yourself accountable? This year I’ve undergone more personal development than I ever have before – reading all sorts of mind-changing articles, listening to e-books in the car and attending workshops. I’ve enjoyed getting to know myself better and making a conscious effort to strive for greater things. But when it comes to goal setting, sometimes I need a little help. It can be difficult knowing where to start or what to do. Given it’s the time of year when many of us set New Year’s resolutions and fresh goals for the next 12 months, I thought I would enlist the help of the goal guru – Craig Levitt, to make sure you take your first step on the right path.
Craig embarked on his journey of self discovery 18 years ago, Plagued with the burning question, “I’m 45 and I still don’t know what I want to do when I grow up”, and began seeing a goal setting coach where he was introduced to the concept of goal mapping and goal setting. Eight years ago, Craig himself became a coach and now helps other people “get out of the way of themselves” and achieve their goals. The first step is reading – identifying and educating yourself about the different ways to move towards what you want. Craig says a great book to start with is Think and Grow Rich by Napoleon Hill, which interestingly was written in 1937 but remains “a bible” to this day. Also, with the advent of the internet age, there is always an abundance of reading material and videos at your fingertips, which Craig says will then lead you on the trail to connect with other authors and speakers. The next step is creating an awareness that what you want for your future life is different than what you currently have. “You’ve got to be committed to make a change yourself,” says Craig. “Other people can’t make you change, you have to want it, otherwise it won’t work.” For the naysayers out there who still think it’s impossible to accomplish their goals, Craig shares an interesting fact. “We all set goals every day – getting out of bed on time, getting to work on time, looking after the kids; they’re all goals, we just don’t consciously set them. “Once people start to recognise that they can achieve those things based on – when they set them, an intent, an emotion and then taking action; all you need to do is apply that same formula.” Given 2017 is the year of the Rooster, that’s a pretty good omen for everyone out there wanting to make a positive change in their lives. According to Chinese astrology, the Rooster is connected with hard work, integrity and efficiency; and Chinese New Year 2017 predictions state that it is the year for career and financial advancements for people who put in the hard work. If that’s not motivation to get you moving in the right direction in 2017, I don’t know what is.

At the ripe old age of 69, Sunshine Coast local Chris Shapland has just achieved a feat most people half his age would probably baulk at. Recently completing a gruelling 44km swim across the English Channel, Chris shares his incredible story of mental and physical endurance with Profile.
A
t a time in life when most people are thinking of slowing down, Chris Shapland is pushing the boundaries more than ever. A former champion swimmer, surf lifesaver and professional swim coach, he has been in the pool most of his life and has just become the second oldest person in Australia to swim the English Channel. Hailing from a long line of pedigree swimmers, Chris has worked alongside his parents teaching others to swim since he was just nine years old. “My grandfather was teaching swimming in Toowoomba back in the late 1930s and then my parents secured the lease on an old fill and drain pool (The Toowoomba Municipal Baths) there in 1947,” says Chris. Passionate about continuing his family’s tradition of teaching children the right swimming techniques from an early age, Chris took control of the family business in 1980, which has since grown to 14 swim schools throughout south-east Queensland, one of which is owned and operated by his son. A high achiever in the pool throughout his life, representing Queensland at a state and national level, Chris’s latest achievement was less about breaking records and more of a personal challenge. “It’s something I have wanted to do since I was a little boy. I grew up in an era 10

when swimming the English Channel was the ultimate challenge for any open water swimmer,” says Chris. “It’s more of a mental than physical battle – it’s not such a physical feat if you know how to swim properly.” For two years, Chris undertook a gruelling training regime, swimming five days per week up to six hours at a time. “Once I got serious about preparing for it, I started swimming between 10 and 50 kilometres. It’s a different kind of fitness. When I do a long endurance swim I don’t use my legs, whereas when I race I have six-beat kick. It’s not really about achieving a high level of fitness aerobically but as far as ligaments and tendons were concerned, I was well conditioned to swim the long distance,” he says. Aware of the weather conditions and currents he could encounter, including high
winds and six-foot waves, Chris trained in his backyard pool with a device that pumps out a strong current to allow him to swim in one spot and simulate the currents he would likely encounter. Chris completed the crossing on 19 September after swimming for 16 hours and 28 minutes. Adhering to strict regulations and swimming in only a swimsuit and goggles, with no wetsuit, no flippers and no breaks and fuelled only by an endurance drink every 30 minutes, Chris’s lifetime of swimming experience took him in good stead to tackle the perilous feat. Swimming from Dover to the beaches of France, a distance of almost 34 kilometres (as the crow flies), Chris swam much further due to strong tides. “The water was 18.5 degrees, not as cold as I thought, which was one of the

advantages of doing it in September. The disadvantages were the tides, which were up to 7.5 metres and had a massive influence on the distance and time.” But despite being in peak condition and maintaining his stroke rate for the first half of the swim, at around the nine hour mark, nausea set in and for the first time, Chris faced the possibility of not finishing the race. “I never get sick when I swim long distance, I have swam from Cottesloe to Rottnest Island which is 20 kilometres and I never felt ill but I started to get really nauseous and I was not in good shape at all, I just stopped swimming dead in the water and lay there face down. I was trying to come to grips with the fact I wasn’t going to make it,” he says. However, thanks to the unwavering support of his crew and his quickthinking decision to reduce the amount of carbohydrates in his half-hourly liquid feeds, he continued the race in much better shape. Swimming through the night through shipping lanes, Chris says there were times when he would lose track of time – the lights of France teasing him as they appeared and disappeared with the changing of the tides. “When the skipper finally told me I
was only about 400 metres off the beach, I couldn’t believe it. It was a surreal feeling. “When I got near the edge I stumbled and ended up on my hands and knees, crawled up onto the beach, which is really

Then I just lay on my back and thought I really made it!” Euphoric, and unaware of his swollen tongue and throat from the salt water, Chris said it wasn’t until he was back on board the boat that he realised he could hardly swallow and felt the pain in his shoulders. “I think I did 70,000 revolutions of my shoulders throughout the swim, I could feel them get sore but you just break through the pain barrier, you go to another level.” Back on the Sunshine Coast, Chris says the whole experience still feels a bit surreal. “It’s given me the greatest feeling of accomplishment because it was so tough mentally. I didn’t give in, I stuck with it. It’s given me even more confidence.”

Surely now Chris has completed this lifelong dream he’s ready to hang up his goggles and swim cap? Not a chance. “I might tackle the Strait of Gibraltar next. It’s not as long but it has even more current than the English Channel.” Watch this space.

It’s empowering to women, and that’s what I’d really like to do with this – empower women by not only making them feel beautiful, but by making sure that this business can eventually give great support to charities helping women in crisis situations.” Inspired by nature and spirituality, everything about Maschek Couture’s clothes stems from Laureen’s creativity, and having exhibited her art in Melbourne and Sydney, and showcased her designs on catwalks at fashion festivals in Brisbane and Byron Bay, Laureen’s peers clearly agree she is one to watch. Boasting portraits of Queen Elizabeth II, Sir Michael Parkinson, Robert Mugabe and Ewan McGregor, and jet setting around the world to capture the perfect travel destination, Phill Jackson has a portfolio most photographers would dream about. Here, he reflects on his 20-year career behind the lens.
“I
photographed Prince Philip so many times he just shouted at me every time. The Queen was always very nice, but she wouldn’t give you anything – you might see her three days in a row and she’d never give you anything, you were still one of the muppets with the camera.” As Phill Jackson spins stories about encounters with the royal family and A-list celebrities, it’s hard to imagine him doing anything else. But hailing from a poor, working class family in north London, being a high flying photographer would never have seemed like a possibility. Phill left school at 16, which he says was common in the UK at that time, and went on to complete a three-year carpentry apprenticeship. But with no work available thanks to the recession, during which time Margaret Thatcher was in power, 19-year-old Phill spent a year backpacking the globe. “When I came back, there was still no work, but Maggie Thatcher was giving all of the working class the opportunity to go to university. I’d just come from travelling with a camera, so I thought I’d try and get into a university with my portfolio, and I did. I came from quite a poor family. There were seven of us in a three bedroom council house with one toilet, one bathroom, no shower, so

to be given a full grant to go and study away from home was a great opportunity.” Upon finishing uni, Phill began looking for a job as a photographer, which was pretty slim pickings in those days – the only options were medical photography, cruise ship photography or police photography. “I got a job as a Met Police photographer and I’d go in of a morning and log on and my jobs would come up, quite commonly it was stabbings, shootings, murders, rapes, all the really nasty stuff. After three years it was loading up a bit too much, it was really nasty crime day in, day out.” Phill left the police force and took up a job with a commercial agency, where he stayed for another three years. “I went from photographing a murder on the Friday, starting at the agency on the Monday and I was photographing for a travel destination in Europe on the Tuesday. “And I remember one day, I flew in in the morning from South Africa into Heathrow, and flew out of Gatwick to Florida that afternoon. It was brilliant.”

Having been commissioned in every continent except Antarctica, Phill says his bucket list dream would be to capture the pristine white landscapes – a stark contrast to the overcast urban setting he was used to in London, and the bright, sunny beach days he’s grown accustomed to since moving to Noosa nine years ago with his wife and two children. Now a highly sought after commercial and portrait photographer, Phill’s approach remains the same. “It’s nice to be able to give someone an image where they really see themselves.” he says. Turning each page of Phill’s portfolio, I begin to wonder what it’s like to have an insight into the lives of the world’s elite. “The Lord Chancellor at the time was a guy called Charles Faulkner, he was the head of the whole judicial system in the UK and I photographed him when it became the Royal Courts of Justice. The Queen was there and I’m photographing her coming in and he stopped and patted me on the shoulder, with this huge entourage of really

senior people and royals behind him. So you do get some who are quite nice. “Then on the other hand, there was the time I photographed Robert Mugabe. I knew he was a nasty character and I struggled with my conscience to photograph him, if I had my time again I wouldn’t do it. I photographed him in west London, where they were expecting us, the journalist was there doing her thing I was taking portraits, and as he got up to leave, his security barged myself and the journalist out of the way.”

For a growing number of people, getting a tattoo is a rite of passage, but for Belgian migrant and talented Noosa-based tattoo artist Jeffrey Robinson, his dream to be on the other side of the tattoo gun was an opportunity worth crossing oceans for. JEFFREY ROBINSON
T
he buzz of the needles, the smell of rubbing alcohol mixed with the faint scent of ink – there is something oddly electric about the atmosphere in a tattoo studio. As Divinyls frontwoman Chrissy Amphlett once sang, “It’s a fine line between pleasure and pain”, and those who have experienced the bite of a tattoo gun know the truth of this statement only too well. It’s the reason why getting a tattoo is a bucket list experience for so many and why people often return for more time and time again, with the surge of adrenaline and the thrill of having their own personal piece of permanent body art enough to counteract the discomfort of the process itself. But for some, their love of ‘ink’ runs far more than skin deep. For some, it’s a passion that’s seen them instead get behind the tattoo gun – as is the case for Belgian migrant, Jeffrey Robinson. While few can say they’ve truly given up everything to pursue their dream, Jeffrey has done just that, and although it’s been a hard journey, he has emerged triumphant. Art has always been the passion that drives Jeffrey. From when he was a child right through to when he was choosing his career path, it spoke to him, resulting in him undertaking a Diploma in Graphic Design. But when the Global Financial Crisis hit, Jeffrey found his plans derailed. “I started working in restaurants because there wasn’t any work in anything else,” says Jeffrey. “I started out as a dishy, then became a second hand cook, and worked my way up to being a self-taught chef.” While Jeffrey says he loves cooking, he found himself growing more and more discontent. But it wasn’t until he went through a rough break-up that he realised just how much he’d let his dreams go.
“I realised I had lost the ARTISTIC SIDE of myself so I threw myself into that. Art is a good way to learn about yourself because you have to DIG DEEP.”

“I was trying to please everybody else, so once I realised there was no one else to please, I asked myself, ‘What will make me happy?’. “I realised I had lost the artistic side of myself so I threw myself into that. Art is a good way to learn about yourself because you have to dig deep,” says Jeffrey. “I had a friend who was a tattoo artist and he was the one who planted the seed in my head (of becoming a tattoo artist), and from that point I just couldn’t stop thinking about it. So I decided to start again from scratch. And when that clicked, everything just fell into place – it was like a red carpet rolling out before me and there were no other options for me – I had to follow it.” Knowing the likelihood of finding his desired work in Belgium profilemag.com.au

My oldest customer to get their first tattoo was a 74-YEAR-OLD great grandmother and she was a great laugh.” – a country he says lacks love for body art – Jeffrey moved to Australia, but it wasn’t an easy path; he spent a year trying to convince his mentor to train him and nearly two years as an apprentice, during which he had to take up a second job as a chef to make ends meet. Yet Jeffrey is grateful for the experience, and credits leading Gold Coast tattoo artist Marco Ventura with honing his skills by pushing him to achieve greater things. It was during this time that Jeffrey finally experienced the rush of giving his first tattoo, along with another first – body art of his own. His left leg – the only place where his ink is visible to others – is a canvas of his work. “I’d never had a tattoo before, so I thought, ‘I have to know what I’m inflicting’,” he says, pointing to his first attempt, a stylised portrait of Bill Murray on his ankle. “I felt like I owed it to the customers. If I made a mistake, I wanted it to be on myself. “I can’t remember a day I was more nervous than the day I first tattooed another person. It’s not even just the first one – it was more like the first 10 or 15. Even now I still get a bit nervous. If someone trusts me enough to offer up part of their body, I think I owe it to them to be just a little bit nervous. Every tattoo has to be important.” Since his leap of faith coming to Australia four years ago, Jeffrey has become a licensed tattoo artist and met the love of his life Valerie, tying the knot earlier this year. And having achieved his goal with the opening of his own studio in Tewantin in September, Jeffrey has now set his sights on improving the public’s perception of his industry. “A lot of people see tattoos and automatically judge, but you don’t fully know a person’s story until you talk to them,” says Jeffrey. “That’s what I find exciting about this job; you hear some incredible stories. My oldest customer to get their first tattoo was a 74-year-old great grandmother and she was a great laugh. I’ve also done cover ups of mastectomy scars for breast cancer survivors – my mum died from breast cancer when I was 18, so that’s close to my heart. “If you form a connection with the customer, naturally you feel involved and you better understand what they’re looking for. And in our industry, there is as much diversity as there are artists; that’s why it’s so important for customers to find an artist they have a connection with.” In the words of LA Ink star Kat Von D, “I am a canvas of my experiences, my story is etched in lines and shading,” and while Jeffrey Robinson’s story is already a detailed tapestry, this tenacious yet humble man has plenty more canvas left to fill. the holiday issue 2016

t’s ‘The Great Australian Dream’ and a big-ticket bucket list item for most – to own one’s own home. Yet despite their role in helping everyday people achieve this goal, the reaction reserved for real estate agents is often one of distrust. But as Paul and Julie Anderson welcome me into their beautiful canal-front apartment for this interview with a hug and a smile rather than a handshake and ‘the nod’, I know immediately that they
are paving a different path for themselves in what is a highly competitive and often cut-throat industry. Here is a couple who knows what they stand for; who have created their own success and forged a brand that represents who they are, that they are happy to put their name to. And that is exactly what they have done, venturing out on their own after three years in the industry to become Team Anderson Property Group. Though working under the profilemagazine

umbrella of Modern Agents, it’s a huge move for the husband and wife team, who have run their own business before, but until 2013, had never even contemplated real estate as a career. “We owned a steel detailing business that did drawings for fabricators for large commercial and industrial projects like airports, shopping centres and hospitals,” explains Paul. “We had 10 staff and had been going for 25 years, but in the end, we couldn’t compete in this new age of outsourcing.” Making a courageous decision to close their business while they were still ahead, and having worked side-by-side for most of their lives together, Paul and Julie were faced with an uncertain future. But as the saying goes, when one door closes, another opens, and it was through the process of finding another business to take over their company’s lease that Paul found inspiration. “Loren Wimhurst (a local real estate agent) was looking at taking over our lease, and after we talked, she said to me, ‘Have you ever considered real estate, as business owners usually make good agents,” says Paul. “I really didn’t know what I was going to do at the time. At 50 years of age, to be reinventing myself was a bit daunting. So I had a coffee with Loren and she told me the ins and outs of the industry, and then two weeks later I saw an ad for McGrath Academy. “I’d read all of John McGrath’s books and had always been inspired by him, so I thought, ‘This is the opportunity!’ Out of 32 applicants for the academy, they only took five and I was one of them, and it was the best thing that could have happened to me.” Having worked with local contractors as a draftsman when he first moved to the Coast from Redcliffe with Julie 32 years ago, and having consulted with engineers responsible for developing a variety of subdivisions while running their business, Paul’s knowledge of the area made his new career a perfect match. After a two-week intensive training course to secure his real estate license, Paul started working at McGrath Buderim and spent 18 months under the wing of an experienced mentor based at McGrath in Sydney, before jumping ship to Aspire Estate Agents in February 2015. It was then that Julie decided to follow suit, obtaining a real estate license of her own so she could rejoin Paul in the workforce, with the pair having been practically inseparable

since they met as teenagers back in 1979. “Paul had watched me catch the train and later on I was at a nightclub with my sister and he spotted me and he came up and tapped me on the shoulder and asked me to dance,” Julie smiles at Paul as she recounts the memory, “He said, ‘You catch the 7:23 train from Sandgate, don’t you?’ and I said ‘Yes?’ and he said, ‘I’ve been watching you’,” laughs Julie, “and we’ve been together since the day we met.”
Paul and Julie went on to raise three sons, with two living in London and one residing in Wodonga, Victoria, and despite now being empty nesters sharing solely their own company, as I watch them exchange banter, finish each other’s stories and frequently praise each other, it’s clear they are still full of respect and admiration for each other – making them the perfect team. So as they got back to working side-byside combining their strengths, Paul and Julie quickly earnt a reputation at Aspire for their kind and genuine nature and out-ofthe-box approach, and set out to challenge the public’s perceptions of their industry, one sale at a time. “Everyone thinks it’s a quick buck – go and do real estate for a few months, turn over a few commissions and you’re
laughing, but Paul has said many a time that it’s actually the hardest thing he has ever done, because it’s really hard work to do it properly,” says Julie. “There are too many people out there who just tell people what they want to hear rather than the truth, and you’re playing with their lives,” says Paul. “It’s a personal experience; it’s not about houses, it’s about dealing with people and emotions. Houses sell themselves, but we’re about the management of people and helping them get through this stressful time.” While they thrived under Aspire, Paul and Julie knew they wanted to get back to being their own bosses, and made the decision in September to take the next step by branching out on their own and backing themselves as Team Anderson. “People buy from people, so we appreciated the opportunity to be able to brand ourselves under the Modern Agents business model,” says Julie. “We want to do things differently and

there are a lot of things in the pipeline for us training and marketing-wise that we never could have done in the past, but now can,” explains Paul. Within a week of going out on their own, everything began falling into place. They downsized their home and moved into the stress-free lifestyle environment they’d always dreamt of. They were invited to Richard Branson’s Makepeace Island for the Entrepreneur’s Paradise event, where they met CEO of The Butterfly Experience, Deborah Morandin and gained her support. They were able to start thanking the community for their support by giving back through sportsclub sponsorships. And most importantly, they were rewarded with making sales based around their own principles. “We’re not there for the money, we’re there because we care. Sometimes we care a bit too much, sometimes to our detriment, but then when you get that sale and you see the tears of joy in your client’s eyes, it just makes it all worthwhile,” says Paul with a smile. He goes on to tell me about how he
recently sold a property to a couple that was new to the Coast, four months after they first viewed it, because he’d earnt their trust through offering his unconditional help. “Often people are not telling you the whole story and you’ve got to peel back the onion a little bit, because the more we know, the more we can help. After getting to know the couple, I didn’t care whether they did or didn’t buy the property, but I didn’t want them to buy in an area that didn’t suit their lifestyle. So they would ring me asking, ‘What do you think of this area?’ and I’d tell them honestly and give them all the information they needed. And in the end they came back and bought the house. “It’s not like we’re trying to be saints, but it’s just human decency – we’d feel bad if they bought somewhere and we knew something was happening in the future that wouldn’t suit them.” “It’s really a job of high highs and low lows,” Julie adds, “It’s an emotional rollercoaster a lot of the time because you’re dealing with people’s biggest asset and with that and the sum of money that is involved, PHOTO BY JAN STRANDSTRÖM PHOTOGRAPHY of course it becomes emotional. But that’s why we’re so set on honesty – a property is only going to be worth what somebody is prepared to pay, and it’s our job to negotiate the best outcome for all concerned.” In making dreams come true for others without compromising their values, this humble and dedicated husband and wife team is already on their way

And as long as they have each other for support, there is plenty more they can accomplish. “Moving into a lifestyle environment was one of our bucket list items, so we’ve ticked that off,” Julie smiles, “that as well as getting into charity work and going on holidays with our sons and their partners. So many exciting things are happening for us at the moment, we hadn’t really explored how big our bucket list could be. There are things that are happening now that wouldn’t have been on our radar, we didn’t know we could have dreamt this big. It’s just knowing that no matter how big your bucket list is, anything is possible.”

A SECOND Deep-set trauma from a robbery at work, combined with the onset of an autoimmune disease, led to Irma Van Der Plas gaining a significant amount of weight and left her feeling lonely and hopeless. Hitting rock bottom, Irma had nowhere to go but up.
H
eavily pregnant with her first child, Irma Van Der Plas arrived at work on her second last day before maternity leave, when she was confronted by a masked man pointing a gun in her face. With the baby arriving just weeks later, there was little time for Irma to deal with the trauma of the robbery and hostage situation, and she was left to cope as best she could. But the onset of PTSD triggered a downturn in her health and long-term depression. “I didn’t want to be on medication; I didn’t want people to think I wasn’t capable,” she says, “I remember during the robbery, I

felt like I was going to die. Then afterwards I thought, ‘Other people deal with much harder things, so I should just tough it out’.” Looking back on the ordeal 17 years on, Irma says she now realises she placed too much pressure on herself to recover. “At that time there was still so much stigma around depression and medication.
“For me it was about FINDING the CONTROL that I didn’t realise I didn’t have.” It was a bit of a rollercoaster. I’d be okay for a little while, then I’d fall into a slump, then be okay for a while. I kept trying to get through it, but I finally accepted the fact that I needed antidepressant medication.” For the next few years Irma struggled. Escalating health issues and unhealthy relationships prompted her to seek help, but
bucket l ist a lack of connection with her therapist and the arrival of her second child only added more pressure for Irma to heal. A decade after the robbery, Irma was diagnosed with autoimmune disease, Polymyalgia Rheumatica (PMR), and the strong medication caused Irma’s weight to balloon. “I was just so horrified with myself, that I didn’t like myself. I wouldn’t look in the mirror, I avoided photos. I was so unwell for such a long time, but at the same time was trying to be a good mum and a good wife, and do everything I thought I was supposed to do,” she says. Then aged 46, Irma had the metabolic age of someone in their late 70s, and from the brink of hopeless desperation, invested in a personal trainer three times a week with the aim of losing 30kg in 12 months – a goal she proudly achieved. Katie Johnston is helping a community in Nepal rebuild after an earthquake killed more than 8000 people and levelled countless buildings in April 2015, by turning the broken red clay bricks from their destroyed homes into beaded jewellery.
T
erracotta dust coats Katie Johnston’s finger as she picks up another piece of rubble. “When I heard about the earthquake I was devastated and felt quite hopeless. I didn’t know how to help and that played on my mind because I’d been to Nepal a few years prior and everyone was so kind,” she says. “Given the nature of my work, I thought about how I could be more empowering in an environmentally-friendly way and what’s a resource that’s abundant there? Rubble.” Katie partnered with the Institute of Cultural Affairs (ICA) in Nepal, which identified Bocha, a town in north-eastern Nepal, as the community most in need. “It has the least amount of support and has the skills we need,” she says, “and there are a lot of jewellery makers and pottery makers, so it was the best place for this project to start.”

Katie spent two weeks in Bocha, where she was welcomed by locals who shared their stories and showed her remnants of their family homes, which had been passed down for generations. “The reconstruction of buildings is highly regulated now to make it earthquake resistant, which is expensive, and they can’t rebuild their traditional homes in the traditional way with local resources because it’s illegal,” says Katie. Fortunately the EcoBling Shake-It-Up project has thrown the Bocha community a lifeline. “They can make 10 beads an hour and 80 over the course of the day. They’re being paid $1 per bead – to make $80 in one day there is more than they make in a month, so they’re really happy,” says Katie. During Katie’s visit to the village, she held a workshop to show the locals how to fashion beads from the broken bricks.
“When I pulled these bricks out they said, ‘They’re broken bricks, they’re rubbish’, but I started chipping away, drilling and sanding it back and made a bead – their faces went from scepticism to amazement. “They sketch a little house into each bead because they want people to know this was their home and this is going to create their new home. The project launched in November and is the first of many within Katie’s five-year plan, all related to upcycling otherwise discarded materials. Next year, Katie will travel to Kenya, where the locals will be making shoes from car tyres. From each pair sold, Katie will gift a pair to a child from the village. “They get parasites, called jiggers, that come through the ground into their feet, it’s really horrible. So we’re trying to prevent that while also providing employment opportunities.” The following year, Katie will visit Bangladesh and India for two other projects. “We’ll be collecting the plastic out of the Ganges in India and turning it into lace lingerie,” she says, “And in Bangladesh, there is so much factory waste from the clothing manufacturers it can’t fit in landfill, so we’re collecting some of that and working with ex-child brides who will make bags from the discarded material.”
Chatting to Katie over cups of chai tea, tears welling in her eyes as she speaks about these often forgotten communities on the other side of the world, I’m thankful she turned what could have been a low point in her life into an opportunity to help others. Having conjured up the inspired business idea in the wake of losing her job as a social change consultant, Katie launched EcoBling, a fashionable accessory brand using upcycled materials. “We’re using different waste materials that would otherwise go to landfill,” says Katie, “and we plant a tree for each piece sold; so far we’ve planted 10,000 and we’re aiming for another 10,000 in December and January. “I wanted to create positive social change in my own backyard before heading overseas, so also partnered with indigenous artists to burn their art onto the jewellery as a way of celebrating and sharing indigenous Australian culture.
The result is a range called IndigiBling, featuring artwork from native Australian communities in Cowra, Bateman’s Bay and Eumundi. Katie makes all EcoBling pieces by hand, which I can attest to, as on the morning of our interview she emerged from her workshop sprinkled in sawdust. But while she’s competent and confident on the tools now, that wasn’t always the case. “When I made my first piece of EcoBling I used a hand saw because I didn’t know how to use a drop saw and I was so scared of using power tools – they were so intimidating to me,” she says with a laugh. “I went home to my parent’s farm in central-west New South Wales, and my dad took me to his workshop where he showed me how to chop up stainless steel and posts, and I hit the ground running.” That she has, already attracting a following in Canada and America, resulting in the invitation to preview 16 bespoke pieces in the runway show at Eco Fashion Week in Seattle last month – ticking yet another item off her bucket list and proving she is putting her favourite quote into action, “The world needs you to move from mundane to mobilised. Carry as many people with you on the way up. The world has plenty to go around”. That it has.

The upcoming Christmas and New Year season is critical to annual sales for many business owners. So what can you do to capture your best sales from the holiday season? Jeff Bezos, founder of Amazon, once said, “We see our customers as invited guests to a party, and we are the hosts. It’s our job every day to make every important aspect of the customer experience a little bit better”. These days it’s becoming even harder to differentiate product benefits that can’t be copied very quickly. Likewise, competing on price is often short-sighted and can easily lead to price shopping on the internet in search for the best deal. But the one thing that can’t be copied is customer service – when you focus on your customer experience rather than on price, you have a better chance
of building loyalty and separating your organisation from the competition. It generally starts with solving your customer’s problem or making their overall buying experience an enjoyable one. Think about how your business can make your customer’s life ‘simpler’, ‘better’, ‘more fun’, ‘less stressful’ or whatever it is for the category in which you operate. And what are you doing to instill the right culture or ethos into your business? It all starts from the top, from a management level. If you are not customer focused, don’t expect your staff to be. However, if you lead by example and identify all of the different ways you can create a great customer experience, then your team will follow. It’s often the small things that make the difference and it all starts with the customer’s first impression.

When Carolyn Creswell launched into business as an 18-year-old entrepreneur, at the top of her bucket list was to have her muesli products sold in one of the supermarkets. Two decades later and this former Australian Businesswoman of the Year leads the number one brand in her category and has big dreams to dominate the Chinese market.
“I
literally had tears dripping off my chin the day I left Coles and they said they were going to put me on the shelves.” Carolyn Creswell was an 18-yearold first-year university student when she bought a small muesli business in 1992, for $1000. Twenty-four years later and Carman’s is a multi-million-dollar business, selling into 32 countries and counting. It’s a pretty poetic business success story for this former Coles checkout chick, who has had a very hands-on role in seeing the business thrive. “I still pinch myself when I remember

back 24 years ago … personally hand making and packing each and every single packet of Carman’s muesli. I used to make deliveries next to Linfox semi-trailers out the back of my little Daewoo hatchback.” Having been introduced to some super successful business owners over the years, Carolyn says the best piece of advice she has ever received was from a fellow business owner, with whom she shared a bakery space with during the early days of her business. “One day I really needed to get a delivery of nuts but I didn’t have enough money to pay for them,” she says. “I was going to give them a cheque and not sign it and they would work out that profilemag.com.au

night it wasn’t signed and come back the next day and I’d sign it and that would buy me one more day – that was all I needed. “But he said, ‘Just tell them the truth’, put a post it note on saying, ‘I’m a bit short of money, would you mind banking this tomorrow?” And they’ll be fine and put it in tomorrow; but they’ll be really annoyed with you when they’re driving across town to get a cheque signed, because they’ll know what you’re up to. So just tell the truth. “That really stuck with me and I now have a big ‘Truth’ painting behind my desk. Sometimes it’s not always an easy conversation, but I’ve found that’s really stood well with me through my career.” So with the benefit of hindsight, what advice would Carolyn give her 18-year-old self?

In the early days anything that came past my desk was yes, yes, yes and I’d do everything,” she says. “I was working crazy hours because you don’t have enough time to do everything, and I was going down paths that weren’t aligned with what I wanted to achieve.” Carolyn says when opportunities present themselves, she now assesses them against her strategy and business goals, to determine whether they’re useful or beneficial to the big picture. “It’s about learning the art of the graceful no and being able to be strong about saying it so that you can find the time to do what you need to do,” she says. Along with running this multi-milliondollar enterprise, Carolyn is also a mum to four beautiful boys, and a wife to her husband Peter, who played a pretty big role in the early days of Carman’s. “Back then, my boyfriend at the time,

“To get into one of the supermarkets. I never imagined Carman’s would be as big as it is today. I would never have imagined I would sell into 32 countries and that we would have the number one brand in our categories and I’d be Australian Businesswoman of the Year. That was well beyond my wildest dreams – I was also 18.”

Pete, would get emergency phone calls from me saying that I had just received a huge order and that he was needed to come and pack muesli with me into the wee hours!” Counting her blessings every single day, Carolyn is constantly moving forward, chasing the next bucket list goal. So what does the future hold for Carman’s? “We’re doing a huge push into China, so that’s the big future and big opportunity for Carman’s,” she says. “We want to be this loved Australian brand and we think it can be the biggest Australian business in a few years. So that’s the big future of Carman’s – to be in every Chinese pantry! It’s so exciting.”

passion for picnics and a flair for creativity has seen Latoya Rodriguez and her fiance David Thomson unveil a unique business venture capturing the beauty and relaxing atmosphere of the Sunshine Coast. Sharing a mutual love for an elaborate picnic, romance and the outdoors, Latoya and David decided to launch their business Deep Love Picnics in September, with the hope of offering a new experience for the Coast’s residents. “We love food and we love the ocean, so we would regularly pack a massive platter and set up a picnic. We would often get people walk by and give us compliments, so we thought, ‘Let’s share this’.” Providing each customer with their own custom designed private gourmet picnic, it is an idea that has proven to be a hit with locals. “I love seeing the look on our customers’ faces when they show up and see a gorgeous spread catering to their individual wants and needs, and it’s a great feeling when people share their photos with us too. “It’s something where people can create memories and relax and unwind while enjoying what we’ve naturally been blessed with here on the Sunshine Coast.” Having spent their first few months of business setting up, catering and packing away custom picnics for romantic dates in various locations around the Coast, Latoya says Deep Love Picnics is now turning its attention to special occasions, with packages available for proposals, hen’s and engagement parties. Partnering with Izba Espresso for delicious platters and going above and beyond to create the perfect picnic, it’s no wonder they’ve built such a great reputation. “People’s responses have been fantastic and that makes us want to keep going and expanding – it’s a dream come true.” 48

K
eri Stanford-Nash has always been a ‘people person’ but it wasn’t until 10 years ago that she realised the full potential of her ability to help. “I used to be a massage therapist because I love working with people, but I found most people fell asleep,” laughs Keri. “I wanted to be able to interact with people more, so I studied counselling at the University of the Sunshine Coast.” Beginning her career in a family contact centre and going on to work for a variety of agencies where she worked mostly with children, Keri found her niche in helping children express their issues and concerns, recently deciding to branch out with her own service. “My passion is working with children and helping them overcome difficulties they may be facing in life,” explains Keri, “I found I had a really good rapport with children and I love using creative, expressive therapies, so I use that a lot.” The expressive therapies she refers to include sand tray and play therapies, through which children can communicate their worries without having to directly explain how they feel by playing with toys, symbols, figurines and sand. “It gives them that avenue to express themselves in a less confronting way,” says Keri. “It really just gives them that opportunity to talk about some of their concerns and worries by projecting it as a story.” Keri also addresses behavioural issues – something she says is often a manifestation of children’s problems or concerns. “Helping them to express themselves often leads to a reduction in bad behaviours,” explains Keri. “Sometimes we’ll role play some more helpful behaviours as well, so for example, for social issues, we might trial conversations they could try in those situations. It’s all about supporting people to help themselves.” Working with children five and older alongside their families, Keri’s work is certainly making a big difference to little lives.

One of the new “sports” in the Courts is suing your parent’s estate because you were left out or you did not get enough under their Will. Sad, but it’s true.
W
e advise our clients, when they are considering their Will, to carefully consider who their dependants are and to make proper provision for them. This will hopefully avoid any claim against the Estate by disappointed beneficiaries. These contests have a terrible effect on the families left behind, and the legal fees run up by the Executors defending the claims can deplete the Estate so that there is little left to divide up. When doing your Will, you should first consider, what is my estate? Your estate does not include your interest in jointly owned assets, trusts of which you are a trustee or companies of which you are shareholders, or, in most cases, your superannuation. You must also think about who are the appropriate beneficiaries of the Will. Usually the beneficiaries are your husband or wife and children. Then you must divide the Estate so that the beneficiaries are properly provided for. You will be asking for trouble if you deliberately leave out a husband or wife or a child. When a client tells us they intend to do this, we ask them to consider the fallout, i.e. the loss to the Estate in the litigation which
is likely to follow and the damage to the family left behind if they get to air dirty linen in Court. If there are only two children and one gets the lot, inevitably, the relationship between those two children will never be the same, especially if one is the Executor and is therefore required to uphold the Will. Sometimes a Will maker will leave out one child because they have received substantial gifts during their lifetime. If that is the case, a conversation before the death of the Will maker may avoid the fallout by the disappointed beneficiary. Sometimes, there may be a good reason for a Will maker to exclude a potential beneficiary, e.g. a Will maker is estranged from an adult child and has had no contact for many years, despite efforts to stay in touch, or an adult child has stolen from the Will maker or been violent to the Will maker. To avoid the cost and trauma of a Will contest, see your solicitor and take some advice so that you are not the subject of litigation after your death. future growth Did you know, the Sunshine Coast population is expected to increase from 298,000 to around 495,000 by 2041?
T
o accommodate such growth, the State Government has estimated that the Sunshine Coast will need an additional 99,300 dwellings by 2041, as outlined in the SEQ Regional Plan. “Council and our community have consistently outlined a preferred settlement pattern for the region to 2031, as outlined in the Sunshine Coast Planning Scheme,” Mayor Mark Jamieson says. “Our population modelling shows the region can ably accommodate more than the required number of dwellings by 2031 including the 27,600 dwellings planned in Palmview and Caloundra South. “Between 2031 and 2041, the State Government estimates that another 40,000 dwellings will be required of which more than 25,000 will be provided at Maroochydore, Nambour and in the Sunshine Coast Enterprise Corridor.” He says the council’s planning for the region, in partnership with the Queensland Government, has produced some great results for the future of the Sunshine Coast community. “Following strong and consistent advocacy by council, the draft SEQ Regional Plan identifies Beerwah East in the Urban Footprint – a preferred location for long term growth,” he says. “Beerwah East will provide public transport connections and

routes and the additional 10,000 to 20,000 dwellings required to meet the predicted population growth to 2041 and beyond. “The draft SEQ Regional Plan also provides for some growth in smaller townships such as Glasshouse Mountains, Landsborough, Palmwoods, Yandina and Bli Bli. “For many of these towns, this recognises their suitability for urban growth given they are located on the North Coast Rail Line transport corridor. As well as providing increased housing on the Sunshine Coast, it allows these townships to continue to grow.” The draft SEQ Regional Plan also supports the council’s efforts to achieve an offshore cable protection zone and landing point for an international broadband submarine cable connection, which will make the Sunshine Coast the first regional centre in Australia to provide direct broadband connectivity to global markets. The nearby and newly constructed $2.3 billion Sunshine Coast University Hospital along with the neighbouring private hospital is a monumental project for the future of the region, and together these will be at the centerpiece of the evolving $5 billion Oceanside Health Hub, supporting thousands of workers and businesses. Against this background, Maroochydore has one of the strongest property markets on the Sunshine Coast, which currently ranks as one of the nation’s leading growth markets. One of the attractions of the Maroochydore apartment market is the low vacancy and high rental yields on offer. According to Australian Property Monitors, the median rental yield for Maroochydore apartments is a tick under 6% gross.

These uncertain times …are here again.
I
f you Google the phrase ‘these uncertain times’ you will discover over four million references to this notion stretching back almost as far as recorded history.
Just about everyone, everywhere it seems, believes that the era in which they are living is one that is particularly unsettled and especially unpredictable. Right now on the Sunshine Coast we are apparently no different. When the economy is good we wonder how long it will last. When it’s bad we wonder when it will improve. And of course all these concerns affect the real estate market. Sometimes buyers are nervous. Sometimes sellers. Right now there are lots of buyers about... but sellers are cautious. No one knows exactly why. Although many pretend they do. But from my experience one thing is fairly certain. When we look back, there will be buyers who wished they had bought earlier and sellers who wished they had sold when buyers were plentiful. And eventually these ‘uncertain times’ may not seem really so different to the new ‘uncertain times’ we will be living in then.

The year 2016 has been one of milestones for Sunshine Coast locals, with many making headlines for achieving great things. Profile spoke to four local self-made success stories to find out what they ticked off their bucket list this year, and what’s in store for their future.
LACHLAN SMART Youngest person to circumnavigate the world solo in a single engine plane profile: What has been the highlight of your career? lachlan: The completion of the round-the-world flight (achieved by Lachlan and his team named, Wings Around the World) was certainly the highlight of my career and my year! After more than two-and-a-half years of planning, to finally see the dream come to completion was exhilarating and relieving. profile: What is now on your bucket list? lachlan: In the future I am looking forward to promoting the business we are setting up called Young Achievers International, to provide a pathway for people to achieve their dreams. I can’t say much yet, but there will be more to come on this one, so watch this space! profile: What is your advice to other people wanting to achieve their goals? lachlan: My advice to people with big dreams or goals would be to never give up. We will often come across challenges and hard times, but the thing to remember is that setbacks are the foundations to success! Every time we seem to fail, we should see it a success, as we have learnt something and that has brought us one step closer to achieving success.
DAVE LARKIN School chaplain and recipient of the 2016 Sunshine Coast Australia Day Citizen of the Year Award profile: What has been the highlight of your career? dave: When I got home from hospital after emergency open heart surgery in September 2014. The Buderim school and wider community had filled my home with get well cards, food, vouchers, etc., which was both overwhelming and humbling, and filled my heart and mind with peace and love. What I do for a career in caring for the community was reciprocated right back to myself and my family. profile: What was the biggest thing to happen to you this year? dave: Winning the Australia Day Citizen of the Year Award for the Sunshine Coast. I was in shock and didn’t know what to say on stage. For once in my life I was literally lost for words! profile: What is now on your bucket list? dave: I’d like to continue to work alongside organisations and help develop programs and events that assist families to grow, learn, heal and make changes, enabling them to reach their full potential. I would also like to work with indigenous communities and families one day, as well as build and own a retreat centre for families to restore, reconnect and heal together. profile: What is your advice to other people wanting to achieve their goals? dave: Know what your dream is. Learn from others who have already ‘been there and done that’. Do all that is required of you to fulfil that dream – so essentially, be disciplined. Put in the hard yards, even when no-one is watching you. Be prepared to sacrifice, risk and fail. Never give up.

Being able to step away from our business and know that it can successfully keep running without us is a great reward for all of our hard work. profile: What was the biggest thing to happen to you this year? rebecca: Being involved in the Sunshine Coast Business Women’s Network and winning the Sunshine Coast Young Business Woman of the Year has been my highlight for 2016. Not only was it a thrill to win the award, but the process leading up to it was great. It allowed me to reflect on my business and see our achievements and how far we have come. Our business has also been made a finalist in the Sunshine Coast Business and Tourism Awards, which is another great achievement for 2016. profile: What is now on your bucket list? rebecca: Our bucket list for the business is to take it national. We have recently started work in the Australian Capital Territory and we are working on having a business that is the size of our SEQ operations down there, before looking at moving to more areas. Personally, our bucket list is to spend time with our kids and hopefully get away for some well-deserved holidays next year. profile: What is your advice to other people wanting to achieve their goals? rebecca: Get help! Make use of other professional’s knowledge and resources and use it to grow your business. Other people can bring great ideas to the table for your business, so work with as many people as you can. Also, get out and network. There are so many great business people on the Sunshine Coast!

profile: What has been the highlight of your career? alana: The highlight would have to be my performance at the Rio Olympics this year, finishing fourth. I was the athlete I had always wanted to be when I was in Rio. I was mentally tough, despite a not-so-perfect preparation, thanks to some ankle troubles, and I still managed to clear 4.80m, which is only one centimetre below my personal best, and only missed a medal on a count back. To do this under pressure at the biggest sporting event in the world, the Olympic Games, is something that I am extremely proud of. Winning two Commonwealth gold medals is also another big highlight in my career. profile: What was the biggest thing to happen to you this year? alana: Now that’s a hard one! I broke the Australian record twice, competed at the Olympic Games and finished fourth, got married and became Alana Quade, and just recently, I announced my retirement! It has been a huge year with so many exciting and wonderful memories! profile: What is now on your bucket list? alana: Now that I am retired from elite sport, my bucket list is set to change. Right now I am enjoying being active for health and wellbeing, and settling into life away from the track. I am excited to put my energy into mine and my husband’s building company Qspec, and as time goes on, I will develop new goals and add to my bucket list. profile: What is your advice to other people wanting to achieve their goals? alana: Don’t get ahead of yourself – work on the process and the outcome will look after itself. The reason you practice a skill is to perfect it or get as close to perfection as you can. Know that it will not always be perfect but if you keep working at it you will improve, and the outcome will be the fruits of your labour, which is a feeling that is just so rewarding.

Many of us have joked about stress eating, but how many of us recognise it as an actual concern? Emotional eating can be damaging to more than just your waistline, preventing you from addressing the real problem at hand. Sharon K. Chapman explains how you can turn your life around by transforming trauma into triumph. “The quickest way to freedom is to feel your feelings,” says Sharon K. Chapman. “It has very little to do with food; it’s actually all about the repressed emotions that haven’t been resolved.” What Sharon is referring to is emotional eating – an issue she says many people have a problem with, but few understand. In Sharon’s case, her battle with emotional eating spawned from a traumatic childhood and spiralled after experiencing a family tragedy, and although she had been practicing a variety of natural therapies for 20 years in a bid to help others, it wasn’t until she discovered the practice of Emotional Freedom Technique (EFT) or ‘tapping’, that she realised she had a problem of her own. “What I learnt was that the weight I was holding on to was actually repressed emotions,” she says. “I’d always been an emotional eater, I just hadn’t realised I was and I’d tried to control it through dieting and controlled measures. A lot of people know they need to eat less sugar, for example, but there are some people who aren’t good at doing ‘less of’ anything, whereas other people can cut refined sugar out no problem. Try focusing on eating more real and whole food and the other things start to fall away when you do that.
Become breath aware
One part of our nervous system is called the autonomic nervous system and there are two branches to it, the sympathetic nervous system, which is the fight or flight response (I call it the red zone) and the parasympathetic nervous system is the opposite arm of that, which is the rest, digest, repair – the calm arm of the nervous system (I call it the green zone). The challenge for so many people is that they’re stuck in the red zone and it’s primarily our stress hormones that drive that. So whatever leads us to make adrenaline in the modern world, which is caffeine and our perception of pressure and urgency, that communicates to every cell in our body that our life is in danger. When you do a long slow breath and move your belly in and out, when you diaphragmatically breathe, you communicate to your body via your nervous system that you’re safe, because you’d never be able to breathe like that if your life truly was in danger. One of the most powerful and fastest ways to lower stress hormone production is to breathe diaphragmatically.
Move your body
When I say move, that doesn’t necessarily mean go out and smash yourself with exercise, it just literally means move more. There was research which originally began at NASA that showed when we sit for more than an hour, a number of different enzymes which are necessary to use body fat as a fuel, start to decrease. It doesn’t happen when we lay down and it doesn’t happen when we stand up, but when we sit, these enzymes that our skeletal muscles make, we start to not make as much of it and energy level and focus, as well as our ability to use body fat as a fuel, start to drop. If you have a desk job, ideally you need to get up and move for three to five minutes every hour.
Let yourself have what you already have
When you’re in pursuit of more, you usually miss the gifts of what you’ve already got and if you don’t let yourself have what you already have, like a beautiful view or watching your children sleep; then what else are you denying yourself? A big part of health is joy and a big part of joy is letting ourselves have what we already have and when we experience that joy, it really helps our health and our energy.

A
s one-year-old Georgia Craig sits on the floor ‘cooing’ and clapping her hands with glee, she has the room of people surrounding her enraptured. There’s something about babies that bonds people together, and there is no place on the Sunshine Coast that feels this more than the MAMA centre. In fact, dedicated to guiding soon-to-be parents through pregnancy, birth and their postnatal journey, it was that very reason MAMA Queensland was created. Having been a midwife for 15 years in public and private hospitals, MAMA Queensland’s founder Kelli Zakharoff has helped bring thousands of little lives into the world – but a moment of clarity two years ago made her realise it hadn’t been the way she had intended. “I was working shift work where I’d have an eight hour shift and I would have birthed with nine different women, and that wasn’t midwifery to me – it was just a production line,” explains Kelli. “I wanted to provide women with continuity of care, I didn’t just want to birth their babies; I wanted to know them through their pregnancy and I wanted to be part of their lives.” It was through Kelli’s first MAMA centre in Brisbane that she met her now business partner, Candice-Louise Craig who was searching for a model of care that was purely dedicated to helping her achieve the birth she so desired, a home birth. After the birth of her daughter, Georgia, Candice-Louise realised there wasn’t anything like what she had experienced on the Sunshine Coast. “It’s quite an intimate journey you go through with your midwife, and through that we built this beautiful bond and we became business partners,” says Candice-Louise. And after realising the need for a holistic service like it on the Coast, the pair opened the MAMA centre in Buderim. “We’re passionate about creating a place where people can come and have choice, and can work towards the birth they desire for them and their baby,” says Candice-Louise. Offering a safe, open and judgementfree environment, the MAMA centre support soon-to-be parents throughout their journey into parenthood, providing education to help them best prepare for their birth. From preconception, pregnancy to labour and birth and into postnatal care, one of the MAMA centre’s handpicked midwives will be assigned to you to provide you with the basics of early pregnancy care including routine ultrasounds and pathology tests. Your MAMA Midwife will be there every step of the way and will act as an advocate for your birth choices and provide continuity of care. And it’s never too late to ask for help, with Kelli saying she’s had women come to her in their third trimester after realising the care they have been receiving was not what they wanted.. “It’s about giving women a birth that they are happy with,” says Kelli. “They are in control – we’re just guiding, facilitating, holding their hand and giving them the opportunity to ask the questions they are too afraid to ask.”

FESTIVE FRUIT AND NUT CHOC BROWNIES INGREDIENTS

Preheat oven to 180°C and grease your baking tin.
200g butter 300g milk chocolate 6 eggs 1 tsp vanilla essence 1 cup brown sugar 1/3 cup plain flour 100g glace cherries Handful of walnuts Handful hazelnuts Icing sugar for dusting
Melt the butter and chocolate in the microwave, in 30-second blasts, stirring well each time. In another bowl, whisk the eggs and vanilla together until they begin to get light and fluffy. Carefully whisk in the sugar until it becomes stiff. Slowly pour the melted chocolate into the mix, being careful not to knock too much air out of the mixture. Add the flour and stir until well combined. Then stir in the cherries, walnuts and hazelnuts.
Pour the mixture into the tin. Bake for about 30 minutes – the middle should still be a little bit gooey, but not too wobbly. Leave the brownies to cool in the tin. Dust with icing sugar and cut into squares.

Layer 1 cup of powdered milk, 1 cup cocoa powder, 1 cup caster sugar, ½ tsp salt, ½ cup chocolate chips and ½ cup crushed candy canes. This recipe is for a 1L jar (or divide among smaller jars) and makes about 12 servings. Finish your recipe-in-a-jar with a cute tag saying, “Mix contents in a large bowl. For each serving, place three tablespoons in a mug and stir in boiling water. Store remaining mix in airtight container”.

It could be swimming with sharks, climbing Mount Everest, writing a book, travelling the world or something as simple as volunteering at a local charity – most of us have a list of things we want to achieve before kicking the proverbial bucket! The lunching ladies share theirs with Profile.
S
o what exactly is a bucket list? And should we all have one? There is some controversy as to the exact origins of the term but it’s thought to have derived from the old English saying, ‘To kick the bucket’ – meaning to die. Hence, a bucket list is by definition a list of all the things you want to do before you die. Makes sense right! According to recent research, the top five bucket list items worldwide include becoming a millionaire, travelling the world, seeing the Northern Lights, trekking the Great Wall of China and becoming mortgage free. I definitely have a couple of those on my list! Creating a bucket list is a great exercise to take us away from our daily routine and shift our focus on what’s truly important in our lives. How often do we find ourselves so busy running on the mouse wheel of life that we lose sight of the bigger picture. According to goal setting expert Lynn Levitt, a bucket list is essentially a wish list of what you want to achieve and a great way to get motivated. “I always encourage people to do a yearly one instead of a lifelong one,” says Lynn. “We change, times change and so do our needs and wants.” To find out more, I recently posed the question to our lunching ladies over a delicious meal at The Post Office, Maroochydore to discover what’s on their “must do” list and why. Joining me for lunch was Joanne Stecklebruck, owner of Soul Discoveries; Rhonda Billett-Haire, owner of Uptown Hair, Nambour; Mandy Ward, owner of Sunshine Coast HR services; Kate Tempest, owner of Awakened Healing Space; Rebecca Gill, marketing manager at the Maroochydore Homemaker Centre and Kara de Schot, General Manager of Profile Magazine. profile: Do you have a bucket list? rebecca: I think it’s always been in my head but I have never written it down. I started to write them down and then I had to stop myself, there are so many things I want to do! mandy: I created a vision board recently. I am someone who always writes down my goals. I find that even if I don’t look at it for a while it does put it out there to the universe. kara: I have always been into goal setting and writing my goals down, the holiday issue 2016
but come to think of it I have never written down my bucket list! kate: I don’t have a bucket list because I’ve done a lot of the things I want to do already, which is great. But I’m always assessing where I want to go next. rhonda: No. Some people need a bucket list to stay motivated to do what their heart genuinely desires. I am a very goal orientated person though. Once I have written it down I try hard to achieve it and most of the time I do. joanne: I’ve never had a bucket list. I never set goals. I do journal a lot about how I’m feeling about things that come up in my life, which helps me to find solutions. I have conversations with the universe a lot. profile: What’s on your bucket list? rebecca: They are not in any particular order, but all things I am confident I will do before I die – safari in Africa with family, take my daughter to Paris, take the kids to Disneyland, go on a weeklong yoga retreat, do a mindfulness course, climb Ayers Rock, take my family to Asia and volunteer at an orphanage, run 10 kilometres without dying, visit the glowworm caves in New Zealand, visit Heston’s Fat Duck restaurant, walk the Cinque Terre, visit the Orangutans in Borneo, go to New York with my girlfriends. See I told you there were lots! But I’m confident I can do them all. mandy: Getting my business off the ground and being financially independent. I would love to travel more. The kids are older now and range between 13 to 23. Once they are grown and settled and stable I want to travel the world, try all of the different cuisines and enjoy the cultures. I would also love to get more comfortable with public profilemagazine

The Post Office
Situated in the old Maroochydore Post Office building, in the revived food and beverage hub of Ocean Street, the Post Office Bar and Grill is renowned for delivering delicious meals, created using only the freshest of local ingredients from the paddock to the plate. A nod to its building’s history, the restaurant has been beautifully appointed to maintain the feel and character of its past, with a modern twist. This wasn’t my first visit to the popular eatery, I have dined there on several occasions and have never been disappointed – today was no exception.

speaking and I would like to write a book one day! kara: I really want to travel more. When I went around Europe eight or nine years ago, I didn’t get to see the Northern Lights, so before I die I want to see them. kate: I want to live a life off the grid. I want to have my own place that is not reliant on the grid at all, so we don’t have to work as hard. rhonda: I would love to write a memoir of hairdressing. Working in a hair salon is the university of real life. I hear some amazing stories. joanne: I would sincerely hope my business is successful and I can help a lot of people feel better about themselves. I can grow old doing this job, it’s my passion. One of my other passions is to get into schools and help kids and helping them avoid peer pressure. profile: Have you ticked anything off your bucket list already? mandy: Managing my own team was something I wanted to do and I did that for six years. Finishing uni was another one. I guess now that I have hit 40, it’s time to re-evaluate where I am and this decade is about cementing everything. kara: I like a challenge. This year I set myself the goal of doing Tough Mudder, it was 21 kilometres and I had seven weeks to train intensively. I did it, so that was a big tick. I also quit sugar for two months, which was really hard for me because when it comes to sugar, I have no off switch! rhonda: Starting my own business and running it successfully for 17 years. joanne: What’s important to me has certainly changed over the years but I always wanted to be the best mother I could and I hope I’ve achieved that. I think the most important thing you can do for your children is love them and teach them to love themselves. kate: I have been fortunate to have travelled a lot, which was always important to me.

Offering a delicious and varied menu, diners are spoilt for choice at the Post Office. From juicy steaks, to fresh seafood and delicious salads, there is something to suit all tastes and appetites. We kicked things off with the pickers plate from the share plate menu – the selection of spicy chicken wings, salt and pepper squid, pork belly bits, house wedges, beer battered onion rings and garlic aioli really hit the spot. For mains, I couldn’t resist the Mooloolaba prawn and spaghetti, cherry tomato, fresh garlic, lemon, chilli, white wine and olive oil and it was superb! Just the right serving size and bursting with flavour, it was the perfect mix of delicate flavours. Other popular choices included the Caesar salad, tasty housemade pizza and fish of the day, all of which looked just as appetising and received rave reviews from the lunching ladies. We couldn’t fit another thing in after our generous sized lunches but the dessert menu is to die for. Boasting chocolate flourless torte, sticky date pudding, trio of sorbet and duo of ice cream, it is certainly worth trying, and has given me yet another excuse to return to sample it next time. LETHBRIDGE BRUSCHETTA A herb and garlic baguette with pickled mussels, cured salmon, and a fresh buffalo mozzarella and herb medley, served with chilli praline and beetroot and feta pesto. INGREDIENTS PESTO:
100g feta 100g salted cashews 1 large boiled beetroot 2 cloves garlic 1 tsp of sugar ½ bunch basil 200ml olive oil
BRUSCHETTA:
1 jar pickled mussels 1 fresh salmon portion 1 tub fresh buffalo mozzarella 1 lemon ½ cup red onion, finely chopped ¼ cup coriander, finely chopped ¼ cup parsley, chopped 50ml olive oil
PRALINE:
2 tbsp cider vinegar
1 cup white caster sugar
Salt and pepper to taste
1 chilli, chopped
5 garlic cloves 2 tomatoes, finely chopped
METHOD
1 sliced baguette or French stick
PESTO: Blend all ingredients together until creamy. BRUSCHETTA: Finely chop the garlic and place a quarter in a small bowl with a quarter of the herbs and a quarter of the olive oil. Add salt and pepper and mix, then spread on the sliced baguette and bake until crispy. Dice the mussels and salmon into small pieces. Place into a mixing bowl with the remaining herbs, onion, garlic, lemon juice, vinegar, olive oil and tomatoes. Add salt and pepper to taste and roughly combine, before leaving the mixture to rest for five minutes. PRALINE: Melt the sugar until golden brown. Spread over a greased tray and sprinkle the chilli over the to top, gently pressing down with a wooden spoon. Refrigerate for ten minutes. Tap the tray on a bench top until the praline shatters into shards. TO SERVE: Break the mozzarella all over the base of your plate, and add a generous smear of the pesto. After positioning the baguette slices on top, spread a generous serve of the bruschetta mix on the baguette, and garnish with a shard of chilli praline, as pictured. Enjoy with a glass of Lethbridge Pinot Gris.

Australia’s premier illusionist and escapologist, Cosentino is a man who constantly challenges our notions of what’s possible. I caught up with the charismatic magician during his recent visit to the Sunshine Coast, where he shared the story behind his remarkable journey from a shy boy to the international star he is today.
H
e first came to our attention as a contestant on Australia’s Got Talent in 2011. A young up-and-coming magician from Melbourne, Paul Cosentino (known as Cosentino) enraptured the judges and the audience with his magic and highenergy showmanship. Week after week, he astounded us with this craft, constantly pushing the boundaries, including a daring escape act in which he had to pick nine locks while completely submerged in a tank of water suspended above the ground. He was placed runner-up in the series, but it was to be the launching pad for an incredibly successful career. A true trailblazer in his field, Cosentino was the first Australian magician to have his own shows on prime-time television, which COSENTINO

have been broadcast in over 40 countries. But it’s where he came from that is the real magic behind his story. As a 12-year-old boy with learning difficulties, teased and isolated at school, he struggled with reading and had low self esteem. “I hated reading,” says Cosentino. “School was torture for me and it was even more difficult because education was highly valued in my family. My mother is a school principal and my dad is a structural engineer.” Understandably, the library was not a place Cosentino felt comfortable, the books representing pain and humiliation to him. Yet as fate would have it, it was during a visit to the public library with his mother that he stumbled across a magic book, and from that moment, he was transfixed. “I remember it had pictures of famous magicians, including Houdini, handcuffed staring down the barrel of the camera,” he says. “It said, ‘Nothing on earth can hold Houdini prisoner,’ and when I asked Mum what that meant she said, ‘Nothing can stop him, nothing can hold him back, like a superhero, only real’. I was hooked and Mum was delighted I was interested in a book! “I could barely read it but I wanted to know how to do the tricks, so Mum helped me break down the intricate instructions and over time I overcame my huge stumbling block and learned magic in the process.” One of his fondest memories is performing the first magic trick he had mastered to his father. “To me, my dad was a genius, he made bridges stand up using math. I made a coin disappear and my father said, ‘How did you do that’! I smiled at him and there was this transfer of power because I could do something he couldn’t.

“It kept growing from there. I had no intention to become a magician but it was a skill I was naturally good at. I remember running around the house eating fire and my brothers would tie me up with rope and throw me in the pool. We did some crazy stuff.” Inspired by the likes of Gene Kelly, Fred Astaire, Walt Disney and Arnold Schwarzenegger, Cosentino wanted to follow in their footsteps and be an inspiration for other young children. “They are all magicians because whether it be dancing, cartooning or martial arts, they took their craft and pioneered it,” he says. But when it came to convincing his parents magic was his career of choice, he had some work to do. “My parents as educators were happy for me to follow my passion but naturally they were unsure if I could make a living out of it. “I can understand how they were feeling. My father arrived from Italy as an 11-yearold migrant who couldn’t even speak English, yet he worked incredibly hard, got through university and became an engineer. My path was much more unconventional. There was no one to emulate, no one in Australia I could aspire to. I had to make my own path and lay every little brick to get there. “That’s why I made a vow when I went on Australia’s Got Talent, that I would be that person. I wanted to make it a viable career so other kids could say I want to be a magician like Cosentino.” And make a name for himself he did. Not bad for a shy kid who dreamed big. Cosentino has recently released his first book, Anything is Possible – an uplifting and wholly compelling story for anyone who has ever dreamed of achieving the impossible.

He’s the big, jolly man in red we all know and love, with his generosity bringing gifts, and more importantly, happiness to children right around the world. Despite it being his busiest time of year, the typically illusive Santa Claus was kind enough to take time out of his final preparations for Christmas to take part in The Last Word and shed some light on his life away from the spotlight. SANTA CLAUS
I grew up in… the Arctic, at my family’s property, The North Pole. It was a pretty isolated childhood, but the elves were always happy to keep me company. The first thing I do when I wake up is… go outside and feed the reindeer. If I could be better at anything it would be… navigating. I’m lucky that I have a GPS now, but I have become lost a few times over the years. I am at my happiest when… I am bringing joy to children around the world. That, and when I have enough time off, taking Mrs Claus on holiday somewhere warm and sunny. When I am not working I am… either reading (my favourite books are A Christmas Carol and Sleigh Repairs for Dummies), having epic snow fights with the elves, or cooking up a storm in the kitchen with Mrs Claus. I wish I could… make every child’s wishes come true. I do my best, but some requests just aren’t possible, and that’s the toughest part of my job. My biggest fashion blunder was… thinking I could pull off skinny jeans and swapping my usual half-moon glasses for a pair of tortoiseshell wayfarers. Mrs Claus says she thinks I was having a midlife crisis, but really I just got swept up in that whole hipster craze. The cornrows she convinced me to get while we were holidaying in the Caribbean in the early 2000s are a close second. When I was growing up I wanted to be… the next ‘Santa’ just like my father and his father before him. The Christmas spirit runs in our family. I couldn’t live without… Mrs Claus, the elves, and of course, my trusty reindeer. My most annoying habit is… I never knock before entering a house. When you’re delivering presents, you sneak around a lot, so it’s hard to switch that off. It’s made for some pretty awkward situations with the elves and is something I really need to work on. My hidden talent is… fitting into tight spaces. Even I don’t know how I do it sometimes! I laugh out loud when… I’m nervous. I don’t spend much time around people outside of December as I’m usually either hard at work or laying low, so I tend to laugh a lot in social situations. I’ve always been very jolly though, so I guess it paints an accurate picture of the kind of person I am! People don’t know that I… am actually terrible at gift wrapping (I usually get help from the elves) but I am great at freestyle rapping.
