WHAT WOULD LIFE BE WITHOUT LOVE?

T

here are so many different versions of love in our lives, some small and fleeting versions and then there’s the love that is so woven into our very being that we would lay down our lives to protect it. As we get older we experience different connections that constitute love – our relationships with parents and siblings, material possessions, finding a partner to CONGRATULATIONS TO KAR A ON THE RECENT ARRIVAL OF DAU share our life with, finding great GHTER ARIA LILY friends, adopting fur babies, falling in love with destinations and locations and of course having children and grandchildren. For me personally, having my first child challenged my idea of life and love as I knew it, I discovered a force of nature so powerful it took me by surprise. “A mother’s love for her child is like nothing else in the world. It knows no law, no pity, it dares all things and crushes down remorselessly all that stands in its path.” – Agatha Christie. For most of 2016 I was pregnant with my second child, and wondering how I could possibly duplicate the love I have for my firstborn, how can one have that much to share? But as I’ve seen every family that goes before me, I know it’s more than possible and the moment I met my newest addition my heart’s capacity multiplied instantly. And that is where the magic lies, we always have more capacity to love and be loved! Welcome to 2017, to all those who have or have had love in their life, we are truly the lucky ones. To those who are seeking love, the best is yet to come. To me love is the ultimate bond shared between people, like a mother and child – Kara de Schot GENERAL MANAGER

t’s that time of year again, when Cupid draws back his bow, romance is in the air and the Profile team is feeling all loved up! Speaking of love, this month, we’ve had such fun turning our focus to all things weddings, chatting with Sunshine Coast locals who are passionate about being part of the exciting industry. From the dressmaker and the cakemaker, to the wedding singer and the hairdresser, we’ve covered all bases when it comes to the key players. It’s no surprise the Sunshine Coast is one of the most sought after locations for weddings, boasting some beautiful beach and hinterland venues, and Flaxton Gardens is no exception. Playing host to hundreds of weddings each year, the venue celebrated an extra special union recently – that of its owners Alan and Mariana Thompson. Blessed with a second chance at love, this husband and wife are breathing new life into the historical and iconic wedding venue. Nicole Fuge shares their heartfelt story. We also introduce you to gorgeous real life couple, Roberto Luca and Renate Bowden. Following a 20 year friendship, the now newly wed couple – who had previously been in same-sex relationships – conceived a child together, resulting in a unique bond that changed their lives forever. It’s an incredible story of love, strength and courage. Does the amount of time you and your partner have been together really define your relationship? In a day and age where it’s encouraged to have multiple careers in one lifetime and where we are constantly upgrading and up selling our belongings, is it also becoming the norm to have multiple life partners? Are we becoming too frivolous and not fighting for love?

M

y husband and I recently celebrated our seventh wedding anniversary, which inspired the comment, ‘Ooh it’s the seven-year itch’, from others. But in our case, the seventh year holds special purpose, as the day we became husband and wife also marked seven years of us being together (having started our relationship as 16-year-old high school sweethearts). There is endless speculation as to where the ‘seven-year itch’ timeframe originated, with some suggesting it draws back to Rudolf Steiner’s theory human development occurs in seven-year cycles, during which time we undergo immense changes in personal growth, knowledge and experience every seven years. But in today’s fast-paced society where we want everything ‘here and now’ and relationships are formed with a swipe left or swipe right, it’s not surprising the ‘seven-year itch’ theory is now actually closer to a ‘twoyear tickle’.

Psychotherapist Pamela Pannifex says all relationships progress through normal and inevitable phases, which often start with an initial ‘honeymoon phase’, also depicted as ‘weak at the knees’ love we see in the movies. “Research tells us that the ‘honeymoon phase’ lasts up to two years, after this, relationships move into what’s known as the ‘working phase’, where differences emerge and partners need to work together to reconcile differences, solve problems, and keep their relationship functioning well,” she says. “When these differences and problems are not resolved, relationships can reach a crisis point. One or both partners start looking for solutions to their unmet needs, often (but not always) outside the marriage – a facelift, a new car, having an affair, backpacking through Asia – or dreaming of these.” With the latest government figures showing the number of marriages each year is decreasing and the rate of divorce is increasing, it’s worth doing all you can to make sure your relationship doesn’t become another statistic. “It’s normal that all relationships reach crisis points of one type or another at various points,” Pamela says.

“It is not a lack of LOVE, but a lack of FRIENDSHIP that makes unhappy marriages.” “The healthy solution is for both partners to develop a strong sense of personal awareness (to nourish the ‘I’ within the ‘we’), to have strong communication skills that keep them connected, and to create a relationship culture that’s healthy and sustainable, despite the inevitable challenges that any relationship will bring.” I am also a firm believer that a successful relationship must first and foremost be a best friendship, as German philosopher Friedrich Nietzsche says, “It is not a lack of love, but a lack of friendship that makes unhappy marriages”. Don’t you want to live happily ever after? I do.

It takes a lot of effort to plan the perfect wedding – even moreso when it’s overseas. What goes into planning and booking a destination wedding? Where do you start? Newlyweds Sam and Chelsea Barnard share the details from their Fijian wedding on 7 August, 2016.

S

am Barnard still bears the scar on his hand from fighting over a pair of scissors with his Year 3 classmate Chelsea Holliday, a reminder of what would blossom into a beautiful romance in years to come. Sam and Chelsea went through primary and high school sharing most of the same classes, but it wasn’t until 2008, when they found themselves in the same circle of friends and attending a party one night, that everything changed.

“I never thought I would ever have a chance with her, until I held her hand that night,” Sam says. “It was crazy how we’d known each other for so long and then it all just changed, it was like flicking a switch and then I saw him in a totally different light,” Chelsea adds. And so a beautiful relationship began between these two childhood friends, who share an insatiable zest for life and love for each other. Profile: Tell us about the proposal? Sam: I’d wanted to propose for a while. Chels was talking about her ring she loved, that I’d bought her years earlier, and we decided we should get it made into an engagement ring. Chelsea: It was actually pretty amazing how it all fell into place. We were walking along the beach at Coolangatta at sunset, on the way to our favourite Japanese restaurant, and it all just came together perfectly. It couldn’t have been better if either of us had planned it. And now I have my beautiful labradorite stone ring which has so much more sentiment than any diamond could ever have. Profile: Why did you want to get married in Fiji/overseas? Chelsea: We were driving all over the Coast looking for somewhere beautiful to get married but nothing felt right. Then Sam joked about eloping, and it kind of went from there. All we wanted was a big relaxed party on the beach with our closest family and friends.

Sam: We thought it was a good way to keep it small. It truly showed the friends who mean the most and care the most which was a very lovely feeling.

“It was CRAZY how we’d known each other for so long and then it all just CHANGED, it was like flicking a switch and then I saw him in a totally DIFFERENT light.” Profile: What goes into planning an overseas wedding? Chelsea: Lot’s of research! You have to start by researching all of the different areas you are interested in, taking your guests into consideration – who can travel where, are kids allowed, will people want to stay in that area, is it affordable, etc. We decided to go to the Mamanuca Islands because we wanted an authentic tropical feel. Once we picked the place, we had to do a lot of liaising with each shortlisted resort (that was our first experience with Fiji time!) That process took about three months before we had all of the answers to be able to make a decision. We knew we wanted a beach ceremony and reception, and we wanted to make sure our guests had cheaper alternative accommodation close by. So we chose Mana Island Resort, which had a beautiful little backpacker resort next door. We didn’t have to do a lot more until about a month before the wedding, and we didn’t even lock in our ceremony and reception locations until the day before the wedding. profilemag.com.au

In the lead up to the wedding, we spent a lot of time watching for flight and accommodation specials so we could pass it onto friends and family. If you decide on a destination wedding you have to be prepared to help your guests as much as you can. Profile: Tell us about your wedding day? Chelsea: The afternoon before our wedding day we checked into our amazing honeymoon suite. It had the most incredible view and we’d already spent two perfect sunny days on the island. We unpacked all of our bags and had a drink to celebrate. Then the rain came out of nowhere! The next morning we woke up to more wet weather. I had a nice breakfast with the girls, Sam was with the boys and we started getting ready. There were no nerves, just excitement. The weather lightened up just enough for us to still have our beach ceremony and we were so glad we did. The morning went so fast, all of a sudden I was pulling up in a BT50 ute and about to walk down the aisle! Fijian serenaders played guitar while I walked down the aisle with Dad, but I barely remember hearing them once I saw Sam. It’s all such a blur,

even if something wasn’t right, I never would have noticed. None of it really matters once you’re there. We said ‘I do’, had our photos and danced on the sand under the palm trees with our family and friends. Profile: If you had your time again, what would you change? Chelsea: Nothing – not even the weather, and now we have a lifetime of good luck stowed away! Profile: What is your advice to other couples planning an overseas wedding? Sam: Go for it! It’s so memorable regardless of the little imperfections. Be relaxed with the concept and expect small things to go wrong, but like I said, it doesn’t matter when you’re looking down the aisle. Just try not to cry. Chelsea: Relax and let go of the small stuff. It’s supposed to be a big adventure spent with the people you love the most. It’s a slow build up and a slow build down, it’s not just one day that’s over before you know it. You get to spend more time with your loved ones on the days leading up and after, and everyone is just completely relaxed and in celebration mode before they even arrive. If you want an intimate and laid back wedding day, definitely do it!

“It would be harder for me to list the things I don’t love about her.”

“Everything, even the stuff that drives me crazy sometimes! But he’s a big softy on the inside, he would do absolutely anything for the people he loves and he’s the most loyal person I’ve ever met.” profilemagazine

A genius concept tapping into a more niche market has seen Craig Young and his business Taps ‘R’ Us revolutionise the plumbing industry.

hat started out as curiosity has flourished into a thriving business for local businessman Craig Young, with the man behind niche plumbing company Taps ‘R’ Us recently extending his reach to Brisbane. Twenty years ago a beautiful friendship blossomed between Roberto Luca and Renate Bowden. Both key members of the gay community in Brisbane, they broke new ground when they conceived a child together – a unique bond that changed their lives forever.

“I

kept swallowing my tears and saying, ‘really?’ and in that moment, all of a sudden our whole journey was acknowledged,” Renate says, looking across at Roberto. “Love is incredibly powerful and full of integrity, therefore marriage should not be entered into lightly or frivolously. In this day and age the act of marriage has become loose, where challenges are more about how to get out of it, give up and walk out on someone. This has a massive effect on how we love and our understanding of what an authentic commitment to loving one another is. “One of the main reasons I wanted us to be married was to not only give hope to our

profilemagazine

children, but we’re saying something about what true love is – love is gracious, gentle and transforming, it’s very beautiful and very true, especially when you acknowledge it to the wider community.” Roberto and Renate Luca have an epic love story to tell, at times it’s almost hard to even comprehend, but spending time with them in their tranquil Noosa home, sharing laughter and tears, it’s impossible to envisage their lives without each other. Roberto grew up in New Zealand, before spending 10 years as a primary school teacher in London. But his partner wanted to return to Australia, where the Luca brothers opened the Moray Cafe in New Farm, Brisbane. Through his partner, Roberto and Renate were introduced in 1996. They had an immediate connection and became the best of friends – supporting and nurturing each other through life’s ups and downs, and working on high profile LGBT (lesbian, gay, bisexual and transgender) events. “Then Renate decided to take me out on a dinner date, she said, ‘I’ve got two things on my mind, one is I’m applying for NIDA (National Institute of Dramatic Arts), if I don’t get in, then I’d like to have a baby’.” A 30-year-old Renate just missed out on a place, but as fate would have it she was destined to be a mum and asked Roberto to father a child with her. “We both wanted children, but didn’t necessarily want to be in a relationship with each other,” Roberto says. “Rob was gay and I was gay and we’d both had long term same-sex relationships and we both separated at a similar time,” Renate adds.

“This was 17 years ago and it was very new to be doing same-sex parenting, so we kind of lead the way in Brisbane in terms of home insemination.” Nine months later, their miracle son was born and Renate would bring him to the cafe every day, where he’d sleep under the table as they drank coffee and talked into the night. But when their son was about five, Renate delved into personal development work, searching for lifelong answers stemming back to her own childhood. Having been adopted when she was a baby, Renate grew up in New Guinea before entering the Queensland boarding school system – she’d virtually left home before becoming a teenager. But despite a disconnected childhood, Renate always had a strong inner knowing about her purpose to love. It’s a sentiment she carries with her to this day. In the midst of her journey of self discovery, Renate had a “major awakening” that she wasn’t gay and was destined to be with Roberto. “I had complete certainty that I was meant to be with Rob, spiritually on a soul level, it was very emotional and I know we didn’t just make a baby, we’re meant to be together. We then had to confront everything we’d built up in our lives around being gay,” Renate says seriously. profilemag.com.au

“We had high profile lives in the LGBT scene in Brisbane, the Moray was a big gay cafe, all of our community was gay. It was very confronting, a lot of people didn’t like it. But I knew I loved him to bits.” Resolute in his feelings he was gay, Roberto denied the possibility of them being together, but agreed to attend one of the courses. “I was very caught in some areas of life and I went to the first course and it blew my mind, it opened up understanding around things and when I did the second course it hit me like a tonne of bricks,” he says. “Growing up in a rugby-heavy nation I didn’t fit in. I was very soft and sensitive and I liked gardening and cooking, so a lot of people called me poofter and a girl. It’s traumatic when society automatically labels a soft sensitive male as gay. I knew I was different, so I thought maybe that’s what I am, maybe I am gay. “I became aware that it was a decision I made very early on, based around a lot of upsets in my relationships and it stemmed from a desperate need to be loved. I then realised I am supposed to be with her. It was a massive awakening for me.” While the shift from homosexuality to heterosexuality was like a bomb being dropped on their community, Renate says the bigger issue was the change of belief that being gay had been a decision they consciously made, rather than the way they were born. “When I was gay I thought there’s no way

I would never be straight – this is how I was born. So we made a lot of noise forcing that viewpoint on a lot of people.” Turning their back on a life they fought hard to live, Roberto and Renate entered into a teenage-like whimsical romance. “It was really beautiful, no one really wanted to quite believe it – his mother thought it was a miracle from the angels!” While in New Zealand for work, Renate became pregnant with their now sevenyear-old daughter, prompting them to move back to Australia and settle into life on the Sunshine Coast. Then in 2013, while looking to buy a business in Thailand, they stumbled upon a B&B in Noosa for sale. “When we walked through the front door we had a great vision about everything that was going to happen here – so we deliberately created all of this so that people feel loved, inspired, cared for and special,” Renate says. With the perfect haven to house their new lives as a family of four, two years ago Renate floated the idea of marriage, but given Roberto grew up in the Roman Catholic Church and witnessed many separations, he’d lost hope around the integrity of marriage and thought, ‘What’s the point?’ But in March last year, Roberto had a change of heart and nervously proposed with a magnificent jewelled ring designed and inspired by an antique Nepalese wedding ring. “She’s bold, beautiful and bohemian – I didn’t want to buy a regular diamond ring!”

Roberto and Renate married at their Noosa Valley Manor property in October last year in a celebration described as Dolce and Gabbana meets Frida Kahlo. Candelabras lined the long tables decorated with golden cutlery, lace napkins, vintage crockery and gold-rimmed crystal glasses. Vietnamese silk lanterns lit the romantic garden setting, and 350m of satin fabric was used to create the wedding canopy complete with a floral wreath. After an emotionally charged ceremony, they celebrated in abundance with drinking and dancing, and a feast complete with an Argentinian barbecue of organic spring lamb and a mezze board, laden with cheeses, exotic tapas and Italian delicacies, five-spice pork belly, muscatels and fresh figs. “Because what we do is quite special we couldn’t keep our hands off it, even though it was our wedding day, we couldn’t hand the reins over completely. We wanted our love to be in every bit of it.” A fitting way to end another chapter in this modern-day fairytale, I can’t imagine what the next will bring.

Mieke and Charlie De Deyne have made a name for themselves creating exquisite pieces through their business Mas & Miek Ceramics, but their latest venture is all about helping other local artisans get their hands dirty.

M

other and daughter duo Mieke and Charlie De Deyne possess a talent for capturing beauty through art, but when it comes to their mutual passion for ceramics, the pair shares a gift – both in the figurative and the literal sense. While the creative minds behind Mas & Miek Ceramics have only been in business since 2012, the pair has been working together with clay for 15 years since Mieke’s husband and Charlie’s father Ferre, gave Mieke her first pottery wheel for her 40th birthday. Previously a painter, the gift inspired a shift in Mieke’s artistic endeavours and influenced a 10-year-old Charlie, who spent much of her time toying around in her mother’s studio, to follow suit.

Everything works within that fine border of chance, and when it turns out well, it’s so satisfying.

“He always jokes that he’s created a monster,” laughs Mieke, gesturing around her breezy Woombye studio. “Now I’ve got three wheels and four kilns, and we’re creating professionally on a small scale.” Wanting to master the art of ceramics, Mieke took workshops with Eudlo-

based ceramicist Jackie Gasson in an effort to learn the correct techniques and undertook a Masters in Fine Art specialising in Ceramics at the Australian National University, which she graduated from in 2012. Charlie graduated from the Queensland College of Art one year later with a Bachelor of Fine Art specialising in jewellery and small objects. Since then, Mas & Miek Ceramics has built a reputation for their incredibly beautiful range of tableware, vases and carved light holders, which they sell at the Gallery of Modern Art Markets and in person at their studio. “We like the modesty and the idea and concept behind utilitarian items – the idea that people are actually using them and they’re not purely for decoration, but on the other hand are exceptionally beautiful,” says Mieke. “We’re inspired by a certain outcome and we work with it,” adds Charlie, explaining that they love the unpredictable nature of their art. “Everything works within that fine border of chance, and when it turns out well, it’s so satisfying.” Their combined passion for what they do translates into their stunning pieces, and it is something they intend to share with others; having recently been approved to take over a warehouse in Albion, Mieke and Charlie will be opening a ceramic studio and workspace, running classes

and workshops, and selling their own products. The plan also includes a cafe and interactive space where members of the community can relax and observe others at work. “We’ve been asked so many times, ‘Do you hold classes?’ and, ‘Can I come to your studio and have a look around?’ so I think there are a lot of people who are interested in getting their hands into clay, they just need it to be available to them,” says Charlie. “I think there is a backlash to the concept of mass produced consumerism. People want to make a set of bowls to have on their table to show their friends and to entertain with. There’s something really personal about it.” Planned to be a casual environment that’s open five days a week, the studio will run set sessions as well as guided studio time in both handbuilding and wheel work for people of all skill levels.

Every woman wants to feel like a princess on their wedding day. Helping brides turn their dream dress into reality, local designer Erin Clare says the look on her bride’s faces when they find “the one” is what motivates her the most. She shares the inspiration behind her creations with Profile.

R

unning her hand along the intricate white lace of one of her stunning gowns at her Noosa studio, local designer Erin Clare proudly introduces me to her “girls”. “This is Willow,” she says, “and this one over here is Annabelle, oh and this is one of my favourites, Audrey.” It’s not her daughters I’m becoming acquainted with but rather her stunning collection of wedding gowns, each of which has a special place in her heart. “I don’t have daughters, so these are my girls,” she laughs. Erin’s love of design and dressmaking stems back to her childhood. Born in Australia to an English mother and Zimbabwean father, the mother of two boys spent her formative years in Zimbabwe and South Africa and fondly recalls watching her grandmother, also a dressmaker, as she made garments for her five daughters and two sons.

“I ABSOLUTELY LOVE working in the wedding industry, it’s so much FUN to be part of it all.” “I have always played with fabrics and laces. My grandmother used to work her day job and then come home and sew. I would play with all of her offcuts. Before I could sew I would sticky tape the material together. “I never actually played with Barbies but I had the best dressed Barbie,” says Erin. Completing her formal training in fashion design and manufacture in Port Elizabeth, Erin and her husband Patrick moved their young family to Noosa, where Erin set up her home-based business Erin Clare in 2002. The business has since gone from strength to strength, with the rapidly growing label now supplied to boutiques in Sydney, Melbourne and Los Angeles, with plans to

continue expanding both nationally and internationally. “We moved to the Sunshine Coast because it’s a beautiful place to raise children. At that stage my now 21-year-old son was only seven so my husband and I wanted him to grow up in Australia, and Noosa is just such a beautiful community.” Describing her gowns as “relaxed and little bit boho”, the inspiration behind Erin’s feminine designs stems from her own experience as a bride. “When I got married I looked around and there was nothing I liked. I was embarrassed to try on some of the dresses that were offered as wedding gowns,” she says. “I was working as an assistant designer at the time so I designed my own gown and the company I worked for made it. It was my dream dress – my gowns are not dissimilar to what I designed back then – very organic, profilemag.com.au

How did you meet your husband? We were introduced when I was at work by a mutual friend. As the assistant designer I was under a lot of pressure at

work so we didn’t really have time to chat but the brief introduction was enough and Patrick called me later that day to ask me out on our first date.

How did he propose?

We had been out to dinner at a beautiful French restaurant and had an amazing evening, we were walking through their gardens under the most incredible sky when he suddenly sounded very nervous…

When did you get married?

The spring of 1999 in a quaint church near Cape Town. We held our reception at a heritage listed wine estate.

What does love mean to you?

Where you can grow together into better versions of yourself with a deep sense of peace and trust. This is shown in kindness, compassion and consistent consideration for your loved ones.

“When I got MARRIED I looked around and there was nothing I LIKED. I was embarrassed to try on some of the dresses that were offered as wedding gowns.” very relaxed, they are definitely not your cookie-cutter wedding gowns.” Designed and custom-made by a team of highly skilled hand-picked seamstresses on the Sunshine Coast, Erin says she loves nothing more than seeing the look on her brides’ faces when they find their perfect gown. “I love them to have a play and try on things they might not usually wear. A lot of brides are surprised at how stunning they look in dresses they wouldn’t have considered,” says Erin. And when it comes to the perfect gown, Erin says less is always more. “I prefer more modest designs, but with an element of sexiness. Balance is the key, rather than having everything on show, I like to play with the designs to allow the bride to feel sexy but not too revealing. “It could be a sheer back or a fitted underlay so as you move you see your shape with a gathered lace overlay.” A typical day for Erin starts at 5am and can see her sketching new designs, creating new patterns, meeting with her brides or out on a styled wedding shoot, and she loves every minute of it. february 2017

“I absolutely love working in the wedding industry, it’s so much fun to be part of it all,” says Erin. “I have huge days but it doesn’t feel like work. It’s so varied. Yesterday I was on a photo shoot in Maleny working with photographers, videographers, hair and make-up artists, models – so much fun.” Erin talks of her brides like family and says the reward she gets from seeing them open their dress for the first time is always emotional. “One of my brides ordered our Willow gown but she wanted to change the neckline quite dramatically, so we did it slowly and had a number of fittings so it was just right. When she came in recently and I unzipped the bag, she was in tears and she hadn’t even tried it! Seeing it exactly as she had envisioned it was just wonderful.” When it comes to wedding gown advice for brides to be, Erin says being organised is the key. “When planning your wedding, consider ordering your gown six to eight months in advance. “A lot of brides worry about dropping weight before the big day but we can always take the gown in and I always encourage my brides to stay true to themselves. They are proposed to the way they are and loved the way they are so be who you are and don’t put too much pressure on yourself.” Wise words indeed Erin and if you are donning an Erin Clare gown, you’re certain to turn heads on your big day for all the right reasons!

Flaxton Gardens hosts an abundance of weddings each year, but none quite compare to the union of Alan and Mariana Thompson. Having been blessed with a second chance at love, this husband and wife are breathing new life into the historic and iconic Hinterland destination.

T

he red clay ground softens under Mariana Thompson’s feet as the blushing bride shares a tender moment with her husband Alan. The deciduous vineyard, baring not a single leaf or piece of fruit, fails to hide their affection from view, a reflection of their blossoming romance which has only the best to come. “I was not looking for anyone, I was done with men in my life, I was going to become a nun and do missionary work. And then I bumped into Alan,” Mariana says, smiling. Although they hailed from similar circles – their children went to the same school and families attended the same church, Alan and Mariana knew each others families, but had never met. But each in the throes of divorces, they formed a friendship built on common ground and confided in one another, provided a reciprocal shoulder to cry on and saw each other through the hurt of failed marriages they fought hard to save. “A few weeks later we met up, and just sitting down for coffee and having him interested in what I do, I felt like he was treating me like a princess,” Mariana shares.

“The second time we went for coffee I was late and the coffee was already ordered exactly how I like it and I thought, ‘Wow he really cares and he notices what I like’, and that really caught me. He wants to satisfy someone else’s needs first and make them feel valuable, I saw that in his heart, and for me that’s most important.” South African-born Mariana moved to Australia 10 years ago, and has introduced Alan to her culture – which he proudly reveals has lead to him now making his own biltong (a form of dried, cured meat that originated in South Africa) and by all accounts is pretty good! “I feel very strongly about the South African culture and Alan is slowly starting to learn some of the language and we do a lot of networking in the community, where Alan has found his place and embraced the culture. “When I get very comfortable and sometimes when I’m very tired, my brain switches to my mother tongue and I’ll be sitting with Alan and start talking in Afrikaans!” So it was fitting that on a trip to Africa for Mariana’s birthday last year, they solidified their commitment to one another. “There was a time on the farm where my parents lived, at a remote waterfall, where I thought, ‘This would be perfect if

he proposed here’, and he felt the same and asked God if this was the right moment. Then he looked down and found an old African tribal bracelet stuck in between the rocks, covered in moss. “He cleaned it and gave it to me – but that was not the proposal because we said we weren’t going to propose in South Africa because we had not yet discussed marriage with the children, instead he said, ‘This is a token of my devotion’. But we both knew that was the moment.”

It wasn’t until they were back in Queensland and enjoying a beachside holiday, that Alan popped the question with a magnificent opal, paying homage to the Australian way of life. “When we got married, the kids wanted to be part of it, they wanted to be the bridal party,” Mariana says. On 10 September, 2016, on an overcast and rainy day, Alan and Mariana wed in the big hall at Flaxton Gardens, surrounded and supported by 160 of their closest family and friends. “It’s a very big thing, I don’t take it very lightly, yes it was extremely quick in reality to go from almost 25 years of marriage in Mariana’s case, and I had been married for 20 years, to then be remarried 18 months later, but we’re both people who don’t do life alone very well, you need a partner, you need a companion, somebody who is your equal, who you respect and love and honour.” says Alan. “For me it’s to know there’s someone who needs me, that makes me complete, I’m a giver and I love to give and I need him, I need a solid man in my life, I need someone I can love and be allowed to love,” says Mariana. “That’s a big thing,” adds Alan, “not everyone allows themselves to be loved, I analyse life a lot these days and I’ve learnt a lot along the way. We hold a lot of weddings here at Flaxton and it’s a sad statistic that some of them won’t last. “Society today is a throwaway society, and people don’t fight for a cause, they don’t have a joint purpose, in life and in marriage it’s not all going to be roses, for me a true marriage and relationship is built through the tough times, it’s how you come out the other side that gives you strength as a couple.” With Alan and Mariana’s private lives pieced together, they are forging a new path for Flaxton Gardens. “Flaxton is an iconic Sunshine Coast property, it’s 15 acres, and it took seven years

to be able to buy it. It was a dream of mine when we moved out from the UK,” Alan says. “It’s an amazing venue and I love the reaction when people walk onto the property, whether they’re coming in for morning tea, scones, or lunch in the restaurant or whether it’s the bridal party.” When Alan acquired the property, he says it was a shell – the main structures were there, and a tin shed had been built with the intention of operating as a winery. It is now the function hall where large-scale events and wedding receptions are held. “Part of the original buildings are approximately 100 years old, it used to be a dairy,” he says. “The previous owner, Ross Anketell and his sister Sonja, had it for about 45 years and they built it with their hands – everyone knows them. Sonja was the original potter, she did all of the potting classes in Montville and moved it onto Flaxton and people still come in, 15 years after, looking for her pottery. “I’m very passionate about leaving a legacy instead of being a trend, you need to be in fashion but you also need to be a classic and

this is a classic place, it will always be here whether it’s ourselves as owners or someone else. My favourite saying for staff is, ‘Leave foundations for someone else to build upon’.” And Alan is certainly doing that, particularly in the kitchen, training and nurturing budding chefs. “Hospitality is at my core, but my true passion behind that is the dream or the creation of the venue, it’s the third time I’ve created a venue, the other two were in the UK. The first one was a restaurant in Fulham, in the first year it went up to a three rosette restaurant (a highly coveted accolade in the UK) and placed in the top 10 per cent in Europe,” he says. “Then I sold that and we bought a country house hotel which is in the Guinness Book of Records being England’s oldest hotel, carbon dated back to 947, so we renovated it and took that to the top 10 per cent in Europe as well.” In 2004, Alan and his growing family moved to the Sunshine Coast, an area he identified as having great potential and future growth, a sentiment he still believes in and carries over to his vision for Flaxton.

Along with the ever-popular and extravagant weekend weddings, they also cater to elopements and weekday celebrations, and given the Sunshine Coast is one of the most popular wedding destinations in Australia, bookings are coming in thick and fast, “spring 2018 is filling up!” “Flaxton is here to do life with people, from baby showers, to engagements and weddings, and recently we’ve started holding celebrations of life, which is beautiful because we have an amazing property where you can say goodbye to the person you love in the best way possible,” Mariana says. Flaxton is also renowned for their delectable high teas and devonshire teas and has now introduced daily lunch options. The new dinner menu and happy hour menu is available five nights a week. They also have accommodation options within their neighbouring stable of properties, catering from two to 40 people. “There’s nothing that gives me greater pleasure than when the venue is full and I just stand back and listen to the hum,” Alan says fondly. “A venue has a soul, it has a hum when people are there chit chatting, having a great time – that is hospitality and as an owner, it’s my job to have people walk in and say, ‘This is it’. “The previous owner’s catch phrase was ‘Tranquil elegance’ and that’s still what this place feels like, it’s relaxed quality.” Even on the Monday morning of our interview, family members are gathering and preparing for the 11am ceremony, musicians are sound-checking the procession and chefs are fiercely prepping for the reception. Even after all these years, Flaxton Gardens’ heart is still pumping, skipping a beat at the first sight of love. 26

AFTER NEARLY 17 YEARS AT THE HELM OF MALENY JEWELLERS, HUSBAND AND WIFE TEAM SANDRA AND JIM GOULTON ARE TURNING THEIR FOCUS TO CREATING THEIR OWN SHOWSTOPPING DESIGNS, OFFERING SPECIAL PIECES THAT ARE AS UNIQUE AS THE PEOPLE WEARING THEM. There are some decisions so perfect they appear to be fated, and for Sandra and Jim Goulton, that moment found them in 2000 when they were given the opportunity to buy Maleny Jewellers. Jim was an apprentice jeweller who had fallen in love with the trade and the creative expression behind it, and Sandra had been working at the store for three years, becoming attached to it and its customers, when the husband and wife duo was approached by the previous owner as his first choice to take over his beloved business. It was a no brainer for the pair and over the following 17 years they set out to turn the small Hinterland business into a destination for customers not only searching for the best quality brands and old fashioned service, but one that is synonymous with beautiful designer jewellery that truly reflects the wearer. work on the actual piece – and in being so open to experimenting with unique designs, Jim has even received referrals from other jewellers for customers seeking something more elaborate. “I’ve designed men’s wedding bands that have incorporated anything from their family coat of arms to their wife’s fingerprint, and even the music notes for their wedding song,” says Jim. Having expanded with a second store in Beerwah and with many great plans on the horizon, Sandra and Jim say there is plenty of excitement set to come in 2017 for Maleny Jewellers, but they will continue to provide the same excellent service and stunning jewellery they have become known for well into the future.

When you think of the Wedding Singer, it’s hard not to conjure up images of a goofy Adam Sandler in the 1998 hit romantic comedy. Profile chats with real life wedding singer Nathan Merriweather, who is breaking the mould on the cheesy stereotype, with his soulful, acoustic repertoire.

hen it comes to making beautiful wedding memories, the song you choose to walk down the aisle to or for your first dance together as husband and wife is one that tells a unique story about you as a couple and will be etched into your hearts and minds forever. In fact, the music plays a huge role in setting the tone for your special day … just ask Nathan Merriweather, a classically-trained musician who is passionate about helping couples capture their own unique love story through his music. “I started playing classical music when I was a child and singing with the family,” says Nathan. “I come from a musical family, my mother is a trained pianist and singer, so when I was nine or 10 she started training me to learn harmonies and it went from there. “As I got older my friends started asking me to perform at their 28

weddings but I never thought of making a career out of it because I didn’t want to be seen as ‘The Wedding Singer’, I was a bit embarrassed to be honest, but once I got over myself and realised how much I actually enjoyed it and that I could bring something special to a couple’s wedding, I started doing it professionally.” Bringing his cruisy vocals and soft acoustic guitar tones to loved-up couples for the past 10 years, Nathan says there is something special about performing at a wedding, each one providing an opportunity for him to deliver something personal and intimate that the couple will remember forever. “I love performing at weddings because everyone is always happy. It’s about creating atmosphere and adding something special for those who appreciate live music. When a couple has a favourite song, they don’t want to play it on an iPad, they want something real, something tangible.” When it comes to song choices, Nathan says the last 12 months have been heavily influenced by artists such as Ed Sheeran, Angus and Julia Stone, Vance Joy and Jack Johnson. profilemag.com.au


What is your love story?

Amy and I met seven years ago through mutual friends. We were great friends for a few years and then I began to think that we had something more. As it turned out Amy didn’t agree with me, but a month or so later she came around – it’s something we joke about. Amy is an incredible kind and soft hearted person, intelligent and thoughtful. We dated for a few years and then I asked her to marry me in 2014 in Byron Bay, as we had spent many great times together in the area. We ended up getting married in Byron also.

What does love mean to you?

Love is so many things. A deep connection with another person. Being selfless, making sacrifices for another. Understanding, kindness and forgiveness.

“Once I got over myself and realised how much I actually ENJOYED it and that I could bring something special to a couple’s wedding, I started doing it professionally.” “That laid back, acoustic vibe has become very popular,” says Nathan. “It’s those intimate songs couples are choosing over the old fashioned ballads. “One of the most popular songs is A Thousand Years by Christina Perri, Love on Top by Beyonce and All of Me by John Legend are also up there.” And when it comes to choosing the perfect song for your big day, Nathan has some great advice. “Choose a song that’s important to you, perhaps something that is classic and timeless, it doesn’t have to be the most popular song at the time. There are no longer any rules.” says Nathan. “It used to be a slow song to walk down the aisle, a medium or ‘cruisy’ song for the signing of the register and an upbeat song for the walk back up the aisle. This is still how many couples like to arrange their music but I have had lots of exceptions, with some rather upbeat and happy-go-lucky choices for the aisle song. “Remember songs don’t have to be current, old songs can be easily modernised or re-worked with care and as long as it means something to the happy couple it will add something special to the occasion.” Adam Sandler eat your heart out! february 2017

Returning to the Ramsay Health Care-run Noosa Hospital last February, nearly six years after she first walked its halls as a young registrar, Doctor Felicity Adams shares how a small private hospital captured the attention of a big city surgeon.

S

itting in the bustling coffee shop at Noosa Hospital, Doctor Felicity Adams waves and exchanges smiles with various scrub-clad passers-by as they make their way to their next job. “I like working somewhere where I can walk down the corridor and I know most of the people,” she says with a smile. It may seem like a small gesture, but it is a demonstration of the friendly atmosphere that sets this modest private hospital apart from its city counterparts – one of the reasons behind surgeon Dr Adams’ decision to choose Noosa Hospital as the location for her private practice, Suncoast Surgical. Brisbane born and raised, Dr Adams knew from a young age that she wanted to practice medicine and completed an undergraduate degree in a Bachelor of Biomedical Science at Griffith University. But it wasn’t until she attended the University of Queensland for her postgraduate degree that she discovered a passion for the precision of surgery, graduating in 2005 with a Bachelor of Medicine and Bachelor of Surgery. From there, Dr Adams built up experience at various hospitals in Brisbane before undertaking her first year of surgical training as a registrar at Noosa Hospital in 2009. It turned out to be the beginning of a beautiful partnership, with her

time there influencing the type of surgeon she wanted to become and where she eventually wanted to be stationed. “Prior to doing my placement here, I was interested in ear, nose and throat surgery – but I decided to stick with general surgery and part of the reason was that while I was working here I realised it was a pretty good gig,” she laughs. “They were busy and they worked hard, but they also managed to have a pretty great life. I also liked the feel of the hospital – it’s quite small but it has all of the major services that you need, while having that small hospital feel where you can get to know all of the other staff member’s names and the people are friendly,” she smiles. After obtaining a fellowship in general surgery from the Royal Australasian College of Surgeons in 2014, Dr Adams then went on to complete a further year of subspecialty training in breast and endocrine surgery at the Princess Alexandra Hospital, and in January 2016, her hard work paid off when she returned to Noosa Hospital to open her private practice. “It’s been a long time coming getting to this point and it’s good to finally be finished and not having to move around all the time,” says Dr Adams. “It’s good to finally settle down and start planning mine and my family’s future by setting up my practice. “Because I was a registrar at Noosa Hospital I have relationships with some of the more senior surgeons here, and that was a big positive in coming back – because I knew I’d be coming to a place where I felt supported by people who have been in practice for decades and who are happy to help me out if I need their advice or assistance. Private practice can be a bit isolating at times so the idea of having that when I came back was important to me.” As a now fully qualified, practicing general surgeon trained in breast and endocrine surgery, no two days are the same for Dr Adams, with her expertise required for operations on anything from hernias, gallbladders, bowel resections, hemorrhoids, skin cancers, colonoscopies and gastroscopies, through to malignant breast cancer and benign breast conditions, and issues involving the thyroid, parathyroid and adrenal glands. And while the idea of operating is enough to make anyone nervous, Dr Adams says she welcomes the challenge. “I think nervousness is helpful, because the moment you stop caring about those things, you’ve lost a bit of your perspective and you’re probably not going to be as good a surgeon. You don’t

want it to be so much that it overtakes you and stops your clarity of thought, but to have some is healthy and it shows you care,” she says. Now one year on from her return to Noosa Hospital, Dr Felicity Adams has officially come full circle, and she looks forward to a positive future helping the public in an environment she loves.

GET CHECKED Being a general surgeon, Dr Adams deals with medical issues that have varied symptoms, but one thing she is adamant about is the importance of women being vigilant of any changes in their breasts. “Don’t assume that because it’s not changing any further, that it has been there for a while, or that because you’re up-to-date with your breast screens that it’s fine. It doesn’t hurt to get it checked out by your GP to be sure,” she says.

Fairy castles sprinkled with sweets, pirate ships submerged in a sea of jelly, log cabins stacked with chocolate fingers and football pitches complete with plastic figurines and wafer goal posts – Zoe Clark had a pretty sweet introduction to cooking.

“M

y earliest memories are helping my mum with the annual birthday and Christmas cakes,” Zoe Clark says with fond recollection, “I remember reading through, and religiously following every step in those classic goodold Good Housekeeping cook books. I used to make sure my mum was making things properly and would stop her if I felt it wasn’t good enough! I was a perfectionist probably even at the age of five!” It’s hard to believe Zoe didn’t initially choose a career in this delicious industry, instead completing a languages degree at university. But a change of heart saw her pursue patisserie. In her mid-20s, Zoe moved from the United Kingdom to Australia, where she faced her first “cake experience”, something she hadn’t done since baking with her mum almost two decades earlier. But making her sister-in-law’s wedding cake decorated with chocolate shards and fresh flowers gave Zoe a taste for it and she decided to further her skills with a few evening classes in Brisbane to learn how to make sugar flowers, with the aim of putting them on her own wedding cake a year later, and she did. “It was an absolute shocker of a cake looking back on it now, but I was dead chuffed with myself at the time,” she says with a laugh. In 2006, Zoe moved back to the UK with

her husband and two young children, and was offered a full time job in a cake shop. “As I’d only had training in patisserie, desserts, breads, patisserie-type cakes etc., there was a whole other world out there to discover when it came to making wedding and celebration cakes using icing and sugarcraft techniques,” Zoe says. “Fortunately, my wonderful employer and her manager at the time taught me all the basics, and within a couple of weeks I was whipping up all kinds of creations from 3D Thomas the Tank Engine to five-tier floral masterpieces. I was in heaven!” Initially Zoe says she only intended to stay in London for a few years, while her kids were little and could spend time with her family and experience living in the great city, but wonderful opportunities continued to present themselves. Upon establishing her own cake business at home, Zoe was offered a book contract. She then decided to make a “real go of it” and opened The Cake Parlour in Wimbledon, where she attracted high profile clientele and supplied the world famous Fortnum & Mason store, in Piccadilly, with a bespoke wedding and celebration cake range along with seasonal

In 2012, Fortnum & Mason invited the Queen, together with Camilla and Kate, to the store to celebrate the Diamond Jubilee. “As their sole celebration cake supplier, they asked me to make the cake for the occasion – it was such an honour and a huge compliment,” she says. “I made the actual cake based on the Fortnum & Mason Jubilee logos and artwork, incorporating the Queen’s beasts and the Fortnum & Mason turquoise and gold colour scheme. The entire five-tier cake was made out of my favourite fruit cake recipe. “I was asked to speak to Camilla and tell her a bit about the cakes and biscuits they offer in the store. I was so nervous and was drilled on how to address her and nearly fell over when I had to curtsey – my legs were like jelly! “The Queen went and spoke to the staff in the tea department, while Kate visited the honey department, so I never got to meet her in person, but I hope she liked my cake!” From beautiful buttercream finishes to elaborate tiered floral masterpieces, whimsical children’s creations and intricate lace designs, Zoe’s repertoire is as wide as the mind can wander, and her skill level nothing short of sheer perfection. “Deep down, I’m a true romantic. I love how it makes me feel when creating something beautiful – it makes me smile and feel satisfied and happy with life,” she says. “It’s like living in fairyland surrounded by

prettiness where everything is all butterflies and roses (that’s what my husband says about me anyway). “For me it’s also really rewarding seeing my ideas come to life, especially when my creations are deeply appreciated by others.” Having spent 10 years in London, on the most magnificent ride, Zoe and her family are now slowing the pace and moving back to the Sunshine Coast, where she will continue making cakes, while teaching and producing online tutorials. Zoe is also starting to work on her next book, which will be released later this year. Should be a piece of cake!

What is your favourite flavour cake? I would say coffee and walnut; orange and marmalade; traditional fruit cake; and classic vanilla sponge and raspberry jam – very English I know!

What does love mean to you? Caring and commitment. Respect and romance.

What do you love about being involved in people’s weddings? I love making pretty things that taste delicious and hopefully playing a part in making the day extra special and something more to remember.

It’s the question on every business owner’s lips – how do I grow my business faster? The answer is simple. Learn from those who have already done it. At the end of each year I sit to write my goals for the next year. I don’t wait until January because I want to make sure I am ready to go on 1 January. My goals cover a number of different areas. My business (of course) but also health, wealth and personal goals. In 2017 (among other things) I have set some really BIG goals around learning. No matter what I already know, I realised long ago that when it comes to business AND life, you can never learn enough. And what’s more, there is absolutely, positively someone out there who will know more about a particular thing than I do. So I go in search of learning and knowledge. I’m always interested in getting a better result.

So whether I’m searching online, reading books, attending seminars or getting one-to-one coaching, I immerse myself in new knowledge. I know that I have to ‘think greater than my current environment’ or knowledge base (I learned this from Neuro-scientist Dr Joe Dispenza) if I expect to achieve more. Otherwise I will keep doing what I already know and keep getting the same results. In 2016 Jack and I began working with Siimon Reynolds from The Fortune Institute. It has made such a difference to our knowledge base, from both a strategic and tactical point of view. In November last year I brought his team from The Fortune Institute to present on the Sunshine Coast to an

Launching your own business is a bit like being thrown to the sharks. Just ask Maria Nicola, creator of the clever 10-Way Necklace and former contestant on the Channel Ten hit TV show Shark Tank. The plucky business woman chats to Profile about her remarkable journey since appearing on the show and shares her top tips on what it takes to stay ahead of the competition.

aria Nicola recalls that defining moment when, after months of preparation and a gruelling selection process, she was picked from thousands of applicants to appear on live television and given the opportunity to pitch her product to a panel of potential investors (sharks), hoping for a deal that would take her business to the next level. “It was amazing,” says Maria. “The arm of Channel Ten who look after the show are phenomenal. They give you all the help you could possibly need so you don’t look like a deer in the headlights; they make suggestions for your pitch and you even see a psychologist to prepare you for negative feedback, so you are able to handle it. “It’s also very authentic. When you go out there and pitch your product, you have never met them before – they don’t know what you are about to show them. There is no take two, it’s just go! “Leading up to that moment I was incredibly nervous but as soon as I walked down the corridor I felt like I was home. I had visualised it 1000 times and I was ready.” But like most great business ideas, success didn’t happen overnight for Maria. In fact, she has been designing and hand-making jewellery for more than 20 years. “It all started when I was a young bride of 22,” she says. “I was looking for jewellery for my bridal party but found everything so expensive, so I decided to make my own and discovered I thoroughly enjoyed it in the process. “From there I started making wedding tiaras and doing bridal shows and it became a seven-year-long business, which I really loved.” After taking time out of the industry to raise their two

young children, Maria and her then husband opened a giftware store in Manly, Sydney where they traded successfully for 14 years before their marriage ended. “It was a great business and we had wonderful customers and great memories, however unfortunately the marriage came to an end and I didn’t know what to do with all the jewellery we had in the store, so I started a jewellery party business called bubbles and bling. “My friends and family really helped me through the tough times by introducing me to their network of friends, who all supported me by having parties, and that business continued for four years before I came up with the idea for my 10-Way Necklace – it came to me in a dream actually!” Maria’s ingenious design includes different lengths of crystals that can be mixed and matched in more than 10 different ways by connecting magnets that appear to be part of the design. There are also stylish accessories available as add on’s such as tassels or Swarovski crystals, to add even more styling options. “The actual idea of the magnets being used as clasps wasn’t new but I knew if I just tweaked it, it would work,” says Maria. “All of a sudden that 20 years of jewellery experience came to fruition, every supplier and rep that I had worked with and the key people I knew all came into play and it was a natural progression from there.” When the opportunity to appear on Shark Tank presented itself last year, Maria jumped in boots and all, and like everything else she approaches, the determined businesswoman gave it 110 per cent, landing herself a deal of $75,000 for a 40 percent share in her business. Despite the fact the deal with investor february 2017

Naomi Simson didn’t eventuate, Maria says the exposure she gained from appearing on the show elevated her online business to a whole new level. “For many different reasons many of the deals don’t actually happen,” says Maria. “In the end, Naomi and I agreed it was too hefty an amount of my business to hand over to then be able to buy her out. At first I was disappointed because I thought I had finally

“You must have staying POWER and you must have a belief in YOURSELF.” found a partner in crime, which is what a lot of entrepreneurs wish for but unbeknown to me, if you make an online deal, you are guaranteed air time and that is priceless.” Not only that, but as Maria discovered afterwards, surviving the Shark Tank process alone was no mean feat. “The culling process is intense,” says Maria. “It starts with 2000 applicants Australia wide, but only a few hundred of those got to pitch their idea, then it came down to 60 who actually got to film and only 40 made it to television. “The show is viewed by 880,000 people

Australia wide and that, in my opinion, is the gold in all this, because whether you gain a partner or not, your business will never be the same again. So just go for it, don’t worry about the deal, forget the partner side of things; you can decide all that later. Just get on television.” Having been through the process herself, the self-made business woman has some great advice to offer up-and-coming entrepreneurs on what it takes to stay ahead of the game. “You must have staying power and you must have a belief in yourself,” she says. “You will have the odd moment where you might ask yourself, ‘Why am I doing this, when is this going to take off?’ and you are going to have some down days, but that’s ok. “You also have to be open to advice. I am a big believer in constructive criticism but only from people I respect. If they are willing to give you their time, openly ask for criticism, especially when you are learning the ropes.” With no sign of slowing down anytime soon, in true entrepreneurial style, Maria plans to take her product internationally and is constantly conjuring up new designs to add to her range. “At the moment it’s only being sold Australia wide. Once we perfect Australia and we have a great model that’s working well, we will move to other countries,” she says. “I would also love to add to the range and add more accessories.” For someone who has swam with the sharks and survived, the rest is sure to be a breeze! A

fter moving back to the Sunshine Coast in May 2016 following a 10-year stint working overseas in London, Dubai and Singapore as a CFO, Gavin Smith had an ambition to open a business of his own that would allow him to spend more time with his young family. When that business turned out to be a pilates studio in Maroochydore, he admits his friends were surprised, but for Gavin, pilates had become a passion over the last couple of years thanks to some strong encouragement from his wife. “She was into it and I was that person who was like, ‘Pilates isn’t that great, I’d rather go running or something like that,’ but in my previous job I was an accountant stuck at my desk, working long hours, putting on weight, and getting a sore back, and it turned out the answer for that was pilates,” says Gavin. “Once I started doing it and seeing the benefits, I realised there was actually something in this and started to get more and more interested in it, and I soon turned a hobby into a passion and then a profession.” Making the decision to become a pilates instructor in January, once he knew he was returning to the Coast, Gavin was completing his qualification hours at Oxygen Pilates in Nambour when he met owner Philippa Hayball, and after discussing his plans to open a studio on the Coast the pair decided to join forces, with Gavin opening Oxygen Pilates Maroochydore in September 2016. “There are so many amazing stories out there in the community of lives that Philippa’s turned around. It really is a great service she’s offered to the Nambour community and to be able to extend that down here is incredible,” says Gavin with pride.

etting up a designer clothing boutique and fine jewellery store on the Mooloolaba Esplanade in April 2015, Sue Gaylard’s mission was to give beachside holiday-goers and Sunshine Coast residents a high quality boutique option for their shopping, by stocking stunning antique jewellery, modern jewellery and pearls, mixed with stylish modern clothing. And it’s proven to be a recipe for success, with Avenue J recently expanding into the space where Sapien Arts was previously located. “When Avenue J first started, I thought I would just have a nice little cabinet of antique jewellery in the shop, but that cabinet grew and has continued growing, and now as a result we’re expanding to make the jewellery side of the business a standalone store,” says Sue with a proud smile. “We started with baby steps, as most businesses do, but it’s been so warmly welcomed. It’s just so rewarding to see that all of the hard work we’ve put into the business has paid off.” For Sue, the antique jewellery side of her business is a true labour of love – a passion that developed from a young age and has only grown stronger during her 20 years in the industry. But she takes most pride in sharing the beauty and history of her products with others. “I’m excited that this is attracting like-minded people, but it’s also giving us a chance to speak to younger people and teach them that each of these unique, quality pieces has a history and is worth showing off.” With Avenue J continuing to grow in popularity, size and services, having also hired a jeweller who can design or remodel special unique pieces for clients, Sue isn’t slowing down anytime soon. But it’s clear she wouldn’t have it any other way. “Watch this space!” she smiles.

he health and wellbeing sector is at the forefront of many people’s minds as we move into the final countdown to the opening of our new public hospital at Kawana. The health and wellbeing industry is already the largest employer on our Sunshine Coast, providing jobs for more than 21,000 locals. According to the AEC Group, the Coast has the highest concentration of health and allied services businesses in the state and is home to around 1700 such businesses servicing residential, commercial and business customers associated with the industry in regional, national and international markets. Now we also have the impressive Sunshine Coast Health Precinct, which is currently the largest health infrastructure project being developed in Australia. Our Sunshine Coast gross regional product stands at more than $13 billion; however with the new $1.8 billion Sunshine Coast University Hospital, the co-located $150 million Ramsay-owned university private hospital, and the development of the Sunshine Coast Health Precinct, we can add a further $680 million into the local economy year-on-year. Interest in our region is growing quickly from a health investment perspective, with more international delegations visiting the Sunshine Coast than ever before – and as far as a springboard to the Asia-Pacific Rim is concerned, strategically the Sunshine Coast is brilliantly placed. Council has underlined the economic significance of the health and wellbeing industry as an integral part of the region’s future and is committed to supporting its development. We will continue to work closely with local health businesses to help them develop and will continue to concentrate on strategic investment retention and attraction for identified pathways to increase economic viability of the region.

The Sunshine Coast is one of the strongest up-and-coming regional markets in Australia - and the inland town of Nambour is one of the strongest parts of it. Median prices have risen 9% for units and 7% for houses in the past 12 months, but the market remains one of the most affordable in the Sunshine Coast region. Rental yields are also strong, with a 6.8% median yield for units. With a population around 10,000, Nambour is a comfortable drive to coastal shops, restaurants and nightlife – but it doesn’t really need to be, because Nambour is a selfcontained regional centre, with an array of shopping, business, government and other services. It’s the administrative centre for the Sunshine Coast region. The Sunshine Coast Council has its HQ in Nambour. State Government agencies in Nambour include primary industries, natural resources and transport. The Nambour Civic Centre offers a 900-seat concert hall and a 200-seat theatre. Nambour General Hospital, a major regional hospital, recently had a $24 million expansion and employs around 2,500 people. It is currently the major hospital for the Sunshine Coast region (until the $2 billion Sunshine Coast University Hospital at Kawana is completed). Selangor Private Hospital is also located in Nambour. Parmalat, a subsidiary of dairy giant Pauls, has a milk processing plant in Nambour, while the Department of Primary Industries Maroochy Research Station is nearby. Nambour has numerous primary and secondary schools, including Nambour Christian College, St John's Catholic College, Nambour State High School and Burnside State School - plus the Sunshine Coast TAFE Nambour Centre.

On a stormy day in the Sunshine Coast Hinterland, Ian and Cheryl Beaty became man and wife in an intimate ceremony at Secrets on the Lake. Guest spent the weekend in gorgeous cabins as they celebrated their 15-year relationship with their family and closest friends. HOW WE MET... Cheryl: We have been friends since we met in high school. My brother and his brother were best friends. We parted ways for many years, but later reconnected when Ian moved back to Brisbane with the Air Force. WHEN HE PROPOSED… Cheryl: Ian proposed to me in the fields of lavender at Bridestowe in Tasmania. He got down on bended knee among the lavender and the bees and asked me to marry him, he put a sprig of lavender on my finger. It took my breath away, he was so romantic. That was 10 years ago. Ian: I was up a ladder painting my son’s house in Newcastle in January this year when Cheryl was rushed off to hospital. She had me extremely worried and it dawned on me that she had stopped asking me when were we going to get married. It was at that moment that I felt I had let her down and it was time to show her just how much I truly love her.

WE CHOSE SECRETS ON THE LAKE BECAUSE... Cheryl: We have often stayed at Secrets on the Lake as our romantic getaway destination. We’d take a night or two away every now and then and of all the places we stayed Secrets on the Lake was always our favourite. It is so beautiful, very romantic with lovely private cabins and grounds, and we love the personal touch that George and Aldy and the team add to the experience. It was actually Ian who suggested Secrets as a venue for our wedding so that we could have a small, intimate gathering with just our immediate family and close friends. We were able to book out every cabin in the place which made it so special and intimate for everyone. We asked the team at Secrets to include an arrival function on the Friday night, the Saturday afternoon garden ceremony and the Saturday night reception. All of these were catered for beautifully and everyone had a great time and plenty of yummy food. Cheryl: The venue for the wedding was gorgeous, we had our ceremony in the garden and the whole team at Secrets on the Lake worked like a well-oiled machine to make it lovely and smooth. I was blown away when I saw our cabin and all of the lovely rose petals and little extras, and then on the day the rose petals spread out for the aisle and the lovely bows and flowers as I came down to the garden, it looked magical. The team at Secrets on the Lake is friendly and efficient and a big part of the magic of this beautiful place. George is passionate about what he has created and it comes through in everything he and the team do. Nothing is too much, they are caring and lovely. MY MOST SPECIAL MEMORY... Cheryl: My most special memory of the day was when the rain stopped just in time for me to get out of the car and the sun shone through as I walked down the garden to Ian. Seeing his face, he was so emotional, that will stay with me forever. Ian: I caught a glimpse of Cheryl for the first time. She looked breathtakingly beautiful in her white dress with a ring of flowers in her hair. I choked up and couldn’t take my eyes off her. The rain had stopped, the sun came out and it was all done just for us. What an unforgettable moment. february 2017

SOMETHING THAT DIDN’T GO TO PLAN WAS... Cheryl: The weather. It was a wet and stormy weekend, but the team at Secrets on the Lake had everything organised and were on the ready to relocate the ceremony to the boat house if we needed at the last minute. IF I COULD DO ONE THING DIFFERENTLY IT WOULD BE... Cheryl: I think I would have allowed more time to stay at Secrets on the Lake and encouraged our guests to stay longer too. It went far too quickly. Ian: I would have loved to have had more time with everyone after the wedding. It went so quickly. THE BEST ADVICE I CAN GIVE IS... Cheryl: If you are planning a resort-style wedding like we had, make sure you plan ahead and that you get good local contacts that you are happy with – especially your celebrant, we researched for a celebrant who was easy going, friendly and had great charisma. Do your research and be happy with the people you choose to help you on the day. The other thing is to take a breath at the start and really relax and enjoy the whole thing. Too many brides and grooms stress over how it will all go and don’t stop to actually really enjoy it. Ian: Cherish your wife and the rest will look after itself.

Work toward a tomorrow that will be better than yesterday. Don’t fixate on the past or what might have been. In the end, when you reach the state of being healed, you will see how fortunate you are. Red wine in moderation has long been thought of as good for the heart mainly by increasing high-density lipoprotein (the “good” cholesterol) and because it contains avonoids. • 50 grams soft unsalted butter (plus more for greasing) • 350 grams dark chocolate • 150 grams caster sugar • 4 large eggs (beaten with pinch of salt) • 1 teaspoon vanilla extract • 6 individual pudding moulds or ramekins, buttered Preheat the oven to 200ºC, putting in a baking sheet at the same time. Lay 3 of the moulds on a sheet of doubled baking parchment. Draw around them, remove, and then cut out the discs as marked. Press them all into the base of the tins. Melt the chocolate and let it cool slightly. Cream together the butter and sugar, and gradually beat in the eggs and salt, then the vanilla. Now add the flour, and when all is smoothly combined, scrape in the cooled chocolate, blending it to a smooth batter. Divide the batter between the 6 moulds, quickly whip the baking sheet out of the oven, arrange the little tins on it and replace in the oven.

Being the love issue, I caught up with the ladies over a delicious meal at Sandbar Cafe and Kiosk in Caloundra to discover what true love means to them.

W

hether it’s the powerful and unshakable bond between mother and child, the enduring love of an elderly married couple or the new and exciting ‘buzz’ we feel when we find our perfect match, love comes packaged in many different forms throughout our lifetime. But when do we know we are in love? How do we know when we’ve found ‘the one’ and what is it about maternal love that is so special and indescribable? To find out more, I posed these questions to the lunching ladies and discovered that, while everyone has their own journey to make, love is an innate part of our DNA, it’s all around us and it has no barriers. Joining me for lunch was Sandra Gilbert, group care manager with Noosacare; Sharon Chapman, owner of emotional healing business Trauma into Triumph; Trudy Fitzgerald, marketing manager with Fertility Solutions; Donna Jankiwskyj, co-owner of Relish Hair, Mountain Creek; Latoya Rodriguez, owner of Deep Love Picnics; Candice-Louise Craig, co-owner of MAMA (Midwives and Mothers Australia) and general manager of Profile, Kara de Schot. profile: Ladies, do you believe in love at first sight? candice-louise: I do. When I met my husband I just knew he was the one the moment I saw him. Our first date was really easy, we didn’t have to try or pretend to be someone other than ourselves. I think if you’re both looking for the same things you put that energy out there and it attracts the right person. donna: I’m not sure about love at first sight but I do believe in true and everlasting love. My parents have been married for almost 40 years. I look at love through their eyes. I’m currently a single motherof-two and I am very happy in my life right now. I am surrounded by love from my girls, my family and my friends. trudy: Yes I do, particularly when we see our babies for the first time, it’s instant love. kara: I do believe in love at first sight but I also believe in the opposite, which is what happened to me. I went to highschool with my husband and we didn’t like each other at all to begin with. It wasn’t until years later that we bumped into each other again and how things had changed! We had both grown up and there was an instant connection. We started dating and I just knew we would be together. sandra: I definitely believe in love at first sight. I was also a single february 2017

mum for 10 years and it was a precious time that I wouldn’t change because the bond I formed with my boys was priceless. Then I met my current partner through the world of triathlons. He was living in Western Australia and I was here so it couldn’t be more difficult. So for 12 months we travelled the world and after a year of doing the distance thing it got too hard and he said, ‘What if I moved to Noosa?’. So he did and we were married in Noosa 12 months ago and it’s been fabulous. sharon: I guess I believe in lust at first sight and love at first sight. I think if you find that in one person, then it’s a winner. I was single for 10 years before I met my husband Giuseppe. I wasn’t going to

I had been to a personal development course and I wrote four A4 pages of what I wanted in an ideal partner – no pressure! So I dated a few guys and my heart and soul just said, ‘Wait’. Then I went on a law of attraction cruise and on the first night, I stood on the deck and said, ‘Okay universe, if this law of attraction works, bring me the man’, and I met him three days later! latoya: I do now. I spent 10 years in a marriage that wasn’t quite right. I was never 100 per cent happy but I don’t have any regrets; we have three beautiful children together. After a rough separation when my third baby was just nine months old, I was dropping my son to school one day and I saw this man with an amazing smile – there was just something about him. Two years later I met him again and I recognised that smile right away. We went out on a date and fell instantly in love and have been inseparable ever since. In fact, he proposed just recently and of course, I said yes! He has taken on my three children and he has two of his own, so it’s a crazy busy house but I wouldn’t have it any other way. profile: What is your favourite love story? trudy: My heart softens for the love stories of the older generation and how it used to be in their day, when they met young and had a courtship. Today love happens differently to how it did years ago. Young love is special and their endurance was amazing. Having said that, their roles were very different; in that era women were at home. Now they have to look after the house and work and raise a family, it’s harder to have a relationship today. kara: That’s what sprung to my mind too. I think of couples who have been together for 50 or 60 years. They have been through so much. It starts with just them and then ends with just them. sandra: I see love all the time at work. It’s so hard when one of them comes into aged care or when they don’t remember their partner after 50 years. It breaks my heart. candice-louise: I agree. We live in a society where it’s an easy out for a lot of things, whether it’s marriage or otherwise. In our grandparents’ era they didn’t have a choice, they made it work.

profile: In your opinion what is the strongest type of love? candice-louise: I have to say it’s changed over the years for me, as I have matured and had a baby. Right now the thing I love most is watching my husband with our child. There is nothing more rewarding than seeing them together. When they are both laughing and feeding off each other, that infectious giggle fills my heart with joy and love. There are so many different forms of love – the way you love your children is different to the way you love your partner. Neither is stronger, just different. 84

Owners John Ktenidis and Sharon Collins are passionate about using only the freshest local ingredients, and you can taste it on the plate. The lunchtime menu offers a wide selection of delicious options to suit all tastes and appetites, so we were spoilt for choice – especially as we could also order from the delicious breakfast menu, which is available until 2.30pm. We kicked things off with the chef’s tasting plate; beautifully presented, fresh and full of flavour, each delicious morsel was melt-in-your-mouth delicious. Some of the lighter options on the menu include chickpea and feta falafel with beetroot yoghurt and pomegranate salad, bacon and pea croquettes with spiced aioli and baby cress salad, or tempura zucchini flower with ricotta and lemon farce, papaya and pear salad, and citrus yoghurt. For something a little more substantial, the restaurant offers an array of fresh salads, burgers, wraps, pastas and of course, their speciality – delicious fresh seafood. The Mediterranean salad was a popular choice among the ladies and tasted as good as it looked. A combination of roasted local vegetables, with marinated feta, pearl couscous and a balsamic vinaigrette, it was bursting with flavour and colour. The salmon and kaffir lime potato cakes also got the big thumbs up and I can vouch for their famous corn fritters, which are some of the best I have sampled.

donna: Do you remember with your firstborn, you would be so tired but you would sit there watching them sleep? I don’t think any of us would watch our partners sleep! You are that tired but they are so beautiful you just can’t stop looking at them. There is nothing quite like maternal love. latoya: I’ve always put the kids above everything. I can’t imagine anything stronger or better. sharon: I was very old fashioned in regards to love and I was waiting for a gentleman. I nannied for three different families with children and animals, so I have looked after others over the years, and have had so much love from so many others. y the romantic glow of candles and fairy lights, generous servings of cider braised pork shoulder with anise dusted pork skin crisps, honey roasted heirloom root vegetables, granny smith apple, fennel and tuscan kale slaw with walnuts and confit garlic aioli; and other delicious offerings fill the centre of the long table, where strangers come together as friends to dine in fine fashion under the stars in a secret Sunshine Coast location. Sitting at opposite ends of the table are Brent Colautti and Sam Cook, two mates from Immanuel Lutheran College who, now in their 30s, have taken their friendship to new business heights to create delicious experiences such as the recent Into the Woods and Into the Night events. “My background is mainly in wine trade, I studied wine science and worked in vineyards and wineries for years before moving to London where I worked in retail and wholesale,” says Sam.

“Then I came back to Melbourne and did the same thing there, where I found that working in the wine industry interconnects with food, hospitality and lots of events.” But a phone call from Brent proposing a business opportunity brought Sam back home to the Sunshine Coast and sent him on a new trajectory. Brent, who has spent most of his time managing bars and events, also travelled overseas to Europe, where he and Sam spent time travelling and working in the hospitality industry, before Brent moved back to the Sunshine Coast to complement his experience with formalised study. “I then started a business in Caloundra with a friend of mine and fell into the game and realised I wanted something more for myself and took a year off, played around with some ideas and came up with the concept of a commercial kitchen and bar

on wheels. Food trucks were going really well overseas, I love festivals, I love event management – I could tie it all into one. “Within a couple of weeks we did Woodford Folk Festival and I realised this was hard work, you have no idea what to expect, no scope of what money you are or aren’t going to make, so we started throwing some ideas around. Then we got a couple of enquiries for weddings off the back of serving restaurant-quality food at the festival and after the first wedding we said, ‘This could work’.” Their catering company then evolved into a second venture for the boys with the addition of Drew Cantle, in a restaurant in Mooloolaba. “Over the last two years we’ve evolved organically, we enjoy the market we are in and from a business perspective that makes working 80-hour weeks worthwhile,” Sam says. “I love the off-site catering because we’re

in different locations every week, we’re working with different people every week, and because of the service and flexibility we offer around menus and formats, no two jobs are the same, we’re always working with different produce, different ingredients. I love weddings and I get to go to at least one wedding a week, so I just find it fun.” “No matter how hard we work, no matter how stressed out we are, we still really enjoy it,” Brent adds. “I don’t ever wake up thinking I’ve got to go to work. It’s been something I’ve dreamt about since I was 20 and finally it came to fruition a couple of years ago and it’s pretty awesome to set that goal 10-15 years ago to then achieve it, and then realise you actually really love it. What motivates me too is that there’s a lot of unfinished business.” Along with weddings, corporate events and special occasions, Brent and Sam also hosted two uber stylish foodie events last year – Into the Night at Maleny Retreat and Into the Woods at Forest Sanctuary Venue, where local wedding vendors came together to showcase their talent. These events, which Sam and Brent hope to host more of in the near future, are a feast for the senses, none more so than taste, which is a credit to their executive chef Sam Maloney, who boasts unsurmountable experience and skill, having worked in top notch restaurants in Sydney and Melbourne. “We’re constantly changing the menu based on feedback and making sure it’s seasonal,” Sam says. “People wanted really simple food using the best possible produce cooked well, 90 per cent of what we do is sourcing really good

produce, keeping it fresh, modern coastal cuisine, local where we can, presented well, and it hits people, foodies are happy, people who aren’t so into food are happy as well, and we try and make it different and fun and interesting to look at.” The innovation also comes from their restaurant head chef, Stephane Giono, who hails from Europe where he worked at Michelin star restaurants. “The menu we put forward might look more simplistic than what we would like to cook, but the reason it’s so good is we’ve got talented chefs working with simple food to make it really sing,” says Brent. And complementing these gourmet offerings is Sam’s boutique wine label. “Wine and food are very much intertwined – one without the other wouldn’t seem right,” Sam says. “Being in wine I’ve always eaten everywhere and anywhere and for me coming into this side of things, being involved in the kitchen and menu development is something I’ve really enjoyed because I can’t make as much wine as I’d like at the moment, but I get to play around with chefs and it’s that creative aspect that keeps me interested.” In case they don’t have enough on their plate, this dynamic duo also has some pretty big business decisions on the horizon. “We’re looking at opening a wedding venue, so that’s our next idea, and that may come sooner rather than later,” Brent says, taking a sip of his coffee. “It’s a pretty exciting 2017 coming up!”

A shared microscope in a high-school biology class was all that was needed for Sunshine Coast Mayor, Mark Jamieson, to fall in love. After a first date on Anzac Day, five years of courting and a one-day engagement, Mark and Lorrell have spent the past 36 years happily married and consider family to be their greatest achievement. The high school sweethearts stopped by for The Last Word to offer their tips on love and life.

We first met… at school. We were in year 11 at Hervey Bay High School in 1975. We were engaged… the night before we got married, 5 December, 1980 in Hervey Bay. I knew Lorrell was the one when… we shared a microscope in biology class. I knew Mark was the one when… I saw how competitive and determined he was! Our first date was… 25 April, 1975, when we went for a night out in Pialba. We’ve been married for… 36 years. Mark’s most annoying habit is… leaving spoons in the sink!
