elcome to the first issue of Profile for 2018! We hope you’ve all enjoyed the holiday season and are ready for another great year ahead. The new year is always a time of excitement and new beginnings, whether it’s starting that exercise program you put off last year, finding a new career path, going back to study, or travelling more, it’s an ideal time to put those plans into action. Speaking of which, we have lots of exciting things in store for you throughout the following months, as we continue to deliver more of the great stories you love as well as more great events and an even bigger digital media presence, watch this space! This month, Profile turns its focus to travel, and what better way to kick off the year than to be transported around the globe through the eyes of the locals we showcase in this month’s issue. Someone who has more travel stories to share than most, is our cover star Jacinta Blundell. Intrepid traveller and owner of Helloworld Travel Buderim and Caboolture, Jacinta shares her

Visiting a new city or country or returning to your favourite stomping ground evokes a delicious sense of whimsy, where it almost feels like time stands still as you escape normality for a moment and truly relax and immerse yourself in your surroundings – a beautiful feeling we should express more in our everyday life.

E

very morning and every afternoon, I drive past the Big Pineapple, where more often than not there are groups of people gathered at its base, posing for a photo at this iconic landmark and tourist destination. It’s so easy to become complacent when you see or do something on a regular basis, that all it takes is someone to point out its beauty or spectacle to snap you back to reality. Living here on the Sunshine Coast, which is one of the most lust-worthy travel destinations in Australia, we are surrounded by this; from the picturesque coastline, lush hinterland, and everything in between. We are so lucky to call this place home, it’s important not to ever forget that. Think about when you’re on a holiday, you soak up every tiny detail – light coming through the trees, the doorway to a beautiful home, a bucket of flowers out the front of a shop, a man sitting on the bench reading the newspaper – all things that could easily exist in your own hometown, which you most likely pass by without even realising. Avid users of social media, or keen photographers, take this one step

further, often snapping a photo of the aforementioned details to share with their friends, family, followers. It’s a reminder to ‘stop and smell the roses’ and appreciate the beauty that surrounds, no matter whether you’re on that long-awaited vacation or on your way to work, be grateful and truly live in the moment. Fall back in love with life, every part of it, and you’ll be surprised how much your whole perspective changes. Actively acknowledge those moments, people and things you’re grateful for, and your overall perspective changes, rather than dwelling on things that may not have gone your way and letting that negativity overrule your whole day. I recently read a retrospective letter by a young lady whose life was cut too short and in it she talked about just that, how important it is to appreciate life and all

Janice Mastin has cemented herself as one of the go-to eyelash extension stylists after just several months on the Sunshine Coast. Profile speaks with the extension extraordinaire, to discuss the secret to perfect lashes and how she transitioned from teacher to stylist while living in the Middle East.

W

ith her telltale mix of Australian, British and Middle Eastern accents, Janice Mastin has seen a good part of the world, all through some very impressive eyelashes, of course. The eyelash artist has been working internationally as an extension stylist for 11 years and has recently relocated to the Sunshine Coast to focus on her business Blink! The Eyelash Expert. What is now a thriving business actually came into Janice’s life by chance. “I’m a Brisbane girl and like lots of Australians do after highschool, I went off to the UK for a year and that year turned into 20,” she explains. One day while working in finance and studying to be a teacher in the UK, Janice noticed her friend’s eyelashes and was immediately fascinated. “I hadn’t seen her in a while and I remember looking at her eyelashes thinking, ‘Oh my goodness! I didn’t know she had the most amazing eyelashes. How have I missed that before?’” They turned out to be extensions, and Janice knew she had to get some for herself. The self-confessed addict developed a great relationship with her stylist over time, who then started training her in the art of extensions. Janice says it was this fabulous opportunity that eventually turned into her calling in life. But eyelash extensions were just a sideline to her primary school teaching career

for several years, and it wasn’t until she moved to the Middle East for work that she discovered she had a real talent. “I ended up doing them for a couple of friends at school. Then the head teacher’s wife wanted them done and she actually gave me a shout out to all her friends and it grew from there.” Once Janice was in demand, she set up a Facebook page to see where it would go. Today, the reviews speak louder than words and she has a 100 per cent five-star rating on Facebook. So, what is the secret behind her glowing reviews? While she’s incredibly humble, Janice says it’s probably due to the years of reflecting and changing her technique to find her ideal way of doing the extensions. “In the same way a good hair stylist would tailor your hair to suit your face, that’s what I do with the lashes,” she explains. Some of Janice’s clients have been brides and bridesmaids who were originally skeptical about eyelash extensions. “The good thing about my extensions is, although they’ll look great on the day, they’ll also look fabulous and not too over the top on your honeymoon,” she says. Janice specialises in creating a natural look that makes your eyes pop. It’s that fine line between natural and obvious extensions that keeps her clients coming back for more, and also gains her more clients through referrals. That coupled with a good, creative eye has made her a sought after stylist at her new home on the Coast. She relocated to Australia in 2017 to create the business and lifestyle of her dreams. While setting herself up in a new country has been challenging at times, Janice says it’s very exciting and she’s optimistic for 2018. She’s focusing solely on getting Blink! off the ground, and has developed some lifelong relationships with her clients. “I have been incredibly blessed to make

some fabulous connections with clients – some really inspiring women who have been incredibly supportive of me, which is amazing because they don’t really know me – who just want to see me succeed.”

Jacinta Blundell was born to travel. Some of her earliest and fondest memories are of exploring this great Earth and it’s a passion she has taken great pride in making a successful career from; imparting her knowledge and experience onto others, who dream to see it all.

F

rom the sound of the children’s laughter echoing as they dog sled their way through tundra meadows, to sharing a bottle of fine wine with her husband beside a roaring fire; this is what truly warms Jacinta Blundell’s heart. “I don’t ever take work or groups to the snow, every trip to the snow is my personal time, and I travel so often that there’s a rare moment it can be called a holiday, so I really keep snow as our family holiday,” she says. “Watching the kids grow up, racing around on the snow together and playing games as a family, that’s what I love because it doesn’t matter how old they become, when they have kids, a family ski trip will always be a family ski trip.” That sentiment captures the true essence of travel for Jacinta, who evaluates her favourite destinations based on the memories they evoke. “I have a lot of great memories of different destinations, but I think it’s about the rare moments that stay with you that make a place special,” she says. “I have a pair of castanets from when I was a little girl and an old gypsy man in Spain taught me how to play them. Every time I think about Spain that’s the memory I have and I still have those castanets in my treasure box, so it’s those types of things.”

When asked of her favourite country, Jacinta, who has conquered all seven continents, quips it’s like being asked to choose her favourite child; but after careful consideration, settles on three destinations. “The most amazing place I’ve ever been in the entire world is Antarctica, it’s like nowhere else, it’s like you’re not even on the planet,” she says. “I love Spain because I love the people and the diverse culture regardless of where you go, you can spend a week in one area and then it’s like being in a totally different country if you went into another area and I like that. “And then there’s Africa, but Africa to me is; we’re in the Serengeti and I am watching this mother cheetah teach

her five cubs how to hunt. So when I’m talking to people about Africa, that’s what I think about, everybody has a different experience.” And that’s the beauty of travel; it’s what captivates you, has you beaming with joy and can have you experience a unique adventure every time you go. “I could not tell you any destination that was exactly the same as the last time we were there,” says Jacinta. “We were in Alaska and one lady was after a piece of their local jewellery. I said to her, ‘Wait for Ketchikan, that’s going to be the place to buy it’, but the seas were that rough we didn’t get into Ketchikan (so we’ve renamed it Ketchikan’t) but it made me realise very early on, if there is a moment, take it now. “It’s like when people want to do the dog sledding in Alaska on the glaciers, of the five times I’ve been, I’ve only managed to get up there once because of weather, so just do it. If something is on your bucket list, start ticking off those goals, there may never be another right moment.” Jacinta says she now endeavours to explore the outer regions of countries she’s already been to, taking the road less travelled – but not in a backpacking “off the beaten track” sense, while maintaining an element of luxury of course. “I like going to places where people say, ‘Where is that?’ Where you’ll still get an authentic cultural experience and feel like you’re the first people who have ever been there, but not the intrepid traveller of hiking 20kms a day; I’m happy to be profilemag.com.au

active, but preferably where you go back at the end of the day and have a champagne and don’t have to put a tent up,” she says with a smile. Jacinta’s first travel memory is from when she was three years old and her mum, dad and older brother moved to London on a “working holiday adventure”. “The first part of the voyage was on a ship called the CTC Turkmenia. Whenever you cross the equator they have a big show and re-enactment – where King Neptune comes out of the ocean and ‘sacrifices’ bikini-clad women. At the end, when all of the kids went up to get their certificate and scroll for crossing the equator, there was no way I was going anywhere near him,” she says with a laugh. “I don’t know whether they still do that on cruise ships, but I’ve specifically never done a voyage to cross the equator again. It’s burnt into my memory!” Jacinta’s family spent four years in London, where she started school and was

introduced to the wide world of travelling through European escapades. “That’s where travel started for me, for my entire life I was brought up travelling,” she says. Having grown up in Kilcoy, Jacinta’s family moved to the Sunshine Coast when she was in her teens, and upon graduating high school, became a trainee in an accountancy firm. “I have a huge love for figures and thought, ‘This is my path’, and I was in the classroom one day, and next door they were learning the cryptic flight reservation coding and I realised I love coding more than I love figures, so I politely excused myself and joined the other class,” she says.

I have a lot of great MEMORIES of different destinations, but I think it’s about the RARE MOMENTS that stay with you that make a place special.”

“It’s really difficult to get into a retail travel agency because of the uniqueness of the programs and the coding, so I started at the bottom, like many of my industry colleagues, doing unpaid work experience and stamping brochures. But the strong and really customer service-focused agents survive and I was 25 when we bought a Harvey World Travel franchise in Caboolture. “It was a huge leap of faith for Mum and Dad, while they loved to travel, they knew nothing about the travel industry. I was the youngest franchisee within the network then and I was on the Harvey World Travel Franchisee board for many years and was very much an influencer within that group during that period. Harvey World Travel Caboolture changed over to Helloworld Travel during the merger just over four years ago, proudly making us the longest

serving Helloworld Travel in Queensland.” Jacinta also identified a gap in the market, a niche for people wanting to book a holiday with someone they can trust and have them handle everything; where all they need to do is turn up. In 2009, Small Group Journeys by Jacinta was born, predominantly catering to 40 to 80-year-olds. “It’s really difficult to give what I need to if I’m the only host, so in most cases, there is always two of us. That’s why my husband, Brad, got involved, and our other host is my dad, Geoff. Brad is also involved in the wine industry, so that’s why there’s often an optional wine component in our tours,” she says. Continuing to keep the love of travel in the family, Jacinta and Brad’s son, Jadyn, is a professional snowboard and ski instructor now working in Canada, and their daughter, Chloe, joined Helloworld as a consultant four years ago. “She’s been involved in the office since she was two and everyone has known her and grown up with her,” says Jacinta. “The majority of my team in Caboolture have been trained by me, so everything they say, do and teach is what has come through from me, so when clients walk in and I’m not there, they know profilemagazine

they’ll be looked after to the same level.” Living on the Coast and already possessing a strong home consulting clientele, in 2016 Jacinta was approached to buy the Helloworld branch in Buderim, further solidifying her foothold in the industry, which she has now been a part of for over 25 years. “I love the storytelling of travel, being an agent isn’t just about booking a flight, a hotel or a tour, it’s about talking to people and teleporting them to that destination,” says Jacinta. “You have to travel far and often to be really good at that and I’m not talking about going to an exotic location and hanging out on the beach for a week, it really is about getting in and finding those gems and those unique experiences you can come back and talk about. “I love planning the trip and mentoring my team, I love making them the best they can be and watching that unfold, that’s exciting and rewarding. Being able to see the jigsaw puzzle of a client’s holiday come together, that’s why I not only travel but why I love being in travel.” Jacinta’s itinerary from the past 12 months is dizzying, brimming with bespoke Small Group Journeys, recon trips (also known as a self-famil, where agents visit a place to become familiar with it), working holidays and personal vacations. It started with a small group departure train-cruising across northern Spain, river cruising through France and to the Italian Long Lunch Festival in Italy; then onto Singapore for work; Antarctica for a recon trip; another group cruising the Panama Route via Costa Rica, Nicaragua and the Yucatan Peninsula; then Tasmania; Perth for business and pleasure; New Zealand doubled as a trip to see their son at the snow and a recon trip for their February tour; a team event at Uluru; a tour to Mendoza, the wine capital of Argentina; a foodie side trip into Lima and adventure cruising the Amazon; closing with a quick 14

I love PLANNING THE TRIP and mentoring my team, I love making them the best they can be and watching that unfold, that’s exciting and rewarding. Being able to see the JIGSAW PUZZLE of a client’s holiday come together, that’s why I not only travel but why I love being in travel.”

“But if you haven’t been and you don’t know why, you don’t understand. It comes down to why people want to travel, and it’s every single one of those experiences that can make or break your journey.” Jacinta has also introduced lounge areas at both Helloworld offices in Buderim and Caboolture, where her agents can map out a client’s journey using an iPad and project it onto a plasma screen. “We’re making it about the trip and not about the product, because travel has become way too commoditised,” she says. “It’s about trying to change the way we sell travel, taking the transactional feeling out of it and making it more about the

journey – what do you do when you’re at home and you’re planning a trip? You’re looking at maps, you’re sitting back having a drink and getting excited about what you can see and do, we’re bringing that feeling into our agencies.” Given Jacinta’s experience, she is well equipped to take the readers of Profile Magazine on an intrepid journey each month, through her role as Travel Editor. Just to give you a taste of what’s to come, in the first six months of 2018 Jacinta will jetset to the USA, Iceland, Canada, New Zealand, China, South Australia, Italy, Slovenia, Croatia and Newfoundland in Canada. weekender cruise with the family. “It’s an interesting life, but I always make sure I’m on the ground for a minimum of six weeks before I’m gone again because I’m really conscious of making sure I’m still one-on-one with my team and clients, all of our passengers’ travel on our Small Group Journeys is arranged by me, so it’s very much that personalised service. I look at myself as being more of a travel concierge than an agent,” says Jacinta. “My favourite Instagram pics to post are #theviewfrommyofficetoday because it’s a lot easier to get around the globe now and still be fully in work-mode, it’s a little challenging in Antarctica and the Amazon, but that’s their appeal I think!” Because not everyone has as much worldly knowledge and experience as Jacinta, she has created destination files for her team, to enable them to best serve their clients. “If they haven’t been somewhere, say to Antarctica, and somebody comes in and asks them about it, I have included the top points, for example, ‘Always find the purpose for this trip’. Do they want a soft adventure cruise and Antarctica is the bonus, or do they want to go to Antarctica? “A lot of the landing points don’t allow more than 100 passengers ashore per landing, so if they are wanting multiple landings per day and to immerse themselves into the destination, it has to be on a boat with less than 100 passengers.

It’s no surprise the Sunshine Coast is a stunning place when you have your feet firmly planted on the ground, but have you ever wondered what it’s like to gander from above? Having seen the region’s beauty in all its glory, I can tell you, it’s truly magical.

L

iving on the Sunshine Coast for 30 years, I thought I’d managed to soak up most of our beautiful surrounds, but I was wrong, because it’s impossible to truly appreciate its beauty until you see it from the vantage point of a helicopter. At 1000ft in the air, to the right is the sparkling turquoise ocean, ahead is 30kms of stunning golden sandy beaches and to the left is green hinterland as far as the eye can see. It truly is breaktaking. This was only my second time in a helicopter and as I edged closer to the machine on the tarmac, I realised I had forgotten how small these incredible beasts are – which is what makes them so desirable when travelling. One-in-four Cambodian women experience domestic violence, but it wasn’t until 2005 that the country made domestic violence against the law. For Sally Jane Douglas, these statistics are unacceptable and what motivated the Sunshine Coast woman to spend more than five years in Siem Reap empowering women for a brighter future.

T

he city passes by in a blur of colour, sound and smell. Tourists are lured from the pulsing streets by passing restaurants, as the ever welcoming locals proudly share their culture. From the back of her tuk tuk, Sally Jane Douglas takes it all in. It’s hard to imagine that less than 40 years ago Cambodia was devastated by genocide. From 1975 until 1979, the Khmer Rouge regime instigated the Cambodian genocide, claiming the lives of one-anda-half to three million people. But it’s the country’s resilience, despite its tragic past, that really struck Sally, 35, on her first visit and ultimately led her to spend more than five years working to support and empower Cambodian women through the Women’s Resource Centre. “These people have lived through so much, but they have such an appreciation for life and so much resilience and love for their country,” says Sally. “The people are always smiling and so welcoming, they want to be happy and they want to keep going.” Sally has always had a love for travel; when she was 23 years old she circled the globe, ticking an enviable 35 countries off her bucket list. Upon returning to Melbourne, the social worker felt many people had lost touch with the true meaning

of life, and longed to fulfil her dream of living and working in a developing country. She returned to Cambodia, where a chance meeting led her to the Women’s Resource Centre: an organisation providing women with the resources and education they need to improve their lives for the better. “My teenage dream had been to go and work in a developing country, and I happened to meet a woman starting an organisation I knew everything about,” she explains.

“The Women’s Resource Centre offers counselling support for women – in Melbourne I was working for WIRE, one of the largest telephone and support referral organisations in Victoria for women.

“So they needed me, and I wanted them.” The Women’s Resource Centre mainly works with women who have experienced domestic violence, as well as running educational workshops on women’s health, financial security, parenting, domestic violence and women’s rights. “They’re really those basic life skills you or I would take for granted, that Cambodians aren’t really taught in the home,” says Sally. build the centre from the ground up and today remains on the board of directors. Her role was to not work with the Cambodian women directly, but to support and educate the centre’s local employees behind the scenes, as well as raising crucial funds to keep the facility’s doors open. “My goal was to basically be made redundant, get to the point where I was not needed anymore and the staff could continue on without me,” she says. Sally was based in Siem Reap, a 10-minute drive from the incredible temples of Angkor Wat, the largest religious monument in the world. “It really was a lovely town to live in, everyone’s incredibly warm and friendly, that’s the main compliment people give the country,” she says. She urged anyone travelling to Cambodia to not only visit Siem Reap, but experience all the country has to offer from Mount Kulen to the islands off the coast, including her favourite island Koh Sanloem. february 2018

“There’s not just Angkor Wat, they actually discovered new temples in 2016 which was pretty exciting,” she says. “Thailand gets all the credit for the islands, but Cambodia is just as beautiful.” Sally left Cambodia early last year, before settling in Moffat Beach on the Sunshine Coast, where she now runs her own self-titled wellness coaching practice for women. She credits her time abroad for having a greater appreciation for people of all cultures, and says she no longer stresses like she used to living and working in Australia. “It’s made me a lot more patient, I’ve learned not to sweat the small stuff,” she says. “There’s so much community living in developing countries, the family unit is very strong and they often have an outdoor lifestyle where everyone gets together. “I really love that, and I love being in Moffat Beach as it has that country town feel and community mentality. “I’ve really grown as a person spending time overseas, there’s no better classroom than travel.”

In 1991, Ian Mansfield and his family left Australia for a one-year assignment to Pakistan, training Afghan refugees in landmine-clearance procedures. He didn’t return home for 20 years. Throughout Ian’s 22-year service with the Australian Army and subsequent 20-year career with the United Nations and other international organisations, he has visited over 80 countries, living and working in eight of them.

ravel has underpinned Ian Mansfield’s illustrious career, from inhabiting war torn and impoverished nations due to service with the Australian Army and the United Nations, to affording the luxury of “breakfast in Switzerland, lunch in France and dinner in Italy” while working in Geneva. Having grown up in Ararat, a small town in Victoria, Ian hadn’t even been on a plane until he was 17, which he says wasn’t unusual in those days. It wasn’t until he joined the army as an engineer officer, after attending the Royal Military College, Duntroon, that he truly tasted travel through postings in Papua New Guinea, the United States of America and Canada. “I started to enjoy travel and in the army you do move a lot, the average posting or assignment is two years,” he says. In 1991, having served for two decades, his final posting was as a commanding officer of the Australian Army Training Team in Pakistan, tasked with assisting the United Nations in establishing a civilian program to clear landmines in Afghanistan for humanitarian purposes. His actions were later awarded with the Conspicuous Service Cross and saw him honoured as a Member of the Order of Australia. “After World War II, destroying landmines and explosives was seen as a military thing, the army cleaned up, and then in the 1950s and ‘60s there were all these civil wars in Africa and Asia, but no one cleaned up the mines,” he says. “It was only when the Soviets pulled out of Afghanistan in 1989, leaving behind a

deadly legacy of millions of landmines, that the UN saw this huge humanitarian crisis looming; there were three million refugees in Pakistan, two million in Iran and they were expected to flood back home and everyone would get blown up and it would be a disaster. “So for the first time ever, the UN appealed for money to train civilians to clear landmines for humanitarian purposes, not for military purposes. I was right there at the start of this change in approach, it was new ground and we were making it up as we went along.” Ian’s final post doubled in a United Nations appointment and he left the army and went on to spend 20 years working in the mine-action sector, setting up new programs in Laos and Bosnia and working at the policy level at the United Nations headquarters in New York.

“After any war there is always a percentage of ammunition that doesn’t go off, like bombs, rockets, grenades. In some ways that’s easier because you can see them, but then you don’t know what condition they’re in; the slightest knock and they go off or they could be safe to pick up, so you need people who are trained to be able to deal with this,” he says. “The philosophy is to train local people to clear the unexploded ordnance because they are stuck with the problem, it gives them employment and gives them the capacity to deal with it for years to come.” Landmines are small devices (about the size of a coffee cup) buried under the profilemag.com.au

ground, which are activated when stepped on, there are varying types of landmines and their damage also differs, some are deadly, while others are designed to maim. “They’re nasty weapons and that’s the point, they’re indiscriminate; the war is finished, the troops go home, but the mines are left behind and I’ve seen them in Afghanistan 20 years later and they’re in perfect condition,” he says. Ian says it takes about five weeks to train a local person to clear landmines. As they are buried, often with no maps, a metal detector is used, which is time consuming given they are scouring battlefields littered with scrap metal from bullets, shrapnel and fragments. Once a landmine is found, it is safely blown up with a stick of dynamite and rendered inactive. By the late 1990s, civil society was pushing to ban landmines, a movement heavily supported by Princess Diana’s visit to Angola and Bosnia, just weeks before her death. In December 1997, the Ottawa Treaty to ban landmines was signed and the campaign organisers subsequently awarded the Nobel Peace Prize. “At a political level, people said, ‘This weapon is bad, it’s indiscriminate and should be banned’, and the treaty has been very successful, even though some countries haven’t signed it, the new use of landmines has pretty well stopped because of the moral pressure, the US no longer use them, and neither do Russia and China,” he says. There are about 70 countries still affected by landmines, bombs or cluster munitions, some on a larger scale such as Afghanistan, Cambodia, Laos, Iraq, Vietnam, Bosnia and Angola, while others are more confined. “The UK is officially declared mine affected because of the Falkland Islands, they had a war with Argentina in the ‘80s, so there are still some minefields on the Falklands. The borders between Peru and Ecuador, Chile and Bolivia right up in the Andes are still mined, in a lot of those countries it’s confined to a certain area. You read in the paper they still find bombs in Germany from WWI and WWII,” says Ian. In 2002, Ian was working in New York and witnessed the terrorist attack on 11 September from his office on the 20th floor of the UN headquarters, less than five kilometers from the Twin Towers. “My wife Margaret and I were walking to work and we heard this plane go across february 2018

and we stopped and remarked that it was so low, but thought nothing more of it. Then when we were at work, she rang me and said, ‘It’s on the TV, a plane’s hit the World Trade Centre’,” he says. “I went to my window and saw the second plane hit the building, it was such a clear beautiful day you could easily see it. We just couldn’t believe it was happening. We all got evacuated. That sticks in your mind.” That same year, Ian was appointed deputy director of the Geneva International Centre for Humanitarian Demining, a role he held until retiring in 2011. Since then, Ian has kept himself busy writing a book and doing consulting work in countries like Lebanon, Jordan, Tajikistan, and more recently Palau and the Solomon Islands, to help organise the clean up of bombs from WWII. “In the Solomon Islands I’ve been running workshops to develop legislation to make it illegal for people to touch bombs because of the ‘dynamite fishermen’,

people who deliberately go looking for the bombs, try and crack them open to get out the explosive, put it in a soft drink bottle and throw it in the sea. It explodes and stuns and kills the fish and they scoop them up, but it damages the fish and reef, so we need to make that illegal,” he says. “But it’s more than that, five to 10 people a year are killed or injured by these bombs.” Ian’s book, Stepping into a Minefield is a personal account of his expeditions and pioneering humanitarian efforts. “Through my work I saw the aftermath of three wars at close hand … the conclusion I came to is that no-one wins a war,” he says. “It’s sad to see people try and scratch out an existence to stay safe and feed their family, just because of the violence and lack of opportunity they have, but then it’s heart-warming when you go to places that have recovered and see what can happen. “Mozambique, for example, was heavily affected after their civil war with lots of landmines, they’ve since cleared all their mines and it’s one of the success stories in southern Africa. It’s encouraging when you’ve been part of that, made it safe for them to go back home.” After four decades living and working overseas, Ian has finally returned to his home on the Sunshine Coast, having bought his first property here from a photograph while having dinner with friends one night in Islamabad in 1993; but that’s another story for another day. profilemagazine

From one of the world’s largest slums to stunning tropical beaches and the great migration season on safari, Kenya is a country filled with culture and insurmountable beauty. It is also a destination not often considered when it comes to travel, which is why I feel lucky to have spent a month in the diverse and unexpected travel destination in 2017.

A

s someone consumed by wanderlust, I have a neverending list of places I hope to visit one day – with Japan, Italy and India taking pride of place at the top. So when my dear Swedish friend, Lina, and I decided to meet up for an adventure last year, I was hoping she was thinking along the same lines as me. Our budget was modest and I knew Lina wanted to go somewhere tropical (Sweden spends a good part of the year in darkness, after all), but when she asked, “How about Kenya?” it caught me unawares. I had never really considered Kenya to be a travel destination. South Africa, maybe. Morocco or Egypt, for sure! But as a student of social work, Lina wanted to gain experience in her field, volunteering in women’s education through an organisation called International Volunteers Headquarters (IVHQ).

At that time, the women’s marches were happening around the world and I felt there wasn’t much I could do for the cause here in Australia, so I thought, “Why not?”. While I’m not an overly political person, I felt like this was a good opportunity to show solidarity and physically do something to help my fellow woman. After several months of planning, I set off to Kenya for two weeks of volunteering and two weeks of travelling the country. We were posted to the Gihon Women’s Empowerment Centre in a town called

Kitengela on the outskirts of Kenya’s capital, Nairobi and just a short drive from the world’s second largest slum, Kibera. Because the population has grown exponentially in recent years, drought, poverty and gender-based violence is rife. The centre was founded in 2015 by an incredible local, Agnes Gitonga, and her mission is to empower women and address the issue of gender-based violence – a problem that is rationalised and accepted by both men and women in the area. Located on the edge of town in a small dusty lot, the centre houses several tiny profilemag.com.au


rooms that are used for educating about 50 school children and provide meeting places for the women. They hand-make and sell beautiful beaded jewellery to generate income and support their families. The centre is also a place for general education, covering topics such as health, sex, hygiene, parenting, social skills and farming. The women leave the centre with the skills to start their own businesses and while it’s an around the clock, non-paying job, watching their development is something that keeps Agnes going. Agnes has the stamina, drive and intelligence of an international CEO in a country that runs on ‘Kenyan time’ – meaning things are never done in a hurry. She’s a natural-born leader who has changed the lives of hundreds, if not thousands of women and children in a society based on misogynistic and patriarchal traditions. Upon opening the centre, Agnes received death threats from local men, but once she educated them on what she was trying to achieve, she quickly became a revered member of the community. I was lucky enough to be present during the centre’s second anniversary. We helped Agnes organise a two-day celebration for the community, which saw prominent figures from the area sharing knowledge with new and old members of the centre. Agnes signed up several new ladies and even educated a couple of men about the centre’s mission along the way. Something I came to realise is that volunteering can be met with a lot of different opinions and sometimes criticisms. I know some people questioned my motives for doing it; that it was just a self-fulfilling trip. But really, most of those who volunteer simply want to give back in some way or another. I went into it thinking I wouldn’t make too much of a difference because of the february 2018

corruption and poverty blanketing Kenya. But I left realising even the simplest of gestures can have flow on effects throughout communities – all it takes is asking what you can do to help. After teary goodbyes, we left Gihon and set course for a week on safari. As a ‘90s baby, my favourite movie was The Lion King and with areas in Kenya that are the inspiration for the movie, you can imagine my excitement. I’d also been very interested in the Maasai culture ever since writing an assignment on the tribe in Grade Four at school, so I was very keen to meet a Maasai warrior in real life. We travelled around the south of the country with an amazing tour guide and a van all to ourselves, visiting the Maasai Mara, Amboseli National Park, and Lake Nakuru. We saw elephants, cheetahs, lions, giraffes, zebras, hippos and rhinos across different environments from the dry, dusty plains of the Amboseli, to the green and vast pastures of the Maasai Mara. The only animal we didn’t see was the elusive leopard, but that didn’t put a dampner on the magical experience. After the splendour of safari we were en route to Mombasa, a beach town on the south-east coast of Kenya. While the thought of Kenya conjures up images of vast plains filled with wild animals and acacia trees, there is also an unmissable coastline brimming with beautiful beaches and fascinating history.

Had we have known there was a brand new rail line running from Nairobi to Mombasa, we wouldn’t have endured the eight-plus-hour bus trip with no air conditioning at a constant speed of 60km/ hour. However, it’s these moments that you can always look back on for a laugh. Mombasa seemed like a million miles away from the scenes we’d witnessed in Kitengela, so we were feeling part guilt, part gratitude for the amazing experience we had there. Because of its ideal location for ports and trading, the area is rich with history and culture. There are Middle Eastern and Portuguese influences in Mombasa’s old town, so we spent a lot of time wandering the streets taking in the cultural references in the architecture and markets. Turquoise waters juxtaposed against the white sands and old buildings provided the most tranquil and relaxing backdrop to end a once-in-a-lifetime trip. As Kenya is a developing country, it is advised to do your research before you go and be sure to check websites such as smarttraveller.gov.au to know the safe areas to travel to. I never imagined visiting Kenya, but it turned out to be a truly captivating and broadening experience that I will never forget. Whether you’re thinking about volunteering, or you dream of seeing lions in the wild – I highly recommend you add this unique and culture-rich country to your bucket list.

ow do I get on your spaceship?” Kerry Phairs boldly asked Sir Richard Branson, who was enjoying a tall glass of champagne at his bar on Necker Island. “Are you serious?” Sir Richard asked, to which Kerry replied, “I’m scared, but I’m prepared for the opportunity”. Kerry wrote her email address onto a napkin and gave it to Sir Richard, and upon returning home to the Sunshine Coast she found an email from the man himself outlining the information for his historic voyage. Kerry was on her way to conquering her biggest goal yet – to go into space. “I’ve always been interested in the moon and on my wall when I was a kid there was SIR RICHARD BRANSON AND KERRY PHAIRS PHOTO BY ROSANNA

The Great Wall of China, New York, and space, so I’ve always said I’m going to go there and still today, I have a fascination with the moon,” she says. “It’s always been on my agenda, I’ve achieved all of my big goals, except going into space.”

I believe, as does Sir Richard Branson, we need to go to SPACE to learn how to fix the Earth, so we can see the damage we’re doing environmentally and to our MIND.”

In 1995, Kerry came as close as most of us will ever get to feeling like an astronaut, while she was working for Optus Communications. The company ran a competition, whereby their top 10 sales people in Australia would win a trip to America. They visited Los Angeles, the Nokia Network in Dallas and then went onto Houston, where the space centre is located. “The rockets go from Cape Canaveral

in Florida, but the astronauts live in Houston, Texas and that’s where they do their training. We had three days of going through part of their training,” says Kerry. “We got to go in the simulator, if you see the movie Apollo 13, that’s what we were in, and because I’m a scuba diver, I was able to go into the tanks to do the manoeuvres they have to learn. Back then, there was no way of simulating the weightlessness they experience in space.” Then in 2002, while working on Hayman Island, Kerry met a husband and wife who she bonded with over their shared interest in goal setting. Unbeknownst to Kerry, he was the head physicist with the team going to Mars, and told her about the problems the passengers will face physically. But the chance encounter only spurred on Kerry’s ambition, which reached its peak while on Sir Richard’s Necker Island in the British Virgin Islands early last year. “Everyone was asking entrepreneurialstyle questions like where he gets his innovation, inspiration and drive from, and I said to a colleague sitting next to me, ‘I want to know how to get on his spaceship’ and he said, ‘Well this is your chance to ask him’,” she says. Since buying her US$250,000 ticket for the two-and-a-half-hour trip (with six minutes of weightlessness), Kerry has been working with Stephen Attenborough, who is heading the Virgin Galactic mission. “Now I’m an astronaut in training,” Kerry says proudly, explaining she has to undergo intense mental and physical training, and hopes to drop 30kgs in the process. profilemag.com.au

I’m expecting it’s going to be a very emotional thing.” Kerry is the founder of the Beyond Brilliant Foundation, a charitable organisation supporting people with brain tumours, which launched in 2015 after losing her husband Mark to the insidious cancer in 2014. “I’m hoping to use the knowledge from this experience to build awareness and I’m hoping to monetise it and speak, so I can raise the money to build a research centre for brain cancer, that’s the ultimate aim,” she says. More than 600 people have already signed up to be part of the historical trip on the Virgin Galactic, with only six passengers on each flight. Having undertaken rigorous research and test flights since announcing the mission in 2009, Sir Richard has publicly said he hopes for the first flight to take off this month, and it will be another three months before he is in space. Taking off from Mexico, Kerry is one of the first people in line and anticipates she will be called up in 2019 or 2020. “We have meet ups around the world leading up to it and the week before our launch, our team will meet and go through

rigorous training, it will be a bit like Space Cowboys and Armageddon, when the astronauts go through the training. They need to make sure our hearts are right, our lungs are right,” says Kerry. “The enzymes start to break down and our bone density decreases, so we’ve got to have good calcium levels and our bones need to be strong, because something happens in the atmosphere, I’m not sure if it will for us given we’ll be in a spaceship, I think it’s more when they step out, but we have to be prepared for that. So it’s a huge risk.” profilemagazine

Mid last year Kerry survived a heart attack, which is why she has a specialised medical team looking after her, including a cardiologist, psychologist, dietician and a gym instructor, to make sure she is as ready as physically possible. “I’m extremely excited, mentally I need to be prepared I may not come back, but you take that risk every time you get into a car,” she says honestly. With the countdown now on until Kerry fills her bucket list, she has sage advice for anyone daring to dream big.

“Don’t let go of your dreams, don’t miss an opportunity, don’t think you’ll never get that opportunity,” she says. “And be careful what you wish for because you might just have to go through with it. Like me now, I’ve literally had to put my money where my mouth is, but it’s a childhood dream.” Bon voyage Kerry.

UP, UP AND AWAY • Virgin Galactic space flights will normally take place at the first light of day. • WhiteKnightTwo is a custom-built, four-engine, dual-fuselage jet aircraft, designed to carry SpaceShipTwo up to an altitude of ~50,000 feet for safe and efficient air launch. SpaceShipTwo is a reusable, winged spacecraft designed to repeatedly carry as many as eight people (including two pilots) into space. • Once WhiteKnightTwo has reached altitude, SpaceShipTwo will accelerate to about three-and-a-half times the speed of sound, producing moderate G-forces and propelling the vehicle into space. • There is no physical boundary between Earth’s atmosphere and outer space, although different organisations have named different altitudes to codify space’s official border – NASA and the US Air Force use the threshold of 80 kilometers to award astronaut wings, meanwhile the Kármán line of 100 kilometers is also used, particularly outside of the USA. SpaceShipTwo is designed to reach altitudes above these thresholds. • As SpaceShipTwo coasts up into space, astronauts will leave their seats and experience true weightlessness and have the best view of Earth and the blackness of space from the vehicle’s 12 large cabin windows. At a time of life when most of us are thinking about slowing down, 80-year-old local Neil Dougherty is just warming up! Currently in training to walk the 1000-kilometre Via Podiensis across rural France in May this year, he is testament that age is no barrier when it comes to following your dreams.

I

t’s not the first time the former physical education teacher of almost 50 years has tackled what would be considered a daunting feat for someone half his age. In 2008, at the ripe old age of 70, Neil Dougherty fulfilled a lifelong ambition to walk the gruelling Kokoda Trail and at age 77, he and his wife Michele completed the iconic Camino Francés across northern Spain to the Cathedral of Santiago de Compostela. Fighting fit and having just turned 80, Neil is ready for another challenge, when he and Michele take on another section of the Camino Francés walk in May. “I remember when the opportunity came up to walk the Kokoda Trail with some mates who were ex-Vietnam vets I jumped at it straight away,” says Neil. “I was excited about the walk but more importantly I had utmost respect and admiration for the Japanese and the Australians for what they did and they had

to do so lugging all their weapons for 50 miles. How they did it I will never know.” Despite being very well organised and having done his research on the terrain, Neil describes Kokoda as something you can never be truly prepared for. “I remember we were a bit late leaving Kokoda on the first day, so by the time we crossed the river, it was almost black, there was a torrent, the rain was pelting down and we had to hook ourselves to a wire to cross it. I remember hiking up hills and all I could see were the heels of the person in front of me. It was hot and sticky and we slept in tents in the pouring rain. “The first day when we crossed the rivers I would take my boots off, but after that, I just emptied them out, wrung out my socks, put them back on and kept going.” But it was an Anzac Day ceremony at Brigade Hill, that brings tears to Neil’s eyes as he describes the vivid memory.

“Brigade Hill is one of the final stops along the trek, and it sits on a distinct ridge of just 25 metres at its widest point. There were over 200 people. One of them carried the bagpipes all the way and there were three generations who were in the Air Force and the daughter sang the national anthem, it was so moving,” he says. Fast forward seven years and it was time to dust off the walking shoes and backpack, and in 2015, Neil tackled the Camino de Santiago, this time with wife, Michele in tow. “I remember Michele flicked me an email about it and then it kept cropping up everywhere,” says Neil. “They say if you are meant to walk the Camino it will keep hitting you in the face profilemag.com.au

until you do it. Neil plans all the walks to the nth degree, I just go along,” Michele says, laughing. “On that trip, we started with a visit to Gallipoli, then we did a boat cruise from Istanbul to Venice and unfortunately, I got really sick, so when I started the walk I wasn’t in good shape and the first stop is after an 850-metre vertical climb. “I got to the end of the first day and thought there is no way I can do that again tomorrow, so I got a taxi around the mountain and Neil continued the walk over the top of the Pyrenees, but I was okay after that and just walked at a slower pace.” It took Neil and Michele 45 days to complete the walk, averaging 18 kilometres

a day and staying in basic hostels along the way. “We didn’t go as part of an organised tour. We just walked with a backpack for 1000 kilometres,” says Michele. “We really enjoyed meeting people who were travelling on their own. I remember having a two-hour conversation with a chap from Germany and we communicated by drawing on a coaster, I don’t know how much we all understood but it was such fun! “I walked on my own because I was slower than Neil and I found I was in meditation mode most of the time. Neil used to have a Wallabies cap with a red poppy on it and he would leave that wherever he was so when I came into the next town I could find him.” Neil and Michele are currently back in their walking shoes, preparing for their next big adventure in May. “We are doing the next leg of the Camino, across France,” says Neil. “It’s about the same distance as the last walk, around 1000 kilometres, so we have started walking to build our fitness again. We did the leg work last time so we have to do the same for the next one. We didn’t do enough hills last time so we will be focusing more on that to be even better prepared.” So what’s next for these intrepid travellers?

No stranger to the pages of Profile, Nikki Fogden-Moore graced our cover in January 2015. The entrepreneurial game-changer has since cemented herself as one of the Sunshine Coast’s most influential leaders, which makes it fitting that she is our first Leading Lady of the Sunshine Coast.

W

hen I met with Nikki Fogden-Moore at her beautiful Mount Coolum beach house on a seemingly normal Tuesday morning, she could easily have been any professional working from home. But after a run down of her schedule; which included filming her YouTube channel, coaching clients, editing videos, writing articles for her regular magazine columns, meetings, and jumping on a red-eye trip to Melbourne that evening, where she’d be speaking and coaching at events; I realised this was no ordinary human – I was witnessing The Vitality Coach in action. “You’ve got 1440 minutes in a day and it’s how you divide that up and how you work on a daily basis that allows you to have winning weeks, masterful months and remarkable years,” she says, as I sit back in awe. This is just one of the countless ways of thinking that has made Nikki a sought after coach for CEOs and entrepreneurs

around the globe. After starting her career in global advertising agencies at a young age, she was regularly asked by her international clients about how she stayed so energetic, despite working long hours all over the world. That’s when she decided to share her tips with others. “I started coaching on the blend of personal and commercial, and healthy, wealthy, wise. And making sure that the CEOs and the executive teams were agile mentally and physically,” Nikki explains. For the next 20 years, and across several countries, Nikki fine tuned and perfected this coaching process, all the while juggling a nutrition degree, sporting events, personal training of clients, running her own athlete management agency, ad consulting, running retreats, and writing and training for Women’s Health and Fitness magazine. Nikki has gone on to write two books, Vitality and Fitpreneur, sold worldwide, with two more coming out shortly. She now runs a YouTube channel and podcast, and writes regular columns for The CEO Magazine, Australian Financial Review and Huffington Post. Nikki’s approach to her coaching is based on six pillars of ultimate vitality; administration and productivity, health and wellbeing, friends, family, me time, and giving back. “I specialise in working with people’s personal and commercial landscape. After separation, most parents want to make arrangements about which parent the children will primarily live with and which parent the children will spend time with and for how long. This is not always an easy exercise, and when arrangements cannot be worked out on an amicable basis, then that decision is left to the Federal Circuit Court/Family Court to determine.

I

t is compulsory for parents to attempt to resolve parenting disputes through mediation before commencing proceedings through the court, unless: • there has been child abuse or a risk of child abuse; • there has been or is a risk of family violence; • there is urgency; or • one or more of the parties are unable to attend mediation due to incapacity, for example, physical remoteness. Should you end up in the court system, the court will take the decision making out of the parents’ hands in respect to what is in the best interests of the child. There are a number of factors a court takes into consideration when determining this. The primary consideration is the need for the child to maintain a meaningful relationship with both parents while being protected from physical or psychological harm, from exposure to abuse, neglect or family violence. At times, the court will require assistance in determining the best interests of the child. A judge is not an expert in parenting and will rely upon various experts to assist, such as family consultants employed by the

court; child psychologists and social workers in private practice who are commissioned to prepare a family report; or psychiatrists (in some cases). If necessary, the court may order the appointment of an independent children’s lawyer to represent the child’s interests. An independent children’s lawyer does not represent the child, but instead is appointed to gather evidence regarding the best interests of the child to assist the court with making a decision. The court may ask for a family report to be prepared to give the parties some clarity in respect to the best interests of the children. Parents are often of the mindset that their own parenting skills are in the best interests of the children. A family report is often required prior to final parenting orders being made. It is important to remember that it is the child who has the right to know and be cared for by both parents. The child has a right to spend time and communicate with both parents on a regular basis. In the process of a parenting dispute, parents often forget that the child’s best interests are the most important factor. It is important to put aside your personal feelings about the other parent and focus on the child. Make an effort to sort things out together rather than going to court.

Enter Mask Events, the Sunshine Coast’s largest event planning company specialising in tailored weddings.

The most exciting day of your life can also be up there with one of the most stressful. From stationery, to catering, music, and everything in between, there are a million things to think of when all you really want is to say “I do” to your partner (then crack a bottle of champers). After starting out as a wedding photographer, Rebekah has developed over 15 years experience in the weddings and event industries. Her positive vibes and contagious energy built trust in her clients, who saw she had more to offer than just photography. “Quite often I took on the lead of a wedding planner if they didn’t have one. So I would sit with the bride and groom and plan their day and work out their timetable. Being in the industry you just get to know everyone so I was very good at being able to recommend different suppliers,” she says. In 2014 Rebekah and Domenic took over long time events business, Mask Events to provide an all encompassing solution for anyone planning an event on or around the Coast. The business has seen exponential growth since they took the reigns and Mask Events now employs a team of almost 20. They’ve built a community of creatives who love nothing more than coming together and providing a complete service for brides and grooms. Rebekah likes to think of Mask Events as more of a concierge service that brings a team together to produce an unforgettable experience. “We’re not just a styling company. We have the largest styling range on the Coast, but the fact that we’re an event management company means that we work with suppliers across Queensland, down into New South Wales,” she says. When travelling, I find the best way to immerse yourself in a destination is through food. Here are some of my favourite eateries in some of my most treasured places to visit – close enough for a quick weekend escape or an extended stay.

BYRON BAY

A visit to Byron isn’t complete without a stop (or two) at The Farm. Entertain the kids with farm tours and then grab a quick bite to eat at The Bread Social, dishing up freshly baked bread and pastries, or perhaps you’d rather indulge in a relaxing meal for breakfast, lunch or dinner overlooking the green pastures. Other popular eats are Woods Bangalow and their sister restaurant Folk, Harvest Newrybar, 100 Mile Table, Bayleaf Cafe, Combi, Treehouse on Belongil, The Roadhouse Byron Bay and Beach Byron Bay.

Queenstown, New Zealand Bespoke Kitchen and Vudu Cafe, both in the heart of town, and The Chop Shop Food Merchants in Arrowtown (20 minutes from Queenstown) serve up unique breakfast and lunch offerings, steering away from the traditional menus most of us have become accustomed to. Then for dinner, it’s impossible not to dine at Botswana Butchery, which always comes highly recommended from foodie friends and is perfect for a special occasion or indulgence on your holiday.

The most popular item on any Tassie itinerary is the Salamanca Market, with an abundance of fresh produce; just make sure you allow enough time to properly explore. For craft beer lovers, the Hobart Brewing Company has a great range of local brew on tap, which you can take home (the beers are canned right in front of you) or enjoy a beverage in the courtyard over a woodfired pizza. The best coffee in town is from hole-in-the-wall espresso bar Ecru Coffee, Pilgrim Coffee and Queens Pastry, which also serves tasty sweet treats, as does Daci & Daci Bakers.

Melbourne

Boasting one of the highest concentrations of coffee shops per capita on Earth, Melbourne knows a thing or two about coffee. My favourites are Brother Baba Budan and Sensory Lab Specialty Coffee, both in the city. For avid Instagrammers, you can’t deny the blueberry and ricotta hotcakes from Higher Ground, Top Paddock and Kettle Black, which are among my favourite brunch locations; as is Auction Rooms and Two Birds One Stone. Zumbo Patisserie and Burch & Purchese Sweet Studio are your go-to for designer desserts, and for more sweet eats, there’s Lune Croissanterie, and Mörk Chocolate Brew House.

Peter Kuruvita began his love affair with food in the traditional kitchen of his ancestral home in Colombo, Sri Lanka; so it is fitting that after three decades, the award-winning chef and restaurateur returned to his roots through cookbooks, television series and culinary tours.

A

plume of steam escapes from the wok as Peter Kuruvita raises the lid and swiftly slides out this morning’s traditional Sri Lankan breakfast – an egg hopper. “It’s a rice paper pancake made in a little wok and you set an egg in it and it’s crispy. The rice has been fermented with coconut water overnight and you make this thin pancake, but in the centre it sets like a crumpet, it’s stunning,” he says. Sri Lanka is a beautiful island off the coast of India, the size of Tasmania and home to 26 million people. It’s an abundant land of tea plantations, world heritage listed ruins and delicious cultural and culinary experiences – all assets which have seen it become a popular tourist destination. In 2011 SBS Food first aired Logiewinning My Sri Lanka with Peter Kuruvita, a revolutionary cooking series taking foodies into the heart (and kitchens) of Sri Lanka. Shortly after, Peter launched his own culinary tours, where people could experience the true taste of Sri Lanka’s melting pot.

“There is a sunscreen that is available in Europe and whenever I smell it it reminds me of when I was a kid. My mum had lots of German friends and when I smell it it takes me back to 1970s Sri Lanka, which was a massive tourist area then and it’s starting to become that way again now – last year it was voted the hottest tourist destination,” he says. “One of the things I really noticed then and after the war, when the tours started emerging again, is that tour guides travel this well-worn path, it’s quite deep.” Drawing on his local knowledge and adventures filming My Sri Lanka – paddling across rivers to reach a farmer’s house, staying in his 360-year-old ancestral home, and riding in a bullock cart; Peter created experiences to not only take you off the beaten track, but to help benefit the locals. “My tours are a lot about people, I’ve been collecting reading glasses (to take on the next tour) because on the last tour there was an old man sweeping the hay away from the rice and we stopped the bus and I called him on board and gave him

He couldn’t read the smaller font and then I gave him the glasses, I get goosebumps thinking about it, that’s the kind of tour I want to do,” he says. “The other thing is, we stay in hotels where the amenities are beautiful and are replaced every day, I tell everyone on our tours to gather it all, toothbrushes, toothpaste, razors, shampoo, moisturiser. GOURMET across the salt pan – the salt is white, it’s 40 degrees, and when you ask, ‘If I can get you anything, what would you want?’ the answer is, ‘Moisturiser please’. “I try and get people to start thinking about their travel and their trip as more – I’m going to give you good food, you’re going to stay in good hotels, but we’re going to meet real people and try and help them.” Given Peter’s status as a celebrity chef, the tours also have a strong foodie focus, where he navigates bustling market scenes and spontaneously brings the bus to a grinding halt, to allow passengers to explore rice fields. “There is Pettah Market in Colombo, where pretty much all of the food from around the country will come, and it happens every day. Around the outside are the wholesalers, guys who only sell chillies, onions, lentils, fish, all the dry goods, and the centre is like the farmers market, where everyday folk can go shopping, it’s great fun. And then every town has its own weekend market, called polla,” he says.

“Most people buy for the day and the markets are very important, yes they have a fridge but it’s for the leftover food for the next day, it’s not like us stocking the larder. Even spices, you go to the spice market and you buy a little bag of spices to keep it really fresh. “The market is a great way to start a tour because you show people what produce the country has and then we travel the country and pull it out of the ground from different places. Sri Lanka is abundant with tropical fruits and vegetables, they have 15 varieties of gourds/squash and 38 varieties of bananas.” As Sri Lanka is the mecca of Buddhism (Peter later tells me a story about the tooth of Lord Buddha being smuggled from India into Sri Lanka in the hair of a princess, which is now enshrined in a temple), their diets are richly vegetarian. “It’s very health orientated and we talk about Ayurveda a lot because when I was growing up, every single thing I looked at or put in my mouth was explained. My grandmother would say, ‘That’s a carrot, it’s very good for your eyes and has lots of fibre so it’s good for your digestion’. Why do you think there are curry leaves in everything? Curry leaves are a natural digestif which are very good for your body, as is ginger and chilli. And my grandmother would cook for us according to how we felt, if you had a fever you would never have any root vegetables which were heating, you’d have cooling meals, like green salads and mangoes, but you wouldn’t have green mangoes, you’d have ripe mangoes. So I try and touch on a little of that and explain it and then we start eating.

“We’ll eat Burgher (descendants from Dutch, Portuguese and British settlers in Sri Lanka) food and because the Dutch invaded Indonesia first, they use a lot of belacan (shrimp paste); then we’ll go to a Muslim restaurant and eat biryani, which was created by the Persians 5000 years ago; then you have Tamal and Jaffa food, which is beautifully spicy, and then there is the Senegalese food.” Having spent his formative years in Sri Lanka from the age of four until 12, Peter says his dad was a real adventurer, often taking him on road trips. “Our life in Sri Lanka was full of fun and travel and Dad was always going to new places and showing us new things and even now, I’m learning more and more about the history,” he says. “It’s important to be a good traveller, not just someone who breezes through and takes, takes, takes, if you stop to think for five minutes and understand them, you’ll go away being a much better human being and for me, that’s what travel is all about – respect the country, respect the rules, respect dress.” Returning to Sri Lanka feels like going home for Peter, who has recently taken on a tutor to improve his Sinhala. “I used to be fluent in Tamil, Sinhala, German, English but when we got to Australia in the 1970s, speaking another language or being from somewhere else wasn’t the best thing, so I told my parents to stop, which I regret now, but there was a reason for it,” he says. “I just love the buzz of the place, I know it and I love seeing it evolve, it’s changing, it’s moving forward.” This month, Peter returns to Sri Lanka for his tour with World Expeditions, and will host another in October. profilemagazine

When it comes to travel, our destinations of choice are as unique as we are. I caught up with the ladies over a delicious lunch at the Loose Goose at Twin Waters recently to discover their favourite part of the world and why.

Experiencing different cultures and soaking up the atmosphere of countries or cities other than our own opens our hearts and minds to new adventures and enriches our life in so many ways. Even within this vast land we call home, there are so many wonderful places to explore, not least our own backyard right here in beautiful Queensland. From the romantic cities of Europe to the majestic cultures of the Middle East, there are some destinations that just stick with you and hold a place in your heart forever. MORGAN: My favourite place is Nepal. I did a trek up to Everest Base Camp and it’s where I got engaged. The Himalayas literally take your breath away. It is incredible and emotional actually, you are just surrounded by these monster mountains. The culture is also amazing, the Nepalese are the most accommodating and loving people. LEE: I absolutely loved Venice, but if you are talking about an experience, it would have to be Amsterdam. I visited Anne Frank’s house and it was the most emotional experience of my life. It just broke my heart, her story was such a big part of our upbringing. To go inside the house and see where she lived was just amazing. The first time I visited Amsterdam it was winter so everyone was skiing on the canal. Just magical. CASEY: The Middle East. I was about

24 and it was such and amazing cultural difference. I loved Israel in particular. I loved the people and I loved the spirituality of it. Travelling in that area as a young woman was challenging, but such an adventure. It has extra special memories for me because I travelled with my best friend and she passed away in 2016. NIKKI: I have an eclectic set of favourites. Noosa has to be one of the best places in the world and I am proud to call it home. I love Queenstown, and Fiji – I have been going there since I was 12. My sister is married to an Italian so I spent a lot of time in Italy, and I lived in Amsterdam for 10 years. I have been moving constantly since I was eight. I also have a soft spot for Mill Valley in California and I love the beauty of Aspen. All of these places have a little piece of me. Although I think it’s important to enjoy and embrace where you are now and never compare. LEAH: I recently went to Queenstown and

it was just beautiful, so peaceful. I did a lot of firsts there too. I rode in a helicopter, did jetboating and photographed a samesex wedding on a cliff at Cecil Peak.

THE LOOSE GOOSE Located on the fringes of the Twin Waters Golf Club and boasting a wide timber verandah overlooking a tranquil pond with relaxing waterfall, the Loose Goose Restaurant & Bar at Twin Waters was the perfect venue to catch up for a leisurely lunch with the ladies. Revered for their relaxed friendly atmosphere and quality Europeaninfluenced cuisine, the Loose Goose offers an exciting and contemporary menu that caters for a wide range of tastes and appetites. Using only the freshest of local ingredients, where possible, each dish is made with love and attention to detail and this is evident on the plate. Exuding a warm and welcoming atmosphere, and offering both indoor and outdoor dining, the Loose Goose is a step above the average. Having dined at the venue a number of times previously, I am yet to come away disappointed with the food or service, which is always top class. On the day of our visit, the chef had prepared a special three-course lunch for the ladies, which really showcased the fresh, quality produce the restaurant is well known for. For entree, we enjoyed a choice of salmon cured in dill and vodka with dashi mayo and pickle salad or gnocchi of pea, orange and taleggio with porcini 78

crumb. Both dishes got the big thumbs up from the ladies and I can vouch for the deliciousness of the salmon. Cured to perfection, it was the perfect light precursor to the main meal. Mains included either crispy skinned barramundi with cucumber and tomato salsa, gazpacho, herbs and charred asparagus or braised lamb shoulder with hummus, crushed peas, quinoa and tzatziki. The lamb was some of the best I have eaten. Cooked for several hours, it literally fell off the fork and was bursting with flavour. Although the meals are of a generous serving size, I’m glad we left room for dessert, which for me, was the star of the show. The spiced apple pudding with vanilla ice cream, butterscotch sauce and raspberries was to die for, while the chocolate mousse with Turkish delight, lemon gel and salted caramel ice cream looked just as appealing. If the squeaky clean plates were any indication, both choices were a big hit. If you are looking for something a little naughty other than a traditional dessert, make sure you check out the restaurant’s cocktail list which they refer to as “liquid desserts”, a must-try for anyone with a sweet tooth. INGREDIENTS

• 3 tablespoons extra virgin olive oil • 1 fennel bulb, base and stalks trimmed, first outer hard layer removed, finely chopped • 1 large leek, white part only, finely chopped • 8 green prawns, peeled • 500g white fish fillets, such as snapper or blue-eyed cod, cut into bite-sized pieces • 3-4 chervil and/or tarragon sprigs • 4 ripe roma (plum) tomatoes, chopped • 100ml white wine (optional) • 16 pipis or clams • 1 handful flat-leaf (Italian) parsley, chopped • 2 large garlic cloves, peeled and crushed • 600ml fish bone broth, warmed (recipe below) • Salt and freshly ground pepper, to season

summery SEAFOOD STEW Heat the oil in a large saucepan over medium–low heat. Add the fennel and leek and cover with a lid. Cook for 10–15 minutes, stirring occasionally as the leek and fennel soften. Add the garlic and cook for a further 2–3 minutes. Increase the heat to medium and add the prawns, pipis, half the chervil and/or tarragon stalks/leaves and tomatoes. Add the wine and warm for a couple of minutes without the lid on. Pour in the broth and bring it up to a simmer. Once the broth is simmering, add the fish. When the pipis have opened up (an occasional one might not open, just discard), carefully spoon the stew into warmed serving bowls, and pour over the broth. Take care not to pour all the broth out right to the bottom as some grit from the pipis may have gathered at the base of the pot. Scatter over some parsley, chervil or tarragon leaves, add a pinch of salt and a grind of black or white pepper, and serve with crusty bread to dunk into the nourishing broth.

FAST FISH BONE BROTH MAKES ABOUT 2L

• 2 tablespoons extra virgin olive oil • 1⁄2 onion, peeled and roughly chopped • 1 leek, white part only, roughly chopped • 1 celery stalk, roughly chopped • 1kg fish bones and heads • A handful of mixed fresh chervil, tarragon and parsley (stalks and leaves) • 125ml white wine or 2 teaspoons apple cider vinegar • 1.5L filtered water This bone broth is so fast to make, and trust me when I say it is not at all ‘fishy’ tasting. Often fish heads give out the most healthy gelatine of all the bone types, with so little effort. Heat the oil in a large pot over a medium–low heat. Add the onion, leek and celery february 2018

and gently cook until the onion is soft. Add the fish bones and heads, crunching them down deeper into the pot. Add the white wine or vinegar, swirling around to reduce slightly and then add the water. Increase the heat and bring the water to the boil, uncovered. Once boiling, reduce the heat to very low so that the broth barely sends a bubble up to break the surface. Cook for about 1 hour. Strain into a glass container through a fine sieve or colander lined with a clean muslin cloth. Discard the bones but, if you wish, pick through the head to remove any of the flesh to eat. Cool, then store in the fridge for a couple of days to use as needed, or freeze. profilemagazine

“Explore the world, one continent at a time”, is not only my business motto, but a personal life goal. The more I see of the world, the hungrier I am! The irresistible twitch one feels to rove and explore the globe is wanderlust, but for me, travelling is a magnetic pull; an unseen force that draws me to the obvious must-do’s and the alluring, obscure fringes of the globe.

W

hile ticking off all seven continents is a fanciful ambition for many, reaching it only sets the bar higher. Conquering each new elusive landscape or far flung island only creates a thirst for another and an urgency to set off again. Over the years, I have trekked, sailed, sipped, soared, cycled, safari’d, and sat still in some amazing places; immersing in the surrounds and finding those quiet moments to really absorb the beauty, and the achievement is when the next inspiration takes flight. Watching the wildebeest great migration in the Maasai Mara gave wings to my ‘Wander-list’ and a new Attenborough-esque adventure to cross the Northwest Passage, with the beluga whale migration into Hudson Bay headlining the parade.

Perched high on a snowy cliff marvelling at the sheer expanse of Antarctica (the pinnacle seventh continent moment), a whim to conquer the North Pole was born, thus adding Svalbard and Franz Josef Land to the arctic daydreams. Watching brown bears fishing for salmon in Alaska arouse a necessary visit to their special brothers, the (Kermode) white spirit bears of British Columbia, Canada, and a seaplane flight to a remote fly-in fishing lodge for nothing but wilderness and luxury. And, a recent adventure visiting the cheeky monkeys of the Amazon jungle has me craving a rainforest safari to visit the elusive Ugandan gorillas. We were also able to enjoy a delicious bottle of red over dinner, thanks to a chauffeur-driven ride to the restaurant by Alan and a courtesy bus on our return. But for those who don’t want to leave the comforts of their cabin, and who could blame them, Alan and Aryna can arrange a gourmet barbecue dinner hamper so you don’t have to set a foot outside (bookings required). Having enjoyed a luxurious night’s sleep, we awoke to fresh warm croissants outside our door as promised, which we thoroughly enjoyed along with all the other goodies in our gourmet breakfast hamper including free range eggs, locally smoked bacon, tomatoes, Maleny Dairy yoghurt, several cereals, beautiful local breads, locally roasted fresh coffee, varied teas, orange juice and a selection of fresh fruit! But all good things must come to an end and after a decadent couple of days we reluctantly checked out of our secluded cabin and returned to reality, but not before enjoying one of Alan’s famous coffees he kindly offers guests free of charge during their stay. In fact, he tells me in the four years he has owned The Falls Montville he has made over 10,000 cups of coffee! We continued to enjoy the remainder of our lazy Sunday with a stroll around the vibrant village of Montville, which is just two kilometres away. THEATRE: ALADDIN The dazzling new production from the producers of The Lion King and Mary Poppins will wow audiences at the Queensland Performing Arts Centre’s (QPAC) Lyric Theatre in Brisbane from 25 February. IF I COULD DESCRIBE MYSELF IN THREE WORDS THEY WOULD BE…

loquacious, inquisitive, Cancerian. I WAS BORN IN… the heart of good ol’ Sydney town. Born and bred baby! MY FAVOURITE TRAVEL DESTINATION IS… the next journey I get to share on my travel site, Journeys to Come! I feel rude playing favourites and my bucket list constantly changes anyway. I like to always look forward to the NEXT adventure. ON THE WEEKEND I LIKE TO… be with my boys. Wake up to cuddles and

share a family brekky. Then whip down to the local market for a supply of fresh fruit and veg and an arm full of flowers to fill the house with. A bit of gardening maybe, whip up some Anzacs or packet muffins (I feel no shame) and then I’m happy to be guided by my family. If they’re happy, I’m happy. MY FIRST JOB WAS… out of school, it was as a researcher at BRW. I

couldn’t believe I could be paid to do a job I enjoyed so much. I promptly spent all my first pay on shoes. So worth it! IF I COULD MEET ANYONE IT WOULD BE… the person who for years was

at the top of my list was Jana Wendt, my idol, and when a friend arranged a surprise lunch between just us two, well I couldn’t wish for anything more. She was above and beyond all my expectations. Today, I love that everyday I’ll meet someone who’ll inspire me – a Felucca captain in Egypt, a Buddhist Monk in Bhutan; it’s one of my favourite joys of travel. THE HIGHLIGHT OF MY CAREER SO FAR HAS BEEN… longevity. It took me so long to get in, once I did I was so enthralled by those around me, people like Liz Hayes, Ray Martin and my beloved Jana. MY DAILY ROUTINE CONSISTS OF… I don’t really have one when travelling, it’s nuts. When I’m home, my son wakes me up with a cuddle, the world’s best alarm clock. After my shower I do five minutes of exercise and I hate every minute, then I always sit down for eggs as I can trust them to sustain me until midday. I linger at school drop off, it’s terrible but I love to chat to everyone. Then it’s full on power mode until school pick up. It’s freakish what I can get accomplished so that when I’m with my children they have my full attention. I love it, I’ve created through sheer bloody effort a life I love. MY MOST ANNOYING HABIT IS… I’ve sadly inherited all of my mum’s worst

traits. A shopaholic, who runs late and can’t do fractions. Oh the shame… 98
