It’s the big question on every woman’s mind – children or career, and with the biological clock ticking louder with every birthday, when exactly is the right time to make the transition?
T
his month I turn the big 3-0 and have delayed having children because I feel like I have this minute window in my life where I can afford to be selfish and focus on my career and enjoy my youth. But when is the right time to take that big step? I’ve been told by many that there never is a right time, there are always more rungs to climb on the corporate ladder, more places to travel on this earth, more improvements to make around the home, it’s a matter of weighing up what is more important to you at the end of the day. While I have a beautiful bounty of friends who have children, providing me with a glimpse into the future, I also have many friends who have chosen to wait a little longer – or perhaps may choose not to have kids at all, and that’s okay. It seems this is becoming a common viewpoint, with family-type projections showing the percentage of couples without children increases at a rapid rate over the next 20 years, while couples with children is predicted to decrease. According to the Australian Institute of Family Studies, this year 39.3 per cent of the population is made up of couples without children, rising to 41.1 per cent by 2036, whereas couples with children are at 42.4 per cent in 2016 and dropping to 40.2 per cent by 2036. One parent families are also projected to increase. Despite all of these changes to the

When it comes to planning for a family, women are also being more realistic about how long it can take to achieve certain goals and benchmarks in their chosen careers and they realise there is plenty of time to catch up, if not overtake, their colleagues when they return to work. And that’s certainly true, whether you
choose to return to work after a year, or opt to stay at home until your children start school. Modern technology is also making it easier for mums to work from home, so they can schedule certain tasks around family-time and essentially have the best of both worlds. “I
always wanted to be a doctor,” Doctor Siavash Es’haghi says with a sincere smile.
But for Dr Siavash, who grew up in Iran, it was nothing but a fanciful hope. That was until he decided to flee his home country at the age of 19 and resettle in New Zealand to study medicine. “I always dreamed of going to university, so getting that opportunity in New Zealand was a fantastic gift,” he says, “I appreciated the opportunity a lot more because it was given to me in a hard way.” Once he completed seven years at the University of Otago in Dunedin, Dr Siavash moved to Australia, where he discovered his love for radiology. “When I learnt more about radiology, I found that there’s actually a way of helping people through technology, through imaging, through identifying pathology and diagnoses – and that was fascinating for me,” he says. Trademark khakis, beaming smiles and constant media attention are part of the Irwin family’s fabric. But what is life really like for Terri, Bindi and Robert Irwin? Anna Rawlings reports in a raw, honest insight into Australia’s most famous family and their special bond.
ROBERT, TERRI AND BINDI IRWIN
A
n elephant family is a socially complex group; led by a matriarch and populated with females. Tigers on the other hand, are solitary, only bonding to mate. Male saltwater crocodiles play little role in parenting, while the female will go without food to protect her nest. Homo sapien, or human, relationships are just as variant. A family who knows this all too well are conservationists, wildlife warriors and arguably the world’s most renowned zoo family, Terri, Bindi and Robert Irwin, of
Australia Zoo – a mother with the heart and courage of a lioness and her young; a remodelled family unit following a devastating loss. “As I get older I can just see how strong Mum is, she is truly the strongest woman I’ve ever known in my entire life and what’s incredible is she is always there for Robert and myself,” says Bindi, 17. “She runs Australia Zoo, she keeps all of our conservation work going, and she’s also the greatest mother on earth. I hope one day to be half as strong as she is. Because you are, you’re the strongest person in the world,” she
says, turning to Terri. At 12 years old, blonde Robert adds, in an answer that’s a little more ‘boy-ish’, “sometimes we’ll go out and see a lion making a kill, other times it’s watching a bowerbird nest for three days straight and no matter what it is, mum is sitting by our side.” From being Robert’s “camera sherpa” on safari in Africa to cheering on Bindi as she competed in the 2015 season of Dancing with the Stars, Terri is all about her children. “When Steve and I decided to have kids we wanted to make sure one of us was

always there for them, so from the time they ‘hatched’ they’ve been coming on wildlife adventures with us,” she smiles fondly. “We just continued down that track and I think especially after losing Steve it’s really helped to be a close family and know we’re there for each other, through what we’re going through with our grief journey.” In 2006, tragedy struck when Terri lost her husband, and Bindi and Robert their father, to a fatal stingray barb. Shock at the sudden loss of Steve Irwin ‘The Crocodile Hunter’, founder of Australia Zoo, conservationist pioneer, wildlife expert and television personality, ricocheted around the world. “I think it’s interesting that I always looked at Steve as being the driving force and then when we lost him it was kind of terrifying you know, there was no one driving now,” she admits. “But then I started discovering we were more alike than I really thought, that desire to achieve what we were setting out to do was really in both of us, so while it was
“Steve became incredibly successful and that’s what you see today; 450,000 acres of conservation property throughout Queensland, our wildlife projects around the world, Australia Zoo, everything Steve remained true to … and I think that’s the work ethic of Bindi and Robert.” As well as the Irwin work ethic, and Robert’s striking resemblance to his dad, what other traits of him does Terri see in her children? “Bindi’s like Steve in that she’s really tough on the outside and tender on the inside, so like on Dancing with the Stars, she was dancing through damaged ligaments, blisters, sore shoulders and hips, getting dropped now and then … but always very
utterly terrifying there was never a moment when I thought we wouldn’t be continuing his work.” Since the loss of Steve, Terri has forged ahead, becoming an established business woman and showing incredible strength from raising the kids to such triumphs as protecting the Steve Irwin Wildlife Reserve from strip mining.

empathetic to the other celebrities,” says Terri. “I love that about her and Steve was like that as well, he could fall out of a tree or get grabbed by something and soldier on, but he was very soft on the inside. “And Robert’s so interesting because he’s ‘cookie cutter Steve’. Robert was two when we lost Steve so he wouldn’t have really been aware of how much he’s like him. He’s into photography, he’s into paleontology, all the things that Steve was into. “And you wonder is it nurture or is it nature … and I think it’s a bit of both.” This family, like any other, has its quirks, from Robert’s favoured pets – despite living in an exotic zoo he favours two pet chickens, Piggy and Fudgecake; to the only flavour of ice cream Bindi enjoys (Fish Food) and Terri’s five-weekly trips to splurge on a haircut and Ben and Jerry’s ice cream. “What you’ll hear most nights at home is Robert asking if we can play Monopoly, Mum telling me I’ve forgotten to unload the dishwasher and all of us just enjoying dinner together,” Bindi laughs. “And Mum started this amazing tradition just after we lost Dad, we started saying our favourite part of the day, every single day.” Despite just stepping off a plane from visiting their grandparents in Oregon, and recent cameo appearing on I’m a Celebrity … Get Me Out Of Here Australia, they are fresh and chatty, but after all, they’re used to the limelight. Terri reveals, “When Steve and I married, Steve said he wasn’t sure if he wanted to have children because his lifestyle was so active. So it was six years before we decided to have kids, Steve racing in the house one evening after ‘fire staring’ in the back paddock and saying, we’ve gotta have kids, who are we going to leave all this to? “And I said, you know just having kids doesn’t mean they’re going to be interested
in what you do. And he said, ‘No we’re having kids and they’re going to take over Australia Zoo and it’s going to be great’,” Terri remembers. In true Steve Irwin exuberance, he brought the film crew into the delivery room of Bindi’s birth, “we filmed the whole nine yards,” Terri laughs, while Bindi chimes in with “poor mum!”. “When Bindi was just six days old she came with us on her first documentary shoot, by 10 days we had her passport and were off to the States. And Robert was the same. They have that ability to look outside, to want to know how you’re doing today, wide-eyed kids with awareness and appreciation and I feel very blessed to have been able to do that.” Now approaching her 18th birthday, and having just received her P-plates, Bindi’s grown up in the public eye. At just eight years old, she delivered a moving tribute to her father in front of the nation, and went on to star in several conservation shows on US and Australian screens.
With adulthood on the horizon, Bindi says, “I’m looking forward to making my mum, dad and brother as proud as possible. I want to start tackling bigger issues such as the non-consumptive use of wildlife and our expanding human population.” The teen won Dancing with the Stars US 2015, despite admitting feeling “terrified” at being on the show, captivating audiences with her dancing skills and touching inclusions of her father in her freestyle performances. “My favourite dance is the one I dedicated to my dad at the very beginning and then at the very end. I was ready to let that journey out,” she says. Of winning the series, Bindi says, “It truly felt like the most extraordinary dream. Derek (Bindi’s dance partner) decided we’d have to put the mirror ball trophies in with the crocodiles. “It was so much fun working with Derek, we ended up naming a koala here at Australia Zoo after him, he came here to visit his koala and became a real wildlife warrior.”

Of course, Derek isn’t the only American with a place in Bindi’s life – her boyfriend is professional wakeboarder Chandler Powell, 19, who she met while giving him and his family a tour of the zoo in 2013. “I was like wow, this American guy is pretty great, so we ended up staying in touch and were great friends and it ended up blooming into something more,” reveals Bindi. “Chandler is terrific and I’m not sure who loves him more, me or my family,” she laughs. “Robert was stealing him yesterday saying, let’s go play tennis, let’s play football. It’s nice to have someone who really understands my world, he’s such a determined person who is constantly one of the kindest people I know. I think that I’m really lucky to have him in my life.” Bindi often shares snaps, including the couple watching sunsets and lemurs together at the Zoo, on her Instagram page, which has amassed more than one million followers. Despite her transparency, headlines speculating about the status of her relationship, swinging wildly from elopements to break-ups, constantly abound. “It’s easy to get caught up in social media and all these different things swirling around, so it’s important to stay true to yourself and surround yourself with people who genuinely are looking out for you,” says Bindi. Terri chimes in, “All I do is Twitter because I’m 51 years old and I’m not that groovy, but I can tweet, by golly!” “I might talk about conservation work we’re doing or what’s going on at Australia Zoo ... maybe more of a commercial feel than what Bindi does but I find people appreciate knowing what’s going on in our lives. It’s also hard to be mean in 140 characters! So people are generally pretty nice on Twitter. “And you’re just really good at focusing on positivity,” she directs to Bindi, before looking at Robert, “and you’re not old enough!” Yet while Robert isn’t old enough for his own social media just yet, he’s more than adept behind the shutters of a Canon camera. The budding photographer flicks through stunning shots of wildlife he captured while the family was recently in Africa. Robert undertakes distance education studies, and is currently two years ahead of his grade; perhaps living in a zoo has something to do with it. “It’s the most incredible childhood because our alarm clock is tigers roaring and lemurs screeching,” he grins.

Because home truly is where the heart is for these conservationists, with Terri never looking back since promising Steve that if anything happened to him she would continue his work. On reflection about what she and Steve originally set out to achieve with their family and the zoo, Terri muses, “about two months before we lost Steve, we sat down and did a 10 year business plan and that’s coming to fruition this year. Everything we set out to do and then some, has been accomplished so I’m extremely proud of that and I couldn’t be more proud of how my kids have turned out. “Robert’s photography work is just going from strength to strength, more of his work is getting published, so I think he’s going to
be a fantastic photographer. “With Bindi turning 18 I’m sure she’ll be having some adventures of her own but until then we’ll keep stoically travelling as a family.” And just like their dad dreamed, Bindi and Robert will continue the Irwin legacy. Bindi smiles, “to be an Irwin means to be as passionate as humanly possible, we are wildlife warriors, Dad first created that phrase for those who can’t speak for themselves, and it’s all about khaki as well!” Robert adds, “Khaki’s not just a colour, it’s an attitude. terrible twos After taking a break to raise two gorgeous children of her own, Grace Baker is now using her skills in the field of psychology to help struggling parents build better behaviours for their kids. Through her unique business, The Parenting Co, this mother is answering the call of families searching for sensible solutions from a sympathetic ear.
“I can’t believe he’s doing this,” laughs Grace, as her four-yearold son Lincoln smiles and poses for the camera. “He usually hates having his photo taken.” As a mother of two young children, Grace Baker has experienced the joy and mutual unconditional love the bond between parent and child brings first hand. She knows there is nothing more rewarding than parenthood. Yet Grace also understands that no matter how prepared you are, a child’s behaviour can be unpredictable. In this case, Lincoln’s typically shy demeanor transforms into fits of giggles as he shows off in front of the camera in an unusually photogenic display. But for the majority of parents, unexpected tears and tantrums are more likely to be the norm, and it can be hard for them to manage the situation in a constructive way. It is this common struggle that spawned the idea for Grace’s new business The Parenting Co, in which she draws on her studies as an undergraduate in psychology to help other parents shape their child’s behaviour. “Basically it’s support for parents who are having trouble with how their kids are behaving, for kids aged two to five,” explains Grace. “I’ve noticed a lot of parents struggle with day-to-day behavioural and discipline issues, and don’t really understand how their reactions impact behaviour.” No one likes to admit that their child has defeated them; however it’s a battle every parent is familiar with. Just look around at the mums attempting to talk their sulking toddlers down from a tantrum the next time you’re in the supermarket. “The idea’s been in my head for years. I have a psychology degree and halfway through that I had a break and had two kids. Then when I was raising them, I was using what I’d learnt and it was really useful. I remember thinking, ‘I’m so glad I have that knowledge because it really helped, but most parents don’t’.” Grace is also a registered practitioner of the Triple P — Positive Parenting Program; however The Parenting Co’s programs will be based on Grace’s own framework in order to both resolve situations and aid parents in the future. “My framework teaches parents to be calm, consistent and compassionate,” explains Grace. “I have a few different programs on offer. There’s a behavioural guide I can post out to parents and we can do an email
While every situation is different, Grace says a good plan of action is to be clear with your child to avoid any confusion. “If you start with really good boundaries and expectations of how they’re going to behave and they know that, it helps,” explains Grace.
be calm The first element of The Parenting Co’s framework is Calm, which as Grace explains, is important in communicating with your child. “In teaching calmness to parents, I provide techniques for communicating without yelling, which makes the child feel a lot more secure and prevents them from feeling threatened or overwhelmed,” says Grace. “A lot of the time if parents yell, the child just blocks it out anyway.”
be consistent This element applies to routine and discipline, which Grace makes clear are vital to a child’s understanding. “With discipline, if they do something wrong and you react to that, you need to make your reactions the same every time, otherwise they’ll just get confused with what they can get away with and what’s not allowed,” she says. The same goes for creating good practices, such as eating at set meal times and going to bed when told, with routine being one of the most effective ways of teaching children. If you are to have any chance of succeeding at creating a routine for your child, you must be consistent so there is no question of your authority.

consultation, or the one I think will be most popular is the inhome, month-long support with a personally tailored plan of what they can do to improve their child’s behaviour.” Grace’s relaxed approach and own personal experience with children is something she hopes will allay parents’ nerves about seeking outside help. “I don’t want people to feel like there’s a stigma attached to asking for help,” she says. “I know people can get nervous about seeing a psychologist or getting counselling because they think it’s embarrassing, but I want to get around that.” More than anything, Grace is looking forward to helping families tackle their problems head-on in a less stressful and more effective manner. “With most other parenting programs it’s very much a ‘one size fits all’ approach – that you go to a seminar and you sit down, and you’re not allowed to have your kids with you and you just get talked at. “But with The Parenting Co, I go into their home, their own environment, and I meet the kids. I see how they interact with each other and it’s a lot more personal. I develop a proper relationship with them and get to know them, then I give them a personalised plan.” Willing to travel all over the Sunshine Coast to assess and work with families, Grace’s unique, personalised and mobile idea has uncovered a niche that will help change the lives of parents who need it most.

Underwoods Fine Jewellers is a name synonymous with top quality craftsmanship and old school values. To celebrate 20 years in business, the iconic Sunshine Plaza store has recently undergone a stunning renovation, seamlessly blending the old with the new.

rom humble beginnings working from a tin shed behind his grandmother’s home in Parramatta to becoming one of the Sunshine Coast’s most respected family jewellers, Neil Underwood is just as passionate about his craft today, as he was when he started his apprenticeship at just 14 years of age.

The youngest of three sons, Neil and his older brothers showed an interest in the jewellery trade from a very early age and after qualifying in their individual fields, the trio worked together for many years making a name for themselves in Sydney before branching out on their own. Having enjoyed regular sailing trips from Sydney to the Sunny Coast in his “old boat” for 10 years, Neil and his New Zealand-born wife decided to call this slice of paradise home. And it wasn’t long before Neil’s well respected family name in the jewellery industry opened a door for him to establish another Underwoods store at the Sunshine Plaza in 1996. “We moved into the tiny store and set up with very little,” says Neil. “We just sat at our workbenches and made enough jewellery to get it going. “We deliberately stayed small and concentrated on the manufacturing so it was a gradual process. My motto is, ‘If you are going to do something do it properly’, and that has been our attitude all along,” he says. As their range of jewellery increased, so too did their staff and reputation as one of the Sunshine Coast’s best quality jewellers and it became apparent they needed to expand and renovate to take the business into the 21st Century. “We had 15 staff and were starting to fall over each so we decided it was time for an expansion and a change,” says Neil. “Being a little bit old school I wanted to retain a space that looked like a jewellery shop, yet with a touch of elegance and class.” The transformation is stunning. which was really difficult because it was all twisted. I suggested it would be easier and more cost effective for us to make her a brand new ring. But she then told me that it was what her husband had proposed to her with and he had since passed away. That copper ring was worth more to her than all the tea in China. So we did it. We inlaid it into the gold ring and recessed it below the surface so it wouldn’t wear away. The look on her face when she saw it was one I will never forget.” Underwoods is the only manufacturing jeweller in the Sunshine Plaza, a service Neil says is becoming increasingly rare. “Customers can actually sit down with a jeweller and design their own piece from start to finish, which is becoming like hen’s teeth these days. If you are going to leave your precious things with someone, you want them to be utterly rock solid, you want to know who is doing the work. Are they good at what they do or have they just paid lip service to it?” In such a fiercely competitive industry Neil says it’s their attention to detail and high quality of their work that sets them apart from the crowd. “When everyone was grinding rings right back and making them thinner and thinner, we did the opposite and everyone told us we were nuts but they have all gone and we are still here,” says Neil.

You can hear the pride in Neil’s voice when he talks about his craft, it has always meant so much more to him than buying and selling jewellery. “I have the best trade in the world because we get to make people smile. It’s not just buying and selling, it’s working at the bench and designing a piece that is going to make someone so happy. “I will always remember a lady who came in with a piece of twisted copper electrical wire she wanted inlaid into solid gold, may 2016

Louise Brown made world headlines as the first test tube baby when she was born in 1978. Since then, IVF (In Vitro Fertilisation) has given hope to millions of couples who otherwise would never have become parents. I chat with the Sunshine Coast “baby makers” helping turn dreams into reality for those struggling to fall pregnant and meet a special couple who has been blessed with a family they never thought possible.
F
rom the breathtaking moment you see the positive sign on the pregnancy test, to the first time you hold your precious baby in your arms, there is nothing quite like the lifechanging journey of becoming a parent. While many couples are fortunate to fall pregnant without assistance, for others it’s a much harder road, often filled with devastating lows and a rollercoaster ride of emotions. But thanks to the wonders of modern medicine and the incredible doctors, nurses, scientists and support people who are passionate about helping these couples through IVF, what would have been near impossible for many can become a reality. Speaking of passionate doctors, I was fortunate to chat with two well-known, inspirational obstetrician/gynaecologists, Dr James Orford (Fertility Solutions
Medical Director) and Dr George Bogiatzis. Together they have delivered thousands of babies to Sunshine Coast couples over the last 16 years, both through their individual private practices and their jointly owned clinic, Fertility Solutions at The Sunshine Coast Private Hospital in Buderim. When it comes to fertility, George has a special interest in PCOS (polycystic ovarian syndrome). Passionate about focusing on individual needs, he and his team offer a warm, relaxed and inviting approach, which allows patients to feel at ease and comfortable about asking questions regarding their health and treatment. Specialising in laparoscopic (keyhole) surgery and endometriosis, James has spent more than 15 years developing this surgical skill which can increase a woman’s fertility. He also teaches trainee specialists and

HOW DOES IVF WORK? In Vitro Fertilisation (IVF) is a process where an egg is fertilised by sperm outside the body. The technique involves monitoring and stimulating a woman’s ovulatory process, removing eggs from the ovaries and letting sperm fertilise them in a laboratory. The next level of IVF is ICSI (Intracytoplasmic Sperm Injection) whereby the sperm is injected into the egg for fertilisation. The fertilised egg is then cultured for two to six days before being transferred to the patient’s uterus. Professor Sir Robert Edwards, the physiologist who developed the treatment, was awarded the Nobel Prize in Physiology or Medicine in 2010.
invites specialists throughout Australia to attend his theatre sessions to learn innovative new techniques. James and George, together with fertility nurse specialist Denise Donati, opened Fertility Solutions in 2007 to provide Sunny Coasters top quality fertility treatment, and offer the largest group of highly trained fertility specialists under one roof on the Sunshine Coast. Not your typical fertility treatment centre, both doctors and Denise had a vision for Fertility Solutions to be designed with a cosy, home-like environment, where patients feel like part of a family. But that doesn’t mean they are not just as successful as their bigger counterparts in the capital cities. In fact, Fertility Solutions is accredited yearly on its results and overall practice – and must achieve or exceed results that are acceptable by the industry. “Our results are closely monitored and we are very proud of them, combine this with being a small boutique clinic who really care about our patients it’s a win-win for all,” says George. may 2016
“We entered the IVF industry when a lot of people were having to go to Brisbane for treatment, so it was great to be able to offer local fertility services,” he adds. “Being a small, self-owned clinic gives us the autonomy to meet patients’ needs

These changes mean that the one clinic can now offer patients a tiered structure of treatment options. “Our new intermediate low cost option allows patients to have their embryos transferred at a more advanced stage of development, improving their chances of pregnancy by up to 25 per cent based on our clinic results, in addition to this we also closely monitor our patients to determine when treatment timing is optimal,” says Denise. Importantly, patients can choose to be awake or asleep for the egg collection procedure. “Egg collections can be uncomfortable and you are limited to the number of eggs you can retrieve when a patient is awake. Being able to have this done in theatre enables the possibility of having more eggs collected in comfort, increasing the chance of having an embryo for transfer,” says James. It’s easy to get wrapped up in the science and the technical terms associated with IVF, but one glance around the many pictures of cute smiling babies that adorn the walls of the clinic, you are quickly reminded of why this
James nods his head in agreement, “It’s a very special thing to be part of. Our aim is to achieve a pregnancy for all, but this realistically doesn’t happen, so we hope that couples who end up without success feel they have also been looked after well and treated with compassion”. I leave my interview in awe of the work these incredible people do every day and that evening I hold my three children a little tighter before bedtime. They really are life’s biggest gift.

Coby and Brett Leahy On first impressions, the Leahys are like any other typical Sunshine Coast family-of-four. Baby Oscar lies cradled in the warmth of his grandmother’s arms, her eyes full of pride, his two-year-old sister Ivy is having an afternoon nap in her room. The floor is scattered with toys and the fridge covered with pictures of baby scans and cute family snaps. But this is no ordinary family, what these children’s parents have endured to create their little family is nothing short of incredible, their conception a miracle that without the help of IVF would never have happened. “I knew from an early age I wanted to be a mother above a high profile career or travel or a fancy house, those things could wait,” says mum Coby, who planned to start a family straight away with husband Brett, as soon as they were married. After seven months of trying unsuccessfully, the couple’s GP did some initial testing and referred them to a local fertility clinic. The couple initially underwent a procedure called IUI (intrauterine insemination) where the best sperm are selected, processed and IVY LEAHY

inseminated into the female’s uterus at the time of optimal ovulation. During her treatment doctors found cysts on Coby’s ovaries and she was also given the devastating news she had endometriosis. “It was an emotional rollercoaster,” says Coby. “I had to have surgery for the endometriosis, we did some things to improve Brett’s health and because we were so young they advised us to give it some time and try again naturally. “I remember these times were so hard for us as a couple, it really puts a strain on your relationship and everyone around us, all of our friends seemed to be falling pregnant. People would ask when we were going to start a family and I would fob it off by saying we were young and still had plenty of time, but it was devastating.”
A blood test the next day confirmed the pregnancy and their little miracle Ivy was born in January, 2014. “When we were handed our baby, the three years of trying, the blood tests, the ultrasounds, the surgeries, all of that just fell to the wayside and it was a whole new world. It was all so worth it,” says Coby, both of us welling up with tears at her recollection of that magical moment. Twelve months later, a second round of IVF delivered more great news, the couple was pregnant again, however in a cruel twist of fate, Coby miscarried at 10 weeks. “That was a big blow,” says Coby. “I was shocked we could have so much bad luck. We had been through so much already. We had told everyone our news and it was just devastating. It brought it home that one-in-

It was all so WORTH it.” After undergoing a second surgery, the couple decided to try the next level of fertility treatment – IVF. “We were lucky that the same clinic offered IVF that was affordable, so we started our IVF journey. It cut our costs in half and gave us hope,” says Coby. After an agonising two-week wait after their embryo transfer, the couple received the news they had been waiting on for three years. “We were allowed to do a home test on a certain day, but it was so hard to wait,” says Coby. “I remember waking up at 4am to do the test and it was positive. Brett couldn’t believe it, we were both crying and he kept saying, ‘but it’s a very faint line, are you sure!’”

Using a frozen embryo from that IVF cycle, the couple was blessed with their second little miracle, son Oscar born in February this year, and they couldn’t be happier. Watching him rest peacefully in his grandmother’s arms this beautiful baby is oblivious to what his parents have been through to bring him into this world, but one day he will understand and he will thank them and the wonderful doctors, nurses and scientists for giving him the miracle of life. he blushing bride’s heart races as she looks down at her bouquet peppered with peach avalanche roses, blue hydrangea and ivory snapdragons and takes a deep breath. “Are you ready?” Kelly Tilse says, catching the bride’s gaze, and slowly opens the polished hardwood door to the chapel. This is the moment Kelly and her family work tirelessly for, creating perfect moments for couples on their wedding day. But Kelly’s love of weddings stems from her background in floristry, which started at a very young age having been surrounded by a family of florists, who owned and operated the exclusive Patricia’s florists in Sydney’s North Shore, catering to many famous and well known socialites. Keen to follow in her family’s footsteps, Kelly went on to train at a private floristry school in Stockholm, Sweden, where she perfected her techniques and fed her interest in the profession. In 2007, Kelly opened the doors of her hinterland-based wedding floral design studio, Wedding Flowers in Maleny, which was a huge success. But as she met with brides before their wedding day, Kelly became increasingly aware that something was missing. “I kept hearing the same concerns from the brides, such as, ‘What happens if it rains, there’s no undercover area’, or ‘I really don’t like the décor, but I can’t change it’. And I realised there was a big gap in the market,” she says. So the search began for the perfect wedding location. And when Kelly and husband David happened upon a dilapidated Queenslander home in the picture-postcard Maleny hills, they knew their lives were about to change. “The views were to die for, but the building and grounds were extremely run down and in need of some serious TLC. But the decision was easy; we knew this was the place,” she says. And Weddings at Tiffany’s was born. Wanting to encapsulate a classic and timeless brand, the name was a chance occurrence. “The night before we were handed the keys, I happened to watch Breakfast at Tiffany’s and thought, ‘wow Audrey Hepburn is so elegant! This allows me to produce food in which customers undoubtedly see the difference in the quality, the freshness and the flavour.” Creating a sustainable and locally-integrated business is important to Kelly and David, who hope to keep Weddings at Tiffany’s in the family for generations to come. “Our goal is to ensure we hand over Tiffany’s to Jack and Harry and keep it in the family,” Kelly says with a warm smile. “Who knows one day it may even be our grandchildren at the helm!”

The number of children in foster care is growing every day, in fact, it has more than doubled Australia-wide since 2010. Right now, on the Sunshine Coast, there are more than 400 children living in foster care.

ridget Dyer had a “pretty sheltered” childhood, growing up with her loving mum, dad and two younger sisters in New Zealand, they moved to the Sunshine Coast when she was nine years old. “We’ve always been safe, we’ve always had a meal, we’ve always lived in really nice homes because my dad’s a builder,” she says, “but unfortunately that’s not the majority anymore and having that sort of sheltered upbringing is becoming more of a privilege, rather than an expectation.” As the owner and founder of Diamond Partners Wealth Management in Caloundra, Bridget works with young couples and families on a daily basis and understands the importance of making sure your children are not forgotten about — it’s about approaching your family’s welfare holistically. “As part of their whole financial/wealth protection plan, I am passionate about making sure people are insuring their kids as part of that,” she says. “The reason being, if something happens to your child it’s probably more financially detrimental than if something happens to you. The Pyjama Foundation was founded in 2004 and through the nonprofit organisation, Pyjama Angels are matched with a child in foster care, whom they visit every week to read books with, play educational games with and work on their numeracy skills. The money Diamond Partners Wealth Management raises will go towards training more Pyjama Angels, as well as purchasing books, games and puzzles for the children. Bridget will also hold a long luncheon on Friday, 29 July from 11.30am at the Wildflower Restaurant and Bar at Best Western Plus Oceanside Kawana Hotel, to raise additional funds for the foundation which is holding its Pyjama Day on 21 July. “I am hoping to be the biggest fundraiser they’ve had yet, that’s my target. I’d like to raise $3500, it’s achievable and that goes towards the work they do,” she says. “The Pyjama Foundation doesn’t get a lot of government funding, they rely on donations to keep it going. “They say it takes a whole village to raise a child and I think foster carers do an amazing job, so for them to have some reprieve and a bit of support is important.”

Rowling once said, “Rock bottom became the solid foundation on which I rebuilt my life”, and this statement certainly rings true for interior designer Jessica Goebel, who has shown incredible resilience in the face of adversity. Jessica had a very normal upbringing, with her mum, dad and three siblings. But when she was 11, her mum was diagnosed with terminal cancer and given just six months to live. Four months after the diagnosis, Jess’s parents were treated to a firstclass trip to London, after their local community banded together to fund the bucket-list dream. “Her lungs collapsed on the plane, so when she finally managed to get to London she didn’t make it out of the hospital; she died,” Jess says, still carrying the burden with her today. “That really fractured my dad, he went from being a normal guy to completely broken and the alcoholism took over. He never recovered and we were on our own.” Jessica, who was just 12 years old, took on the motherly role to her eight-year-old sister and younger brothers, aged two and four. “It was a couple of years of serious turmoil,” she says. “Every day going to school was a relief, but I was becoming a teenager as well, so rebellion started to kick in and while I was at home and so much was going on, I really struggled to conform and fit in, especially when I could see other kids coming from normal families. “It was so much of a burden to bear, the weight of his grief and the kids, and eventually it became too much and I had to leave – so I jumped out of my bedroom window one day before school and I never went back.” Jessica found herself homeless at the age of 14, bouncing between her friends’ houses and staying with people she’d meet along the way. At 17, Jessica fell pregnant and by 18, was a young mum; she was now responsible for another life and had to turn hers around. Being uneducated and unlicensed, it proved to be a difficult feat, but perseverance prevailed. “I worked full time on and off, trying really hard to prove to everyone I was going to be something,” she says. Jessica says there were a few key people she met who inspired her to lead a better life, the most pivotal was her husband Matt, who also encouraged her to reconnect with her dad. “He helped me see my father in a different light. He’s always said to me, ‘Your dad loves your mum as much as I love you and I can understand why he’s so broken because if I lost you I’d be the same’,” Jessica says through tears. “Matt helped me get educated and put me through private training. profilemag.com.au

“It’s been emotional having my own business, anyone who has their own business, hats off! “I love it because it’s all mine, I feel like it’s a part of me, like my kids are and my husband, and I can't imagine my life without it. “I didn't have a lot of control growing up, with what happened to me, but I have all the control of my business.”

I have a lot to thank him for, because he made me see that anything is possible with support.” While watching home renovation reality shows with her then-one-year-old son, Jessica says she realised she wanted to pursue a career in interior design. “I remember my mum used to always turn the house around, that was her thing, you never knew when you came home from school, what the house was going to look like,” Jessica says with fond recollection. “Because she was a stay-at-home mum and loved doing that, I didn’t know what it was, but it was instilled in me and then I grew up and realised there was a term for it – an interior designer.” Having completed a TAFE course by correspondence, Jessica then applied for a private interior design course, but says she still battled with the insecurities that had plagued her years before. “I felt like the perception of an interior designer was affluent, sophisticated and for rich clientele and I did not believe I was good enough to do it and almost felt stupid when I handed in the application,” she says. But Jessica went through with flying colours, earning high distinctions across the board and cleared out almost every award. The next step was university, but with her second baby on the way, Jessica took a different course of action – opening her own interior design business Issie-Mae,
With Issie-Mae and Jessica’s other business, CreARTive Cuddlies, flourishing, she has the capacity to give back and partnered with Ausmar and Wishlist Sunshine Coast Health Foundation, for charity project The House The Coast Built. Jessica was responsible for the interior design of the house in Flame Tree Pocket, which sold at auction for $505,000. All homewares and furniture also sold via online bidding and raised more than $20,000 towards the $304,000 in proceeds for Wishlist. Off the back of the project’s incredible success, Jessica has once again teamed up with the charity to design the paediatric wing of the Sunshine Coast Public University Hospital, set to open in April next year.

Barbara Lamont Jewellery designer, Montville
H
aving worked in the opal and jewellery industry for almost 35 years, Barbara Lamont understands the importance of creating a point of difference from other businesses. “In business, there are always leaders and there are followers. You can choose to be a leader if you make the effort,” she says. “There is no point in being in a small business in places like Montville if you offer what everyone can see in the big shopping centres. So we constantly endeavour to surprise and amaze our customers.” Hailing from Minden, in Germany, Barbara began working as a graphic artist in advertising marketing, before embarking on a year of travel when she was 28. But she got as far as Coober Pedy in Australia and fell in love – with opals and her husband-to-be Piet Lamont in 1982. Initially, they started mining as a hobby, but it turned into a full time business with Barbara using her talents as a designer to create their own jewellery range. In 1990, they opened The Opalcutter and fast became known as ‘the leaders in modern opal jewellery design’, both locally and overseas. After Piet’s untimely death in 2006, Barbara ran the business almost entirely by herself. In December 2007, The Opalcutter closed its doors in Coober Pedy. In that same month, Barbara married Edi Heide, and they went on to run the business from near Cairns, before relocating to Montville and reviving The Opalcutter. “The opal is a fantastic gem and truly representative of what Australia has to offer the world. I love coming up with new ideas for opal jewellery and like to experiment with mixing it with different gemstones along with varying the finishes of the items – showing the world how beautiful opal jewellery can be.”

or Jaey Powell, moving to the Sunshine Coast five years ago was the best decision he could have made for his career. Now the manager for newly renovated salon Hairworks in Buderim, the passionate hair stylist says he is in his element. With a career in the hairdressing industry spanning 22 years, beginning in Brisbane, Jaey’s skills in colouring, foiling, highlighting, style cutting and formal styling have taken him all over Australia and have seen him achieve amazing things. From placing first in long hair design, and style challenge, as well as earning first place and honourable mentions in the National Photographic Competition, to having his handiwork published in national magazines, his accomplishments are ones many in the industry aspire to. “The industry I love has taken me in many directions. That’s what makes it so much more exciting being part of the hair and fashion industry here in Australia,” says Jaey. It is his creative flair and fierce passion that saw him get noticed by some of the Australian industry’s biggest businesses. As part of Jinnali Australia’s first Indigenous Model Agency’s style team, he travelled the country styling hair for their swimsuit calendar. He has also worked in Adelaide for one of South Australia’s leading training academies in fashion, Lamoda, training students in the components of hairstyling for runways and studio photography, as well as window dressing and session styling for fashion editorial magazine work. Yet despite the accolades, Jaey says it is his current role leading the team at Hairwoks in Buderim that gives him the most pleasure. “I have found my place at Hairworks in Buderim. Being part of a great team and working with beautiful products, along with my gorgeous clients, makes a day at work not seem like work at all.”

GRANDPARENTS: Do they have rights to children after a family separates? SARAH QUILLIAM | PIPPA COLMAN & ASSOCIATES SOLICITORS

ften, grandparents will play a significant role in a child’s life. When there is a relationship breakdown between the parents of a child, this can sometimes pose difficulties for grandparents to continue to interact with their grandchildren in the same way they did before. A question commonly asked is, “What rights do I have as a grandparent?” The short answer is that grandparents do not have an automatic right to see their grandchildren. However, children have rights. Specifically, an underlying principle of the Family Law Act 1975 is that: “…children have a right to spend time on a regular basis with, and communicate on a regular basis with, both their parents and other people significant to their care, welfare and development” (such as grandparents and other relatives). The exception to this right is when such time or communication is contrary to a child’s “best interests”. For example, there may be some risk to a child by being in a grandparent’s care. Following separation, if both parents are spending significant time with the child, then it is generally expected that the maternal grandparents will see the child when he/she is with their mother, and that the paternal grandparents will see the child when he/she is with their father. However, this is not always the case when for example, one parent does not spend much time (if any), with the child. If an agreement can be reached between a grandparent and the parents as to when and how often they can see the grandchildren, then this can be documented in a Parenting Plan, or even Consent Orders. If there is no agreement, then the grandparent/s should attempt to mediate with the parents. Indeed, this is a requirement (with some exceptions) before proceeding to Court. Grandparents do have standing to make an application to the Court, seeking Orders relating to their time with their grandchildren. Sometimes, when one or both of a child’s parents is unable to care for the child, it is necessary for one or more grandparents to step in and care for the child. It is possible to have an Order made through the Family Law Courts to enable this. So while grandparents do not have any automatic rights, post-separation or breakdown of the family, it doesn’t necessarily mean they will have no contact with their grandchildren. Being the family issue, I caught up with the Blokes About Town over a delicious lunch at Green Zebra, Kawana for their take on how the role of fatherhood has changed since their father’s generation and how they achieve a work/life balance with both parents working.

These days, often both partners work outside the home resulting in dads having to chip in when it comes to doing their fair share of the domestic duties. But despite the fact that more women are bringing home a pay packet, with one-in-four claiming the status of the main breadwinner, research suggests women are still doing the lion’s share of the housework. So I thought it only fair to give the lads a chance to share their thoughts

Dads seem to be stepping up and are willing to do a lot of things that traditionally they wouldn’t have. scott: I came from a single parent home without a father, so my mother worked for as long as I can remember, she was gone before school and got home after I did. These days, I have the ability to see my young fella every day. Sometimes I drop him off to school or come home after school so I can spend time with him. I balance that by working at night when he goes to bed. I believe part of the work/life balance has come about because profilemag.com.au
we are so internet savvy and we can work from anywhere now, our ancestors didn’t have that luxury. lyell: I am the youngest of nine and Dad worked away from home so Mum brought us up. Dad always taught us we had to contribute. We had to iron and cook, otherwise we wouldn’t survive. I guess my children learned that from watching me, I would always help with housework and they did it too. My wife Maree still did much more than me and still worked and ran the household. profile: Are women still doing a larger proportion of household chores and childcare despite working outside the home? lyell: Yes I think so. Maree has always run the household. I just think she is doing such a great job I don’t want to ruin it! (laughs). It’s definitely in a woman’s DNA to nurture. I do have a nurturer in me but not close to what Maree as a mother, has.

Dad have been together 33 years, so they have done something right. craig: It’s interesting because I grew up in an environment like Chris. My mum didn’t work from the day they got married and my dad worked a corporate job. But interestingly I do most of the cooking at home. My wife Lynn works longer hours than me so I pick the kids up when she is still at work. So I’m probably 20 years ahead of my time! CHRIS SALES

scott: I agree. My wife Fiona is our chief operating officer at IBN Direct and does more in the Premier Speakers and Events business than I do, yet she still cooks every night and runs the house and cares for our son most of the time. chris: I think it’s different with the younger generations. I was raised in a traditional Catholic family where Mum was at home and Dad worked his butt off to put us all through private schools. I think this generation probably splits it down the middle more and perhaps that is because mums are also working. Although Mum and

chris: So that proves that it’s not always a generational thing then. adrian: I think there is just more of an equalisation of roles. Women have traditionally done a lot more than just their half. I know some guys work long hours but if you have to come home and do all the chores your wife has done, that’s a hell of a long day. Staying at work an extra three hours is a lot easier. Guys are chipping in more and that’s a good thing. My wife is enjoying having a balance of being at home and at work because stress at work is a completely different kind of stress to stress at home with kids. It’s only fair to do a bit of both. It’s heading in the right direction. profile: Do you have a good work/life balance? scott: I think I do. Better than I did when I was working from home. I would get up in the morning and walk from the bed to the
computer and start working until dinner time and then get back on after dinner. Half the time I would eat dinner in front of the computer and keep working. Now I make sure I play golf a couple of times a month. We try to get away for short breaks too and spend time as a family. We make it a priority. craig: I believe sometimes it’s quality versus quantity. Even when I was commuting to Brisbane daily, I would tear up the highway just to make it to a school presentation or something like that. That was always important to me. I knew I couldn’t be there all the time but the important thing is when you are there you have to really be there, be present. So often we are there but our mind is somewhere else. With technology I can be at work and send my daughter a text telling her I love her, 20 years ago I couldn’t have done that. adrian: I think it’s important to know when to switch off. We don’t work Sundays, no matter what is on. I really try to manage my week better leading up to the weekend and schedule my jobs so I can have the weekend with my family. In all honesty Sonja does most of the household stuff and is with the children the majority of the time but she really enjoys the balance of working in the store three days during school hours.

profile: Craig, as a life coach and mentor how do we find the perfect life balance? chris: I’m going to take notes because I definitely don’t have it. craig: Ok I am going to start this with, do as I say not do as I do! Two things. You have to set some goals because without setting goals you don’t have a focus. If your goal is to spend quality time with your kids or help out at home, you need that intent. But really it comes down to follow through. If you really want it you can do whatever you want to. In every moment you have a choice. It’s very simple in theory but putting it into practice is not so easy. chris: Yes I agree. A goal has to be tangible. I heard one recently, “I want to be rich”. That’s not a goal but five million in three years is. craig: You have to have a measurable goal too. You might ask yourself on a scale of one-to-10 where do I sit as a dad and where do I want to be? We have to set a measure as a benchmark. It can’t always be a dollar amount. I don’t know anyone who has achieved what they want without a goal and that applies as much when it comes to being a great dad, husband and friend.

Green Zebra prides themselves on supporting local suppliers and the eatery has become well known for its delicious modern Australian menu using the freshest local produce where possible. Every dish is prepared by expert chefs, who are passionate about delivering a sumptuous menu composed of simple and classic combinations. We enjoyed the premium lunch set menu; entrees included a choice of stuffed mushrooms with cream cheese, bacon, parmesan, garlic, shallots and parsley; arancini of buffalo mozzarella and smoked bacon, with chive sour cream; smoked paprika and sea salt calamari with harissa aioli and chargrilled halloumi with salsa verde and lemon. I can vouch for the stuffed mushrooms, which is a house favourite and judging from the reviews of the other dishes from around the table every dish was just as good. For main I couldn’t go past the pan fried potato gnocchi and wild mushrooms. Other choices included crispy skin free range chicken breast; slow roast Kingaroy pork belly, and wild caught North Queensland barramundi. Despite the generous servings, I could not resist the delectable desserts. The bowen mango sundae consisting of meringue, vanilla bean ice cream, mango coulis and roasted macadamias was to die for! I also had a sneaky taste of the Belgian chocolate brownie with chocolate fudge sauce, double cream and macadamia ice cream, which was wickedly good. Green Zebra is a fabulous venue for breakfast, lunch and dinner and an ideal venue for corporate events, birthday parties, engagement parties and weddings. Nundah is part of the highly-rated middle-ring precinct of good suburbs on Brisbane’s northside. It has appeal because of its affordability, strategic location and strong transport links.

Nundah, 12km north of the Brisbane CBD and 4km from Brisbane Airport, is considerably cheaper than neighbours Clayfield, Hendra and Wooloowin. It’s a part of the Brisbane Northside precinct which has led the revival of the Brisbane market. The strongest price growth in the Greater Brisbane area in the past 18 months has been in this precinct. Nundah is above average for the concentration of units (almost 70% of sales in the past 12 months have been apartments), the number of single people without kids and the percentage of households who rent. Only a third of households in Nundah are families and almost six out of 10 households rent their homes. This suggests it’s a good place to own affordable apartments rented to singles who want to be close to public transport, jobs nodes and major shopping. ost separating parents want an ongoing and meaningful relationship with their children. They will, after all, be parents for life. But what is the key to parenting effectively, while living in separate houses? Parents will often each have different ideas regarding parenting, but that does not mean that one or the other parent is wrong, they are just different. And the differences are to be celebrated – those differences provide the children with two separate, and not necessarily opposing, viewpoints. In order for a shared parenting agreement to work, these two people have to find a way to work with their differences. Firstly, children are very intelligent, they know when a weakness or difference of opinion appears in the approach being taken by their parents. Anyone with children will know they will play these two parents against each other to gain an outcome they see as beneficial to themselves. This play off isn’t overtly selfish. Very young children will, early in the break-up, state to both parents that they don’t want to go to the other. This has nothing to do with choosing one parent over the other. This break-up is very unsettling for the child, so the child may seek the exact same loving and caring response from both their parents to make themselves feel safe.

In a world where teens are constantly told they’re ‘not good enough’, Dawn Osborne has the tools and strategies to overcome low self esteem, negative self image, self harm and trauma of abuse, to build, shape and refine resilient, confident young women.
T
he last thing any mother wants to see is their teenage daughter or any young woman, objectify herself on social media to validate her self worth; and it was this rude awakening which prompted Dawn Osborne to fight back. “I started seeing half-naked girls in bikinis on social media and I know some of these kids, they’re 13 and 14, what are they doing?” Dawn says. “I started researching and found we’re over sexualising young girls – they might look like a woman but they’re still a young girl inside. “My question was, why are they doing this? Why do they feel the need to be doing this to get attention and it came back to low self esteem, they want you to find value in them.” With a successful business background in the health, fitness and beauty industries and drawing on her life coaching and counselling qualifications, Dawn is on a mission to help young women overcome low self esteem. “Self esteem are two words that are thrown around a lot out there, ‘She’s got low self esteem’, but what exactly is it? How did they get it and can we get out of low self esteem into a higher self
esteem?” Dawn says. “First, you’ve got to know your enemy and know how you got it, which usually comes out of a traumatic experience. I wrote a program that identifies what it is, how it operates in your life and how you can overcome it, how you can change yourself, it’s about value and self worth.” Dawn, who founded adolescent cosmetics brand Teen Skin, has helped thousands of young girls turn their lives around through The Seeing Beauty Foundation. “They come because they want to learn about self care, grooming and make-up, but my message to them is about their identity and their value and their worth and about how they see themselves – it’s about seeing beauty,” she says. “But not on the outside, it’s about seeing how beautiful they are on the inside and identifying their qualities and talking about fear. “These young girls who are growing up now, live in a very different world. Everything’s on their phones and it’s a constant message of ‘You’re not good enough’, ‘You’ve got to look like this’, ‘You’ve got to be like this’, and then you’ll be accepted – it broke my heart.” Over the past year, Dawn has been visiting Sunshine Coast schools and community centres, educating young girls, but says she was shocked at how bad some situations had become. “Some parents may not realise the implications, they don’t know the consequences of their kids seeing this stuff, but there are major consequences,” she says.

“I went out to a state high school and when I got there they had security and were in lockdown because there had been a major scrap between two groups of girls fighting over a guy on the internet, whom they had never met. “When I walked in they started getting the tables out because they might start throwing them around. That’s what’s going on in these schools! The girls are angry, they’re insecure, and when you’re fearful you’re in attack mode and you react to everything. “If I can help just one girl, my job is done.” Girls love beauty, hair, make-up and fashion – but often they are given the wrong message that they may not ever measure up. Food brings the family together, whether it’s a love of cooking in the kitchen with each other, passing down recipes from generations gone by, or sharing a meal. Delicious smells and tastes also evoke emotions and memories from as far back as childhood.
W
henever I taste or smell pfeffernusse (tiny spice cookies), I am reminded of childhood days spent with my grandparents; the mere mention of alfredo has me thinking of my sister and how we share a love for the cheesy pasta (but it has to be drizzled in tomato sauce!), chocolate and licorice bullets always remind me of my dad, and every time I have a chocolate chip cookie I think of my mum. Mum would often make chocolate chip cookies as a treat when I was a kid, and I always loved sneaking one from the cooling tray while they were still warm and gooey in the middle. It’s also interesting how certain recipes and adaptations to traditional meals are passed down from mother-to-child. Whenever my husband and I make pumpkin soup, he adds his mum’s secret ingredient – a green apple. It was something I thought to be strange before I tried it, but it brings a unique sweetness to the dish and now I wouldn’t make it any other way. I love what food means to families and the bonds it creates, the moments shared and the memories forever made.

MUM’S CHOCOLATE CHIP COOKIES Ingredients • • • •
1/2 cup caster sugar 1/2 cup brown sugar 175g butter 1 teaspoon vanilla essence

1 egg 3/4 cup plain flour 3/4 cup self raising flour 1 1/2 cup chocolate chips
Method Preheat the oven to 180ºC and line two baking trays with baking paper.
Place sugars and butter into a mixing bowl and mix
until creamy. Add vanilla and egg and mix again until well combined.
Sift the flours into the mix and stir using a wooden spoon, then stir in the chocolate chips until all of the ingredients are well combined.
Place teaspoons of the mixture onto the baking tray and bake for about 15 minutes. Cool on the tray for five minutes before putting them on a wire cooling rack.

s a mother-of-three, I can still recall every little detail of that magical moment when my firstborn was handed to me, like it was yesterday. Motherhood is without a doubt one of the most challenging roles you will ever have. Being entirely responsible for a tiny new person, guiding them through the trials and tribulations of life, witnessing their disappointments and their achievements and walking the tightrope of emotions during the prickly teenage years is a rollercoaster ride. But the pride you feel as you watch them develop into young independent people who are making their mark in the world makes it all worthwhile. Being a mother doesn’t end when your children grow into adults either. There are still times when you need the kind of advice that 82

only a mother can give and I feel blessed every day to have a mother who is always there to lend an ear and offer support. Mother’s Day is such a special day to stop and take time to thank those who have raised and nurtured us. To celebrate, Profile held a special VIP Ladies Lunch at the beautiful Flaxton Gardens with a bunch of local ladies to discuss all things motherhood, while being treated to a delightful high tea – and bubbles of course. We asked the lunching ladies to share their thoughts on what motherhood meant to them as well as their advice for mums-to-be. It was a memorable day, filled with lots of laughter, some tears and of course lots of new friendships were formed due to a common bond we all share and a topic that is close to all of our hearts.

Tam Wrigley: Everyday is Mother’s Day. Waking up every morning with healthy children is celebration enough. Sue Frost: A time to celebrate with my daughters and see them celebrating being a mum. Kim Maher: All of my children come to stay for the weekend. Usually my eldest son cooks a delicious lunch. Karin Littleton: We celebrate however mum wants to. Sometimes we go to Eumundi Markets and buy cheeses and bread and nibble for the rest of the day. Angela Williams: A day to be honoured and to honor the role and value of motherhood. Flavour of the orient Some things are too good to keep to yourself and Cafe de Orient in Palmwoods is one of them.
Located opposite the railway station in the Hinterland town’s old railway teahouse, the popular eatery is a firm favourite among the locals, and has gained a stellar reputation for its authentic Asian-influenced cuisine. Vietnamese-born owner and head chef Nam Do has trained with highly qualified Asian chefs and worked in some of Australia’s top hotels including the Hyatt Regency Coolum. Hailing from generations of restaurateurs, Nam branched out 13 years ago and opened Cafe de Orient after falling in love with the location. “I love the mountains and the leafy surrounds here, it reminds me of hometown in Vietnam,” he says. “The first time I saw this space it touched my heart.”
It wasn’t long before word spread of the restaurant’s delicious mix of Vietnamese and other south east Asian cuisine and they gained a loyal following among the locals who continue to dine there regularly. Nam had a personal health issue in 2015, which forced him to slow down for a period and focus on take away meals only, however he is now fully recovered and back where he feels most at home ... the kitchen. Nam’s partner is quick to voice her pride in Nam’s passion for cooking and love of his customers. “He found it so difficult to close the diningin part of the business but he continued to provide the take away option so his customers were not too disappointed,” she says.
“When you watch him cooking, you can see the fire in his eyes,” she says. “He is so happy to be back doing what he loves best and seeing his customers happy.”

It’s different now, watching the winter roll in. My childhood days were spent in Victoria in the Gippsland area and by the time May rolled around, I remember Mum would have me rugged up from head to toe before we’d make our way across town to my grandparents’, Baba and Diddi’s, place on a Saturday morning.
I
’d have known we’d arrived even if I was blindfolded. My Diddi was a proud Ukrainian, and spent hours in his garden. The earth smelt of compost, rich dirt, grass still wet from the morning dew and the air was always heavy with the scent of vine-ripened tomatoes. I remember jumping out of the car – gumboots at the ready, and rushing to help with whatever chore was being rolled out. I’d gently dig the potatoes out for Baba to make varenyky (potato and pastry dumplings). And just before winter really hit, we’d always harvest beetroot for borscht. These days, as mid-year approaches, my nose is never pink from cold, and I don’t have to put four layers on my top half before leaving the house. That’s the beauty of the Sunshine Coast, and why I’ll never leave. But what hasn’t changed is the way the start of winter brings in food I’d all but forgotten about; food that nourishes my soul. We miss some of the good stuff here – like horseradish grown from peelings tossed out the back door after dinner, and I can never seem to grow big heritage tomatoes like my Diddi – but the beetroot’s right at home on Sunshine Coast soil.
“Winter might just be made for RELIVING MEMORIES and eating the food you did when you were eight…” It smells just as earthy, and still partners beautifully with balsamic, honey, goat’s cheese and walnuts. It’s perfectly crunchy served as chopped matchsticks in a salad; pickled; or cooked down as a relish. Another of my all-time favourite winter vegetables is the humble cauliflower. Too often relegated to its place as soggy cauliflower cheese for Monday roast night at the RSL – this one’s a shining star all of its own if you’ll give it a chance. Best mates with truffle oil, simmer it slowly with just enough chicken or vegetable stock to cover, add lashings of cream and butter as you season and puree it into what’s set to become your new favourite soup. Drizzle with truffle oil to serve. These past weeks have been filled with tweaks and changes to my menus to suit the changing produce and I have to say; while I’m sorry to say goodbye to the summer sun, I do look forward to rugging up a bit as I tuck into some warm winter stews and homemade pies. And I’d like to forage this winter like I did as a kid. I’m yet to go mushroom hunting in Queensland, but I bet I could find somewhere if I tried. Winter might just be made for reliving memories and eating the food you did when you were eight, and gumboots. Winter was invented for gumboots.

fter our long extended summer the cool change is here and we start to crave those winter warmers. The aromas of slow cooked stews, earthy soups and winter cakes are filling the restaurant kitchens and Sunshine Coast homes. Comfort foods, that’s what the cool change is about. Start soaking your beans, lentils and chick peas, and roast your pumpkins before you blend them into delicious soups. Warm up your home with the oven heat and the love you put in your food. Just as seasons change, so does our local seafood. The pelagic fish start to migrate north with warmer currents and snapper return to our
shores. Molluscs like mussels and clams are full and abundant. It doesn’t matter if we put on an extra gram or two over the cool season, which by all means is rather short in our region. So spoil yourself and indulge in all those winter treats. Enjoy hot crusty bread, a large bowl of Chilean Mussels with a spicy bouillabaisse and a glass of chilled pinot. Or simply snuggle on the couch with a warm blanket, a hot chocolate and a Tim Tam bomb ready for an episode of Master Chef. It doesn’t matter what your cool change treat is, live a little and enjoy lots.
ChileAN mussels iNgredieNts
• 1 kg live black mussels • 1 onion, chopped • ½ cup shallots, chopped • 1 hot chilli, chopped • ½ cup basil, chopped • 1 bunch of coriander, chopped • ¼ cup olive oil • ½ cup of white wine • 1 400g tin tomatoes, chopped • 1 head of garlic, finely chopped • Salt and pepper to taste • Crusty bread rolls • Butter
method
On a large pot heat the oil, add onions, stir until light brown, add the garlic and chilli, stir for another couple of minutes (be careful not to burn the garlic). Add the wine and let it simmer for two-tothree minutes then add the rest of the ingredients except for the mussels. Simmer for around 10 minutes then add the mussels, give them a stir and wait until they are half open. Put the lid on and rest them for 5 minutes. Heat the bread and enjoy.

Peter Kuruvita has more strings to his bow than he can count, or should I say fry pans in his kitchen? Either way, there is a reason this culturally-diverse chef, with a career spanning 35 years, is being followed by budding chefs around the world – and it’s not just his charismatic cooking.
L
aundry hangs from windows and there is a queue stretching 200 metres from the butcher's stand, which claims to sell the best carne (meat) in the city. Up the road is a corn mill churning out masa (cornmeal) and fresh tortillas daily. Chef Peter Kuruvita stands against the bustling backdrop of thousands of locals buying necessities for their daily lives, arms filled with fresh tomatoes, avocado, dried chili and coriander. Here, at Mexico City’s Centro Histórico, the Australian chef has brought 14 cooks for his Mexican Fiesta Tour, sharing some of his and the country’s, cooking secrets. “I lived in Mexico for three-and-a-half months, learning and discovering the country and the local way of cooking.” The chef, restaurateur and media personality has become a household name for his rich and culturally-inspired cooking. His television shows, My Sri Lanka, Island Feast and Mexican Fiesta, are a tropical feast for viewers as he teaches all there is to know about the history and food preparation in

these unique destinations. Whether it’s an up-close look at how tortillas are made, to meandering through the neighborhood and tasting crisp masa patties called tlacoyos, stuffed with beans or cheese and topped with cactus, Peter knows all the good foodie spots. Peter and his family moved from Sri Lanka to Australia in 1997, after which time he says he had a hard time at school, where bullying was rife. “I found out it was legal in Australia to leave school at 15-and-nine-months and I told my family – all of whom were extremely successful academics, that I was leaving, school was not for me,” he says. Peter’s father told him in order to quit school, he would need to receive a school certificate and then get a job. “One day, Dad and I were driving down the main street (in the southern Sydney suburb of Mortdale) and he stopped the car in the middle of the road, looked at me and said, ‘you like cooking, right?’ I answered with a yes and the next thing he is telling me to go up to the restaurant and ask for a job!” “The restaurant was called Crabapple, it was a family-owned restaurant and the young chef who answered told me they were thinking about getting an apprentice, invited me in, passed me a knife and I started my first job cutting garlic bread,” he says. Within three months, Peter upgraded to cooking main courses, mastering knife skills and transforming dishes with new flavours and technique. In 1982, Peter finished his apprenticeship under the watchful eye of famed chef Greg Doyal. “I moved out of home by the age of 16-and-a-half ... I now look at my son and think, how did I do that!” The day after finishing his apprenticeship,
Peter went to India, backpacking for almost a year before moving to the UK for two years and working throughout London. “It was hard labour. I was beaten, abused, burned and all the rest. But I managed to get a job in a Michelin Star restaurant as well as some well-known spots, so my experience grew pretty quickly.” Upon returning to Australia, Peter took a job at a five star hotel on Hayman Island. He was then offered a job as head chef of a new restaurant in Sydney, Flying Fish, which became an icon in Sydney and in Fiji, for which Peter led the kitchen team as executive chef for eight years. Now living in Noosa, Peter travels with tours and works as a consultant for restaurants around Australia. “I am learning all the time, rubbing shoulders with different chefs and learning from them. That’s what keeps the food I do contemporary ... I love to watch everything evolve.

Iconic Australian artist David Hart is going from the Sunshine Coast to the United States, having just landed an exclusive contract for his art to feature in an American reality series. Yet, given the artistic Hart pedigree, the family could well be scouted for their own show as the third generation follows in their grandfather and father’s paint-splattered footsteps.

lready well practiced in the art of autographs – the glossy walls of the Mooloolaba Hart gallery are adorned with the trademarked work of four Hart family members, David and children, Jake, 23, Chloe, 21 and Harrison (Harry), 17 – this creative clan is a colourful cast. I’m catching up with David Hart and his glamorous wife Christine following their recent three-month art tour of the US, from the favoured bright colours in New Orleans galleries to the teal and white approach of Miami artists, poised with plans to further establish David’s art presence overseas. “We managed to get David into a large gallery in Fort Lauderdale, Miami as well as his work featured exclusively in a reality TV show in Miami,” reveals Christine. The reality show, The Jones’, follows a long-term couple on their way to the altar, and eight large pieces of David’s work will feature predominately on the walls of their home during filming in Miami. The Harts have been approved for a three-year VISA, issued under the noteworthy category of ‘famous person’, and are looking to split their future between their current home in Brisbane DAVID AND CHRISTINE and America. David exhibited at the New York Art Expo in April, and will exhibit at the Hamptons in June, with a US agent expressing interest in representing him, while the Australian Government Department of International Affairs is staying in contact with the couple after the success of their recent US trip. “What we’ve done from the start, since we got married, is come up with new concepts and carry them through. That’s 92

what we feel like we’ve done here, taking things to the next level, it’s another chapter in our story,” says Christine. “I was chatting to a local artist here on the Coast this morning. I was saying, be prepared to reinvent yourself, change things up and keep learning is really the key,” says David of the evolution of his work. The Hart family dynasty began with famed Australian artist known for expressionist painting techniques, Pro Hart, who starred in a popular Stainmaster carpet cleaning commercial, using messy foodstuffs to create his ‘Dragonfly’ masterpiece; an ad reworked to feature Harry, accompanied by a cameo from Christine. Then there’s David, Pro’s protege, whose accolades include his sought-after, vibrant depictions and conceptual works including being commissioned by Telstra to ‘live paint’ a masterpiece with gold-medal winning athletes Cathy Freeman and Geoff Huegill for the London Olympic Games. “What’s great about our family is that, and we never designed it to happen this way, they’ve all become a very big part of what we do, so Jake’s just created David’s new website, then Chloe does all the writing and promotions and Harry does our picture framing,” smiles Christine, sharing that the family also holds a strong Christian faith. During the US art trip, David wasn’t the only Hart to be inspired abroad – they were joined by Harry and Chloe, who was already in America finishing her creative writing university degree in Michigan. Now returning to Australia, David and Christine share that Chloe aims to be a novelist as well as managing a side business of editing and copywriting. Eldest son Jake, 23, is a senior graphic designer at a Brisbane company in addition to selling his art in the Hart gallery. And, “Harry finished Year 10 last year, at the moment he’s working for us and will start studying a graphic design course starting later this year just like Jake, so they are all very creative,” smiles Christine. The proud parents describe the various art styles of their talented offspring; there’s Jake’s industrial style, “modern/edgy, he does digital images so he will paint over the top of those so it’s kind of like digital art and paint,” explains David. Christine says, “Chloe started off painting like David, then she wanted to do her own style so she’s branched out, her last series she did on trees with this amazing background with colours and different techniques. “And Harry, who’s built his branding painting the dragonflies from the carpet commercial, he’s got some new ideas he wants to work on in the studio now.” profilemag.com.au

So when it comes to the Hart creativity gene, is it inherited or learnt, or perhaps a bit of both? “They were very creative, it was so natural, that they would create things out of paper, or cardboard,” says Christine of when the kids were young. “My dad showed me a few things here and there, I went down a similar line to him and then I branched out into my own thing. We just provided opportunity and then the kids discovered art for themselves – like, here’s the studio, I’m here painting, there’s paint here if you want a spare canvas,” says David. “I think another one of the key things we did with the kids is, we said you’ve got to get a diploma or degree in something other than art because you might decide down the track art is what you enjoy doing but not as a career.” Pro Hart passed away in 2006 when Harry was young, however David says that Jake and Chloe shared a close bond with him. Originally from Broken Hill in New South Wales, David and Christine met as teenagers, before moving to Brisbane first, then the Sunshine Coast in 2000. “We’ve been here in Queensland for 21 years, I follow the Broncos and the Maroons in State of Origin,” laughs David. Upon moving to the Coast, they successfully opened and ran two galleries in Mooloolaba and Noosa and David became a stalwart among art aficionados and in the industry, such as accompanying Brisbane Lord Mayor Graham Quirk on an international trade delegation through which he secured exhibitions in Asia. Yet, “People could look at our business and see fame and success and

think, those guys don’t really know what it’s like, their business is brilliant, but we’ve had challenges,” says David. They weathered the GFC storm when the luxury item of art wasn’t a popular commodity, diversified into art-inspired homewares and published books. In late 2015, the Harts closed the Noosa gallery and relocated to Brisbane. Currently, David is painting a series on the early Colonial history of Australia, as well as writing a complementary book. Both David and Pro’s work has had significant cultural influences, and it’s this interest in the history of our nation that reflects the work of his father Pro, and something that David says he will continue to honour. “We don’t have plans to move to America permanently ... we have a very strong family history here in Australia and some great branding we would never want to walk away from,” David adds. “Jake gets married in November to a girl from Melbourne who’s training to be a teacher in art of all things, so it (the family art lineage) will continue,” smiles Christine.
