It’s no surprise the home renovation shows in recent years have sparked a resurgence of DIY projects around the home, but what about the intricacies of creating bespoke homewares and artwork to make your house a home?

Maroochydore-based electricity supplier LPE proudly provides Southeast Queensland strata communities with cost-effective electricity, expert advice and a local in-house callcentre – pretty impressive for a Sunshine Coast start-up. Powering this innovative energy concept is chief executive officer Damien Glanville and chief operating officer Ben Chester.

P

ut simply, LPE sells electricity. Their core-business is focused on supporting strata communities and LPE has quickly established itself as the industry leader in electricity and utility supply. “We’re no different to a typical electricity supplier, except that we recognised that people in high density living were disadvantaged because they couldn’t adopt a renewable product to reduce their cost,” says Damien Glanville. “We wanted to save people money on their electricity bills and demystify what has become a very complicated market.” Hailing from Victoria, Damien worked in the stock food industry, before relocating to the Sunshine Coast seven years ago. Possessing an entrepreneurial mind, Damien created the concept for the Valdora solar farm and worked with Sunshine Coast Council to further develop the idea of using a renewable product as a hedging tool. Through the project, Damien met Ben Chester, a Gold Coast-based construction engineer with experience

in delivering energy projects all over the world. “That project led to us becoming a retailer (LPE), understanding how the retail mechanism really works and how you can apply benefit to consumers to make savings,” says Damien. Ben says throughout his years in the industry, he too had identified deficiencies in the retail space, particularly when it came to consumers living in strata communities.

“WE WANTED TO SAVE PEOPLE MONEY ON THEIR ELECTRICITY BILLS AND DEMYSTIFY WHAT HAS BECOME A VERY COMPLICATED MARKET.” With the uptake of high density living rapidly growing across Australia and a frustration from the public with the unscrupulous practices of multinationals, Ben and Damien saw an opportunity to disrupt the industry and launched LPE in 2014. “That’s been our mantra from the start – identifying under-serviced and under-facilitated spaces and creating a product for it,” says Ben. LPE services over 200 strata communities and networks on the eastern seaboard, from Cairns to Coffs Harbour, representing over 15,000 customers. But despite their biggest customer base being in Brisbane, LPE’s head office is in Maroochydore, where they employ 30 staff including an

insourced local call centre.

Interestingly, Ben says no other Australian energy suppliers are based regionally, and of the other two retailers registered in Queensland, one exclusively sells to industry and commercial customers, and the other employs eight staff onshore and 65 in the Philippines. “We’re trying to build a business here and our business model includes supporting local people. We have a satellite office on the Gold Coast and I can see us having more satellite offices to support the local position, but our head office will be here as long as I’m concerned,” he says. “It’s about being authentic,” says Damien, “We make choices based on our values; supporting local people and providing expert, transparent advice.”

Local radio presenter Sami Muirhead bought her Hamptonsstyle home five years ago on a whim PHOTOS PAUL FLETCHER at an auction. While she describes it as a lived-in family home, it’s still immaculately styled with beautiful art and an unmistakable Hamptons vibe. PROFILE: WHAT WAS THE VISION FOR YOUR HOME WHEN YOU BOUGHT IT? SAMI: The vision was to raise a bunch of

kids here and be close to the ocean and the river. As a kid I had a tinny and my brother and sister and I would head out for the day on big adventures or go for a boogie board in the ocean. I hope my kids have the same carefree upbringing.

PROFILE: WHAT IS HOME TO YOU? SAMI: Home is where my kids and husband

and dogs are of course. Home is calm in my perfect world. Unfortunately due to our busy lives, the house is often not calm and is never clean! I love this stage of life so much and would freeze time if I could, as I love having all my babies home under the one roof.

dining room table and I often spend hours decorating the beam with beautiful decorations to celebrate each holiday or special occasion. I hope my children have beautiful memories of these special events. My husband and I are also avid art collectors and we are lucky enough to have some stunning and vibrant pieces on our busy and full walls.

PROFILE: WHAT WAS THE APPEAL OF THE HAMPTONS STYLE? SAMI: White! White! White! The Hamptons

Based in Sunshine Beach, the aptly named Longhouse is the home of creative business owner Jaharn Giles and her partner Jason. The pair made the risky decision to share their architecturally designed home on Airbnb once they realised material possessions weren’t as important as their eight-month-old son Dusty and they could make a nice little income off the property to support their love of travelling with him. PROFILE: DID YOU BUY OR BUILD THE PROPERTY? JAHARN: My parents bought the 1000m2

block over 15 years ago with the intention of building here one day. But they have properties elsewhere and decided to sell the land to myself and Jason. It was a very generous gift and we feel very blessed to live here. We built our house in early 2017; it was designed by Majstorovic and built by our friends at Watt Building & Construction. We moved in when I was 30 weeks pregnant, so it was quite a busy and amazing time for us!

PROFILE: WHAT IS HOME TO YOU? JAHARN: Home is where we feel content.

We designed the house with our architect for the single purpose of filling each space with as much natural light as possible. Every room has large windows of varying sizes and is flooded with natural light, so even on gloomy, rainy-filled days, it feels light and bright. And this is what makes us very content.

time, make sure it’s always ‘Airbnb ready’. This means our house is always ready for any last minute bookings. We have sets of sheets for our guests and sets of sheets for us, so that helps with laundry. We have also created a welcome pack with all of the information we could think of that guests would need.

PROFILE: HOW WOULD YOU DESCRIBE THE HOME? JAHARN: Our home is one level and very

long, hence the name The Longhouse. It’s part-family, part-retreat, part-entertainer’s home. We have two large decks, one looking out over Sunrise Beach, and one deck out the back overlooking our native garden; both are perfect for entertaining. As our house is surrounded by natives, every window is framed by these beautiful

In 2014, Hayley Jenkins bought The Oxleigh House when her baby boy was just six months old. It was a fresh start for the single mum but soon became a creative project that helped support her business. PROFILE: WHAT IS THE HISTORY OF THE OXLEIGH HOUSE? HAYLEY: It’s a 1930s Queenslander that

was built by the original family who lived here; the Bennett family. All I know is that she had two little boys on her own and the room that is my studio room is also the room that she did her sewing in to make money. Mrs Bennett is sitting on my desk in a photo frame. PROFILE: WHEN DID IT BECOME A CREATIVE PROJECT? HAYLEY: Initially I just wanted it to be

pretty enough that I was proud of it. I wasn’t sure what my life was going to become. At the same time, my business Wholehearted Studios started growing so it’s now grown beyond this little room, now we’re doing overseas jobs. At the same time I’ve got a really nice house here and this front room has really beautiful light for photo shoots and things like that, which was all I ever really wanted.

I LOVE contemporary modern mixed with mid-century and I like the whole idea of weaving personal things with MEANING.”

but an equal tie is the ornate plaster ceilings and ornate picture rails. The stuff that Queenslanders are known for. PROFILE: DO YOU HAVE ANY TIPS FOR RENOVATORS? HAYLEY: Always expect a budget blow out.

Keep an excel spreadsheet with everything you’re spending so that you know you’re going to make the money back when you sell the house and you know how much you need to make back. Do your research on the tradespeople that you’re using. I’ve been lucky, but I could see how that could go wrong. Put as much as you can in writing and use pictures to show what you like.

GEMMA: It’s a place for inspiration; a

reminder to slow down and live life in the here and now. When you are inside my house you are always looking outside to the river or the mountains, it’s calming and relaxing living here. PROFILE: WHAT WAS THE VISION FOR YOUR HOME WHEN YOU BOUGHT IT? GEMMA: My vision was always to enhance

think it was a natural progression to find a home that stood with the trees and was surrounded by wildlife and greenery. I believe in decorating my house in what nature gives to us freely. I want to fill my house with memories and reminders of what’s real and what’s outside.

PROFILE: WHAT IS YOUR FAVOURITE FEATURE IN THE HOME? GEMMA: My windows. I love the view we

have from every window. We are always looking outside. The light that comes through in the evening is warm and makes the house feel so homely, I love that time of day. PROFILE: WHAT DO YOU PLAN TO DO NEXT IN THE HOME? GEMMA: To renovate the bathroom and

Having entered the real estate photography market in the era of film, Brad Filliponi has not only seen the industry grow into the digital age, he and his business partner Mel Myers are driving the next generation with an innovative concept gaining worldwide traction.

T

he sporadic rain and overcast weather is creating an unforeseen hurdle at our photo shoot with Brad Filliponi and Mel Myers. As Brad poses in front of the porthole leading into the upstairs pool, the incredible visual effect just isn’t translating through the camera lens. “We can edit these photos so you can see the water through the porthole, we can

also make the sky blue if you want,” says Brad, as he flashes a brilliant smile. At first I thought it was ironic, here we are meeting with these two entrepreneurs to write about their burgeoning business and have inadvertently required their services; but on second thought, it’s an example of them identifying an opportunity and capitalising on it – I am purely witnessing entrepreneurs at work. Brad conjured up the concept for Box Brownie five years ago, following a 15-year career as a real estate photographer. “I never really knew I wanted to do photography and fell into it. I wanted to do a TAFE course when I finished school and picked up a camera that was given to me, had a bit of fun with it and ended up working for one of the biggest photographers on the Coast,” says Brad.

“He specialised in weddings and was also the premium real estate photographer, nobody was doing it and he said it was a good thing to get into, a bit of a niche, so I built my network up. “I started shooting real estate photography on film, not many people can say that, that’s how long I’ve been in the game for. Now I’m at the forefront of this tech piece.” Shooting nine locations a day and editing late into the night, Brad was overworked and looked at outsourcing his photo editing; a scary step for a creative to take. Instead, he wound up building two prototypes of his own outsourcing service and soon met Mel, who has been responsible for the rapid evolution of the online platform. I started shooting real estate photography on FILM, not many people can say that, that’s how long I’ve been in the game for. Now I’m at the FOREFRONT of this tech piece.”

“It’s our job to make a real estate agent or a developer’s phone ring; with marketing, social media and websites, you only have a few seconds to capture your audience and if your image doesn’t pop, there’s a good chance they’ll be looking at your opposition,” says Brad. “We get sent images from all around the world, we’ve hit quite a few countries now which is really great for a little Sunshine Coast startup.”

In November last year, Box Brownie was selected to present at Inman Connect’s Startup Alley in New York, a week-long event introducing the world’s newest companies on the real estate tech scene. “People look to Inman as the go-to for what’s happening in real estate technology, if you want to know the future of real estate in America, you go to Inman,” says Brad. Given Brad and Mel are Sunshine Coast locals, they tested the market here in Australia first, before split testing with Australia, United Kingdom, United States and Canada. “We did some advertising in some of the different markets and the US had a much better response rate for the dollars and effort we put into it, so we pushed that barrier further and the flood gates opened,” says Mel. “Most of our business is now over in the US and as of August last year we’ve

family moved to the Sunshine Coast when he was nine years old. He then became Australia’s youngest university student, starting his studies at the age of 12 in statistics, computer programming and discrete mathematics. When Mel was 14, he started full time study and was part of the first intake at the University of the Sunshine Coast. “At school, I finished maths earlier and then picked up physics, and then picked up chemistry, so I was across quite a few grades. I didn’t technically finish Year 10 or Year 12 because you need a certain number of subjects and a certain number of years, so I had to finish my uni degree because I’m technically unqualified otherwise,” he says. Since the age of 17, Mel has owned and run a number of successful businesses in the technology sector. He has also created a number of applications including a search engine in 1995, an online driven manufacturing facility, accounting systems, and a warehouse management system. “I’m very much of the view towards taking existing or new systems and processes and making them as efficient as possible, but at the same time tying that into general business and making sure it all works,” he says. Brad and Mel offer editing services and skills that are wide and varied, from CGI rendering to enhancements including turning external property photos from day to dusk, and adding virtual furniture to rooms or removing unwanted clutter.

There are only so many people you can touch doing other forms of marketing, so when you do these conferences you have thousands of people.” Brad and Mel have booked conferences and meetings in the States every month this year. Just to give you a glimpse into their hectic schedule, two days before our interview they returned from a trip to California, Colorado and Las Vegas, Nevada, and in three days they’re bound for Florida. Seattle is also on the cards and they’ve been invited to Brazil by the owner of Remax. With a winning product on their hands, Brad and Mel are continuously looking for the next evolution, which Mel says is still within the outsourcing model, but branching outside of the real estate sector to offer a wider range of services. ay White is the most prominent name in real estate, in terms of reputation and success. Founded in 1902 with one real estate office in Crows Nest, Queensland, Ray White has grown to over 1100 offices, becoming a clear market leader across Australasia. Now, 116 years later, Ray White is still a family owned business, with strong commitment by third and fourth generation descendants, which has seen the brand become a household name, synonymous with the property and real estate industry, home loans, mortgages and insurance. Here on the Sunshine Coast, almost two decades of succession planning have taken place since Brian White approached Brett Graham in 1999, to grow the brand locally, starting with the acquisition of the Maroochydore and Mooloolaba offices. From the onset, Brett looked for aspirational people who would become successful business owners. Brent grew up on the Sunshine Coast, attending Immanuel Lutheran College, and completed a four-year apprenticeship before moving to Canada and the United States. Then in 2001, he returned to the Coast and launched into his career in real estate with Harcourts. “I had a great start in real estate, when the market was going through its last boom period and I quickly identified it was to be more than a just a job, it was to be a career with ownership opportunities in the future,” he says. An early highlight was being awarded Rookie of the Year for Australia and New Zealand. This prompted a move to Ray White 15 years ago, where Brent mapped a career with Brett and now Queensland CEO, Tony Warland. “I worked hard to become an elite performer in sales, an auctioneer and trainer. A promotion to joint

sales manager at the Maroochydore office enabled me to develop leadership skills and the desire to help our staff achieve their ambitions both at work and personally. “It’s been a great journey and equally fulfilling since becoming a business owner.” In 2010, Brent opened the Mooloolaba office, now a top 15 Queensland business, and two years ago brought in James as a business partner. “James and I share a common belief to create a legacy for our family and staff. Our network’s strength has been built around succession, we are confident we have future leaders in our business today who will help us to continue to build a business we are proud of. In June, we complete the fitout on our new Kawana office, with the doors opening for financial year; we’re very privileged to cover the diversity of property from Birtinya to Alexandra Headland.” Not only has Ray White brought Brent great success in his career, it’s also played a role in his personal life, with the CEO introducing him to his partner, Candice, three years ago. Candice works for Ray White Queensland, running their statewide training program.

Having been in real estate for 30 years, Brett brings an exceptional amount of experience to the brand. Starting in Cairns with four very active offices, he and his family moved to the Sunshine Coast in 1992, and then in 1997, Brett worked as a consultant in New Zealand, helping build the Ray White business internationally. But Brian White’s plan to further expand here on the Coast brought Brett back in 1999, complementing the Maroochydore and Mooloolaba offices with businesses in Noosa, Sippy Downs and Buderim, where Brett is now based. “When you’re building a business, you’re a teacher, you need to teach people how real estate works; then as your business grows people need certain skills and you become a coach; then you get to my age and you become a mentor, because we have a lot of people in business now under 25,” says Brett. “So you go through this teaching, coaching, mentoring skill level and sadly sometimes an elder! My role is to work with Justin in Noosa, Dan at Maroochydore, Brent and James at Mooloolaba and Michael at Sippy Downs

and I offer them advice as they grow their businesses.” Having been in the game for three decades, I ask Brett how the industry has changed over the years, to which he honestly replies, “It hasn’t.” “One of the reasons we have maintained market leadership is we still talk to people today the way they wanted to be spoken to five, 10, 50 years ago. It’s where people live, it’s their home, it’s where they raise families – language doesn’t change.” With a wife and three adult children of his own, and a suite of businesses drawing on his expertise, Brett understands the importance of leaving a legacy, and it’s something he is now turning his professional focus to. “I want to drive past in 30 years and still see this office here and know it’s just as good as it was before,” he says. “It’s more important to me that the next generation looks after this business than what it is for me now.” profilemag.com.au

Having grown up on the Sunshine Coast, Dan aspired to become a physiotherapist, attending University of the Sunshine Coast; but while in London playing rugby and travelling abroad he found out he hadn’t been accepted into the course and changed his career path. At the time, he was selling membership packages at a health club and on weekends worked for boutique real estate company, Hamptons, in Chelsea. At 22, Dan returned to the Coast and explored real estate opportunities, citing the ability to run your own business, where your effort was rewarded, as what lured him to the industry. He then met Brett through his surf club. “I was very naive as to what real estate was at 22, looking back I had no real comprehension of the significance of selling someone’s home and representing them

in the transaction, but I had discussions with Brett and landed a role at Ray White, Maroochydore in January 2004,” he says. Starting out wasn’t easy, but in Dan’s second and third years, he gained momentum and enjoyed some wins. But it was in the building and mentoring of a successful sales team that Dan thrived and prompted the transition into a sales manager role. Then at age 25, he had an opportunity to buy into the business and in mid-2008, signed the contract. “Don’t believe what you read about real estate agents knowing the market because we don’t – three months later, the GFC hit,” says Dan, revealing how the rallying of staff became a galvanising moment for the team. “It was probably one of the hardest times in the industry; we were constantly working may 2018

with owners who were losing money as the values in their homes declined. It was an emotionally tough time, but one that galvanised us as a business.” At the end of the GFC, Dan withdrew from selling to focus on auctioneering – his true passion, which has become his pseudo Saturday sport as he no longer plays rugby. It has also seen Dan help raise extraordinary amounts of money for local charities. “I love the live auctions and for me it was a really natural fit,” says Dan. “I remember getting my first charity auction, it was the first Sportsmans Lunch at Maroochy Surf Club. I’d been at the club for a long time and the president asked me to call an auction. I said, ‘I can come and call an auction, but I’m not licensed’. “That was my first experience calling charity auctions and I would have called 1000 auctions in the charity space before moving into the property auction space.” Business and charity work keep Dan very busy, which is why his Sundays are precious; often spent with his partner Shayna enjoying time with their families or just loving the Sunshine Coast. profilemagazine

James started his real estate journey with a traineeship with Ray White in Hervey Bay. After seven years in his hometown, James chased a challenge here on the Sunshine Coast. With a goal of owning his own office by the age of 30, James completed a marketing degree and took a GAP year to travel, before moving to the Coast, where he met Brett and Brent. “I wanted to give it a red hot crack and do it properly. So from day one it was head down, bum up, doing huge hours. My now-wife Emily was very supportive and was always there for the ups and downs that come with any new venture. Not knowing anyone on the Coast, I put in a lot of hard work to establish myself.” It paid off, with James settling on co-ownership of the Mooloolaba office a month before turning 29. “I always wanted to have an attractive business and have good people around me, and we have that; our people are well regarded in the community, well ranked by their peers and seen as market experts, I couldn’t be prouder. That’s why Brent and I are expanding and opening another office in Kawana, to replicate what we’re doing in

Mooloolaba, in what is an exciting and ever changing marketplace,” he says. “We have many young people in our business, they’re 17 and 18 and their potential is limitless. It is great to be a part of their growth, often morphing from timid, mild and meek to young people full of confidence, knowledge and passion.” This is a huge credit to James, who is the number one Ray White agent on the Sunshine Coast and in the top three selling principals in Queensland, a title he maintains while juggling the business and a nine-month-old daughter, Elsie. “Our group of offices reflect the greater Ray White business, for me, the big thing is it’s all about family. Despite the size of the business, the White family still treat it as a family business. There are over 1100 offices, yet they know so many of their people and you can tell they still care. “I got a text from Dan White, the CEO, around the end of financial year to check in and see how we’re going; phone calls to say, ‘How’s your new bubs?’ – they are not things they need to do, they just do it because they do care. “There is a lot of loyalty and that attracts the same type of people; people who are grateful for all the words of encouragement, all of the training, all the expertise that has been passed down through generations; we’re the custodians of it and it’s our responsibility to pass it down to the next generation.” profilemag.com.au

Justin is a familiar face on the property circuit, but music aficionados may recognise him as the bass guitarist of ‘90s Aussie indie rock band, Palladium. After recording a debut album and touring England, the band broke up in 2003. “Before we got signed to Warner Music, I was doing my degree in construction management at uni and then once the band broke up it was either go back to uni to get my degree or get a real job,” says Justin. A friend from school had started Place Estate Agents and encouraged Justin to join the team, which he did for a couple of years before being poached by Ray White a decade ago. Justin started selling property in Paddington, then the Brisbane prestige market, where he sold over $200 million in property. Boasting such success, Ray White CEO offered Justin a job as a business

It wasn’t until Michael was trying to sell his own home, that he considered becoming a real estate agent. Having owned a pool and spa business for 11 years, he joined the luxury car market. “In 2004, my wife and I were trying to sell our own home in Yeppoon and were frustrated with the local real estate industry. Given it wasn’t a difficult market to sell in at the time, agents simply weren’t following up or getting back to us after open homes and inspections, we were constantly having to chase them for updates. I loosely said to Tanya one day that I should quit the car industry and go and sell houses, maybe I could do it better. “I sold my first house in the first two weeks, it was a cash unconditional contract with a 14-day settlement, like many other new agents in this booming industry, I thought to myself, ‘How easy is this real estate gig?’, which I was soon to find out, wasn’t really – it was another six months before I sold the next house!” Wanting to be part of an organisation that valued its people and offered greater support, training, coaching and mentoring, Michael joined Ray White Yeppoon in 2007. Firstly, I want to as I love it and secondly I think it’s important for the principal to have a strong presence in the market and to have a hand in it, for the benefit of training my team and agents.”

1. KEEP POSTING CONSISTENTLY Most business owners only post on Facebook occasionally. That won’t bring in the big bucks. You have to do it consistently - at least three times a week. Only when you are regular with your Facebook posts will people get to know you and remember you. 2. USE VIDEO AS MUCH AS POSSIBLE Facebook recently decided their future was video. Mark Zuckerberg himself said that he wouldn’t be surprised that in a few years over 70% of Facebook posts would be video. In fact Facebook is encouraging the use of video by showing more of your followers your videos than your normal posts. That’s right, the Facebook algorithm actually rewards you for doing video by showing your post to more people.

Instagram has been growing rapidly in the last 12 months, very much at the expense of Snapchat. But you’ll need to be careful to use this medium successfully in the commercial space. 1. DON’T BE TOO PROMOTIONAL If all of your posts are just ads for your company, you won’t get many followers. You need to make your content fun, interesting and rewarding for anyone who looks at your Instagram page. Yes you can occasionally promote what your company does, but don’t be too obvious about it. 2. BE VISUAL Instagram is a really visual medium. Make your posts too wordy and interest will drop off. What photos or videos could you show that sell your company (with subtlety) without too many words? Short quotes are fine, but anything more wordy than that usually doesn’t resonate with the Instagram audience.

Pinterest is a smaller medium, but very popular with the style set. And because you only post pictures, it can be quick to do. 1. DON’T DEVOTE TOO MUCH TIME TO IT Most companies don’t need to post on Pinterest. The exception is fashion, travel and design based brands - Pinterest is perfect for you, as it’s all about the photos. Everyone else shouldn’t spend more than 20 minutes a week on adding to your Pinterest page. 2. DON’T BE AFRAID TO SHARE OTHER PEOPLE’S POSTS The most important thing is that your Pinterest page remains vibrant, dynamic and relevant to your company’s brand. If that means occasionally sharing other’s post on your page, then so be it. A nice balance is to have 80% your posts and 20% other posts that are beautiful, remarkable and in someway connected to what you are selling (or what your customer audience would enjoy). 3. REACH OUT TO FRIENDS ON OTHER SOCIAL NETWORKS TO JOIN YOUR PINTEREST It can be challenging growing your Pinterest audience organically. But you can push your growth into overdrive by reaching out to your friends on Facebook, Instagram and Gmail. Pinterest makes doing that easy. Just click on the Account Settings page and you can easily start following people you know on those accounts.

KEY TIPS FOR LINKEDIN For many business owners, LinkedIn will be their most important social medium, so it’s important to do it right. 1. KEEP YOUR PROFILE UPDATED So many people let this slip. Having an outdated profile not only makes you look disorganised, it will affect your search rankings within the LinkedIn network. Even if you haven’t changed jobs, look for ways to add extra information on your profile regularly, so LinkedIn sees that your profile is totally up to date and contemporary. 2. ASK FOR RECOMMENDATIONS It’s highly persuasive to your potential clients if they see that you have a whole lot of wholehearted recommendations from those who’ve dealt with you. Just reach out and ask your relevant connections if they would be kind enough to write a recommendation for you. (LinkedIn makes it easy for you to do so). Another good way to get recommendations is to write one for someone else, unasked. Often they will feel obliged to write one for you as well. 3. ADD A PHOTO TO YOUR PROFILE One organisation called The Ladders discovered that recruiters spend on average 19% of their time on your LinkedIn profile just looking at your photo! We can assume that potential clients will spend similar amounts. Like it or not, some people do judge by appearances, so make sure you have a quality photo on your profile.

KEY TIPS FOR TWITTER Twitter is quick to do and an effective addition to your other social posting. It should not be your main social media emphasis though.

1. ADD HASHTAGS TO YOUR TWEETS If you want your tweets to get noticed, add relevant hashtags that give your tweets context. Tools like Hashtagify and Rite Tag can help you find the right hashtags to use.

Both types get shared often when done well. For even more retweets, add a picture to the quote.

In an age where consumers are just as likely to purchase cheap homewares as they are to invest in quality pieces, Kim Wallace has found her niche. The mother-ofthree creates beautifully crafted ceramic tableware, which has captured the imaginations of home cooks and celebrity chefs alike.

S

tepping in to Kim Wallace’s home studio is, in a way, otherworldly. Paint splatters mark the timber floors, plates line the bench ready for glazing and Kim’s three young children run freely, clay in hand and wanting in on the action. Set on eight acres of untouched rainforest, you would be hard-pressed to find a more perfect location for a studio. Between the trees are glimpses of Noosa’s coastline, the turquoise water juxtaposed against the green landscape. This is home, and this is where the magic happens. For the past 10 years Kim, 38, has been running her own ceramics business. In that time she has gone from corporate graphic designer to working mother, juggling a growing business with raising three beautiful children with her husband, Greg. In her own words it’s “insane”, but well worth the sometimes-sleepless nights.

I was really missing that CREATIVITY, so I quit my job and decided to START my own thing.”

“Working from home is the only way I was able to grow this business and have three children in the meantime,” Kim explains. “There are always things you need to check on in the studio, and if that was away from home right now, it wouldn’t work for me.” The creative process of making ceramics is by no means a nine to five job. At night, when the kids are tucked in bed, you’ll often find Kim in the studio, flipping pieces over to ensure an even dry. Kim, a graphic designer originally from the Netherlands, has always been artistic. But it wasn’t until 10 years ago that she decided to focus on a creative outlet outside of her computer screen. “I was really missing that creativity, so I quit my job and decided to start my own thing,” she says. While she tried her hand at drawing,

painting and digital design, it was Kim’s ceramic tableware that really struck a chord with buyers – and what sets her work apart is its apparent simplicity. “I try to feature the clay and the glaze and not overdo any decoration, therefore making the food stand out,” Kim explains. “It’s minimalist in the way that just the shape and the way the glaze is applied that make the piece. That’s all it needs and that’s what I like about it. “Take the white on stone finish, the colour looks beautiful with things like figs and beetroot.” profilemag.com.au


Her dinnerware has not only captured the imagination of home cooks but some of Australia’s leading chefs, with Kim estimating she has pieces stocked in as many at 25 restaurants around the country. Aria Restaurant, spearheaded by none other than celebrity chef Matt Moran, uses Kim’s designs, as does Ricky’s River Bar and Restaurant on Noosa River. In an age where consumers are so often drawn to cheap, mass-produced homewares, Kim says there is still a demand for Australian-made designs. “There are still people who prefer $3 Kmart plates, and that’s fine, to buy a whole dinner set is a bit of an investment,” she says.

Kim has a range of collections, her most popular being the raw and organic Ebb Tide range inspired by her family’s move to the Sunshine Coast. In her newest collection, aptly named Endless Summer, Kim has shifted away from the neutral hues that dominated previous designs to embrace colour. She says she draws her inspiration from everything around her, including social media. “I look at everything; magazines, Instagram, pottery or even something unrelated, like flowers,” Kim explains.

I LOVE what I do, and if I didn’t love it I don’t think I’d be able to do it, as it takes up every SPARE second I have.”

“I look at it from a graphic design perspective, and how I can combine that with ceramics.” While she one day hopes to have her own retail space, Kim’s self-titled website is ever growing – she estimates she sells about 50 pieces a week, with orders coming in from as far as the US and even the Middle East. “I love what I do, and if I didn’t love it I don’t think I’d be able to do it, as it takes up every spare second I have,” she says. “It makes me very happy, and my home is the perfect setting.”

“But people who buy from me share that passion for both food and ceramics, and combining the two makes sense. “If you love cooking, plating up dinner for your family on a $3 plate might not work for you. It doesn’t work for me. If someone else has put a lot of effort into the plate, which matches the dining table beautifully, it’s really nice, it creates a full circle.” may 2018

EMAC Homes is a Palmwoodsbased construction company with a foundation built on family values. Headed by twin brothers Mark and Stephen Green, EMAC Homes is an ode to their families as much as it is a commitment to quality craftsmanship and beautifully constructed homes.

“T

he name EMAC comes from our kids’ names, Ethan, Madison, Amy and Chloe,” says Stephen. But that’s not the only way their families come into the equation. Third generation builders, Mark and Stephen, are married to sisters Lenore and Nicole. Lenore is the office manager for EMAC Homes, while Nicole works as receptionist and helps within the EMAC office where she can. With family businesses accounting for around 70 per cent of all businesses in Australia, it’s becoming more and more common to work together as a family unit. But the Green’s story goes much further than just running a successful family business together. They also occupy and work out of one residency in Palmwoods. That’s right, Mark, Lenore and their children Chloe and Madison, live under the same roof as Stephen,

Nicole and their children Ethan and Aimee. Lenore and Nicole’s parents are also occupants, while Mark and Stephen’s dad inhabits a self-contained neighbouring studio. The magnificent home was designed with David Villani of Kanvas Design in Noosa Heads, and built four years ago, around the same time they were establishing the EMAC Homes business. With cancer striking

the family four times in several years, it was important for them to all be together to support one another in a home that could cater to everyone. “We knew we wanted to have pavillion-style living. And we knew we needed our own space if it was going to work,” says Lenore. “So we came up with a big communal area and then to have breezeways with pods and pavilions for each family.”

The result is a stunning 1100m2 home on 15 acres of land with wheelchair access, a huge communal kitchen, 11 bedrooms and bathrooms, and two separate wings for each family, as well as a pool house/guest accommodation, and a wing for Nicole and Lenore’s parents. The end result is clever craftsmanship, which you can come to expect from all of Stephen and Mark’s home projects. While they admit living together is hard work at times, it makes for almost perfect communication and a stronger EMAC Homes team. “Living with 15 people in a house teaches you a thing or two about communication and listening,” says Mark, explaining it takes great communication to create a successful team and consider all their client’s needs. “The way we build our houses is how we would build our own. We don’t take shortcuts, it’s not all about price. We try to give our clients options and be flexible.” Before starting EMAC Homes, Stephen and Mark had a building franchise with their stepfather. “The things that we learnt while working with the building franchise was phenomenal,” says Stephen. “But there’s a lot of pressure to do multiple homes, supervise, displays. It’s never-ending and it takes its toll.” They decided they wanted to focus their energy on exclusive clients and custom builds, so EMAC Homes was born. “One day we decided that we might give it a go on our own,” says Lenore. “It made it a lot easier setting up our own business because we’d learnt systems and the basics of running the company.” The team now has a successful business built on strong family values and communication. They are able to create custom homes while providing exceptional one-on-one customer service at every step of the project; something they couldn’t do working for a large company. Lenore, Mark and Stephen all agree the EMAC Homes point of difference lies in their personal customer service. Their niche is middle to high-end homes, which Stephen says allows them to fully immerse themselves into each project from inception to completion. “It’s very personal for someone to build a home. And it can go pear-shaped really quickly. It’s all about details and communication – and trust is integral.”

EMAC’S TOP TIPS FOR BUILDING A HOME: • It’s a good idea to consult with a builder before you have plans drawn • Don’t limit yourself thinking you can only go to project builders. The benefit of using a smaller builder is they can offer a more personalised and guided service at a competitive price • Don’t be hesitant to approach your builder early on and forge a relationship with them. We spend three to six months, during the pre-construction stage, forming a relationship with our clients before we commence building • First home owners, do your research and don’t be afraid to go straight to the builder with any questions you may have about the process • It’s wise to add an extra five to six months to your timeline for the pre-construction phase

Pam Thomas is a woman who is driven to reach the pinnacle of success in whatever role she takes on. A true sales professional with a passion for property, Pam has mentored teams across various industries at local, state and national levels. But it’s her current role as sales and marketing agent at Ray White, Maroochydore where she has found her true calling.

“I

love real estate, always have, so to be working in the industry is my dream,” says Pam Thomas. Bitten by the property bug early in life, Pam was just 19 years old when she bought her first investment property in 1977 in Melbourne and so began her love of real estate. “I bought it on my own, when my husband was at work one Saturday. We had been looking in the area for a while but I thought it was out of our league. Then I was at a girlfriend’s and there was an auction going on at a neighbour’s

house. Although the property was valued at $48,000 they were selling for $29,000 if they had a genuine bidder, my hand just shot up in the air and I purchased it on the spot – then I went into meltdown,” says Pam, laughing at the memory. “I didn’t even have a cheque book, so I rang my mother-in-law who came down and wrote me a cheque from an account with no money in it, she was shaking like a leaf and I promised her I would go to the bank on Monday morning and work it all out. “We were six weeks off qualifying, but as luck would have it the bank manager said, ‘You are not going to believe it but this paperwork just came across my desk this morning, it’s called a bank card’. As it turned out it was the first credit card in Australia. The most you could get was $3000 and that was our deposit. We bought our first house on a bank card!” It was the first of many more investment properties this mother-of-two would add to her portfolio over the years, as well as climb her way to the top of just about every venture she set her mind to,

including running her own businesses and being a foster mum and volunteer. A self-confessed nurturer at heart, Pam began her career in early childhood and at just 25 years of age bought her own childcare centre, she also worked in disability services for seven years. “I did a lot of work with the deaf society on a voluntary basis so I was into saving the world and making sure everyone was nurtured,” says Pam. Having sold her childcare centre and living on an acreage property with her family outside town, it was only a matter of time before Pam needed her fix of the city life and she took a part-time sales job with a food merchandising company. It was here Pam discovered her natural flair for sales and it wasn’t long before she was promoted to national sales manager with the company. “I was selling bulk dried fruits and nuts profilemag.com.au

directly to the buyers and I got our product into every Coles, Safeway and BI-LO store in Melbourne and then we went national and installed the bulk dispensers you see in supermarkets today,” says Pam. Not one to rest on her laurels, Pam was also doing a horticulture course with the intention of one day turning her farm into a commercial venture and began growing roses as a hobby. “It became bigger than Ben-Hur. We were growing at such a rate I thought, ‘If I don’t know what I’m doing, I could get a virus through this crop and lose everything’, so I went back to college when my boys were in Year 9 and 11 and we would sit around and study together. It was a very successful business and we grew for a lot of the nurseries across Melbourne.” Due to a marriage breakdown, Pam was forced to walk away from the farm, her family home and her business and start a new life and career. But little did she know, answering a tiny ad for a job in the newspaper would be the path to yet another successful career. “I was shopping for a vehicle on a limited budget at the time and as a single female I had a shocking experience so I thought, ‘I’m going to find a job with a company car’,” says Pam. “I saw this little ad in the paper, with a company car and needing someone to start immediately and low and behold when I went for the interview it was at a car dealership! I thought I could have a big impact on how these guys deal with female clients.” Working her way up through the ranks, Pam became an area manager, then Cert IV trainer and conducted sales training across the country in the car industry. “I was sent to Queensland as state manager and was then promoted to the national role. I loved it but after six years of flying out of Brisbane every Monday and being in a different state each week, I decided I wanted to work locally, enabling me to spend more time with family and friends.” Having married Paul, a local Sunshine Coast man, Pam now resides on the Coast may 2018

and has bought a few local investment properties. In fact, it was a serendipitous meeting with her manager from Ray White, Maroochydore that led to her current role as a sales and marketing agent, where she brings a wealth of knowledge and experience to the team, and she is loving every minute of it. “I love it,” says Pam. “I work with Kayla Davis, who is also a selling agent, she is my organiser, the nuts and bolts, so we are a great team. “We seem to attract really good clients. You do a great job for people and you become friends and it gathers momentum, so we get a lot of referral work through word of mouth. “We recently won the Rate My Agent Award for Alex Headland and I also won a Ray White award where I was recognised as one of the top 10 agents for sales from Beerwah to Noosa, so I am pretty proud of that, it was a huge surprise.” Living the dream on the Sunshine Coast, Pam says she couldn’t be happier and it’s obvious that her nurturing and caring personality remains at the core of what this leading lady is all about.

DON’T JUDGE RAY KELLY UNTIL YOU HAVE WALKED A MILE IN HIS SHOES. AND NOT THE SHOES HE MAKES, HIS OWN SHOES. THE MAN BEHIND NEDZ SANDALS IS MORE THAN AN EXTRAORDINARY CRAFTSMAN, WITH A KEEN EYE FOR DETAIL AND QUALITY, HE IS A WELL-TRAVELLED FATHER-OF-FOUR AND KEEN SURFER WHO DANCED WITH DEATH FIVE YEARS AGO. THIS IS RAY’S STORY. Ray Kelly grew up on a dairy farm in Dayboro, a small town west of Brisbane. On school holidays, he and his family would visit Mooloolaba. It was here his love for surfing was born. At 13, Ray moved to Brisbane to start high school during the 1960s, an era which only further implemented surf culture into his heart and soul. “I feel so fortunate to have grown up in that surf culture age,” says Ray. “My mates and I would come up to Noosa for surf trips, but this was back in the ‘60s, when Noosa only had one shop in the whole town and a little dirt road.” After school, Ray lived the ‘hippie backpack life’, travelling from Indonesia to Southeast Asia, Nepal, Europe and New Zealand before settling in Byron Bay in the ‘70s. Living the dream as a young yet well-travelled Aussie, Ray was more than content to settle down in the bay to surf and make leather sandals. “It was a time where leather craftsmanship was huge. Everyone was making leather sandals, bags, belts – you name it,” he says. “It was an awesome job because you could pick and choose your hours. Surf in the morning, make a few sandals, then go for another surf. But by the ‘80s, the

fashion changed and I had to support my family, so I started building.” Little did Ray know a career move to the building industry would only benefit his sandal making skills years down the track. Ray says working in construction with the mechanical and engineering side of things has helped his sandal craftsmanship immensely. But it wasn’t his choice to hang up the building belt so soon. Like a powerful wave swallowing a lone surfer, Ray’s life turned into an uncontrollable wipe-out when he was diagnosed with cancer in 2012. For years his friends called him Ned (Ned Kelly) for no other reason than sharing the same surname. But Ray soon discovered another connection to the infamous bushranger – relating to the quote, “Such is life”. “Being diagnosed with cancer definitely makes you appreciate life a lot more,” he says. “The old saying, ‘Live life to the fullest’, couldn’t be more fitting.” Lucky Ray had seen the world, surfed many breaks and raised four beautiful children. He had lived life to the fullest, but he had more to give. And so he did. Ray survived his illness and went on to live his best life possible – making sandals and surfing. Back to where it all began but now living in Noosa, Ray spends his treasured days with his partner Denise, doing what he loves and selling his beloved sandals at The Original Eumundi Markets. Although this time around, Ray’s hands bring a whole new set of life lessons and skills to each pair of sandals, not to mention there are more colours to explore compared to the standard black and tan

leather he had back in the ‘70s. He also helps a lot of disabled people by custom making shoes to fit individual feet. Ray says he’s had all kinds of different feet walk into his stall at The Original Eumundi Markets. “I had one man come in with a size 12 right foot and a size 9 left. Another lady had one deformed foot, she had 20 operations but still couldn’t find a shoe to fit,” he explained. “It’s good because they can come see me at the markets, go have a coffee and a look around and come back and their shoes are made ready to go.” Every foot has a different journey. Whatever journey you have had or are about to embark on, Ray’s words of advice are simple. “Work hard and be honest. Be happy with what you’ve got and appreciate your health.” Take Ray’s words and go create your own journey. And why not walk it in a pair of Nedz Sandals? People often tell us that they want a ‘divorce’. This word is often used interchangeably by people who actually want a property settlement or a parenting arrangement. In fact, the process of divorce is quite different to a property settlement or parenting dispute and is treated differently by the courts.

A

Divorce Order will be granted upon application to the Family Court of Australia by one or both spouses, provided that some requirements have been met. Depending on your circumstance, it may not be necessary for you to go to court for your divorce. In Australia, we have a ‘no fault’ divorce system. The only ground on which a Divorce Order can be granted is when the marriage has ‘broken down irretrievably’. The court will accept this if it is satisfied that the spouses have been separated for at least 12 months prior to the date of filing the Application for Divorce. It is therefore prudent to make sure that the separation date is agreed, or it is at least agreed that it was more than a year ago. The court will not make a Divorce Order if there is a likelihood of cohabitation being resumed. If it has been less than two years since you were married, or if you have resided in the same home since separation, then you may have to satisfy additional requirements. In some instances a divorce can be done yourself by using the Do It Yourself Kit provided by the Family Court. We do still encourage legal advice before filing the application, especially if there are children of the marriage or if the

application has or will be filed by one spouse, because of the following: • If there are children of the marriage under the age of 18 years, the court might not make a Divorce Order if they are not satisfied that there are ‘proper arrangements’ in place for the children. • When an application has been filed by one spouse, there are additional steps that need to be taken to ‘serve’ that application on the other party. You do not need to have settled property to get divorced. However, once your divorce takes effect (usually one month and one day after your Divorce Order is granted), you have 12 months to properly finalise your property and spousal maintenance matters. If you have not done so within that time, the courts may not allow you to pursue a property settlement. I advise my clients to delay filing for divorce until their property/ spousal maintenance matters have been finalised. Divorce can also affect your Will. We recommend having your Will reviewed if you are contemplating divorce. We can assist you with your Will, divorce and all other aspects of family law. Did you know, only seven per cent of adults eat the recommended five serves of vegetables per day, while 57 per cent are eating the recommended two serves of fruit a day? HOW DO SERVINGS WORK?

A serve of vegetables is about 75g or half a cup of cooked green or orange vegetables; or one cup of leafy greens or raw vegetables. For fruit, the standard serve is about 150g or one medium size piece of fruit, such as an apple or orange; or two small apricots or plums. HOW HEALTHY ARE FROZEN VEGETABLES?

Frozen veggies are usually picked in their prime and snap-frozen very soon after harvesting, so as well as being convenient, they are full of the same nutrients as fresh vegetables. SHOULD YOU GIVE UP FRUIT TO LOSE WEIGHT?

Fruit is abundant in vitamins, minerals and phytochemicals, with evidence increasing that whole foods are more effective in reducing the risk of cancer than specific vitamin and mineral supplements. Most fruits are low in may 2018

Also, while we will feel full after eating one or two apricots, it’s not going to be the same after one or two dried ones. Fruit juice is often perceived as healthy, but has no fibre and is high in sugar. Store-bought fruit juices can contain just as much sugar as a soft drink. If you love your juices, blend at home instead; just stick to a small handful of fruit and include vegetables. The Australian Good Food and Travel Guide is Australia’s first national restaurant, accommodation and travel guide, and was released in 1979. Inspired by the Michelin and Gault Millau guides of Europe, it was originally named Guide Bonvoyage. In response to market research, the name was changed to the Australian Good Food & Accommodation Guide in 1984 and later again to the Australian Good Food & Travel Guide. AGFG inspectors keep their identities confidential and give a score out of 20, rating establishments on the food alone, the six criteria being ingredients, taste, presentation, technique, value and consistency.

Michelin Stars

The Michelin brothers, Ándre and Édouard, started the Michelin Guide in 1900. Having started a tyre company 11 years earlier, there were only about 2200 cars in France, and the brothers wanted to encourage people to drive more, and would therefore need new tyres more often. They initially gave out guides that cataloged hotels, mechanics and gasoline vendors throughout France, before expanding into fine dining in 1926. Colin Fassnidge knows a thing or two about drumsticks – and I’m not just talking about the poultry kind. The Dublinborn celebrity chef, known for his bold take on nose-to-tail cooking, also has a penchant for drumming, to the extent he almost made a name for himself as a musician instead.

“E

llie, Ellie, come here,” Colin Fassnidge calls out, his thick Irish accent cutting through the ocean breeze. Fresh from a dip at his local, Malabar Beach in Sydney, with dalmatian Ellie, it’s no surprise Colin has presented at the Noosa Food and Wine Festival four times already – being such a big fan of our stunning coastline (and fresh produce of course!) The Dublin-born chef trained under the legendary Raymond Blanc at England’s Le Manoir aux Quat’Saisons, before moving to Australia in 1999. For 10 years, Colin held the position of executive chef at Four in Hand, where his creative yet refined take on the nose-to-tail food philosophy (using the entire animal and reducing food waste) turned the unassuming pub into an award-winning dining destination. But it’s his second venture, 4Fourteen, which has seen Colin’s two loves collide – food and family. While the menu reimagines the family meals of his youth; his wife, Jane and their two daughters, eight-year-old Lily and seven-year-old Maeve, are familiar faces at the restaurant. Despite Colin’s reluctance of being considered a celebrity chef, his regular appearance on Channel 7’s My Kitchen Rules has afforded him such a title, along with the successful release of his cookbook Four Kitchens, a culmination of his fine dining recipes from Four in Hand and whole animal dishes from 4Fourteen. Ahead of his appearance at the Noosa Food and Wine Festival this month, we catch up with Colin to learn more about his food philosophy, family and favourite things.

COLIN: Yes, or a drummer, or a zoo

keeper. And I was in a band, so was everyone else in Ireland, we did quite well, but so did everyone else who was in a band. (I still play) I have a kit in the garage.

My eldest daughter eats everything and she’s a legend, sushi, everything, raw fish and the other one will only eat pasta with very little sauce, so we have one that eats nothing and one that eats everything. PROFILE: DO THEY DO MUCH COOKING AT HOME? COLIN: Yeah they help, but they don’t

want to be chefs. They’re interested and they come into work and make gnocchi for dinner. They know where all of the ingredients are from, they grow stuff in the ground to eat, but they don’t want to be chefs. PROFILE: WHAT DOES A TYPICAL DAY IN THE LIFE OF COLIN FASSNIDGE LOOK LIKE? COLIN: My wife gets up first, she’s usually

up at 5.30am for the gym or yoga; then the kids get up, they get themselves dressed and breakfast, then Jane comes home and I get in trouble cause I’m still in bed and the kids are arguing over milk or cereal or something and I get the blame! We usually walk the kids to school as we are close, and then head for a coffee and catch up on what’s happening that day (a morning meeting some would say) or we sit, read the newspaper and say, ‘Great catch up!’ I usually take the dogs out and have a swim, answer emails, do recipes and follow up with suppliers on things that are in, coming in or heading out of the market. Jane heads into the restaurant and does the office things, one of us will do school pick up and sports drop off, I’ll make dinner

was still coming up (through the culinary ranks), I’d only started to do well and I got invited, so I was quite impressed. I’m walking into the Mantra and I can see the best chefs in Australia, all in one little area and everyone’s so friendly, it was good coming together. It’s like chefs who are on holidays and they’re all happy and there’s no stress, you eat dinner and it was a joy to be there. I think that’s what it was, there’s a good camaraderie from all of the chefs from all around the country. It’s the scenery and the setting as well, and the weather! You can’t get better than that.

PROFILE: WHAT IS THE BEST PART OF YOUR JOB? COLIN: When the restaurant is busy, like

the place is packed, maybe on a Saturday and people are coming up to you and saying how much they enjoyed it, that’s the best part.

because I’m always in trouble! Inside of cooking, I’m getting more into restaurateur than actual cheffing now, because I’m at the age where I’m 44, I can’t cook with 20-year-olds anymore. Last year was a very hard year for restaurants, just economically, so this year I’m looking to do quite a few projects.

hard and are going to really test you. And don’t care about the money, because the money comes later, well maybe, it (money) doesn’t bother me, you’re in the wrong career if you want to be a millionaire. Don’t take s****y jobs and lots of money, take a good job that’s hard and you learn, you can’t buy taste.

It’s true, there really is no place like home and what better place to live than here on the Sunshine Coast – where lifestyle is king.

W

hen my parents were looking to set up their family home with my younger sister and I, it was down to Byron Bay or the Sunshine Coast. Having lived in Sydney, the coastal, laid back lifestyle was appealing, and after much deliberation, the Coast won, and here I am still, 30 years later. While many gravitate here for the lifestyle (a word bandied around a lot when talking about the Sunny Coast), I also believe there are great opportunities on our doorstep, due in large part to the fact that we are still relatively young when

compared to the likes of the Gold Coast and Brisbane. We are still cementing our footprint and laying great foundations, which is attractive to savvy entrepreneurs wanting to leave their mark on the ‘making of the Sunshine Coast’. This way of thinking has lead to a healthy wave of new businesses opening, which is in turn contributing to our great lifestyle – just think about the super cool eateries, coffee shops and breweries popping up. Speaking of, joining me for lunch at the new Backlane Tapas and Wine Bar in Mooloolaba was Elizabeth Fairon, owner and principal lawyer of Life Law Solutions; James Goldsworthy, director of Ray White Mooloolaba; Tara Williams, art director at Profile Magazine; Leah Blissett from Bliss Photography by Leah; Emily Gouge, marketing coordinator of LPE; Lianne

Dickson, business development manager at Auswide Bank; and Stuart Greensill, director of Herron Todd White. PROFILE: WHY DID YOU SETTLE ON THE SUNSHINE COAST? ELIZABETH: I came to the Sunshine Coast four years ago, for the lifestyle, wanting somewhere to be away from the city. I’ve always been in Brisbane and loved coming up here for weekends, my husband and I thought, ‘Why should we keep paying for accommodation every time we come up here when we could have our own house?’ We wanted to create a place where we could come and relax and have our own space. Our main house is up here and we go to Brisbane as we need to for work and have a house in Brisbane as well, but it’s very much go to work, go home, and we’re up here the rest of the time.

GOURMET JAMES: I was on the Fraser Coast at Hervey Bay and moved here in 2012. I came here for the lifestyle, as Elizabeth said. We love our live music, live sports, we like good food, we used to spend a lot of time back and forth to Brissy, we don’t need to anymore with places like this opening, but in the early days we were going to Brisbane every couple of weeks for music and things and then Ocean Street in Maroochydore started kicking on. We’re pretty lucky where we live in Mooloolaba, but then we go to Noosa, up to Maleny, Caloundra, and within half an hour you can be in a different world – it’s a pretty awesome lifestyle. TARA: I moved to the Coast when I was two years old and grew up in Coolum and now I’m living near North Lakes but still drive up to work on the Coast because I love it here. I love the beach, I can’t get away from it, it’s so relaxing and has a different lifestyle. LEAH: Four years ago I moved here from the Central Coast in New South Wales. My husband and I bought a mechanical business and we wanted a lifestyle change for the kids. I love the lifestyle, the people, the beaches, I just love it in general.

travelling together in a campervan and we stumbled across the Sunshine Coast. When you first get to Australia, the vastness of it is terrifying, you feel like you’ll never be at home here because you’ll never understand it all, but then we settled in Caloundra and now in Cotton Tree. Everything that is amazing about Australia; the people and the culture, is condensed into this region and obviously we also have the beaches, so now we’re going to make it home. I love the relaxed culture of it, nobody is in too much of a rush on the Sunshine Coast and now that we are looking to the future to get married and have our own family I can’t think of a better place to do it – it’s just home.

LIANNE: I came here in 2003, having lived on the South Coast of New South Wales in a place called Ulladulla. I used to travel up here to visit friends in Minyama twice a year and decided this was where I wanted to end up. I met up with a financial planner who was a very smart guy and he said, ‘You should always buy where you want to end up, that way someone is

paying it off for you’. So I came up here and bought a property on the Sunshine Coast and a few years later my company asked me to come up and work here. There is nothing not to like here, we live in Cotton Tree so we love our rowing and stand-up paddleboards, the salt water, so that’s the part I love. STUART: My mum and dad are from Gympie and I moved here 21 years ago. I came here because it was the first job offer I got out of university, but then the added benefit was it is such a good place. Geographically it has a lot to offer everyone and I just love how dynamic it has become. It’s evolving from a sleepy holiday town into, not a thriving metropolis as such, but it has become a really powerful region, which punches well above its weight. We’ve got to find our own individualism, we’re not the Gold Coast, we provide a different offering for people to come here – the locals shouldn’t be so concerned about people coming here to want a little bit of what they have, because let’s face it, we’re bloody lucky.

Their tagline says it all, ‘At Backlane we are all about tapas, paired with the perfect wine or beer’. That sentiment was certainly expressed loud and clear on the day of our visit, with chef Nathan Rumble promising to continue feeding us until we were full, and manager Jason Hess backing that up with perfectly paired wine. Does it get any better? What ensued was a delicious spread of some of Backlane’s most popular dishes as well as some tasty seasonal offerings from their new menu. We started with a selection of bite-sized tapas including crumbed olives with goat’s cheese; Hervey Bay scallop with wakame and black bean vinaigrette; croquette with pumpkin, pepitas and chevre; octopus with white bean, fennel and octo vinaigrette; and spring rolls of chicken, saffron rice and black olive mayo. We then moved onto more substantial share-style dishes including chicken with jerk spice, buttermilk, iceberg lettuce and smoked potato; beef short ribs with carrot, raisins, cauliflower and turmeric; and kim chi with furikake. From the hours we spent at Backlane, which absolutely flew by (it’s true, time really does fly when you’re having fun), it was evident both Nathan and Jason are masters of their craft, drawing on the decades of experience between them, they exude a confidence in their product, which is not only appreciated by patrons, it’s enjoyed. From the popular Tetsuya’s in Sydney to Spicers Tamarind in Maleny, Nathan has drawn on his 66

experience and taken inspiration from new and innovative techniques and flavour combinations, to create a cracking menu reflective of European/Spanish tapas-style of eating. The European influences don’t stop at the menu. Jason says the back lane location is akin to the streets of Italy, where you find locals wining and dining. Having worked in establishments like Rick’s Whiskey Bar, Peak Wine Bar and The Piano Bar, Jason has developed a profound cocktail and whiskey knowledge over the years (I hear they do a mean espresso martini), which is complemented by a wine list carefully curated by local wine buff, Travis Schultz. Chicken and fig

sausage rolls

INGREDIENTS

• 500g chicken mince • 2 eggs • 2 tbsp oyster sauce • 1 small onion, peeled and grated finely • 6 large dried figs, cut into small dices • 2 tsp salt • 1 tsp finely ground black pepper • 1 small handful chives, finely chopped • 2 tbsp sesame seeds • 4 sheets of ready-rolled pastry METHOD

Make the filling by placing the chicken mince into a large bowl along with 1 egg, the oyster sauce, onion, figs, salt, pepper and chives. Using very clean or disposable-gloved hands, mix the ingredients with your hands until well combined and the figs are evenly distributed throughout the mince. I find that mixing by hand is the easiest way to get this job done. Lay the ready-rolled pastry on the bench and allow to defrost for 10 minutes. Divide the chicken filling into four portions and place one portion of the mixture on to the end of a pastry sheet. At the other end of the pastry sheet, brush the edge with a little water, which will help to seal the roll. Shape the filling into a log and roll the pastry and filling to form a pastry sausage. Repeat with the filling and pastry sheets until all the mixture is used up.

Cover the sausage rolls and refrigerate for at least 1 hour and up to 24 hours. Preheat the oven on bake to 200°C and position the shelf in the middle of the oven. Beat the last egg with a fork until there are no visible streaks. Score the top of the sausage rolls with a small sharp knife, making light long slices across the surface and brush tops with the beaten egg. Sprinkle the tops with sesame seeds and carefully slice each roll into 6 even mini-sausage rolls. Lay the rolls onto a baking paper–lined oven tray, leaving a bit of space between each roll for the pastry to rise. You may have to cook the rolls in two batches. Bake in the oven for 25 minutes, or until the rolls are golden on top and the filling is cooked through. Serve the rolls immediately with a dipping sauce.

• 4 eggs, room temperature • 1 tsp vanilla extract • 180g caster sugar • 80g cornflour • 80g custard powder • 1 tbsp self raising flour • 1 tsp baking powder

MASCARPONE CREAM

MASCARPONE CREAM

• 300ml thickened cream • 300ml mascarpone • 4 tbsp icing sugar, sifted

Whip the cream with electric beaters until soft peaks form. Add the mascarpone and the icing sugar and beat until thick.

• 80g fig jam • 5 tbsp honey • 6 fresh figs, sliced • 3 tbsp pistachios, chopped

METHOD SPONGE CAKE

Preheat your oven to 180°C. Grease 2 x 20cm round cake tins with butter. Cut rounds of baking paper to line the bottoms of the tins and dust a little flour inside the tin to coat the sides. Do this by turning the tin around in a circular motion so that the flour clings to the greased edges. Tap out the excess and discard. The purpose of the flour is to give the cake batter something to cling to, encouraging it to rise up. Put the eggs and vanilla into the bowl of a stand mixer fitted with the whisk attachment and beat until the mixture starts foaming. Add the sugar gradually, ensuring each addition is incorporated before adding the next. Keep mixing on medium to high speed for 8 minutes. By this stage the mixture will be a velvety, pastel yellow and have tripled in volume.

Once cakes are cool, place one down onto a serving plate. Spread with fig jam, then a little over half of the mascarpone cream. Drizzle with 2 tablespoons of the honey. Place the second cake on top and dollop the rest of the mascarpone cream over. Decorate with fresh figs, sprinkle with pistachios and drizzle the remaining honey over the top. The cake is best served on the same day it’s made.

Sift all the dry ingredients into a separate bowl, then sift again directly into the sponge batter and fold through gently using a spatula. It is important to ensure all the flour is mixed through, but you need to be gentle, folding around and up through the middle to try to keep as much air in the mixture as possible. Pour half the batter into each cake tin. Gently tap the tin to get rid of any air bubbles. Bake for 20 minutes, or until golden and cooked through. Do not open the oven door to check until 20 minutes is up (or the sponges will deflate). After 20 minutes, check by lightly touching the tops, if they spring back they’re done. Remove and immediately turn the cakes over, leaving them in their tins, onto a clean tea-towel and leave for 5 minutes, then gently remove the cake tin and baking paper. Allow to cool a little longer before inverting onto a wire rack to cool completely. Once cool, these cakes freeze well, wrapped tightly in cling-film for up to 3 months. may 2018

Our habitat is our home and while here on the Sunshine Coast that consists of a house or a variation of, around the world people have created homes that are unique to their own environment and landscape.

M

y most unique habitat stay came when visiting the honeycombed hills of Cappadocia, Turkey, which is well known for its distinctive ‘fairy chimneys’ – a bird’s eye view from a hot air balloon is a popular way to see this spectacular landscape, drifting over cities carved into these natural landforms. Cappadocia Cave Suites is where original houses and cave dwellings are combined; reminiscent of both geological and human history, albeit with the luxurious comfort of the 21st century! A more authentic cultural experience is an inside look at the Maasai life and culture, which remains largely unchanged for hundreds of years. Spending time in the mud and dung huts in a Maasai Mara village on the border of the Mara Reserve in Kenya, allowed me to learn their unique way of life and understand how they keep their cultural traditions and customs alive – it was testament to how they have adapted to their habitat. Take a husky taxi to where the talented sculptors from the famous ice festival in Harbin, China are invited to build the most northerly frosty fortress every year. If sleeping on a slab of ice covered in reindeer hides gives you the chills, maybe a day visit to experience the wonder of these icy sculptures is a warmer option. With ice hotels popping up all around the world every winter, they have literally become the ‘coolest’ habitat stays available. Another favourite habitat stay worthy of exploring is the Bella Vista Cloud Forest Lodge in Ecuador, where hummingbirds in their enchanted green kingdom are waiting for you. For the more adventurous among us, a stay at The Skylodge Adventure Suites is an awe inspiring experience, where transparent capsules hang from a cliff in the Sacred Valley, Peru, surely giving you a Condor’s perspective of the world. Just standing below, working out how one goes for a coffee was challenging enough for this traveller. From a stay in the sky to sleeping with the fish, the Underwater Room at Kwanini Manta Resort, Tanzania has you encapsulated within a turquoise blue bubble for the night. This exhilarating experience is not for the faint of heart though. River cruising the Mekong River is the ultimate way to encounter one of the most biologically diverse habitats in the world, with river life along the rice bowl of Asia being fascinating and varied. She is also a speech pathologist, wife to AFL star Chris Judd and mum to son Oscar, daughter Billie, and twin boys Tom and Darcy.
