Peru, a permanent supplier

Peru, with its biological diversity and range of ecosystems, is increasing its food exports through the progressive introduction of technology and innovative production and processing methods. The ancient Peruvians made good use of the natural variety of climates and ecological terrain to programme and preserve their crops. This knowledge, along with the additional benefits provided by investment in the infrastructure, has made it possible to reach a high level of agricultural development, which allows Peru to continue harvesting products at times when other countries are unable to do so. The geographical location of the country, along with the diversity of its climates, where the ocean and the land offer such favorable conditions, enables it to supply fresh and processed foods out of season. Tracts of agricultural land are thus being transformed into permanent centers of fruit and vegetable production, growing products that comply with the highest quality standards and that combine all the premium features required by international markets. This same location gives Peru access to the exclusive and privileged zone of the Pacific Ocean, with its abundance of fish, mollusks, shellfish, cephalopods and marine algae, which, when processed and transformed into added value products, enrich and diversify the range of exports. These advantages have enabled us to build a solid commercial strategy of fresh and processed products, both conventional and organic, at times when other countries in the hemisphere do not have the right conditions to supply their own needs. This characteristic defines us as a reliable strategic supplier.

Peru, on the global trade route

Peru is located at the heart of the world’s trade routes. This advantage has been accentuated by policies that look to implement facilities in the commercial arena through free trade agreements or treaties of economic cooperation with the world’s main trading blocs, which makes us more attractive not just to importers and distributors of foodstuffs but also to investors looking for long term projects. To the west, Peru has access to the Pacific Ocean and the economies of the Asia Pacific region, such as the United States, China, Japan and Korea, among others, with which we are now joined through the Trans Pacific Partnership (TPP), a commercial treaty between the economies of the Asia Pacific Economic Cooperation (APEC). To the east a network of roads has been built to connect the main logistics corridors, in particular the Transoceanic Highway, the road transport

hub linking Peru and Brazil, which gives access to the Atlantic Ocean, and therefore the European Union, Africa and the Middle East. In terms of an international physical distribution infrastructure, Peru offers an important network of ports, headed up by the Port of Callao, which in the last decade has entered into a process of modernization, technical advances and an increase in its logistic capacity, making it into one of the main distribution centers in the region. Furthermore, Peru has the Lima-Callao international airport, which since privatization has been judged to be the best airport in Latin America in recent years.

In the field of public health, safety and security, Peru has an institutional framework that is recognized and approved by the major economic blocs. As part of this approach the companies within this sector, all highly competitive, technically advanced and in constant expansion, are associated in turn with highly professional organizations. The fresh and manufactured foodstuffs that are handled, transported and processed comply with all the international norms and standards and quality assurance systems, such as HACCP, Global GAP, ISO and BRC, which are supervised, certified and audited by private international bodies and by the health authorities of the countries involved in this commercial trade. This scheme is backed up by the food health and safety bodies of Peru, which control and oversee compliance with the protocols that are demanded by the markets.

In addition to complying with the stipulations of these certifications, Peru works hard to respect the environment, promote free trade and encourage the protection of ecosystems and the production of organic foods free of all chemicals and pesticides. In the case of fruit and vegetables the entire production chain is carefully monitored. Where fishing stocks are concerned, both in terms of catch and cultivation, these are exploited in a sustainable manner, with closed seasons to preserve this valuable resource, a control on minimum sizes, fishing quotas and health monitoring. Kosher and Halal foods, Fair Trade, BirdFriendly Coffee, Shade Grown, Rainforest Alliance Certified and Friends of the Sea are just some of the internationally recognized certifications awarded to Peruvian companies.

Peru, a mega-diverse country

Peru is one of the 12 top countries with the most biological diversity thanks to its ecological multiplicity in terms of climate, terrain and productive ecosystems. Of the 117 recognized zones of life, 84 are present in Peru. Within the coast, mountains and jungle, the country has 11 eco-regions, including tropical ocean, dry equatorial forest, tropical Pacific forest, high altitude rainforests and tropical Amazon forest. Peru also has more than 3,000 cultivated varieties of potato. The main products of the Andes, such as quinoa, amaranth and maize, are known for their balance of proteins, fats and starch as well as for their high levels of amino acids and nutraceutical properties. Amaranth has even been used by NASA as a foodstuff on space missions.

The climate allows products such as coffee, cocoa, bananas, citrus fruits and avocados, among others, to grow naturally, achieving the qualification of organic products. In the ocean the cold waters of the Humboldt Current converge with the temperate current of El Niño, bringing a diversity of marine products, such as cuttlefish, hake, mahi mahi and scallops as well as anchovies and mackerel; species highly valued and recognized as ‘blue fish’ for their high content of Omega 3. Prawns, trout and paiche are also cultivated in freshwater areas.

There are also 623 species of fruit, of which 553 are native to Peru, including the chirimoya, lucuma, aguaymanto, camu camu, guanabana, granadilla, passion fruit and tomato.

Peru is consolidating its position as one of the world’s main providers of high quality food. This is due in part to the open market policy and also because it supplies a range of foods that stand out for their originality, freshness, color and flavor; attributes much in demand in the most sophisticated gastronomic markets. The fertility of its soil combined with the climate and agroindustrial technology has made Peru a key exporter of asparagus, coffee, artichokes, paprika and cocoa, and their derivatives; products that have achieved international recognition for their excellence in quality and flavor and that are appearing on the menus of the most cosmopolitan restaurants in Europe, North America, Asia and Australia, as well as in Peruvian restaurants around the world. These achievements are constantly hailed in specialist gastronomy publications.

The range of fish and seafood, most notably scallops, prawns, squid, octopus, fillets of mahi mahi and trout, preparations of cuttlefish and canned fish and seafood, have been incorporated into the haute cuisine of many Asian countries, such as Japan and Korea, as well as others in Europe, such as Spain and France, plus the United States, where the quality of Peru’s exports is much appreciated. These foods, according to experts, equal or even supersede in quality the products of these countries, which is why the best chefs demand Peruvian fish and seafood products. Peru is therefore able to trade its products in more than 110 markets in a wide variety of presentations and forms.
