The Gilbert Stuart Museum is the site of the herring run getting an update

SPRING FORWARD Nature Conservancy and DEM project keeps thousands of fish from taking a wrong turn at Gilbert Stuart Museum The Nature Conservancy (TNC) recently teamed up with the Department of Environmental Management (DEM) and other partners on a project to strengthen the herring run at the Gilbert Stuart Museum in North Kingstown. The goal is to prevent returning river herring from making a wrong turn and getting stranded in the mill race out in front of the museum. The Gilbert Stuart Brook, which runs alongside the Gilbert Stuart Museum, serves as a key passageway for migrating river herring traveling upstream to spawn in Carr Pond. In spring, however, elevated water levels result in river herring taking a wrong turn toward a mid-1700s mill race canal – ultimately getting trapped at the base of the Gilbert Stuart dam. For many years, the DEM relied on temporary plastic fencing to help mitigate this issue, until recently teaming up with TNC to find a more effective solution, a wood and fiberglass structure called a picket weir. Protecting fish populations, such as the river herring, benefits Rhode Island’s entire coastal ecosystem, impacting largemouth bass, osprey, otters, striped bass, bluefish, terns, seals, and more. As a result, fish passage has been a priority of the DEM and TNC for years. To bring additional expertise, TNC contracts a fish passage engineer from the US Fish and Wildlife Service (USFWS) who helps evaluate obstacles to fish passage and provides recommended

solutions. Bryan Sojkowski, USFWS fish passage engineer, developed the picket weir solution at Gilbert Stuart. “There are only a handful of people in the northeast with Bryan’s skillset,” says John O’Brien, policy and partnerships specialist at TNC. “His practice integrates the science of hydraulics and hydrology with a detailed understanding of the swimming behavior of river herring. He has an intimate knowledge of how herring move upstream and

how to design and build a structure that matches their capabilities.” The river herring project at Gilbert Stuart is an inspiring example of collaboration, with each organization playing a vital role. “Having continuity on the team,” O’Brien says, “builds trust, allows us to carry forward lessons learned from one project to the next, and makes river herring restoration work in Rhode Island much more efficient.” Learn more at Nature.org

Life is sweet for Ashley Iaconetti Haibon and Jared Haibon. The two met on Bachelor in Paradise, the ABC spinoff of its popular dating and relationship reality television series, The Bachelor. The pair look smitten as they gaze at the wall canvas of their Pomeranian Shih Tzu mix Lois, and there seems little doubt who would get their rose. “It all began when I stopped to pet a woman’s dog at the mall and formed an instant friendship,” Ashley explains of how Lois entered their world. “A week later, the woman called and said a little, fluffy, white dog had been dropped off at a local Petco because the owner was unable to take care of her, so I went straight there.” “I had no idea that Ashley was going to look at the dog. I thought she was getting her nails done,” Jared laughs. “When I went to pick her up, she had a six-month-old puppy in her arms!”

Lois is now three and a half but she made a great first impression. “She was so playful and spunky with such an expressive face; even her ears have so much life in them,” says Ashley. “Contrastingly, she sleeps hard,” Jared adds with a chuckle. “When I take her out for her goodnight walk, I have to pick her up and she’s all dead weight. Once she gets comfy, she doesn’t like to move.” “I love watching Jared cradle Lois and sing to her until she falls asleep in his arms. It’s so sweet to see how safe she feels with him and clearly demonstrated to me how nurturing a dad he was going to be. I feel the same way when he plays catch with her or chases her around – they’re both at their happiest in those moments.”

The couple refer to Lois as “daughter,” so how is she taking to having a very human baby brother? “Initially I thought she’d hate it because he’s going to steal so much attention away from her,” Jared admits. “But all through the pregnancy she was loving Ashley’s tummy – cuddling up next to it overnight so we were confident she would be protective and loving and she is.” Of course, the couple’s other baby is their cafe, a lifelong dream fulfilled. In Charlestown, critics say special solicitor position is ‘discriminating against one group of people’ The town of Charlestown has a distinction shared by no other city or town in Rhode Island: It’s the one municipality in the state with a special town solicitor dedicated to so-called “Indian affairs.” But members of the Narragansett Indian Tribe say the position is unnecessary, adversarial, and a modern way of oppressing American Indians. Now the Town Council president says she shares some of their concerns and Charlestown needs to rethink its approach with the tribe.

Late last year, former Narragansett Indian Tribe First Councilman Randy Noka stood in a clearing on 32 acres of land in the Charlestown woods. He said if you want to know what he thinks of the town and its solicitor for Indian affairs, visit this

Larisa defends his position, saying in an interview that the job is about “facing the reality that we’re the only town with a sovereign nation within our borders.” He continued, “Because of that, the town

spot where 12 small homes remain abandoned. The property was supposed to be affordable housing for elderly members of the tribe. Today, you see overgrown grass and buildings with smashed in windows. For Noka, it’s heartbreaking. “You can see the condition of them,” Noka said. “It’s a deplorable condition. And just as bad, if not worse, is the reason why.” The details of this case may sound familiar. The property was at the heart of a years-long jurisdictional battle between the tribe and the town and state that went all the way to the US Supreme Court. Ultimately, a majority of justices ruled against the tribe’s effort to place the land in federal trust and beyond local and state laws, finding that the Narragansetts didn’t qualify because the tribe wasn’t federally recognized in 1934 when a U.S. law outlined trust rules. After the ruling, Charlestown still wouldn’t allow the housing project to be completed through its approval process, because the Narragansetts wouldn’t sign away sovereign immunity shielding them from legal action should they someday decide to build something else on the land. “So they let this happen,” Noka said of town officials. “It never did go into trust and maybe never will. But you could have allowed the project to go forward, let the tribe finish it, let the private landowner–don’t even have to put the tribe there for the sake of an example – let the private landowner move forward. There’s projects all over this place.” The attorney at the center of the legal dispute on the town’s behalf was Joe Larisa. The Narragansett Indian Tribe has its headquarters and about 1,800 acres in Charlestown, more land than anywhere else in the state. And Larisa has been around for nearly two decades as the town’s solicitor for Indian affairs.

needs to be aware of its legal rights on every matter involving the tribe.” Larisa got his start opposing the tribe at the state level, working against a potential Narragansett casino in the 1990s and early 2000s for two separate governors. In Charlestown, he’s worked on civil rights cases involving town police and tribal members, issues stemming from the state’s infamous raid on a tax-free Narragansett smoke shop, and a more recent land transfer from the state to the tribe that fell through because of disagreements over tribal rights related to the land. Larisa also represents a public library in Jamestown that wants to build on land the Narragansetts say is a sacred burial site. “He’s solicitor for Indian affairs issues, or fight-the-Narragansett-Tribe issues,” Randy Noka said. “To put it in my own words: ‘Any Indian that isn’t benefiting because he’s Indian, because he’s Narragansett–any rights the Narragansett don’t get because here I am, the Great Indian Slayer Joe Larisa, then good for me, good for the town of Charlestown.’” In the last year, some town leaders have raised questions about Larisa’s arrangement with Charlestown. Town Council President Deb Carney is one of two council members who voted against renewing his contract in 2021. “What we’re doing is we’re retaining an attorney specifically against a group of people, and I don’t think that’s right,” Carney said. “We don’t do that, nor should we do that, with any other group.” Carney and the other councilor who voted no, Grace Klinger, questioned the expense of Larisa’s contract. Currently, Larisa gets a retainer of $2,000 dollars a month regardless of how much work he does, plus $130 dollars an hour for additional litigation work. Carney takes her

criticism a step further. She says Larisa’s position, as it’s currently structured, is “a bit racist.” “We’re discriminating against one group of people,” she said. “We’ve separated the Narragansetts and said, ‘We’re going to keep somebody on retainer just for every issue involving them.’” Town Councilor Bonnie Van Slyke disagrees with that. Van Slyke, joined by council members Cody Clarkin and Susan Cooper, approved Larisa’s contract. She says the town solicitor for Indian affairs position is necessary and does not target the Narragansetts. “They are our neighbors. They’re very special neighbors,” Van Slyke said. “It’s a matter of respect to understand what the basis is that we’re dealing with these various jurisdictional issues. We need consistent, up to date advice on what these issues are and how to act, how to deal with them.” Central to the solicitor’s position is the question of Narragansett land sovereignty and the possibility that Congress may someday pass legislation that could effectively nullify the 2009 Supreme Court decision and allow the Narragansetts to place land in federal trust without restrictions. That’s why a big part of Joe Larisa’s job is monitoring developments in Washington, DC and maintaining lines of communication with the governor’s office should a change in status be on the table. “If the tribe gets land in federal trust, unrestricted, it’d be ‘Indian country,’” Larisa said. “And when you have ‘Indian country,’ the land is largely exempt from state laws, state civil laws, state criminal laws, and town ordinances. It means they can largely do what they want, just like a

It could open the door to other activities that would be illegal under town law or state law.” But members of the tribe say that’s fear-mongering. With the amount of legal gambling in the region already, Narragansett Indian Tribe Medicine Man John Brown says a casino isn’t even a viable business opportunity today. He also points out that the Narragansetts own property in multiple states, including several hundred acres in Westerly, where the tribe’s relationship with town officials has been much more positive. Consider also that, in Connecticut, the state’s two federally recognized tribes have land in federal trust, and the towns they’re located in don’t have solicitors for Indian affairs. “There’s this unnecessary fear of what we’re going to do and how we’re going to do it,” Brown said. “When you look at our lands and you look at the lands around us, it’s not us that’s overbuilt on our property. It’s not us that’s fouled our waters. It’s not us that’s fouled the air. We are a natural people, and we maintain the things that we have in natural or close to natural existence.” Joe Larisa’s contract as Charlestown solicitor for Indian affairs has no end date on it and will next come up for discussion when the town council chooses to revisit it. So far, it has not.

Along with the carbon footprint offset of growing locally rather than importing from Mexico and other far-flung locales, the carbon emissions from the generators are also scrubbed, chilled, and then emitted to the plants in the greenhouse. “When they do that, the greenhouse is emitting only oxygen,” says Schartner. The greenhouse will also create 88 jobs, primarily as field hands – work that would ordinarily be seasonal but would be year-round employment because of the CEA technology. The project has faced some opposition, including complaints that the scale of the project and use of new, advanced farming technology would be better suited elsewhere. RI Grows has also faced backlash for fear that in

the future more controversial plants, like cannabis, could replace the tomato crops. “We produce food,” Schartner responds. “We are in the food business, we have been for generations and we will be for generations more. We are not in the pharmaceutical industry; we’re in the farming industry.” He adds that the marijuana industry isn’t economically feasible in their model, either. Schartner projects the greenhouse will be complete by July this year, and he looks forward to what this will mean for Rhode Island and the town. “Right now, as it stands, we almost bring Exeter to a neutral carbon footprint on all the residential carbon, which is houses and cars,” he says. “Exeter will be the greenest town in Rhode Island.”

On the border of Exeter and South Kingston, a large project is in the works. Timothy Schartner, partner in Schartner Farms and owner of Rhode Island Grows, is currently constructing a 25-acre greenhouse, which has a 10-year contract for growing tomatoes. It will be functionable and crop-yielding year-round thanks to advanced farming technology known as controlled environment agriculture (CEA). “There are generators in the greenhouse and those generators power lights that extend the day in the winter to equal the same [climate conditions as] July 27, so every single day, all day long, inside the greenhouse is July 27,” shares Schartner. This means it has the same CO2 levels, heat, and humidity as plants would receive in the summer, so they continue procreating and growing fruit. Having access to local fresh produce yearround will be a huge benefit for Rhode Islanders looking to get the maximum flavor and nutrition from their produce. “The average tomato being shipped in from Mexico only has 20 percent of the nutrition of the tomato you grow in your garden in August,” explains Schartner. “It’s harvested greenish yellow, and it turns red in transit. If you cut it off before it’s ripe, it’s never going to ripen. It’ll turn red, but you’re not going to get the flavor or its nutrition. So now when we grow it locally, we’ll have a more flavorful, more nutritious product.” Currently, Rhode Island only produces 1.6 percent of what it consumes in agricultural products, so Schartner’s greenhouse will be a huge step toward producing our food locally. Schartner emphasizes that this will help drive food costs down, too. “During the pandemic, we saw a lot of prices increase. The states that produce [their own food] – their prices didn’t go up as much.” The greenhouse will also increase the state’s sustainability efforts, as RI Grows’ farming practices will actually result in a negative carbon footprint. For instance, the process of recapturing and reusing water means the greenhouse will only use 1-2 percent that 25 acres worth of farmland would traditionally use. Heat produced from the generators creating light will also be re-harnessed and used to heat the greenhouse instead of using boilers.

Defining their decorating style as contemporary coastal, the Chans sought the expertise of Three Sparrows Interior Design, a small residential design firm located across the bay in Warren. “Since this was their beach home, they wanted the interior to reflect their surroundings but still have the essence of their clean minimalistic style,” says Nicole Martel, TSID interior designer. While furnishings in main living spaces are streamlined and contemporary, livable textures like soft textiles and wood grains make them anything but sterile. The Heat Is On Bottega Yoga fires up local yogis

minded us that this was our practice, and if we wanted to move a different way, to feel free. She also offered minimal corrections, which I appreciated. There’s nothing an introvert yogi (me) hates more than being called out in a class full of strangers when I’m just trying to get my yoga on. But she still kept a watchful eye on our form, occasionally calling out “I love the shapes” to keep us motivated. On the final pose of the ladder flow, Killilea invited us to take a bind (linking the

hands around the body, while rotating the shoulders and torso in a complicated twist). I hadn’t done yoga in eight months, and even when I was somewhat regular with my practice, I struggled with them. But between the ladder flow and the toasty studio, my body was primed and I slid right into it. (Holding it was another matter.) By the time we arrived at Savasana (the resting pose that marks the end of the class), I felt like Bottega’s T-shirt, Zen AF.

I am the Goldilocks of yoga. For decades, my yoga-obsessed friends have tried to convince me to commit to a practice. Kundalini yoga? Too woo. Power yoga? Not woo enough! But Wakefield’s Bottega Yoga’s flow class with instructor Kristen Killilea? That was just right. Stepping into Bottega’s Kingstown Road studio, you know straight away that this isn’t your typical yoga experience. Bespoke tees line the wall, featuring the studio’s whimsical elephant emblem with sayings like “Zen AF.” I stashed my stuff in the art-filled lounge, entered the studio, and rolled out my mat. The lights were low, and two candles glowed at the front of the room. Calming music filled the space, which was heated to toasty using infrared heat lamps. (Most of Bottega’s yoga classes are heated.) I’ve done heated yoga before in other studios, but those rooms were more lukewarm than hot. Bottega’s temp is set to a balmy 90 degrees. The heat from the lamps was penetrative but not oppressive, and it took away the winter chill that cut into my bones. Instructor Killilea had us begin with a grounding exercise, placing our feet on the floor to feel the earth underneath. She then asked us to pick a mantra for the class. (Mine was “find the beauty.”) So far, so woo. There was a music change and the woo went out the window. Gone was the spa-like synth music; it was replaced by a decidedly funky soundtrack that featured artists like The Neville Brothers, Thundercat, Trey Anastasio, and Grace Potter and the Nocturnals. Killilea led us through opening poses, including stretches that opened up my sides. I leaned into the movement, feeling the gentle pull at my tight hips, the occupational hazard of being a writer. We moved into a few gentle cat-cows to warm up the chest and back. Downward facing dog and sun salutations followed, which brought us directly into a ladder flow. In a ladder flow, poses are added on to each other at each round and repeated in a loop. I’d never experienced ladder flow before, surprisingly, and loved that I could work though poses that were a little sticky the first time and land them on the repeat. Periodically through the class, Killilea re-

“My first job was as a dishwasher at the General Stanton Inn,” recalls Jeanie Roland, owner and executive chef at ELLA’S FOOD AND DRINK in Westerly. “There were two women chefs that ran that kitchen. I thought, ‘Oh, this is crazy! I can do this.’” Fast forward to today: she has seven prestigious James Beard nominations to her credit, two highly successful restaurants (The Perfect Caper in Florida and Ella’s Food and Drink in Westerly), has appeared on Iron Chef, and actually did beat Bobby Flay on his Food Network TV show. She even gave a private cooking class to Westerly’s most famous resident, Taylor Swift, and her BFF Lorde. The determined chef graduated from the Culinary Institute of America back when the world-class cooking school was run more like a boot camp. “When I was at CIA in 1992, if your hair wasn’t perfect, or if your shoes weren’t shined, you get sent back to your room,” she recalls. Back in 2002, Jeanie was a pioneer in the food industry. The Perfect Caper sourced only cruelty-free farmed meats and organic produce, practices she brought to by Ella’s in Westerly when she opened in 2012. She was one of the first restauranteurs to partner with Ariane Daguin, the leading distributor of sustainably raised and humane farming practices, to carry cruelty-free meat and foie gras. Jeanie’s food fuses traditional French cooking with an Asian flair. It’s a nod to her early experience as a corporate chef, when she cooked in far-flung locales like Hong Kong, China, Malaysia, and Singapore. Influences of Italian cooking are also evident on Ella’s menu, inspired by Westerly’s large Italian-American community. Many Italian specialty items like pasta, mozzarella, and ricotta are made in-house. Ever mindful of the women who pioneered the way, she named the restaurant Ella’s as an homage to fellow woman owner/chef Eleanor Capizzano, whose eponymous restaurant originally stood at the Tower Street location.

Not simply content to own two restaurants (and run two kitchens), Jeanie is also a writer. Her first cookbook, Butter Love and Cream, was “something I wanted to do for years,” she says. Called “an accessible foodie cookbook,” it’s a culinary trip through Jeanie’s life, from her childhood to becoming one of the top women chefs in the United States. Recipes range from the delicious simplicity of a root beer float (her childhood favorite) to more complex flavor combinations like lobster phô (a dish served at her restaurants). All the recipes are approachable to a kitchen novice, but experienced cooks will delight in the diverse range of dishes on display. Jeanie’s second cookbook, The Perfect Caper Home Cooking, came out in December, and is a treasure trove of classic recipes, refined over twenty years from her two restaurants, and includes family recipes. Like Butter Love and Cream, the dishes are sophisticated but remain user-friendly to the home cook. “My focus when writing The Perfect Caper Home Cooking was to help that weekday kitchen warrior with great everyday recipes that can be used in a variety of different ways,” she says. Passion and determination are just two of Jeanie’s hallmarks. “It takes a lot of guts and conviction and belief in yourself to open a restaurant,” she says. “I begged my parents to be a chef since I was 14. And they told me no. My dad didn’t want me to work this hard in my life. He wanted a better life for his daughter. And I told him I wanted to do something I love every day. When a client anointed interior designer Kim Elliott-Peterson “Queen of the Potty,” she leaned into the moniker. As the owner of KEP INTERIOR DESIGNS, INC, she has lost count of how many bathrooms she’s designed over the years. “Hundreds,” she says laughing, in shock herself at the number. “I love my work in general and love creating all sorts of interiors. But designing bathrooms is always particularly 42

rewarding,” she says. “They’re a high ticket room to renovate, and people don’t go into it willy-nilly. Most often, the bathrooms are pretty outdated by the time the clients are ready to remake them.” That makes the before/after transformation fun, not to mention dramatic. Kim first meets with the client to make sure that the teaming is the right fit. “Feeling comfortable with your designer is key,” she says, noting that she’s stepping into some truly intimate spaces when renovating something like a master bedroom or bath. “Conversations can get pretty detailed, down to ‘do you shave in the shower?’ If so, ‘do we need to install a mirror for the face, or a toe-hold for the legs?’ “It’s a very customized space,” she continues. “That’s what makes it fun. You get exactly what you want.” After the initial meeting, she tours the entire home to ensure the new design is cohesive with the design elements that already exist throughout. “Some homes have a more natural design, while others can be more blingy,” she says. “It’s important to play to the style of the house. I don’t want to design a bathroom that doesn’t match.” This is also when she goes over the client’s wish list, noting that sometimes the space will dictate some elements. “We might not be able to check all the boxes,” she says since things like room size and existing plumbing lines can influence what she can do. But, she strives to give her clients as much as possible. A good designer is a little like a therapist, and at times, Kim asks her clients to dig deep when making a big change. “Say a client wants to remove a tub, for example. This will impact the resale value of your home. I have to tell them that, and point out that perhaps a tub is no use to you now, but what about later, maybe when there are grandchildren. It’s my job to say these things.” Once these details are sorted, the fun really begins. Kim starts with the hardscape, bringing three palates of tile for the client to choose from. Kim is a self-professed color addict, so this means her choices are far from bland. “Selecting colors is one of my favorite aspects of the design process,” she says, pointing out that she is sensitive to hue, value, and saturation. After picking the tile palate, she and the client run through the tones and colors of the vanity. “From there, we can add in the fixtures, paint, and even fabric.” PAID ADVERTISING SECTION

Kim graduated from URI with a degree in textiles and design, and she often incorporates textured elements into her work, even in a space that leans heavily on porcelain. “For a powder room, it’s more of a jewel box,” she says, noting that a space like that — used less often and mostly for guests — can be fussier, so she might add something like grass cloth wallpaper as a design element. A master bath or a children’s bath, however, needs more function. But items like window treatments, shower curtains, or even a whimsical bathmat can help soften the space. “It’s often those extras that add a touch of class and style to make the space truly one of a kind.” After the tile and vanity are decided, Kim adds her trademark design flourishes, such as working with lighting that enhances the space. “I love sconce lighting and often mount lights into a piece of mirrored glass,” she says. This serves a dual purpose: it gives the space additional light without additional fixtures, and the sparkling reflection from the mirror is stunning.” Kim also leans into decorative tile in showers, creating horizontal or vertical patterns to give the utilitarian space more visual interest. She brings in artwork and accessories that stand up to the rigors of the space while enhancing the ambiance of the other design elements. “Like adding jewelry to an outfit,” she explains. “It adds to the aesthetic value without distracting from the whole.” “I try not to be trendy,” she continues, PAID ADVERTISING SECTION

pointing out that the design will outlive anything too of-the-moment since bathrooms get renovated so infrequently. “There is a way to be fun and in-vogue without being trendy.” While Kim may be the “Queen of the Potty,” she also sees her work as an opportunity to change people’s perceptions of interior designers. “Over the years, designers got a bad rap and are often seen as pushy. That’s not how I work,” she says. “Working with a designer can be lots of fun and can save you time and stress that comes with a renovation. I might not always personally love what the clients pick, but I love it for them.” Whether you are updating an aging

“What I had started out believing was simply taking photos,” begins photographer Samantha Holland, “ended up being an opportunity to help women of all ages, races, sizes, and backgrounds see themselves as a confident, beautiful, worthy woman.” Over the years, Samantha has been recognized for her awardwinning wedding photography, including winning Best of Newport 2022 and being featured in multiple online magazines. However, when she opened SAMANTHA HOLLAND PHOTOGRAPHY, her first studio in South Kingstown, she was able to experience working oneon-one with women in a new way – that’s when she delved into the intimate and empowering art of boudoir photography. “Insecurity is something I believe all women struggle with at one time or another. Society has taught women to fear, hide, and reject their bodies for so long, and although we have come a long way in our area of the world, the subject of the female body and sexuality is still very taboo,” explains Samantha, who recounts her own journey to self-acceptance. “I, too, always held myself to the impossible standard. It wasn’t until I went through a more spiritual reflection that I started seeing my full value, including seeing my body as worthy: I realized that I saw all of my friends as completely beautiful in all their unique ways, and that I deserved the same grace and appreciation I gave others. My body has carried me through every high and low of life, and allows me to continue to experience the things I love.” When Samantha started channeling this new perspective into empowering other women through boudoir photography, she discovered just how meaningful the experience was for both herself and her clients. Even during the peak of the pandemic, she notes, clients continued to reach out to book their photoshoots so that they could feel beautiful even during the toughest of times. “Watching women bloom inside my studio (and have fun doing

it!) is the best feeling ever,” says Samantha. Each comes with their own story and reason: Some want a gift to set their partner’s love on fire, some want to regain ownership of themselves and their sexuality after suffering trauma, and some just want to feel sexy again – but one thing is consistent, Samantha says, and that is they all want to feel good. “And that’s what I do here in my studio! I don’t just cheer you on, I guide you to seeing your beauty all on your own.” A boudoir photoshoot with Samantha and her team is nothing short of luxury and all-inclusive, down to the very last detail. From consultation, planning, styling, posing, and beyond, Samantha is there every step of the way, and her silly, honest, positive energy is a huge part of what makes the experience so comfortable and fun. “Each client who giggles out of excitement when they first see their photos, or exclaims ‘OMG, I can’t believe that’s me!’, or simply asks if they can give me a hug, is exactly why I do what I do,” says Samantha. “Watching them leave feeling so confident and sexy is my favorite part of the day!” Since the grand opening of her new studio in East Greenwich last October, exciting things have been brewing. Throughout 2022, Samantha will create new, limited-edition boudoir sets for each month of the year. the Kitchen TAKING THE TEMPERATURE OF SOUTHERN RHODY’S WOMEN-RUN RESTAURANTS BY KAREN GRECO

While women do the bulk of the cooking at home, only 24 percent of chefs running professional kitchens are women. Inhospitable working conditions, along with long and late hours that aren’t conducive to having a family, drive many talented women chefs to walk away from professional kitchens to pursue other careers. Indigenous cuisine at Sly Fox Den Too in Charlestown to Karie Myers’ beloved Jigger’s Diner in East Greenwich, South County has no shortage of new and established restaurants with women at the helm. We talked with some of the women-forward kitchens across the region to take the temperature of their burgeoning restaurant scene.

Chef Jeanie Roland, co-owner and executive chef of Ella’s Food and Dining in Westerly, began her career in the ‘90s, when testosterone fueled the atmosphere in professional kitchens. Her first cooking gig was at a private club in Southern California, a job she loved. But she had to leave when the chef became abusive, hurling gendered slurs at her while she worked the line. “Here was my mentor – I credited him for the foundation of my cuisine – and he was abusive to me, just saying all these misogynistic things to me in front of the entire kitchen,” recalls Roland. “I was lucky that I was strong, and that I had a partner [husband and business partner James] who supported me. I had to go to the board of the club, file a complaint. It was very dramatic. But it set the tone that I would not accept that.” “Things have changed a lot over the past 20 years,” says Jackie Mignone, owner of J22 Tap & Table in Jamestown. Mignone began her restaurant career at 15, working in the kitchen at her local pizzeria, where she made pizzas, grinders, and did prep work before moving to customer-facing areas, known in the biz as “front-of-house”. Bartending supported her through her college years and beyond. “I remember applying for a bartending job somewhere in Newport and the guy I interviewed with told me straight up I would never be a bartender in Newport. He said, ‘Do you see any female bartenders here?’” “That was the mentality then,” she continues, pointing out that at least in the ‘90s it was spoken out loud. “Now it’s a little more insidious.” When Cinder chef Maria Trager arrived at Johnson & Wales University (JWU) from her hometown in Ohio, she nearly quit. “I never worked a line before,” she says, and her first experience featured a screaming chef throwing pots and pans. “He even yelled with his eyes,” she jokes, before adding, “it’s intimidating.” She says that many women in her freshman class didn’t return for sophomore year, and the ones that went on to work professionally eventually gravitated towards front-of-house positions such as dining room management.

Juggle Women still do the bulk of the unpaid athome labor – from cooking meals to scheduling doctors’ appointments to shuttling kids to after-school activities – making the 15 to 20-hour days required in the restaurant industry particularly daunting. “David Chang (the chef behind the famous Nobu restaurant) said that chefs peak at 27. That’s because he opened his restaurant at 27,” Cinder chef Trager says with a knowing chuckle. “When you have a child, that slows everything down.” Trager spent most of her professional career at the Dunes Club in Narragansett. She began interning there when she was a student, eventually moving up to executive chef. She loved the job – and said the family-oriented atmosphere meant that she could juggle the demands of being a single mom to two boys and keep her high-powered career. With her kids older, Trager was ready to stretch creatively, prompting her to send her resume to Cinder. But, says when she interviewed for the position, hesitated bringing up her need to balance a career with raising her kids, afraid it would cost

her the opportunity. Ultimately, she knew she needed to be upfront about it. “We’re the baby carriers,” says Ella’s Roland. “You got to make a choice. My husband and I realized I couldn’t work a 15-hour day and have children. As a woman, that’s hard to balance. Some women chefs are lucky and have a lot of help. They have nannies that travel with them. But lots of women don’t have a restaurant group willing to help [with childcare].” Kim Curtis, JWU-trained pastry chef and owner of Sweet Althea’s in Wakefield, recalls making grocery runs at one in the morning before going to her fledgling bakery when she started over a decade ago. At seven, she’d rush back home to get her kids ready for school before her husband left for his job. Then she’d head back to the shop and continue working. “I don’t know how I did it,” she says. Since she owned her bakery, her kids were often right beside her while she mixed cake batter and piped icing. “In this day and age, in this industry, you’re not getting paid enough to cover daycare,” she says. “My kids grew up in the store.”

Invisible Chefs

“It’s hard being a woman in the kitchen,” says Frances Medina, chef at Westerly’s Surf Cantina. (See page 82 for an experience article on Surf Cantina.) “Sometimes a vendor will come in and go up to my [male] sous chef and say ‘Hey, chef, can we talk about your order?’ And he’ll be like…” Medina’s eyes roll up and she swings her arm around, thumb pointing at an invisible person next to her. “‘That’s my chef. You want to talk to her.’” It's a point echoed by Mignone, owner of J22. She recalls a time when, a few months after opening her restaurant, she was working the bar and a man, who had just finished eating dinner with his wife, asked her, “Who’s the new owner? The food is amazing. I’d like to talk to him.” “I said, ‘Sir, you are talking to her,’” she says. “His wife started giggling.” While Mignone believes the mindset has changed over the past decade, she recalls going to a cooking competition to support J22’s chef, and being asked if she worked for him. “Some people can be very overt and mean. There were some people who would just look straight past me and order from the male bartender,” she says. “Now I feel like people recognize that being a woman can be an obstacle that you have to overcome. They respect you more.” “We’re constantly the underdogs,” says Sweet Althea’s Curtis. “There was a time when distributors wouldn’t return my calls. Was that because I wasn’t big enough, or for some other reason?” She shrugs. “Some people don’t take us seriously. We’ve been clawing our way up since day one.” Ella’s Roland shares that she recently had a repairman come in to fix something in the kitchen and when she asked him to put a mask on, he pretended not to hear her. This sort of thing happens so often that it’s become a joke between her and her staff. “Venders, delivery people, it’s a constant battle. We work twice as hard and have to be twice as tough.”

Cinder owner Rory Douthit is part of a new wave of restaurateurs who understand that a welcoming kitchen is the key to unlocking a chef’s creative potential, allowing space to balance family time and not fostering an abusive atmosphere. “It’s physically and mentally exhausting on the [cooking] line,” he says, noting that creativity needed for things like menu development suffers because of it. “You get that [creativity] by not working 20-hour days.” Trager’s approach to her cooks is less hierarchical (a throwback to famed French chef Escoffier, who organized his kitchen like a battalion chief) and more inclusive. “She’s a player’s coach,” Douthit says, noting that she is open to suggestions from her staff. “She’s willing to try other ways.” Similarly, J22’s Mignone is quick to credit her staff for her restaurant’s success. “I think of myself as more of a coach, putting together an All-Star team.” Photo by Catherine Dzilenski of Idlewild Photography, courtesy of Cinder

“Women now bring it,” says Trager, who has learned to embrace her dual identities as chef and mom. “My maternal instinct is expressed in my food. So it better be effing good.” Ella’s Roland mentions the very public fall of celebrity chef Mario Batali, who heads to a Boston court in April to face charges on sexual misconduct. “So many talented women ended their careers because of things like this. I hope that the outing of men like him means the industry is going to change. “There are a lot of shining stars in the industry,” Roland continues, who herself has seven James Beard nominations, runs two highly successful restaurants, has appeared on Iron Chef, and actually did Beat Bobby Flay on his Food Network TV show. She counts Taylor Swift, Westerly’s most famous resident, as a fan. “Maybe we need to speak louder for ourselves. Maybe this article will help with that.”

COFFEE CONCEPT East Greenwich’s newest coffee shop is a spacious spot to hang out and recharge A joint venture between husband-and-wife Steven and Allie Mignanelli with Sarah Grillo, East Greenwich recently welcomed its newest coffee spot in February: Drip Coffee House. “We have a long history in this industry and shared the same vision of a coffee house concept,” shares Steven, whose family owns two other East Greenwich staples: Richard’s Pub and the Ritrovo Pub. “When the space became available, this was our chance to bring the concept to life.” Now fully realized in a spacious 2,600-square-foot cafe, Drip Coffee boasts an open, inviting atmosphere designed by Michelle Parenteau of Michelle Lee Designs based in Johnston. Steven set out to create a coffee space unlike any other in the coastal town with plenty of seating and a little bit of swank (think leather armchairs) – and not without Ocean State motifs captured in deep blue walls and bar seats, even a blue-painted brick fireplace for added coziness. From Tianjin, With Love Jayd Bun husband-and-wife owners dish on bringing traditional Chinese fare to SK The story behind South Kingstown restaurant Jayd Bun starts with love. Now married with a baby daughter, Annie and Joe Parisi met by chance seven years ago while each was on vacation in Las Vegas. At the time, he was working as a dealer at Foxwoods and she was a tour guide in Beijing. Soon after, Annie followed her heart and moved from her native China to Connecticut to be with Joe. But there was one problem. Annie soon started feeling homesick, and she especially missed the food. “My husband suggested we go to a Chinese restaurant to make me feel better,” Annie says. “I opened up the menu and got really confused. What is pupu platter? I’ve never seen this dish in China.” No matter how good it was, Americanized Chinese food just didn’t taste like home, Annie says. Eventually, her craving for traditional Chinese cuisine inspired the couple to start experimenting in the kitchen to recreate the dishes she loved. She spent years perfecting recipes at home, and at one point traveled back to China to study cooking for a few months. “Her food was so good I kept inviting our friends over the house to try it,” Joe says. “So then I started thinking, why don’t we open up a small spot.”

Jayd Bun was born in late 2019. The menu is inspired by the home cooking and street food Annie grew up eating in Tianjin, which is about a two-hour drive south of Beijing. Annie makes all of the restaurant’s dishes, including noodles and buns, from scratch on a daily basis. Joe also assists with cooking, often doing prep work and making house sauces. With each dish made to order by the two of them, they emphasize that their offerings – currently available as take-out only at the South Kingstown base – are not fast food. Customers are encouraged to order an hour or more ahead. “We only make a certain amount a day, so when it’s gone, it’s gone,” Joe says. Popular menu items include the Rice Porridge Congee, with ginger and chicken; Scallion Pancake; and Ja Jen Men Noodle Dish, with minced pork and vegetables. There are several other noodle options, including chilled noodles with peanut butter sauce and Spicy Yo Po Noodle, topped with bok choy and a fried egg. In keeping with the restaurant’s name, Jayd Bun is also known for its buns, made with yeasted dough and available filled with chicken, pork, or vegetables. They are pan fried, which results in simultaneously crispy and soft exterior. Annie points out that none of the food is deep fried, and she’s careful to use minimal oil in her dishes. “I want to show people that Chinese food can be healthy,” she says. While the couple says they are happy with their success so far, they haven’t gone without challenges. They opened the restaurant soon before the COVID pandemic started, and they are also juggling running the business with little outside help while also caring for their newborn daughter. “It’s hard work, but the customers make it worth it,” Annie says. “When people tell me they love my food, sometimes I get so happy that I cry.”

Westerly Gets Spicy Surf Cantina cooks up Mexican-inspired fare with nods to local flavors A tip to my South County neighbors: get to Surf Cantina before the Summer People arrive. After Memorial Day, getting a seat at this new surf-inspired eatery is going to be impossible. The restaurant, on the corner of Canal and Railroad in downtown Westerly, has large garage doors facing the street that will draw the throngs during the summer months. The decor is a lively ode to surf culture, with boards on the walls (one is for sale) beside stunning black and white surf-culture photos. There are two TVs set to surfing channels above the bar, which, incidentally, takes up the entire middle of the large restaurant, signaling that Surf Cantina wants to be a place where you can kick back and unwind with one of their signature cocktails. Full disclosure: for someone who loves to write about food, I am a picky eater. When I eat out, I stick to items I love rather than adventure my way through the menu. (I only tried escargot to impress my now-husband on our first date. It worked!) Knowing

this, I asked Surf Cantina’s chef, Frances Medina, to decide our dinner menu and force me out of my comfort zone. We began our odyssey with cocktails. I usually opt for wine or beer, but at chef Medina’s suggestion, I went with the Big Tommy – a zingy lime-forward margarita – while my husband ordered the Westerly Vice, a strawberry spin on a piña colada. After sampling that drink, I declared we were sharing everything. (That’s romantic, right?) Our first course started with the Mexican Flatbread, a tortilla covered with refried black beans and Chihuahua Cheese, kicked up with a topping of crispy carnitas. It was flavorful, and with the green chili aioli, had wonderful heat from the pepper. Chef Medina also sent out the Octopus and Chorizo app. Tender octopus was crisped with a coating of panko breadcrumbs and served on a puree of sweet potato that was covered with a layer of crumbled chorizo. The puree tempered the brine of the fish and the heat of sausage. It was the best seafood dish I’ve ever experienced. Next up was the tortilla soup. This was all about the presentation. Shredded chicken, tortilla strips, and hominy – a sort of corn grits – were nestled in a deep bowl. A tiny teapot of flavorful broth was poured over right at the table. The tortilla strips provided a satisfying crunch while hominy gave the soup extra texture. There was a subtle kick of spice to the salty broth.

Chef Medina was paying attention when I expressed my love for birria-style meat. So she sent out an order of Birria Tacos. Think of them as a Mexican-style French dip, with shredded beef slow-cooked in a spicy citrus sauce. It’s served with a side of beef consomme used to dip the taco. Once you eat a taco like this, there’s no going back to plain old ground beef. Our bellies were full, but we weren’t passing up chef Medina’s house-made desserts. First sampled was her local spin on the traditional Tres Leches cake. She adds coffee syrup to the milky bed that surrounds the white cake. With a topping of ground espresso beans, the light coffee flavor

doesn’t overpower the delicate cake. Bolder was the bread pudding, an absolute delight for a cinnamon-lover like me. The decadent baked bread-and-custard sweet featured a surprise addition: Cinnamon Toast Crunch cereal. Medina topped it with two perfect-portion scoops of cinnamon ice cream. In keeping with the beachy vibe, the service was casual, but the attention to detail never wavered. For a Tuesday night in the middle of winter, the place was buzzing. Happy patrons filled nearly every table in the expansive front room. Medina is a self-taught chef who honed her chops at New York’s acclaimed Besito

Restaurant Group. For Surf Cantina’s menu, she included nods to Westerly’s local food scene, not only with the Tres Leches cake but also with Soupy Soup, which features local Soppressata and clams, and, of course, a fried calamari app. But your tastebuds will be rewarded if you venture into uncharted territory, even if it’s swapping regular fries for yuca fries or opting for sweet plantains. If you love Mexican-inspired food, ride the wave to Surf Cantina.

A Winter Day Date in Wickford Instagram foodies dish on the perfect afternoon tea in this historic North Kingstown village Whether you’re stealing away for a long lunch with your sweetie or grabbing a coffee to spend the morning antiquing around the harbor, Wickford is a dream for the underrated day-date. In the summer, there’s ice cream aplenty, but for a chilly winter adventure? Afternoon tea at Sweet Marie’s Tea Cottage sounded like the perfect retreat to us. Nestled behind the Wickford Gourmet

Kitchen Outlet, a welcoming sign and mint green door invite you to cozy up for tea and treats. The owner, Lindsey Andrews, greeted us as we arrived and took in the ambiance. We immediately felt transported – it’s like stepping back in time and finding yourself in a tiny nook with exposed beams, rustic chic decor, and dainty yet eclectic teacups. Laughter, chatter, and relaxing tunes permeated the 22-seat room

during the peak of afternoon tea service. Included in a reservation is bottomless English Breakfast tea (I took mine with a sugar cube and cream) and a three-tiered tray of almost-too-cute-to-eat bites. Sweet and savory options are plated perfectly, and each person gets to try one of everything. Along with a cuppa, Andrews offers Gooseneck Vineyards wine and cocktail pairings to complement the menu, all with a tea-flavored twist.

When our small bites arrived, we were in awe of the preparation and arrangement. Expertly crafted French macarons are piled high in a teacup, placed between lemon cupcakes and cookie dough truffles. Next is the equally irresistible cheddar chive and cranberry orange scones with a dollop of clotted cream on the side. On the last tier we found perfectly cut and symmetrical tea sandwiches, some with cucumber and chive cream cheese and others with berries

and cream. Tiny chicken salad sandwiches made with lemon and tarragon were served inside of mini buttered rolls. And lastly, we discovered what can only be described as a perfect bite: thin sliced prosciutto di parma, fig jam, ginger, whipped goat cheese, and honey served on soft white bread. In other words, show up to Sweet Marie’s Tea Cottage with an empty stomach. Though we sampled through our fair share of petite sandwiches and sweets the tier
