South County’s Artistic Gifts Among its many attributes, Rhode Island is unusually rich in artists and makers. It’s the kind of thing that’s easy to take for granted until you have something else to compare it to, like my recent weekend in a small town in North Carolina. It was full of sweet little shops, but every time I picked something up I expected to find that it had been made within a 15 mile radius, like the art and jewelry I’m accustomed to finding at home. It made me wonder: why do we have such a thriving artistic community?
This month, we talk to artists in different disciplines all over South County, who are both makers and teachers and who make creativity more accessible to the public, to discover what drives this passionate artistic community.

OUR BEER IS BACK It’s been a few decades since Rhode Island’s beer was actually brewed in-state, but after years of wishful thinking (and drinking), ‘Gansett’s come home. Starting with the cleverly named It’s About Time IPA, Narragansett Beer has brought its craft brewing back to the 401 with a state-ofthe-art facility in Pawtucket called the Isle Brewers Guild. The company’s popular Lovecraft line of brews as well
as Town Beach IPA and Summertime Citra Ale will all have the distinction of being RI made, and the new facility will allow ‘Gansett to experiment with new brews in ways they’ve never been able to before. The new brewery might be located in Pawtucket, but every can’s got South County written all over it. Welcome home, neighbor. Hitting the Road with Rhode Island’s Hottest Musical Act Just a few years
ago, two brothers from Warwick found themselves handing out their mixtape to anyone who would listen. Now they’re on tour and recently headlined a show in Los Angeles. The Cardiff Brothers, Jake and John, always knew they would pursue a career in music, and despite some criticism, they persisted. In 2014, they released an EP entitled The Beginning. In 2015, they dropped their first album, All From Home – a fitting title for the record, since it was recorded in the kitchen of their apartment. To their surprise, the album hit #28 on the iTunes charts. The Cardiff Brothers’ catalog is diverse. Although some songs are rapbased “turn-up” tunes, others have a pop beat or an R&B sound. John wouldn’t categorize their music as belonging to a certain genre, claiming, “We’re Cardiff Brothers. We make what we feel.” Following the release of All From Home, they played some local shows, but mainly took time to focus on growth.
“Our immediate mindset wasn’t ‘We gotta follow this album up,’ it was ‘we want to get better,’” John says. After listening to the record and newly released singles like “Brown Eyes” and “Call Me,” John can see his progression. He says that on the first album, he was softly mumbling, but now he’s belting out lyrics. “It’s maturity,” John says. “We just sound like we belong now. We’re not nervous or hesitant or timid. We’ve really grown up and solidified our sound.” Right now, they are living the stories that could be featured on their new album. “It’s taken a lot longer than we expected or hoped to finish, but I can’t help but smile thinking about it because of the growth of us as people,” Jake says. That growth has been personal and professional. For the first time, the Rhode Island natives are crossing the country to support their music, hitting states like Minnesota, Washington and California while out on tour. “It’s something you dream of,” John

says. “These people really want to see us perform. It’s pretty crazy to think about.” Just in 2016 alone, the duo gained thousands of new listeners. After their tour in May, they’ll probably aim to

REMEMBERING THE LAST SHOW ON EARTH
The Circus Comes to Rhode Island for Its Curtain Call first trip to the circus – or, at least, I don’t remember which one was the first one. My childhood memories of the bright lights, the daring acrobatics, the roaring animals that filled the Providence Civic Center are all a blur. A happy blur, uncomplicated by any of the things I would learn later about the Ringling Bros. and Barnum & Bailey Circus. There were women bedecked in sequins and feathers leading elephants through the arena, men doing dazzling motorcycle tricks inside a metal sphere, whole families sailing through the air on the flying trapeze. There was Gunther Gebel-Williams taming his tigers, coaxing them to jump through hoops of fire. We didn’t know then, or at least didn’t have any real proof, about the treatment of those animals. Sure, we heard rumors, but in the ‘80s, we didn’t have the access to information we have now. But also - and I think I’m speaking for more than just myself here - we didn’t want to know whether those rumors were true. The circus was all glamor and excitement, and when it left town for the year, I had a glossy

picture book, something to write about in my school journal, and another plastic souvenir mug that once held a snow cone. Everything else, like that vague shadow in the back of my mind, was gone with the circus trains. Later, when we knew more about the animals’ living conditions, about what it took to get them to perform those tricks, about how elephants have feelings and families and memories like
humans do, the circus lost some of its shine, for me and for a lot of other people. But every time I saw those trains pull into Providence, I would still feel a spark of the excitement I used to feel sitting in the audience, being wowed by the greatest show on earth. There’s something really beautiful for me, and for countless other Rhode Island kids who have memories of the circus’s glory days, that the last stop
on the last-ever Ringling Bros. tour is happening in Providence, from May 4–7, at what is now The Dunkin’ Donuts Center (but what will forever be the Civic Center in our memory). The elephants are gone now, as are the most dangerous of the stunts, but I’m going to be in that audience one last time, snow cone in hand, in memory of the circus’s history, and of mine. What Lies Beneath the Newport Mansions Take a trip underground
to transport back in time. The Preservation Society of Newport County’s newest tour, “Beneath the Breakers,” gives guests a chance to explore the inner workings of the luxurious and cuttingedge Vanderbilt mansion. The tour, which started in early January, takes visitors under the mansion to the boiler room, the central spot that powered the five floors of the Vanderbilts’ summer home. Visitors then walk through a 360-foot tunnel that connects to the basement, a spot the Preservation Society uses to display construction techniques and systems along with their modern counterparts.
Abigail Stewart, the Preservation Society’s education and interpretive programs specialist, highlights that “a lot of the technology from the 1890s stayed in the house,” including motors from the elevator system, iceboxes and the laundry technology. The tour provides a unique opportunity to see a “visual timeline of changes [the mansion] underwent.” The 18-month restoration of the Vanderbilt mansion allowed preservationists to explore the documents of Lawrence Bauerband, the chief engineer of the house in 1916–17 who wrote daily about his tasks. These documents, Abigail says, provide a “personal connection
from someone that was working there” that helps bring the past to life. While it might seem strange to spend a day exploring basements and tunnels, “Beneath the Breakers” adds to the visitor’s experience of the Newport mansions and sheds light on the work of running the popular Breakers house. For members of the Preservation Society, the project helped with their larger goal of piecing together what 19th-century life in the Gilded Age looked like. The Zendt Sisters Are 100 Percent Inn Becca and Christy Zendt know the power of art, the art of inn-keeping and the magic of serendipity. Together they own and manage The Darius Inn, buttressed by porches trimmed with teal and hanging plants, and are enjoying every moment. Once Block Island’s pharmacy, the inn has assumed a bright Dodge Street palette of painted dressers, easy chairs, dog-friendly rooms and owners happily awash in the moment of living on an island. Christy was living in the South, working at the Dallas Museum of Art and, in her words, “trying to figure things out” when a series of random events led her to Block Island. From the sunny vantage point of a friend’s backyard tent in August, Christy was intrigued by the island winter and knew the place was meant to be her home. She talked with her sister. “We can communicate without words and that gets things done. It was very serendipitous; I knew this was what I wanted to do,” she says. They purchased The Gables 2, redesigned each of the 11 spaces with patches of light and cheery flower patterns, renamed the building, and set to work making visitors happy. “We were never really scared; it was a natural move,” Christy says. Her background in fashion and art history helps her choose the perfect pictures and paintings, often by island artists, to harmonize the individual rooms with the natural beauty outside each window. Behind the Darius is a secluded spot where kids and grownups play and sit. Guests might recline on a front porch to feel the busy beach town’s heartbeat, then lie on a sweet piece of green grass to hear it. That’s the Darius charm. The two sisters have fallen in love with the secrets and surprises of the changing seasons. “It’s the awe of our life; old things constantly appear as new,” she says. The summer is spent welcoming new and returning guests, changing over rooms and celebrating happy hour, because no one’s sad at happy hour. Fall means tiling and grouting, Lady Parties, building a bar for the kitchen, returning to beach walking and more days on the mainland. “We have a constantly changing palette. We spend the fall and spring

doing all the projects that we had ideas for in the summer but had no time.” “Winter? Love it! As long as you have a cozy space, it’s the perfect medicine for completing a summer,” Christy says. Then spring calls. Islanders open long-frozen windows and trees bloom while waves of young stripers appear in empty harbors. “It feels like everyone is getting ready for a play, getting back into their roles. We have such a particular stage to work with.” Block Island might have magical powers for the Zendt sisters. Just a few years ago they followed their muse to a dot in the ocean, each using her talents to rebuild an inn on the busiest of streets with zero regrets. Blessed by serendipity, they have put in 100 percent as consummate hosts and members of the small island community. In Christy’s own words, “Everything about it, I very much love.” –Todd Corayer

Ceramics instructor at the Jamestown Arts Center Kara McKamey’s journey from the cotton fields of South Texas to the Jamestown Arts Center (JAC) included a detour from photography to pottery while a student at the School of the Art Institute of Chicago, where she earned her Masters in art education. As a child, says Kara, “I loved playing in the dirt, riding dirt bikes and making sculptures out of the clay we dug up in the backyard.” And it was much the same when she took her first pottery class: “I loved the wheel, I loved the chemistry behind the glazes and the firing process, and I loved working in the dirt,” she says. In addition to running the JAC’s Open Studio and the technical aspects of the center’s ceramics studio, Kara shares her love of sculpture with both adults and kids. “Teaching pottery to kids is way easier than teaching to adults,” she says. “Kids use their hands all the time anyway, so they pick up the process pretty quickly. Adults can be tough to teach: they lose patience, or have forgotten hand-eye coordination skills, or they get frustrated because they could throw once upon a time in high school, but have somehow lost the ability.” Setting incremental goals for aspiring potters helps overcome such obstacles, as does Kara’s hands-on teaching technique. “When I get a beginner on the wheel, I sit across from them and throw the clay with them,” she says. “I’ll have my hands on their hands in the clay and I physically show them what to do. As they get better and become more competent and comfortable, I touch their work in progress less and less.” Kara says she looks at herself “as a conductor rather than a teacher.” “I’m showing the students how to create with clay, how to work together, and how to find the beauty in the imperfection of their work. The classes are a place where anyone can find a clay technique that they are successful at and find the joy in creating something unique to themselves.”

Painting instructor at RISD Continuing Education in Westerly Michael Peery has translated an MFA from the New York Academy of Art into a career as a successful painter with a stint in France, a professor at the Rhode Island School of Design and Rhode Island College, and a fine-arts instructor in New England and New York City. “Becoming a college professor was a life goal for me, along with becoming an artist,” says Michael. “When I was in college at Utah State University, I had tremendous respect for my professors and was strongly influenced by them. I have always loved school, from the time I was a child.” A portrait artist who works primarily with oil paint on linen and canvas, Michael comes from a family rich in talent, including a mother who had her own ballet studio and taught dance for many years. “It stands to reason that I, too, would share that which I have come to understand,” says Michael. “I guess it stems from my natural instincts for wanting to help people.” There’s a benefit for the artist, too: “In the classroom, as the instructor, you really have to know your subject, which has continued to feed my knowledge and practice of drawing and painting. I have learned more from teaching than I ever did as a student.” “Art,” says Michael, “is the greatest form of communication; universal, transcending all barriers. So, to surround myself with like-minded individuals pursuing a greater knowledge of this language, and having developed a deep understanding of it for myself, I find myself wanting to share that. Sometimes at the sacrifice of my own work. That is the challenge, and the thrill.”

Glass instructors at The Glass Station Located in an Art Deco-style former gas station dating back to the 1920s, Wakefield’s Glass Station is both a glassblowing studio and a gallery with a penchant for whimsy and the unpredictable. Artist Eben Horton famously hides more than 500 glass orbs around Block Island’s greenways each summer in a project that’s half treasure hunt, half conservation education, and along with partner Jen Nauck hosts a monthly contest in which local students can see their drawings of monsters come to life as glass art. The partnership between Jen and Eben is in some ways a marriage of opposites: Jen is self-taught and has created an innovative sculpture technique involving small glass bubbles fused together (“My work comes from a very pure place and is a product almost entirely of my imagination and experimentation in the studio,” she says), while Eben has formal training from The School of American Crafts and the Penland School of Crafts, and has taught at The Corning Museum of Glass in upstate New York. The classes at The Glass Station close a circle for Eben, who was introduced to glassblowing as a child when his grandparents signed him up for a class. “The experience was fun, and while I did not leave the class with much knowledge about making glass, I felt that it was a fascinating process,” he says. “The ornament I made stayed with my grandparents, and I would always look forward to seeing it come out in early December when they decorated the tree.” “Because I can pinpoint what started my interest in glass to that one little workshop, I have always offered the same style of class at my studio, because I feel that I owe it to the world to keep that opportunity available to anyone else,” Eben continues. More viscerally, “I find it quite enjoyable to see the expression on people’s faces after they inflate a 2,000-degree blob of glass with their own lung power,” he says.

A chic condo in East Greenwich keeps Diane Bianco close to all of the action
In the Heart of It All When Diane Bianco sold
her home in South Kingstown five years ago, she wasn’t quite sure of her next step. A native Rhode Islander, Diane knew all the nooks and crannies of the Ocean State and always loved East Greenwich for its small town charm, bustling downtown and cozy-meetscoastal vibe. “When I was 27, I used to live [there] in an old Victorian. It was kind of a creepy attic apartment and I was paying like $400 a month,” she says, laughing. Despite her less-thanstellar post-graduate crash pad, she

always remembered how much she enjoyed the convenience of walking to the salon to get her hair done and dining at the area restaurants. Unsure if she should even buy or rent, Diane began to take a closer look at the East Greenwich area’s real estate market, keeping her options open. She spotted what could have been a too-good-to-be-true, twolevel condominium in the heart of downtown, and quickly enlisted a friend to see the property for herself. “We saw the baker’s island and
the kitchen and she said to me, ‘This is yours!’ And I said, ‘This is so mine,’” Diane recalls. A self-described “Pottery Barn girl,” Diane knew her existing pieces would perfectly complement the contemporary but cozy feel of the condo. “I ended up getting a really good deal,” and the rest, she says, is history. “I just had this sixth sense that it was supposed to be mine.” Built in 2005, the luxury livinginspired condo features a combination of marble flooring and hardwoods
throughout, two bedrooms, two full baths, a half-bath and 1,660 square feet of living area. Much to her delight, the condominium was turn-key ready: not a single structural modification needed to be done. “And it had a real custom look to it,” she adds. “The original owners invested a lot of custom detail and finish work.” After settling in, Diane did decide a few minor cosmetic changes might better suit her taste, so she turned to her aunt to make custom window treatments with a fresh, modern feel

and switched out some pendant lights in the kitchen. Essentially, Diane’s idea of “new home renovations” was accomplished in a weekend. Weekends, in fact, are especially relished this time of year. Diane says that being able to walk out her front door and be right on Main Street offers a “unique kind of living in Rhode Island.” Within minutes, she can perch herself at one of East Greenwich’s popular waterfront hotspots along Greenwich Cove overlooking the picturesque marina and enjoy
lunch, dinner or drinks with family and friends. Mornings mean freshly roasted coffee is just a stone’s throw away from her bed and when it’s time to get glam, the salon – yes, the same one she found when she was new to the town in her 20s – is just a short walk home. “It’s just such a funky, fun area.” she says. Although surrounded by more than a dozen delightful cafes and restaurants, Diane also enjoys cooking and playing hostess at home. “I entertain a lot,” she admits. “Both

Beach Chic Lolo’s ocean-inspired bags go from sand to soiree Lolo, the line of eye-catching bags, started in 2012. “We wanted to create women’s accessories and cosmetic bags that were both practical and whimsical,” says Heidi Hublein, retail manager of the brand. They opened a boutique in Watch Hill in 2013, and have since added Westerly and Newport locations. We caught up with Heidi to talk summer style, gift inspiration and what we can add to our beach totes this season.
Warmer weather always reminds us of beach season. What are the best bags to hit the sand with this year? about daycationing on Block Island? The beautiful beaches, quaint shops and charming restaurants are almost too much coastal cuteness for me to handle. After my first experience at Rhode Island Massage, I can now add island-style relaxation to that list without even hopping on a ferry. My Block Island-inspired massage actually happened in North Kingstown. Walking into Rhode Island Massage, I received a warm greeting from owner Lyn Picerno, a URI grad turned licensed massage therapist with one of the top ten most calming voices I’ve ever heard. Prior to the massage, Lyn asked me to choose an aromatherapy essential oil. My choices included rejuvenating peppermint, relaxing sage, energizing grapefruit, blissful sweet orange or soothing lavender. Seeing as it’s second only to the smell of Sunday Gravy cooking, lavender was my aromatherapy of choice. I wish my dayto-day life involved more decisions like that. Since a meaty, garlicky tomato sauce would not be the most pleasant aroma to experience during a massage, it was probably for the best that it wasn’t an option. As I lay down on the heated massage table, I felt a wave of calm wash over me. Then came a face, scalp and neck massage, followed by a lavender moisture mask. I began to drift in and out of a light sleep, almost as if I were lying on a beach in midsummer. After that, Lyn incorporated a Swedish massage and petrissage, a technique that involved kneading both my arms and legs. I was melting like a stick of butter onto the massage bed. Lyn then had me turn over to lie facing down while she placed hot stones gathered from Block Island beaches on my back. As they warmed my skin, she used some of the remaining stones to warm my legs, while also incorporating reflexology on the bottoms of my feet.

This disproved my previous theory that most daily stress could be relieved by a simple foot rub. I learned that all daily stress can be relieved by a massage therapist performing reflexology on your feet. The stones were removed, and because there can never be such a thing as too much lavender, a lavender sugar scrub was applied and then gently removed with hot towels. I began to count how many of life’s most enjoyable moments involve hot towels: flying first class (from what I’ve seen in the movies), mani/pedis, eating lobster, and now of course, this. Lyn concluded the massage with some shiatsu and energizing tapotement, quick light taps to my back with the edge of her hand. I came out of my tranquil fog, and moving at the pace of a sea slug, I left the serene massage studio, drenched in relaxation from head to toe. Before leaving, Lyn advised that I stay extra hydrated that evening as the 90-minute treatment had made me “massage tipsy.” Although I love a good mudslide on the island, I think I preferred this blissfully relaxed type of buzz.

A NEW OLD-FASHIONED SODA FOUNTAIN Artisanal soda sounds like a contradiction in terms – but at Green Line Apothecary in Wakefield, it’s a real thing. The pharmacy, which opened a year ago this month, is also a full-service, 1940s vintage soda fountain: the kind you don’t find anymore, except in old issues of Life magazine. Green Line serves ice cream, shakes, floats and all
the usual stuff, as well as made-to-order sodas, lime rickeys and cherry phosphates. on it. Everything is tapas-style and made for sharing. When we sat down, we were pleased to learn that most of the menu was half-priced for Happy Hour. The kitchen is run by head chef Derrick Marquiss, who earned his stripes at the Revolving Door and Stoneacre Pantry, both in Newport. The menu is divided into three sections – snacks, cold plates and hot plates. The snacks section is filled with finger foods – think truffle parmesan popcorn, spiced nuts and marinated olives. We opted for the Sourdough Bread ($3) and Charcuterie ($16.00). The bread, from the Pain D’Avignon Bakery in Hyannis, was warm and delicious and served with honey butter on the side. I can’t resist a charcuterie plate, so even though it wasn’t included in Happy Hour, I splurged and enjoyed the pâté, prosciutto and apple relish. Though not mentioned on the menu, a pile of house-made pickles arrived with the charcuterie plate and were really good. From the cold plates section of the menu, we tried the Tuna Poke ($12). This was one dish we couldn’t get enough of. The tuna was finely diced and sauced with sesame, ginger and sriracha and then finished with crispy puffed rice. We were fighting for every last bite in the bowl – it was that good.

Those are all things I love to eat, but sometimes I crave something a bit more refined when I go out with friends. That’s why I was so excited to see the menu at Kai Bar in East Greenwich. It’s bar food for those with a sophisticated palate. Kai Bar is the latest addition to East Greenwich’s bustling Main Street, in the spot where Alex and Ani used to be. Looking at the pictures on Kai Bar’s website before my visit, I was expecting a small space, but when I got there, I was pleasantly surprised to see how much more spacious it is in person. The restaurant is long and divided into two separate rooms. Both rooms have bar seating and plenty of lounging room with cushioned stools and benches. The vibe is upscale seaside and very welcoming – comfortable yet sophisticated. Every table had a deck of cards on it, inviting groups of friends to relax and stay for the night. Tending the bar on the night we were there was none other than one of the owners of Kai Bar, Jason Kindness. Jason is a bartender with street cred, having worked at the Revolving Door in

On the cold night we visited, we sampled the Brussels Sprouts ($8), Parisian Gnocchi ($15) and Flat Iron Steak ($18) from the warm plates section of the menu. The Brussels sprouts were roasted and served with a whole-grain mustard sauce and big hunks of pancetta. These are not your mother’s overcooked Brussels sprouts. I don’t know why Brussels sprouts are suddenly all the rage, but when I see them on a menu, I have to order them. The gnocchi were impossibly light and, combined with a bite of the tender braised short rib and a smear of the ricotta cheese,
produced a symphony of flavors. The steak was tender and well seasoned and we loved the crispy shallots (because why wouldn’t you?) and grilled asparagus on the side. My friend and I both enjoyed our night at Kai Bar and are already planning to go back with more friends. We left pleasantly full (we’d eaten a ton of food) but did not feel as guilty as if we had stuffed ourselves with typical bar food. Jason also told us that, starting this month, Kai Bar will be offering a brunch menu on the weekends. Sign me up and save me a Paloma Cabrito!

Raise a Pint When another award isn’t enough, Sons of Liberty gets into the beer game Recently, Sons of Liberty (SoL) has had a lot to celebrate. Sure, they’re a great local distillery. Sure, they’ve won awards over the years. But the award they’ve recently received is a game changer. Every year, Whisky Magazine hosts the Icons of Whisky awards. It’s a celebration of the whiskies of the world and the people behind them. The awards are first broken down into regions, with the winners advancing to the global round. SoL took home the award for Best American Craft Producer of the Year of all the distilleries in the United States. To give you an idea of just how big of an award this is, other 2017 winners include Jack Daniel’s for Master Distiller/Master Blender of the Year and Maker’s Mark for Brand Innovator of the Year. SoL is playing in the big leagues. Not one to rest on their laurels, SoL is upping their game yet again, this time with beer. They’ve acquired their brewer’s license and expanded the distillery to feature a full bar and tasting room. To be clear, SoL isn’t

Mention of an internship generally conjures thoughts of sandwich and coffee runs. For his internship for Johnson and Wales’ continuing education program in culinary arts, Michael Gabriel opted to save himself the trip by opening The Provisioner in North Kingstown instead. Michael has been in Rhode Island for well over a decade, but you really can’t take the New York out of the man. We had a chat about the art of the simple sandwich; once it ended, I felt decidedly short on meatballs.

How was your experience with Johnson and Wales’ continuing ed program? In my youth I was in the business a little while, but I was coming from a career outside the culinary world. I started going to JWU in the continuing education program for 14 hours a day every Sunday, learning and relearning food. It was a nice way to get into the business and see if it was something I wanted to do. Near graduation they require an internship; you have to get out into the field and work. I had stumbled across this location in North Kingstown and decided that building The Provisioner would be my internship. The people at JWU were really supportive; I can’t say enough about them. From the build-out to testing the kitchen, the entire transition into the business counted toward my degree. To own a business, particularly a restaurant, coming straight out of school was a leap of faith. Instead of just thinking about it and talking about it, I had to get it out of my system. Why a New York deli? I was kind of driving around going, “Where can I find a great sandwich?” I’ve been in Rhode Island for 15 years. There are some great restaurants, great delis, great sandwich places, but locally I could never really find a go-to. I hearkened back to when I was a kid and there was a deli almost every mile or so on Long Island and you could stop

in for some of the best chicken cutlets, the best roast beef sandwiches, salads, meatball heroes, breakfast sandwiches, anything you really wanted. How do you define a New York deli? What sets the good ones apart? In my experience, a deli brings in big tastes and big flavor in house-made products. Whether it’s pasta, meatballs or an Italian sub, you have to have good ingredients and you have to put them together right. We’re more of an homage to a New York deli versus having guys behind the counter cutting lunch meats to order. We’re the other side of a New York deli, with fully prepared sandwiches, lunches and dinners, very similar to a diner. Katz’s Deli, Carnegie Deli, the Goldberg Delis; they all follow that format, with pastrami, corned beef, everything done in-house from start to finish. We’re kind of a mix of all of that. It’s not just the ingredients; it’s what you do with them. What are some of the ingredients that make a difference?

When we prepare food, its hard to do things from scratch. It’s expensive; it’s time consuming. But if you use simple ingredients, that’s how you get the good product. Food has a tendency to be overthought. When you have really nice prosciutto, you just put some fresh roasted peppers on it, fresh house-made mozzarella, arugula and lemon herb dressing and you have something great without anything else on it; you don’t even need salt and pepper. It just comes across as pure; you taste everything that’s on it. What did you learn at Johnson and Wales in terms of technique that applies to a sandwich? On the basic level, sandwiches are sandwiches. I always goof around with the crew and say, “We’re just making sandwiches here.” But every sandwich has at least four or five components, if not more. Our dressings are all done in house, so we have to figure out what ratios work, and how much acidity goes into our dressing so it doesn’t wilt the lettuce or arugula that we use. We have to make sure the meat is perfectly cooked. Our short ribs are braised in red wine and herbs for five hours. Our meat au jus is all done in house. On the surface sandwiches can be very basic, but if you look at each one, in some form or another, they have a lot of careful cooking techniques.
